Before COVID-19 reshaped all of our pastimes, I used to revel in packing up my laptop, heading over to a bustling coffeehouse and spending a few hours writing while surrounded by the sounds of espresso machines and milk frothers. There’s something about the laughter of friends catching up over drinks and kids slurping hot chocolate that keeps me productive. And, because there’s nothing worse than editing while your brain keeps thinking about what’s for dinner, a few gluten-free treats from this month’s cover model Abby Dumont’s Pinch of Salt Pastries have been a longtime ingredient in my best creative sessions. While I don’t write hungry, you might not want to dive into this month’s foodie issue on an empty stomach either. After defrosting countless frozen meals over the past few months, prepare to indulge in a series of splurge meals in “Local Dishes (Totally) Worth The Calories,” boasting everything from chicken-fried lobster to chili cheese fries. And after flipping through our annual “Dining Guide,” you’re sure to find a few more menu samplings worthy of a try. Don’t fill up before dessert. Whimsy Cookie’s Southlake franchise owners, as seen in “Faith, Family, Whimsy” know baked goods can provide something sweet, even during hardship. As they look ahead, they know mixing a little sugar and a whole lot of whimsy together is a recipe for success. We all deserve our fair share of cookies this year, whether they be the gluten-free variety available at local bistros like Brew & Batter, showcased in “Coffeehouse Vibes,” or a custom-designed sugar cookie. At the end of the day, it’s the extra dash of sweetness that will be remembered.

HOW DID YOU CHOOSE TO OPEN YOUR DISTILLERY IN DENTON? I chose to open the distillery in Denton because, just like my brand, I wanted it to be in a unique city! I also wanted to be what Tito’s is to Austin and to bring notoriety to another city in Texas. HOW DID YOU COME UP WITH THE NAME NOBLE WOLF VODKA? I went to Plano West Senior High, and we are the Wolves. ‘Noble’ was a nickname I had. It worked perfectly since I have a Siberian husky. His name is Blue. He’s actually the logo on the bottle. I had him drawn and turned him red. WHAT MAKES YOUR VODKA DIFFERENT? My vodka is made from grapefruit. People think it must be flavored or an infusion, but it’s actually the vodka. There’s no potato at all. It’s totally different. HOW DID YOU SELECT GRAPEFRUIT AS THE BASE? The acidity in grapefruit is so high. It’s a better fit for vodka. I went to the chemistry department [at my alma mater] The University of Texas. I asked every professor what would be the best fit for vodka, and they all said grapefruit.

WHAT WAS THE HARDEST PART OF OPENING A DISTILLERY DURING THE COVID-19 PANDEMIC? The hardest thing so far is that bars and restaurants are closed. It’s been a really strange time. WHAT ARE SOME OF THE MISCONCEPTIONS ABOUT RUNNING A DISTILLERY? It’s not all glitz and glamor. You are there from 5 a.m. to 5 a.m. the next day. We have to hand bottle, hand apply, hand make everything. You are putting a lot of footwork in there. HOW DOES IT FEEL TO RUN YOUR OWN DISTILLERY? I never thought for me, playing football to where I am now, that I would have a distillery. I never thought at 22 years old that I would sell a little over 10,000 cases over three years. I’m also very grateful for people giving it a chance. WHAT’S NEXT FOR NOBLE WOLF VODKA? I’m a one-trick pony. I’m sticking to grapefruit-distilled vodka for the long run. If you are good at many things, you are good at nothing. If you are good at one thing, you can make something special. I just want to be the best grapefruit-distilled vodka on the market.

