I am an animal lover — like stop you so I can pet your puppy, look forward to new tweets from @WeRateDogs, communicate through funny GIFs featuring furfalls, stroll past a dog park even when I don’t have my own kind of fan. I can admit to all of these behaviors because I know I’m not alone. Southlake cherishes its pets. Whether locals are trotting them through Art in the Square, serving them top-shelf treats from Hollywood Feed or making Instagrams for their fluffy family members, this town is dedicated. When it came to our second annual “Southlake Stylin' Pets Contest,” I knew we would get submissions. What I didn’t know would be the sheer number of spectacular shots we’d receive, each of which brought everyone here at Southlake Style so much joy. We did have the chance to showcase a few in the pages ahead, but there were many more adorable animals that were exclusively featured online. So if you haven’t already, head over to SouthlakeStyle.com to see all of your loveable submissions, still up for display. You’ll meet a curious macaw Khole, a sporty waterdog Yogi and even an one-eyed cat named Bullseye. If yours wasn’t honored in print, just know they are all good pets — so take him or her out on the town this month. HOW MANY ANIMALS DO YOU TAKE CARE OF? In a year’s time, we care for about 400 animals. Finding a new home for a foster animal takes an average of three weeks. We have about 35 foster homes, and we have about 15 animals in the program at any given time.
WHAT INSPIRED YOU TO GET INTO ANIMAL RESCUE IN THE FIRST PLACE? I purchased a dog, and that dog was absolutely nuts. I was trying to get ahold of his breeder to find out what was going on with him. I found out that he came from a puppy mill.
HOW DOES EPIC ANIMAL RESCUE HELP ANIMALS IN THE AREA? We take in animals that are from shelters all across North Texas as well as animals found on the streets. From there, we have them seen by a vet and fully vetted. Then, we work to find them their forever home.
WHAT IS LIVING IN A FOSTER HOME LIKE FOR ANIMALS? Some dogs come in that have actually never been in a house before, so they learn all of the sounds of what it’s like being in a home.

Tressa Broadhead HOW MANY PETS DO YOU HAVE? I have three dogs and one cat. I have a husky named Callie, a dachshund mix named Zoe, and we just adopted a little Maltese-dachshundPomeranian mix named Roxy. Then there’s our cat, Ally — not to mention a carousel of fosters that come and go. HOW LONG HAVE YOU RESCUED ANIMALS? About 14 years. I was with another group for a good 11 years before starting Epic Animal Rescue. WHAT ARE SOME CHALLENGES LEADING YOUR NONPROFIT? Finding and managing volunteers can be a little bit of a struggle. Also, because we are a nonprofit and we are low-budget, it’s really getting our message out there that can be a challenge. WHAT’S SOMETHING YOU HOPE PEOPLE LEARN ABOUT RESCUE ANIMALS? There’s a lot of really fantastic animals available in rescue. You’re going to find some purebreds. The average age of an animal in rescue is about 1 year old. There are some really great animals out there that I wish people would just give a chance.

ROSIE Chinese Shar-Pei With more wrinkles than you can count, 3-year-old Rosie made an adorable addition to the Petrovsky family when they brought her home as a 10-week-old puppy. Rosie now spends her days snuggling, playing and guarding her family. She loves to be included in the household’s activities and often tilts her head as if she’s saying, “Well, what about me?” As her owner Robin says, “Her personality shines through her cute exterior and makes her so special!”

FINN Persian Tabby Finn, a precious 6-month-old kitten, is anything but aloof. His playful nature and affectionate side often have him running around the Kaplan house looking for cuddling opportunities, either with his human family members or his furry sister Roxie, a corgiyorkie mix. His extremely soft white coat does not shed, proving he is the perfect fit for his family and his mom Maria, who is normally allergic to cats. “He is incredibly intuitive and seems to know when one of us needs comforting,” Maria says.

WINSTON King Charles Cavalier Poodle You’ll know when the 7-month-old Cavapoo comes racing down the corner, partially because of the small bell he wears on his collar that jingles as he walks but mainly because of his bunny-like hop in his run. When energetic Winston isn’t playing fetch with his family, he’s trying to snuggle next to them. He loves sleeping on his back, dreaming of being petted — because as his mom Arlene says, “He loves to get his tummy rubbed.”

