A Royal Occasion
M
eghan Markle’s interview with Oprah Winfrey showcased that royal life isn’t all that it appears to be on the silver screen. But this proud and expectant mama proved grace is needed for the job at hand. If you can’t get enough of the glitzy drama of the royals, here are some matriarchs you can catch on TV. Anne Hathaway gets into innocent antics with her royal family, whether she’s in “Ella Enchanted” or “The Princess Diaries” movies. Emily Blunt and Jenna Coleman both give life to “The Young Victoria,” while Judi Dench played the elder queen twice in “Mrs. Brown” and “Victoria and Abdul.” Cate Blanchett and Helen Mirren both shared the title of Queen Elizabeth I. But that’s not the last time Mirren would pick up the crown, as she also portrayed Queen Elizabeth II in 2006’s “The Queen.” Catch what her daughterin-law was up to in 2013’s “Diana.” The queen makes the leap from the big to the small screen in the Emmy Award-winning series “The Crown,” where both Claire Foy and Olivia Colman act out her memorable life. Colman would later win an Oscar for playing yet another high-strung queen in “The Favourite.” “Downton Abbey” contrasts life between nobles and servants, while “Bridgerton” makes viewers burn for Regé-Jean Page, who is sadly skipping out on season two. While we’ll have to wait to see how Daphne handles motherhood, we know the real-life royals are nothing if not dedicated to their children. And if their newborn is anything like Charlotte, Louis, George or Archie, the newest member of that royal family is bound to be adorable.

Summer Food Programs Ensure No Child Goes Hungry While the start of summer is exciting for kids, it can also bring anxiety to those struggling with food security. Food insecurity is the state of being without reliable access to healthy food, and 14% of Texans experience it, according to FeedingTexas.org. Various organizations are combating that through summer food programs.

One of the biggest summer food programs is the Texas Department of Agriculture’s Summer Meals program, which served 15 million meals at 5,711 meal sites in 2019, says Catherine Steele, the administrator for food and nutrition at TDA. “Just as meals at school help children concentrate in the classroom, summer nutrition helps more children have an active, healthy summer so they can look forward to being back at school or just grow and thrive,” Catherine says. Along with the TDA’s summer food program, individual school districts like Grapevine-Colleyville ISD often have their own summer food programs or serve as meal sites. “We start in March preparing for that year's summer feeding programs,” says Julie Telesca, GCISD’s director of nutrition. “There is a lot of planning that takes place for our summer feeding programs, including our registered dietitian developing a menu, determining staffing schedules, creating marketing and signage materials and then communicating about the program to our families and the community.” Another local program is GRACE’s Feed Our Kids, which anticipates to serve more than 30,000 kids this summer,

says Stacy Pacholick, GRACE’s chief program officer. “Before we talk about improving income, improving employability, improving education, we’ve gotta make sure that families have enough food and are sheltered so their energy is not being spent on meeting their basic needs,” Stacy says. Last summer, the North Texas Food Bank served around 7,000 kids through their child programs. “Many kids and families depend on school meals as a source of nutritious, affordable food,” says Madison Messinger, the Child Programs Administrator at NTFB. “When you remove that safety net, summer break can seem pretty daunting.”
Pandemic Pivot
As the pandemic hit, the need for food increased and organizations had to get creative. “We implemented a lot of drive-throughs and grab and gos,” Madison says. GCISD also pivoted to a curbside model and saw an increase in need due to the pandemic. “Prior to the pandemic, we served about 450 students daily. Last summer we served about 800 to 1,000 students daily through curbside meal bundles,” Julie says. “This summer we are anticipating serving 1,500 students daily through in-person and curbside service.” No matter how it looks, one thing is clear: These organizations won’t stop serving those in need. “In North Texas, one in four children are food insecure. That statistic can feel overwhelming sometimes, but hunger is a solvable problem,” Madison says. “With the support of our neighbors, we can put food on the table and ensure children have the nutrition they need to grow up strong and confident.” SOUTHLAKESTYLE MAGAZINE

