The cradle of the next

world champ drivers By Hedvig Jeney

The racetrack. Hot summer afternoon. As the heat rises and the silence of the siesta descends, it’s time to fulfill destiny: Go Karting. Helmets, leathers, gloves, karts, flags, excitement in the air. When I look closer, the racers, the fighters, are all small people. Children? I am at Ghibli Raceway Sharm el Sheikh on a Friday afternoon. Under the watchful eyes of the parents and the expert team of Ghibli, the children are having the fun of their lives in all safety and speed. I met with Mr. Mohamed Saad, the operational manager and Ms. Sam Samoudi, the assistant general manager and marketing, who kindly satisfied my curiosity and gave me a complete view of the club. Ghibli Raceways is an establishment with history. Opened in 2001, had countless races, was visited by the big champs of driving, like Mr. Schumacher, David Coulthard in 2003, racers from 85 countries were trying their skills here, well, a long history in the Go Karting of Sharm el Sheikh.

10

Anybody can take part, either on occasion, as a fun afternoon or in the school, where professional trainers are guiding the young trainees. Protection is provided by them with overalls, helmets and hoodies, but the half boots are owned by everyone personally. Ghibli takes special care on safety of the drivers. A large crew is assisting each round and participants. The pit marshals have international expertise on safety. After getting into driving gear by the lockers, they all gather in the briefing room to learn about speed, safety, flags and signs and rules. Then the moment of truth comes and as I could see, this was the long awaited, exciting part. Getting into the karts. The children are eager and happy, can’t believe they have a car and a steering wheel in their hands, feeling important and suddenly grown up. I only saw sparkling and happy eyes of children and parents, both. Ghibli has over 50 karts to choose from, all well taken care of in the garages, some people have their own kart kept in boxes, stalls for maintenance and keep.

MIX July 2013

They are all automatic shift drive, the best karts are on 100 km/h in 6 sec. Horsepower and speed is different for each kind of kart. From 6,5 Hp up to 28 Hp, from 45 – 160 km/h speed. Of course for the children these numbers are the smallest for safety, but anyone can find the best kart for his skills and wish. They have 15 children in school right now, but the number is ever growing. From the age of 4,5 till no limits. One would wonder, how these small kids are able or safe to drive, but many of today’s great Formula 1 legend has started their lives in the motor world on the kart tracks. By the international fame of Ghibli, here could be the cradle of the next world champ drivers. Each driver receives a small device right before start, which serves to measure the best time and lap efficiency, this is calculated and printed after each race. The children seemed to be most excited to read these sheets, competition is not only to arrive first, but also to be the best on time of the laps. They have four circuits between the desert rocks, the smallest called Cadet, 229 m, then the so called Arrive&Drive with 569 m, the Extended on 770 m and the longest, National on 850 m. Lessons are 3 races with 9-11 laps. The monthly price is 60 Euro for the school. As for the first time, a round is free to everyone to try the experience. When I asked Antonio, (8 years) about how he feels about go-karting, he said the first 3 things he loves best here are the curves, surpassing and the speed. He arrived here, he said , alone and now he has many new best friends, so much fun, can’t wait till next Friday t come again. Adham, ( 7 years) another little driver said almost the same, race, competition, friends. Speaking to their parents, they said, it’s a wonderful way to teach them how to fight with honor, they became all close friends, although they compete hard on the tracks. Honor, fair play, attention and precision are all key words here to learn. One can understand by watching them, how is it possible and sometimes good to start so early to drive, Ghibli gives them a chance also to grow and to continue maybe, their career abroad. From the 2nd of July, a young celebrity in go kart racing will come to teach by them, Ms. Maxi Czyszek, a promising, talented and dedicated young woman. For the coming Ramadan month, the team of Ghibli has organized a Grand Prix, taking place each Friday with many teams participating, like locals, divers, internationals, managers, one race is even dedicated to female drivers. Each time with a show of the young

drivers of the school. They have a bar-restaurant serving also virgin cocktails, fruit juices and much more on a large terrace, where the spectators can enjoy the race from a full view in the cool breeze. It’s possible to organize parties, birthdays, too, with a race. If you fancy the thrill of racing with all the fun of Formula 1, then karting could be just the experience for you. Some of the best motor racing drivers learnt their skills on karts and now it’s your turn. It’s skilful, exciting and a real blast! Race against the clock or gather a few mates and enjoy karting . Go-Karting is good for many ages and those who don’t have a driving licence can also take part. For booking, call 01147777322.

