The World Tourism Festival ensures the return of stability and security to Sharm El Sheikh

The World Tourism Festival was hosted for 2 consecutive days in Sharm El Sheikh. Celebrations started with a large number of tourists marching through areas including Naama Bay and the “Mercato”, with the participation of hundreds of workers in the tourism sector, and many of Sinai’s Bedouins. A concert also took place at the Roman Theater which was performed by an orchestra from the Cairo

Opera House, and the famous singer Mohamed Tharwat. The event ended with a grand festival in Sharm’s most prominent areas, the Soho Square, where a large number of media personnel attended. The governor of South Sinai, General Khalid Fouda, said that the purpose behind inviting public figures is to encourage and support tourism and to send a message to the world of the return of stability and security to Egypt in general and Sharm el-Sheikh in specific.

Egypt enters the Guinness book of records for having the world’s largest crystalline lagoon If you discern a giant crystal lake looming in the horizon of Sharm el-Sheikh’s sizzling desert, don’t think it is a mirage — it is indeed the world’s largest crystal lagoon, officially recognized last month by Guinness World Records.

Designed by the renowned Chilean architect Fernando Fischmann and still under construction, the 12-hectare Sharm el-Sheikh lagoon earned Egypt the title of as the world’s largest navigable crystalline lagoon, surpassing its 8-hectare Chilean sister project, San Alfonso del Mar, which held the previous record. Engineer Yehia al-Meteiny, general manager of the Gold Pyramids Plaza and chairman of Golden Coast (the developer of the Sharm el-Sheikh and Hurghada Citystars projects) expressed his great pride

over the project in a statement. “The record-breaking lagoon will add a new dimension to the tourism and real estate markets not only in Egypt, but promote the city of Sharm el-Sheikh, which would play a pivotal role in bringing the city back to the spotlight despite the current adverse conditions,” Meteiny said. The crystal lagoon is located on the Red Sea Riviera over 7.5 million square meters, 3 km away from the Red Sea. It involves a master plan of 30,000 home units, hotels, a museum and a shopping center.

Taba Heights Port Re-Opened As part of the continuous effort to expand tourism to Egypt, Dr. Hisham Qandil, the Egyptian prime minister, attended the opening of “Taba Heights” touristic port. Dr. Qandil was accompanied by Dr. Hisham Zaazou, minister of tourism as well as both the minister of transportation and the minister of

internal affairs. Many important media and tourism professionals also attended the opening. Taba Heights port is considered of particular importance because it is estimated to receive more than 350 thousand tourists a year, coming on yachts or cruise ships sailing from and to the port of Aqaba in Jordan and Taba. The newly renovated port will serve to promote tourism in Egypt since it is favored by tourists as a midway stop. Taba Heights port was first established as a marine port to receive private yachts and touristic cruise ships on the 5th of Jul 2005. It was renovated on the 30th of May 2008 but then shut down by the General Association of marine transportation on the 16th of June 2011. Now with the efforts of the ministry of transportation together with the ministry of tourism, the port was renovated to open on Saturday the 29th of September 2012 and will soon be upgraded to become an inclusive commercial and touristic port by extending a main road to it and completing it with all the customs and safety services needed.

Yoga Retreat and the last of the Alchemists By Mostafa Farid

Sunset at El Tur

In our previous issue of MIX, we had some news about a 6 day yoga retreat at the Windhaven Hotel in El Tour. On the 3rd day of the retreat the program was to visit the Mosses Hammam’s and get a lecture on Alchemy. I was invited by Suzzane Farag and Hamdi Farag, owners of the Windhaven hotel, to spend the day with them in order to get some first hand information on both yoga, and alchemy. The Yoga sessions were given by Paula Cimarosti and the Alchemy lecture by Sameh Salem. Modern science and contemporary 10 10

