SPOTLIGHT SHARM EL SHEIKH MARRIOTT RED SEA RESORT ‘SPIRIT TO SERVE OUR COMMUNITY INITIATIVE’ Sharm El Sheikh Marriott Red Sea Resort in conjunction with their sister properties in Egypt continue to do their utmost to serve both the local and wider community in as many ways as they can. The latest activity saw the resort staff collect ‘good quality no longer in use’ linen supplies to donate to the Egyptian Clothing Bank who will then distribute these items to the people in need within the community of Sinai.

Tchaicovsky’s Nutcracker ballet at Soho On the 1st April Soho Square presented an adaption of Tchaicovsky’s Nutcracker ballet by Yannina Starodubtseva. The Nutcracker is one of the most popular ballets, performed by some of the most famous ballet companies around the world traditonally shown at Christmas. Under the direction of Yannina, Sharm’s children stepped up to the challenge of putting on their first full length ballet production and interpretation of the Nutcracker. 40 young dancers took part in the magical performance and danced to the classical music of Tchaicovsky with amazing costumes,

Cycle Race Sharm el Sheikh saw the arrival of the GBI Egypt cycle team on the 7th March. The team had cycled for six days covering 550km from Jordan. The cycling team are committed to develop a community that leads and drives social sports. The cycling started on Monday the 1st of March and finalized on the 7th with a closing ceremony hosted at Little Buddha at Tropitel Hotels and Resorts. Carrefour Market opening at Sunterra Sharm residents united in buzz of activity on the 22nd March when Carrefour Market at Sunterra opened its doors for trading. It seemed the whole of Sharm was at Sunterra to peruse the shelves of Sharm’s latest offering in modern supermarkets. The European renowned brand market is situated on the main Peace Road in the Sunterra real estate development. It shows a strong commitment to Sharm el Sheikh by Ahmed Sabbour the owner of the development company Al Ahly, who has not only has built this prestigious project, but also the Golf Heights project in Nabq. In honour of Al Ahly’s commitment to Sharm el Sheikh the Hon. Governor of South Sinai attended the opening

Petra Airlines
, which in the past has predominantly worked in the charter sector, has launched twice-weekly (Mondays and Fridays) scheduled flights between its main base at Amman (AMM) in Jordan and Sharm El Sheikh (SSH) in Egypt. Starting on 17 March, the A320-operated, 468-kilometre sector will be flown in direct competition against Royal Jordanian Airlines (four times weekly), and will join the airline’s existing flights to Saudi Arabia (Dammam, Jeddah, Hofuf and Madinah) and Iraq (Erbil).

t’s April and Easter is almost here; traditionally a time for renewal, regeneration and the start of new beginnings. Spring is the ideal time to embark on new fitness goals and with the recent African and Pan-Arab Sprint Triathlon taking place in Sharm el Sheikh it is the perfect time to grab some inspiration from these athletes and get moving. Running in the desert might seem like an impossible task, but you will be surprised at how many ‘Sharmers’ have taken up the sport with passion. Initially this article was going to focus on running. However after discovering the recent international triathlon, combined with Sharm el Sheikh’s natural resources; it seemed appropriate to focus on this dynamic sport. Who knows, after reading this, you might be inspired to competein the next

African and Pan-Arab Sprint Triathlon in March 2015. One person to take inspiration from is Hassan Afifi; a long term resident and dive guide of Sharm, who has since moved away to become a Triathlon trainer and competitor. Read his motivation blog and have a look at his before and after photos and you will soon feel a surge of energy and yourself inwardly chanting ‘just do it’. Before you grab your trainers, speedos and bike let’s just take a minute to review what exactly a professional Triathlon is. Afifi explains “Triathlon is a sport where the athlete does a combination of swimming, cycling and running, all in immediate succession and in that order.”

