Giorgos Kokkinelis Leading the F&B Department to Success! The Hotel’s Food and Beverage director Giorgos Kokkinelis has been working at the NJV Athens Plaza for almost 27 years. He is responsible for overseeing our establishment's food and beverage operations, which encompass banquet, culinary, and room service operations; maintaining product and service quality high levels while maximizing profits; forecasting and budgeting; and selecting, training, and developing employees. He prepares the annual food and beverage budget and monthly forecasts for food and beverage needs and expenses along with performing human resource functions including scheduling, evaluating, and training staff. He also establishes controls, through department heads, payroll and other operating expenses in the food and beverage department, he holds periodic meetings with staff to review past and future performance and discuss general information concerning Guest and employee relations. Among other qualifications Giorgos Kokkinelis has exceptional time-management skills, negotiation skills, and the ability to communicate effectively with the public and other employees.

How did you choose this profession and what are the skills that a F&B Director should have? I have always liked communicating with people. A family friend, who was the F & B Manager in a wellknown hotel in Athens, took me with him to show me how a hotel works. I realized then it was what suited me. So, I started, I took the exams at the School of Tourism & Hospitality and entered the hospitality sector. I never regretted my decision, I still love Service, Hospitality and communicating with people. An F&B Director, apart from his training in the Hospitality field and the acquired knowledge, should have managerial skills, excellent time management skills, negotiation skills, and the ability to communicate effectively with the public and his employees. Have there been times when you had to take an initiative for a high-profile Guest case? Of course, I have had to take initiatives for most distinguished Guests. I feel very lucky, I've hosted a lot of VIP people, from Heads of State to Royals and many celebrities. I have

often had to take the initiative to completely satisfy their wishes. Fortunately, I always made the right choices that even exceeded their expectations. Tell us an interesting incident from your career. Of course, it is understandable that I am not in the position to narrate any specific case for confidentiality reasons. I can only tell you, what happened many years ago with a high-profile Guest. I heard him speaking on the phone with another VIP, inviting him to dinner that same evening. I realized that he had neither made a reservation at the restaurant nor had he asked for the preparation of any Menu. Immediately, without even asking, I booked a table for two and made all the arrangements for an exquisite Menu. Later that afternoon and a couple of hours before dinner, the high-profile Guest realized that he hadn’t asked for any arrangements for his Guest. I informed him that I had already taken care of everything. He thanked me courteously and said that he had never experienced such an exceptional service.

The monuments of the Acropolis have withstood the ravages of past centuries, both of ancient times and those of the Middle Ages. Until the 17th century, foreign travellers visiting the monuments depicted the classical buildings as being intact. This remained the case until the middle of the same century, when the Propylaia was blown up while being used as a gunpowder store. Thirty years later, the Ottoman occupiers dismantled the neighbouring Temple of Athena Nike to use its materials to strengthen the fortification of the Acropolis. The most fatal year, however, for the Acropolis, was 1687, when many of the building’s architectural members were blown into the air and fell in heaps around the Hill of the Acropolis, caused by a bomb from the Venetian forces. Foreign visitors to the Acropolis would search through the rubble and take fragments of the fallen sculptures as their souvenirs. It was in the 19th century that Lord Elgin removed intact architectural sculptures from the frieze, the metopes and the pediments of the building. 15’ | 898 m

Cut the pumpkin and the rest of the vegetables into small pieces.

Serve in a deep plate, add a spoonful of Katiki Domokou cheese and garnishes of your choice.

Heat olive oil in a small pot. Add the onions and leeks first. Toss frequently and then add the potatoes, zucchinis and the coriander at the end. Cook until vegetables are crisp - tender and season with salt and pepper. Add the chicken stock and let all the ingredients boil until they melt. Add the contents of the pot to an immersion blender or jug blender, pulse until smooth then pass through a fine chinois twice.

*Katiki Domokou

Katiki Domokou cheese is traditionally produced in the Orthis plateau, in the region of Domokos, from sheep milk, goat milk or a combination of both. It is a creamy white cheese, with a soft, slightly sour flavour, pleasant flavour and aroma, and no skin. It has a 75% maximum humidity and 40% minimum dry fat content. Milk used for its production comes exclusively from Domokos, from herds of sheep and goats traditionally raised and adapted to the particular region, whose diet is based on locally found plants.

These are 3 lessons on customer service that you could take away from my experience:

Imagine entering your hotel room and, instead of experiencing a pleasantly cool atmosphere, you find yourself in a 40°C ‘oven’. To make things even worse, you are unable to change the temperature. That’s exactly what happened to me recently when I walked into my room in my favourite hotel in Athens. Without a second thought, I made my way back downstairs to reception to report the situation in the hope of resolving the problem as quickly as possible. The porter, who was standing next to the reception desk, noticed my distress and offered to help. I immediately told him about my room. Little did I know that what happened next would not only lead to this blog post but would also remind me of one of my favourite customer care sayings: First, own the problem and then solve it.

1. Empower your employees to take ownership of a customer’s problem and find solutions independently

This particular porter didn’t start his spiel – as 99% of porters in almost any hotel on the planet would have done – by saying something along the lines of “Let me inform the maintenance department,”, or “Sorry sir. I’ll ask them to get it fixed,” or “This is not part of my duties. Please let the receptionist know and she will inform the maintenance department.” Instead, this man knew instinctively that when a hotel guest encounters any kind of difficulty, he needs to take responsibility for it – to ‘own’ it – and then begin the process of resolving it. His exact words (to me) were these: “I am sorry, sir. Within the hour I will make sure that it’s been resolved. We’ll have your room cooled and ready for you to occupy. Leave it to me. You don’t need to wait in line.”

