Dr. Charles Town, DDS, of Stonehaven Dental & Orthodontics created a contest for one lucky winner to win a $40,000 makeover. The winner would receive a complete customized Hollywood smile. The package also included hair extensions, hair color, weight loss treatment, lash extensions, micro blading, Botox, massage, Manicure and Pedicure, 2 outfits, full face Glam Makeup, 1 hour photo session and a month of kickboxing exercise. Cindy Wilkins Humphreys was the lucky winner of the $40,000 contest! She was overwhelmed, excited and couldn’t believe she was the lucky winner! It literally changed her life! Cindy had recently experienced a few years of hardship when she stumbled across the advertisement for the $40,000 Makeover Contest, of which she promptly entered. When Cindy received the call that she had won, she exclaimed “It’s like I won the lottery, and it’s all for me!” On Cindy’s first visit, she and Dr. Town discussed what she wanted to have fixed as well as what needed to be fixed. It proved to be more than what the contest originally offered, but Dr. Town decided to do the works!

Local Wins $40,000 Makeover

Cindy required several procedures to help improve her smile. She had short teeth, her bottom teeth had formed a gap in the middle and her top front teeth had grounded down from her bad habit of vaping (which she no longer does). And believe it or not, Cindy still had her wisdom teeth. Dr. Town pulled her wisdom teeth, put braces on, and added veneers to her top and bottom teeth to lengthen them. Cindy used to squint when she smiled, and now Cindy can smile without squinting. You could say she has a customized Hollywood smile! Cindy also received a Sonicare tooth brush and a Crest Spin Brush that hooks up to her phone by Bluetooth, which lets her know how well she is brushing her teeth.

Niña and Nick built their dream home over four years ago in Iowa. With no design experience, Niña’s main goal was to create a home with a coastal farmhouse style. She wanted the home to be bright with soft colors and a touch of rustic. She used to be a professional photographer, so natural light pouring into the house was important to her. Check out that wall of windows in the living room! Remember that it takes time to make your house a home. It took Niña over a year to design the living room how she wanted it, and even longer for the other rooms in the house. When decorating, she incorporated a light and airy feel throughout the house. She loves styling with neutrals and adding hints of color. Her favorite area to decorate for the season or holiday is the front porch.

AT HOME Niña has always said that the kitchen is the heart of the home, and her favorite room in the whole house is the kitchen. When friends or family are over, that’s where everyone usually gathers. The 12-foot island is great for entertaining. It’s used as the buffet station when family is over and an area to sit down and talk with friends. Niña wanted to have those rustic touches in the kitchen, so they added barn beams around the opening from the kitchen to the living room. She also added the wood piece on the kitchen hood. The kitchen hood is thin brick and covered with white mortar. Light fixtures can make a statement in a house, and for her kitchen she selected these big brass pendants. They also went with porcelain countertops for the kitchen and walk-in pantry. Niña and her husband love the marble look, but were too worried to have marble since they have 4 kids. When they saw porcelain countertops in a home show house, they knew they wanted that in their house.

When Niña and Nick built this house, they thought it would be their forever home. They quickly learned that you should never say "forever home", because they actually sold this house last year to a wonderful family. They are going through the building process again and currently building another coastal farmhouse style home on 40 acres in Iowa, where they fell in love with the location. The new house has a different layout than their previous home. It is a 2 story house instead of a 1.5 story. They have a four season room, kids’ loft upstairs, an office for Niña, an office above the garage for Nick, breezeway, pool room, and a formal dining room. HERE’S WHAT YOU’LL NEED: • Wood or medium density fiberboard (MDF) strips in the width you want for the batten • Backer board to make walls smooth (if your walls have texture)

t’s all here–what to do, and what not to do for the most professional-looking board and batten wall. Board and batten application means putting wood or medium density fiberboard (MDF) strips on your wall in a pattern or design. I love it because it is an affordable way (around $150) to give a space character, add a focal point, and elevate your space. Another option is to use a $99 paint sprayer, which makes the finish so smooth! I also used tape with plastic attached to make painting prep easier.