medicine is taking a much more diverse approach to healing through psychotherapy and things such as ionizing radiations. The idea of spiritual healing and how that has a direct effect on physical healing is a very controversial issue. But, no matter how far you take this, science today does concur that there is a non materialistic side to things that we know little about. Yoga is a kind of meditation that is concerned with our energy, our vibe, and how the things we surround ourselves with can affect us. And this was what the retreat was mainly for. A way to let go of our obsession with the silicon world we live in and connect with our inner self to reach

peace of mind. For me this was a new experience. But although I only went for 1 day of the retreat, it was definitely a rich one and it gave me a chance to see things in a different light, and maybe even look at life through a different perspective. The Windhaven is a small family run hotel, with a very friendly and peaceful atmosphere. The minute you walk in you are warmly greeted and you feel like you’re home. But don’t get me wrong, it is still more professional than many I’ve seen. The guest “chalets” are very nicely furnished and are all facing the sea. From Sharm El Sheikh, it is roughly an hour drive to El Tur, I arrived there at 10 am and was greeted with a MIX October - November 2012

Windhaven Hotel, El Tur refreshing orange juice and some coffee. Altogether we were 8 people other than Paula and Sameh. This is the first retreat Paula and Suzanne organize, so it might not be very popular, and thus the little number of people. However, this is really the way Paula prefers it, since that means she can give more time to each one of the people attending. And Yoga isn’t the kind of thing a person like Paula, who feels very passionate about the matter, could be doing just for the money. The Windhaven family is also a small and intimate one, even though there are quite a large number of rooms that could be filled up. We were to meet at the reception to head out to the “Moses Hamams” which are a 3 minute drive from the Windhaven hotel. Legend has it that Moses and his people rested here during the Exodus. They were in search of water and Moses asked an old woman at this spring if the water was suitable to drink, but the woman lied to Mosses and said it wasn’t even though it was. Moses then turned to God and asked him to bless this water. So from that day on, the water there is not suitable to drink anymore but is blessed with beneficial properties instead. The water at the springs is 27 degrees and is beneficial for skin diseases and arthritis because of the high percentage of magnesium, sodium and sulphur in it. It also feels thicker than normal water or sea water. I can’t confirm whether it had any effect on my health but I can say that it felt revitalizing and was sensationally cool. The hammam itself is fairly well kept. The waters there are changed every couple of weeks, and the place around it is clean and in good condition. After the swim, we all gathered for the alchemy lecture. It was a unanimous vote that we have it at the Hammams instead of waiting to get back to the hotel. So Sameh Salem, then started his MIX October - November 2012

talk about alchemy and what it really means to be an alchemist. Going back to the hotel, Sameh’s lecture on alchemy gave us all something to think about and how there is a lot more to things than meets the eye. Going back to the real world though, we were all very hungry by then. Suzzanne had a lovely chicken tandoori waiting for us for lunch. We had an hour rest after the food and then gathered for the Sunset Yoga session with Paula and a general recap on the alchemy lecture by Sameh. The Yoga sessions include breathing exercises that help you relax and feel psychologically serene. There are also visualizing techniques where you imagine yourself walking through a certain place for example or doing something specific, as a way to help you rediscover yourself and better understand the voices or messages of your body and soul.

which involves no touching of the body, instead the touching is implied by moving your hand just close enough to the body. It is meant to rebalance and renew the your positive energy. The second technique is the “Shatzu”, which works by pressing your finger and massaging certain pressure points throughout the body that are known to be the energy channels. These are distributed throughout the whole body, and the massage works to relax your muscles and stimulate these energy channels. The retreat carried on for another 2 days. On the third day everyone went to visit the organic farm, which is an organic farm in a Bedouin settlement in Nuweiba, South Sinai. It is a piece of desert turned into fertile land, in between the Red Sea and the Sinai mountains. For the fourth day the activity was to see the Coptic monastery, which is one of the oldest monasteries in the world and lies in an oasis in the Eastern Desert of Egypt. The fifth day everyone preferred to simply go for a hike around el tur and had the final yoga session on the top of one of the hills in the area with the beautiful sunset. Suzanne and Paula are hoping to organize another 3 day retreat soon (maybe by the end of the year). Still for the Yoga sessions or if you’re looking for a nice place to relax and also be able to do some regenerating activities such as windsurfing or simply for some peace of mind, you can contact Suzzane or Paula at the Windhaven Hotel.

