Bearathon

Get active while supporting Baylor students at the Bearathon. The Bearathon half marathon and the Sic ‘Em 6K are scheduled for March 29. Both races will start and finish at McLane Stadium. A portion of each registration fee will support the Baylor Student Foundation Scholarship Fund, aiding students in their pursuit of a degree at Baylor University.
A Baylor Beginning
Meagan and Ty Beard are the parents of Truett, age eight, and Turner, age four. They also have big ties to Baylor sports—Ty is a member of the Baylor Bears basketball coaching staff and Meagan is the daughter of John Morris, the signature “Voice of the Bears!” This basketball-loving brood’s story began here in Waco, and after briefly leaving Texas to build Ty’s career, they happily returned in 2017 making Twin Rivers their home.
As you might expect, the Beards met while working for Baylor Men’s basketball—Meagan working in the office and Ty serving as a graduate assistant with the team. After a few years of simply functioning as colleagues, they started dating and the rest is history!
Meagan and Ty tied the knot in Waco just before moving to Oklahoma, where Ty got his first coaching gig. Then, the couple moved on to Arkansas, where they had their oldest son. Following three seasons at John Brown University, Ty got the call to join the Baylor Men’s Basketball coaching staff once again, and needless to say, the couple was thrilled!
“Waco is such a nostalgic place for me. I’ve had so many different seasons of my life here from being a kid to going to college to now raising a family. This city has the best of everything and there’s so many good and friendly people here,” Meagan shared.
Building a Life in Waco
Fast forward eight seasons and Ty is now the Director of Basketball Operations, having helped the Baylor men’s basketball team achieve two Big 12 titles and the 2021 National Championship. During
this time, he and Meagan also had their second son, and unsurprisingly, you can now find this foursome at Baylor’s many athletic events.
“We’re big Baylor people and we love going to Baylor sporting events. It’s so nice being in a town, like Baylor, that really caters to families and kids, which is just amazing for us,” the Waco native stated.
And when they’re not busy cheering on the Bears, you can find the Beards at Highland Baptist Church. “We’re involved in a Sunday school that meets on Sunday mornings and it’s where we’ve met a lot of our close friends who are in similar stages of life.” Meagan also spends her free time during the week instructing a weekly kid’s foundation class at Highland, allowing her to continue using her teaching education and experience.
She also works as an Editorial Coordinator for Modern Texas Living Magazine, which means that many of the home tours, seasonal style pieces, and delicious recipes that are featured in this magazine are curated by her!
Looking to the Future
And looking towards the future, the Beards hope to continue living in Waco and enjoying this fun season of life with their boys! “Waco is a really good city and area for raising kids and there’s a lot of fun things to do for families. We love living near family and in Twin Rivers. There’s a neighborhood pool, a pond, several friends live nearby, and we feel very safe. We’re just very thankful for each year we are here in Waco.”

Alexis Wampler is an entrepreneur, designer, and architect of breathtaking balloon art. After starting a promising nursing degree, she quickly realized that healthcare was not her path and decided to lift people’s spirits in a very different way. This led to the creation of Waco Balloon
Co.—a party business that focuses on crafting custom balloon centerpieces and arrangements for birthday parties, baby showers, parades, and community, college, and corporate events.
“Waco is such a wonderful place. I was born and raised here and I’ve seen so many small businesses evolve and so many people not only pursuing, but achieving
their goals. It was my inspiration. I put all my eggs in one basket and bet on myself.” Once she determined Waco’s need for this type of niche artistic endeavor, she hit the ground running, spending two years researching, learning, and cultivating her business. She has since found soaring success, opening her own storefront and becoming the go-to balloon lady of Waco.
“I love that our business brings comfort, joy, excitement, and celebration all in one. Seeing what I have created gets me going everyday.” Alexis attributes a lot of her success to her dad, who is always willing to promote her business and help at her events. She aspires to soon have a full team of balloon artists to expand her services even more throughout the region. I love that our business brings comfort, joy, excitement and celebration all in one.”
While you may not recognize his name, if you’ve driven around town you’ve likely seen his incredible work. Cade Kegerreis is the mind and artist behind the magnificent murals that can be found all across the city. From the larger than life player portraits that wrap around the Texas Sports Hall of Fame to the iconic Frida Kahlo painting on the side of Lalo’s Coffee and Pastries, his remarkably realistic masterpieces are sure to stop you in your tracks.
Cade has always had a talent for drawing and painting, receiving his first major accolade in his sophomore year of high school. He entered Waco’s Top Young Artist competition and ended up winning the top spot along with the People’s Choice Award. This lit a fire in his belly to pursue a Studio Art degree. “I attribute a lot of my success in portraiture to my education at Baylor. Being forced to start from scratch and build those foundations really helped to challenge me and allowed me to grow as an artist.”

