Sunny Sharm charms famous footballer Wayne Rooney Sharm el Sheikh hit the headlines as a super safe holiday destination, when Manchester United’s famous football player Wayne Rooney came to visit. Rooney chose Sharm el Sheikh as his preferred destination to recover from a niggling injury, due to the amazing warm winter weather. As stated on his Facebook page his manager and medical team agreed that some warm weather training and recuperation would help the persistent injury. So now Sharm is not only known as the place with 364 days of sunshine, but also the best place to relax and recuperate.

The Executive Chef HanyShaalan prepared Rooney some of Little Buddha’s best dishes whilst Negm, Little Buddha’s Bartender Supervisor impressed him with his mixology skills making him a special cocktail creation.

Little Buddha Sharm and the Sharm el Sheikh community were honored by Mr. Rooney’s visit and happy that it put Sharm in the media spotlight as a safe holiday destination with excellent winter warm weather. We all wish him a prompt recovery and look forward to welcoming him again.

Facebook Friends The third Facebook Friends Event took place on Monday 20th January at The Blue Fountain Restaurant in Naama Bay and proved to be most successful with over 40 people attending. The first two events took place in November and December respectively and although well attended, the numbers were not quite as high as theJanuary meeting; proving that the concept of a ‘Facebook Friends’ gathering is gaining momentum and popularity. As Sharm el Sheikh’s

community grows it is quite easy to find yourself in a virtual reality world, communicating by keyboard about popular topics on several Facebook groups with people you have never met. The Facebook Friends gatherings were the result of a ‘real’ face to face conversation between friends who recognized this and thought it would be nice to actually meet some of these people who had participated in many interesting discussions online. So we picked a date and decided to announce an event on several sites. Linda from The Blue Fountain restaurant

We really had no idea how many people, if any would come, and were pleasantly surprised at the turnout. Each `friend` was given a sticker with their name and nationality,which made introductions much easier and served as quite an ice breaker. As a result of the positive feedback we received, a second event was planned this time with a festive theme and again with a complimentary buffet. During this event the friends discussed the possibility of supporting charitable organization in Egypt, a way of saying ‘thank you’ to our host country. We have not yet decided upon a specific charity, but hope to be able to make an announcement at the next event. Hopefully these events will flourish and friendships will be established online and off.

Hard Rock

Sharm el Sheikh and Hard Rock Nabq had the opportunity to sponsor the 1st South Sinai Rhythmic Gymnastics Cup held in Sharm el Sheikh on Friday 10th January 2014.. The competition was amazing and Sharm welcomed girls from Sharm, Cairo and Russia; and even though the event was a 1st for the city the girls performed amazingly and will definitely be future champions. Every participant received a Hard Rock T-Shirt from Hard Rock Nabq and was invited to Hard Rock Sharm el Sheikh to enjoy a complimentary dinner (and the girls very kindly put on a small gymnastics show for the amazed diners)

SPOTLIGHT PURE and Red Sea Diving College launch IANTD IWR Diver program Winter time is traditionally the time for dive shows where all manufacturers and training agencies get ready to present their latest developments. This year has been no different and has seen the launch of the IANTD In Water Recompression (IWR) Diver Program. IWR has been a hot topic for many years now and it has finally been put in a formally recognized program. This program has been designed for divers diving in remote areas with little or no option of reaching a recompression chamber in case of a

decompression incident. The IWR program teaches the proper procedures, with practical in water training, on how to recompress divers, victims of decompression illness. PURE and Red Sea Diving College have always strived to be on the cutting edge regarding safety procedures, and this is why PURE and Red Sea Diving College are proud to be qualified as the first training facility in the world to offer this exciting new program, which is available for divers, dive guides, instructors and dive center operators. This is an amazing opportunity to participate in this training and be the first to qualify worldwide at this level. TURN THE HEAT AND COMPETE The Red Sea Tennis Academy is turning up the heat and encouraging our young Sharmers to compete in their Junior Tennis Tournament. The tournament will be held at the Reef Oasis Blue Bay resort on the Thursday 6th Feb to Saturday 8th Feb. There are four categories all color coded; Red aged 5-8, Orange aged 8-9, Green aged 9 – 10 and yellow junior open. The finals of all of the categories will be held on Saturday at 5pm. Red Sea Tennis Academy Trophies will be awarded to the winner of each category and all players will receive a medal for their participation in the event. After the event there will be refreshments provided by the resort for all of the participants. Mix magazine would like to wish all of 8

Xtreme Nabq By Moira Tune

Most of us at some point or another feel the need for some time-out, some time to just chill and relax or more simply chillax. Whether we are a burnt out dive guide living in Sharm or a visitor on holiday here, we should all make the time to relax and appreciate the nature which surrounds us.


