Hanging out in my hammock by Moira Tune 12

MIX June 2014

I popped down to Wind Beach in Naama Bay to meet Erika the aerial acrobat of Pacha and now my antigravity yoga Instructor. She was up a six foot ladder, happily securing my bright yellow silk hammock to the reinforced canopy, whilst telling me it is so much fun and I’m going to love it. Well love it – I did. Developed by former gymnast and dancer Christopher Harrison, anti-gravity yoga isn’t just a yoga workout—it combines several different exercise styles. It’s a hybrid combining traditional yoga poses with aerial arts, pilates and dance. This technique is the first in a new genre known as “suspension fitness” which has lots of benefits and is also a lot of fun.

S

harm or more precisely Sinai has had a long association with yoga; it’s the spirituality the mountains conjure, the tranquillity of the turquoise waters and the serenity of the desert sunsets. All of these things, kind of go hand in hand with meditation and yoga. However they tend not to go hand in hand with the latest New York trends. You can’t imagine two more vastly different landscapes, so it’s difficult to imagine the latest New York fitness trend taking off in Sharm. Pink the famous singer demonstrated some impressive moves from the discipline during a recent performance. Gwen Stefani, Mariah Carey, and President Barack Obama to name a few, have also got into this fitness phenomena. So I guess if they are hanging with this new yoga vibe then let’s hang with them. Drumroll please as we announce the first ever Sharm class of anti-gravity or aerial yoga.

MIX June 2014

Erika explained that her classes will concentrate on deep relaxation, building up slowly a variety of yoga inspired poses using the hammock as a support system, to finally practicing beneficial inverted poses. It was quite easy to see how relaxing it would be, apart from being suspended and gently rocked, there is also the soft white sand beneath you, the ocean inspired chill out tunes, the gentle breeze and the sea and mountain views of Wind Beach – the perfect place for hanging. I started off stretching using the silk material of the hammock. I made circles, leant back suspended by my wrists, my waist and then by my neck and just hung there. After stretching Erika showed me how to get up and into my hammock. Being a high flyer and aerial artist with several year’s experience she made the move look easy. I have to say a degree of flexibility is needed and one website suggested that if you can do three full sit-ups, you will be able to do anti-gravity yoga. I am happy to say that my leg did stretch that high and within seconds I was swinging in my hammock happy as a child. 13

ACTIVITIES The idea of the class is for everyone to gain confidence in the moves and to be able to achieve them on their own – this is why Erika will take the time to practice each move slowly. With me, she wanted to show the full extent of poses which can be achieved. Within an hour; I was standing up, inverted and suspended mid-air in a lotus pose, in a sort of sky-dive position, suspended as if I was in one of those baby bouncers and finally cocooned. With a bit of assistance and hammock manipulation, I do believe I did the “the awesome possum” and “the chandelier” which is not bad in one hour – Erika was pleased with me.

Apart from the high fun factor, anti-gravity yoga has serious health benefits. Anyone with back issues can benefit from being able to hang freely which allows the spine to lengthen. Some followers have suffered from sciatica for years and now from regular practice find that anti-gravity yoga eases the pain. In addition to decompressing the spine, anti-gravity yoga can help to increase strength and flexibility without overstressing your joints or compressing your vertebrae. So how do you prepare to have your world turned upside down? Erika says just come with an open mind as it is totally different from yoga on terra firma. You must listen to the instructor, trust the hammock and relax as it is easy to start with, to experience some disorientation. At some point you will be upside down, so it is a good idea not to have eaten just before. Also make sure you have no sunscreen on, but if you come straight from the beach there are showers available. After my experience I would suggest wearing lycra leggings and a vest top. Erika did say you can wear a bikini, but the hammock in some poses can be quite tight especially around the groin and with some poses, parts might pop out that you don’t want the other beach goers to see. I would also suggest not to wear baggy clothes as they could get caught in the folds of the hammock. Streamline is the way to go. So if you fancy hanging out, then Erika has seven multi-coloured hammocks. She will teach five days (Saturday to Wednesday) at 11.00 am and 4.00 pm, but these times can be changed for a group booking. To book your hammock space either tell the barman or call 01069185919. As a tourist you can easily benefit from the experience by just trying it for one lesson, or if you are a resident Erika will teach a progressive course so you will be hanging like a bat in no time. The lesson will be 45 minutes of stretching and poses with an additional 15 minutes for play and experimental time. You can either just cocoon yourself or get funky with some inversions in this time. I’m hooked to my hammock and will definitely hang again. I left Wind Beach feeling an inch taller, rejuvenated and feeling like an aerial acrobat super star. I can’t wait until I’m hanging again.

