It’s Prime Time

I

t’s time to grab the remote and roll out the red carpet, because the Primetime Emmy Awards are airing on CBS later this month. Whether you’ve added these shows to your watchlist or binged them at least five times, brush up on these nominees before they take over L.A. Live on September 19. The “Star Wars” space western “The Mandalorian” and Netflix’s “The Crown” are both tied for the most nominations with 24 each. Marvel’s superhero-inspired sitcom “WandaVision” follows behind with 23 nominations while “Falcon and the Winter Soldier” is on the left with five nominations. “Loki” fans will recognize Jonathan Majors in “Lovecraft Country,” but that isn’t the only small-town horror show under consideration with Kate Winslet’s investigative murder-mystery “Mare of Easttown” in play. Kaley Cuoco has her own mystery to solve in “The Flight Attendant” that thankfully doesn’t involve Sheldon, and the fourth season of “The Handmaid’s Tale” offers another kind of dystopia that viewers won’t be able to turn away from. Comedians Alec Baldwin, Kristen Wiig and Dan Levy all earned big laughs and nominations alongside the rest of the “Saturday Night Live” cast. So did Bo Burnham and Dave Chappelle, though don’t expect their specials “Inside” and “8:46” to exactly lift your moods. Thankfully, everyone’s favorite dysfunctional coach “Ted Lasso” never fails to put a smile on fans’ faces. Let’s just hope Jason Sudeikis dresses up a little more for the occasion than he did at the Golden Globes.

What It Takes To Raise Your Own Chickens In The Suburbs Along with bread making, embroidering and gardening, locals’ interest in raising their own chickens grew during the pandemic last year. Whether it’s been a longtime dream or a recently realized aspiration here are some things to consider before owning and taking care of your own chickens.

PLANNING FOR POULTRY

Unless you have land that is already recognized as agricultural property, the first thing you’ll want to do is check in with your homeowners’ association and the city’s ordinances to verify what you’re legally allowed to do on your land. Sometimes cities and local entities limit aspects of chicken raising, like how many chickens you can have, according to the Farmers’ Almanac. After that, the second thing you’ll need to do is build a coop. Protection for the chickens should be top of mind when building a coop. “The coop needs to be fortified so predators can’t dig under,” Southlake resident Kenlyn Jones says. “We protect them from things like hawks and bobcats.” Kenlyn owns land near Lake Grapevine and has raised chickens for almost 10 years. “We decided to start raising chickens for two reasons — I have a large family, and my children love all things animals,” Kenlyn says. “I also loved the idea of organic eggs.”

EGGS GALORE

One of the biggest reasons people raise chickens is for their eggs. “[Fresh eggs] taste a lot better [and] they have really bright yellow yolks,” resident Paula Keller says. Paula, who has a farm in Southlake, currently has nine chickens in her coop. “My red and black chickens lay big eggs and our little Polish hens are laying white eggs. They’re a little bit smaller,” Paula says. Chickens will lay eggs from the spring into the fall, according to the Farmers’ Almanac, ensuring you will never run out. “We are currently down to about 30 [chickens],” Kenlyn says. “Most of them are older at this point, so we get about a dozen eggs a day.”

HEN LOWS AND HIGHS

Along with protecting hens from predators, caring for chickens also involves dealing with their manure. “I think the worst part about having chickens is having to clean the chicken coop,” Kenlyn says. “They are so dirty and will poop anywhere and everywhere that they choose.” Despite the hardships that come with raising chickens, both Paula and Kenlyn say they adore their hens. “They love to run and play in the yard,” Paula says. “When they see us, they’re just like pets. They run to you, they’re so excited to see you.” Kenlyn loves her chickens so much that she started adhering to a vegetarian diet. “They all have so many personalities and are such funny little things. They are much like having dogs and cats,” Kenlyn says. “They follow you around, they get into everything and they jump on your lap for a cuddle.”