I wasn’t prepared at all, I suffered in the event, but I loved the atmosphere and I got hooked.” It was a long time after that event before he competed again and this was only after he was inspired to lose weight and get fit. “On a visit to Sharm in June 2011, I saw a picture of myself (attached) and I didn’t believe how fat I was. I weighed myself and I was 92 kilograms. My height is 170 centimetres, so this was a HUGE weight. I also ran out of breath just going up the flight of stairs and I couldn’t walk for more than five minutes without starting to feel very tired.” Hassan lost 15kg over the summer in 2011. However he made the classic mistake of many new athletes by doing too much intensive training too soon and ended up injuring himself. He made the decision to scrap the goal 10

Hassan then begun to concentrate on his swimming and cycling. Swimming was always his strong point, due to the fact that he spent a large chunk of his time working as a Dive Instructor in Sharm. Sharm has an abundance of natural resources especially for Triathlon athletes. We are surrounded by desert which offers great terrain for running and of course surrounded by the amazing warm sea, both of which are free of charge and right on our doorstep. The cycling bit does require a bit more funds and time to acquire the perfect light weight speed machine. Hassan built his from parts bought on E-Bay and it was at this time, early in 2013 that he realized his ultimate goal was to compete and train for the Half Ironman (70.3) distance discipline. “I took an open sabbatical from my Stockbroker job in March 2013, did a triathlon coaching course and training turned into my full-time
Hassan’s training schedule is a far cry from his first ‘flat-footed’ 5km runs. “In the winter months, it was very normal in a day to have a 6 hour bike ride, in the following day a 3 or 4 hour run, doing 3 half marathons in one week, and a full marathon another.” During this period Hassan was running under the Egyptian flag, he got to know more about the very new Egyptian Triathlon Federation and the Sharm el Sheikh event. It was a date set in his
calendar, a chance to compete in Sharm alongside fellow Egyptians and to meet some old friends. The race in Sharm took part on 8th March 2014. The whole event was held in the Montaza area, with the swim being completed in the sheltered lagoon area. The stage between each discipline is called the ‘transition’ which is very important for Triathlon athletes. The transition area was set up in front of the hotel Sol Cyrene. The cycling and running disciplines were
completed in laps, to ensure that the spectators and supporters had a good view of the competitors. Despite a couple of very tiny details that could have made the race better, Hassan said it was a very pleasant experience overall. The organisation of the race itself was adequate and he enjoyed coming ‘home’ to compete in Sharm. “What was most amazing, though, was the atmosphere! I have participated in tens of races over the past few years, and I had some doubts as to how much support the event would get in Egypt, but I have to say that it was brilliant.”

ACTIVITIES Hassan’s story is indeed an inspiration. To go from ‘0’ to an Ironman competitor is awesome and I am sure Sharm will support him and follow his journey with interest. However for most of us, this is out of our league, but it doesn’t matter. Any small steps to better fitness is a triumph no matter how small the goals are. I have only recently started running and have realised it is not a chore but rather a joy to run. The baby step achievements soon become a passion and you just want to do more. I have already felt the urge to get out there and run, to beat my last time and to go a little further and now after talking to some inspirational ‘Sharmers’ I am keen to add swimming and cycling to my efforts. By combining sports there is less chance of injury and if cycling is not an option there are aquathlons (swim and run) or if swimming is not you thing there are duathlons (run, bike, run) – so there is a combination to suit everyone. And finally a few more tips from top coaches: “Runners are best served by running at goal pace and in the expected environment of that race,” says Ann Snyder, Ph.D., director of the human performance lab at the University of Wisconsin-Milwaukee. “A warmup prepares your body for exercise by gradually increasing blood flow and raising core muscle temperature,” says Jerry Napp, a Tampa Bay running coach. “Cross-training and weight training will make you a stronger and healthier runner,” says TriEndurance.com multisport coach Kris Swarthout. “Low- and nonimpact sports like biking and swimming will help build supporting muscles used in running, while also giving your primary running muscles a rest.” And now JUST DO IT.