GEORGE Giant Flemish Rabbit George is not your typical bunny. Instead of living in a cage, the 20-pound giant Flemish rabbit has free reign of the house just like his three dog siblings. George became a part of the Santora family two years ago, and over that time, he has developed quite a sassy but adorable personality. MISSY Haflinger Missy, a 10-year old Haflinger, joined the Bruton family three years ago. Over that time, she has proven to be a calm, gentle horse with a curious yet patient spirit. That makes her a great fit for her owner Doreen’s nonprofit: Amy’s Wish With Wings, an equineassisted therapy program that operates out of Southlake. During the summer, Missy also takes part in the Horse Adventure Camp, a seasonal camp that provides unique educational opportunities to its participants while also giving their parents a well-deserved break. “Missy is great with children,” Doreen says. APARTMENTS SPIN MEETING JANUARY 28 The Southlake Program for the Involvement of Neighborhoods held a meeting on Jan. 28 discussing a proposed development that would build 350 apartments on approximately 13 acres in Southlake Town Square. According to a town hall agenda, the apartment units would be built on 7.3 acres south of the police and fire headquarters building, and various improvements would be built on 5.7 acres adjacent to McPherson Park. Now the application will be brought to the planning and zoning commission at 6:30 p.m. on Feb. 6. The development will then be brought before Southlake City Council for two readings, the first to be held at 5:30 p.m. on Feb. 18 and the second to be held at 5:30 p.m. on March 3. Residents will have the opportunity to voice their perspectives on the project at these meetings.
SOUTHLAKE DPS PARTICIPATES IN THE HONOR WALL FOR FALLEN LUBBOCK FIRE LIEUTENANT, POLICE OFFICER Southlake DPS came together on Jan. 13 to show their support for fallen civil servants. SDPS participated in the honor wall for Lubbock fire lieutenant Eric Hall and officer Nick Reyna, both of whom were killed while on-site at a car accident. While they were assisting, a car from oncoming traffic crossed the median, striking and killing both of them, according to the Southlake DPS Facebook page. Southlake Deputy Fire Chief Kurt Hall says he wants the public to take away from this event “that there is a cost to every life that is lost in the line of duty.” He continues to say the day symbolizes “the profound impact that it has on their family, the people who served with them and on the community as a whole.” DRAGON FOOTBALL RACKS UP TXHSFB DISTRICT 5-6A AWARDS Southlake Carroll received several prestigious recognitions last month when the TXHSFB 2019 All-District 5-6A Team was announced. First Team All-District featured 15 Dragons including kicker Joe McFadden, center Addison Penn, offensive tackle Andrej Karic, guard Brandon Borrasso, tight end/full back Blake Smith, wide receiver John Manero, wide receiver Wills Meyer, wide receiver Brady Boyd, defensive tackle Dillon Springer, defensive end Thomas Wrehe, inside linebacker Preston Forney, outside linebacker Beck Parra, safety RJ Mickens, corner James Miscoll and corner Dylan Thomas. Second Team All-District featured nine Dragons including offensive tackle Robbie Rochester, guard Michael Magar, guard Grant Price, wide receiver Kasen Loveless, wide receiver Landon Sampson, defensive tackle Will Buss, defensive end Colin Stanyer, inside linebacker Quinn Wikinson and safety Brandon Howell. But those weren’t the only Dragons recognized with quarterback Quinn Ewers receiving MVP for the district, linebacker Graham Faloona receiving defensive player of the year, running back Owen Allen receiving newcomer of the year and Southlake Carroll receiving staff of the year.