ACTIVITIES

Not many people around the world Scuba Dive, and therefore the knowledge of Scuba Diving is not commonly known. Scuba Diving is a different type of sport that takes you to another place on earth; it gives you the experience to see and learn different environments of the underwater world and broadens your way of thinking when comparing life above and below the surface. It’s a completely different world underwater! What you see on the surface is totally different than what scuba divers get to explore below the surface. It’s very normal to fear doing something you haven’t tried before. Therefore it’s very important to dive with someone you feel comfortable with. This step comes after the wil, you have to have the will first to learn something new, something that will teach you a lot and something that you know you really want, but only have the fear of starting or taking your first step.

12

Keep in mind that Diving Instructors are trained to overcome any problem you might have, maybe if you get a chance to talk with a Diving Instructor about your worries, I’m sure this it will decrease your fear of Scuba Diving. The word SCUBA is an abbreviation for Self Contained Underwater Breathing Apparatus. Scuba Divers need special gear to be able to stay below the water surface, to control your balance (known as Buoyancy) under water, and to be able to breathe normally. When taking your first diving course, you learn how to use your gear under water. You also learn safety procedures in case of any emergency. That’s why all diving organizations would not allow you to dive without taking a diving course, in order to handle any situation that can occur to you or another diver. Most common Scuba Diving fears are imaginary

MIX July 2013

are typically shy and unwilling to approach divers. Sharks actually leave you alone if you will do the same for them. Divers actually search for sharks for the excitement and experience of seeing them. Sharks see divers as another fish and therefore sharks are not interested in divers. 3. Thinking that Scuba Diving is a “life threatening sport”: Thinking that you are putting your life in danger when Scuba Diving? Fear of dying or getting serious injuries? - The fact is that chances of acquiring Scuba Diving injury is lower than any other adventure activity such as snow skiing, snowmobiling, sky diving...etc You have full control on scuba diving when following rules correctly. Read a lot and gain all the information required. Check your gear before any dive, never dive alone, and remember never to break the rules of diving taught by your Diving Instructor. 4. Lack of Scuba Diving knowledge: Many people believe when starting a diving course, that they will be conducting the course on deep water and do difficult skills making them uncomfortable. - The fact is when starting a scuba diving course; you will start in confined water on a maximum depth of 1.5 to 2 meters. As a non diver, you will practice swimming in shallow water, get the feeling of the diving suit and the Scuba gear, till you get comfortable swimming with the new equipment. This is the way to make you as a non diver comfortable and relaxed performing your skills and practices in shallow water. Later on you will be performing the skills in open water with more confidence and without fear…

feelings such as: 1. Not to be able to breathe underwater: This is a common feeling any non diver would get. Most non divers feel safer breathing from a snorkel while snorkeling on the water surface.

All the above Scuba Diving fear points are easily cured and very easy to overcome. On the other hand, People with lung diseases, respiratory or circulatory system disorder and claustrophobics should not be allowed to Scuba Dive. Scuba Diving is fun, and could be an addiction too. Take the chance and become a Scuba Diver, assuring you that you will never regret a moment thinking “why haven’t I learned Scuba Diving a long time ago??” If kids can Scuba Dive…Why can’t you

- The fact is when scuba diving, you breathe normal air, not oxygen as most people think. The air you breathe from the tank is pure air compressed 200 times, so if you think you will not have enough air to breathe, that’s not true. In your diving course you will learn how to breathe underwater, simply breathe normally, continuous and never hold your breath. 2. Fear of sharks: Hollywood movies like the film “Jaws” have caused fear of sharks to many people. - The fact is, sharks are normal sea creatures. They are not aggressive or harmful. Many divers have never even seen a shark while diving. Sharks species

DINING

THE CHOICE OF PLENTY AT The Orangerie By Hedvig Jeney When it comes to go out for dinner, the first to choose is the kind of food we’d like to enjoy, then comes the choice of the restaurant. Both are many and confusing. When I am undecided, then I know exactly the place I need to go. The Orangerie in Maritim Jolie Ville Resort has resolved this cacophony of the culinary languages by serving every day of the week another theme in dining. Monday is Asian, Tuesday it’s Mediterranean, Wednesday is Oriental, Friday and Sunday we can have Italian and Saturday Seafood specialities. The day I have decided to go was oriental buffet dinner, which raised my curiosity, what kind of delights are they serving. The Orangerie was born 22 years ago, it was a pioneer in Sharm el Sheikh regarding dining and they kept their high standards of quality ever since. On arrival I met with Mr. Daniele Centaroli, the Executive Chef of the restaurant, who told me, that although they are rotating the themes of the buffet style dinners every day differently, they also change the menu of each country every week. This way the originality of the choices is kept always interesting for the guests.