CARROLL FOOTBALL RELEASES 2021 SCHEDULE Southlake Carroll released its 2021 football season lineup. The Dragons are set to face familiar opponents in Byron Nelson, Keller, Keller Central and Timber Creek. A team Carroll faced in the 2020 playoffs — Arlington Martin — will be its regular season week 4 opponent, while the first game of the regular season will be against Highland Park. Unofficially, the season will kick off with a scrimmage against Arlington, and Southlake Carroll’s bye week is set for week 8. The Dragons will end the regular season in an away game against Fossil Ridge. Carroll ISD has not set any promotional nights or released any ticket information as of publication.
CARROLL JAZZ ORCHESTRA NAMED ESSENTIALLY ELLINGTON FINALISTS The Carroll Jazz Orchestra once again made it into one of the most competitive jazz competitions in the nation. Every year, the Essentially Ellington Festival assembles jazz programs from around the country to participate in a weekend-long competition. This year, Carroll Jazz was one of 15 bands announced as a finalist, and this is its sixth time qualifying for the festival. The virtual festival will take place June 4-5.
WALNUT GROVE PRINCIPAL ANNOUNCES RETIREMENT After faithfully serving as Walnut Grove Elementary’s principal for more than five years, Mike Landers will retire after this school year. An educator with more than 25 years of experience, Mike has served the district for more than 16 years. He started as an assistant principal for Jack D. Johnson Elementary School before he was named head principal for Walnut Grove Elementary in 2016. While he’s excited about his next chapter in life and getting to spend more time with his family, Mike says he will miss the lifelong friends he made while at Carroll ISD. “I think the hardest thing for me will be getting up in the morning and not seeing the people I used to spend most of my day with — the people you laugh and play with,” Mike says. "I’m going to miss them the most.”

CARROLL ROBOTICS WINS 6A STATE CHAMPIONSHIP The Carroll Robotics team won big at the Texas 6A State Championship over spring break. In March, the Carroll Robotics team traveled to Houston to compete against 38 other teams at the Texas 6A State Championship. They competed in 15 matches overall, winning 12 with a driver high score of 122 and a programming high score of 97, totaling to 219 points overall for the competition. By the end of the championship, the Dragons not only won the Best Design Award but also were named overall Tournament Champions. SOUTHLAKE OKTOBERFEST 2021 DATES ANNOUNCED After canceling last year’s event, the Southlake Chamber of Commerce announced Oktoberfest is officially a go for October 15-17 in 2021. Regularly attracting more than 100,000 attendants, Southlake Oktoberfest 2021 will have the ’80s-themed band The Molly Ringwalds perform as the Saturday night headliner, and the popular Wiener Dog Race will return to the sports zone on Saturday. “Everybody’s been cooped up the last year, and they’re ready to get out and do stuff,” chamber president Mark Guilbert says. “People should expect more German food, music and flair than ever before. This will be our best Oktoberfest ever.”