SOUTHLAKE WOMEN’S CLUB PRESENTS 2020 ART IN THE SQUARE BENEFICIARIES AT STROKES OF ART IN THE SQUARE RECEPTION On Feb. 16, the Southlake Women’s Club will host its annual Strokes of Art in the Square Reception to kick off this year’s event. The free reception will be the first time locals can see visuals from the 2020 Art in the Square featured artists. But it will also act as a time for the organization to present this year’s beneficiaries. Over Art in the Square’s tenure, the Southlake Women’s Club has been able to give more than $3 million to local beneficiaries. The art festival supported 31 charities and six CISD scholarships last year alone. COLLEYVILLE WOMEN’S CLUB SEEKS TO HONOR LOCAL YOUTH THROUGH GRANTS AND SCHOLARSHIPS Do you know a child between the ages of 5 to 19 who makes a difference thanks to his or her volunteer efforts? The freshman band includes piccoloist Makena Kao, clarinetists Vivek Reddy and Annabel Dewey, bass clarinetist Azlaan Shafi, alto saxophonists Justin Wu and Brandon Yoshinaka, tenor saxophonists Chase Miller, French hornist Matthew Cory, trombonists Anbu Subramanian and Carson Crays, tuba player Sebastian Lanuza and percussionist Ethan Arnn. The concert band includes flutist Jessica Yang, clarinetists Ariana Carrasco and Zoe Bishop, bass clarinetist Marten Koning, French hornists Justin Sasek and Jack Kester, trumpeters Callum Andrews and Nicholas Parker, trombonists Kenney Spencer and Han-gyong Parker, euphonist Chris Estridge and tuba player Carter Doby. Of the 11 students, Diego Pena and Drew Keady advanced to the All-State band and will perform at the 100th TMEA Convention on Feb. 15 along with Tori Thomas, trumpeter Chase Adams and violinist Grace Xu. The rest performed at the All-Region concert on Saturday, Jan. 18 at Trinity High School. SOUTHLAKE POLICE K-9 DUO COMPETE ON “AMERICA’S TOP DOG” PREMIERE Southlake viewers who caught the premiere of A&E’s newest competitive show “America’s Top Dog” saw two familiar faces on the screen: Southlake police officer Nathaniel Anderson and his K-9 partner Duco. The duo competed against four other teams from Florida, Illinois and North Dakota for a $10,000 prize, a $5,000 donation to an animal charity of the winner’s choice and a chance to compete in the show’s grand finale. Duco raced through an obstacle course called the K-9 Combine during the first round of the competition, finishing fourth out of five teams with a time of 2:25.26. Unfortunately, he was eliminated during the detection phase in round two. Regardless, Anderson says he felt blessed for the opportunity to appear on TV and show what he and Duco could do together. “I’m truly thankful that I have a department that allowed Duco and I, mainly me, to experience something of this magnitude,” Anderson expresses.

QUARTERBACK QUINN EWERS NAMED MAXPREPS SOPHOMORE OF THE YEAR MaxPreps named Southlake Carroll Quarterback Quinn Ewers its high school football sophomore of the year following his terrific season, where he led the Dragons to playoffs and ended the year with a 13-1 record. This was Ewers’ first season as the starting quarterback for the Dragons, and it was one to remember, throwing for 4,003 yards and 45 touchdowns. He also only recorded three interceptions this season and completed 72% of his passes, according to MaxPreps.com. In his running game this season, Ewers also recorded 568 yards and nine more touchdowns. Southlake Carroll finished this season ranked No. 20 of 25. NICHE RANKS CISD AS NO. 2 DISTRICT IN THE STATE Carroll ISD continues to remain on top as it was named the No. 2 school district in the state, according to Niche’s 2020 Best School Districts in Texas. Niche determined the rankings by factoring in data from the U.S. Department of Education, state test scores, college readiness, graduation rates and ACT/SAT scores among other factors. CISD maintains an A+ overall rating from Niche with A+ ratings in academics, teachers, clubs and activities, college prep, administration, sports and health and safety. In food, resources and facilities and diversity, CISD scored an A-, A- and a B-, respectively. In other lists calculated by Niche, CISD ranks No. 1 for Best School Districts for Athletes in Texas and No. 3 for Districts with the Best Teachers in Texas. Nationally, CISD ranks No. 8 out of 10,815 schools in the Best School Districts for Athletes in America and No. 33 out of 10,782 in the Best School Districts in America.
THIRD GRADE GREEN DRAGONS WIN 2019 NORTH TEXAS FOOTBALL LEAGUE SUPER BOWL Many football fans are looking forward to Super Bowl LIV on Feb. 2. However, the third grade Carroll Green Dragons recently won their own trophy at the 2019 North Texas Football League Super Bowl. The Green Dragons played against the Argyle Eagles during the NTFL Super Bowl at the University of North Texas this past winter. Team mom Heather Nied says that because kids in grades kindergarten through second play flag football, this was the first year rookie tackle was a part of the team’s program. The Green Dragons prevailed against the Argyle Eagles 33-8 with the help of their coaches, Philip Odette, Ron Luber and David Nied. As part of becoming the 2019 NTFL Super Bowl Champions, they got to tour the Dallas Cowboys Ford Center on Dec. 12, view the Cowboys’ five Lombardi Super Bowl trophies up close and even get high fives from offensive lineman Joe Looney. This is the second time the Green Dragons have won the NTFL Super Bowl, with their first win in 2017. The Green Dragons’ next season starts in August.

