Between the Sheets Four score and 47 issues ago, a Southlake couple brought forth to this city a new publication, conceived in community spirit and dedicated to the proposition that all magazines are not created equal. The question asked over a decade ago has been answered with a resounding, “YES!” A small suburban city can and does support its own monthly magazine. So much so, that it appears the idea may be spreading like wildfire. In case you are wondering, or think I’m crazy, it is President’s Day, and I’m writing my last foreword to Southlake’s most dedicated and longest running magazine. For those of you who have enjoyed reading my personal introductions each month, thank you—after 127 of them I feel the timing is right to pass the torch of future “Leading Off” responsibilities. Starting next month, our editor Audrey Sellers is looking forward to setting the tone for future issues to come. Don’t worry; I’ll be as active as ever behind the scenes making sure we continue to publish the magazine you all have grown to love. Yet before we all move forward, please allow me a moment to reflect. Since our first issue was published in March 2006, the past 10 years of Southlake’s history have been filled with momentous occasions—many of which have been chronicled between the sheets of our favorite local magazine. Confined by this page’s unjustly small word count let me just say, Nicole and I are grateful every day to work alongside this community, full of supporters and friends as we put Southlake’s style to paper each and every month. The landscape of our city is ever changing, yet as it grows, the mission of Southlake Style and Dragon Pride magazines will always remain the same—to give our readers the opportunity to share in the enthusiasm for life in this great city. Nicole and I have learned many things along this journey. Most importantly, there is always support for a publication that is created by, and cares for the community it serves. community DEADLINE APPROACHES FOR LONE STAR ARTIST AWARD Are there aspiring artists in your family? If they’re in high school in Northeast Tarrant County, encourage them to enter their artwork in competition for the Lone Star Artist Award. Submission deadline is March 27 at ArtInTheSquare.com. The winner will have his or her artwork on display in the rotunda of the state capitol and will receive two nights of hotel accommodations in Austin courtesy of Kids Matter International. They’ll also receive a VIP tour of the capitol from State Representative Giovanni Capriglione. Additionally, a jury committee will select 100 pieces of artwork to be showcased during Art in the Square. The committee selects from these 100 exceptional pieces of artwork and awards prizes to the winners in various categories. Awards are provided by Roxann Taylor with Engel & Volkers Real Estate.

MIRACLE LEAGUE OF SOUTHLAKE PREPARES FOR SPRING SEASON March 26 is the kickoff to the eight-game spring season for the Miracle League of Southlake. Games will be played each weekend, with the exception of April 9, when a Special Olympics track and field event will be held. The Miracle League is estimating up to 200 players will register for the spring season. Registration is now open and all players must register even if a player was registered in the fall. Although past players need to re-register, the Miracle League of Southlake will make every effort to assign those players to the same teams and coaches they had in the fall to maintain consistency and continuity for the players. Registration will also be available for volunteers. MAYOR LAURA HILL CROWNED WINNER OF CARROLL THEATER’S “ACTING WITH THE STARS” Last month, 10 local celebrities competed in Carroll’s 2016 fundraiser, “Acting with the Stars.” Familiar faces from around town were paired up with Carroll’s brightest theatrical stars to compete for the chance to take home the coveted Mirrorball Trophy. Mayor Laura Hill, coached by Drew Brown and Sarah Johnson, was crowned the 2016 champion. SOUTHLAKE RESIDENT WON BIG ON “HOLLYWOOD GAME NIGHT” There was a little bit of Southlake in Hollywood last month. Southlake resident Jessica Marchetti appeared on the February 16 episode of “Hollywood Game Night,” and came away winning $25,000. The hit NBC show hosted by Jane Lynch features everyday people along with celebrities facing off in hilarious party games for a chance to win the cash. Marchetti’s episode included celebrities Hunter Hayes, Brian Kelley and Tyler Hubbard (Florida Georgia Line), Ciara and Estelle (R&B singers) and Ta’Rhonda Jones (“Empire”). ELEVEN DRAGONS SIGN ON NATIONAL SIGNING DAY The Southlake Carroll class of 2016 produced 11 athletes who signed to various universities all over the country on National Signing Day last month. Running Back Lil’Jordan Humphrey (University of Texas), Wide Receiver Zach Farrar (University of Oklahoma), Offensive Tackle Trace Anderson (Southwestern University), Cornerback Obi Eboh (Stanford), Offensive Tackle Lucas Tribble (Yale), and Long Snapper IV Seacoat who signed to Texas Tech as a preferred walk-on all signed LOIs. The Dragon Women’s Soccer program also had a great signing day, as four athletes signed Letters of Intent to continue their soccer careers at the Division 1 Level. Mary Meehan (SMU), Grace Dunker (Purdue) Allie Luna (Kansas State) and Grace Cory (Texas A&M). The Dragon Water Polo team also had a signee as Katie Nedrow signed with the Patriot League’s Bucknell University.