Every morning of the retreat included breakfast, a morning Yoga session, then an activity, lunch with an hour The Windhaven hotel rest, and then an evening Yoga session with a nice bonfire dinner. http://www.facebook.com/windhavenhotel The morning yoga sessions had more Tel: +20693777228 /+ 2001005437500 focus on physical exercises to get + 2001114543750 everyone going for the day, while the evening sessions were more focused on the spiritual exercises, such Hammam Mousa Springs as breathing and meditation. Paula also gave massages for spiritual healing. Generally, Yoga treats the body and soul as an interconnected entity, or what is called a holistic approach to spiritual healing. There are 2 different massage techniques, the “Pranic” technique, 11

DINING Recipe Presented by: Chef Tilak Raj, Bombay Restaurant at Soho Square

C

hef Tilak is another true Sharm veteran. A resident of the city since 1995, when he relocated from Hilton Delhi to Hilton Fayrouz, he is definitely at home in Sharm El Sheikh. After the Hilton, chef Tilak spent many years at the Camel hotel’s very successful “Tandoori” Indian restaurant. When Soho Square opened, he was there from the very beginning, at the head of “Bombay” the square’s high end Indian restaurant. Tilak attributes the great success of Soho Square restaurants to the management’s commitment to not cutting corners and investing in the best personnel, ingredients and training.

Parmizzano’s The Marriott’s Italian Restaurant By Mostafa Farid

The Marriott is a beautiful hotel of course, and Parmizzano ‘s restaurant is located right on the Naama Bay promenade with an outside and inside seating area that overlooks the red sea. The restaurant is relatively plain but it gives you a cosy homelike feeling walking in. The wooden cupboards, the chairs, and little details speak out that this is authentic Italian cuisine. The classic Italian music (exclusively played through the internet for Parmizzano’s) completed the experience as my partner and I were seated in the inside smoking area to my personal convenience. It was quite a warm night, so we ordered a couple of fresh juices (strawberry and orange) to drink while looking through the menu for the right pick. The waiter also placed a nice basket of fresh bread and crackers with a dip of balsamic vinegar, olive oil, and Parmesan cheese. A very tasty dip, although I’m not a really big fan of black olives. We didn’t want to miss out on the famous Italian 18

bruschetta, so we ordered their 6 piece portion together with sea food soup for me and a mushroom soup for my partner. The bruschetta came with 3 pieces of smoked salmon on bread that was mouthwateringly fresh. It’s a challenge for restaurants here in Sharm to keep their seafood items fresh, since most of it is delivered from places as far as Alexandria. But this salmon was definitely on my approval list. The sea food soup too was exceptional. I always prefer white cream with my seafood soup and although this one wasn’t made with any milk, it still was very delicious. The mushroom soup too according to my partner was good. After tasting so many mushroom soups, we learned that thickness doesn’t necessarily mean richness, or quality. A good mushroom soup mustn’t be too thick nor too thin, it should have a bite of mushroom in it, while still giving you the right texture. Apparently this one passed the critique of my partner MIX October - November 2012