KIRBY’S STEAKHOUSE’S SOMMELIER HAS BEEN DECANTING FOR A DECADE

WHY DID YOU WANT TO BECOME A SOMMELIER? I was beginning to develop a passion for wine and really wanted to dive in and push myself to learn, and sharing that passion tableside fueled it even more. WHAT WAS THE PROCESS LIKE TO BECOME A SOMMELIER? Once I realized that I wanted to become a sommelier, my first step was the intro test. After that, the majority of the learning is left up to the individual. There is no way that I could have done it on my own, though. I needed to put myself in a position where I was studying with groups of people at all different levels. WHO HELPED YOU BECOME A SOMMELIER? I found The Dallas Sommelier Society. They really introduced me to the systematic approach of blind tasting, mock service examinations and theory groups. Working with them and other small groups helped me pass my level 2 [test] in 2011. A couple of years later, I attended and passed the Wine and Spirit Education Trust advanced course and exam. WHAT DOES YOUR JOB ENTAIL? [I am in charge of] building and maintaining wine lists, meeting and tasting with vendors, staying on top of wine trends and prices, monthly inventory, hosting monthly

educational wine classes for our team, as well as educating guests and helping them select the perfect wine for their palate. WHAT ARE SOME MISCONCEPTIONS YOU THINK PEOPLE HAVE ABOUT SOMMELIERS? The biggest misconception to me would be that most sommeliers can be unapproachable and arrogant. However, that has not been my experience. There are many different certifications to choose from when becoming a sommelier; the Court of Master Sommelier was the route that I chose, and I did so primarily because they preached a humility that they take to the table and to the guests. WHY DO YOU LOVE BEING A SOMMELIER? I love how wine can bring people together. My passion for wine has grown over the years, and it has been a genuine pleasure for me to spark that interest and passion in others daily. WHAT IS YOUR FAVORITE KIND OF WINE? I enjoy lighter, more acidic-style reds with food, like Pinot Noir, but if I am simply drinking wine for wine's sake, I really appreciate bigger fuller-body wines. Clio is a Spanish blend that has been a favorite of mine for years and remains one to this day.

estled behind Hop & Sting Brewery in Grapevine sits a white food truck, surrounded by picnic tables and emblazoned with a skeleton cowboy. This is Vaqueros Texas Bar-B-Q. The brainchild of Arnulfo “Trey” Sánchez III, the food truck began as a pop-up shop at an Exxon gas station near his house in 2018. In the four years since then, Vaqueros Texas Bar-B-Q has been featured in “Texas Monthly,” on the Cooking Channel’s “Man, Fire, Food” and has attracted fans from all over the state and the country. Though Trey never imagined he’d ever be back in the restaurant industry, Vaqueros Texas Bar-B-Q weathered the pandemic, business is booming and growth is on the horizon.

THE PITMASTER’S BEGINNINGS Born in Dallas and raised all around the Metroplex, Trey got his barbecue start working at restaurants around DFW. “I did Dickey’s [Barbecue Pit] for a while,” Trey says. “I worked at a little place called Smokestack in Richardson. I was about to take another job, and that’s when my dad called me and said, ‘Hey, don’t take that job. We’re opening a restaurant.’ So I did that from ‘89 to ‘99.” His dad’s business was a full-production catering company, which meant they were in charge of completely setting up an event with props and decor. They even occasionally served as the entertainment as well. “A lot of times, we would be doing Old West gunfights and stuff prior to service, and then we’d serve in full gunfighter attire,” Trey says. “It was good. I enjoyed it.” But after nearly 10 years in the business, Trey decided it was time to get out. “I decided that’s not what I wanted to do,” Trey says. “I started teaching in ‘99 and taught for 14, 15 years.” Trey taught art at Pope Elementary and Spanish at McKinney Boyd High School while simultaneously coaching cross-country and soccer. He stopped teaching in 2016 at Hale Elementary in Arlington when he took on his next big job — taking care of his kids. “It was one of the toughest jobs I’ve ever had,” Trey says about being a stay-at-home dad. “One of the most rewarding jobs I’ve ever had too — the most rewarding.” Meanwhile, Trey’s wife started her own business, leaving a corporate job in the process. “I’m staying up late at night not able to sleep, thinking of all these new bills, these loans and the lack of the corporate income that was there,” Trey says. “[I was] just stressed out.” At the same time, a gas station owner down the road recommended that Trey bring his barbecue pit, gifted to him by his father-in-law, to the station. “I figured I’d just do it on the weekends and supplement,” Trey says. “So that first day… we sold out in an hour and a half. So I doubled the food the next week and sold out in another hour and a half.” After two years as a stay-at-home dad and despite leaving the restaurant industry nearly 20 years earlier, Trey was back in the barbecue business just like that.