DRAGONS MOVE TO DISTRICT 5-6A The University Interscholastic League (UIL) announced its biennial Realignment and Reclassification for 2016-2018 last month, placing Carroll in District 5-6A. The Dragons join Lewisville, Marcus, Flower Mound and Hebron (Lewisville ISD), and rejoin Trinity and L.D. Bell, all current participants in 7-6A. District 5-6A also adds Byron Nelson, for a total of eight teams. Five of the eight teams in the new program are former state champions in football (Carroll, Trinity, Marcus, Hebron, Lewisville). The announcement serves as the official alignment for football and basketball. “We’re excited about the new district,” said Darren Allman, Carroll Athletic Director. “Although we lost Coppell, I think District 5-6A will prove to be very competitive from top to bottom in all sports. “We are also thrilled with next year’s home football schedule which will provide five great games, including Tulsa Union, Arlington Martin, Flower Mound, Euless Trinity, and Byron Nelson,” Allman added.

CARROLL INDOOR PERCUSSION SCORED SECOND PLACE AT NTCA COMPETITION The 38 percussionists on the Carroll Indoor Drum Line rocked the house at a North Texas Colorguard Association (NTCA) competition last month, winning second place. This was the drum line’s first competition of the season and their first performance in the highly competitive Scholastic Marching Open Class. The drum line is under the direction of David Walker, who started the program three years ago when he joined the Carroll Band staff. Founded in 1993, NTCA is aimed at providing a band director-friendly environment with education-based competition. The focus of the circuit is on smaller scholastic groups wishing to participate at a local level.

community EUBANKS TEAM TOOK FIRST PLACE AT ROBOTICS COMPETITION Three teams from Eubanks Intermediate School competed at the annual TCEA Robotics competition in January. Two teams competed in the arena, and one team competed in the inventions category. The inventions team, Brett Belleville and Eri Pilon, won first place and will advance to State in New Braunfels on April 30. They presented their Helping Hand, a robotic hand used to help those who have lost use of one of their lower arms either to amputation, injury or birth defect complete everyday tasks. Both arena teams were strong contenders against 100 plus other teams from the region. They changed their programs at the last minute to accommodate a surprise mat change just prior to competition and scored very high. This is the first year the Eubanks Intermediate School Robotics teams have competed, and they have already proven out of the gate to be a force to be reckoned with.

CARS HELPED MAKE A SENIOR’S 95TH BIRTHDAY EXTRA SPECIAL When you turn 95, you need to celebrate big. Lucky for Southlake resident, Neil Hercules, Call a Ride Southlake (CARS) was there to help make his 95th birthday one to remember. Last month, CARS, the nonprofit that provides free transportation for Southlake senior citizens and disabled adults, helped Neil and his wife, Sabina, celebrate with a date night at Truluck’s. CARS is currently seeking volunteer drivers and also accepts donations. “Everyone has heard of latch-key kids, but senior citizens really need and deserve an opportunity to get out of the house and retain a little independence,” said volunteer Lisa Adam. Visit CallARideSouthlake.org to learn how to get involved. CSHS NATIONAL HONOR SOCIETY COLLECTED CEREAL FOR CHARITY They say breakfast is the most important meal of the day. But for those less fortunate, it’s not always a guarantee. National Honor Society (NHS) members at Carroll Senior High wanted to do something to change that. For the first 10 days back to school after winter break, NHS students hosted a cereal drive benefitting the Battered Women’s Foundation, a nonprofit that offers long-term support for victims of domestic violence. Junior Max Perry organized the collection, which brought in boxes and boxes—1,275 to be exact—of all different kinds of cereal. A truckload of cereal arrived at the Foundation on Martin Luther King Day.

CARROLL SINGER PERFORMED AT CARNEGIE HALL For many singers, performing at Carnegie Hall is a dream. For Allie Miller, a senior at Carroll Senior High School, it was a dream come true. Miller (pictured at right), was selected by choir teacher Marla Ringel to audition for the High School Honors Performance Series. She was selected as a finalist, and last month, Miller sang at Carnegie Hall as part of the High School National Women’s Choir. More than 18,000 high school students auditioned, and only 650 students worldwide were selected for the honor. See our Q&A with Miller at SouthlakeStyle.com.

TRUSTING CONNECTIONS BOUGHT A WHOLE LOT OF THIN MINTS It was a cookie bonanza and business lesson in one. Trusting Connections (TC), the nanny agency and sitter service in Southlake, purchased Girl Scout cookies from every Girl Scout who stopped by its office on February 18. More than 100 boxes were purchased. Each Girl Scout was required to give a brief sales pitch before drawing from a note from a jar that indicated how many boxes the agency would buy—from one box to 25 boxes. TC co-founders Rosalind Prather and Caroline Malkin donated the cookies back to the Girl Scouts to support its “Gift of Caring” programs. “Caroline and I became business owners at the age of 24, and we attribute our success to the many people who believed in us,” Prather said. “The Girl Scouts organization self-identifies as being ‘2.7 million strong-1.9 million girls and 800,000 adults who believe girls can change the world,’ and we wholeheartedly support this notion.”

