Hyatt Regency’s “Sala Thai” receives the “Thai Select” certificate of recognition by the Office of Commercial Affairs – Royal Thai Embassy. One of the splendours of Hyatt Regency Sharm El Sheikh is the Sala Thai restaurant. The décor is entirely handcarved in Egypt and Italy and modeled on a traditional Thai garden house (hence the name “Sala”). The lobby entry draws the guest through massive carved doors into a quaint tea bar. Its convex window overlooking the bay and a softly lit cove ceiling are simple but full of character. “Thai Select” certifies that not only the food, but also the hospitality and the atmosphere of the restaurant are up to the highest of standards. Chefs must be carefully trained in the preparation of bona fide Thai meals. Receiving this prestigious award isn’t easy; the bar is set high and the guidelines are strict. Still, through training and inspections, Hyatt Regency Sharm El Sheikh’s Thai Restaurant, the Sala Thai, is proud to announce receiving the “Thai Select” certificate of recognition, by the Office of Commercial Affairs, Royal Thai Embassy.

1st Junior Fun Water Sports Competition in Egypt – Sharm El Sheikh
Wakeboarding, Slalom or Trick Skiing by Mostafa Farid For the 1st time in Sharm El Sheikh, and Egypt as a whole, Sun N’ Fun, the prominent excursions agency, hosted the “international Junior Fun Water Sports competition”. “ Junior Fun” is a concept that initially started in Denmark. The idea is that different clubs sponsor the competition several times a year for any and all Wakeboarders, Slalom or trick skiers under 18 years of age. This year, Sun N’ Fun has made the effort to implement the Junior Fun concept here in Sharm El Sheikh, at Terrazzina Beach. No matter what level you are, as long as you can put your wakeboard on you are welcome to participate. Sun N’ Fun took the initiative here in Sharm with the hope that more clubs in Egypt will eventually host the competition throughout the year as it’s done in Denmark.
The competition took place on Friday the 12th of October at Terrazzina Beach. The aim was to encourage children and youngsters to play more of the sport and help them develop their skills. There are 3 skill levels: Beginner, Intermediate, and Advanced. All children in Sharm El Sheikh have been taught at Sun N’ Fun. The club has been offering sailing and waterskiing courses as well as wakeboarding, since 2004. Some kids have been training for years, while others have only just begun. Still they all joined the competition. There are some children in the beginner’s level who only had 5-6 lessons. Overall 27 children, aged between 4 and 18 took part in the event, yet not all the competitors were residents of sharm. 3 came from Dahab City, 4 were from the Danish Federation, and 2 from Cairo. The rest 18 children were all from Sharm El Sheikh. Raneem, Passant and Hisham Franco from Dahab City. From Sharm El Sheikh came, Sina Ashraf Luxor , Dahab Ashraf Luxor and Seif Darwish. Finally Youssef Tawfik and Ibrahim and Ali El Dimderdash came from Cairo. Among the riders are Karim Hanafy, the Slalom Champion. Ezz and Seif Darwish, Yousef Tawfeek and Sina and Dahab Luxor are all competing for the National Championship. The astonishing Shams Luxor, who is only 4 years old, also joined. The Egyptian Sailing & WaterSki Federation in Marina, North Coast, organizes the National Championship there every summer. The Federation itself offers training courses, but special training is arranged for the team members travelling abroad. For more information regarding the training lessons, or to enroll your child you can contact: 01001119045 Litten Luxor. For direct arrangements for the Sailig & Windsurfing School contact Khaled Mannas, Center Manager: 01224255421 Courses and lessons are according to availability. Minimum age to join is 6 years, however exceptions can be made depending on the child’s readiness to learn the skill. 10