ACTIVITIES

The name Xtreme Safari doesn’t depict total Zen like relaxation, and yes there is more to the name, but we will go into that a little later. The side I want to introduce you to, is the opportunity to spend some quality time in the Nabq National Park or protectorate. The Nabq Protectorate is the area of land which runs just north of the Nabq development, along the coastline towards Dahab. It has immense natural beauty, mainly because it is an area of stark contrasts. The magnificent red mountains make a seemingly continuous ridge running along the edge of the vast sandy plains. These plains stretch from the base of the mountains to the sandy hillocks which pepper the coastline preventing erosion. Then you have the shallow turquoise lagoons, surrounded by the weird and wonderful Mangroves and finally the coral ridge which protects the coastline from the crashing white capped waves. The contrasting colours are awesome, as is the wildlife which is attracted to the area. Don’t be surprised if you see an Osprey sweeping down into the waves to catch a fish, or a variety of different birds living amongst the mangroves, hunting for small shrimp and crabs. Before Xtreme Safari set up their operation it was almost impossible to stay overnight in the area. You needed to know who and how to arrange it, plus complete all of the necessary paperwork for permission to stay. Now you can head out to the first lagoon of the park and 10

stay overnight in one of six beach huts, built steps away from the lagoon. The huts are simple and that is really the point of getting out of the city lights and back to nature. However they are definitely a step up from basic camping. Each hut has a solid wooden floor and structure, which is high enough to stand up in. The structure is covered in heavy cream canvas and is topped with a roof of rustic palm fronds. Inside each hut, there are three raised seating/ sleeping benches with comfortable foam cushions. Each hut officially sleeps two people, but a couple with a child or two children could easily fit as there is the third bench. For those who have a family member of the four legged kind, you will be happy to know that they are welcome as well – but obviously under control. The six huts are dotted along the lagoon edge, so basically everyone gets their own piece of beach at their front door and privacy as no one is overlooked. The lagoon is sandy, so it is easy to walk in and shallow at the edge, so suitable for children. However they do need supervision as it does drop off to deeper depths within the lagoon area. There are barbeque areas with charcoal and wood if you want to bring your own food, but equally if you are in total chill out mode then you can pre-order fish from the Bedouins. The Bedouins are legally allowed to catch fish in the area, they know the sea like the MIX February 2014


back of their hands and will always provide a succulent, super fresh fish for your dinner. You can barbeque it or they will cook it for you. Xtreme safari do provide sleeping bags and there is the cafeteria close by for water and soft drinks. There are also toilet facilities. Just remember to bring some lights; candle lanterns (candles in cut off water bottles) or a flashlight, as without the city light pollution it does get very dark. Also you may wish to bring a sheet and pillow case or your own bedding. One of the nicest ways to appreciate the protectorate is to explore the area during the day, maybe go further north if you have your own transport and visit the lagoon where the wreck of the Maria Schroeder is. This is also the location of the most northerly mangroves in the world. After exploring the area return to camp to relax and get ready for a night of star gazing and complete tranquillity. If the thought of total relaxation brings a yawn to your face, then don’t worry. For the adrenalin junkies amongst us, Xtreme Safari have come up with a solution to appreciate the park’s beauty whilst being active. The Xtreme team have come up with three activity programs; Mini Xtreme, Wow Xtreme and Camp Xtreme. The mini program is designed for people who have an afternoon available – the program is for 3 hours and consists of a tour towards the mountain range on beach buggies and then an option to go snorkelling or use the Sea-Spi. The beach buggies are especially constructed for sandy terrain and are available either as two seaters or single seat. Children have to be over 15 to drive alone and need to be a certain height to reach the pedals. The buggies have comfortable seats and full harnesses and all participants will be equipped with a safety helmet. You will need protective glasses which you can buy at the camp and it is advisable to buy a large headscarf. The Bedouin black and white check scarfs are particularly good as they keep the sand away from your face and head. The Sea-Spi is a small flat boat, which you lie on face-down. There is a glass viewing window which you rest your face on to see the sea life below. It is powered by battery and has hand grips for you to control the speed and direction. It is particular good for people who are not strong swimmers and of course children with accompanying adults. MIX February 2014