SOUTHLAKE PLANNING AND ZONING COMMISSION REJECTED NEW HOME DEVELOPMENT The Planning and Zoning Commission declined plans by acclaimed builder Toll Brothers to construct a 54-home development on the northwest corner of Southlake Boulevard and Shady Oaks Drive. The new neighborhood would have encompassed 49 acres. The decision to reject The Glenmore, as reported by the Fort Worth Star-Telegram last month, came from a disagreement between the builder and the commission for the entrance of the new subdivision. The commission’s proposal was for the builder to remove one or two lots at the entrance of the subdivision to give it a more “park-like” look and feel. Toll Brothers division president Rob Paul did not budge, according to the article, saying, “every lot counts.” Paul plans to regroup, which could mean this is not over yet. Toll Brothers properties in Carroll ISD include Shady Oaks, Southlake Glen and Southlake Meadows.

hen you think of giving back to the Southlake community, you probably think of the variety of charities, support groups and booster clubs in our city and the number of residents involved in these incredible organizations. And, when you think of an individual who has worked the past three decades giving back to our community, you should think of Karl Stefansson, owner of The Blind and Shutter Guys. Dare to Be Kareless! t

rophy Club native Evan Williams may consider himself to be “Kareless,” but let’s be clear. This 23-year-old entrepreneur is anything but careless about his business. Since the inception of his apparel brand known as Kareless Original in 2012, a seemingly fleeting idea has evolved into a thriving business. And it all started with one simple goal: to bring people together, while celebrating their unique qualities. The a-ha moment struck when Williams was a 17-year-old student at Northwest High School in Justin. Saturdays were always spent at local streetcar races, with Williams in the driver’s seat. “I wouldn’t say that I’m an adrenaline junkie, but I do like to push the limits,” says Williams. “I don’t like to sit on the sidelines.” This go-getter spirit inspired him to create a car club for himself and his crew of like-minded friends, all who shared the notion life isn’t a spectator sport.


“It didn’t start as a business, but just a way to identify us as a group,” Williams recalls. When the term “Kareless” came to mind, Williams said he knew it perfectly represented the type of lives he and his friends aimed to lead, where rules are ignored and self-expression is welcomed. And the grammar-defying “k”? Well, that’s just part of the attitude. “We wanted to stand out and be different. It’s something people often do in the car and bike culture—to misspell something,” he shares. “It’s just one more thing that makes it unique, and it continues with the styling of the letters and the colors in the logo. It all comes into play.” Once “Kareless” was established as their car-club motto, Williams realized it had the potential to resonate with people outside his close-knit group. “I felt like it could be something bigger,” he says. “I started making stickers that said ‘Kareless’ and giving them out to my friends. Watching them put them on their cars started to motivate me. I thought, ‘What could we do with this?’”

The Birth of a Brand Setting out to stake claim on his idea, Williams learned he would need to set himself apart even more to be granted a legal trademark. And so, “Kareless Original” was born. “I kept saying to my friends, we need to be different, we need to be original,” he laughs. “And then it just sort of turned into Kareless Original.” Rather than getting bogged down on the daunting details of starting a business (with no prior business experience), Williams turned to Google for guidance and began developing his plan to bring his dream to reality. “So many people get held up on the idea, but you’ll never have a perfect idea,” he says. “You’re going to fall on your face.” Eight out of 10 businesses fail within the first 18 months, according to Bloomberg, but Williams is still going strong four years later. The road’s been a little bumpy at times, and yes, he has tripped along the way. But like all success stories, this one continues because of his courage to get up and keep trying. “In the beginning, all the money was going into the products, so I didn’t own anything,” Williams says. “I just borrowed things where I could.”

True Champions, On and Off the Field Champions come in many forms. There are the football stars, the baseball kings and the business moguls. In the case of 10Star Apparel, you’ll find them all. More than a decade after they brought the Southlake Carroll Dragons to two state titles in 2002 and 2004, and state runners up in 2003, Chase Daniel and Aaron Luna are living the dream that first found its inspiration on the football field many years before. The duo imagined forming a business together while student athletes at Southlake Carroll, turning it into a reality in 2011 by partnering with B&E Industries, a longtime leader in the apparel industry. Here’s an update on where they are today, as they run one of the largest screen-printing and embroidery factories in the United States. If Chase Daniel’s name sounds more than a little familiar, don’t be surprised. The former Dragon wide receiver went on to become a two-time Heisman trophy candidate as a quarterback for the Missouri Tigers, has a Super Bowl ring from his time with the New Orleans Saints, and currently plays for the Kansas City Chiefs. The hardworking football player and entrepreneur also serves as founder and CEO of Grand Prairiebased 10Star Apparel, a custom apparel business that offers a wide range of services to its customers, both locally and throughout the country.

He can’t help but smile while remembering late nights spent on the floor of his friend’s tattoo shop, creating the first line of Kareless stickers to sell at car meets. “My buddy had a vinyl plotter and cheap scraps, so I would go after they closed on a Friday night around 3 a.m. and get to work,” he says. “That was the only way I could get it done, and the price was right.” He began selling these stickers based on two offers: one for $3 or two for $5, while competing vendors offered one for $5. “If I can get double the product out there and get the stickers on both sides of the car or bike, it’s worth it,” Williams says.