B
lack directors are making movies across all genres. Whether it’s through comedy, drama or action, these filmmakers are telling stories that deserve our attention. Award-winning filmmaker Ava DuVernay will go down in cinematic history thanks to everything from the Martin Luther King Jr. biopic “Selma” to the Central Park Five dramatization “When They See Us” to Disney’s “A Wrinkle In Time.” Don’t let time keep you from historical epics like Spike Lee’s “Malcolm X.” The great filmmaker and producer displays style, pizzazz and personality in cheeky comedies like “Do The Right Thing,” as well as a serious edge through movies like “BlackKkKlansman.” While rising actor John David Washington received plenty of praise for his portrayal of the determined detective, he still has big shoes to fill following his father, Denzel Washington. He may be best known for his work in front of the camera, but his directing talent has shined through with films like “Antwone Fisher,” “The Great Debaters” and “Fences.” Steve McQueen (unrelated to the King of Cool) delivers powerhouse dramas, whether it’s in the Academy Award-winning “12 Years A Slave” or the tensely wrought thriller “Widows.” Independent filmmaker Barry Jenkins shows unique perspectives through the LGBT drama “Moonlight” and his adaptation of James Baldwin’s “If Beale Street Could Talk,” while comedians like Jordan Peele make way for satirical yet harrowing commentary on horror movies like “Get Out” and “Us.” Be on the lookout for Ryan Coogler, who has dazzled audiences with the Oscar Grant III biopic “Fruitvale Station,” the “Rocky” spinoff “Creed” and Marvel Studios’ first black superhero movie “Black Panther.” Whether you want to see Michael B. Zero The Hero How To Live With A Zero-Waste Mindset Waste is all around us. While it may seem harmless to use plastic bags or chunk Amazon boxes, those actions pile up. In 2017, U.S. landfills received 267.8 million tons of municipal solid waste, according to the Environmental Protection Agency. That figure doesn’t even factor in the amount of recycling and composting done in 2017 — 67.2 million and 27 million tons, respectively. Working to reduce these numbers is where zero waste comes in.
The ‘Why’ Of It All Behind everything you do, there is a reason. Meera Angus, a Dallas-based blogger who writes about zero-waste living, found her calling after visiting a landfill. “I’ve always been environmentally conscious, but I saw that and I was like, ‘OK, I can at least do my part and try and educate others about making small changes,’” Meera says. “I think if all of us do at least a little bit, it will make some kind of a dent.”
Small Steps, Big Impact Don’t think you have to fit all your trash into a mason jar to conform to zero-waste living. There are a variety of ways to easily reduce your waste — like composting, which allows your organic waste to naturally decompose, enhances water retention in soil and reduces chemical fertilizer reliance and overall methane emissions. Mindfulness, especially with food, can also help raise your zero-waste mindset. Taking stock of what groceries you actually need every week can help reduce what you buy. 20 • SEP 20
“Being really mindful of what I’m bringing into the house, what kind of packaging it’s in and really just getting what I need opposed to just mindlessly buying things — I think that’s the first step to overall getting into the lifestyle,” Meera says. Bulk buying items like nuts, grains and flours, especially when you can bring in your own containers, is another way to eliminate unnecessary waste.
Zero Waste In The Time Of COVID-19 COVID-19 has affected anyone living with a zero-waste mindset — from new considerations like the safety of bringing your own bags to the store and buying takeout to support local businesses. “We’ve been doing a lot of grocery pickup at Central Market. In the past, when you use grocery pickup, you could bring your own bags,” Meera says. “[That’s] not the case right now...so that was a big change. But health and safety, that’s the priority.” While Meera is also enjoying more takeout, resulting in more styrofoam and non-recyclable materials in her home, she knows that these actions are OK in moderation, and she is just looking to balance out her waste consumption. “It’s just a trade-off. It’s what you think is important at the moment,” she says. “I could just cook everything at home seven days a week and not deal with takeout containers. But for me, it is important to support small businesses and restaurants.”

KK’S CHICKEN AND WAFFLES Sweet and savory balance finds a whole new meaning at Lo-Lo’s Chicken & Waffles. The Southlake location has 10 different varieties on the brunch menu, but the KK’s provides the largest spread. With three pieces of Southern fried chicken, two waffles, grits and two eggs with cheese and onions, diners better come hungry if they’re planning on ordering this splurge item.
BLACKLAND PRAIRIE FARMS PORK BELLY Malai Kitchen’s Southlake location is known for its hearty Southeast Asian cuisine, with bold dishes inspired by Thai and Vietnamese recipes. While healthier specialities can easily be found on its menu, the Blackland Prairie Farms Pork Belly provides both deep umami flavors and richness. “This dish is definitely the Vietnamese version of comfort food — warm, rich broth, noodles and, of course, melt-in-your-mouth pork belly,” Malai Kitchen chef and owner Branden Wages says. Slow braised in broth for eight hours, the pork belly is served with crispy potato straw, marinated shiitakes, rice noodles, tofu, scallions and a soft tempura egg, making for a filling dish complete with diverse tastes and textures.

CISD BOARD OF TRUSTEES RECEIVE CULTURAL COMPETENCE ACTION PLAN After hours of public comments and testimonies from Southlake Carroll students and alumni, the CISD board of trustees voted to receive the Cultural Competence Action Plan and authorize the administration to hold a series of workshops. The Cultural Competence Action Plan is the byproduct of the District Diversity Council, a 63-member CISD committee formed in December 2018 to address racism and prejudice in the district. According to the August 3 board agenda, the fiveyear action plan proposed solutions such as requiring diversity training for teachers and staff and establishing a discrimination reporting process. During the public comments portion of the initial meeting, 66 speakers voiced their support of the plan while 30 speakers voiced concerns. The District Diversity Council recommended the board authorize implementation of the plan, and the board voted 5-2 to receive the action plan. CISD School Board President Michelle Moore stated during the August 17 meeting that the board would plan to host a workshop to discuss the plan during the week of September 21. After, the board would host a community engagement event to discuss the plan with the public.
CARROLL ISD RELEASES REVISED 2020 VARSITY FOOTBALL SCHEDULE Carroll ISD released the revised 2020 football schedule on August 12 on Twitter, with the season officially scheduled to start on September 24 with a scrimmage against DeSoto High School. The regular season will kick off on October 2, with a game against Rockwall Heath at Dragon Stadium while the first away game will be on October 8 against Rockwall High School. The Dragons will continue to play through October, facing Denton Guyer High School on October 16 at home and Byron Nelson on October 22 in an away game. District play will continue as the Dragons face off against the Keller Indians on October 30 at home and Keller Central in an away game on November 6. The last two games of the regular season will feature matchups against Keller Timber Creek on November 25 and Keller Fossil Ridge on December 4. The district has stated all varsity football tickets will be general admission this season. As of publication, promotional nights have not been set.