16

The Orangerie has earned his patina long time ago, when the very first Peace Conference, The Summit of Peace Makers, has been held here, in 1996. It’s common knowledge that most of the biggest decisions are made and contracts are signed by the “white table” and The Orangerie is the perfect example for that. Many presidents and politicians were their guests and although sometimes by respect of the different traditions, it’s allowed to those important personalities to bring their own team of cooks, still the hosting quality always belonged to the chefs of The Orangerie. There is a separate room with a huge picture and a marble fountain, dedicated to the first meeting for peace, but after all the years, if the walls of the restaurant could talk, they would talk history. Entering the restaurant I was greeted by the welcome desk and lead to a table in the airy and peaceful atmosphere of the place, given by the light colors, the high ceiling and the fountains. Ordered my drink and then walked to the tables of plenty of the Buffet. Well, I thought the choice will be easy, but it wasn’t. So many kinds of food, so deliciously looking and the fragrances, I was really happy for the buffet style

MIX July 2013

dining, where if I want to, I can taste in any quantity of the dishes served. Started with a soup called Lesan el Asfour, then chose some bread by the bakery table. I learned to know, that they bake freshly four times a day in the restaurant. Then took some sambusek, a mix of dolmas and the oriental mezzah. Everything looked so mouth watering, that only small quantities were on my plate, to be able to taste as many dishes, as I could manage. For main course it was hard to choose between the Lamb Fattah with rice and the Fish Sayadeiah with tomato-pepper sauce. So I got both (enjoying the buffet style). By the open cooking station, the chefs told me, that if anyone has any special request for a diet or intolerance, they can satisfy them in a very tasteful way. As for the desert, well, that was hardest to choose, I would say. All the oriental sweets were lined up one after the other on the stands, plus some others freshly prepared, like zalabia and my favorite, Om Ali. Sweet, creamy, hot and irresistible. Looking back at the tables of plenty of the Buffet one can only admire the amount of food and variety of each course. Ay last I took my coffee outside, in front of the

MIX July 2013

restaurant, in the oriental Café, where I met Mr. Centaroli again. He told me, what they are preparing for the coming month of Ramadan. The restaurant will join with the Oriental Café, which will be fully decorated Ramadan style with a large screen for entertainment. They will take special care of the breakfast (Iftar) for a very convenient price, one can book a table by the hotel’s reception, even for larger groups. For example, every 10th person will eat Iftar for free. Residents can have a discount card, too, applying by the guest relation desk of the Resort with a photo, giving 20% discount also on the Spa, Gym and other facilities. On my way out, Mr. Centaroli showed me the Garden of Love, belonging still to The Orangerie, right on the seaside. A romantic dinner table with fire by the pathway to accompany us to the shore and a table for two with candles and soft music, a perfect scenario for a couple. So beautiful it is, that I have decided, the next time on occasion, I will definitely try this beautiful dining place under the moon, in the intimacy of the waves.

Recipe presented by Subhash Mamgain Tandori Restaurant, Sonesta beach resort and Casino Mr. Subhash arrived to Sonesta 2 years ago with 16 years of experience in the northern Indian cuisine from New Delhi. Indian food we can find all over the world, mostly modified by the local taste, but in Tandori Restaurant they use the original spices and

basmati rice from India and other local ingredients, so that we all can enjoy so called untamed Indian dishes. On request they prepare the milder version for those who prefer, even special wishes, like vegetarian meals, as well. Karahi means in the name of the dish the special Indian serving pan where it is either cooked or served by the table. Chicken Karahi is very popular in northern India and don’t take long to make. If you have to fix a quick and simple lunch or dinner in 30 minutes, then make sure you treat yourself with this delicious chicken karashi recipe by Chef Subhash.

