This month it’s a good thing your eyes are bigger than your stomach because our team has compiled an entire issue for you to savor! It’s all centered on our annual dining guide — 20 pages of lux libations and “chef’s favorites” from many of the area’s most flavorful. From there, we portion out all things culinary touching on any time, place or occasion you may endeavor to devour. In “All Hail Food Halls,” Ashley Madonna brings the global food hall phenomenon straight to your door, years before the first one in Southlake opens its doors thanks to the newest developments from Carillon Parc. All the while, Maleesa Smith is “Revisiting Roanoke” to share the heaping portions of history and master planning that have led to the once sleepy town being recognized as “The Unique Dining Capital of Texas.” It wasn’t lost on us in catching up with Dallas Cowboys Cheerleader (and former Emerald Belle), Lacey Munoz, that she’s about to get her degree in nutrition. In the meantime, she’s making Southlake proud and continues to inspire others while dancing with arguably the most notable troupe in the country. The best restaurants in the world, you ask? We’ve got them in our Boarding Pass travel section. Point is, you like food, you need food and we’re here to make sure you are eating and reading the very best. For me, the tastiest morsel this month wasn’t about a restaurant, a chef or even a grocery store. That morsel came from the hearts of the parents and students at Jack D. Johnson Elementary School who held a lemonade stand to raise money for the medical care of a fellow student this summer. Go ahead — dig in!

LACEY MUNOZ is all too familiar with making

an entrance. With stadium lights shining down from above, roaring fans cheering from the sidelines, white boots hitting each mark and poms firmly in hand, this professional dancer has years of practice striding out on a football field – first as a Carroll Emerald Belle and, for the last five years, as a Dallas Cowboys Cheerleader. She went from watching “Dallas Cowboys Cheerleaders: Making the Team” with her friends in high school to suiting up in the legendary uniform and representing the team every Sunday. While she is now a staple of the DCC, she recognizes her earlier dance days and high school training led to her current success.

Taking her first dance class at three years old, Lacey got a jump on her career at an early age. While she says there was no big epiphany behind her start, and she credits her sister for inspiring her to pursue the pastime, it quickly became a way to show off her style. “It sounds cliché, but it really was a way for me to get out of my comfort zone and gain that confidence as a young girl,” Lacey says. “It became my way of expressing myself.” When high school reared its head, it was a logical progression for her to sign up for Belle tryouts. Lacey joined the team at 14 as a freshman, and according to Emerald Belle Director Melissa Page, quickly began to have an impact on the team. “Her passion for dance mixed with her incredible kindness towards others was something truly special,” Melissa says. “I knew she was going to contribute so much to the team.” After four successful years on the Carroll drill team and a year as the team’s captain, Lacey carefully considered her next move. She had watched “DCC Making the Team,” the documentary-style TV show following the three-month audition process, on CMT and enjoyed following the assembly of each year’s team, but she didn’t consider trying out herself until the end of her senior year. “I knew that I wanted to continue dancing, and I knew that I wanted to do something big, with a big crowd and big expectations,” Lacey says. “That show, and the DCC, popped back into my mind. I thought to myself ‘That would definitely be a big crowd.’” So after graduation, she took the leap and signed up for their 2014-2015 team tryouts. For those of you who didn’t spend high school watching the CMT show, this involves several weeks and rounds of dance sequences, choreography combos and the infamous kick line. The hopeful dancers are narrowed down to semifinalists who then perform solo routines to show off their technique and hit the field to perform another choreographed routine. down for interviews and the final cut before their two-month training camp, where women are still cut throughout the process. The women who make it through that intensive period end up creating the most prominent NFL cheerleading squad in the country. Using her technical background and the skills gained while a Belle, Lacey was just one of approximately 15 rookies to be invited to training camp. And she went on to be one of nine new members of the Dallas Cowboy Cheerleaders that year. That level of anxiety and anticipation may sound stressful to most. And Lacey says she has still had that butterfly feeling every audition process after her first, but it was also the setting where she made impactful bonds with the women she would dance alongside. “The friendships that are made on this team create connections that are not like most and are very hard to explain,” Lacey says. “Some of my closest friends are girls that I sat right next to on that first day of auditions my rookie year.” Even though Lacey has been on the team for five consecutive seasons, she still says she never thought she would call herself a cheerleader. “Growing up as a dancer, I always kind of felt like cheerleaders and dancers were not even in the same realm of each other. However, I did not want to grow up to be a ballerina either,” Lacey says. “I took ballet in order to help my technique, but I always had a love for jazz, hip hop and pom-styled dancing, which is a lot of what I do today as a DCC!” She had not experienced anything like the intense three-month process of becoming a new Dallas Cowboy Cheerleader, but Lacey credits the Belles for putting her on the right path to reach her goals. “I owe so much of where I am today to Melissa Page and the Belles program,” Lacey says. “Being a part of that team taught me the importance of punctuality, work ethic, stretching and high kicks and how to be a part of a sisterhood.” And being captain of her high school squad taught her how to later take a leadership role with the DCC. “That role prepared me to take on difficulties with confidence even when I questioned if I could succeed,” Lacey says. “It prepared me to give 110 percent and to put the team before myself. It prepared me to never become content and always push myself to be better. Through all the hard work and determination, Lacey looks back at her days at Carroll ISD as some of the fondest of her life. “Those were some of the best and most educating years of my life and I truly cherish that team.”