The Making of a Movement Today, Kareless Original has grown up from just stickers to a full apparel line. Williams and his crew of faithful Kareless Original teammates travel near and far to drift car races (think “Fast and Furious”), totaling about 45 events in the summer of 2015. Stopping to rest is not an option, with the crew sometimes sleeping just two to three hours a night before they’re back to work—always the first to arrive and the last to leave. “We like to call ourselves the ‘No Sleep Team,’ so there’s definitely a certain level of ambition to us,” Williams says. And they aren’t alone in this mentality. Phrases like “No Sleep Team” and “Live More Kare Less” have become the mantra of the Kareless Family, an unrestricted group of brand followers that builds momentum daily as Williams welcomes new members to join in the no-holds-barred movement. To become part of the Kareless Family, you don’t necessarily have to join them at a car meet, or even attend one of their Monday night promotional events at Alliance Skate Park in Grand Prairie. In fact, you don’t even have to be an extremist yourself. All you need is an internet connection and the willingness to live life your way. “A cool thing we just did in January 2016 was buy Kareless.com,” Williams says. Building upon the traffic he had already established from KarelessOriginal.com, he’s already seen growth by purchasing both URLs, and is excited for the possibilities to come. “In the last 60 days, we’ve hit 28 states and six different countries,” Williams says of his website traffic. “We had our busiest month so far in December 2015.”


Whether it’s a local order, or placed by someone from across the globe, Williams puts the same care and attention to detail into each package. Not only does he personally fulfill and deliver each one to the post office himself, but he also includes a hand-stenciled logo and handwritten note. “I think part of the excitement of getting an online order is, as soon as they get it, they can already tell what it is,” Williams says. “It lets them know we took the time to specifically mention them, while promoting the Kareless Family.”

Blazing Ahead Despite all of the success and growth over the past few years, Williams acknowledges there’s still much to come in the future. In addition to stickers and apparel, he’s looking into new products, such as custom-made backpacks. But he notes it must be unique before he’s willing to move forward with it. “If I wouldn’t use it, I can’t passionately sell it,” he says. To further their efforts to become a world-recognized brand, Kareless Original also plans to focus on YouTube videos, partnering with motovloggers (these are people who attach a camera to themselves or their motorcycle when they ride) who will share videos with their fan base. Williams also hopes to upgrade his facility space and be able to add someone to the team who can assist him with running the website when he’s on the road. And of course, they’ll continue moving from city to city and show to show. “Right now, everything I make goes back to making the business better,” Williams says. “If I keep making sacrifices and I keep hustling, I’m confident it’s going to catch on more so than it already has.” It turns out that being Kareless looks a lot like a carefully planned success story after all.

“I work on company strategy,” Daniel says, “and I leverage my personal relationships for business development.” It was always a dream of Daniel’s to start his own business, and at 10Star, he and his partner, Luna, share the common belief that growth for the company comes through hard work and relationship building. With 300 employees working at their facility, including more than 30 graphic designers who work to customize the customer experience, he’s had the opportunity to watch these relationships flourish, while developing a sustainable community business in the process. As for Luna, he transitioned from football to baseball after high school, finding success at Rice University, where he was named an AllAmerican in 2007. By 2008, he was drafted by the St. Louis Cardinals, before retiring to focus his efforts on the 10Star Apparel business as chief operating officer. In his role, he works alongside Daniel on the company’s overall strategy, while using his analytical skills to ensure it’s executed successfully and efficiently. “Studying business and marketing in college, we all knew someday we wanted to run our own company,” Luna says. “Sports do not last forever, and our education has allowed us to set ourselves up for life after the game.” When we asked Luna what he wished for 10Star Apparel’s future, he said the goal is to take the company to the top of the corporate apparel world—an achievement they’re already close to reaching. While we can only imagine the stories they’ll have to share at their next class reunion, we know they’ll fill us with Dragon Pride and the spirit of a true champion.

Since its inception seven years ago, the Scholar-Athlete of the Month program has recognized nearly 70 studentathletes with more than $30,000 worth of scholarships.

When Mark Jameson opened Mark Jameson Allstate Insurance 15 years ago, he believed in the importance of giving back to the community. So he started doing just that the day he opened his doors. A big sports fan, he loves cheering on the Dragons whenever he can. Because of his commitment to the community and student athletes, he founded the Mark Jameson Allstate Scholar-Athlete of the Month program at Southlake Carroll’s Senior High School. Each month during the school year, the program gives a $500 scholarship to Carroll student-athletes whom Jameson calls “good kids who make good grades.” Since its inception seven years ago, the program has recognized nearly 70 student-athletes with more than $30,000 worth of scholarships. Other community causes Jameson is personally involved with include baseball and softball youth sports associations as well as being a former board member and president of the Southlake Baseball Association. An active member of his church, St. Laurence, Mark has been Senior Warden (board chair) twice and is currently serving a third three-year term on the vestry (board).

Through crowd-funding platform Indiegogo, Bluesmart Inc. raised more than $2 million in pre-orders from more than 8,000 backers in 110 countries, and launched its first product in 2014: the Bluesmart Carry-on. What makes this luggage smart is not its charging station that allows travelers to charge their phones up to six times. No, the included 10.000 mAh battery that powers both an internal and external USB port is not that over-the-top. And the carry-on is designed with a built-in scale to let

you know before you even weigh in at the ticket counter that you’ll be directed to the checked-luggage line. That’s pretty handy, but might not be classified as smart. But we’re getting there. What if your luggage could tell you that it has been left behind? The Fad Diet Bandwagon Is it worth hopping on or should you steer clear?