WESTIN SOUTHLAKE HOSTS GROUNDBREAKING CEREMONY After rescheduling the first ceremony in November, Westin Southlake was able to celebrate its groundbreaking last month. Locals came out to 1200 E. State Hwy. 114 on Jan. 21 to see where the 261-room upscale hotel would stand. The four-star hotel is expected to open late 2021, according to SRH Hospitality’s website. GRAPEVINE RESTAURANT LANDS ON YELP’S 100 PLACES TO EAT 2020 LIST Yelp offers diners a platform to discuss their favorite restaurants, upcoming hotspots and go-to dishes at local eateries. Over the past few years, it has also broken down the country’s top restaurants thanks to its review data and community managers' input. On Jan. 7, Yelp released its “100 Places To Eat List,” which included one of Grapevine’s favorites. Tommy Tamale Market & Cafe came in at No. 16, the highest-ranking achieved by a Texas restaurant. This is not the first time Tommy Tamale has been included on this list. Tommy Tamale, which has more than 1,000 Yelp reviews, opened in 2009 with the goal of providing the best tamales to its customers. Its menu features savory tamales like hatch pork and black bean as well as sweet options like apple cinnamon and chocolate. The next Lone Star State spot on Yelp’s 2020 list is No. 17 SP Brazilian Steakhouse, located in Lakeway. Other featured Texas restaurants include Gino’s Deli Stop N Buy in San Antonio, Craft Pita in Houston and Vizo’s African Bar & Restaurant in Lubbock. A Page Out Of George Dawson’s Book George Dawson Middle School Connects Campus To Author’s Family Through Birthday Celebration Whether you’ve stepped on the middle school’s campus or read his book, the name George Dawson resonates with many in Southlake. After learning to read and write at age 98, co-writing his own book and having a CISD campus named after him before he died in 2001, it’s easy to find opportunities to celebrate his legacy. George Dawson Middle School principal Ryan Wilson says the campus still aims to honor the man and his love of reading through his birthday celebration every year. George Dawson’s Birthday Starting on January 19, 2003, Ryan says the school comes together every year to celebrate George's passion for literacy. The first year involved a giant sheet cake kids could enjoy, but that has evolved over the past 17 years. “There have been some Januarys where Mr. Dawson’s bust has simply been decorated with a party hat and some helium balloons,” Ryan chuckles. Other times, the campus was able to involve people directly from George’s life — like the book’s co-author Richard Glaubman. “Kids were able to ask questions about Mr. Dawson,” Ryan explains. “Things like, ‘Did he really go

consider THIS
fishing every single day? Did he really start every morning eating the same breakfast?’ Things that 12, 13, 14-year-olds were curious about.” George Dawson’s Book This year, the campus has incorporated public readings of George’s “Life Is So Good” at the library. During that time, Ryan witnesses his students become more invested in George’s story. “It’s really cool to watch kids get a glimpse at what Mr. Dawson’s life was like,” he says. “Many of the topics in the book are racially sensitive. It’s extra special for those kids in the middle of the day to actually read that alongside Mr. Dawson’s family.” George’s granddaughter Mashelle helped organize this new tradition alongside Ryan. She says she loves seeing kids reading about her grandfather, especially since he couldn’t read himself for most of his life. George Dawson’s Legacy Ryan wanted to connect the campus with George Dawson and his family while also providing an educational opportunity to learn about the obstacles the man overcame. As the campus continues to celebrate George Dawson, Ryan hopes his story continues to inspire others to keep learning and reading like he did. “I want the community of Dawson Middle School to not know the building by its name but by its namesake,” Ryan says. “Once they are at George Dawson Middle School, they will know who George Dawson is.”