I wanted a thinner look for my batten so I chose a 1×2 finger joint pine (see image on next page). Other options are to get just normal or select pine boards, or MDF boards. Here's a helpful tip: before purchasing boards, always hold them to your eye and look down them to make sure they are straight. For my backer board (only if you have textured walls and want a smooth look) I purchased a 4×8 sheet of the Eucaboard at Home Depot. It is dark brown and one side is super smooth. You could also get a thin plywood, but this was cheapest. MODERN TEXAS LIVING | 15

STEP 1: Before purchasing anything, you need to draw out your wall and measure where all of your batten trim boards will go. This is very important because in the end you will want to have your backer boards seams all covered by the trim pieces. A few things to consider when drawing out your wall: • Don’t forget a trim piece will need to be placed on the very left, right, top and bottom of your wall to frame out the space, if you’d like. • Remember the real dimensions of a 1x2in board is actually 3/4 x 1.5 in, a 1×3 is 3/4 x 2.5 in, etc. • Keep spacing between trim batten boards the same. • Helpful tip: This website can help you calculate where your boards should go! Once you’ve drawn out your trim batten pieces, you will then know if you need to have the backer board cut down slightly so all the seams are covered. Or, you could just plan your space already knowing that you want your trim batten pieces to fit with the 48 in width backer board. 16 | moderntexasliving.com

STEP 2: Now you can go and buy your materials! Have your hardware store cut the large backer board, but leave the trim pieces for home with your saw because you will want them to be exact (and every space is slightly different). If you have smooth walls, skip to step 5. STEP 3: Cut the window and outlet holes on your backer board. I measured where the cuts should be, drew it on my board, and then used a circular saw to cut the window holes. For the outlet holes, drill a hole with a drill bit into the corner and then use your jigsaw to cut it out (you can also use your jigsaw for the window too). STEP 4: Put liquid nails on the backer board, place on the wall, and nail on the outside edges (so that nails will be hidden by the batten trim pieces).

STEP 5: Now it’s time to add the trim batten pieces! Start with the whole wall framing trim pieces on the very top, then the bottom, then left and right. Make sure they are level, and attach with liquid nails and finishing nails. Next you will do your vertical batten trim pieces. I found it easiest to get even spacing by measuring and marking on the top trim pieces where our vertical boards should go. You also can cut a board to your desired spacing, and use it as a spacer between vertical boards to get even spacing. Helpful tip: if you are doing this by yourself, put one nail in the middle, make sure it’s level, and then nail up and down the board. Another helpful tip: only cut one board at a time to get the cut exact. The spacing will all be slightly different since ceilings and floors are not perfectly level. Next, you add the horizontal batten trim pieces. Mark on the wall where they should go, and make sure they are level. Occasionally, measure from the BENJAMIN MOORE floor and step back to make sure it’s NEWBURG GREEN not gradually creeping up or down. Cut See attachment these one at a time to get as close of a for color splash fit as possible. (A laser level would be very helpful here, but I didn’t have one!) STEP 6: Fill all nail holes with wood filler, sand smooth, and caulk all edges and seems. This is the step that makes all the difference! If you want your space to look professional, don’t skip this step. To caulk seams, run a small bead of caulk where the trim pieces meet the wall.

STEP 7: Tape off walls in preparation for painting. STEP 8: You’re ready for painting! You can definitely roller the wall, but I wanted the smoothest finish possible, so I used a paint sprayer. The wall turned out so smooth, and I was very happy with the sprayer. With a smooth wall it very easily shows imperfections, so the sprayer solved all of my problems and gave me a professional look. (The sprayer I used doesn’t need to be watered down and has very little overspray. I just grabbed a bunch of cheap plastic drop cloths to cover nearby furniture, and put up my tape/plastic around the edges of my accent wall.) *priming first is always a good idea! I used Benjamin Moore Newburg Green.