LAUNCHING VAQUEROS TEXAS BAR-B-Q When Trey opened Vaqueros Texas Bar-B-Q at the Exxon gas station, it was a two-man show: Trey and his SOUTHLAKESTYLE.COM

oldest child, Tyler, who was a teenager at the time. “He would run the register and help me set it up,” Trey says. “That was it. It was just the two of us.” Serving up both classic Texas barbecue and tacos, Trey cooks what he likes. “That’s kind of how it started back in ‘89 with my dad’s spot. We like tacos, and we like barbecue,” Trey says. “It’s just pairing two things I grew up with and I like, and that’s just kind of how we’re doing it.” Pete Mata, who lives in Southlake and is a Vaqueros Texas Bar-B-Q regular, first met Trey during his Exxon pop-up shop days. “I’ve tasted barbecue all over the state,” Pete says. “His barbecue is so good compared to other places.” Trey worked his Exxon pop-up through almost the end of 2018. After he learned the gas station was going to be sold, Trey began taking Vaqueros Texas Bar-B-Q to various breweries around town like Hop & Sting Brewing Co. and Four Corners Brewing Co. Working like that for over a year, those pop-ups, coupled with catering orders, helped grow Vaqueros Texas Bar-B-Q like never before.

HITTING A STRIDE After hopping around different breweries, Trey decided to permanently set up shop at Hop & Sting about a year ago. “I would go around to a few different breweries, but Hop & Sting was always kind of the preferred spot,” Trey says. “You know, it’s home too. And the guys here are great. So we just kind of rolled with that.” COVID-19 hit shortly after their partnership was solidified, so Vaqueros Texas Bar-B-Q shifted to delivery and pickup orders. Trey also collaborated with Hop & Sting for things like pre-ticketed sales and beer and barbecue to go. “[We] had to switch to a single vendor to fulfill COVID restriction requirements,” Hop & Sting’s general manager Andy Yelton says. “Picking Trey was a no-brainer. He was the only food truck that actually had his own following because his barbecue is so incredible.” As difficult as the year was, 2020 had some bright moments for Vaqueros Texas Bar-B-Q. Not only was it featured in “Texas Monthly,” but it also got highlighted on the Cooking Channel’s “Man, Fire, Food.” Part of that exposure can be attributed to a dish that was somewhat of an accident: the barbecue birria tacos. Birria, a dish that originated in Jalisco, Mexico, is typically stewed lamb or goat meat seasoned with chili peppers. “I came back from Jalisco wanting to do birria, but I never really had time on the weekends since I was always doing something, to play around with lamb or goat to do a traditional birria,” Trey says. “I was doing a pop-up one day, kind of the end of service… so I’m just making up some tacos for the crew.” Making birria tacos out of brisket, a customer saw what Trey was doing and wanted to buy them. Several customers followed suit, so the next week, Trey decided to just roll the tacos out. And they were a hit. Just around three weeks after introducing them, Trey received a call from the Cooking

Channel, interested in featuring the birria tacos. “So we filmed ‘Man, Fire, Food’ here and then the Cooking Channel released them on another show called ‘Man’s Greatest Food’ as a top 14 cheesy bite in the United States,” Trey says. “And then ‘Texas Monthly’ also put them on a Top 20 Bite of 2020 list. They just kind of caught fire.” After that exposure, Trey upgraded his trailer to a food truck, and customers began coming from all over to try Vaqueros Texas Bar-B-Q. Trey recalls one couple that had planned on going on a cruise for their anniversary, but had to forgo the trip because of the pandemic. “The next thing they wanted to do was fly out here to have my food,” Trey says. “They flew out from Atlanta for their 20th anniversary. It’s crazy.” Trey says people come to Vaqueros Texas Bar-B-Q from all over, whether it’s out-of-state destinations like Los Angeles or closer cities like Waxahachie and Decatur. “It seems like every weekend people are coming — whether it’s [from] East Texas, Arkansas or up to three hours away — because they’ve heard about us or saw us,” Trey says. Ironically, despite his success and exposure, Trey says a lot of his neighbors still don’t know about his business. “There’ll be something on the Nextdoor app, ‘Hey, where’s the best barbecue in Grapevine?’ and we’re not getting anything,” Trey says. “But all these other people are coming. I don’t know, it’s just kind of funny.”