A DOCTOR AND A CHOCOLATIER, DR. SUE DOES IT ALL
W
hen she’s not at the hospital, Dr. Sue Williams is running her chocolate shop in downtown Grapevine. Working both as a board-certified internal medicine physician and a chocolatier is hard work, but Dr. Sue has been doing it successfully for the last nine years. Her chocolate — dark and only made with natural ingredients — comes in a variety of types and flavors, and she is the mastermind behind it all. She may not have been at the shop when you visited, but now you can get to know Dr. Sue.
I’VE BEEN DOING THIS... for almost 10 years. It started as just a little hobby. My daughter had gone to college, and I wanted something to do — sort of an empty nester project. I always loved to cook and entertain, so I went to Chicago and took classes to become a chocolatier. I loved it. AS I WOULD MAKE IT MORE IN PRACTICE... I would give it away at the hospital where I worked, and they called me Dr. Sue, so they called it Dr. Sue’s Chocolate. Eventually, it just sort of fell into place and was turning into a little business, so I decided I wouldn’t pay myself... I’d donate to charities and be committed to [paying my employees] a living wage and really put the money back into the community. WE HAD THE OPPORTUNITY… four years ago to move right here on Main Street, and that has just been an absolute blessing. There’s so much foot traffic, and we’ve met so many wonderful people from literally all over the world. It really is my happy place, and I love it that a lot of people get happy when they come in too. I LOVE WHAT I DO... and it’s very meaningful. I spend a lot of time delivering bad news and having important conversations. They’re very meaningful, but they can also be very emotionally heavy and exhausting. So [it’s nice having an] opportunity to go to a place where everybody’s happy. I mean, in a chocolate shop, everyone is there because they want to be there. THE HARDEST PART OF MAKING CHOCOLATE... is the actual technique. It’s one thing to learn the theory on paper, but the actual technique of working with it over and over and over again until you do it — that is the hardest part.
I WANTED TO PROVE THAT YOU COULD... find something you feel good about eating. Obviously, you can do that very much with savory things, but I started with the intent that I will produce products that were dark chocolate, that were all natural, that wouldn’t have any added sugars, sweeteners, preservatives, that they would all be non-GMO and have no high-fructose corn syrup. I CREATE MOST OF THE RECIPES... pretty quickly. Sometimes they’ll just come to me, and I keep lists of ideas. I could be in a restaurant and taste something and think that it would be fun to try that with chocolate. I could be drinking a cup of coffee and think that might be good with chocolate. Inspiration can come from every facet of life. ONCE IN A WHILE WE GET LUCKY... and we get [a recipe right] on the first try. But that’s very rare. Over the years, I would say, most of the time it’s gonna take us at least five or 10 tries, and there are some things that I know I’ve gone through at least 20 variations before I ever got it right. I DON’T EVER REALLY GET TIRED OF IT… because it’s a beautiful, beautiful medium. If you just watch melted chocolate flow, it’s mesmerizing. It’s so beautiful. And it has this silkiness, this richness to it that is mesmerizing. I love the creations. I love seeing the reactions on people’s faces when they get it, when they come in and buy something or taste it. I don’t think I ever get tired of it. I just try really hard to not eat too much of it. I REALLY APPRECIATE... this whole community, not just Grapevine. The people have just embraced us. And I’m so grateful for their support because it allows us to just do even more and give back — sometimes in small ways, sometimes in bigger ways — to the community. It’s like a real sharing of love.

efore Highway 114 had traffic, before Southlake Town Square was a shopping destination and before Carroll ISD became a successful 6A school system, this city was just land. Native Americans lived and hunted in the area, known as the Eastern Cross Timbers for its thick forests of blackjack and post oak trees. But after colonization took place around the 1840s and 1850s, many started planting roots around modern-day Southlake, including John Dolford “Bob” Jones. The man who was born a slave would eventually accumulate approximately 2,000 acres of land around the modern-day Tarrant County-Denton County line. His inspiring story has become a Southlake legacy thanks to those who take the time to honor the man and reflect on his life.