R E P R E S E N T I N G T H E PA R T Lacey has come a long way since her rookie year. This June, she was named one of the eight leaders for the 2018-2019 squad. Growing from a newbie to a lead team member over the past five years, Lacey has developed and learned a great deal from the program along the way. “My time as a Dallas Cowboys Cheerleader has taught me more than I can ever say or probably even recall,” Lacey explains. “Not only has this job helped me to grow as a performer, but also as speaker, employee, teacher and just a well-rounded person. It has taught me the value of being an ambassador of an organization with great morale and legacy.” And while it is still her passion for dance and thrill of performing that has kept her going, Lacey says she loves the opportunity to give back through her work. “Not only do I get to do what I love almost every day, but I also get to give back and help others with the many charity events, kids camps, and USO tours we take part in,” Lacey says. “Other than the rush of performing in front of those big crowds, my favorite part is the happiness I am able to give to others through this job.” Lacey keeps her schedule busy with hours of practices every weeknight during football season. And with games or appearances on the weekend, the part-time job can start to feel more like a full-time gig, even though the program requires all dancers to have another job or be enrolled in school while on the team. But instead of being bogged down with her busy schedule, Lacey sees each outing as a chance to bring joy to others. “Merely putting on the beautiful uniform, and giving someone a smile and warm conversation gives me the ability to make someone’s day,” Lacey says. “I love when I meet someone and they say, ‘Wow! This is a dream come true.’ There is no feeling like it.”

LO O K I N G A H E A D Lacey spends a lot of time inspiring others, whether it be through the DCC camps or meeting young fans around town through various apperances. So when asked what advice she would give to girls who want to follow a similar dance career path, Lacey says to just believe in themselves no matter the odds. “Make the goal of reaching that dream your motivation within everything you do and every step it takes to get there,” Lacey says. “Stay true to yourself and never let comparison, doubt, or insecurities hold you back from being the you that you want to be.” Lacey has big plans ahead of her. While she says working for the Dallas Cowboys is an honor, she’s excited to see what the next chapter of her life has in store.

Lacey works as a nanny, dance teacher and part-time student working toward a degree in nutrition. While she hopes to finish school and find a career in her line of study, she doesn’t plan on venturing too far away from dance anytime soon. “Dance has always embraced a huge portion of my life, and I don’t necessarily see it changing once I retire from DCC,” Lacey says. Regardless what comes next for Lacey, she knows she can use her life lessons learned from the Emerald Belle and Dallas Cowboys Cheerleader programs to find success. “I know that these skills will help me tremendously as I embark on my future journey,” Lacey says. Until then, she will continue to represent America’s football team as they head into their new season. And as far as how their football team will hold up this fall and what is next for the Carroll grad, we will have to follow Lacey’s own words: “ I guess we will just have to see!”

FORMER DRAGON GOLF COACH HIRED AS NEW CISD ATHLETIC DIRECTOR After a unanimous 6-0 vote, the CISD Board of Trustees named Steve Kealser the new CISD Executive Director of Athletics in July. Keasler is no stranger to Southlake. From 1994 to 2004, he served as the Dragon head golf coach and a teacher at Carroll high schools. He has worked in education for almost 30 years, including work in Grand Prairie ISD, Callisburg ISD and most recently Midlothian ISD, where he served as athletic director for the past 10 years. With an extensive resume as a golf coach, Kealser left CISD in 2004 to become assistant men’s golf coach at the University of Texas at Austin. Athletic teams under his umbrella are no strangers to success: At Midlothian, the boys basketball team made state and both girls and boys soccer teams made the Class 5A Region II tournament.

GATEWAY HELPS CARTER BLOODCARE REACH A RARE DONATION SURPLUS DURING FIRST SUMMER BLOOD DRIVE Gateway Church and Carter BloodCare partnered together to hold their first summer blood drive in June and July. They were originally hoping to receive 300 total donations over the church’s six campuses in a seven-week period, but they quickly exceeded that goal by their second week. Their drive concluded after receiving 1,582 blood donations. That’s enough to potentially impact 4,749 people who are in need of life-saving blood. The community came together to put on this drive after Gateway Church’s founding senior pastor Robert Morris received several life-saving blood transfusions in early April. He was at home recovering from a double hernia surgery when he had to be rushed to the hospital via medical helicopter after passing out. This tragic event inspired the congregation to donate blood in a time while other programs are seeing a decline in blood donations overall. This gave Carter BloodCare a rare summer surplus, so they are able to export blood donated to other areas of the country. SOUTHLAKE FIRE DEPARTMENT SENDS THREE OF THEIR OWN TO ASSIST IN FIGHTING CALIFORNIA FIRES Southlake Fire Department deployed a set of firefighters as part of the Texas Intrastate Fire Mutual Aid System to assist with California wildfires. Brent Nobile, KJ VanNatta and Seth Corder made up a specially trained strike team who ventured to the Carr Fire and fought flames in Orange County on August 8 and returned back home on August 22. They brought in fresh resources like wildland gear and structural gear to help preserve life and property in the affected area.