S

pring Break is upon us, and soon after, the summer and all of its swimsuit-and-sun glory. If your bod isn’t quite ready, don’t sweat it. The $20 billion weight-loss industry continues to churn out products and fads to over 100 million dieters across the United States. You can even draw inspiration from another weight-loss reality show, “My Diet is Better Than Your Diet,” which premiered on ABC in January. Surely, you would think, with all our advances in technology, human genome mapping and advanced understanding of our basic biology, we would know what diet was the best for us. The truth is there is no one good or bad diet, says Kimberly Maus, M.S.N., NP-C, a local nurse practitioner. “The concept of a diet that works for everybody is as ridiculous as a shirt or hairstyle that would look good on everybody,” she says. Maus helps her clients change their nutrition habits for the better as one part of a holistic approach to healthy living. Looking to improve your nutritional health or lose a couple of extra pounds? Maus recommends first taking an honest look at your eating habits—and your motives. “Time permitting, I ask patients to come to their first appointment with a diet log for the past week,” she says. “I look at the baseline habits, health history and motivation for change.” For Maus, simple is better. “If somebody who needs to lose 10 to 15 pounds is drinking three to four sodas daily, I’d focus on that first. There’s no sense in making things more difficult than they need to be,” she says. But sometimes those simple changes are not enough. “When a client hits a plateau, it’s time to make additional changes to achieve results,” she says.

Are you at a plateau yourself? Constant on and off dieting, something many of us are guilty of, is bad in the long-term. As Maus explains, “Every time we jump on and fall off the fad diet bandwagon, it costs us both physiologically and psychologically. Each failed diet makes it that much more difficult to believe that this is a battle that can be won. “The better way is to find new lifestyle habits that we can stick to for years to come. But once you find the combination of healthy diet and exercise that works for you and your lifestyle, the results are worth it,” says Maus. “When you make reasonable changes and can actually see and feel the benefits, the process becomes selfmotivating.” Many of us know this in our hearts, but it doesn’t keep us from trying one of the many popular diets out there. Ten years ago Atkins and South Beach swept the country, but today, Paleo, gluten-free, cleansing diets, and that one with the coffee and butter are gaining steam. Trying to wade through these diets can quickly become a confusing jumble of health terms like glycemic index, omega-3 fatty acids, saturated fats and so on. But most experts agree that the way to lose weight involves cutting calories, increasing exercise and maintaining a healthy diet. We’ve done some research, and with Maus’ help, took a look at a few popular diets to see which ones might aid you on your health-kick goals. Summer might be your initial motivation, but think bigger—these diets just may transform your life.

BULLETPROOF DIET THE GIST: This diet is the brainchild of Dave Asprey, a Silicon Valley entrepreneur and investor who calls himself a biohack expert. He spent 15 years and $300,000 to develop what he calls a “high-performance executive diet.” Through this diet, he says he lost 100 pounds without excessive exercise, increased his IQ and lowered his biological age. The focus is on so-called green foods and less on toxic foods and a high amount of fat. It also includes something called Bulletproof coffee. THE COFFEE: You’ve surely heard about this Dr. Oz-touted coffee. It consists of a blend of grassfed organic butter, coconut oil and organic low-mold coffee. These all-natural additives should help sustain you though the diet’s recommended periods of fasting—usually in the morning before lunch. “Butter is admittedly a guilty pleasure of mine, but I can’t get behind adding it to coffee to stave

Also, be aware that by cutting out entire food groups—like fruit—you could be missing out on important nutrients.

MASTER CLEANSE THE GIST: You fast for 10 days and subsist on a sweet, peppery lemonade concoction—similar to The Juice Bar’s Hottie juice or Nekter’s Skinny Lemonade. This helps your body cleanse itself of the toxins you’ve been putting in it for years. By the time you’re done, your entire body, from your liver to your pancreas, will function at a higher level. THE LEMONADE: Yes, this is the diet where your main intake consists of a mix of lemonade, maple syrup, cayenne pepper and water. Maus says, “Sounds like something I would have tricked my brother into drinking as a kid!” THE DIET: In addition to the concoction outlined above, cleansers are to drink a quart of salt-water in the morning and an herbal tea

says. As for the fasting, she adds, “I’m pretty committed to the small-portions-often school of thought. Skip the buttered coffee and have an egg or two.”

THE DIET: Slightly similar to the Paleo diet, the Bulletproof version recommends cutting out fruit and wheat, and substituting lots of unprocessed vegetables, red meat and, strangely enough, white rice. The ideal Bulletproof diet consists of up to 70 percent healthy fats and 20 percent protein, with vegetables making up the rest. THE VERDICT: There are elements of the diet that are excellent, particularly the limiting of grains and cereals. “Nobody’s running around with a starch deficiency, and if sugar and flour were to be completely

laxative at night. In other words, you will spend a good portion of this diet on your porcelain throne. Going into or off the cleanse, dieters are recommended to be careful to slowly adjust their food intake since their body will not be accustomed to most food. THE VERDICT: A cleanse doesn’t necessarily mean you’re doing your body any good. “Many of these cleanses include stories about intestinal sludge,” says Maus. “At no point have I ever seen a single case of this impacted colon sludge that so many of these cleanses would have us believe we’re overflowing with.” Plus, going on this diet could mean setting yourself up for losing muscle weight, then quickly gaining it back in fat. “The single biggest problem is that it is almost completely lacking in protein. If you’re not getting adequate protein from your diet, your body will catabolize muscle. This is definitely a quick way to take off some weight, and then put it back on.”