NIGHT LIFE

Hail Caesar! A New Clubbing Experience in Nabq By Hedvig Jeney

28

MIX October - November 2012

T

here was rumor in town about a brand new nightclub in Nabq, people talking around and about, excitedly awaiting the opening of a place called the Caesar Nightclub. Driven by my curiosity, I put on my dancing shoes on Saturday night and headed to the El Hayat Hotel with my friends, where this famous event was taking place. The streets of Nabq seemed to be quiet, as most likely everybody was relaxing after a long and hot day by the sea. On the arrival to the El Hayat Hotel, this impression has changed abruptly. People were gathering in beautiful dresses and chatting excitedly, while we watched them walking in the same direction, towards the left side of the facade of the hotel. Looking up the building, one can’t help, but standing in awe. The hotel is built in ancient Egyptian style with massive stone walls, columns, carvings and statues standing there, as silent witnesses of long forgotten memories. It gives the historical air of the spectacular Temple Complex of Karnak. At closer look we can discover all the modern commodities and sophisticated equipment securing an unforgettable holiday for all. On the left side, red carpets are stretching to the entrance of the. Two roman legionnaires are guarding it, fully equipped with weapons and armor, welcoming the guests, who are strolling slowly into the depths of a tall stone corridor that leads to the entrance of the Caesar Nightclub. At the door a roman slave surprised us with a welcome drink, and then we entered. There is a very interesting mixture of the present and the past. Music and lights, drinks and elegance for the modern, ancient roman dressed waiters and hostesses, stone walls and columns for the ancient roman style. This gives a very pleasant atmosphere to the club, sophisticated entertainment in 4 levels, where surprises are awaiting in every corner. Tables are numbered by large roman letters, fire and smoke effects for a mysterious air. At the top level, by the entrance is the bar, to get the first ice cold drink in the hands of everyone, then discovering the secrets of the catacombs of the famous roman Emperor, Gaius Julius Caesar.

there is the portrait of the Emperor himself, as he emerges from the dark depths of time, reminding us all, we are his guests through the ages

Walking down the stairs, a comfortable sitting area overlooking the dancing floor, which is a few steps lower, then in the heart of the club, there is the VIP area with its secrets. In the deepest corner of the tomb like lounge area, on the wall there is the portrait of the Emperor himself, as he emerges from the dark depths of time, reminding us all, we are his guests through the ages. Comfortable couches and chairs, fire burning in a fireplace in the back, people talking and laughing everywhere. Although the dancing mob is only a few steps away, in the VIP Lounge the acoustic is perfect to be able to hear each other. All of a sudden, the music changes and a lone figure with a violin appears on the dance floor, between the dancing people, playing along with the house music. A unique mix of music, everybody is watching with full attention, a wonderful idea to make the evening unforgettable. Caesar Nightclub is a refreshing hot spot in the heat of the nightlife of Sharm el Sheikh, a unique experience in a very sophisticated atmosphere, worth in every sense to spend an amazing night in Nabq. PARADISE ON THE ROCKS By Hedvig Jeney

“ The Sinai Desert. Arid landscape, lifeless at first sight. Wide open plains, surrealistic rocks carved by the wind and a maze of long winding valleys and hidden canyons offering a very dramatic view on our arrival to South Sinai.”

LIVING

One day, many years ago, a man has arrived here and dreamed of trees and lush gardens, birds that sing and hustle around in the greens. He settled and started a small garden bringing all he needed from far and today he is one of the biggest suppliers of plants for hotels and individual gardens, all from the Green Heart Garden. In time others followed him, and now, if someone wishes for shade and fragrant flowers, green bushes or a colorful sight by the house, we have a wide range of plants to choose from. Few things are more enjoyable in a warm climate than to sit in the shade of a tree, catching the fragrance of the flowers and listening to the sounds of the birds and insects. The ancient Egyptians were as proud of their gardens, as their modern descendants and the larger gardens, such as those belonging to the temples must have been truly spectacular. The ancient Egyptian garden would have looked different to a modern viewer, than a garden in our days. We have many traces to know, how those gardens looked like. They were often surrounded by walls, very formal with rectangular ponds, trees and vines planted in straight rows and their purpose incorporated pleasure and beauty besides utility. It would have seemed more like a collection of herbs or a patch of wild flowers, lacking the specially bred flowers of our modern days. Today scattered throughout the high mountains of Sinai, there are 40