Add the tomato paste, too and then cover it and cook till the chicken leave the fat. Serve hot with basmati rice or bread. Little secret from the chef: heat the oil to shimmer, only then the fresh coriander will give the full taste. Colder or overheated oil will result differently. The Tandoori Restaurant in Sonesta Beach Resort and Casino is open every day for the guests from 7 pm till 11 pm. Booking by the reception of the Resort.

Getting up close and personal with Sharm resident Djs

Lith K

Bob Knight

What was your first inspiration to become a DJ?

What was your first inspiration to become a DJ?

It all started when I was 13 and I received DJ equipment as a gift from my parents and me and my friends used to hang out creating mixes. The DJ’s that inspired me the most were trance DJ’s Tiesto and paul van dyk. I would constantly be listening to their tracks on my ipod and dreamt of playing beside them at huge events.

From the age of 15 I had an interest in dance music and I used to go to clubs in Cairo with my friends and they would supply House music.

How did you break into the music industry? It all began 7 years later at the age of 20 when I was offered to play at a big party in cairo called black cherry events and soon after I got recognized by a promotional company called EQ entertainment. I then started to focus on music production produced 3 tracks, one of them was ‘The future’. Shortly after this I met up with my good friend DDZ and we came up with the idea to collaborate so we did and that’s when we got signed by big record labels such as ISTMO music, phonology records and system records. I also released 3 tracks ‘Illusion’, ‘Invisible world’ and ‘maniacs’ which received huge support from Bobina, Marcus Schulz and Lange.

Which style of trance do you prefer to play and why? I prefer to play Progressive trance because I don’t like the high bass I like the melodies. And also people love the trance because of the melodies.

I didn’t quite understand enough about house music so my friend gave me a good insight as to what it was all about. The DJ’s that I would always listen to were DJ Chus and Joris Voorne and that’s what took me to the style of music that I play today ‘tech house’.

What style of music do you play? And why did you choose this style? I play tech house because I like to get people warmed up for the main set and I like the groove of the music. In the future I intend on teaming up with DDZ and producing my first track in the style of Tech house.

How did you get your residency in Space Sharm? And what nights can we find you on the decks? I was a resident DJ for ministry of sound at a club in Sharm and then ministry of sound re-located to Space and that’s how I became a resident DJ for Space. You can find me on the decks 2 times a week at ‘Escape’ on Sunday and ‘Ibiza Sessions’ on Monday.

Do you have any plans for the rest of What should we expect from you for the the year? rest of 2013?

Well I’ve actually started working on my new album which will be coming out soon then I will start a Europe tour. I’ve been also asked to mix for big DJ’s like Heatbeat, Bobina and Andrew Rayel. I will continue working as a resident DJ at Space Sharms weekly night ‘Escape.

MIX July 2013

Yes, I’ll be teaming up with Lith K &DDZ and producing my first track in the style of Tech house which I’m very exciting about!

Merry Tents Holy Ramadan

By Isabel Fausto

It is no secret that Sharm is one of the most exciting destinations in the world. Being that, it is a peaceful city to witness a different vibe of Ramadan. Most of the Muslims here celebrate the Holy Month by fasting, praying and celebrating the day away from home in restaurants highlighted with colorful tents (Al-Kh Iyammiya) and festive lanterns (Fawanees). In this month, hotels and restaurants put together an ensemble of delicious traditional food, cultural entertainment and fun games in their own version of the Ramadan Tent. The beauty of it here in Sharm is that the feast is shared by non-Muslims as well. Foreign residents and tourists eat their meals with their Muslim friends in places like El Masrien and Red Sea Fish in the Old Market, Pomodoro at Camel Hotel and at Bianca in Naama Bay, at La Strada in Nabq, and in a host of restaurants and local cafeterias that host this vibrant part of Ramadan. Traditionally, the spirit of the Ramadan Tent is to unite all kinds of people, poor or rich in celebration of the first meal, called Iftar. That spirit can be seen at modest outdoor cafeterias illuminated by fawanees in Hay El Nour, Old Market and in Hadaba where the people are served with set meals or an open buffet amid a big video projector featuring old Egyptian films, sports matches and Ramadan special programs, alongside shisha and tea. While in the grander spots, a Ramadan Tent is to promote a festive place for socializing, dished up with a sophisticated selection of Oriental food and delightful entertainments like The Whirling Dervish, live Egyptian serenades, and belly dancing. However way this holy tradition is presented, the most revered highlight among all tents is the food. The first phase of Iftar normally composes of dates, lentil soup and sweet traditional drinks, such as Karkadeh (hibiscus), Tamer Hindi (tamarind) and Qamar Al-Deen (dried apricot). After any of these is consumed to break the fast, the Muslims go to pray and then the food feast resumes. At this time, the Muslims embrace the food with gratitude and so much gusto. The object of their gratitude being dishes of grilled meats such as kebab, kofta, pigeon, seafood and quail, rice-stuffed vegetables and meat, baked tagines, foul, taameya, a big casserole of seasoned rice and with a variety of chopped nuts and raisins, and the part that Egyptians are known to love, desserts, desserts and desserts. Some gatherings last until past midnight while some until the succeeding meal called Suhor. In most cases here in Sharm, Iftar is succeeded by a night of barhopping and extensive socializing in Naama Bay or in Sharm El Maya with friends and soon to be friends. Thus at the sound of the pre-sunrise prayer (Fajr), the Muslims return their focus on this Holy Tradition and begin fasting again. And soon, the merry Ramadan Tents are to be set again.