GLUTEN-FREE THE GIST: Gluten, a protein found in wheat, barley and rye, causes real issues in people with celiac disease and those who have gluten intolerance. For them, gluten causes a severe inflammatory response with symptoms including diarrhea, indigestion, constipation, fatigue and more. In recent years, people with and without gluten sensitivity have flocked to the gluten-free lifestyle—some simply because they perceive it as healthier; others because they need it. THE PROBLEM: Celiac disease is real and under diagnosed. The only way to find out if you suffer from the disease is to have a blood test done by a doctor. To determine if you have gluten sensitivity, you’ll have to test your diet through a careful process overseen by a doctor. Plenty of people confuse gluten intolerance with symptoms from other issues. For instance, if your diet is high in bleached, processed wheat, and you start eating gluten-free whole vegetables, such as winter squashes and sweet potatoes, you will feel better, because the food you are eating is healthier.

PALEO CAVEMAN THE GIST: Our bodies are not designed to digest processed, carb-based foods or certain groups of vegetables and nuts. The logic? We began farming our food just 10,000 years ago. That might seem like an eternity, but it’s not enough time for our stomachs to have evolved mechanisms for digesting these “newer” food sources. Paleo adherents claim that if we eat a diet that only hunters and gatherers (in other words, cavemen) would eat, we’ll feel better, be healthier and lose weight. THE SCIENCE: There isn’t a whole lot of science backing up Paleo claims about what cavemen ate or didn’t eat. It’s hard to conclusively know what life was exactly like 10,000 years ago. And then there’s the issue where they also often didn’t live past 35, so there’s no telling what longterm impact such a diet had on their health. THE DIET: Dairy? Soy? Wheat? You can forget all about them

Try reading some labels and you’ll be surprised how many times you see the word “wheat.” THE VERDICT: Gluten-free diets are perceived as healthier, but unless you’re careful, you could be eating a diet that is just as unhealthy as your diet before. “There are now rows in many grocery stores dedicated to processed gluten-free food,” says Maus. “While these options may be beneficial in terms of maintaining a gluten-free diet, they also make keeping those extra pounds in place infinitely more convenient.” These processed glutenfree foods can be higher in calories, sugar and fat than their conventional counterparts.

The food pyramid pounded into us as kids had that great big bread/grains base— that was all wrong.” The problem is that it requires a lot of food prep—and that makes it hard to adhere to. “It becomes a part-time job. For the vast majority of people, eating this way isn’t sustainable long-term,” she says. Paleo eaters should also be certain they’re getting all the necessary nutrients, including vitamin D and calcium, normally found in dairy products.

If you venture to Ft. Worth for the art, stick around for the artisan food. Café Modern, the upscale eatery situated inside the Modern Art Museum of Fort Worth, is a gem of a restaurant. It offers a treasure trove of artfully crafted cuisine and cocktails all served in one of the city’s most beautiful settings: the Ft. Worth Cultural District. And, because the menu changes each season, there’s always something new and fresh to discover. Café Modern has been commended by Gourmet Magazine as “one of America’s best restaurants,” and it’s easy to see why. You get the best of both worlds here: culture and cuisine. The food is topnotch and the atmosphere is elegant yet relaxed. And don’t forget about the incredible view—this alone makes it worth a visit. The café is situated above a tranquil reflecting pool, and you almost get the feeling that the restaurant is afloat. Curved, floor-to-ceiling windows provide the perfect panoramic view. There’s not a bad seat in the house.

But don’t just sit there taking it all in; order something to eat. Everything on the menu, whether you visit for weekend brunch, lunch or Friday-night dinner (the venue’s only dinner offering), is made from scratch using fresh, local ingredients. Executive Chef Denise Shavandy says this focus on ingredients is what makes each dish special. “You get the best flavor from being local, seasonal and sustainable,” she says. “We utilize as many local vendors and growers as possible.” When you peruse the menu, you won’t be left to interpret what the Achiote Pork Osso Buco or the Smoked Bone Marrow Custard is all about. Each item on the menu is carefully detailed, so you can order with confidence. And whether you have a question about the Antipasto Plate or you just want some extra sweetener for your tea, the staff at Café Modern is friendly and attentive. On the brunch menu, an order of the Tiramisu Crepes with Kahlua Syrup is a sweet