Acapulco Joe’s Mexican Restaurant By Mostafa Farid

MIX November - December 2012
Acapulco, is a city, municipality and major sea port in the state of Guerrero on the Pacific coast of Mexico, 300 kilometers southwest from Mexico City. The city is best known as one of Mexico’s oldest and most well-known beach resorts. Acapulco Joe’s on the other hand is a restaurant, located right between the beach and the main pool of the Marriott Renaissance Hotel. The restaurant is simply decorated with little Mexican-like elements such as cactus plants, and chair covers with familiar Mexican drawings and colors. This is the kind of restaurant I would suggest you go to during the day. I can imagine it would be absolutely spectacular to watch the sunset there while having your dinner. Yet even though, my partner and I went there at night time (9:00pm), we still got the privileges of the cooling breeze, the soothing Mexican music, and the indulging candle light atmosphere.
beans with cheese, all deep fried until golden brown, topped with sour cream. The tortillas came a bit chunky unlike we expected, still they were very tasty and the sour cream helped put out the fires of the jalapeno peppers. Coming to the main course, the Jack Daniels BBQ chicken was appealing because of its name, but since I’m the beef lover, my partner was the one for that. I on the other hand ordered the “Super Grilled Fajitas”. Mouth watering beef strips grilled with bell peppers and onions, served with guacamole, cheese, sour cream and flour tortillas. Soon enough, 2 waiters came out with sizzling platters, almost as if they were celebrating the start of our dinner feast.
Both dishes were a good choice. The chicken had a unique taste to it, and the BBQ dressing gave it a nice touch of sweetness. For the Fajitas, the beef strips From the name alone, you might notice were also lovely and tender. Belly Dancing Playful Delight of Pure Femininity By Hedvig Jeney
S
ilent stage with dark blue lights and candles. Music of drums louder and louder, beating hard in the air, then a crying melody of a flute joins them. Out of the mysterious smoke of incense, a shape of a woman dressed in silk walking towards me with slow, fluid steps. Soft skin, swaying hips and silky fabric moving on the rhythm of the drums. Arms and hands move like serpents or ribbons. Sensual, skilled and passionate. I would feel lost in time and space, if I didn’t know, that I am watching a belly dancing show, in Sharm el Sheikh. The people around me can’t take their eyes off the breathtaking sight. How is it possible to mesmerize men and women equally this way? I want to know more about this beautiful dance.” Where does it come from? The exact origins are actively debated, also due to the limited academic research. It might be descended from dances of early Egypt, as religious dance Temple Priestesses practiced, or as early as the Neolithic era, as fertility or birthing dance. This performance dance form known in the West, as the Belly Dance, is based on one of the social dances native to the Middle East called Raks Sharki in Arabic, “eastern/oriental dancing”, or Raqs Baladi “local dancing”. The term “belly dance” is a translation of the French “Danse du Ventre.”

NIGHT LIFE
In its native lands boys and girls learn the dance from an early age. As with all social dances, it is learned informally through observation and imitation of their elders during family and community celebrations, as well as during informal gatherings with friends. However, the often overlooked fact, that most dancing in the Middle East occurs in the social environment, rather than the more visible and glamorous context of the professional nightclub dancers, has led to an overall misunderstanding of the dance’s true nature and has given rise to many conflicting theories. Today, Middle Eastern dance classes are offered throughout the world, and skilled dancers are able to share their knowledge of the dance during studio classes and workshops. In Sharm el Sheikh one of the most famous belly dancing schools is owned and directed by Mr. Ahmed Mongy. I’m heading to Naama Bay to the el Khadiwy Cafè, to meet him. Mr. Mongy has started his performing career at the early age of 3, as a child actor, continued acting until he graduated, as a ballet dancer. Soon he directed the Sound and Light Show by Alf Leila Wa Leila in Sharm el Sheikh. He introduced the belly dancing performances to the show to raise the quality and to offer the audience an exotic touch. He is currently working as an entertainment manager and choreographer, his folklore band is touring all over Egypt Tunisia, Oman, Libya, Morocco, Syria, Russia, America and won numerous awards. The idea of opening a belly dancer school came with the immense number of requests and the lack of professional education in the field. Today his students are all over the world. In Sharm el Sheikh you can find his dancers in most of the 5 star hotels. “Anybody can learn belly dancing, even in elder age, one of my students is 70 years old. It all depends on the body’s physical condition, while a 28

half an requires football player. Most important criteria after the health condition is the passion for this kind of dance. It takes approximately 3 months to learn it, every day 2-4 hours, but certain moves a belly dancer has to practice all her life. I also develop a work-out program for my students and design their costumes.” – he said.
The costume now associated with this dance is called bedlah in Arabic (meaning “uniform”) and was adopted by dancers in Egypt in the 1930s, from where it spread to other countries in the region. This includes a fitted top or bra (usually with a fringe of beads or coins), a fitted hip belt (with similar decorations), and a skirt or harem pants. Egyptian dancers traditionally dance bare feet. Sometimes they enter carrying “a piece of fabric” and dance with it to music, that is very fast and dramatic. “There are four elements, that makes a perfect belly dancer. A nice body, an expressive face, which is able to give back the passion and joy of dancing, a deep feeling for the music and the costume. The dress is chosen depending on the colors of the dancer. Brighter for the olive or dark skin and hair, dark colors for the fair types, blond and white skin.” – said Mr. Mongy. As for the music, belly dancers express the emotions evoked by the rhythm and melodies. The true art of oriental dancing is to visually hear the music. It means that every sound made by the music must be translated into a three dimensional, but still sensual movement by the dancer. Exactly the way the legendary Egyptian belly dancers, like Sohair Zaki, Nagwa Fouad, Naima Akef and many more did. To watch them dancing is an exciting and exotic experience. Many today follow their lead and learn the mastery of the moves.
Mongy has me to one of his belly dancer star, Ms. Nabila Sabha. She has come to us right after one of her performance and looked beautiful and radiant.
“ I have started to dance when I was 12 years old” – she said – “and now I practice 3 full days a week and perform every evening. I realized, that if you want to become a professional, you must be completely dedicated to and a servant of the art. A regular career or family will have to wait, if ever. Other goals such as money or notoriety will only bring frustration and sadness. If you are one pointedly serving the art, then the road is clear for a fulfilling path.” When I asked her, what does she feel, when all eyes are following every move she makes on the stage, she said: “ I’m simply happy, enjoy the music and my dance. I’m aware of the public, but most of all, I dance out of joy. There is nothing in the world like being able to perform for Egyptian audiences every day, and being accompanied by some of the best musicians in the world. I dream about to share all I know with other women, share this happy feeling by teaching them how to dance. ” You are lucky! You have the gift to be able to see belly dancers here in Egypt, in Sharm el Sheikh, the way it was danced through the ages. There are many ways for belly dancing today around the world. Some aiming for controlled moves, some primal and simple, going back to the origins, some tribal or artistic. But there is one fact all the world agrees upon, that the most sensual, refined and passionate belly dancing you can experience, is in Egypt. All dancers of this planet wish to come here to learn and see the fluid moves of soft skin and flowing hips, the inner joy through the smile of a dancer, a celebration of life and beauty. 28 MIX November - December 2012