HOW TO: 1. Cut word of choice out of sticker paper - I chose "cozy." 2. Peel back paper and stick on mat. 3. Use a sponge to create an outline around the letters. I chose to do this in white so it would really stand out. 4. Peel the sticker paper letters from the mat. 5. Cut sponges into desired shapes. I did 3 similar leaf shapes to use with 3 different shades of green. 6. Layer the leaves until desired look, then add in groups of dots for berries! (the berries would also be so cute in red for a more festive look).

t had been a rough day. My heart was heavy and my mind was racing, so I reached out to a dear friend to ask her for some words of encouragement. She hadn’t responded to my text quite yet so I tried to distract myself with house work. Cleaning the dishes seemed like a good enough task, so I stood there and scrubbed. Just a few moments later the notification on my phone went off with it’s familiar sound. I dried my hands to open the text to see her simple and powerful response, “the daughter of a lion, is a lion.” I said it out loud as I lowered my hands back in the sudsy water. I said it again slower. I said it over and over as I stared at the wall of subway tile in front of me. I didn’t want to forget those powerful words that encouraged me to remember who I was in my faith. I stared at that wall trying to mentally burn the adage in my mind and then it hit me. Write it down, I thought! Write it right there in front of you so you don’t ever forget it. I ran to my office and found a dry erase marker. With soapy water running down my arms, I wrote in big black letters, “The daughter of a lion is a lion.” There, I thought. Now I won’t forget! Over the course of the next several months I would write even more on my backsplash with a dry erase marker. I would write scriptures, quotes and words of affirmation. All of these are still up there today, edifying me and my family every time we see them. Plus, it’s a much better view than the blank tile when you’re washing dishes. If you’d like to do this on your own backsplash just make sure of a few things:

Use a dry erase marker to ensure what you write can be erased. You can test this on a small part of your backsplash to be sure. This will not work on porous stones. In my experience it works best on glass and ceramics. The slicker the surface, the better. Don’t let any ink come into contact with the grout lines. The marker should easily wipe off of tile, but it will not come off your grout.

One Day at a Time

There is beauty in chasing slow, in going back to the basics, in eating farm to table when you can, and in giving your children a childhood with more time spent in nature than anywhere else. These are just a few of the things my husband and I told ourselves as we leaped into owning backyard chickens and creating this outdoor garden space of our dreams. My husband and I didn’t grow up with chickens or a garden, but we decided to take a leap into the unknown and provide these experiences for our children. We’ve gained so much wisdom as a family by branching into the unknown. We are always learning and always growing in this space, and it continuously makes us pause and appreciate our surroundings so much more than we otherwise would. Time slows down every time we step into this space, and every moment spent here leaves us more in awe of nature, our creator, and the beauty of life that is all around us. I’ll never forget seeing my children’s faces – or my husband’s face – when our hens started laying eggs. I’ll never forget their faces when our baby chicks hatched for the first time. It pays to invest in some quality pieces that you can wear over and over. You can decide the budget for your pieces. It’s doesn’t have to cost hundreds or thousands of dollars.

THE OVERSIZED COAT

THE TURTLENECK SWEATER You can look so chic with just a turtleneck sweater, skinny jeans, and heels. Use it as a layering piece (ex. under a blazer or dress) or wear it on its own. If it’s a great neutral, then you’ll be able to wear it for many years. I’ve have worn this turtleneck for at least seven years that I can remember.

THE DENIM SKIRT Denim skirts made their first debut in the 1970s as a way to recycle jeans. These are a feminine answer to jeans and can easily change the look of an outfit. The fabulous thing about a denim skirt is that it can be worn ALL SEASONS!! Just pick a length that works for you!

Oversized coats are wonderful because they keep you warm and cozy but can also look very sophisticated if worn correctly. If you have one in a lighter neutral color, then it will serve you well during colder Spring mornings. The trick to wearing oversized coats is to make sure your silhouette or what’s showing is slim and NOT big/boxy/oversized. Taller women can probably get away with bigger and boxy skirts, etc. but it doesn’t seem to work for me.

THE LIGHTER COLORED SPRING BOOTS Switch out your darker boots for lighter colors (like grey, taupe, beige, and even white) during the Spring. They still keep you warm but work with a lighter color palette. I’m wearing over-the-knee boots with a mini skirt. You can do the same with knee-high boots or booties. The trick is to make sure some skin is showing so that the skirt isn’t covering the top of the boots. Your skin can be covered with tights. There just needs to be a clean break so you don’t have bootlegs. MODERN TEXAS LIVING | 55

GET A STAND OUT LOOK

“I just want to know how to make my eyes pop.” I hear this over and over from women of all ages. The truth is eye shadow does make your eyes pop, but it takes a little more effort than that to get to the end goal.