hundreds of quiet poor gardens, as a result of a unique collaboration between the monks of St. Catherine Monastery - with their tradition of walled gardens providing selfsufficiency in herbs and medicinal plants - and the nomadic Bedouin families, who, though they cultivated gardens at the oases on the desert plain, had no tradition of cultivation in the mountains. Sometimes these gardens are in broad wadis (dry river-beds) flanked by the rugged, sprawling rock slopes of the mountains and sometimes they are miraculously set within hidden ravines, narrow strips of cleared ground. It is possible to visit these hidden gardens in the desert in organized excursions. The city of Sharm el Sheikh is miraculously green, although every green leaf we see, every flower we pass by, be sure there is an irrigation system hidden somewhere, as a reminder, let’s not forget, we are in the desert. All hotels have beautiful landscaping, but we can find wonderful gardens in private houses and villas, too. The most common tree is the flamboyant tree, a distant cousin of acacia. The flamboyant tree ( flame tree – for its burning red colored flowers) is considered to be the 5th most beautiful tree in the world and it’s in almost every resort in Sharm el Sheikh. Originally coming from Madagascar, where today it is endangered but fortunately spread around the tropical climate world for its beauty. The variety of the landscaping

garden projects for the residents in Sharm el Sheikh are very large. Some wish for beauty, some for fruits, others want simple desert style cactus and rock gardens or mainly a kitchen garden with vegetables and herbs. The most popular trees today are different kinds of palm trees, mostly with dates, ficus trees, guava, orange, lemon, mandarin, fig tree, papaya and the banana. About eighteen kinds of trees were grown by the ancient Egyptians and we still can find them all to ornate our gardens. Flowers such as daisies, cornflowers, mandrakes, roses, irises, myrtle, jasmine, mignonettes, convolvulus, celosia, narcissus, ivy, lychnis, sweet marjoram, henna, bay laurel, small yellow chrysanthemums, and poppies grew among the trees, papyrus and lotus in the pond in ancient times and we still have them all around us today. Other imported species like the Bougainvillea bushes from Brazil with its many colors, the cycas, which looks like a small palm but it’s not and since prehistory we find all around the world, washingtonia palms, windmill palm from China and many more. The ancient Egyptians were able to create gardens in the most unlikely places. Thousands of years passed by and here we are in the middle of the Sinai desert, in the colorful and fragrant oasis of Sharm el Sheikh. Winter is coming, the best time to plant your garden, just make sure you have enough water and soon you’ll find yourself in your own little green paradise of your own garden. Making Time For

WINE

On the 10th September, 16 brave members of the Sharm community gathered at Camel Bar to undertake a task; to taste 29 Egyptian wines in one hour, and identify the most popular in each class of white, rose, sparkling and red. Was it Mission Impossible? Of course not, with spittoons at the ready we all sniffed, swirled, sipped and actually learnt a little as well.

SHOPPING

If you are a wine drinker you are probably familiar with some of the main grape varieties like Cabernet Sauvignon, Merlot, Sauvignon Blanc and Chardonnay. Most of us have picked up a little knowledge of what we like by reading the labels. With thousands of wines to choose from, from thousands of vineyards and hundreds of countries it would be impossible for the novice wine drinker to remember the name of the wine. Therefore it has become common practice to add a little description and the grape variety to the label giving us novice ‘quaffers’ an easy guideline. As Egypt still only produces relatively few wines, the wine is sold by the name, ‘Grand Marquis’ doesn’t really tell you a lot, and neither does ‘Obelisk’ making it quite a task for any visitor with no prior experience of Egyptian wines to make the right selection. With this in mind our host David Molyneux-Berry-M.W. attempted to guide us through the tasting process to identify the most popular wines. The tasting was conducted as blind tasting so none of us could be swayed by marketing jargon or previous opinions. There was a mixed group of 5 men and 11 women from various backgrounds from Executive Chef to Dive Instructor and of course some serious wine sippers. Most of the wines came from the Gianaclis Estate but also within the selection were the competitor’s wines from the Kouroum of the Nile vineyard. We started off tasting white wines. Each person could either give a collective score out of 20 or mark for the aroma, clarity, balance and fruitiness five out of five for each. It was a little like speed tasting as the Wine Master gave us 4 minutes per wine, encouraging us not to gulp but rather ditch the leftovers in the bucket. When you actually concentrate on all the dimensions of a wine rather than just sipping, it is quite amazing of what transpires. Comments for the aromas varied from ‘wet dog’ to ‘peachy’ there 42 42