HONEY The Golden Treasure From The Buzzing Bee-Hive By Hedvig Jeney
A steaming cup of tea is sitting on my breakfast table, in the gentle November morning breeze in Sharm el Sheikh. All I need is honey to make it sweet. Everybody loves this sweet-tasting golden fluid, which is also called, the nectar of life. What do we know about this treasure of nature except, that it is so delicious? The benefits of honey go way beyond its sweet taste and it has other amazing properties.
SHOPPING Bee Keeping in Ancient Egypt
The fossil records tell us, that honeybees have been around for 150 million years or more. No one knows, when we discovered the treasure hidden in their hives, but paintings of beekeepers lining the walls of a cave in Spain prove that we have been practicing the art of beekeeping for at least 7,000 years. It was highly valued by the ancient Egyptians for its medicinal and healing properties. When archaeologists opened an 18th dynasty Egyptian tomb in the Valley of the Kings, they made a startling discovery. In between many artifacts, they found vessels full of honey. It had crystallized but was still edible. Honey, that was over three thousand years old, was not only still in the tomb, it had not spoiled in any way. Ancient Egyptians used it also in the mummification process to preserve their dead. Honey is a wonderful concentration of natural antibiotics and a completely unfriendly media for yeasts and microorganisms. So it does not spoil. But there are also other properties which make it such a powerful healer. This liquid gold, gift of the bees, is very important for our entire body. It consists of 76% of sugar (40% fructose and 36% glucose) 7% other essential materials (vitamins, enzymes, minerals, proteins, essential trace elements, amino acids) and 17% water . Besides healing, for centuries, honey has been valued, as a nourishing beauty aid, while it’s a wonderful moisturizer that leaves the skin extremely smooth.

Today, in the supermarkets of Sharm el Sheikh, we can find many kinds of honey. The most famous company to produce a large variety of organic honey is the ISIS Organic.
Why organic? “The taste of nature is what you can expect from Organic products. Because we do not use fertilizers, pesticides, artificial colorings or preservatives, you will only eat what Mother Nature serves you with. Organic Agriculture is about not using any chemicals, genetically modified organisms or irradiation and supporting and nurturing the soil for a pure and great tasting product.” – is their credo. The color, flavor, consistency and quality depend on the source of the nectar, the kinds of flowers, as well as the production method used. In general, the darker the color, the stronger the flavor. ISIS has created a whole scale of honey we can choose to buy and consume. They have studied the benefits of both herbs and honey, combining them perfectly for the needs of our well being. You can chose between honey with Black Seed, Chamomile, Honey Comb, Echinacea, Ginseng, Honey Extra, Marjoram, Plain, Pollen Grain, Propolis, Royal Jelly or Thyme, according to your taste. Raw Honey However, the most delicious and healthiest is the Raw Honey. Raw honey – which has not been pasteurized or filtered and ideally taken directly from the hive – MIX November - December 2012
“The secret of my health is applying honey inside and outside.” Democritus
is a treasure chest of nutritional value and medicinal remedies. Researchers believe that the therapeutic potential of raw honey is grossly underutilized. With increasing interest in the use of alternative therapies and as the development of antibiotic-resistant bacteria spreads, honey may finally receive its due recognition, as a powerful wound healer. Recent studies suggest that it has blood pressure lowering effect as well, and may slow down the spread of cancer within the body. The hormones found in honey regulate the heart rate and blood flow, consequently are very important by the protection of the kidneys and the liver.

Saint Catherine Monastery has been one of the world’s great centers of religious pilgrimage for over fifteen centuries. Today, there are excursions to visit the Monastery and in between the many interesting things to see, we also find icons painted with the very old, so called encaustic method. Encaustic painting, also known, as hot wax painting, involves using heated beeswax to which colored pigments are added. Or simply instead of crystallized sugar use it as a natural sweetener. “The secret of my health is applying honey inside and outside.” – said Democritus, the wise, known as the ‘laughing philosopher’, because of his emphasis on the value of cheerfulness and who lived to the ripe age of 109. Isis Organic Honey is widely available in Supermarkets around town. St.Katherine Honey, produced by Bedouin families in Wadi Tala (1.5 Kms from the monastery) can be MIX November - December 2012