For something simple and easy, choose neutral shades that match the natural tones in your eye lid. A lot of times these shades will be taupes, light grey’s, or even mauve depending on the skin tone. Pick two to three shadows for an easy classic eye.

ALL OVER COLOR The lightest shade should be in the ivory/bone range which you can wear all over for a fresh natural look with mascara, or you can use it to highlight your brow bone.

BROW BONE add your lightest shade

THE CREASE The medium shade should go into your crease, lightly blend in with a minimal amount of shadow. You don’t need a lot, as you are working on such a small surface area. Blend a little of the same shade underneath the eye too, to give a little shadow and denition without it being too harsh. From there you can load up on mascara and call it a day.

EXTRA If you want a little more drama add some liner to your top lash line. Always choose a shade darker than your eye color to really make them pop!

CREASE blend in a neutral shade

TOP LASH LINE grab a darker liner and apply to top lash line. I like to wing it a tad at the end.

Eggnog French Toast with Buttered-Maple Bourbon Syrup By Amie MacGregor @food.duchess

INGREDIENTS Buttered Maple Bourbon Syrup • 1 ½ cups Maple Syrup • 1/3 cup Unsalted Butter, at room temperature • 1 Tbsp Bourbon Eggnog French Toast • 10 slices of Thick Stale White Bread • 6 Eggs • 1 ½ cups Eggnog • 1/4 cup Sugar • 1 Tbsp Bourbon • 2 tsp Vanilla Extract • 1/2 tsp Nutmeg • 1/4 tsp Cinnamon • Pinch of Salt

INSTRUCTIONS Buttered Maple Bourbon Syrup 1. Add maple syrup and butter to a medium saucepan over medium heat. Bring the mixture to a simmer, allowing all the butter to melt, then turn the heat off and add the bourbon. Allow to cool slightly before using. Eggnog French Toast 1. (Optional, if baking after). Preheat oven to 375°F. 2. In a bowl, whisk egg until well beaten. Using a sieve, strain eggs to remove any large chunks. Then add remaining ingredients to the eggs, whisk until well combined. Transfer custard to a large baking dish (around (9"x13") for soaking the pieces. 3. Prepare a baking sheet by placing a wire cooling rack over top. Place bread slices into custard batter, soak for 30-40 seconds per side. Place soaked bread slices onto the wire rack that is over top of a baking sheet. Allow bread to rest on racks for around 5 minutes, while you preheat your pan. 4. Preheat a large frying pan. When hot, add ½ Tbsp of butter and ½ Tbsp of oil. When butter has melted and bubbles have dissipated, add bread slices (do not overcrowd the pan). Cook about 3 minutes per side, or until golden brown. Serve hot with Buttered Maple Bourbon Syrup. 5. (Optional) Place bread back onto rack after cooking. When all slices have been fried, put the rack directly into the oven, and bake for 5 minutes.

Creamy Maple Mustard Chicken Breasts INGREDIENTS • 4 Boneless Skinless Chicken Breasts • Salt & Pepper, for seasoning chicken • 2 Tbsp Olive Oil, divided • 1 Small Yellow Onion, diced small • 1 Large Shallot, diced small • 2 tsp Finely Chopped Fresh Rosemary • 1 Tbsp Flour • ½ cup Dry White Wine, such as Sauvignon Blanc • 1 cup Half & Half • ½ cup Heavy Cream • 2 Tbsp Quality Grainy Mustard • 2 Tbsp Dijon Mustard • 1 Tbsp Maple Syrup • Dash of Cayenne • Salt & Pepper, to taste 74 | moderntexasliving.com

INSTRUCTIONS 1. Preheat oven to 400°F. Pat chicken breasts dry and then season with salt and pepper. 2. In a large pan over medium heat, heat 1 Tbsp of the olive oil until it begins to shimmer, then add chicken. Brown the chicken on each side for about 3-4 minutes, then transfer to a baking sheet and place into the oven for 15-20 minutes, or until cooked through. 3. Meanwhile, add the other 1 Tbsp of olive oil to the pan that the chicken was browned in. When the oil is hot, add the onion, shallots, and rosemary. Use the onions to deglaze the pan, scraping at the browned bits. Fry until the onions are almost cooked through, about 7-8 minutes. 4. Add flour to the pan and stir to coat the onions with the flour. Add white wine and cook for 2-3 minutes, or until the wine has reduced by about half. Then add the half & half, heavy cream, grainy mustard, dijon mustard, maple syrup, and cayenne. Stir to combine. Bring the sauce to a bubble and cook until the sauce has thickened nicely. Season with salt and pepper, and then spoon over the cooked chicken breasts to serve.