Sails a tantalizing taste sensation

f you are looking for a dining I experience with a difference, a casual ambiance but with an
edge of sophistication and a menu which will delight your taste buds then look no further than the latest restaurant concept from the Four Seasons. Sails Asian Food Lounge is the brainchild of the previous Executive Chef Martin Frost, who after its successful opening moved on to become the Executive Chef at the Four Seasons Shanghai. It is the sixth restaurant at the resort and definitely a welcome addition, offering yet another facet to an already sophisticated array of cuisines. It is situated just below the Reef Grill right on the water front. There is a small pathway with a decorative gate leading down to the restaurant which immediately creates the ambiance that you are going to a private exclusive area. As you arrive there are a couple of steps up to a large dark wood deck, which extends over the shoreline, giving the appearance that you are suspended over the reef plate. At night time it is lit up to display the coral and fish. As the location of the restaurant is so stunning; offering 360 18
degree views of the Red Sea, the restaurant offers not only an exquisite menu but also a full cocktail bar. There are high bar seats, comfy sofa seating areas, and well placed tables. The serving area and bar is a sweeping arc of blue glass and there is soft chill out music akin to Café del Mar. Sails Asian Food Lounge is a trendy cool concept, a place to chill out and chat. The menu is perfectly paired with the chill out and chat concept. It is an al a carte menu consisting of appetizers, salads, main dishes and desserts all with an Asian fusion inspired theme. As always it has been designed to captivate all of your taste buds from savoury to sweet. The luxury of Sails Asian Food Lounge is that it is an elegant casual dining experience which means you don’t feel you have to stick to the concept of a three course meal; a nice way to dine is to choose a selection of the appetizers and salads to share with a friend. We went for a leisurely lunch and chose from the appetizer menu the ‘Salmon and Tuna Tartare in a Wonton Cone, served with Ginger Fresh Chili’, ‘Beef Sashimi, served with Green Onion and Taro Chips’ and ‘Lobster and Salmon Summer Roll, served with Ponzu Sauce’.
DINING This was a very good start to a journey of taste sensations. It is not often that you have the chance to sample a menu with courses of different but complementing intense flavours and the presentation of each dish was equally mesmerizing. Our next course was the Wagyu Beef - Green Papaya, Bonito Flakes, Fried Garlic salad. Thin slices of medium rare fillet served with a tangy green papaya salad. The beef was so tender there was almost no need for a knife, and the dressing complemented the dish perfectly. As expected from the Four Seasons the service is exceptional and each course is delivered with a satisfactory gap in between, so you never feel rushed or wanting. The dishes are very light and refreshing which make them perfect for a summer evening dinner or light lunch. With the delightfully soft sea breeze and setting, we decided to relax a little longer and sample one dish from the main menu to share. We choose the “Shrimp Pad Thai with Rice Noodles, Chili, Coriander, Green

Onion, Lime”. Once again it was delicious, in fact all of the courses are served in such an imaginative and impeccable way with so much attention to detail – it is almost a shame to dig in and eat them. To finish the delightful tasting menu we had the “Lava Chocolate Ginger with Strawberry Szechuan Sorbet”. The sorbet was served in a shot glass with a spicy tea to pour over it, this refreshed our taste buds so we were ready for the finale; delicious Banana Nutella Lumpia with Banana Spring Rolls served with a miniature tea-cup of Dolce de Leche Ice Cream. Sails Asian Food Lounge is open for breakfast and from 12.30 – 4.00pm for lunch (seasonal) and from 6.30pm – 10.30pm for dinner. I would recommend this for a really nice chill out evening á deux or with a couple of friends. Men who love to tuck into a huge steak might not find this totally satisfying but for people who enjoy the luxury of tasting so many different dishes will love the concept.