How Much Do You Know About

Red Sea Corals??? When arriving back home from a Red Sea Diving or snorkeling experience there is only one topic of conversation, what you saw underwater and how beautiful it was. We all know what a apart fish look like or a sergeant fish but how much do any of us novas underwater explorers really know about corals and what we can do to protect the, What are Corals? Corals structures are made from millions of very small sea animals called coral polyps; these are little animals hiding in skeletons which they leave behind after they die. There are 2 different types of Corals in the Red Sea, Soft Corals and Hard Corals. You can recognize the difference easily from their movement underwater. Hard corals create skeletons out of calcium carbonate (also known as limestone), a hard substance that becomes rock within time. And Soft corals are soft and bendy. They do not have stony skeletons, but instead grow wood-like cores for support and fleshy rinds for protection. Where do they live? Corals are usually found in tropical seas where they can find a lot of sunlight for photosynthesis. They normally grow in water temperature between 21 till 29 degree Celsius. They can live in slightly higher water temperatures but this slows their growth, therefore in very hot climate countries corals start growing from 30 meters depth and below, as water temperature decreases the deeper you go. What/How do they feed? There are 2 ways corals feed depends on their species: Many coral polyps are layered by tiny algae. The algae live within the coral polyps, using sunlight to make sugar for energy just like plants. This process helps the polyp to obtain the important minerals and oxygen. In return, the coral polyps supply the algae with carbon dioxide and a secured, protected home. Another way they feed is by hunting tiny floating animals known as zooplankton. At night, coral polyps pop out of their skeletons to feed. The polyps stretch

40

out to snap the zooplanktons that are floating by. Corals need underwater current to help them feed, therefore corals are not found in bays or lagoons. How long does it take for Corals to grow? Corals grow with different levels according to water temperature, salinity, currents and the accessibility of food. Most corals are very slow growing species. They can grow between 5 and 25 mm per year in length. Branching corals can grow faster, where they can grow up to 20 cm to their branches yearly. Corals damage! Most corals are located in shallow waters and therefore are close to all dangerous substances that can harm or even kill them. • Throwing plastics or cigarette buds in the sea kill corals since they do not decay and there if they touch or cover the coral it prevents them from breathing leading to death. • Hand touching kills corals. When touching a coral, you could harm and penetrate the tissue that allows them to breath. • Construction tools used to dig for building close to shore affects and kill corals due to the vibration produced from these massive machines. How to protect our Coral Reefs: • For divers and snorkelers, avoid touching anything underwater. Touching disturbs the Eco system leading to huge damages. • Watch your fin kicking to avoid damaging any coral with your fins. • Avoid hand swimming close to corals as you may hit by mistake and possibly hurt yourself in the process. • Never throw any waists in the sea! • If you find any waists covering any coral, try to remove it carefully not to increase the damage. • If you are a diver, share in the clean up days that Diving Centers organize from time to time to help and support protecting our Corals and Sea. The Red Sea is our treasure and Sharms key source of interests for visiting tourists. Please educate those around you and protect out Red Sea!