THE FUTURE OF VAQUEROS TEXAS BAR-B-Q With just about a year of having the food truck under his belt, Trey is already thinking about what Vaqueros 28 • SEP 21

Texas Bar-B-Q will look like in the future, possibly inside a brick-and-mortar location. “That’s kind of where things are leaning towards,” Trey says. “We were talking about that pre-COVID, so it’s kind of coming back around. We’ll see. It may be around the corner.” Pete, who watched Trey grow from a two-man show at a gas station to owning his own food truck, loves the success Trey has had — even if it means a longer wait time. “It’s great because he definitely deserves the success,” Pete says. “And I don’t mind waiting in line for it.” Andy says it’s been fun to watch Vaqueros Texas Bar-BQ’s growth and success at Hop & Sting. “[Trey has] easily doubled or tripled in volume since he first started,” Andy says. “It’s been interesting to watch the transformation as he’s adapted to the challenges of growing so rapidly.” From being open one day a week to now being open every Thursday to Sunday, the interactions he has with other pitmasters and his customers are why Trey loves barbecue. “When I got into it, I was shy and didn’t want to talk to anybody,” Trey says. “Because of barbecue, I’ve met some of my best friends in life and so many good people because of it.” Trey says unlike in the past, barbecue is now more of a close-knit community to him. “Now everybody knows everybody and everybody is cool with everybody,” Trey says. “Everyone helps everyone. HAILEY HERNANDEZ FINISHES NINTH AT 2020 SUMMER OLYMPICS After making it through the preliminary and semifinal rounds at the 2020 Summer Olympics, Hailey Hernandez finished in the top 10 for the women’s 3-meter springboard. During the preliminary round, Hailey outshined most of her competitors with a score of 309.55, finishing sixth out of 27 divers. Then in the semifinal round, Hailey once again placed in the top 10 with a score of 291.6. It was during the finals where she scored consecutive 58s on each dive until the final one, where she scored a 54. That brought her total score to 288.45, placing ninth out of the 12 finalists. While she didn’t win a medal, Hailey was the youngest diver to compete at the Summer Olympics at 18 years old and consistently finished in the top 10 for all three rounds of the diving competition. A welcome home celebration was held for Hailey on August 13 at Feedstore BBQ & More. CARROLL FOOTBALL NAMES 2021 CAPTAINS With the football season underway, Southlake Carroll has named its captains for 2021. Juniors Kaden Anderson and Owen Allen and seniors Benecio Porras, Travis Keener, Josh Spaeth and Landon Samson were all named team captains for the upcoming season. Anderson, Allen and Samson are all on offense, while Keener, Porras and Spaeth play defense. Anderson takes the field this fall as the Dragons' new quarterback. Allen rushed for 2,063 yards and 28 touchdowns last season, while Samson caught 75 passes for 1,293 yards and 15 touchdowns. On the defensive side through the game against Duncanville, Porras recorded 101 tackles while Keener made 31 tackles and two sacks. Spaeth, meanwhile, made two interceptions and a defensive touchdown. They made their debut this season at AT&T Stadium on August 26, which was also televised on ESPNU. CORBYN CORMACK NAMED TEXAS SWIMMING ATHLETE OF THE YEAR “USA Today” has announced that Southlake Carroll swimmer Corbyn Cormack is the new Texas Girls Swimming & Diving Athlete of the Year. Every year, “USA Today” hosts the High School Sports Awards and recognizes 60,000 athletes in 24,000 schools across the nation. On July 15, “USA Today” announced the Texas award winners across 12 sports — and Corbyn Cormack was declared the winner in the swimming and diving category. Olympian Hailey Hernandez was also nominated as a swimming and diving finalist. “Corbyn Cormack capped off her illustrious career with a pair of gold medals in the Class 6A state swim meet. She defended her title in the 200 individual medley while also grabbing the gold in the 100 butterfly,” a “USA Today” spokesperson says. “Both wins set pool records.” Corbyn was formally recognized as the swimming athlete of the year during “USA Today’s” award ceremony on August 5.