SOUTHLAKE 7U BASEBALL EARN SECOND PLACE IN TSI WORLD SERIES The Southlake 7U Baseball team played in the TSI World Series at the beginning of July. Though they lost in the Championship game in extra innings, the team earned second place overall. This success was not limited to the World Series. Earlier this season, the team finished first place in the Colleyville 7U Memorial Day Tournament, the Southlake/Coppell 7U Tournament and the AA Summer Sizzler. They closed the summer out with a 27-3 record. Players and coaches include Coach Shawn Mackey, Coach Robby Whites, Head Coach Philip Odette, Coach David Nied, Ryan Williamson, Michael Fitzgerald, Max Clem, Corbin Leonard, Beckett Mackey, Cash Tomcheck, Wyatt Smith, Beckett Nied, Zander Whites, Dylan Perdue, Luke Odette and Jackson Murphy.

SOUTHLAKE CITY COUNCIL CHANGES MEMBERSHIP FEES FOR UPCOMING CHAMPIONS CLUB In their regular meeting on August 7, Southlake City Council discussed and unanimously voted to approve pricing changes to the Championship Club membership fees. Membership rates were originally discussed at their June 28 meeting, and many locals expressed their concern about the prices via social media. So the council listened to their thoughts and brought them up for review. “As a Council, we are appreciative of feedback that we receive from residents. In this case, their comments and questions, especially those posted during Councilmember Huffman’s and Councilmember McCaskill’s Facebook live videos, were very helpful in helping us understand their point of view,” Mayor Laura Hill says via email. “When we asked city staff for options, it was based upon the residential input and the sound financial principles that guide all of our operations.” The August 7 vote included increasing the resident discount from 10 percent to 20 percent and the corporate

JACK D JOHNSON ELEMENTARY KIDS HOLD LEMONADE STAND FOR FELLOW CLASSMATE Audra Snead, Susan Ogden and Melissa Moore love the opportunity to teach their children about giving by raising money for others in need. Last year, their children collectively hosted lemonade stands for the schools in Houston that were impacted by Hurricane Harvey and the Children’s Hunger Fund. They were blown away by the success of the events and the support from their community. On August 8, they did it again, but this time with a local tie. After knowing the story of Preston Hall, a 10-year-old boy going into fourth grade at Johnson Elementary who has never known life without complex medical conditions, they decided to raise money to help financially support and encourage Preston’s family while bringing together the community to work toward a common purpose. Sawyer and Ridgely Snead; Ellie-Cate and Eden Ogden; and Micah, Maddox, and Katherine Moore sold lemonade, donated by Chick-fil-A, and hydrated the masses who wanted to support the worthy cause. They ended up raising $1,200 throughout the day, which went to support Preston’s stay at the Boston Children’s Complex Care Clinic, where he’s currently a patient enrolled in a clinical trial.

They also offer a 10 percent off military discount. Membership sales went live late last month, and they are set to include access to a variety of fitness classes, exclusive events and discounted rentals. The facility features their fitness center, basketball courts, indoor pool, water slides, lazy river, lap lanes and much more.

CARROLL CLAY TARGET TEAM BRINGS HOME NATIONAL TITLE During the school year, it seems like the Carroll Dragons are constantly adding to the trophy cases. School may not have been session, but that didn’t stop the Carroll Clay Target team from displaying Dragon excellence. Case in point, they earned first place at their national debut. “We went up to Ohio for the first time ever as a team,” says Laird Fairchild, president of the Carroll Clay Target board. “We actually had fundraisers throughout the year to take our team to nationals.” The team has consistently been competitive at a state level, often earning second behind the Allen team. “We actually beat Allen this year at state, so we actually felt pretty confident going into nationals,” Fairchild says. “Our athletes had a phenomenal day in sporting clays and took home the national title.”

RACE TO BENEFIT OPERATION UNDERGROUND RAILROAD Runners, walkers and defenders of exploited children everywhere, head to the Terrace in Westlake to support a good cause. The “Race to Stop Traffick” will be held on September 3 at 7:30 a.m. All proceeds will directly benefit Operation Underground Railroad, a nonprofit organization whose mission is to rescue and rehabilitate children sold into sex slavery in the U.S. and around the world. There will be a 1-Mile Fun Run as well as an officially timed 5K race. Children 12 and under may participate in the 1-Mile Fun Run at no cost and free professional babysitting will be provided in the Kids Zone during the 5K for the children of race participants. Participants, including families and kids, are welcome to take part in finish line festivities such as carnival games, face painting, live music and a raffle booth.

LOCAL GIRLS SOCCER TEAM WINS THE NATIONAL CUP XVII CHAMPIONSHIP From July 20 to 24, Fever United ’05 Penn (Keller)’s U-13 Girls ventured up to Aurora, Colorado, to compete in the US Club Soccer 2018 National Cup Finals. After five days of intense competition, they found themselves in the Girls Super Group finals where they took on the FC Stars ’05 from Acton, Massachusetts. The team walked away with the W after a 2-1 game. While the select team was made up of high school students from a variety of schools, it also included Avery Chang and Allison Chang, both midfielders from Southlake Carroll.