CARROLL SUPERINTENDENT DR. FALTYS ANNOUNCES RETIREMENT CISD Superintendent Dr. David Faltys will retire from his position effective January 4, 2021, according to a school release. Dr. Faltys has served the district for more than 15 years in this role, and he will have completed 33 years of service in public education by retirement. During his superintendent tenure, CISD completed three successful bond programs, advanced technology district-wide and received countless accolades. The release states Dr. Faltys originally planned to announce his retirement right after spring break for an August departure, but the COVID-19 pandemic altered that timeline. “It’s been a hard year, and it didn’t seem right to step away before the new year started,” says Dr. Faltys via release. “We have amazing teachers, administrators and support staff. They have been working diligently to create a safe and caring environment for our students whether they are learning in person or virtually. It’s time to lean into this next phase of leadership.” The Carroll School Board discussed the superintendent’s intent to retire at its August 17 meeting. Dr. Faltys has stated he will remain in his leadership position through the search and transition period for his replacement and that he will likely leave the district in the hands of the new superintendent before the end of the year. QUINN EWERS COMMITS TO LONGHORN FOOTBALL PROGRAM Southlake Carroll quarterback Quinn Ewers committed to play college ball at The University of Texas at Austin on August 14. The junior recently claimed national recognition, including earning a five-star recruit status, being named “ESPN’s” No. 1 recruit, gaining the title of "generational prospect" from 247Sports and being named MaxPreps’ Sophomore of the Year. During the 2019 season, Ewers led the Dragons to a 13-1 record and threw for 4,003 yards and 45 touchdowns, making him an underclassman to watch. He also only recorded three interceptions this season and completed 72% of his passes, according to MaxPreps. According to “ESPN,” Ewers will become the first No. 1 prospect to sign with the Longhorns in the 16 years that the organization has ranked recruits.

PARENTS, STUDENTS HOLD APPRECIATION DRIVE-THRU FOR CISD Audra Snead wanted Carroll ISD to know how grateful families are for their hard work and communication throughout the last few months. That’s why she and about 100 people drove through the CISD administration center to show their support for the district. As a mother of two Dragons currently going through CISD, Audra has been concerned about what school will look like for her children in the fall, just like any other parent in the district. Yet throughout the tumultuous past few months, Audra has been impressed with Carroll's communication and commitment despite all of the challenges they’ve faced over the summer. To thank school administrators and board members for their hard work and dedication to the community, Audra reached out to her peers through social media and organized a drive-thru event where they showed up at the administration center, honked their horns, waved signs of support and shared treats they brought for them.