This month’s Chef Profile is from Chef Stefania Forte from ‘Made in Sud’ the latest Italian restaurant to open in the ‘Old Market’ area. ‘Made in Sud’ offers traditional Neapolitan and Mediterranean cuisine in a fresh and homely trattoria environment situated on the main road just outside the downtown market area. We met Chef Stefania Forte in her restaurant; she explained that she only uses genuine ingredients, partially imported from Italy and fresh produce from the local market. Like many Italian Chef’s she learnt to cook by helping her mother and learnt all the tricks and secrets directly from home. Stefania has cooked for friends all her life and with their encouragement she decided to share her delicious dishes with the public and opened “Made in Sud”. She explains that Neapolitan cuisine was influenced by Arab, Norman, Spanish and French cultures since all ruled Naples at some point in time. The influence of these mixed cultures is a unique half-sophisticated, half-folk cuisine. Many Neapolitan recipes are elaborate, take time to prepare and use seasonal produce. When we asked for one of her recipes, she chose one from her mother’s cookbook, the famous Parmiggiana di Melanzane.
Ingredients ( for 4 persons ) : 2 round Eggplants Flour 2 Eggs 3 tbsp Grated Parmiggiano Reggiano Cheese Salt & Black Pepper Frying oil 2 Mozzarella di Buffala Basil leaves For the Tomato Sauce: 1 kg Tomatoes Olive oil Basil 1 clove of Garlic Preparation: Cut the Eggplants into 1cm slices and lay them on an MIX April 2014
oven tray, put them in the sun until the water from the Eggplant has gone. Beat the eggs with Salt, Pepper and the Parmesan Cheese. Dip the slices in the flour and then the egg mixture. Fry them on both sides and put them to one side.
Prepare the Tomato Sauce : Fry the peeled whole garlic clove in the olive oil for a couple of minutes over a medium heat until the flavor is infused and then remove the clove. Put the peeled and smashed
tomatoes in the garlic flavored oil, add the basil and then allow the mixture to simmer. Cut the Mozzarella Cheese to 1 cm slices, Take a deep oven tray and layer the prepared ingredients; starting with the Tomato Sauce, then the eggplant slices, then the grated Parmesan Cheese, the Mozzarella slices and then whole basil leafs, repeat until the tray is full ( at least 3 layers) and finish with the eggplant, mozzarella and basil leaves in a decorative form. Put the tray in the oven for 20 min. on 180 C. Serve by cutting into portions. 23

We all agree that the open air Pacha Nightclub in Naama Bay is one of the most famous and coolest signature clubs in the Sharm night life scene. On the 17th of April Pacha will celebrate their 10th anniversary; to honor this mile stone MIX decided to get the lowdown on Pacha Sharm from one of their most popular resident DJs: DJ Ouzo. The charming and handsome Ouzo talked to us with ease about himself, the club and its 10 year history in Sharm. Most Sharm residents know Ouzo as he has lived in Sharm since he was four years old. He remembers he even helped as a small child to build the Sanafir Hotel (where Pacha is today) by 28
putting bricks and stones on the walls. You could say, he has grown up in the scene and has made clubbing history; first as a resident DJ of Sanafir’s House Nation party (the first big dance event in Sharm) and then with Pacha. He was first introduced to house music and clubbing when he lived in Switzerland for five years as a teenager, ever since then music and Djing has been his passion. He first DJ gig was at the ‘House Nation’ party in the then Sanafir. In April 2004 Sanafir became Pacha Sharm and Ouzo became the resident DJ there. To further develop his talent he studied sound engineering MIX April 2014
in London and worked in Dubai and other countries in the Middle East. Despite his young age, he already has 14 years of mixing experience, working with such celebrities as David Guetta, Bob Sinclair, Roger Sanchez, Eric Morillo and many more. Where can we find you playing?
clubbing scene, which introduces the clubbers to new trends without them knowing it. DJ Ouzo is the resident DJ in Pacha Sharm, but he also works in Cairo in the famous Jazz club and in Alexandria in Allegria and Club 35. He is traveling around Egypt constantly.
“You can enjoy my show every Thursday at Pacha’s open air House Nation Party. It’s a complete show with amazing dancers and acrobats and superb sounds and visuals which all make a brilliant night. I play Deep House (a mix of funky and disco beats on a house base), NU Disco and Tech House music, from my vast archives and from latest on the net. My sections during the night are chosen by the mood of the mob on the dance floor, changing styles all the time.” he said.
What can you tell us about your private life?

“Well, it’s completely different from what one would imagine. I am a very private person, in my free time I am listening to chill out music mostly at home, to refresh my mind for the next show. I love to socialize with my friends, living all the fun that Sharm can give, often going on desert safaris, SCUBA diving and going on speed boats in the summer.” he said.
“I am living for the bliss of the moment; I am not making any future plans and