CARROLL STUDENT COMPETES AT 2021 ROLLER SPORTS FIGURE SKATING NATIONALS Carroll Senior High School junior Haley Chokshi competed in the 2021 Roller Sports Figure Skating Nationals earlier this summer. Competing in both the technical and performance categories at the competition in Cedar Rapids, Iowa, Haley finished seventh overall in the finals for women loops 13 and up. Haley says she couldn’t have made it this far without the help of her amazing coaches Robyn Young, Mike Dando, Reanon Sandlin and Steven Crow. “Making it to the finals felt really good, especially since I had been working so hard,” Haley says. “It was a reminder that all my hard work pays off and it helps drive me to do better next year.” DAWSON MIDDLE SCHOOL TEACHER TRAVELS TO AFRICA While school started in mid-August for Carroll ISD, Josh Ault just finished teaching his new students in Africa the week before CISD classes began. A history teacher at Dawson Middle School, Josh was one of five U.S. teachers selected by the Witness Tree Institute of Ghana to travel to Africa and learn about its culture and impact on the world. Josh spent two weeks experiencing dance, art and history lectures at the University of Ghana, went to the Cocoa Research Institute in New Tafo and visited the home and burial site of W.E.B. Dubois, according to a media release. He even got to meet a Ghanaian king. But one of the most special experiences to Josh was teaching a 45-minute lesson to seventh graders at a demonstration school. “I got the students to write letters to my students at Dawson Middle School,” Josh says. “I plan for my social studies students in Southlake to become pen pals. Our world is too small not to stay connected. It will be a great opportunity for us to grow and learn from each other.”

NORTH TEXAS PERFORMING ARTS COMING TO SOUTHLAKE AND GRAPEVINE One of the largest nonprofit youth theater organizations in the country is debuting in Southlake and Grapevine this fall. Originally founded in Plano in 1991, the North Texas Performing Arts organization is dedicated to developing youth through arts education, family entertainment and community-centered theater productions. Operating four sites in Plano, Fairview, Frisco and Dallas, the organization announced that it will be opening its fifth location in Southlake and Grapevine this fall. Rehearsals will be held at 465 W. Southlake Blvd., while performances will take place at Grapevine’s Palace Arts Center at 300 S. Main Street, according to a media release. FORT WORTH ZOO WELCOMES TWO NEW GIRAFFES Two new baby giraffes took their first steps in the Fort Worth Zoo’s African Savanna earlier this summer. The two calves — one male, one female — were born on July 1 and 11 and have brought the Fort Worth Zoo’s total baby giraffes to three, according to a press release. The first one, Lucchese, was born on May 7. While the two newest calves don’t have names yet, they are now part of the 26 giraffe births the zoo has facilitated since 2000, according to a press release.