Bus Stop Lounge –

Where the Good Times

Roll By Moira Tune

If you have visited Sharm in the last 20 years, you would remember the iconic Red London Bus fronting the renowned nightspot Bus Stop at Sanafir Hotel. Now-adays the bus has long since gone but the name hasn’t and in recent years the successful Sharm brand known for its catch phrase ‘let the good times roll’ has branched out with a Bus Stop venue in La Strada Mall in Nabq. 20

MIX June 2014

Tarnia the Manager warmly greeted us and suggested as we were dining to sit at one of the comfortable tables at the front of the venue. Bus Stop Lounge has a large outside terrace with tables, inside there are high booths and also high stools around a floating central bar – so there are lots of seating options depending on your party and whether you are dining or just there to enjoy the ambiance and have a cocktail.

We were tempted to order a cocktail from the extensive menu, but decided on a chilled glass of white and a beer to go with our shared starter of mozzarella cheese sticks. As with the varied entertainment the venue offers, the menu has something for everyone. It is not fine dining or a restaurant style menu, more of a casual menu with lots of home style favourites, mainly targeting the predominant UK tourists in the Nabq resorts.

The venue is decked out in red, white, black and chrome colours with Bus Stop memorabilia and some pop art of Marilyn Monroe (the star of the famous film Bus Stop), which make the large interior cozy and inviting. There were only a couple more occupied tables at our early dining time of 8.00pm, but the venue didn’t feel like it was empty. The clever layout of the tables, lighting, soft music and stylish décor create this friendly and casual ambiance.

There is an all day English Breakfast where you can choose individual items like extra rashers of bacon, sandwiches, burgers, pastas, salads,

Bus Stop is a multitasking venue, there is something for everyone. You could say that it is a lounge bar, night spot, sports bar, games bar, cocktail bar and of course last but not least a restaurant diner. This may seem a lot to fit in, but where some multitasking venues get it wrong, Bus Stop hasn’t and each area of interest doesn’t overshadow another. We felt comfortable ordering food, whilst others played on the pool table, drank cocktails and used the free Wi-Fi and tablet stands. All I can say is it flows and even the several large flatscreen T.Vs didn’t overpower us, as there was nice lounge chill out tunes playing in the background.

mains and deserts. The mains are good pub food classics like chicken tikka marsala, traditional fish & chips served with mushy peas, English style pies, sweet and sour chicken, steak plus more. We decided on a mixed combo platter and the sizzling spicy chicken. The portions were over sized, which of course means great value for money – you definitely won’t leave hungry from here. The combo platter is perfect for sharing and I would recommend it for a group to share whilst 21

DINING watching the footie for example. It had crisp onion bhajis, chicken satay sticks, filled potato skins, nachos, spring rolls, coleslaw and dipping sauce. The sizzling platter of chicken came in a rich tomato sauce, with black olives and melted cheese sprinkled on top. It was very nice and came with a serving of home-style French fries and/or white rice. Bus Stop Lounge is a welcome addition to the Nabq bar/restaurant strip. Not only does it offer great food but also all round entertainment for all of the family. The venue is open from 10.00am – 2.00am. On Sunday you can enjoy a three course Sunday roast dinner for great

value. There is also the daily ‘Beer and Burger’ special between 5pm – 7pm. If beer is not your beverage then you can take advantage of the 7pm – 9pm Happy Cocktail Hour, where all cocktails are half price. After you have dined then why not stay a little longer and get into the groove on Monday nights with ‘Twist and Shout’. Thursday nights is ‘Hot Shots’ where between 12.00am – 2.00am you get a shot with every drink purchased. So as you can see Bus Stop Lounge Bar is a real multi-tasking treat with really a little bit of something for everyone and where the good times continue to roll.

Presented by Chef Youssef A. Gebril – Shores Amphoras Hotel and Resort from his childhood, his mother and his grandfather gave him inspiration to choose this profession. “My grandfather was a chef in a big hotel and as a child I always saw him as my idol in his uniform in the kitchen. My father, who was also a F&B manager during that time, later became my teacher in the university. From six brothers, three of us chose this profession. So I could say, this passion runs in my family since generations.”