ACTIVITIES If you prefer diving into the blue to look at the fish and coral then opt for snorkelling. The guide will take you out on a boat to the outer reef, where you can safely enter and exit. One thing you will notice is the salinity of the water on the outer reef, compared to inside the lagoon. This is because of the Mangroves. They filter the salty water and expel any unwanted salt through their leaves. The reduced salinity in the Mangroves and lagoon allows other species to survive. Have a look and you will see they are teeming with small crabs and shrimps which attract many different bird species. The Wow Xtreme starts at 8am and finishes at approx. 2.30pm. You will start off in the beach buggies driving into the mountains for about 5km to the ‘Ramla’ mountain, which means ‘Sand’ mountain. Here you will experience the thrill of sand boarding. It’s the deserts equivalent to snowboarding and is so much fun. After a couple of hours of surfing the sand it is back to base for snorkelling or Sea-Spi. The adrenalin rush is not over yet there is still more ‘Wow’. After a dip in the sea you will then be pitted against each other in a battle of paint ball. The camp has a designated enclosed area for the game, complete with trenches, hillocks

and hiding places. After all the activities are complete it is finally time to relax and enjoy the prepared lunch. The Camp Xtreme program is basically the same as the Wow Xtreme but with an overnight stay in the huts. It starts at 8pm with the paint ball game. The camp provides dinner which is either freshly caught fish or meat. The barbeques will be lit but it is up to you to cook your own food. After a night of tranquillity it’s up early to go in the beach buggies to the mountain for sand boarding. Normally you will go at sunrise, which is an amazing experience to see, as the light is completely different from day time, giving the mountains an altered hue of colours. Xtreme safari can arrange transfers to and from hotels and will organise the entrance to the park. If you are a resident and have your own transport you will have to pay the park fee entrance – which goes towards the up-keep of the protectorate. Dining with Hatmehit – The Fish Goddess By Moira Tune

D

inner at an all-inclusive hotel often conjures up images of self-service buffet dining at the hotel’s main restaurant. It’s not often that you imagine a choice of restaurants and cuisine, a romantic setting, super table service and delicious freshly cooked food to order. Well think again, because the Rixos hotel in Nabq has moved the goal posts in the all-inclusive dining experience. I was invited to dine at the Hatmehit Seafood a la carte restaurant. Hatmehit is the Egyptian Goddess of fish, so it is no wonder that freshly grilled fish is their speciality and as it is one of my favourite foods it was already a match made in heaven. The Rixos Hotel is a grand affair; it exudes luxury and with no less than 11 swimming pools and over 600 rooms you know that it is a cut above the ordinary. The Hatmehit is situated on the beach front, so our host organised a club car to take us to our destination. This gave us the chance to have a little tour of the grounds and pass by the other restaurants which impressively include; 18

Egyptian, Chinese, Japanese, Italian, India and Turkish all of which were quite busy. On arrival at the restaurant we were greeted by the Restaurant Manager and quickly showed to our table by the sailor suited waiter. The restaurant has inside and outside seating areas and is directly on the promenade next to the beach, which gives a romantic ambiance. As the Hatmehit serves seafood the décor is set around a seaside/boating theme. There are striped pine floors and light wooden tables and chairs dressed in blue and white stripes. The table was decorated with a navy tablecloth and crisp white napkins. Our waiter offered us a wine list which had a range of local and international wines and also gave us the menu. The formula is a choice of starter salads, a choice of soups and desserts. For the main dish you are invited to the chilled display cabinet to choose your own fish. To whet our appetite we were served a very impressive bread basket/arrangement and several small bowls of different salads including a delicious octopus salad. MIX February 2014


We then both chose the seafood salad and seafood soup, but if that is slightly over doing the fish theme then there are alternatives. The salad had pieces of tender calamari, small shrimps and flaked salmon and was a nice fresh start to the meal. Our waiter Ahmed recommended the creamy seafood soup. It was very delicate and not too heavy with succulent morsels of fish. After a reasonable wait (it is so nice not to be rushed) we were invited to peruse ‘the catch of the day’. The Fish-monger was very knowledgeable and explained what each fish was and how it could be cooked. My partner is a bit fish-bone wary, so he was recommended a grilled fillet of Sea Bass. I chose a whole grilled Sea Bream and just to be decadent a couple of fried Barboni. Our choice of fish was whisked away to the Chef, whilst we were re-seated at our table. The waiter topped up our glasses with wine and let us relax and listen to the light Turkish music playing in the background. A few moments later we were served our perfectly MIX February 2014

cooked fish with a side serving of rice. The evening was very pleasant and nothing reminiscent of previous all-inclusive experiences. The service was top notch and worthy of a five start restaurant, the ambiance was friendly and charming, and the food was deliciously fresh and tasty. Chicken Tikka Masala Recipe presented by Chef Ahmed Rashad - Hilton Sharks Bay