CARROLL ISD MAKES MASKS OPTIONAL FOR OUTDOOR ACTIVITIES Masks are now optional for Dragons while participating in outdoor activities. During the April 5 CISD Board of Trustees meeting, the COVID-19 response team recommended the district maintain its current mask policy for indoors but change the policy to make masks optional for outdoor activities, provided that social distancing or movement is occurring. “We have worked both sides, I feel like, to try and keep everyone in a good spot,” lead nurse Karen Flexer said to the board. “If we can give now for the last eight to nine weeks, I feel like we’re ready to do that. I’m ready to move toward what we’re going to see in the fall.” The board unanimously approved the change. The response team will meet again on May 6 to consider other potential changes the district may make before the summer.
CARROLL DRAGON FEATURED IN CHILDREN’S CANCER FUND ART EXHIBIT The Children’s Cancer Fund + NorthPark Center “Healing Works” exhibit featured Southlake’s Caroline Duncan (8) last month. “Healing Works,” which ran from April 1 through 29 at NorthPark, shared the stories of local children who have been touched by childhood cancer. Caroline was diagnosed with leukemia on her third birthday on January 22, 2016. After years of treatment, she graduated from the After The Cancer Experience, a childhood cancer survivor program, in April 2020. Caroline’s work of art featured a bright pineapple boasting sunglasses, a nod to her family bringing back pineapples when they vacation in Hawaii. Each featured artist, including Caroline, received guidance from art and pet therapists to help create their final products. With more than 23 years of education experience, Dr. Carpenter has served Midlothian ISD in several roles, including campus principal, chief administrative officer and executive director of innovation and learning. SASO BOYS OF SOUTHLAKE CELEBRATES 10TH ANNIVERSARY The SASO Boys of Southlake celebrated 10 years of service during its anniversary on Friday, April 2. Founded in March 2011, Scholars and Athletes Serving Others is a mother-son organization that partners with nonprofit organizations around the area to make a difference. Since its founding, the organization has grown to more than 600 members that contributed tens of thousands of service hours to the elderly, homeless, impoverished and special needs communities, even during the COVID19 pandemic. Besides recognizing and honoring the graduating class of 2021 at its 10th anniversary, the SASO Boys also assembled party bags and packages for the Dallas nonprofit The Birthday Party Project. Founding member and Southlake Mayor Laura Hill even issued a proclamation at the beginning of the celebration. “SASO has been a very quiet, humble, hardworking organization for a decade,” president Tracey McDevitt says. “We have helped so many organizations in Southlake, in DFW and nationally, and I truly just wanted to honor the women who had the vision to start an inclusive service organization where everyone is welcome. What a gift that has been to Southlake.”

TRA CEO TAPPED FOR NATIONAL RESTAURANT ASSOCIATION LEADERSHIP POSITION Dr. Emily Knight will now represent restaurants across the country. The National Restaurant Association announced in March that it hired the Texas Restaurant Association CEO and Southlake mom into a brand new position: chief collaboration officer and EVP of industry relations. Dr. Knight joined the TRA in May 2019. There, she has assisted those in the food and beverage industry across the Lone Star State. Now in this new role with the Washington D.C.-based association, Dr. Knight will be able to represent more restaurants and amplify the industry’s unified voice. In this position, Dr. Knight says she will not only build bridges for local restaurants but also bring together large chains to ensure the entire community can be heard on a national scale. While Dr. Knight will be jetting from Chicago and D.C. to Austin and Atlanta, she’s excited that she will still be able to handle her workload from her home in Southlake.
LO-LO’S CHICKEN AND WAFFLES RELOCATING TO GRAPEVINE After serving southern fried delights to the community for more than five years, Lo-Lo’s Chicken and Waffles is moving from Southlake to Grapevine. Part of a larger chain that operates in three states, Lo-Lo’s Chicken and Waffles in Southlake is the only Lo-Lo’s restaurant operating in Texas. Opening in July 2016, Lo-Lo’s provides all-day breakfast favorites such as waffles, omelets and biscuits and gravy alongside fried chicken, catfish and shrimp platters, serving up soulful cuisine during any time of the day. While Lo-Lo’s has thrived at its current location for five years, a company spokesperson confirmed that the restaurant will be relocating to 1270 W. State Hwy. 114 later this year. The new location is located within Grapevine Towne Center. The restaurant did not provide an estimated opening date or a reason for the relocation. In the meantime, you can still dine at its current location at 1201 E. State Hwy. 114, Suite 100. GUY FIERI OPENS SECOND GHOST KITCHEN INSIDE BUCA DI BEPPO After debuting his new restaurant concept in Southlake earlier this year, Guy Fieri expanded his Flavortown footprint by opening a second ghost kitchen in the area. In February, the “Diners, Drive-Ins and Dives” star opened more than 120 Flavortown ghost kitchens inside established restaurants across 26 states. The first Southlake restaurant to welcome Flavortown into its kitchen was Brio Italian Grille in Southlake Town Square. In March, Flavortown opened its second ghost kitchen inside the Buca Di Beppo Italian restaurant at 2701 E. State Hwy. 114.