CARROLL ISD LAUNCHES COVID-19 DASHBOARD After 10 staffers and six students recovered from COVID-19 over the summer, Carroll ISD launched a COVID-19 dashboard to keep parents and families in the loop on the public health situation in the district. The dashboard breaks down each campus into four categories — staff cases, student cases, recovered staff cases and recovered student cases. New and recovered cases will also be communicated via daily eBlasts emailed to employees and parents at each campus. “I know we will have a breakout here or there,” CISD Superintendent Dr. David Faltys said at the August 10 board meeting. “I know we’ll have a case here or there. And we will manage those as quickly and transparently as possible.” You can view the COVID-19 dashboard now on Carroll’s #SAFEdragon page on its website. MORE THAN HALF OF DRAGONS SIGN UP FOR IN-PERSON INSTRUCTION More than half of Dragon families who filled out the annual student verification by the deadline indicated selected in-person instruction for the start of the fall semester. According to the district’s website, 56% of the 8,178 respondents, or 4,617 CISD parents, signed their children up for in-person instruction while 44%, or 3,561 CISD parents, signed their children up for remote learning through the Dragon Virtual Academy. Those interested in changing their child’s learning platform for the second grading period will need to notify their principal by October 2.
MASK POSSE PROVIDES MASKS FOR SOUTHLAKE DPS STATUES Over the summer, the Mask Posse in Trophy Club has sewn and distributed around 6,000 masks across the world. Two of those masks have gone to the firefighter and police officer statues in front of Southlake DPS headquarters. The group of six women has been continuously sewing masks out of Fellowship United Methodist Church since the pandemic started in March. Although the Mask Posse has provided masks to Texas Oncology, Metroport Meals on Wheels, Southlake DPS and other organizations, member Dr. Katie Simpson thought the group could spare a few to send a friendly reminder to mask up to those who passed Southlake DPS headquarters. DRAGONS START SHOE DRIVE TO BENEFIT IMPOVERISHED CHILDREN While wearing a pair of shoes may not seem like a privilege to some, over 300 million children walk barefoot across the globe, according to the Soles4Souls nonprofit. So three Dragons started a local initiative to give shoes to the children who need them. After stumbling onto a Soles4Souls donation box last summer, Mateo Bryce and brothers Matthew and William Blount looked into the organization and was shocked to learn that millions of children didn’t have access to basic necessities like footwear. Mateo’s mother Yvonne says the boys decided to step up and lead a local effort to benefit the organization. Their activism didn’t stop there as the trio partnered with youth groups at the Good Shepherd Catholic Community and gave a presentation at Carroll Middle School to solicit even more donations. Their efforts resulted in collecting over 1,500 pairs of shoes, which they’ve donated to Soles4Souls to deliver to impoverished children across the world. Yvonne says their goal is to collect 10,000 pairs of shoes. CITY OF SOUTHLAKE PROPOSES HALF-CENT DEBT TAX DECREASE FOR FY2021 BUDGET Despite economic losses including reporting a 7% sales tax decrease and 62% hotel occupancy decrease from last year, the city still managed to propose a half-cent debt tax decrease in the FY2021 budget. This brings the total tax rate down from $0.41 to $0.405. The city will continue to provide a 20% homestead exemption, and based on the averaged value home combined with the exemption, the tax rate equivalent is equal to $0.324 per $100 valuation. The $105.2-million budget focuses on capital improvement projects in the amount of $13.7 million, prioritizing drainage improvements, traffic and intersection safety initiatives and Southlake Sports Complex updates. Cash and short-term borrowing will be mainly relied on for these initiatives, so the city can continue reducing its debt obligations. The council will hold its first public hearing on September 1 and vote on the proposed budget and tax rate on September 15.

ROBINHOOD ANNOUNCES EXPANSION INTO SOUTHLAKE Robinhood, a financial services company known for offering commission-free investing, is expanding into Southlake. The online broker announced the news on August 11, also including Robinhood would hire in Arizona. Robinhood stated on its blog that, “this year we plan to hire hundreds of additional registered financial representatives in Southlake, Texas, and Tempe, Arizona.” On top of financial representatives, Robinhood will also hire support staff to help meet the expectations of its customers. DURHAM MATH TEACHER RECOGNIZED FOR ESSAY COVERING MENTAL HEALTH The Region XI Education Service Center recognized Durham fifth grade math teacher Komal Panjabi for her essay on mental health awareness in education — the same essay that resulted in her being named the 20192020 Carroll ISD Elementary Teacher Of The Year. Komal says her children and students inspired the essay, which focuses on relationships. Komal’s classroom is centered on the circle of courage, which embraces generosity, mastery, belonging and independence, giving students clear expectations for what they can expect and what is expected of them. Actions like tutoring fellow classmates, gathering materials for their friends when they aren’t in the classroom and being generous with their time are recognized. By allowing students to be open and providing a safe space for their thoughts, as well as practicing those actions herself, Komal knows that she is making an impact. “Given I teach math, it is really important for the kids to be able to ask questions and not feel afraid to admit they don’t know something,” Komal says. “I think these aspects make them feel as though they have a safe place to open up and communicate.” SOUTHLAKE STYLE GIFTS MORE THAN $37,000 IN ADVERTISING MATCH PROGRAM Since launching the Advertising Match Program in July, Southlake Style has partnered with more than 30 local businesses to ensure their marketing dollars could go farther than ever before. FORT WORTH ZOO NAMED NO. 1 IN AMERICA BY ‘USA TODAY’ You don’t have to travel very far if you’re looking to go to the No. 1 zoo in America. In fact, it’s just a short drive down to Fort Worth. After creating a national list of 20 zoos that excel in animal care and human interaction, “USA Today” opened the pool for people to vote on their favorites in July, according to a media release. After fans cast their votes, the Fort Worth Zoo finished first in “USA Today’s” top five zoos for the first time in the zoo’s history. The Fort Worth Zoo draws out over 1 million visitors every year thanks to its 7,000 animals and is debuting a new elephant attraction in 2021.