Cheesy Horseradish Mashed Potatoes INGREDIENTS • 4 Russet Potatoes • A handful of salt • 2 Bay Leaves • 2 cups Half & Half Cream • 10-12 Sprigs of Fresh Thyme • 6 Tbsp Unsalted Butter • 1/3 cup Full-Fat Sour Cream • 4 tsp Prepared Horseradish • 1 Block Bothwell Horseradish Cheddar, shredded & divided • 1/2 cup Shredded White Aged Cheddar, divided • Salt & Pepper, to taste

INSTRUCTIONS 1. In a small sauce pan over medium heat add cream and fresh thyme. Allow to simmer for about 15-20 minutes, or until it has reduced by half. Ensure you stir frequently to ensure it does not boil over. When reduced strain the thyme out with a fine mesh strainer. 2. Meanwhile, Place potato pieces and bay leaves into a large pot, and cover with enough water so that the water is 1 inch over the potatoes. Add enough salt to the water so that the water is similar to seawater. Place over medium-high heat and cook until potatoes are fork-tender. 3. Preheat oven to 425°. Drain potatoes with a colander, and discard the bay leaves. Using a potato ricer or a masher, mash the potatoes back into the empty pot. Add butter, infused cream, sour cream, horseradish, ½ of the Bothwell Horseradish Cheese, and ½ of the aged white cheddar to the pot, and mix well until completely combined (using a hand-mixer makes very easy work of this!). Season with salt and pepper, and place into a baking dish. Sprinkle the top with the remaining cheese and place into the oven for 15-20 minutes, or until the cheese is bubbling and beginning to brown. MODERN TEXAS LIVING | 75

Add butter, cream, and cream cheese to the pot, and mix well until completely combined (using a hand-mixer makes very easy work of this!). Season with salt and pepper, and serve! 3. (Optional) If you do not have a potato ricer, pull the cooked whole garlic cloves out before mashing, and either use a garlic press to crush them into the mashed potatoes, or add the cloves to the cream and blend in a blender or food processor. Prosciutto-Wrapped Asparagus INGREDIENTS • 1 bunch Asparagus, bottom 1/3 removed • 8-12 slices Prosciutto, sliced vertically to be ≈ 1 ½” wide and 6” long • Salt & Pepper, to taste • A Squeeze of Lemon Juice (Optional) • Parmigiano Reggiano, finely grated (Optional)

INSTRUCTIONS 1. Preheat the oven to 400°F. 2. (Optional) To make the asparagus bright green, create an ice bath using a container, skillet, bowl, or anything large enough to fit the asparagus, by filling with ice and water. Fill a large skillet halfway with salted water, bring to a boil. Add asparagus and boil for exactly 1 minute, then remove asparagus and immediately transfer them to the ice bath to stop the cooking process. Remove the asparagus from the ice bath, and dry with a clean towel. 3. Wrap the asparagus by taking one asparagus with one of the 1 ½” slices of prosciutto. Create a sort of triangle shape with them, with the prosciutto beginning just after the head of the asparagus. There should be about a 45° angle in between the asparagus and the prosciutto. Begin rolling, ensuring that you are keeping the prosciutto tight around the asparagus. Repeat with all of the stalks, then season the assembled stalks lightly with salt and pepper. 4. Place assembled asparagus onto a baking sheet, and bake for 12-16 minutes, depending on asparagus size. When cooked, the asparagus should be tender, but not stringy or mushy, and the heads should look slightly crispy. Top with freshly squeezed lemon juice and parmigiano or enjoy as is.