A STORIED LIFE
Born in 1850, Bob Jones’ father was Leazer Alvis Jones. His mother, Elizabeth, was Leazer’s slave, according to the Southlake Historical Society. After moving to modern-day Trophy Club and Westlake in 1860, Bob Jones started working on his father’s property. After herding sheep alongside his brother Jim for years, the two eventually purchased 60 acres of land from their father. Bob eventually bought Jim out and began accumulating what is a little over 3 square miles of land. William Jones, Bob Jones’ grandson, says that while growing up, he was told stories of his grandfather, who died three years before William was born. Despite listening to these recounts again and again from his dad, grandmother, uncles and aunts as a child, William says he didn’t really appreciate the legacy of his grandfather until he was an adult. “It was just stories about our grandfather, which we enjoyed, but we didn’t even come close to understanding the things he had accomplished, what he did as far as developing land, raising his cattle, raising racehorses — all the various things that he was doing,” William says. “We just didn’t have a clue.” Bob eventually married Almeady Jones, and they had 10 children. As each child was born, they expanded their house. The at-first humble home became a two-story building with four or five bedrooms, a main room, a dining room, a kitchen, a balcony and porches all around, according to the Southlake Historical Society. The family also built Mount Carmel Baptist Church in 1902, which burned down in the ’60s. Highlighting his reverence for education, Bob Jones also built Walnut Grove Elementary School around 1920. The school was for his grandchildren and other children in the area who couldn’t attend white schools due to racial segregation. Though it closed in 1951 because the students were ready to go to high school, Carroll ISD’s Walnut Grove Elementary School is named in honor of the original school Bob Jones built.

“They really stressed education,” says Anita Robeson, a historian and archivist with the Southlake Historical Society. “And they made sure all their children attended school.” Bob Jones died in 1936 and around 500 people attended his funeral, according to a newspaper article about the event, proving that Bob Jones’ impact was recognized during as well as after his life. "His legacy is a love of the land, education, God and his family,” Anita says.
LEGACY IN LAND Southlake honors the iconic man through the Bob Jones Nature Center and Preserve, a combination of park property and land owned by the Army Corp of Engineers that opened in 2008 after some of the original property was donated to the city. Stretching more than 750 acres, the preserve includes land Bob Jones owned during his time in Southlake and a former private home, which is now the nature center building. “This was actually a residential home out here that they were looking to sell to the city,” Kate Meacham, Southlake’s deputy director of community services, says. “Obviously being nestled

away — being on the Bob Jones property, next to the Corp and the lake and all of that — the city saw a good opportunity to purchase and make that wider preserve.” But the Bob Jones Nature Center and Preserve is more than idle land. There’s no shortage of activities happening on the property. The preserve is open daily, so guests can hike, take photos of animals or plants and enjoy nature whenever they like. The nature center puts on programs for guests to enjoy that promote education. While guests cannot camp on the property, there are programs that teach camping tips. Another program, forest preschool, works to instill kids with a love of the land through education — two enduring facets of Bob Jones’ legacy. “It’s this idea that kids can go outside and learn through nature, from nature, at their own speed,” Programs Coordinator Hannah Nyquist says. “So we do the alphabet and we count, but we’re outside exploring the majority of the time.” This year, the center will focus on outreach and adult programming to educate people about the preserve as a whole to make sure they understand its resources while also spreading