DRAGONS RECEIVE ALL-AMERICA SWIMMING HONORS The Carroll Swim and Dive program saw 13 of its athletes become All-Americans over the summer. After the National Interscholastic Swim Coaches Association published its 2020-2021 All-America Swimming lists on July 15, the Carroll Swim and Dive team took home 19 honors from the school year. In the boys’ category, swimmers Andrew Zettle, Mason Edmund, Max Hatcher and Jackson Pogue won eight All-America listings total for the Dragons, including placing 15th in the 400-yard freestyle relay. On the girls’ side, Hailey Heldenbrand, Bailey Kaiser, Kate Heintz, Corbyn Cormack, Morgan Chocholek, Ryley Heck and Alexis Drap won six listings overall, including placing 29th in the 200-yard medley relay. The Southlake Carroll Water Polo team also saw Jackie Walters win second team and Whitney Wood win an honorable mention. The Carroll High School Swim and Dive teams both ranked fifth nationally among public schools as well. CARROLL DRAGONS WIN SPURS NATIONAL BASKETBALL TOURNAMENT The AYG Lakers youth basketball team won the Spurs National Basketball Tournament over the summer, and five talented Dragon basketball players helped get them there. From June 25 to 26, the AYG Lakers traveled to San Antonio to compete in the Spurs National Basketball Tournament, which saw over 500 teams compete at the AT&T Center, according to a media release. Five of its players are Carroll elementary students, and they helped catapult the team to being named third grade national champions. The Dragon players included Walnut Grove Elementary students Grayson Porter and Carson Berrios, and Johnson Elementary students Palmer McCoart, Colton Holtmeier and Owen Armstrong. “We are so proud of the boys for playing their hardest and never giving up,” parent Jamie Armstrong says. “You could see these young boys were playing with all their hearts. They pulled together and got it done.” CARROLL ISD NAMES NEW DAWSON MIDDLE SCHOOL PRINCIPAL Dawson Middle School found its new principal just in time for the fall. After former principal Ryan Wilson accepted the head principal position at Carroll Senior High School, Dawson Middle School needed a new principal to step in and lead it into the new school year. But on August 2, Carroll ISD gave it a new leader in assistant principal Stephen Langford. Serving Carroll ISD for the past 15 years, Stephen previously worked as a social studies teacher and coach before he became assistant principal in 2016. Stephen says he's honored and excited to serve Dawson as its new principal. "Serving as an educator is more than just a job — it’s my passion," Stephen says in MySouthlakeNews. com. "Serving all children is at the core of helping our Dragons learn and grow. I am looking forward to this coming school year as we pursue the tradition of excellence together.”

CARROLL DRAGONS WIN NATIONAL LEAGUE CHAMPIONSHIP In late July, yet another group of amazing Dragons recently became national champions through the Elite Clubs National League. Established in 2009, the Elite Clubs National League is made up of 113 teams in nine conferences across 35 states. The Solar Soccer Club is one of those teams, and four Carroll Dragons helped them pull off an undefeated season with a final record of 21-0-1. Carroll freshmen Hannah Jordan, Zoe Matthews, Parker Wilkerson and eighth grader Grace Alvarez helped the Solar Soccer Team advance to the playoffs in Tampa, Florida earlier this summer, according to an email. They won their pool 3-0 with a combined score of 16-1, then won their quarterfinal match 7-0. After qualifying for the final four in Richmond, Virginia, the Solar Soccer Team won in both the semifinals and finals with a combined score of 7-2, making them national champions and bringing home the gold medal. “We had to run the gauntlet in the playoffs, beating the No. 2, 3 and 6 teams in the country,” Hannah’s father Dudley says. “We are very proud of their victory and unprecedented accomplishments.” CARROLL DRAGONS WIN U.S. YOUTH SOCCER NATIONAL CHAMPIONSHIP Three Carroll Dragons took home the top prize from the U.S. Youth Soccer National Championships over the summer. Carroll students Abby Mills, Kennedy and Kamdyn Fuller traveled to Lakewood Ranch, Florida in July to play for the Solar Soccer Club in the U15 Girls National Championship, according to a media release. After starting off with a tie against Cincinnati United, the team pulled off two wins over the Broomfield Soccer Club and the Real New Jersey Football Club before advancing to the semifinals. After narrowly defeating Club Ohio 2-1, the Solar Soccer Club went head to head against the La Roca Football Club and won 4-2 in the finals.

First established in Conroe, Texas, the Toasted Yolk Cafe expanded to over 20 locations across Houston before setting its eyes on North Texas. The new restaurant will be located in the Gateway Plaza Shopping Center at 2800 E. SKATETOWN CLOSES AFTER 24 YEARS SkateTown, a beloved family-owned and operated roller-skating center in Grapevine, closed last month. The owners announced in early August that they sold the property at 2330 William D. Tate Ave. to pursue retirement. Owners Mike and Kathy Vouklizas had a dream of opening their own skating rink when they got married, according to their website. In June 1997, they did just that. Since its doors opened, SkateTown has been a memorable spot for birthday parties, school functions, corporate events and days filled with skating fun.

or over 20 years, ATA Martial Arts has been training champions young and old on Southlake Boulevard. The many accomplishments of its martial artists can be measured on its Wall of Champions, which added five new champions last month. While the studio has been established in Southlake since 2001, Senior Master Wes Boyer and his wife Jessica purchased the school in 2011 and have been molding young martial artists ever since. Former Dallas Cowboy Joins Liberty Christian School As Its Football Coach

L

iberty Christian School may be known for its Warriors, but this fall a cowboy is joining the campus as its head football coach. Playing in the National Football League for 17 years, Jason Witten is a former tight end has played for both the Dallas Cowboys and the Las Vegas Raiders. While nobody can predict what lies in store for the first-ballot hall of famer, coach Witten is ready to lead the Warriors into a new season.