WHAT DOES HOSPITALITY ALLIANCE DO? We are a hospitality development and management company. We own and operate our own restaurants and also develop and manage some for others — like AT&T or hotels — with core businesses that are not restaurant-related. WHAT ARE YOUR CURRENT PROJECTS? The biggest one is the AT&T Discovery District. We opened Jaxon just over a year ago, which has been really successful. We just launched The Second Floor at The Exchange. Now, we’re working toward opening up the rest of the food hall, hopefully, in the next few months as things continue to improve with COVID. HOW DID YOU GET INTO HOSPITALITY? I actually started in the event business. I produced close to 200 events in my 20s, and then I was the executive vice president of real estate at Hampshire Hotels. Then in 2008, at the heart of the recession, we weren’t buying or selling anything, but our restaurants started to bail and close. I became the head of food and beverage for the company at that time. WHAT BROUGHT YOU TO SOUTHLAKE? The project with AT&T primarily, but we’ve loved the community for a number of years. Frankly, [AT&T Discovery District] was the final thing. We really like the neighborhoods. We really like the area. We do have things on both coasts, so it’s a lot easier doing it from the center of the country...it’s been great building our core team here as well. WHAT DO YOUR DAY-TO-DAY RESPONSIBILITIES LOOK LIKE AS THE CEO? It’s kind of doing double duty. During the day, it’s usually office work. And then at night, it’s really the guest-facing, hospitality side. So 9-5 it’s construction meetings, design meetings, it’s setting things up, accounting, legal, and then on nights and weekends, it’s being at the restaurants. WHAT IS YOUR FAVORITE CONCEPT? I love Jaxon...I think that one — it’s very familyfriendly. It’s a lot of live music. It’s approachable but really good food. WHAT’S YOUR FAVORITE PART OF YOUR JOB? Frankly, all of it’s the favorite part of my job. I say the hospitality business is something where you really can’t fake it. If you care about people and you care about your guests and you care about your employees, it shines through.

We have been vacationing in New Mexico for many years, and we consider it a great alternative to the craziness of Colorado. It’s much more affordable than Colorado and a much more reasonable drive. t’s the typical bustling restaurant scene. Food sizzles in the kitchen; guests socialize over drinks in the dining room; dirty plates, bowls and silverware pile up in the sink; and the next course comes to the table, eager to be enjoyed. Only this particular scene isn’t happening inside of a chic bistro, and there aren’t staffed waiters and cooks. It’s all Laura Laird. A Texan for almost 30 years, Laura is a wife, mother and self-made chef. After learning a variety of cuisine styles to enhance her craft, she began the Culinary Immersion Supper Club out of her house in 2017. Now she serves five-course meals to families all around Southlake and surrounding areas. “It’s going to her home or yours and being immersed in amazing cuisine,” client Magdalena Battles says. “It isn’t just a dinner with her — it’s a whole experience.” Immigrating to America when she was 24, Laura knows what it’s like to live without all of the flavors and sensations she experiences today. Now, she works to give her clients everything she missed while growing up.