Now, a popular Fort Worth concept run by an Irving local is making its way to Las Colinas. Reservoir – operated by Funky Lime Hospitality Concepts – will open across from Alamo Draft House on the Texas Lottery Plaza by the end of this year. A look into the trend on its way to Southlake By Ashley Madonna

G

one are the days of aimlessly wandering around the mall gazing at the complex’s ensemble of food court options. Today, superior dining experiences seem to be everywhere you turn. But to have all of your culinary options available under one roof, you’d need to make your way to one of DFW’s food halls. These Europeanstyle complexes crossed the pond and started popping up in metropolitan areas over the past ten years. Now, they have made their way to North Texas. And Southlake is in line to get its own in 2022 in the upcoming Carillon Parc. With all of the talk behind the trend, the boom of business and the sheer amount of locations coming to the Metroplex, we have to ask: What makes these developments special? And will their popularity last long enough to make these structures worth it? That we dive into as we learn more about the modern take on a classic tradition.

CHANNELING EUROPEAN ROOTS Every development has its own definition of what a food hall is, but it basically boils down to an ensemble of chefdriven stalls each dishing out their own unique menus in one place. So guests can enjoy the offerings of a variety of locations while dining in a shared space. It also gives chefs a smaller space to trial out new creations without the baggage that sometimes comes with restaurants. While food halls are the new big thing to hit the U.S., these large projects have been all the rage in Europe for centuries. But it comes by a different name. High-end “food markets” are spread throughout the continent and are known for their range of artisan creations. But at the start of the millennium, more seemed to be introduced to different countries focusing on regional cuisine. Each had a specific sense of place highlighting the area’s freshest ingredients and newest kitchen innovations. According to the Cushman & Wakefield’s Food Halls of Europe 2017/18 topical report, Europe has more than 100 food markets and currently double that number is currently in the pipeline. They credit younger generations of travelers as a key component in these complexes. These adventureseeking consumers want to dine out while exploring an area, and these centers gave them one location where they can enjoy high-quality food and learn about the native culinary customs. That’s exactly what American food halls want to provide on a local level.

“When you look across the globe, and when you are searching for inspiration, you go to those successful projects that have that look and feel that we want to accomplish,” former City of Southlake mayor and one of the current leaders for Carillon Parc John Terrell says. He was mayor when the development idea was originally brought to the city, and now he is using his business development experience to ensure it has a successful rollout. American foodies started to see this trend trickling west earlier this decade, but now it seems like an avalanche of food halls have started taking over metropolitan areas. Big cities like New York city already have a few dozen food halls. And now, the Metroplex is inching closer to the double digits.

You may have been to the Dallas Farmers Market, but have you been to their food hall? The Market was the first of its kind to open up in the Big D.

E X PA N D I N G I N D F W One of the first came on the scene as an extension to The Dallas Farmers Market. The location’s 26,000-square-foot food hall, The Market, opened up back in December 2015 with four anchor restaurants and an array of family-friendly food vendors offering everything from macaroons to domestic cheeses. They even have a few retail options like the Dallas-owned Bullzerk design and clothing stall sprinkled in – all of it reigning from the big D. “People are attracted to food halls more now than ever because of the variety and convenience. It is nice to have various options all in one location,” says media contact for The Dallas Farmers Market, Ashley Tobar. “Most food halls, including The Market, give people the opportunity to support local and see what each local community has to offer.” That can also mean the talent from the area, which is clear at Legacy Food Hall. The Plano complex opened its doors in December 2017 ready to be noticed. The 55,000-square-foot, three-story destination location was inspired by the Front Burner’s, a Dallas-based restaurant management company, president’s, Jack Gibbons, travels in Amsterdam. After seeing a “foodhallen,” he knew he wanted to bring that idea back to Texas. So he pitched the idea to the Legacy West development owner, and they never looked back. They brought in an array of celebrity chefs and local restaurateurs to curate a diverse variety of food halls spread among the location’s three floors. They learned from other successful locations to create a better overall environment for their customers. “We drew inspiration from our visits to the best food halls around the world, as well as the top halls across North America,” Gibbons says. “The resulting environment is uniquely SOUTHLAKESTYLE.COM

food-forward and energetic throughout the inside, with a distinct vibe on each of the three levels.” The result is a spread of 22 food stalls serving up an array of cuisine – from barbecue to seafood and from German to Asian fusion. And their chefs include local celebrity restaurateurs chef John Tesar and chef Tiffany Derry. While they used the success of the trend to build on the food hall movement, Gibbons is confident their food hall is here to stay. “We don’t believe that food halls are a fad,” Gibbons says. “They are the perfect adaptation to today’s discriminating diners who are very much into discovering new things and enjoying shared experiences with their meals.” But 2018 has been the biggest year yet for food halls in DFW. Stanley Rose opened Urban8 off Highway 121 in The Colony just last month. (Mind you it’s less than five minutes away from Legacy Food Hall.) But he took a slightly different approach and based the stalls on the area’s SEO traffic to gauge locals’ interest. He wanted to partner with nearby restaurants people had cravings for that also had great online reviews. This all translated into a formula to give diners what they wanted alongside entertainment opportunities like dueling piano nights and movie screenings. He plans to bring that same model to Allen, a project he has already broken ground on, and Fort Worth, which he hopes to move forward with sometime next year. “We are building a bunch of them,” Rose says. “People should expect quality food, a smile on people’s faces and a fun atmosphere when they come in.” Fort Worth is getting its first food hall in West 7th next month, unrelated to Rose’s location, with the opening of Crockett Row. Their 14 vendors will offer different categories of food along with a great deal of local art and music for their guests. SEP 18 • 73


“We want people to know that while there will be a diverse assortment of great food. We also will be focusing on incorporating the local art and music communities in the food hall,” CEO of Hospitality Alliance, a development and management consultant on the project, Kevin Lillis says. “We will frequently rotate the art and music that are part of the programming so guests can always look forward to experiencing something new.” Each one currently offers their niche, whether that is local finds, big culinary names or live entertainment, which makes every site unique in its offerings for their clientele.