Rustic Spiced Pear Galette INGREDIENTS Pie Crust • 2 cups All Purpose Flour, measured correctly † • 4 Tbsp White Sugar • Pinch of Salt • 1 cup Unsalted Butter, cubed and very cold • 4 Tbsp Ice Cold Water, plus more if needed • 4 Tbsp Cold Vodka Spiced Pear Filling • 2 Tbsp Apple Butter • 3-4 Pears, cores removed, sliced into 1/8” slices • 3 Tbsp White Sugar • 2 tsp Cinnamon • 1 tsp Ginger • 1/4 tsp Allspice • 4 Tbsp Cold Butter, cut into small cubes • 1 Egg + 1 tsp Water, for Egg Wash • Turbinado Sugar, for sprinkling on crust (optional)

INSTRUCTIONS Making the Rustic Pear Pear Galette Pie Dough 1. Mix together vodka and water into a small measuring cup, then set aside. In a large mixing bowl, add flour, sugar, and salt. Whisk to combine. Add in cold butter cubes, and work the butter into flour with your hands or a pastry cutter. Work the butter until it is crumbly and about the size of peas. 2. Slowly drizzle in vodka-water while simultaneously tossing with a fork to combine. After all the vodkawater has been added, knead the dough a few times inside the bowl until a shaggy dough forms. If the dough doesn’t come together, slowly add more water until a shaggy dough forms. 3. Form dough, as best as you can, into a disk shape, then place into a freezer bag, then into the fridge for an hour to chill. 4. Remove dough from fridge and place onto counter for 5 minute to warm-up a bit. Remove the dough from the freezer bag and place onto a well-floured work surface. 5. Roll dough out to be about 1/4” thick, and about 13-14” in diameter, aiming for a general circle shape (however it does not need to be perfect). Place rolled out dough onto a parchment-lined baking sheet. Filling & Baking the Rustic Spiced Pear Galette 1. Preheat oven to 375°F. In a small bowl, combine sugar, cinnamon, ginger, and allspice. Set aside. 2. Spread a layer of apple butter along with bottom of the galette dough, leaving a 2-3” border around the edges. Then place the slices of pears in a single, even, and relatively compact layer on top of the apple butter. Sprinkle the pears with the sugar mixture, then top intermittently with the cubed cold butter. 3. Gently fold the bare edge of the dough over the filling, overlapping the dough as necessary. Press gently to seal the edges. 4. In a small dish, whisk together the egg and water until frothy and combined. Brush this egg wash across the edges of the galette, then sprinkle with turbinado sugar. 5. Place the Rustic Spiced Pear Galette into the oven, bake for 35 minutes. Serve warm with vanilla ice cream. RECIPE NOTES † to measure flour correctly, use a spoon to scoop the flour into the measuring cup, then level off with a straight edge. Do not pack the flour into the cup, or scoop with the measuring cup straight from the bag/ container. Alternatively, weigh the flour (1 cup = 120g or 4oz)

Americans throw out $218 billion of food annually. Not only are we throwing away food, but money as well. So I try to make every effort to keep the food waste in my house to a minimum, something I think we can all look at in our own homes and try to be mindful of as we go about our lives.

MAKE A PLAN

SHOP MORE FREQUENTLY Instead of making one big grocery trip, make a couple of smaller ones throughout the week. Despite our best intentions, plans can change and you may end up eating out or eating leftovers one night instead of cooking. If you only shop for the next few days at once, you are more likely to buy only what you need, knowing you’re coming back to the store in a few days.

STORE YOUR FOOD STRATEGICALLY

Reducing food waste starts before you go to the grocery store. Take a look in your refrigerator before you go shopping to evaluate what perishables you have that need to be used. Plan your meals and snacks for the week around what you already have and what will be going bad soon. Then make a list and stick to it. Buy only what you need until your next shopping trip to avoid buying too much food that might not get eaten before it spoils.

Try to place things that spoil more quickly where you can see them so you don’t forget they are there. Try placing fruit or cut-up vegetables in see-through containers at eye level. Also, make sure you keep your refrigerator clean and uncluttered so that food doesn’t get pushed to the back to spoil. Over-stuffed fridges and freezers run less efficiently, costing you money and circulating cool air poorly.

ONLY BUY WHAT YOU KNOW YOU WILL EAT

EMBRACE THE UGLY

Shopping in bulk can be a great way to save money, but it’s not a good deal if you end up throwing it away. Make sure your family will eat what you buy before it goes bad. We like to vacuum seal meat, poultry, and fish and freeze it if there is a good deal on bigger packages. The same goes for fresh fruit and vegetables. Even if they are on special, resist the urge to buy too much that could end up spoiling.