In February 2017, she went for it and turned her culinary passions into a professional endeavor. To test out the concept, Laura invited a group of friends to her house and served them a five-course meal that included a salad, salmon, soup, chicken stew and a fruit dessert called clafoutis. Longtime friend Tammy Lewis already knew the food would be delicious, but Laura exceeded her high expectations. “We all loved each dish so much, it was actually hard to think of a criticism,” Tammy chuckles. “We gave her some thoughts of how the evening flowed, timing issues and how the soup needed to be warmer, but other than that, it was a great first event. It was then that I knew how incredibly strong her passion for food was.” PASSION FOR FOOD AND PEOPLE For years, Laura kept steadily growing her brand, promoting her business in Facebook groups, going to clients’ houses and serving dish after dish. Using only organic ingredients, Laura prides herself in her menu always being fresh and original, never repeating the same recipe twice. She also explains the origin and background of each course to her clients so they understand the significance of where it came from. She’s also expanded to doing more themed events, such as French and global cuisine and “Downton Abbey” dinners. Her friend Mary Evelyn Wallace usually works alongside her as a floral decorator, and she says Laura’s creativity inspires her own. “Working with Laura gives me joy, especially because Laura never loses her childlike excitement in sharing her work as it unfolds,” Mary says. “Laura excitedly outlines every detail with precision and always with a ready smile, even in the flurry and intensity of an event.” Laura has even hosted a murder-mystery dinner modeled after Agatha Christie’s Hercule Poirot novels, where she wrote out the script and characters her clients played. “My husband played detective Poirot,” Magdalena chuckles. “I didn’t think he would get into it, but he did. He played the part, investigated, accused suspects and had fun with it. I think Laura made it easy for him.” Seeing her guests happy and satisfied makes the whole endeavor worth it to Laura. “That’s what I love about this business — meeting people and them allowing me into their intimate home with their family and friends for one night,” Laura says. “I adore the interaction, the friendships I make and seeing the people’s smile when they eat.” People are why she got into food in the first place, whether she was cooking for her own family or others’. “I want people to know where I came from,” she expresses. “Why food is so important to me — because of how I grew up. Why people are so important to me — also because of how I grew up. Whatever you had, you shared with others. When you didn’t have food, you had each other.” 40 • MAY 21

hat’s my birthday present,” Sasha’s Pals founder Tracy Miller says while talking about the new artificial turf around her foster dog cottage — a 12-by-12-foot air-conditioned structure for any dog that needs to be isolated due to health conditions. The installation is just one example of how the Southlake mom goes above and beyond for animals. “I guess you can say we are animal lovers,” Tracy says. “It’s always been my passion. Every year, I would go to the pound and pick up a dog. My daughter [Macy] finally said, ‘Mom, you should really start fostering.’’’