UMBRA WINERY CLOSES GRAPEVINE TASTING ROOM Umbra Winery’s Grapevine tasting room has closed. The winery based out of Springtown, Texas, announced on August 3 that it would consolidate its operations to its vineyard home base. The social media announcement references Texas Gov. Greg Abbott, COVID-19 and TABC restrictions when explaining this decision. Owners John and Debbie Wilson first opened on Main Street in Grapevine in 2014. The couple also shares this announcement is not a goodbye to their winery, just a see you later. “Change is hard,” Debbie says on Facebook, “but we are so excited to now focus all our efforts on our beautiful Springtown venue and continue to grow it.” ANAMIA’S TEX-MEX OPENS IN TROPHY CLUB Trophy Club welcomed a new Mexican restaurant in late July, along with all of the guacamole and queso fixings that come with it. Opening its first restaurant in Coppell in 1996, Anamia’s Tex-Mex is a family-owned and operated Mexican food franchise that owns six restaurants across North Texas, including one in Southlake that was named a finalist under Southlake Style's Readers' Choice 2020 Food & Drink category. Its newest location opened at 2250 Hwy. 114, Suite 300 in Trophy Club. Although it has implemented social distancing and safety protocols due to COVID-19, that hasn’t stopped it from serving its specialty fajitas, tamales, enchiladas, quesadillas and margaritas in the dining room. CITY LAUNCHES SOUTHLAKE SAFE CLEANING INITIATIVE In order to help fight against COVID-19, the city has launched the Southlake Safe initiative. Through Southlake Safe, businesses voluntarily pledge to follow recommended health and safety guidelines and are then provided with a Southlake Safe Pledge kit, which includes PPE essentials, a thermometer, hand sanitizer and a Southlake Safe decal to place on their storefront. The city will keep a directory of businesses that have joined Southlake Safe, which includes Southlake Style, and will produce recurring features on different Southlake Safe businesses.
DFW RESTAURANT WEEK KICKED OFF ON AUGUST 31 Running through September 6, DFW Restaurant Week has five participating restaurants within the Southlake-Colleyville-Grapevine community, with numerous others outside of the Southlake area also participating. Kirby’s Prime Steakhouse in Southlake, Next Bistro in Colleyville and Ferrari’s Italian Villa, Mac’s on Main and Perry’s Steakhouse and Grille in Grapevine are among the participating restaurants, according to a press release. Participating locations will offer dine-in and takeout options as well as three-course prix fixe dinners for either $39 or $49. Two-course lunches for $19 will also be offered. in 500 My 2020 Letter
O
ur family has an annual Christmas tradition where we write letters — but not necessarily to each other. They are a summary of the past year and what we look forward to in the next year. I’m pretty sure my letter this year will simply be COVID-19 and racial unrest! My family and I have lived in Southlake for 11 of the past 14 years. While we have moved to several states and experienced life in major cities and suburbs, Southlake is the only city we’ve lived in twice. We came back because it was familiar and provided a smoother transition for our youngest daughter. It has been an interesting journey, but I have never experienced anything like what we are seeing around the country, and in Southlake. When I reflect on the pandemic and the racial unrest spurred in part by the killing of George Floyd, and others at the hand of police, it has not all been bad. I’ve learned a lot about our community. I’ve attended more city council meetings than ever before. I’ve learned more about city government, including what SPIN actually does. I’ve met neighbors I did not know in my own neighborhood. I’ve ordered takeout from restaurants where I’ve never dined before to support small businesses. I’ve taken long walks and seen neighborhoods and parks I never knew existed, not to mention my personal and professional growth. I have also witnessed firsthand an undercurrent of racist and bigoted behavior that often goes unnoticed in less challenging times. I am by no means
naïve. I knew it existed, but not to the levels I have seen recently. I was active in the community for many years. We have friends of all races. Our daughters went to school here. We attended church in this community. Yet my friends and our deeprooted beliefs, our views on racial disparities and personal life experiences that shaped these views had never been the topic of any real or meaningful conversation. I think we were all, myself included, basking in the superficial, pride-filled lifestyle of Southlake. “Protect the tradition.” We embraced that sentiment. After all, we all want to belong. Times are changing. We are in a time of reckoning. As Southlake residents, we will each have to examine our hearts to move forward. Let’s define and put clarity around what traditions we are protecting. Our kids are watching us, and I believe more education happens outside the classroom. It happens in our homes and with those we surround ourselves with. Allan Jenkins, CEO of the Opportunity Agenda, stated, ‘This is our modern civil rights movement, a time to address less visible but very important inequities in our society.” I remain hopeful that my Christmas letter next year (God willing) will include stories of resilience, openness, respect and love. I hope my 2021 letter will be about how Southlake became a more inclusive community, not just with words but with deeds. That is a tradition I would be honored to protect.