I am also currently working on a project, which will be launched in the very near future, called ‘The Naama Entertainment Map’.” Where can we find your music to listen to? “You can find my music on ‘Soundcloud’ on my fan page DJ Ouzo or in Pacha, Sharm el Sheikh, every Thursday at the House Nation Party.” he said. Why exactly Pacha? “It is a long story, how Pacha was born.” he said. “My father and I visited the famous Love Parade in Berlin in 1998, then in 2000 we went to Pacha Ibiza. We enjoyed

the outdoor clubbing experience so much, that we decided to contact the headquarters of the world famous Pacha in Ibiza and then contracted them for a franchising agreement. When the Spanish representatives of Pacha Ibiza arrived to Sharm, they were amazed by the location, the open air layout and the style of the club. It is unique and with the different dance floor levels, one can get lost in this labyrinth of fun. They found many similarities with their concept and therefore Pacha Sharm was born.” Today Pacha has a different party theme for every night. The Swagga, Hits Mania, Cherry Drops, Melt, Jam and of course DJ Ouzo’s special night, the House Nation Party. Inside the club, you can find a completely isolated smaller club, called Room 2, for about 60 people, where they play different music from the night’s main theme. So if you want to mix up
your beats, you can. Room 2 also becomes the after party scene, for those who want to continue till morning light. When I asked about the famous Pacha cherry logo, he told me, that it has been the brand’s logo since 1967 when the first Pacha opened. The club soon became the ultimate party place for the hippy movement, bringing extravagances and fashion trends to the night scene. Since that time the cherries have been used as the logo. So the “two cherries” are not just MIX April 2014
a sweet logo, they represent a hippy, free spirited Mediterranean lifestyle, as well as being a symbol of inimitable, glamorous and hedonistic nights. The name comes from the English version of the Arabic word, Basha, meaning Sir or Lord, giving importance to every single party guest so they can feel like the King or Queen of the Night. The open air club has 4 bars, 2 main and 2 side bars, plenty of space to dance on different levels and in different areas. There is a special sparkling atmosphere created by open air ambiance, the visuals, state-ofthe-art sound system and shows which have MIX April 2014

en years ago I was asked if I would like to write an article for a new magazine in Sharm called ‘MIX’ and as most long term residents know I said ‘yes’ and wrote about Reeta Tunney’s Baby swimming classes. I still have a copy of the first edition, wrapped up and packed away at my parent’s home – after all it was one of my first published articles and something to be treasured. Ten years have flown by and during this decade I have had the chance to write about all sorts of wonderful things; fun activities, restaurants, residents and more. I have face-planted myself at speed for an article on

wake-boarding, I was air-borne momentarily whilst attempting to kite surf, I have sat in the turbine of a jet engine and I have sampled everything Sharm has to offer from Sushi to Tandoori. Life for me with MIX has indeed been that – A MIX, but what do these ten years of MIX mean to you? Tourists come and go and during this time in Sharm the same is true for residents. We have seen many ‘famous’ faces leave and some return, but MIX has stayed, albeit on occasion hanging by a thread. There have been many changes in style and content; we like any beautiful woman have grown from skinny to chunky and back to super slim again (hopefully

LIVING we will put on a few more pages soon). Does size matter? As we have gone from small too big and glossy and back to handbag size again. There are many faces of MIX but one consistency is; we are still out there on the shelf each and every month (if you can find us, as we are snapped up quickly). Five years ago I was stood on a stage at Terrazzina beach (the original) celebrating in style the 5th anniversary of MIX magazine. It seemed like a huge milestone and to mark this achievement we danced in the sand to the beats of a Brazilian band, dished out re-useable shopping bags to help prevent plastic bag waste and looked forward to the next issues. It has been at times a difficult road to follow; these days it is quite a feat to fund and produce our little magazine. The world seems to be moving towards on-line media but for me there is far more satisfaction having a paper copy in your hands. How many times have you thumbed through a MIX? Searched for a listing, perused over the party photos, or to be honest pointed out the errors and typos; we have had a few major bloopers over the years, but that is MIX, a mix of nationalities whose mother tongue is not always English. MIX Mistake hunting has almost become a Sharm pastime. Some of the more memorable moments in MIX for me are coercing Mr. Chad into writing his infamous ‘Going down with Mister Chad’ column – he would invariably pretend to have writers block but would
always end up eking out words of whit in his cunningly clever style. Another joy was receiving Claudio di Manao’s (the author of Shamandura Blues’) ‘Eco Warrior’ prose. Oh what fun we had deciphering his passionate message about the environment. One of our main contributors who may soon return to the fold is Jane Talboys. One Easter I asked her to produce a ‘filler’ on Feseekh; ask her now about Feseekh and she will tell you all about this renowned ‘rotten fish’, it’s history, the tradition and how long it takes to prepare or more to the point putrefy. MIX has had many articles over the years written by a variety of talented people from all walks of life. We have learnt about Sinai’s native wildlife from Francesco Germi, SCUBA diving from author John Kean, recipes from numerous Executive Chefs born from Samer’s love of food photography and viewed the party people in some of Sharm’s best nightlife venues.