Sadly, produce that doesn’t look pristine often doesn’t get sold from grocery store shelves despite being perfectly edible. Make an effort to buy the awkward shaped fruits and veggies so that they don’t get tossed out. And don’t ignore the less than perfect produce in your fridge. A small bruise can easily be cut away so that you can enjoy the rest.

USE THE SCRAPS Have you ever thought about why you cut out the kale stalks or peel your carrots? You really don’t have to. Even if you do cut away things like broccoli stalks, you can use them, along with things like beet or radish greens, in salads, soups or stir-fries. Greens like carrot tops can also be used in pesto. Finally, plenty of other scraps, like onion, carrot, and celery ends, herb stalks, parmesan rinds, and chicken carcasses can be used to make homemade broth. MODERN TEXAS LIVING | 83

BECOME AN INFORMED EATER. Nutrition is

I like My Fitness Pal, which is an app on your phone and is very user friendly. It can help manage your daily and weekly calories by knowing how your food adds up. In general, our perceived intake is very different than our actual intake.

BUILD AND SUSTAIN YOUR MUSCLE MASS.

Muscle protects our bones and helps prevent breaks and falls as we age. Muscle also speeds up our metabolism. Two ways to build muscle mass are: eating an adequate amount of protein, and resistance training. I encourage you to eat 75% of your total body weight. To lose body fat, try eating your body weight in protein (until you reach your goal), and resistance training. We must challenge our muscles to build them. I recommend resistance training 3 times a week.

MOVE YOUR BODY DAILY. Yes, daily! Moving

your body is the easiest way to move stress out of your nervous system. The simple habit of walking outside daily has enormous amounts of mental and physical benefits like releasing feel-good chemicals in your body called endorphins, giving you healthy doses of Vitamin D, and inspiring creativity.

SLEEP. Create healthy evening routines that allow you

to get at least 7 hours of sleep. Keeping a consistent bedtime is helpful so that your body can stay in a sleep rhythm. Remember to put those screens away as early as possible. If you must be on a screen before bedtime, purchase some blue light blocking glasses.

PRACTICE MINDFULNESS. We can be healthy in

our bodies, yet sick in our hearts and minds. Pay attention to what you are feeling. Tune into your body sensations when you are in place of fear, worry, judgement, or doubt. Then explore different ways to restore yourself to a place of commitment, faith, trust, forgiveness and personal responsibility. I have a playlist that helps restore me. s this our new normal? Covid-19 has brought many changes to our lives. While there are positions and careers that allow for us to work from home, it’s

not what it used to be. Working from home means different things to different people. For moms, it’s a juggling act between keeping the routine of the household, making sure you are present and attending to your work life - all at the same time. We have all experienced the updates, information, and changes Covid-19 continues to bring, and with that it has created a sensory overload. It’s like when your infant is on the play mat looking all around at the colors, textures, and mirror, and then vomits. For the working mom, there are mixed emotions. We are grateful to have our job, but the pressure of getting our littles in a routine, logging into their Zoom meetings, answering their questions, and keeping them engaged, all while working simultaneously, has brought many of us to a breaking point. But what gives? Many schools are still utilizing e-learning, and in some cases we as parents feel like that is the safest option for our family. Luckily, we have amazing schools and administrators who have dedicated this time to learn and create an environment that works as best as it can for both the schools and parents. It all helps. At the end of the day, the saying, “do what’s best for your family” has never rung truer. Everyone’s circumstances and situations are different. We have all had to reflect, really consider what is important to us, and focus on the “now”. Here are some ideas to consider during these wild times.

DO WHAT YOU CAN As a working mom, routine and schedules are critical to a successful day. With Covid-19 our routines feel as if they are in a tornado that changes each hour. Understanding that things are going to be interrupted and the day might not go as planned is essential. Having the flexibility to pivot when needed is important. Plan as best you can and then get ready to roll with the punches.

GET OUTSIDE Fresh air has never felt so good! Take your work outside and let the kids run off some energy. Or enjoy your lunch break and let the emails pile high. Go play outside with your kids and leave the chaos of the day behind, even if it’s just for 15 minutes.