It started with Luna, a mama dog in an Arlington shelter. The great pyrenees mix wasn’t showing well in a shelter environment and was constantly looking for her babies. So Tracy brought her home and helped her become more comfortable. “It was a challenge, but I got the hang of it,” Tracy says. After finding Luna a great home, Tracy took on her next fostering challenge, a set of puppies who had mange. After nursing them back to health and finding each a home, Tracy was hooked. “I’m one of those people who doesn’t do anything halfway,” Tracy says. “I go about it with gusto.” That spirit translated into fostering 70 dogs and cats in 2019. In 2020, Tracy fostered 170 animals. As of April 2021, Tracy has fostered 85 animals. By partnering with trusted rescues, like Animal Advocates of North Texas in Keller, Tracy finds animals she knows she can help by elevating their environment. Tracy is selective to ensure the safety of her family’s seven dogs, but she knows the value her home provides. “It kind of teaches them not to be scared of other dogs,” Tracy says. “My dogs have taught them that not all dogs are mean.” While some dogs are only in the Miller home for a few days, other dogs take a little longer to warm up. But over time, Tracy learns more about each individual animal to ensure she finds a family that will meet its needs. “She’s a voice for these animals,” Macy says. Macy helped Tracy set up a Facebook page, Sasha’s Pals, to help potential adopters learn more about the available animals. “It’s my way of being able to network the dogs,” Tracy says. The name was inspired by Tracy’s family friend Libba, who was like a grandmother to her. After Libba moved into assisted living, she became depressed. So Tracy went to the pound and found her a canine companion named Sasha. “She lived for Sasha,” Tracy says. “It literally extended her lifetime. It shows what a blessing dogs can be.” She hopes her fosters bring the same value to their forever homes. “One of my adopters asked me one day, ‘Do you realize how many people you have saved?’ It’s a great way to look at it,” Tracy says. “Dogs bring unconditional love into a home.” COVID-19 kept many housebound over the past year, which Tracy believes inspired even more families to open their homes to a new pet. “We have had a lot of dogs adopted during this time period,” Tracy says. “It gives people something to look forward to. It’s a reason to get out — a purpose.” But running Sasha’s Pals isn’t always easy. On top of her full-time job as a commercial real estate broker, Tracy constantly finds herself in the car, either to pick up a new dog or take an ill animal to the vet. “I love what I do, and my job is flexible,” Tracy says. “And my family is great. It’s a big undertaking for everyone. It’s always a three-ring circus. There have been times where I just close my eyes and tell [my husband] Kris, ‘It’s going to be crazy for a week or two.’” Thankfully, Tracy has a solid support system in her family. “She recognizes that it’s her thing, but we will always help because she takes a lot of pride in it,” Macy says. “There have been those hard moments, then it’s our job to support her.” SOUTHLAKESTYLE.COM
Despite the long hours, Tracy still hopes her efforts inspire others to open their homes to animals in need. “I always encourage people to try fostering. People’s first instinct is that you won’t be able to give them up. But if you don’t do it, then who will?” Tracy asks. “A foster can be the matter of a dog living or not.” Tracy has foster failed twice, meaning two dogs have found their forever homes with the Millers. “Some just fit in your pack,” Tracy says. Even though three out of four Miller children have flown the coop (the youngest is currently a senior at Carroll Senior High School), Tracy is able to keep her home full and lively. She does try to keep to a five foster dog limit, but Tracy does often take in more if there are animals that need her help. “It’s hard to have a bad day here,” Tracy says. But when these dogs are experiencing hardship, Tracy steps in. After finding one special dog, Liberty Belle, a home with the Kirwan family, the dog’s leash came loose on a walk and she ran off. The family called Tracy hoping she could help them lure her back home. “We were heartbroken and worried for her safety,” owner Jody says. Tracy spent every night walking the streets of that neighborhood looking for Liberty Belle. She even brought in special reinforcements. “We ended up hiring a pet detective,” Tracy says. “After five days, we were able to get her back to her owners. After you go the extra mile for any of them, you want to see it through.” Jody knows Tracy’s connections helped them find Liberty Belle and bring her back home. “She used her connections with other rescue agencies and had a cage and cameras set up to trap her,” Jody says. “I cannot say enough about Tracy. She is the most caring, hardworking person I have ever known. She loves every one of her fosters. We all can learn from her love of life.” Tracy has even more success stories. One family adopted a pup during their darkest hour to bring comfort to their son when he was diagnosed with cancer. Another watched their child open up and start to talk when they brought a dog into their home. That dog now attends speech therapy with the boy, providing both support and a listening ear. Thankfully when the Millers do find these animals homes, they don’t have to say goodbye forever. Tracy and Macy set up a separate Facebook page for Sasha’s Pals' adopters, which is constantly filled with new stories of the animals being spoiled with love in their forever homes. “You can just scroll through that Facebook page and see how much these people worship those dogs,” Macy says. Tracy also keeps in contact with many of her families to answer any questions and ensure their new fur babies remain happy and healthy, which has fostered meaningful friendships for the entire Miller family. After all, Tracy knows she could never do this alone. “I couldn’t have kept 325 dogs, but I can help those 325 dogs find great homes and be a blessing,” Tracy says. MAY 21 • 55