2. Maintaining trust and offering a satisfactory solution will add to your company’s bottom line It is not for nothing that Ritz Carlton hotels empower their people (from porters to Managers) and authorize up to $2,000 per case, per employee to resolve a guest’s complaint or problem, with no questions about how the money was spent (wisely or not). It has been estimated that most people will

spend about US$100,000 on travel and accommodation in their lifetime, which puts that sum of US$2,000 in perspective. In the case of Ritz Carlton hotels, it is a tiny amount to spend to keep a guest coming back and remaining loyal to their brand and/or particular hotel. 3. A happy, loyal customer is a repeat customer My Greek porter has almost certainly never worked at the Ritz Carlton but he certainly knows a thing or two about retaining a customer and about customer loyalty. He ensured that I would remain a satisfied and loyal guest, even before my problem had been solved. How? By convincing me with his body language, eye-contact, demeanour and choice of words that my problem was actually not mine at all – it was his alone. Needless to say, my room was kept beautifully cool for the entire duration of my stay. You won’t be surprised to know that, on 5 August, I will be back at the same hotel with my family.


AT S H W IN W E N ENS H T A The project ATHENS WESTERN HILLS was conceived and implemented by the nonprofit society Dipylon, in order to collect historical and cartographic data for the Hills of the Muses, the Pnyx, and the Nymphs. The old maps of Athens preserve unique archaeological and historical information about the area, which is depicted on a single cartographic background, further enhanced with visual resources.

Built in 1930s Municipal Market of Kypseli was a place where residents could buy household products & food, have a coffee and exchange the daily news. It operated as a market until the early 1990s. In the following ten years the building was occupied and run by neighbourhood groups and hosted a series of activities for the residents. In 2012 the building was revamped with European Funding. In May 2015 the municipality launched an open call for proposals to envision the market as an economically, socially and environmentally viable “Hub�. In March 2017, the Municipality of Athens assigned the man-

agement the Municipal Market of Kypseli to Impact Hub Athens. We proposed a concept adhering to our values towards impact entrepreneurship, social innovation & social integration. For us, Municipal Market of Kypseli is a prototype to create the conditions for social cohesion, collaborative spirit and co- creation in one of the most populous, multicultural and historical areas of Athens. With the main themes of culture, education and social innovation & entrepreneurship their aim is to strengthen the local economy, offer a meeting point for the creative citizen forces of the neighbourhood and create a reference of innovation & impact economy for the Athenian public.

One of the most important operas of Verdi’s mature period returns to the Greek National Opera: Don Carlo, based on Friedrich Schiller’s play of the same title, shall be presented in its Italian five-act version (Modena, 1886) in a new production directed by the great opera director Graham Vick. It is a grandiose opera full of impressive arias, duets and compelling ensembles, but at the same time also a work with deeply human characters, who struggle to achieve a balance between their feelings and duty. Its multi-level political dimension, with the conflict between secular power and church, and, at the same time, between liberalism and absolutism, was of particular interest to Verdi, especially at a time when the modern Italian state was being formed.

The great success of the Greek National Opera’s Ballet, after the sold-out run of the previous season, returns for six more performances at Christmas time. Konstantinos Rigos, in his first choreography after assuming the directorship of the GNO Ballet, created a new reading of Swan Lake, in which excerpts from Petipa / Ivanov’s classical choreography engage in a dialogue with his own new choreography which is based on a neoclassical concept. Rigos transferred the work to the landscape of a dried lake with clear signs of environmental destruction, proposing a metaclassical reading. George Segredakis’ impressive costumes and Christos Tziogkas’ emotive lighting contribute to the creation of an otherworldly ambience. According to Konstantinos Rigos, “the production irts with the enchantment of classical dance in a modern and neoclassicaly interesting way. Heroes preserve the characteristics of the classical version, but their roles are presented as projections of the prince himself. Visitors, guided by the Museum’s archaeologists, will be given the opportunity to wander through the archaeological excavation which stretches underneath the Museum, like a giant exhibit. They will be able to walk on the ancient neighborhood’s streets, take a closer look at the houses with their courtyards and wells, enter the heart of the impressive mansions with the private baths, examine the workshops with the water reservoirs, take a magical stroll through time and the daily life of the people who lived in the shadow of the Acropolis' rock for over 4,500 years. An ancient Athenian neighbourhood is incorporated in a unique way in the Acropolis Museum architecture as yet another exhibit which converses with the masterpieces of the ancient Greek civilization presented in its galleries. Nesting on the gentle south slope of the rock, it houses life and human activities from the 4th millennium BC until the 12th cent. AD. Streets, residences, baths, workshops and tombs compose the complex image of archaeological remains. Amongst them those of late antiquity are the best preserved. Today the visitor can only see part of what was brought to light by the excavations in the "Makrygianni plot", as the area surrounding the Museum is named. Part of this excavation has been covered with a contemporary layer of earth to preserve it, while another was removed to make way for the underground levels of the Museum and the Metro Station "Acropoli".