COMING TO SOUTHLAKE Southlake is known for bringing big national brands to the forefront for their citizens, but there’s a hunger for more momand-pop options in town – especially when it comes to restaurants. And that’s why Carillon Parc will be an essential edition to the fabric of the local dining community. You may have heard about the 42-acre development off SH 114 when it was first approved by the city in 2008, but now its being fast-tracked to be a European mixed-use community that will offer cutting-edge amenities for locals. “We believe Carillon Parc can be a true tourism destination for experience,” Terrell says. “The difference between our development versus many of the other complexes in the Metroplex is that we are focusing a lot on the culinary aspects.” One of which will be a proposed 24,000-square-foot food hall projected to host 20-24 stalls. The original plan did not include this hip attraction – rather it had a four-story office building planned for the space. But current developer Hunter Chase Construction & Development knew they wanted to be apart of something trendsetting. “We necessarily didn’t need another office building in the middle of this space,” Senior Managing Director and co-founder of HCCP Laird Fairchild says. “We started to really recognize that we had the opportunity to create something a little bit more special here.” 74 • SEP 18

And being locals themselves, they knew there was a need for a fresh update to the culinary scene. “Being Southlake residents and talking with folks we saw that we were lacking in unique dining experiences,” Fairchild says. “We’re local. We’re not just interested in the bottom line, which is obviously very important, but we care about the longterm legacy and the community we are going to be serving.” They toured local food halls, attended food hall conventions and conferences and met with culinary professionals to ensure they learned from these established projects. But they also saw potential ways to improve the experience. They are now theorizing opportunities to provide a fusion of sorts between food halls and sit-down service to provide a better customer experience. “When you walk into a food hall, you want to see what each restaurant has so you go your different ways and you hope you can all congregate at the same time at a table that you hope is there,” Senior Managing Director and co-founder of HCCP Edward Chu laughs. “What we are looking at is saying that we understand the food hall concept and understand full [restaurant] service, so is there something of a hybrid that will give the customer a better experience.” By offering innovative services like kiosks or tableside iPads to order from several food stalls in one transaction or reservation services that can save a table for a party looking through their options, they are building on the foundation of other food halls to refine the current ordeal behind visiting one of these developments. By partnering with Las Vegas chef Brian Massie, they are curating a diverse set of vendors who will bring fresh bites to Southlake including cheese shops, butchers and much more. Carillon Parc will also be able to foster budding restaurant ventures by providing a variety of space options for their restaurant tenets. If a stall owner sees a great deal of success in the development and starts to build an immense following, they can move into one of the nearby incubator spaces to create a smooth restaurant transition. “There are places in Carillon Parc that will be incubator spaces. We have some small restaurant spaces that will allow food halls to move into a bigger space as they become successful,” Terrell says. The development is also talking about partnering with a culinary institute, both on the high school and college level, to inspire those interested in the industry to pursue their passion. Terrell even says there is a projected stall location where these students can learn how to work in the space and potentially open one of their own after they finish their studies. “We want to grow them from training all the way to a restaurant,” Terrell says. By its opening date, the location will add close to 100,000 square feet of restaurant space to the city says Fairchild. That’s on top of all of the entertainment concepts they are currently considering to bring fresh experiences to town – everything from dine-in movie theater to upscale Ping-Pong focused attractions are on the table. They plan to break ground next year, so they are ways away from announcing their list of menus, but it’s something we will all want to keep a close eye on. Not to mention the other food halls in town to see how their long-term success pans out. But one thing seems to be certain: Food halls aren’t going anywhere anytime soon. SOUTHLAKESTYLE MAGAZINE

xperience the thrill of a carnival favorite without wasting time in the State Fair of Texas’ lines by moseying over to Ferris Wheelers in Dallas’ Design District. The barbecue joint opened its doors last year and has already made itself a food destination because of their good ol’ cooking and entertaining environment. As soon as guests park, they can see the 50-foot Ferris wheel peaking out above the restaurant’s Texas-painted roof. After taking in the whimsy and passing by the location’s old-fashioned metal beer signs and homey décor, they will start to get a sense of the location’s vibe. And it all comes together after getting a whiff of the post oak wood, ideal for creating smoky barbecue.