I’VE ALWAYS HAD… a deep love for the game and for team building. I want these kids to have fun, but I also want them to learn, grow, develop and win ball games. I’VE BEEN AROUND… a lot of coaches and teams in my life. I don’t believe that just because someone is good at football, it makes them a good teacher or coach. There is no one blueprint that fits all, otherwise every team would be well-coached. MY FAMILY… made me want to coach high school. My wife Michelle and I toured a lot of different schools when we made the decision to make the Southlake area our home. When we found Liberty Christian School, we knew this was the place we wanted to entrust with our four kids. The education, the environment, the God-given faith — we have loved the experience from day one, and now it is just such a big part of our lives in every way. WHEN I MADE THE DECISION TO FINALLY RETIRE… I knew I did not want to move my family away. Sometimes things just happen for a reason, and soon after I retired from playing, this job opened up. It just made sense for me at this moment in my life. I knew I wanted to get into coaching, and Liberty Christian is a place that I believe in. AS A COACH… I believe that you are either teaching them or allowing anything to happen, just like a parent. You hear all about how players these days are different and you can’t coach them as hard. The reality is that the fundamentals and the core values it takes to build a team, to come together with a shared commitment to be the best you can be, is the same today as it was when my granddad was coaching high school 30 years ago. I CHOSE TO COACH HIGH SCHOOL… because I think you can make a difference in young kids’ lives. I get the chance to share my knowledge and beliefs

with all these kids and hopefully make a positive impact on their life that will stay with them long after they leave our program. I BELIEVE IN… setting a standard and then holding everyone to that standard. There will be setbacks and obstacles to overcome, but that is how life is. My goal here is to prepare these kids so that they will be best prepared to overcome and achieve the impossible for our team. I WANT TO… see this team get better every week, win or lose. My expectation is that we will see a team that competes hard and prepares well for every game. We will not be a team that beats ourselves. We may not win them all, but when a team lines up against Liberty Christian, they will have to earn it. WE BELIEVE IN… positive reinforcement. It’s just a game, but there are so many core values of life you can develop within this game. I heard one coach say, ‘I know how well I coached them in 20 years, because in 20 years they will be husbands, fathers and leaders in their community.’ I believe in this phrase 1,000%. Coaching is way bigger than the 48 minutes you spend on a Friday night. I am humbled by the opportunity to have a positive impact on their life. WE ARE EXCITED… to see the boys come together and play as a team. They are very coachable, and they love playing the game together. I am excited for them to have success, and I look forward to supporting them throughout the season. MORE THAN ANYTHING ELSE… this has been about creating a culture and standard here for these guys. This is how we train. This is how we attend meetings. This is the Liberty Christian way.

ith a name that means “the way” in Italian, il Modo celebrates everything Italian with its modern interpretations of classic dishes and traditional cooking techniques. “We want il Modo to be a restaurant and gathering place for locals and hotel guests that serves up great Italian, family-style meals that embrace sharing,” says Nick Wymore, il Modo’s director of food and beverage. The restaurant, which opened in June, is located within the Kimpton Harper Hotel in Fort Worth and features a luxurious dining room

and pasta room for guests to watch il Modo’s chefs make its pastas. “House-made pastas are at the heart of what we do,” Nick says. “While dining, our guests have a chance to peek into our glass-walled pasta room, where our chefs create fresh pasta daily.” After taking a seat in the dining or pasta room, guests can start off the night with a specialty Italian-inspired cocktail. The Queen of Salerno features amaretto and triple sec with lemon juice, angostura bitters and soda water, while the La Famiglia is made with Aperol, sweet vermouth and grapefruit juice.