This month we have the honor to introduce you to Chef Youssef A. Gebril, who is the Director of Kitchen in the Shores Amphoras Hotel and Resort, Sharm el Sheikh. Chef Youssef is a charming and highly professional personwho kindly showed us the secrets of his kitchen. He is from Cairo and has worked as a chef for 28 years and as an Executive Chef is since 1997. His passion for cooking comes

Cooking Method Tomato Concassé (fresh tomato sauce) 1. Boil a large saucepan of water and prepare a large bowl with ice water to refresh the tomatoes. 2. Using a paring knife remove the stem and core of the tomatoes by cutting a cone shaped piece out of the stemend of each tomato. Then score a large X (about 2.5cm long centered on the other end of the tomato). 3. Place the tomatoes in the boiling water for about 10 seconds then immediately refresh in the ice water bath. 4. Once cool, peel the skin off the tomatoes. Then slice the tomatoes into quarters and using a small paring knife remove juice and seeds. Place onto a paper-towel lined plate and allow to drain. During his career he has worked all over Egypt in the most prestigious Hotels and Resorts, in Saudi Arabia and Switzerland, as well. When we asked some advice for the time of Ramadan, he said “I always tell people to be careful at the breakfast in these times, eat only small dishes (like sambusek and kobeba), plenty of fruit juices and dates for sugar. Later on; during the night, is the time for the main dishes. I advice instead of butter to use olive oil or corn oil and instead of heavy spices preferably fresh leafy herbs for the flavor, to keep our meals light but delicious.” He gave us one of his favourite recipes, sharing the secrets of a sophisticated, still simple to prepare dish: Fillet of Beef with Tomato Concasse, Roasted Garlic and Herb Butter. (Concasse means a prepared sauce from fresh ingredients.)

5. Lay the tomatoes flat on a cutting board and dice into 8mm pieces. Herb and Garlic Butter 1. For the herb and garlic butter, place butter, 2 cloves roasted garlic, parsley leaves, rosemary leaves, oregano leaves and Dijon in chopper attachment and process with stick blender until well combined. Season with salt and pepper. Place on a small square of cling film and shape into a 10cm log. Roll to enclose butter mixture and shape into a log, twisting ends to secure. Place in the freezer for 30 minutes to firm. Remove cling film and thickly slice. 2. Using kitchen string, truss the beef so it maintains its shape during cooking. Season beef with sea salt and freshly ground black pepper. Heat oil in a large fry pan over medium-high heat, seal

steaks on all sides. Cook for 3 minutes on each side for medium-rare or until cooked to your liking. Transfer beef to a wire rack to rest for 6 minutes. Remove kitchen string. 3. Meanwhile for the tomato concasse, combine tomatoes and oil in a bowl, season with salt and pepper to taste. 4. Slice beef in half and top with a round of the herb and garlic butter, spoon tomato concasse onto the plate. Dress with rocket leaves, roasted garlic, olive oil and aged balsamic. Roasted Garlic 1. Place 4 unpeeled garlic cloves in a sheet of foil and drizzle with a little olive oil, wrap to enclose and roast at 180C for 15 minutes or until tender. Enjoy with your loved ones ! 25

UNDERGROUND JAMMING MUSICIANS PARTY NOW OUT OF THE HIDEOUT

D

uring Sharm’s hot summer season, people barely go out during the day, if it’s not for work or necessities. The summer nights … well … that’s a totally different story. In Sharm el Sheikh there are plenty of places to go out to in the night, mainly clubs and discos, where the mob can rave to the latest tunes. But the city’s nightlife also has another face; the live music scene, which is mainly found in the hotels and resorts. If you want to catch any of these talented musicians performing, you need MIX June 2014

to choose the artist, the time and the place carefully. Have you ever wondered, where these musicians themselves are going out to have fun after work? A few months back, an impromptu gathering slowly began to emerge, these musicians, more than 20 of them, randomly got together, kind of underground, for their own enjoyment to jam together and those lucky ones, who 31

happened to be there had the time of their life to watch and listen to them. These ad-hoc events began to attract attention and became the constant subject of investigation for those of us who love live music and who wanted to follow up the next party. That’s when one of them, Mr. Mohamed Mounir had a brilliant idea. Speaking to Mr. Hisham Hafez, the present organizer of the jam session, Mr. Mounir explained:

“Why don’t we organize, instead of randomly chosen places and times, a series of events as a new found tradition? These nights are so popular, we could support the musicians in town and present to Sharm el Sheikh a different line of entertainment.” That was the start of ‘Sharm touring Musicians’. We caught the news of the next jam session and decided to go and see them, talk to them and find out what it

is all about. On a Monday night we arrived at Café del Mare, a beach lounge bar in Hadaba and while the people slowly gathered, we took the opportunity to speak to Mr. Hisham about the events. He told us, that the organization picks a different outdoor venue every week on a Monday to host the artists, by doing this, they move the fans and guests all around Sharm, so they get to learn about new outdoor venues, where they can go to enjoy the fresh night breeze during the hot summer nights. This keeps the jam sessions and the live music scene fresh as each time there is a different ambiance and vibe. The party always starts at 9:30pm with live music as warm up, until the other musicians, after finishing their actual shows, arrive to jam. But there is more! Each time they gather, one of them performs a full show for about an hour. After the show, the other musician take to the stage to jam. They

give the following week’s show and a new outdoor venue for the party.

even let amateurs on, but only on approval as the amateur must be able to sing or play at a similar level of the show. It is not at all karaoke style, it’s an honor for anyone to be accepted on stage. All this makes the evening exciting, one can never know what kind of music will be played and who will be on stage. Late at night when the party is almost over, they randomly pick a name of a musician, who will be the next artist to

MIX June 2014

What makes these events so special is that all the artists (singers, guitarists, saxophone players and many more) are playing and making music for their own fun, jamming and trying new tunes with each other, it’s a very relaxed and entertaining atmosphere wherever they go. A lot of fun, laughter and great, great music. They play and sing all kinds of styles, the 80’s, 90’s hits, flamenco, jazz, blues, hard rock and even oriental music randomly to the surprise of everyone who spends the night dancing with them. The night we shared this experience with the musicians and many guests, Mr. Mohamed Hanafy was the starring artist. He played flamenco guitar and sang to us; creating a beautiful “Latino” atmosphere. After his show it didn’t take long for the others to join him. The air was sizzling with tunes, people

dancing with cold drinks in their hands and laughter was all around. If you want to spend a particularly entertaining Monday evening with friends with a different kind of music party, all you have to do is to follow the Facebook page of the “Sharm Touring Musicians” or call Mr. Hisham Hafez on the nr. : 01152666091.

SHOPPING

Sweet

shopping in Sharm by Moira Tune

N

ormally when MIX does an article on shopping it’s about clothes, bikinis, sunglasses etc. but who says you can’t do a shopping article about cake? After all, we have to accept (albeit sometimes secretly) cake makes us feel good, just as a new bikini, dress or sunglasses does.

S

o, yes I admit I went shopping for cake at Tseppas in Genena Mall - the new in-trend place for such delicacies and oh what fun I had. Tseppas may be new to Sharm, but it is a well-established highly regarded manufacturer in Egypt since 1912, with eight branches nationwide. The café and bakery are huge and they also have the same area downstairs for their factory – as all of their goods a baked fresh daily.

Breakfast:

Order a selection of fresh pastries, croissants and mini pizzas.

Oriental delights:

Tseppas are renowned for their oriental sweets. There is a huge selection of delicate pastries with

MIX June 2014

pistachios, nuts and cream all drenched in sugar syrup. These little sweet bites are perfect served with a Turkish coffee for after dinner.

Cocktail canapés:

Enjoy afternoon tea at Tseppas with a selection of smoked salmon, prawn and sausage canapés and some mini slider rolls filled with roast beef and cheese. These can also be ordered as outside catering for your home soiree. (48hrs notice is requested).

Petit Fours and mini cakes:

For a really decadent afternoon tea add a selection of petit fours and mini cakes. They are all bite sized pieces of pure joy. Shortbreads, chocolate tarts, marzipan fruits and many more varieties.

43

SHOPPING

Celebration cakes:

If you have a celebration and you need a cake then choose a torte from Tseppas. They have many freshly prepared cakes available to go. Choose from blueberry cheese cake, chocolate torte, fruit embezzled cakes and more. Also cakes of any size can be ordered for any occasion with only 24hrs notice.

Breads and toasts:

There is a big selection of pretzels and dried toasts which are perfect for making home-made canapĂŠs and a selection of breads.

Sweets and ice cream: Fancy European cake slices:

There are so many to choose from and they all look delicious. I tried the walnut caramel slice, chocolate biscuit, and chocolate pistachio with my friends (of course).

If the cakes, tortes, petit fours and oriental sweets don’t suit your craving there are 16 flavours of homemade ice-cream, colourful macaroons and home-made chocolates which make a nice birthday gift. Tseppas will also be serving special Ramadan sweets throughout the holy month including Konafa with mango, Konafa with pineapple, Atayef and the traditional Rawani cake.

Served with freshly brewed coffee, a variety of herbal and normal teas and/or bottled juices. 44