Fishy Feseekh In celebration of Easter and Sham el Nessim we thought we would bring this article back to life and enrich everyone about the pleasures of the Egyptian Tradition of Feseekh - EEEEK By Jane Talboys
During the festival of Sham el Nessim (21st April) a must-have dish is feseekh – but what is it? The first problem I encountered when trying to find out about this Egyptian delicacy was how to spell it. I came across ‘feseekh’, ‘faseekh’, ‘fiseekh’ and ‘fasikh’ – but feseekh seems most popular so I’ll stick to that until I can write it in Arabic! So first hurdle dealt with I could now go and find out more. Feseekh is basically salted fish, but many countries salt fish and none seem quite like feseekh. In Thailand you can get plara, kusaya and funazushi in Japan, rakfisk in Norway, súr hákarl in Iceland and the Swedish have surströmming (which I’ve heard smells dreadful) – but back to feseekh which must surely be the oldest fermented fish – almost literally. Evidence has been found that the fourth-dynasty Egyptians who built the pyramids between 2613 and 2494BC produced feseekh, so it’s been around a while. Traditionally eaten with lemon, onions and lettuce it apparently has a love it or hate it quality akin to Marmite. Along with the dissension about spelling, I also found differences in what fish should be used. I found references to bouri (grey mullet) as well as the Nile fish kass and kawwara, but knowing me these could 42

all be the same fish (let’s face it I’ve been calling Sgt. Majors ‘Zebra Crossing Fish’ for years). So let’s just accept its fish and move on. Preparation starts in the normal way, i.e. you catch your fish. From there it gets a little scary; instead of doing the decent thing by cleaning it and putting it on ice, it gets laid out in the sun until it swells up. (hmmm health and hygiene?). Once nicely swollen it’s opened up and filled with salt then wrapped and put to one side for a number of weeks (yes folks weeks) to get it’s distinct flavour. The preparation is obviously a fine balance between botulism and bliss, so it is normal to buy it from a trusted specialist known as a fasakhani. By all accounts this is not a Gordon Ramsey or Rick Stein recipe and carries a definite ‘don’t try this at home’ warning. So after all the weeks of ageing and fermenting what do you get? Something with a kind of yellowish hue with the consistency of cream cheese. As expected it is extremely salty and eating it with the lemon, lettuce and green onions is said to help the digestion or kill any potential bacteria depending on who you believe! An acquired taste with it’s yeasty, fishy, potent effect on the tongue, it’s not surprising that many prefer something a little more tame to celebrate the feast – like ringa – a nice smoked herring. Me …. Let’s leave it with “I love marmite”. Smoked fish in its various forms can be bought at all the Sharm MIX April 2014
supermarkets. You will notice that especially during this period there are more varieties to choose from. Ask any of the Staff and they will most probably be so amazed that you are interested in Feseekh that they will be happy to help. You can also buy the Egyptian version of caviar for Easter. It is not in small pots but more a solid lump of roe sealed in wax. Just words of warning if you do decide to take the traditional plunge; make sure that ‘IT’ (as something akin to the horror movie) is hermetically sealed in your fridge – or why not just store it outside in the sun for another few days! Another suggestion after purchase and its long stagnated journey; is to put it in olive oil and leave for another few days. This apparently turns it into a more palatable mush. Either way unless you want your whole abode, fridge, or self to smell of a non too delicate aroma of weeks old fish, then make sure it is sectioned. One final note to help in your decision to take the plunge or not, is when one old lady was asked ‘why do
you eat Feseekh?’ her reply was not ‘its delicious’, ‘I love it’, but simply ‘it’s a habit’.