For the chicken: 1 kg boneless, skinless chicken thighs 1/2 cup whole-milk yogurt Juice from 1/2 lemon 1 teaspoon cumin 1 teaspoon coriander For the sauce: 1/2 tablespoon butter, or olive oil 1 large onion, thinly sliced 20

3 cloves garlic, finely diced 1-inch ginger, peeled and minced 2 tablespoons tomato paste 1 to 2 tablespoons garam masala 1 fresh diced tomatoes 3/4 cup heavy cream 1/2 cup roughly chopped coriander, plus extra for garnish Tablespoon salt and pepper.

Chef Ahmed Rashad has worked at various hotels within the prestigious Hilton hotel chain for over ten years and for the past six years at the Hilton Shark’s Bay hotel. He started his career in 1992 and worked in Cairo, Nuweiba, Sharm el Sheikh and Belgrade in Serbia. Initially it his passion for food was decoration and presentation which ultimately led him into a career as a Chef. Now Chef Ahmed enjoys creating authentic dishes from around the world; for this Chef’s profile he has chosen to present one of his signature dishes; Chicken Tikka Masala. Chicken Tikka Masala is a traditional Indian dish which combines tender marinated pieces of chicken (usually cooked in a special clay oven) with a rich flavorsome sauce which is lightly spiced with the aromatic Indian spices of cumin, coriander and ginger. Method: For the chicken: Cut the chicken into small bite sized pieces, removing any sinew and/or skin fat. Prepare the marinade by putting the olive oil, yogurt, coriander, cumin, lemon juice, finely diced garlic and salt and pepper in the mixer to form a smooth paste. Mix the chicken pieces into the paste, making sure all the chicken has a good coating. Leave the chicken for at least 15 minutes or preferably longer to marinade. The longer it is left the more intensive the flavor will be. Normally the chicken would be cooked on long metal skewers in a traditional Tandoori clay oven. The alternative for the home cook is to either cook the pieces in the oven and then grill them for a few minutes at the end, or cook them over coals on a BBQ. Garam Masala is a blend of spices, so depending on the strength of your masala spice mix, you may want to add a small amount of chili or another tablespoon of the masala. Stir in the freshly chopped coriander, just before removing the sauce from heat. Serve immediately with Basmati rice. Top each serving with a sprinkle of fresh coriander.

Get into the Groove’ with DJ Sam Smoove By Chantelle Wilson

“Well I started to DJ at the age of 18 years old at a small, dark underground club in Cairo called ‘Exit’. I loved it there but after three years I decided it was time to look for a residency elsewhere as I really wanted to increase my experience and further my career. I could not of achieved what I have, if I had not been brave enough to take that jump.”

How did you arrive here in Sharm? “By Bus (jokingly laughs), after playing at ‘Exit’ in Cairo, I decided to move to Sharm in 2007 to fulfill a residency spot for Ministry of Sound that at the time was hosted at Pacha Sharm. The night they hosted was called ‘Smoove’. During my residency, I focused on playing RnB and Hip Hop music for large and very responsive crowds.” “I continued to play for Ministry of Sound for 3 years and really enjoyed it; I believe I gained a vast amount of career experience during these few years. When Ministry of Sound stopped hosting nights at Pacha, I stayed there for a further 2 years playing just when they needed me. This gave me the opportunity to play not only RnB but to branch out to other genres such as Funky House, Garage and ‘HedKandi’ styles of music.” When did you start working at Space Sharm? “I have been at Space for one year. I moved from Pacha to Space when Ministry of Sound offered me a residency for one of their hosted parties. Now I am DJ-ing at ‘Bounce’ on Wednesday nights where I play various genres of music such as RnB, Hip Hop, Dance Hall, Garage and Dubstep. There is always such a good crowd at Space; I really enjoy working here. I am hoping to stay here for as long as they will have me.” Has the RnB music genre always been your passion? “Yes absolutely, I have always been passionate for this genre of music. When I was in High School and I first saw DJ’s spinning records, I had this strong feeling that made me realize ‘that is exactly what I need to be doing and this is exactly the career I want’ so I made the decision that I would become a RnB DJ. I knew from then that I had to do everything I could and learn everything I could to make my dreams come true, and here I am today.” Are there any DJ’s or Artists that have been your main inspiration throughout your career? “There have been so many DJ’s and artists that have inspired me in so many ways, such as DJ Premier and DJ CatKiller; they are both so talented and have greatly influenced me throughout my DJ-ing years. Also DJ Jazzy Jeff, who I looked up to from a young age. He is my Idol; I enjoy listening to his music, I have always been energized by his personality, but most of all he really encouraged me to pursue my career in music with his technical skills.”