awareness about Bob Jones himself. “That’s part of the awareness thing is making people aware of the preserve but also reiterating Bob Jones’ legacy,” Kate says.
KEEPING HIS MEMORY ALIVE Guests can walk into the nature center and learn about Bob Jones’ life by reading its walls, detailing his achievements. This year, the center is also commissioning a public art piece about Bob Jones to have on display for its patrons. The Southlake Historical Society is also honoring Bob Jones by hosting a summer exhibit in Southlake Town Hall. Last year, the exhibit featured the first Carroll ISD school, and this year, Bob and Almeady Jones will be remembered. “Bob Jones’ history is inspirational, interesting and ties into today,” Anita says. “Our goal is to let people know about the history, and we do have a very interesting history in Southlake." With the rise of companies like 23andMe and Ancestry.com, the drive to learn about one’s history has never been stronger. “I think we’re all excited to discover our roots and understand what our ancestors actually went through,” William says. “And then we become absolutely amazed at what they could accomplish in the period of time they were living.” William’s grandfather led a monumental life, and he learned about it thanks to stories passed down by his family. Now, William continues that legacy by telling his kids, nieces and nephews about his grandfather’s triumphs. “I think now, for the newer generation, they’re much more aware of what those accomplishments were than we were when we were kids growing up,” he says. “We try to make sure that they’re aware of who, even their grandfathers, not only their great-grandfather, is — what my dad and my uncles achieved as well as what my grandfather achieved.” Even though 84 years has passed since his death, Bob Jones’ spirit is still palpable in Southlake, thanks to his accomplishments and his dedication to making his community better. “I’m very pleased to see that the area where we grew up has now embraced some of the accomplishments of Bob and Almeady Jones and are paying some attention to that and recording it,” William says. “Because I think it’s important that history includes everyone that lived in that area, not just a few.”

n award-winning eatery from down under has made its way to Texas. A Neapolitan concept out of Melbourne, 400 Gradi opened its first U.S. location in downtown Dallas last September. Founder and chef Johnny Di Francesco was excited to not only bring his concept to America but also join the bustling restaurant industry in the Metroplex. “Dallas is a growing food city. When my business partners — who also live in Dallas — toured me around, I fell in love with North Texas,” Francesco says. “It reminded me of Melbourne, and I felt it was only natural to open 400 Gradi in the heart of Dallas.”
His Dallas partner, Igor Stevovic, also sees similarities between the areas, which helps 400 Gradi feel like an easy addition to downtown’s offerings. “Both are bustling metropolitan cities with a great vibe and exponential growth,” Igor says. “The community in both cities are exceptionally welcoming.” As diners walk through the sleek Italian restaurant, past the wine bottle display and gleaming bartop, they will start to sense the level of polish ahead. Because 400 Gradi stands out thanks to its attention to detail. Yes, the plating is precise, and there are nuances in each dish’s flavor profile. But 400 Gradi goes beyond the

obvious to think about considerations that others might not conceptualize, like the water’s pH. All of 400 Gradi’s pizza and pasta doughs are made with what 400 Gradi calls Artisan H20 — filtered water that replicates the same qualities as what’s found in Naples. After the dough is prepared, it undergoes 48 hours of fermentation in a temperature-controlled room with 70% humidity. These details transform the recipe into an authentic replica of the Italian dish that was perfected after years of preparation. And the world has taken notice — 400 Gradi received the Best Pizzeria in Oceania honor at the 50 Top Pizza Awards in Naples for two years in a row (2018 and 2019). “Besides the fact that our pizza is made with love, it’s a traditional Neapolitan-style pizza that was handed down from generation to generation,” Igor says. Diners can’t go wrong with the traditional Margherita Verace — named the World’s Best Pizza in 2014 at the Pizza World Championship in Parma, Italy. But it’s far from the only star on the pizza menu. The Ortolana, topped with eggplant, onions, capsicum and zucchini, proves to be a hearty vegetarian pie. And the Diavola, complete with hot salami and arugula, offers a little more heft with its cured topping. But 400 Gradi is more than a pizzeria. It’s a sophisticated classic Italian concept that serves phenomenal pies. But that’s no excuse to sleep on its other dishes. Start out on a bright note with the burrata, accompanied by chargrilled bread that smells as good as it tastes. Or, for an appetizer that can feed the masses, order the Salumi Board: a selection of cured meats and cheeses served with gnocco fritto and giardiniera. The pastas, held to the same level of excellence as the pizzas, are made fresh every day. The Linguine Alla Pescatora, topped with prawns, mussels, clams and scallops and served in a napoli sauce, acts as a representation of what the dinner menu offers: classic dishes uplifted by precision. And the Tortelli E Zucca combines unexpected flavors — pumpkin-filled pasta served with butter, sage, pine nuts and amaretti — for those interested in trying something new. The Risotto Agli Asparagi — Aquarello rice, mascarpone, zucchini puree and asparagus — offers creaminess. And its subtle balance of salty and sweet flavors makes for a refined bite. To continue your Italian spread, try the pork short ribs, done the Italian way, served with a balsamic glaze. The coconut panna cotta, served in dark chocolate shells with bounty gelato and a lime gel, provides a sophisticated ending to the meal. And the dessert calzone, folded pizza crust with Nutella served with Zero Gradi vanilla gelato, pairs different restaurant creations together for a wellrounded treat. Buttermilk-Brined Chicken Lands In Roanoke The guys behind Craft & Vine, Tim and Matt Nystrom, are back with a new fast casual concept, Soul Bird Chkn Shack and Wing Bar. With a comfort food menu and quality ingredients, Soul Bird provides a plethora of foodie favorites all under one roof. “There’s no concept like this on Oak Street,” Matt says. “We thought a chicken place would do really well here.” But this is no ordinary chicken sandwich shop. Soul Bird offers gourmet sandwiches crafted with 24-hour buttermilk-brined chicken breast, grilled chicken or fried cauliflower. “We were looking to create the best chicken sandwich out there,” Matt says. After picking a protein, guests can choose how they want to enjoy it. The Seoul Chicken sandwich, tossed in gochujang sauce and served with fire-and-ice pickled vegetables on a toasted brioche bun, offers a kick. After suffering a horrible tragedy last summer when his son drowned, this Dallas-native is finding healing through music and touring once again. His fans (known as the Yee Yee Nation) are excited to welcome him back, where he will be performing songs from his nine studio albums as well as recent singles, such as “Damn Strait,” “Holler” and “That’s Why I Love Dirt Roads.”
Dragons Go Red in February This month the CISD Health Services Department works to raise money and awareness for heart health. Money raised will benefit the American Heart Association. Thanks to these wonderful registered nurses who are dedicated to keeping Dragons healthy and happy all year long.