Pinch Of Salt Pastries Owner And Baker Provides Gluten-Free Treats Across The Metroplex
A
bby Dumont has always loved baking. Whether she’s decorating Christmas cookies with her family or baking a cake for birthday parties, Abby has always enjoyed making people smile with her assortment of delicious desserts. And when people bite into her cakes, cookies, brownies and donuts, they don’t even realize they are all gluten free. Even though her business, Pinch of Salt Pastries, has weathered some challenges during the COVID-19 pandemic, she has continued to grow with her pastries, all from her commercial kitchen in Southlake. I HAVE ALWAYS… baked at home with my family. That’s been part of my life for as long as I can remember. My mom has always been passionate about it, and we would always bake everything from scratch for holidays and birthdays alike. We would always open up the recipe book, test out our favorites and try new things. It made me appreciate the mistakes as well as the perfections of baking. THE KEY TO SUCCESSFULLY BAKING IS… experimenting. It’s sort of like a science. If you’re already familiar with the basics, like how to cream butter and sugar and make a basic cake or cookie batter, then you already have the foundations to stack bigger building blocks on top of it. You really have to take it recipe by recipe and make adjustments as you go. You won’t always get it perfect. You just have to practice and learn from your mistakes and try and try again. I GOT MY FIRST BAKING JOB… in 2012 after I graduated college from the University of Mary Hardin-Baylor in Belton. I was working part time at a bakery in Colleyville, and I was totally loving it. We had a lot of free rein in doing new recipes, trying new flavors and being unique and creative. I think that’s what gave me the confidence in myself to really take ownership of what I was doing. I GOT TO A POINT WHERE… I digestively wasn’t feeling very great, and I needed to make a change in my life. I found out that I never really digested gluten, and I needed to take it out of my diet. I really needed to rethink how I approached eating and took a deep dive into the real foods world. I HAD SOME GLUTEN-FREE PASTRIES WHEN I STARTED THIS JOURNEY… and I wasn’t happy with them. They tasted like cardboard, the texture was all wrong and they were leaving behind a weird, funky aftertaste. I figured if I wanted gluten free to taste the way I wanted it to, then I was going to have to make it myself. GLUTEN-FREE BAKING… isn’t so much different from regular baking. Whether it’s a cookie or a brownie, I go through the same series of tests I do for any recipe to decide what’s going to make something chewy, cakey, fluffy or creamy. It could take another egg or another cup of milk — you just keep making modifications and testing it until you get it right.

I REALIZED… there was a gap in this area and that coffee shops were looking for a wholesale option when it came to gluten-free desserts. It wasn’t just individual people that needed a gluten-free birthday cake here or there. There were local businesses that really needed it, and they’re going to reach more people than I ever could on my own. So I secured my own booth at the Grapevine Farmers Market in 2015 and just expanded my business from there. WE MAKE... cupcakes, cakes, breads, pound cake, cookies, brownies, sausage and cheddar kolaches, cinnamon rolls, pies and a whole bunch of other pastries. We have dairy-free, paleo, vegan and nut-sensitive options. We really make it all. IT SHOCKS ME… how much Pinch of Salt Pastries has grown every day. We went from being a vendor at the farmers market to supplying for 16 coffee shops across the Metroplex, including RE:defined Coffee, Brew & Batter, Beanvoy Coffee, Buon Giorno, Summer Moon and Union. Our newest partner is a coffee shop in Arlington that opened over the summer called Inclusion Coffee. We’ve been able to grow organically and slowly, so it’s been manageable taking on a new shop or menu item. WE’VE HAD TO ADJUST OUR APPROACH… due to COVID-19. In addition to our wholesale orders, we’ve also rolled out to-go and custom orders that people can pick up for contact-free curbside delivery. They can preorder donuts, muffins, crumble bars, bread loaves and more from our to-go menu online Monday through Saturday. MY FAVORITE PART OF THIS JOB… is providing that baking experience for those who have been missing it. I can’t tell you how rewarding it is to hear that excitement from our customers when they share what they’re eating. Some of them haven’t eaten cinnamon rolls or sweets in 10 years, and they love just being able to taste it again without worrying about their health. The passion I have to serve those who can’t have any gluten or cross-contamination is a big motivator for me to keep giving people what they’re looking for. That’s been the most rewarding part of all of this.

FAITH FAMILY WHIMSY MOTHER-DAUGHTER DUO BRINGS WHIMSY COOKIE COMPANY TO TEXAS B Y D AV I D D U N N P h o t o by b l u d o o r s t u d i o s

heridan Gleason and Sharon Hicks know obstacles test resolve. After opening the first Texas store of the Tennessee baking franchise Whimsy Cookie Company, they balanced the stresses of growing a business, expanding their family and learning the ins and outs of raising a boy with special needs — and all of that is before you throw a pandemic into the mix. After everything, Sheridan and Sharon know they got through it with the only secret recipe they know — faith, family and a dash of whimsy. “If there was an obstacle you could throw at us, it’s been thrown,” Sheridan says. “We just want to do our part, keep our doors open and let people know that we are all in this together.”
A COOKIE AND A LOT OF LOVE Born and raised in Texas, Sharon has been a practicing attorney for 30 years, and Sheridan was a school teacher before Whimsy Cookie became a reality. After marrying her husband Matt, Sheridan became pregnant with their first child Ace. But 20 weeks into her pregnancy, Sheridan received an update on her first child during a regular CT scan. “The inside of his head wouldn’t show up. He had so much fluid on his brain that it just came up as a black screen. The doctor didn’t even think that he had a brain,” Sheridan recalls. “The doctors didn’t think he would make it to term and be born alive.”