We lived in Kentucky for two years, then we moved to Texas in 2011. I started high school in Southlake, then I went to the University of Arkansas for four years before moving back here. I FOUND MY LOVE FOR FOOD… in college. All of my friends knew me for being the biggest foodie. I started going to a bunch of local restaurants in Arkansas, taking photos of food and posting them on Instagram. I also started cooking things by myself during my own time. That was really where all of my culinary experience stemmed from. I’VE ALWAYS HAD… a creative eye. I just didn’t know how to apply it. When I was in middle school, I used to cut up magazines, visually pair things together and make collages out of them. I would even cut up a bunch of photos and make collages for my friends. That kind of stems into making my cheese boards because it’s kind of like making a collage of food. MY FIRST BOARD SALE… was for my cousin who wanted me to make a charcuterie board for her graduation party. I had no idea what to even buy in the grocery store. I just threw a bunch of things in my cart. I transferred all of my ingredients to my site, and I made it there. It was like a show. People thought it was the coolest thing ever. It was a little nerve-wracking, but it was also a lot of fun. AFTER THAT EXPERIENCE… my mom asked, ‘Why not try selling [your] boards?’ I thought it was kind of crazy. At the time, there was no other business doing this. But then I thought I’d try it. I moved back home with my parents, and I started putting ads up on the Southlake and Colleyville Moms Facebook pages. I made this board, and I thought it was the most beautiful creation ever and took a big photoshoot with

it. Looking back, it’s one of my more mediocre boards compared to the ones I make now. WE DO… personal and mid-size boards, which are more intimate and you can have at home. Those include cheese and charcuterie boards; brunch boards made of bagels and waffles; lox boards with salmon; and chocolate dessert boards made with Nutella, strawberries and a bunch of dessert items. It’s always an original design from us. We take inspiration from seasonal produce, colors and even the season. We always emphasize the different bites you can have on a board. WE’VE ACCOMMODATED IN SEVERAL DIFFERENT WAYS… to COVID-19. Our whole concept is takeout since it’s thriving right now. We’ve also done virtual workshops on how to make your own boards. It’s just been really good bringing people together virtually through our shared love of charcuterie. WE OPENED OUR STOREFRONT… in October. Building it has been a little bit of a slow process. Right now we have a little bit of merchandise and grab-and-go boards, which have been an insane hit lately. Our biggest goal right now is to get the storefront up and running completely and be able to host our own events by the end of the year. I REALLY HAD NO IDEA… this was going to turn into what it is. If you had told me by July 2019 that I was going to have my own store and do as many boards as I have, I wouldn’t have believed you. Now it’s only growing year after year. I LOVE… cultivating the community’s affection for charcuterie and helping them make their own boards. It’s amazing to see my passion grow into something bigger and better for everyone.

ith an eclectic interior, premium bar program and “drinking wine at lunch is not a crime” motto, Postino Wine Cafe burst onto the scene when it opened its first Dallas location in Deep Ellum last month. Postino got its start in Phoenix, with its first location set up in an old post office in Arizona. Co-founder Lauren Bailey now has a passion for finding historic or older buildings and breathing new life into them with this vibrant restaurant concept. “It has been a [rewarding] challenging experience both mentally and physically, and
one we still use as the benchmark for our success,” Lauren says. “All these years later, we still have that grit and passion of a small operation…we’ve just grown up a little.” Lauren is happy that the concept is blooming in Deep Ellum, a community that she already feels connected to. "Deep Ellum instantly caught our attention with its deep-rooted history, incredible buildings and lively community,” Lauren says. “We quickly fell in love with the art, the other businesses and most of all the people who make it such a special place. I had goosebumps when I first stepped into the building and knew in my gut that was the one.”