celebration of vanilla mascarpone, Kahlua, whipped cream and chocolate. It’s essentially a rich, decadent dessert that’s acceptable to eat as a meal. We won’t argue with that. For those who prefer savory items, we recommend the Mushroom Gouda Omelet. It’s a melty merging of cage-free eggs, cremini mushrooms, chives and Eagle Mountain gouda. The Edamame Hummus Wrap is another full-flavored choice for brunch. Chef Shavandy keeps it local by incorporating Dallas Mozzarella Co. Goat Feta Cheese in this spinach wrap loaded with healthy fillings like avocado, roasted pepper and greens. Café Modern’s dinner menu is smallish, but it offers enough variety to please most taste buds. There are gourmet soups and salads, as well as heartier dishes including Steak and Potatoes and Crispy Striped Bass. Chef Shavandy’s personal favorites include the Seared Tuna Salad and the Lemon Grass Chicken Banh Mi, which is “not quite traditional with a Gochujang mayo, Asian mint sauce and pickled vegetables,” she says. The dessert menu is also small but mighty. One of our favorites for spring is the Pistachio Sponge Cake and Yuzu Citrus Curd. This confection is sweet and light, with a delightful citrus fragrance you can almost smell across the room. When it comes to beverages, the café offers an admirable selection of red and white wine, plus a variety of house cocktails inspired by works of art in the museum. The “Allegory” by Shahn, for example, is a bright concoction of Grey Goose Orange, Chambord, lemon, sugar and ginger. If the masterpiece had a flavor, would it taste like this? It’s up to your own interpretation. That’s part of the fun. For those looking to try something new on a night out, Café Modern offers wine dinners once a month. These evenings include four to seven courses, and occasionally feature guest speakers and visiting chefs. And if you want to make a trip to The Modern a family affair, the café welcomes all. It has a brunch and lunch menu for children with plenty of kid-friendly choices such as Crispy Chicken Tenders and Grilled Cheese. There’s even a Peanut Butter and Grape Jelly Sandwich on the menu. Fine dining? More like comforting kid classics you know they’ll want to eat. Overall, Café Modern is supremely chic and classy, but it’s not pretentious about it. You can absolutely bring your kids over Spring Break to enjoy a meal and some modern art. Culture never tasted (or looked) so good.

Burgers to Behold Get ready to sink your teeth into Teddy’s Bigger Burgers.

Not everything is bigger in Texas. When it comes to burgers, Hawaii is home to some of the biggest around: Teddy’s Bigger Burgers. But lucky for us, the Aloha State’s behemoth (and beloved) burgers hopped the Pacific and landed in Colleyville. It’s the first Teddy’s in Texas, and we must say, we’re glad it’s close to home. Stop by and you’ll see that this isn’t a typical burger joint. Here, a burger isn’t just a meal; it’s a masterpiece. Fresh, flavorful ingredients shine through in each meaty, majestic bite. Come hungry—it’s something to be experienced. Founded nearly 20 years ago in Hawaii, Teddy’s Bigger Burgers lives up to its name. Each premium, 100-percent choice ground chuck burger is charbroiled to perfection. You decide just how much burger you can bite: big (four ounces), bigger (six ounces) or biggest (eight ounces). The standard burger comes with a sweet and tangy special sauce, lettuce, tomatoes, onions and pickles. Make it your own by adding extras that range from Hawaiian-influenced (barbecue pork and grilled pineapple) to unique (furikake and seasoned hash browns). Teddy’s claim to fame is indeed its gigantic, juicy burgers, but that’s not all it does well. The restaurant’s Umami Fries, a combination of perfectly crispy fries, garlic butter, furikake and srirachi aioli, are incredible. And, if you have room, you can finish off your meal with a handspun, extra-thick shake. Though Teddy’s certainly isn’t a health-food destination, there are lighter bites on the menu including salads and lettuce wraps. “You also have the option of grilled chicken, veggie, turkey, salmon, fish fillet and pastrami,” say Brad and Nancy Sinex, owners of the Colleyville restaurant. Teddy’s welcomes all: beef lovers and everyone else. The atmosphere is fun and funky; it’s a blend of burgershack simplicity and vintage surfer style. Look up and you’ll spot surfboards hovering from the ceiling. Listen in and you’ll hear a soundtrack of tunes from the ’50s, ’60s and ’70s. It’s just the kind of laid-back, family-friendly environment that Brad and Nancy envisioned when they opened the shop last fall. “We want people to feel relaxed, comfortable and completely satisfied,” Brad says. The Sinex family isn’t just doing good by their burgers; they’re also invested in the community. They’re sponsors and partners with Warrior Angels Foundation, a local nonprofit with a mission to help U.S. service members and veterans. Says Brad: “We’ll be working with them to help raise awareness and money for their foundation.” Are you ready to say aloha to Hawaii’s burger phenomenon? International Delights Experience a whole new world of coffee, tea and bistro fare at All About Cha. All About Cha isn’t situated in the most convenient place in Southlake (it’s located in the Sprouts shopping center), but it’s worth the traffic hassle to stop by. The café offers an eye-opening selection of 15 different coffee drinks, 22 varieties of green and black teas, and 30 healthy Korean specialty drinks (ever tried a Yuja Lemon Freddo or Iced Mogua Latte?). If the standard green and white cup is beginning to bore you, or you’re just looking to expand your palate, you certainly have an enticing array of options here. Whether you prefer frosty refreshment or a toasty cuppa, you can rest assured your beverage is authentic. The bistro began in South Korea in 2006, expanded to China and then migrated to the United States in 2014. It opened a few locations in Oklahoma and began serving the Southlake community last year. Chang Sik Yi, owner of All About Cha-U.S., says the restaurant is guided by the simple vision that “sincerity moves people.” “We are trying to provide a different cultural experience in Southlake,” he says. “We strive to prepare