BE SELECTIVE Consider what needs be communicated by an email or message versus what needs to be a meeting or phone call. If you can have some say in those things, do it! Being home with kids, regardless of the age, is usually loud. To avoid added stress on yourself, plan the time as best you can, and be selective with the things you fill your day with. Consider planning activities for when your spouse can help and/or plan certain jobs/activities that are better suited for one another.

LAUGH Because if you don’t, you’ll likely cry- which is okay too! Find the joy in the day and take time to laugh about things that are happening. There are plenty of great memes and social posts to keep us all laughing for a while. We are all figuring this out for the first time and doing the best we can. Show grace to others and yourself. Most importantly, stay safe and know that you are not in this alone.

Meet Crissie Richardson I have been married to my husband retired Maj. Robert Richardson for 21 years. We spent 18 of those years in the U.S. Army. We have three dogs Sadie Mae, Diesel, and Leia. I was raised in Breckenridge, TX and attended college at Texas A&M University. We have lived in this area since 2003. Robert retired from the Army in 2016, just after we opened Premier Temple. We moved to Salado soon after that.

PROFESSION: I hold a Bachelor of Science in Nursing from University of Mary-Hardin Baylor, as well as a BBA and MS in Marketing from Texas A&M University. My nursing career began as a nurse intern in the Emergency Department at Scott and White. I worked there until 2016 when I joined the Premier team. At Premier, I helped to open the Temple facility as Nurse Manager. A short time later, my responsibilities expanded to include serving as Regional Nurse Manager for three of our Premier facilities. I am an active member of the Emergency Nurses Association with a passion for advocating for emergency nurses throughout the state. WHAT MADE YOU WANT TO GO INTO THAT FIELD? Initially, being a nurse was not the career path I had ever considered. Then I married a military man and realized I needed a job that I could do wherever we went, so I chose nursing. I moved to Belton while he went to Korea for a year, and graduated from UMHB in December of 2005. I started in the ED as a nurse intern. There were some REALLY tough days, but I don’t regret it for a second. I love being a nurse and advocating for other nurses. WHAT DOES A TYPICAL DAY LOOK LIKE? I round with staff, see if there are any needs I can assist my team with, have our daily OHANA (review of our past 24 hours and any issues/concerns/updates for the next 24 hours to make our team aware of), followed by catching up with emails. There is also lots of brainstorming and collaborating with others via many different modalities to continually improve our patient care processes.

WHAT IS YOUR BIGGEST MOTIVATOR? Making my family proud and working hard now so that I can play later. WHAT'S THE MOST REWARDING PART ABOUT YOUR JOB? The most rewarding part of my job is providing our nurses and other staff members with the training and tools they need to provide our community with the best possible care that we can give. HOBBIES: I love to read, hang out on the back porch with my pups, bake with my niece (it's not always pretty to look at, but it tastes good!), and I also like to travel. OH! And football— Cowboys and Aggies! FAVORITE HOT SPOTS AROUND TOWN: In Waco, my favorite restaurants are La Fiesta and Baris. For Temple, my favorite restaurants are Millers BBQ and MeeMee’s Thai food. I also enjoy spending time hanging out with friends and family at Barrow Brewing Co. in Salado. FAVORITE ACTIVITY AROUND TOWN: One of my favorite events to attend is the Temple Community Clinic’s annual Caring Ball. AWARDS/ACHIEVEMENTS/BOARDS YOU ARE ON: I am the president-elect for the Texas Emergency Nurses Association, which represents ~5000 emergency nurses in the state of Texas. Our local chapter recently won the Team award from the National Emergency Nurses Association for our efforts to bring the Stop the Bleed Program to local schools. MODERN TEXAS LIVING | 91

Some of the greatest lessons I've learned from teachers have come in 2020. I've always had an appreciation for educators, but never before like I do now. When the first bell rang this fall with the lurking threat of COVID-19, some students returned to campus. Others, like my three kids, stayed home to learn virtually. I'm in an unusual high-risk category right now because of a drug I take for a pre-existing condition. Without teachers being the rock stars they are, my family's health would be at greater risk. And some teachers are doing both. The gratitude we feel as a family for teachers is deep and personal.