In total, you can find around 25 of Cade’s vibrant murals throughout McLennan County and even more across other parts of the state and the nation, including major metroplexes like Austin, Dallas, Nashville, and even Maui. Cade has no plans to stop painting these large-scale projects, but when looking towards the future, he hopes to commission more small-scale art pieces to allow people to enjoy his work in their homes and businesses.
JP is living proof that people can better their lives and find happiness in the most unsuspecting of places. Before his spiritual story began, he landed a high paying job in Dallas right out of college and spent his days living a luxurious, but less than purposeful life, focused on climbing the corporate ladder and partying with friends.
One night at a club, someone invited him to church. He showed up the next day hungover, smelling of the night before. It was at this moment that he started to question everything he believed in. This inspired him to study world religions, which drastically altered his bias against christianity.
“God took my mess, made it my message, and turned it into my ministry. When I trusted in the death and the resurrection of Jesus Christ for the forgiveness of my sins, everything in my life changed.” He ended up getting discipled and becoming a pastor at that very same church. Soon after, he married his wife Monica and they welcomed their first daughter.
But the transition to pastor and father was not easy. “It’s not like once you become a pastor, you’re guaranteed this happy marriage. We had a baby who didn’t sleep, I had a new job, we experienced financial strain, and we needed to move. It was the hardest year of our marriage, but God showed up. All of our needs were met. Everything in that season of our life was
building my faith.”
Fast forward almost 20 years later, and Monica and JP are now the proud parents of three kids, Presley (17), Finley (15), and Weston (11), and they’ve made Waco and the Harris Creek Baptist Church their home. JP has also taken his unique story and his personal struggles and turned them into something that can benefit others, writing six books and hosting a successful podcast called “Becoming Something”—and
it certainly has. It’s one of the world’s top 15 podcasts on religion and spirituality on Spotify and iTunes.
But what makes JP such a remarkable man of ministry, is that he lives his life and leads his congregation transparently. “I found something better in Jesus Christ, and because of my story, I believe that I can better connect with others who don’t have it all together. Jesus loves us and God has amazing plans for
everyone. Our success stems from our faithfulness.” JP’s newest project is spreading the word of God on college campuses across the nation with the organization Unite.
“There’s something happening with Gen Z and Gen Alpha where God is capturing their hearts again. Thousands upon thousands of college students are placing their faith in Jesus and it’s amazing. My goal and inspiration is to see more of that happen.”