It truly is an art—and we’re not just talking about the heart art in your latte’s foam (although the tea baristas do a fine job of this, too). Sik Yi says the most beloved beverages are the Caramel Macchiato, Sticky Toffee (a flavored black tea) and Sweet Potato Latte. We enjoyed a Green Tea Latte, which wasn’t overly sweet and was served piping hot. As for the food, the menu runs the gamut from breakfast, lunch and dinner to sushi rolls and dessert. We sampled the Fruit Crepes, which were freshly made and beautifully plated. We enjoyed the accent of bright kiwi finished off with a drizzle of rich chocolate syrup. If you’re hungry for something a little more exotic, try the Dak-Gal-Bee Wrap. It’s packed with thinly sliced chicken that’s been marinated in Korean spices, and wrapped up with sliced carrot and onion. With an interesting gallery wall of black and white photos, bubble lights dangling overhead and plenty of comfy places to relax, All About Cha is a mix of cozy and quirky. We certainly create it with the community in mind. It’s indeed a labor of love every month—especially for Mike and Nicole Tesoriero. This married couple first published the magazine in March 2006, with a vision to create a lifestyle publication that celebrated Southlake and the people in it. Ten years and more than 100 issues later, the Tesorieros continue to enlighten, entertain and inspire the community, one page at a time. Q: Southlake Style is celebrating its 10th year. In a word, how would you describe the journey? A: (Nicole) Amazing! Q: Mike: You worked in pharmaceuticals. Nicole: You built a successful career in sales and marketing. What inspired you to start a lifestyle magazine? A: (Mike) As new residents to Southlake, we were looking for ways to become better acquainted with the area. Lots of publications came to the house, but none were able to connect us to the community in the ways we wanted. Q: Tell us about the early days. What was it like creating the magazine from scratch each issue? A: (Nicole) It was a lot of work but also a lot of fun. It provided us a great way to get to know so many amazing people within our community. It also helped us establish local friends who are what we now consider our Texas family. (Mike) Learning a new industry on the fly was both challenging and invigorating. We were also juggling the newfound joys of parenthood. We were fortunate to have some early supporters and colleagues who each brought something special to the magazine. Q: What has it been like to watch the business grow over the years? A: (Nicole) It’s a lot like watching your own children. You don’t realize how much they’ve grown until you look back and say “wow!” (Mike) I keep an issue of every magazine in date order in my office. It helps me remember past ideas and what worked well or didn’t work at all. I find myself looking at them more and more often. I’m proud of where we are, humbled by our beginnings and thankful for all the friends and organizations we’ve connected with over the years. Q: What’s something about the magazine that might surprise people? A: (Nicole) It started with just the two of us in our home office (and living room floor). (Mike) Southlake Style accomplishes a lot with a very small and dedicated team. Q: Is there a story or cover that stands out to you as particularly meaningful? A: (Nicole) I’ve always loved our “Phantom of the Opera” cover. It was fun and unique with a theatrecurtain cover that opened to unveil CISD’s cast/crew. My close second would be our Peter Max cover.

It’s amazing to have an internationally known artist offer to give you his rendering of the city’s fountain. (Mike) Absolutely, but as time goes by, each cover becomes that much more special as it chronicles the changes in our vibrant city. We’ve covered the grand opening of the Grand Avenue district of Town Square, The Hilton, Central Market and so many other places and people who make the city what it is today. Q: Tell us about a funny moment in Southlake Style’s history. A: (Mike) I shot the cover of our first issue with a Cannon Elph camera that was half the size and capabilities of my current cell phone. Q: What do you enjoy most about your roles? A: (Nicole) I love meeting new people and creating long-lasting relationships. As our Advertising Director, I get to meet with new business owners and marketing directors on a daily basis. (Mike) I love the opportunity to spotlight great achievements and connect people to each other and to what’s great about living in north Texas. Q: We all want to know: What’s it really like working with your spouse? A: (Mike) We never have to ask each other, “Honey, how was your day?” (Nicole) We have different approaches to almost everything, and we balance each other out. We make a great team. ash Farm. Is somebunny in your life excited for Easter? We sure are! And our favorite way to celebrate is at Nash Farm, where there have been free Easter egg hunts for more than four decades. This year promises even more fun, with face painters, a petting zoo, wagon rides, crafts, music and of course, candy-filled eggs hidden by Mr. Bunny himself (we hear there are thousands of them!). Stay on the lookout for “special prize eggs,” holding surprise goodies that are sure to evoke smiles and squeals of delight. Grab a basket and come take part in this community tradition that just keeps getting bigger year after year. “The annual Easter Egg Hunt in Grapevine has been a family-friendly event for more than 40 years,” says City of Grapevine Marketing/Communications Manager Mona Burk. “The setting of Historic Nash Farm lends itself to a nostalgic ambiance and memory-making fun.” So, how can you become a part of it all? The event is divided into a variety of egg-hunt age groups and times, as follows: age 7-9 at 10 a.m., age 2 and younger at 10:30 a.m., age 5-6 at 11 a.m., age 3-4 at 11:30 a.m. and all ages at noon. The “All Age” hunt is reserved for children ages 10 and older, or for those children who were not able to attend their own age group hunt during the morning. Don’t forget to bring your own basket and a camera to take lots of pictures. With the Easter Bunny onsite, there are sure to be plenty of photo-worthy moments throughout the day!

Can’t make it for the first blooms of the season? Don’t worry; the show has only just begun in March. The finale of Dallas Blooms is just as spectacular, with a mass flowering of 3,000 gorgeous azaleas that generally appear near the end of April. Dallas Blooms has something for every nature lover, and as one of America’s Best Spring Floral Festivals named by Fodor’s Travel, it’s clear this is one event you’ll be amazed is just a short drive away.