For wine lovers, il Modo has an extensive wine list that includes both flat and sparkling wines. Like the sparkling Bisol Brut Prosecco DOC or the red San Polo Brunello di Montalcino, many of the wines it offers hail from Italy. After a few libations, diners can awaken their taste buds by indulging in several delectable appetizers. Meatballs made with dry-aged beef, spicy pomodoro, basil and Parmesan make for the perfect shareable, while adventurous guests can try the crispy calamari, which comes with Peppadew peppers, spicy pomodoro sauce and preserved lemon aioli. “When building out the menu, we focused on local, seasonal ingredients to put our own modern spin on classic Italian dishes,” Nick says. With all its pasta handmade, it would be a mistake not to order some of this Italian staple. Those with hefty appetites can get the spaghetti, which comes with ricotta, Sungold tomatoes, basil and Parmesan, while the orecchiette serves up all the flavors with cacio e pepe, DOP pecorino and toasted peppercorns. For pasta with a seafood spin, delight in the risotto, which is made with Acquerello rice, rock shrimp, mascarpone and crispy shallots while the bucatini comes prepared with the traditional Italian ingredients amatriciana and guanciale, along with basil and Parmesan. But il Modo proves that Italian food is not just pasta. Its roasted half-Amish chicken is prepared with potato leek puree, roasted garlic and preserved lemon jus while the Ora King salmon features heirloom tomatoes, cucumbers and garlic fry bread. The seafood selections also extend to il Modo’s raw bar menu. Along with steak tartare — served with Calabrian chili, capers, egg yolk, house pickles and grilled sourdough — guests can order poached shrimp or a half-pound king crab, both of which come with dijonaise, cocktail sauce and horseradish. For families who dine at il Modo, the branzino comes whole and stuffed with herbs, spinach, Calabrian chilis and lemon, while the ribeye is 22 ounces and features roasted garlic and bone marrow butter. Diners will continue to feel satiated during dessert, with il Modo’s tiramisu delivering a delicious bite with mascarpone zabaione, espresso-soaked ladyfingers and Madagascar vanilla bean whipped cream. Meanwhile the chocolate pie, made with mousse, Oreo crust and toasted hazelnuts, is sure to satisfy anyone’s sweet tooth. Whatever you indulge in, il Modo ensures guests taste the flavors of Italy in every meal. “At il Modo, the dinner table represents family,” Nick says. “I want guests to feel that no matter what type of occasion, whether it’s a date night, a family or business celebration, or you’re just walking by, you always feel welcome and taken care of.”

Jane Boasts A Hotel Lobby Bar Feel With Plenty Of Delicious Offerings After Jane officially opened last month, Southlake residents now have a new chic restaurant to indulge in. With around 2,000 square feet of indoor space and another 1,000 square feet in two covered patios, Jane is a sleek, sophisticated concept that is sure to please. “I want it to feel like walking into an upscale and chic hotel lobby bar — you should feel invited and welcomed, just as a guest would,” owner Mo Noorali says. “Whether to check emails and have a latte, sip a glass of wine and share bites with friends or get cozy and have a cocktail before or after dinner with your date, the atmosphere has been created to be comfortable from the morning [through] the night.” Located in Park Village, Jane features a rotating menu based on the time of day. Guests can start their morning by its house blend coffee or cappuccino while enjoying a pastry. In the afternoons and evenings, diners can satisfy their hunger with sleek shareables like the wagyu beef sliders topped with truffle cream, or the sweet chili-rubbed pork belly. Seasonal ingredients are featured in its salads while rotating cheese and charcuterie offerings will ensure diners can try something new each time they visit. “The menu was curated to cover a variety of tastes and palates in a somewhat compact package fitting the concept,” Mo says. “It is designed as small plates and shareables with elevated touches.” Mo named the restaurant after the street he lived on in New York City. “Many cherished memories and life events took place while residing [on Jane Street], which included being the first home my wife and I shared together and hosted friends and family when visiting,” Mo says. With those memories in mind, Jane offers an elegant space for guests to dine, connect and relax. “The most exciting part about Jane has been watching it come to life,” Mo says. “Each finishing touch was thoughtfully selected, and we look forward to hosting everyone that comes in and creating an atmosphere that they can enjoy and make memories.”