You Know the Code...
M
y refrigerator currently contains another woman’s food — my acrossthe-street neighbor to be exact. It’s a so-called inconvenience I wouldn’t trade for the world. Long ago in a different house with a different refrigerator, my husband and I celebrated our daughter’s first birthday with our extended families. Weeks later, I loaded my seven-month pregnant belly on an airplane and relocated my family of three (soon to be four) to Southern California — Victorville, to be exact, for anyone who may be confusing this with a desirable location. The high desert with 100-degree days featured rocks, so many of them. And it was thousands of miles from both our families. Fast forward 17 years and four moves later, after dwelling near beaches, mountains, swamps and corn fields. I sherpa’d babies cross-country on both pre- and post-9/11 flights. Before our first move, I remember my grandmother saying, “Family is the four of you, no matter where you live.” Her words rang true during each relocation. Mostly. After arriving in Southlake, I found myself needing more than my foursome could provide. I craved an extended community, like my friends and family four states ago. But just wishing things were different wasn’t changing anything (Did it ever?), so putting wishes aside, I let go and dug in. I asked for phone numbers, said yes to invitations and waved at every car, runner and dog-walker who
passed. And in time — so much time — the desire to know and be known started to feel attainable, baby step by baby step. Like most things of value, my current community wasn’t created overnight. New relationships are sometimes awkward and fragile, threatening to fizzle before taking root. Making history is slow and delicate and uncertain, and it takes layers upon layers before a foundation is set. Especially if you are 35. And your neighbor across the street is 72. Or if you have three kids. And your neighbor has none. Or if you are from Dallas. And your neighbor is from Delhi. Or if you wear a cross. And your neighbor wears a hijab. Different, we all know, can be good. It can even be the best. But man, different can be hard. And yet, I placed my hope in the just-because plate of brownies, the Post-it notes with my phone number and the driveway wave hello. Every connection counts. And they all add up. Today, my neighbors stand in the gap for those I love who live far away. They ground me to my righthere home. They serve as surrogates for my overthere family. And they add richness to everything in between. Looking past differences to find connections is still sometimes hard. But hard is where the good stuff is. So back to that refrigerator ... my neighbor needed a place to store some extra food. I love that she asked, and I am grateful that I had the space. Bring it, sister. You know the code to get in. My fridge is open to my neighbors. Just like me.