Their menu, created by operating partner and head pitmaster Doug Pickering, focuses on classic Texan barbecue favorites while leaving room for innovative indulgences – like their Smoked Sausage Mini Corn Dogs, hot links battered and fried, and Waffle Fry Nachos, fries covered in queso, smoked brisket and pico de gallo. And with both a house and hot barbecue sauce, tomato-based with a touch of vinegar, on the side, guests get a true sense those Lone Star State influences. While Pickering serves up pounds and pounds of Texas barbecue now, he wasn’t always in the restaurant game. After working on Wall Street for 12 years, Pickering decided to follow his passion and open a catering business. Starting with one Big Green Egg smoker and no prior culinary background, he toured

around the state to learn from various notable pitmasters to develop his techniques. After learning about the various ways to create flavors and developing his own flavors, he opened up DWP BBQ, a DFW-area catering company. After serving several locals through his company and working under highly regarded local chefs, he decided it was time to venture into a restaurant of his own. Since he opened his doors last year, he has turned passion into success everyone can enjoy. Their traditional mains, like the brisket served by the half pound or on a sandwich, come out well rendered and tender after being slowly smoked for hours on end. And their own creations make way for new barbecue favorites – like their Brown Sugar Glazed Ribs, St. Louis cut ribs served by the half rack and finished in their house barbecue sauce. These saucy bites may have you crying out for another stack of napkins, but their sweet, spicy flavors keep you satisfied. Be on the lookout for their burnt ends, available only on Wednesdays. These flat cuts are some of the best in town and are worth the trip out alone. But don’t skimp on the sides when dining in. Ferris Wheelers has rethought the dishes that accompany barbecue mains and infused them with distinctive flavors that make them stand out from their competitors. “Instead of offering traditional BBQ sides, Ferris Wheelers ratchets everything up a level, such as offering smoked green beans, a zesty southwestern potato salad and tangy coleslaw with a touch of jalapeño and bacon,” Pickering says. While waiting on their plates, guests can enjoy a range of lawn games like corn hole and giant Jenga on the patio. Their outdoor stage often provides live music and entertainment the whole restaurant can enjoy. To take advantage of the namesake attraction, come out on a weekend or one of their many special events. It takes a threeman team to make the Ferris wheel run, including designated security, so it is not always functional. But when it is, the ride provides an expansive view of the Big D. Even if the Ferris wheel is down for the night, the barbecue joint is always a fun choice. Just grab a seat at one of their picnic tables, and get ready to sink your teeth into their delicious creations. “It doesn’t hurt that we also offer the best damn barbecue in Texas!” operating partner Phil Schanbaum says.

Taco ’Bout Good Eats Boca 31 Brings a Fine Dining Take to Street Food With a culinary resume including Michelin-star restaurants and hotel hotspots like Miami’s Dilido Beach Club at The Ritz Carlton, Andres Meraz had his pick of restaurant jobs after moving from Miami to Texas. But the high-profile chef channeled his roots when he decided to open a restaurant of his own back in 2016. Boca 31, known for serving elevated Latin street food, has been wowing Denton foodies for years. And after seeing a great deal of social media love, flood of positive reviews, lines out the door during weekend service and a committed and diverse set of regulars become his local fan base, Meraz decided it was time for his next venture. He opened up Boca 31’s second location in Keller Town Center in July and brought his vibrant creations along with it. It quickly became a local, laid-back spot for people who wanted more than the typical Tex-Mex. Their everyday menu appears to have everything diners have come to expect with the region’s cuisine – tacos, empanadas and rice bowls served à la carte. But their combination of fresh ingredients and bold spices is anything but ordinary. The Chipotle Barbacoa Beef Taco, served on a fresh corn tortilla and garnished with a house Aji Amarillo Coleslaw and pico de gallo, pairs a hearty protein with light toppings, making for a beautifully balanced bite. And the

Pork Chile Verde Empanadas, made from scratch, use a slowcooked pork which makes the filling burst out with flavor. “We are offering a different approach on our plates,” Meraz says. “We also have a couple bigger plates for people to share.” Boca 31 may be most known for their specials. Meraz shares a limited-time offering on social media every day that guests can come in and try during lunch and dinner service. He uses their reaction and engagement with each dish as a way to find new dishes he can add onto the regular menu. “We modifying a couple things as we go depending on what people like,” Meraz says. “When you come in, expect something different.” Don’t leave without grabbing a pop to go. Their mangopassionfruit is a light yet sweet option for the kids, while the lime, made with freshly squeezed juice, offers a zesty kick that refreshes the palate after a long meal full of great dishes.

PR GURU TURNS EFFORTS TO SUPPORTING LOCAL RESTAURNTS

C

raving a specific kind of cuisine or want to try out a new restaurant? Looking for farm fresh eggs, local honey or raw goat’s milk? The Foodie Feed has got you covered. The public Facebook group is full of local suggestions provided by followers’ neighbors. And while founder and admin Jennifer Shoucair Weaver didn’t intend to create a local foodie movement, she is using her publicity background to make sure locals enjoy the best of what DFW has to offer. She’s doing it all from her farm in Southlake in the company of her two young children and sprightly pack of lamas. I WENT TO USC … and after a brief stint in advertising, I found myself working at an entertainment PR firm. I realized very quickly that if I wanted to rise the ranks, I was going to have to be the workhorse. That was fine with me! I was young and hungry (pun intended), and so I decided to say ‘yes!’ to every opportunity that came my way at work – whether it was working a red carpet on holiday, staying past midnight at a photo shoot or riding in the back seat of an SUV with a blanket over my head acting as a decoy. Just yes, yes, yes. I’ll do it! I MADE A GOAL TO … have my own office and assistant by the time I was 25. I hit it at 24. I was extremely fortunate to have the opportunity to work with established names like Kelly Ripa, and talents like Kate Winslet, Geoffrey Rush, John Goodman and Hank Azaria while I built my own roster. I started my own boutique PR firm at 27 with a former colleague and friend based in LA. It’s been open for a decade and is still going strong. I bowed out three years ago when my son was born…but you never know. Once my kids are in school full-time, I might want to do PR again. I HAD NEVER SET FOOT IN TEXAS … before moving out here for my husband’s job, but I have really embraced the lifestyle. After living here for a handful of years, we literally bought a farm, and I now own llamas. I have a garden, and with it comes huge respect for our local farmers who actually manage to produce crops. On the Foodie Feed, I hope to support our local agricultural community. WHEN I CREATED THE FOODIE FEED … I thought, I’ll just throw it up on Facebook, and if some people want to join and talk food with me, awesome! But it has really taken off! This community likes to dine out, but we don’t get a lot of love from the bigger publications in Dallas and Fort Worth. We needed a more local source.