Despite not knowing whether he would live past his birth, Sheridan and Matt prayed about it and decided they would carry Ace to term saying, “No matter whether we got two minutes or two hours with him, we were going to enjoy whatever time we had with him.” Thankfully on July 11, 2016, Ace Gleason was born in much better condition than expected. Sharon says there were tears all over the hospital room when the Gleasons welcomed Ace into their lives. “The best words I’ve ever heard were, ‘He’s here, and he’s crying,’” Sharon says. The couple learned Ace had Hydrocephalus, a cranial condition where fluid doesn’t flow through the ventricles properly and floods the brain, causing head enlargement and developmental delays. He had to have surgery at 2 days old to remove excess fluid out of his head, then again at 7 months when his shunt failed to drain. “He just learned to walk, and he’s 4 years old,” Sheridan says. “It’s always a challenge, not knowing what the day is going to bring. We’ve just learned to take it step by step and be thankful for whatever time we’ve been given with him.” Despite the difficulties, Ace has been an absolute joy to the Gleasons. A kid who smiles almost as much as he laughs, he loves to play with his younger brother Pryce, sing nurseries to the family’s newborn Tate and listen to classic rock ’n’ roll. “He’s a redheaded firecracker,” Sheridan chuckles. “He’s very determined, strong, independent, opinionated. He knows what he wants, when he’s going to get it and what he’s going to do for the day.” One of his wants has always been cookies. As a self-taught baker, Sheridan could ensure Ace always had easy access to pastries. “He would eat cookies and muffins for the first two years of his young life,” Sheridan says. “That’s the way to his heart: a cookie and a lot of love.”
BRINGING WHIMSY TO TEXAS As Ace kept growing and going to physical therapy, Sheridan wondered what his future would look like and what he would do for work. At the same time, Sharon wanted to spend more time with her family and help Sheridan raise Ace. “My husband and I were looking for something to slow down and do with our grandkids,” Sharon recalls. “We were looking for something to do together to be able to take care of Ace and also something he could potentially do himself later on. We wanted to find something that could extend into the long term for him.” With Ace’s love of cookies in mind, their answer came in 2018 when the family discovered the Whimsy Cookie Company through blogger Collins Tuohy Smith, the adoptive sister of Michael Oher of “The Blind Side” fame. After looking deeper into the company, its story and values, Sheridan and Sharon fell in love with the brand and decided to bring it to Texas. 52 • SEP 20
“One of their mottos is Faith, Family, Whimsy, and that was really important to us,” Sharon says. “This was a place that welcomed anybody that walked through its doors, and we wanted to be a part of that.” After meeting with founder Laurie Suriff in Memphis, Sharon and Sheridan purchased the rights to open 10 stores in Texas, with the first in Southlake. Whimsy Cookie Company specializes in several different types of cookies, from buttercream bites to gooey butter cookies made from cake batter. But of all of its fluffy options, Whimsy’s most popular item is its sugar cookies, which can be specially decorated into custom shapes like dragons and footballs. “We picked Southlake as our first location because we knew about the family atmosphere and the Dragon camaraderie,” Sheridan says. “Its strong sense of community was perfect for Whimsy Cookie.” Their first store opened at 2645 E. Southlake Blvd., Suite 180, in September 2019, an inviting bakery filled with fancy furniture, colorful merchandise and pink and gold decor. At the front of their store, the counter is lined up with so many tasty cookie selections that it’s hard to choose just one. “It’s one of those things where you’ve waited for so many months, only to walk in and see your hard work and efforts fully realized in front of you,” Sharon says. “It was breathtaking when we saw the final product.” After a strong opening and overwhelmingly positive feedback from the community, Whimsy Cookie got off to a great start in Southlake with sights on expanding into Collin and Denton Counties. It looked like Whimsy Cookie’s direction could only go up.
FEELING LIKE FAMILY In March, COVID-19 came to Texas, closing schools, canceling events and shuttering businesses’ doors. Since many of Whimsy Cookie’s largest orders come from big holiday celebrations like the Fourth of July and St. Patrick’s Day, Sharon says event cancelations impacted their growth. “It changed everything almost immediately,” Sharon says. “We were on an uptick of growth versus a business of two or three years. We just came off of a very successful Valentine’s and Easter when COVID-19 hit. It really hurt our whole process after seven months of getting established and getting people into the door.” Sheridan, meanwhile, was in the middle of giving birth to her third child when COVID-19 escalated into a pandemic. “It was like things were on fire,” Sheridan says. “It was the same weekend where everybody was closing businesses and piling into lines at H-E-B. We just got out of the hospital, and my husband and I didn’t even know what was going on. We were just sitting there with a newborn, and we didn’t even have toilet paper.” After Sharon and Sheridan got their necessities and bunkered down at home, they had to shift focus from expanding to sustaining their current and only location through the pandemic. They started by partnering with DoorDash and GrubHub for expanded delivery services while rolling out curbside pickup to limit person-toperson interaction. They’ve also introduced corporate