Are there any other genres of music you enjoy listening to and/or playing? “As mentioned before RnB and Hip Hop are my ultimate passion but I also enjoy listening to and playing Funky House, Garage, Classic House and Dance Hall. I am not a big fan of Trance, Electro or really ‘hard’ House music. I respect and appreciate all the DJs and artists that are involved in these genres but honestly, this style of music is not really my preference to listen to.” Has your career allowed you to travel throughout Egypt and internationally? “I have been very lucky to have had the opportunity to travel to Poland four times to DJ in some amazing clubs there. I managed to get those gigs because I was scouted one night when I was playing in Pacha. I met the owner of some the top Polish clubs such as ‘Shakers’, ‘CoCo’, ‘Bakerat’ and a few others whilst he was on holiday in Sharm. After seeing me DJ he invited me to play in his clubs.” “I hope I will be able to travel back there again as it is such a beautiful country, plus I would like to learn a little more Polish. Other than Poland I have played many times in Cairo, one of my favorite places to play there is ‘Tamarai’ it is a great club to DJ at. I was also given the opportunity to play in Hurghada at the ‘Ministry of Sound Club’ which was a great experience and then ‘Papas Beach’ which was also wonderful. I would be honored and more than happy to visit and DJ at any of those venues again.” Do you have any plans for the future? “I would really like to travel the world, gain some more experience not just within my career but also general life experience. I would like to learn some new languages, try different cuisines and learn about the world. The first countries I would choose to visit are USA, Dubai and England, because the people there really understand music, they have amazing knowledge about different genres, artists and music in general. I believe it would be a huge boost for my career if I managed to play in any of these places. Other than wanting to travel, I don’t have any immediate plans. I would like to just see how things pan out; you never know what is around the corner or what opportunities you can be given.

RACE FOR LIFE AND

BIG PINK PARTY WEEKENDER 2013 Friday 6th December and Saturday 7th December 2013 saw the third annual Race for Life in Sharm El Sheikh. Hosted by some of the largest companies in Sharm; Soho Square, Hard Rock Cafe, Rixos Hotels and Jaz Mirabel Hotels, they all came together to support Lisa Hartley and Teresa Tickners in their vision to organise the largest Race for Life to date. The event was spread across two days. The weekend started with the infamous 5k Race for Life along Nabq Bay’s stunning beach promendade, from Rixos Hotel to Jaz Mirabel Hotel. Both hotels provided fantastic hospitality, decorations, support and service for the start and finish line of the race. After the Race all the participants were invited to hop on the shuttle bus provided by Soho Square, to Hard Rock Café to continue the fund raising party. Hard Rock donated all of the takings to the Race For Life funds and put on a marvellous spread of food and drinks. Whist the particpants enjoyed the refreshments they treated to some entertainment by Soho Studio performers. Once the party was in full swing and everyone was refreshed and refuelled, Lisa took to the mic to start the bidding for the largest charity auction in Sharm. Over fifty donators around Sharm had provideed magnificent prizes for the auction. With Lisa’s expert MC skills the money started to pour in as guests and 40

participants started to vie for prizes and out bid each other. The grande finale of the night was a surprise performance from X Factor’s Kitty Brucknell which left everyone in a great mood for the second day of the Race for Life. The second day’s evening entertainment for the Race for Life charity event was hosted at Soho Square’s main stage. To kick off the night the organisers started with ‘THE BIG SWITCH ON. X Factor celebrity Kitty Brucknell turned on the Christmas lights which were followed by a fantastic firework display. The evening continued with the main charity fund raiser; a fantastic concert. X Factors Kitty Brucknell and her dancers took to the stage to put on a specially prepared concert for RACE FOR LIFE, singing some top tunes and classic ballads. Everyone had a great time and it was the perfect close to a perfect weekend.