TO ACCENTUATE THE POSITIVE … I prefer to keep things PC on the board, but I’m aware that if you skew things overwhelmingly positive, you don’t get a true experience. I appreciate the comments, critiques and back and forth banter that our group offers, and I think it could be a really good resource for restaurant owners as well. I BELIEVE IN … second chances. I worked in restaurants for almost a decade. I paid my way through college by waiting tables. I have done it all. I understand the workings of a kitchen, of the front of the house, of the back of the house. Sometimes, you just have a bad day. That’s why I believe people should try a place more than once to really form an opinion. I WANT TO BE … a cheerleader for our community – to see small, quality businesses thrive and to encourage more to come here! I love connecting people, and what better way to do it than over good food? FOR PEOPLE WHO WORRY ABOUT … eating out with kids I am raising two tiny gourmands who love to eat out. I try to bring activities like coloring books, or little containers of play-dough so they have something to do. They love Indian food and Middle Eastern. My son’s favorite food is sushi. My daughter has literally said, ‘Mom, I’m tired of prosciutto.’ She’s also proclaimed, ‘I want to get married in Texas so I can have beef rib from Meat You Anywhere at my wedding.’ WITH THE KIDS … we love the Dallas Arboretum. We bring a picnic – I’ll make an epic cheese plate and grab a baguette and bottle of wine from Central Market. The kids have a blast running around. I’M DYING TO EXPAND THE GROUP. Most of us are aware of what’s right here in town. I’d love to grow our membership so that people in other DFW suburbs can write about what’s in their backyard. Will drive for good food!

Osteria Francescana Located on the cobblestone backstreets of Modena, Italy, Osteria Francescana was named “The World’s Best Restaurant 2018” and “The Best Restaurant in Europe 2018.” The contemporary Italian hot spot, run by one of the most celebrated chefs in the industry, chef Massimo Bottura – as seen on Netflix’s “Chef’s Table,” is no newcomer to the list. The restaurant won the same honor back in 2016 and was No. 2 in 2017. REVISITING ROANOKE: H OW O N E S M A L L T O W N BECAME EVERY FOODIE’S D R E A M D E S T I N AT I O N BY MALEESA SMITH

B

efore even sitting down to write it, I told my dad about this story. I explained that Roanoke is now heralded as the “Unique Dining Capital of Texas,” to which he replies with humorous skepticism. “No way.” For someone who was raised nearby and moved out of the DFW area in the early ’90s, this reaction is not unwarranted. When he and my grandparents lived in Argyle in the early ’70s, they had a P.O. box in Roanoke. When it comes to unique dining, not much was there. Certainly not Hard 8 BBQ, Twisted Root, Craft and Vine and many other eateries that Southlake residents gladly travel outside of the bubble for. So how does it happen? How does a small town bolster its economy, change its identity and garner the attention of large-scale eateries without breaking the 10,000 population mark? The answer: intentional planning and maybe a little luck.

TWENTY-FIVE YEARS AGO Long before being named the “Unique Dining Capital,” Roanoke had a few standout restaurants that were already turning the town into the place to be. Classic Cafe, for example, is one of the cornerstones to Oak Street. Open since 1993, The Classic is more than just a delicious eatery. It is a garden, a community staple and a meeting place. Coowner Curtis Wells and his brother Chris Wells knew early on they wanted to go into business together. That desire, coupled with Chris’ background in realty appraisal, led them to Roanoke. “Being a real estate [appraiser] in the area, Chris saw potential for growth,” Curtis says before adding with a chuckle: “We were a little further ahead of the curve then we might have wanted early on.” SOUTHLAKESTYLE.COM

REVISITING ROANOKE: FOODIE MECCA

When the Wells’ attention turned to Roanoke, Alliance Airport had just opened, and in Curtis’ words: “There wasn’t much between Alliance and Fort Worth, and definitely nothing between Alliance Airport and Denton.” This put their planned cafe in the middle of two expanding areas, creating a meeting place for some and an oasis for others. They weren’t the only ones a bit ahead of the curve. There was another restaurant that opened in 1993 – two weeks earlier than the Classic Cafe, in fact. You may have heard of it: Babe’s Chicken Dinner House. “We’ve been good neighbors,” Curtis says. “There are days when you’re looking for fried chicken, and there are days when you’re looking for other stuff. We’ve gotten some of our best customers from folks who didn’t want to wait in line at Babe’s.” Babe’s Chicken went on to open locations across the Metroplex, but their roots will forever be in Roanoke. With two exceptional diners located in the Historic Downtown, the inspiration to mold Oak Street into a food destination became clear. “Babe’s Chicken and Classic Cafe were doing exceptionally well,” says Cody Petree, assistant city manager of Roanoke. “They both had lines, lots of people coming in and lots of tourism. So we just saw a great demand and thought we could build off of that.” 96 • SEP 18