Because of that flair for uniqueness, no two Postinos are alike. So guests are sure to experience the locality of Deep Ellum through every aspect of the 3,500-squarefoot location. “Our projects always start with finding the neighborhood that we connect with and then bringing [the space to life] in a way that really connects with the neighborhood. As soon as we discovered Deep Ellum, we knew it was the perfect match for us with the vibrant, come-as-you-are culture,” Lauren explains. “We work to connect to people and have a heartbeat behind our doors. Dallas is a special place for us, and we look forward to growing old here.” The funky wine shop, which offers lunch, happy hour, dinner and brunch, is filled with mid-century modern furniture sourced from local vintage shops. Complete with pops of color, roll-up garage doors and custom walnut wine walls, the fun starts as soon as guests walk in. To commemorate Deep Ellum, Postino also features a wall of vintage concert tickets, gathered from the community as well as Postino fans across the country. After taking in the scene, browse its extensive wine menu. With 30 wines by the glass available, guests can easily find something to quench their thirst. “Whether unique collaborative projects with iconic winemakers around the world or hard-to-find boutique selections, the Postino wine program is both exploratory and satisfying,” Postino’s beverage director Brent Karlicek says. To honor Dallas’ craft breweries, its drink menu also boasts 30 local beers (including brews from Deep Ellum Brewing Co., Revolver Brewing, Community Beer Co. and Lakewood Brewing), as well as a variety of sleek cocktails. Postino’s food menu is built around creating a shared experience. To try a variety of its offerings, order a bruschetta board. Guests can choose up to four of its combinations, either on its regular or gluten-free bread. And with combinations like brie, apple and fig spread and piquillo pepper and goat cheese, there’s sure to be an offering that will get your mouth watering. Heartier bites can be found in its house meatballs, complete with goat cheese, and its roast beef panini. While snackers will love grazing on its crispy cauliflower and sweet potato wedges, those looking for a full meal can revel in its fresh paninis, soups and salads or enjoy a combo with its select two options. Regardless of your order, each of Postino’s dishes uses locally sourced ingredients from Texas farmers and ranchers. So guests can feel good about dining in on their next night out.

When Blu Crab Seafood House’s Fort Worth lease lapsed earlier this year, owner Lisa Balmert moved the 9-year-old restaurant to an area that would embrace the luxury concept. While growing up in Russia, Lisa says she developed a passion for the food business, and she worked toward opening her own restaurant in America. “I grew up in the restaurant industry,” Lisa says. “My father was a chef. I remember myself doing homework on a sack of potatoes in the kitchen.” That vision led her to conceptualize Blu Crab Seafood House, which pulls various cuisines together. From Cajun to French influences, the menu offers a range of familiar, flavorful dishes. Lisa has a dedication to serving fresh fish that brings customers back time and time again. “I hit the fish markets very early in the morning,” Lisa says. “I shop around for the best ingredients.” By sourcing premier proteins, produce and spices, Blu Crab Seafood House delivers quality with each entree. Its saffron salmon, a pan-seared filet topped with saffron cream and an onion nest, uses saffron sourced from India, giving the dish brightness. The seafood trio, including a baked lobster tail, pan-seared scallops and grilled shrimp, boasts sophistication. And the New Orleans-style seafood gumbo warms up customers thanks to its spice and familiarity. Thankfully there’s always something fresh to try thanks to the fish of the day, which can range from halibut to swordfish. Also known for its volcanic soil, warm temperatures and consistent rainfall, Costa Rica is home to some of the most beloved coffee in the world. There’s no secret behind what beans you will enjoy. While there are eight different growing regions in Costa Rica, the country only grows Arabica beans, but that doesn’t mean the final result is one note. Coffee from the West Valley carries hints of vanilla and honey while Brunca’s tropical climate produces coffee with touches of citrus. If you’re eager to experience the full coffee scene, head down to San José and book a tour with Café Britt. Its traditional tour gives guests the opportunity to see how beans are selected, harvested, roasted and cupped, all with an entertainment flair. But the group also offers various other experiences, with days out including walking the area’s trails to see various waterfalls and ziplining through a dense forest canopy. Make the most out of your trip with a visit to Addis Ababa, its capital, which can include everything from visiting insightful museum excursions to indulging in its rich cuisine.
Colombia
Also focusing on Arabica beans, Colombia has made itself a staple within the coffee industry thanks to the various small farms that produce quality beans. The country uniquely has two harvest seasons thanks to its proximity to the Equator, securing its place as the third-largest coffee producer in the world. While coffee thrives throughout Colombia thanks to its varying climate and elevations, the most productive zone is the coffee triangle, consisting of the rural area between Caldas, Risaralda and Quindio. The northern edge of the country normally creates less acidic coffee that has more body, while the southern region’s coffee carries hints of citrus. Celebrate the entire region’s bounty at Parque del Café, a coffee theme park in Quindio complete with a museum, theater show and rides.