logo cookies designed to support local businesses, including the city of Southlake. Sharon says staying connected with the community and building a core network of new and repeat customers helped keep Whimsy Cookie afloat. “We keep getting new people that come in saying, ‘I never knew you were in here before,’” she says. “It’s very gratifying to build that relationship and start knowing your customers by name when they come in because they do come in on a regular basis. We’re appreciative that we’re beginning to build a fan base of Whimsy Cookie lovers, and we love cultivating that community with Southlake.” But Sharon and Sheridan didn’t just focus on the business itself. They also focused on retaining employees by implementing a 10% hour reduction, a move that cookie decorator Francis Rogers appreciates. “It kind of feels like a little family,” Francis says. “I really appreciate Sharon and Sheridan for putting us first and trying to take care of us during this time of uncertainty.” While Sharon and Sheridan don’t know what the future will hold, neither did they when Ace entered their lives four years ago. As Whimsy Cookie looks to thrive, not just survive, the years ahead, Sharon and Sheridan know they will get through it the same way they always have: Together — with Ace playing with his younger brothers and a batch of cookies baking in the oven. “I literally started a new business, had a baby and then went through a pandemic all at once,” Sheridan chuckles. “In these crazy and uncertain times, sometimes a cookie just helps.”

ew adventures that can be accomplished while maintaining social distancing are difficult to find. But thanks to Another Round, which opened in June in Dallas, it just got a little easier. This spacious venue, adjacent to Sylvan Thirty, boasts 12 miniature golf holes, each beautifully designed to offer photo-ready backdrops for those looking for their next selfie destination. Founders Alicia and Kendall Spence decked out the entertainment area with an Oak Cliff Country Club theme, an homage to their beloved neighborhood. “After traveling to the best miniature golf venues across the country, we have drawn inspiration
from the best elements of each to bring an elevated indoor version to Oak Cliff,” Kendall says. Another Round plans to update the theme each year with new installments, but the current concept balances some of the whimsy found throughout the world’s best mini golf courses while also representing the founders’ stomping grounds. “Mini golf was always a fun activity we enjoyed on vacation, but we realized when we got home we were missing a destination near us to have a similar experience,” Kendall says. After guests make a tee time online, they will be able to walk in and enjoy a fun outing thanks to Another Round’s safety precautions.

Stop by the centrally located bar and grab a few themed craft cocktails, like the Birdie made with Deep Eddy Vodka, Pamplemousse, lemon, lavender and bubbles or the Green Jacket made with Ford’s Gin, Canton ginger, basil, lime and black pepper, before making your way to the first hole. But with other signature options like the Caddie made with Lunazul Blanco, passion fruit habanero puree, cilantro and lime and Hole In One made with Jack Rye, cardamom, angostura and orange oils, you’re sure to come back for another round. The bar also offers draft brews like Lakewood Brewing Co.’s Please ‘N’ Thank You, Peticolas’ Velvet Hammer and Manhattan Project’s Necessary Evil. Those interested in another buzz can enjoy Kiestwood’s iced coffee, sourced from Oak Cliff favorite Peaberry Coffee. That’s not the only local name you’ll find on the menu. Another Round offers finger foods from a neighborhood favorite, Cooper’s Meat Market. Those familiar with the meat market and steakhouse know what to expect from the gourmet brand. But one bite into its wagyu beef hot dog should also do the trick. Kids will love the chophouse sliders, ground chuck mixed with smoked brisket topped with steak sauce, hardwood smoked bacon and white cheddar cheese, while adults can revel in the bacon-wrapped brisket jalapeno poppers and crudite of vegetables with green goddess dressing. For a fresher take on a comfort food favorite, try the fresh mozzarella and tomato panini, made with herb pesto. But the cheesy delights don’t stop there; Cooper’s chips and queso and charcuterie are sure to be crowd pleasers. Guests comfortable with sharing the space can reserve a tee time on a weekend. Here’s how to keep your counters clean.
LEAVE IT TO THE LIFT Those lucky enough to boast a KitchenAid Stand Mixer know the pain of lugging it up and down from its idle location. So give your prized baking possession a permanent home with a stand mixer lift. These heavy-duty mechanisms will take up an entire cabinet, so make sure you have space before investing in the hardware. After it is installed, all that’s left to do is place your mixer on the shelf and swing it up to counter height when it’s time to start cooking.