ABOUT A DECADE LATER By the early 2000s, the population boom that was hitting the rest of the Metroplex was also impacting Roanoke. Based on U.S. Census data, in 1993, the city’s population was hovering around 2,000. By 2004, that number had more than doubled. In recognition of this, the city council and city staff partnered with Gateway Planning Group and Texas Perspective, Inc. to create a development plan for Roanoke’s downtown. “We really wanted to have selective growth in downtown,” Petree says. “Viable, sustainable development that would last for generations. Already having a couple of family-owned, small successful businesses in town, we just wanted to feed off of that trend.” The 2004 Downtown Plan was laid out in three phases, the first of which included coming up with a strategic development vision for downtown. The plan stated that the city needed to “focus on a theme for downtown and stick with it.” Even then, the city and its partners recognized that retail trends were headed online. If 2004 doesn’t seem that long ago to you either, consider this: it was the year Facebook launched, the year “Friends” ended and the year that the Motorola Razr was released. So to say this strategic plan took foresight is a gross understatement. “We’ve had great leadership in our city council,” Petree says. “We have a lot of longstanding council members and they’re very active in the community and very pro-business, pro-development.” In small communities, this mindset can be tricky. There is often a mix of people who have been there for generations and enjoy the small town feel coupled with those who have relocated to escape the ever-developing Metroplex. The city was mindful of that. “Like with any growth, there is going to be challenges,” Petree says. “We had a lot of community meetings to try to sell our vision at that time to the residents. I think we were pretty successful. Overtime, everyone got on the same page and have been really supportive. A lot of people take pride in downtown.” As they should. Nestled among the restaurant hot spots are well-preserved pieces of Texas history. A large part of the downtown plan included remodeling the Roanoke Visitor Center and Museum. Sidewalks were added to make Oak Street fully walkable. “In the downtown area we strive to maintain the unique, eclectic, small town charm,” Petree says.

Five years after a plan was established for downtown, Roanoke was officially appointed by the Texas House of Representatives as the “Unique Dining Capital of Texas” in 2009. And the growth of restaurant options didn’t stop there. “We have over 60 [restaurants] now, but downtown, we have 24 in what we consider the Oak Street Corridor,” Petree says. Even with so many options for diners to choose from, Curtis at Classic Cafe remains confident in his own establishment. “The more restaurants you have in an area, the more reason you have to come here,” he says. “And we’re pretty comfortable in our product that we’ve been offering for 25 years. The food and service, my guests tell me, is better than ever. That makes me pretty happy.” This mindset that competitive growth is helpful, not hurtful, is one shared by Southlake’s mayor, Laura Hill. “People that are looking for something a little different, a little quirky, are going to Roanoke because they have done a masterful job at letting people know what they are all about,” she says. “And it helps Southlake.” As smaller cities and towns around the Metroplex brace themselves for the next wave of population, the City of Roanoke stands assured in its careful planning. “I’m fairly confident that this area is going to retain it’s bedroom community feel. We’re so entrenched in our philosophy of being a community, that I think we’ll stay the course,” Curtis says.

The city of Grapevine is known as the headquarters of the Texas wine industry, which is why this celebration draws crowds from all over to enjoy delicious vino, tasty food, live entertainment and plenty of family fun. Let’s start with the main attraction: There are five main wine areas at the festival for you to enjoy. The People’s Choice Wine Tasting Classic is the largest consumer-judged wine competition in the country, where you can sip on some of the best Texan wines. The Champagne Terrace is the place to hang out with friends and celebrate with sparkling wine or champagne. Head over to the Grapevine Wine Pavilions to enjoy special drinks from Grapevine wineries. At the Liberty Park Plaza Wine Experience, taste unique drinks from wineries in California and Spain. Finally, find the Premium Wine Pavilion to find high-quality wines from around the world. Wash down the wine with your choice of sweet or savory fair food. The idea comes from artistic director Jacques Heim, who works with dancers, designers, choreographers and engineers to create a show that reveals how the spaces we inhabit affect us. Each work revolves around beautiful architectural structures (like wheels, walls and half-circle designs), with dancers moving in, on, around, over and inside. It’ll leave you impressed and looking at the world around you a little differently.

ARTS & CULTURE events PLANO BALLOON FESTIVAL SEPTEMBER 21-23 PLANO | Giant butterflies, Lone Star flags and multi-colored balloons will be soaring through the air at Plano’s Balloon Festival this month! The 39th annual event offers a fantastic show in the sky, complete with fireworks, skydivers and a hot air balloon parade. On the ground, guests will enjoy filling up on refreshments, playing games with the kids, watching live entertainment and running or walking in the 1K, 5K, 10K or half marathon. Extra-adventurous attendees (who are 6 years old and older) can fly in the sky by signing up for a tethered balloon ride that reaches approximately 30 feet in the air!