was definitely no Jilly Goolden’s among us with descriptions of ‘liquorice, with a hint of chocolate and underlying tones of rubber’. With the exception of the 11th white wine which we would taste at the very end, we then moved on to the rose selection, after the five rose wines, we sampled four sparkling wines; two whites and two rose varieties and finally the reds. The Egyptian vineyards produce four vintages per year and have grapes bought in from France, Lebanon and South Africa. They also produce their own grapes, with the Kouroum of the Nile estate boasting that all of their grapes come from organic crops. If wine is bought directly from shop it can vary from approximately 60le up to 100le per bottle, obviously Egyptian wines sold in restaurants are more expensive but should range between 120le up to 300le. After successfully tasting 29 wines, it was time to reveal what we had actually drunk and match our scores to the wines. With such a varied group the results were quite open but there were definite clear favorites. Omar Khayyam White produced by Gianaclis was a surprising favorite. The vineyard describes it as ‘’pale white in colour. A simple clean and fresh with a good finish. This wine needs to be drunk young as it will not develop in bottle. ‘’ It is made from the Sultanine Blanche grape variety. This wine is a mid range wine.

MIX October - November 2012

The tasting was conducted as blind tasting so none of us could be swayed by marketing jargon or previous opinions.

Jardin du Nil White was also a strong front runner. This is produced by Kouroum of the Nile and is described as ‘’fresh and crisp with a very long finish. A blend of lime and pineapple. Slightly mineral.’’ The grape variety is a blend of Chardonnay and Vermentino. Jardin du Nil is in the higher price range. However its little sister Beausoliel which is the vineyards latest release also was one of the top contenders. This is a mid range wine and a good alternative to the more pricy Jardin du Nil. For the Rose selection Leila from Gianaclis was the firm favourite. The vineyard’s description of the wine is a little less appealing; ‘’Bright salmon pink colour. Clean fresh vinou nose with subtle red fruit aromas – red cherry and red current.” They recommend it as an aperitif or with white fish and chicken. The grape variety is a blend of Sangiovese and Tempranillo. Aida White sparkling wine was the clear winner of this section. Le Baron from Kouroum of the Nile was a bit heavy on the oak and quite dark in colour. Aida is made from Sultanine Blanche grapes and is described as ‘’a golden colour and a nose of apricot and peach’’.

MIX October - November 2012

When it came down to the heavy weight reds there was a clear winner with two runners up. Without a doubt Cape Bay Merlot came out tops. It is a high range wine produced by Gianaclis and described as ‘’Deep red colour. The palate is fruity with good depth, balancing acidity and has a long fine aftertaste. It’s a soft wine, velvety and smooth in texture”. Jardin du Nil red was a close follower made from Cabernet Sauvignon, Merlot, Petit Verdot and Syrah grapes and described as ‘’complex smooth full bodied with a dominant blueberry and liquorice. Complex aroma of small, black, ripe berries and iris flowers”. The other strong red candidate was Ayam Red produced by Gianaclis and made from Cabernet Sauvignon/Syrah/Carignan grapes. It is described as a ‘’deep black/red colour with pale purple edge. The plate has a good structure with plentiful fruit and length” It is recommended to drink with red meats, duck and game. We would like to take this opportunity to thank Camel Bar for hosting the event and David Molyneux-Berry Master of Wines for his expert knowledge, patience and time.