Julie Hays
Julie Hays is a friendly face who’s been sharing local news stories with the residents of the Waco region for over two decades. She’s currently the midday anchor on KWTX News 10 and
the host of the ‘Tell Me Something Good’ segment that airs during the station’s 5 PM newscast. What you may not realize is that to get this coveted time slot, Julie has had to wear many hats and she’s worked every shift imaginable.
This included an overnight role at WFAA in Dallas during the summer of her senior year in college where she worked for free filing tapes to get her foot in the door. During this time, the Paris, Texas native moved in with her aunt and shared a room
with her cousin who was in third grade. “I was willing to do anything. I knew that if I wanted to land a news job, I just needed to outwork everyone else.”
While there, she heard about people’s exceptional experiences at KWTX, which led to an impromptu trip down I-35. She pitched herself as a reporter candidate to the Vice President of News, who quickly turned her away. That is, until a producer quit and he called her with a job offer. “I took a job as an overnight morning news producer that I really didn’t want, in a place that I didn’t know anyone, and I’m so incredibly glad I did it. It’s how I got to where I am today.”
Her career has brought her some amazing opportunities, including a prime time anchor slot and even a oneon-one interview with former President George W. Bush in the White House. But her most notable interaction was when she met her husband Sam, a Waco native who made sure she stayed put in this beautiful region.
They’re currently raising their three kids, Callie (13), John (11), and Natalie (10), and Julie notes that while she has no big plans now, when their kids finally leave the nest, she hopes to become more involved with non-profit organizations in the area while still continuing to anchor the news.
“I love telling people’s stories and I love making their days. KWTX is so much of who I am. It’s a great station built on good values and community service and I work with some great people. I’m very lucky.”
How They Made Their Aspirations Realities
Everyone has a different version of success, but the ways people achieve their goals always seem to align. When speaking with these remarkable men and women, we asked what they attribute to their accomplishments. This is their sage advice.
Cade Kegerreis
Since childhood, Cade has always demonstrated an innate artistic ability, but just because he had natural talents doesn’t mean that he didn’t have to work for his success. He notes that the key to achieving his notoriety as a muralist and honing his impressive portraiture skills was learning the fundamentals of drawing.
“Baylor prides itself on their traditional approach to their art program. I did not enjoy it when I was there, but looking back it was so necessary. Getting back to the basics will immensely grow and challenge any artist. It helped me more than I realized.” By going back to these simple foundations, Cade gained a different perspective and aligned the stepping stones to his success.
Julie Hays
Julie also focused on the basics at the start of her career, but she attributes her accomplishments to her willingness to put her pride aside and say yes to any opportunity.
“I can’t tell you how many times people told me no, and the no’s are going to come, but it only takes one yes. Be willing to take any job and work harder than the person next to you. You’ll learn very quickly that there’s not a lot of people who are willing to put in a ton of hard work.” By putting her all into these seemingly less desirable roles, Julie opened doors for herself and achieved what many only dream of accomplishing.
Alexis Wampler
When starting her business, Alexis also encountered many naysayers, but she never took these comments to heart.
“The first year was really hard. People would tell me ‘Oh, you’re just riding this wave as long as you can until it dies out and then you’ll have to find something new.’ I decided to prove these people wrong. I knew that I could absolutely grow this into something that no one ever expected.”
And that’s what she did. She asked questions, got creative, and networked herself. For those looking to start their own enterprise, she says the most important step is giving yourself the time to grow. “If you have the time to learn and you love what you’re doing, don’t ever stop. You can make it happen.”
Jonathan Pokluda
This tip seems to be a common theme among all the men and women to watch. Success comes to those who put their faith in dreams. JP notes that to accomplish his goals, he had to fully commit to the projects he saw promising. This includes his popular podcast. “You can’t grow a platform by just starting something. If you want to find success, you need to be committed to being excellent and working hard to make it great. Colossians 3:23 and 24, ‘Whatever you do, work at it with all your heart, as though you’re working for the Lord. From the Lord Jesus Christ, you’ll receive a reward. Work for the Lord, not for man.’” In other words, if you choose to do something, do it fully and faithfully.

This led to the creation of Texas Hill Country Olive Co., an olive oasis where visitors can explore the many flavors and abilities of this common cooking ingredient.
“We’re really a one of a kind experience here in Texas and we’re the most awarded olive oil company in the state. That means we harvest at peak ripeness and aim to give you the full extra virgin olive oil experience,” owner Cara Gambini shared. “On site you’ll find our olive orchard, the mill, the bottling line, a gift shop, and our bistro. You can come and see where our products are made and enjoy a friendly and fun destination experience.”

Owner Scott Roberts describes their philosophy as ‘Hill Country friendly,’ and when you arrive, you’ll certainly see what he means. “My father didn’t like people to have to wait in line too long, so every time the wait got longer, we would add on a bigger section.”
With this mantra in mind, they’ve expanded four times over the past sixty years, and can now seat up to 800 people. It’s this warm and welcoming spirit along with their flavorful fare that has turned what began as a simple barbeque spot, started by Scott’s father, into a Central Texas staple that you won’t want to miss.
Their menu features what Robert’s father called the original trifecta—beef brisket, pork ribs, and sausage, along with beef and bison back ribs, prime rib, and baby backs. And of course, their signature sides and delectable desserts are all made using wagon train recipes that have been passed down for generations.

Mission Waco
Creekside Community Village is a transformative community, combining permanent supportive housing with lifegiving community engagement. This Community exists to empower our friends coming out of homelessness who long for a permanent place to call home.
At full capacity, Mission Waco hopes to provide homes for over 300 individuals exiting homelessness. Creekside Community Village will provide wrap-around services with existing Mission Waco programs and partnerships, giving individuals a permanent place to call home.. Mission Waco’s Executive Director, John Calaway, says “Creekside Community Village is the first step for our neighbors not just getting off the streets, but in staying off the streets permanently and becoming a thriving member of our community.”
Mission Waco’s Creekside Community Village held its groundbreaking ceremony on October 8, 2024. “I’m not going to ask you to take your shoes off, but we are on holy ground. … This is sacred space,” said Pastor John Durham of Highland Baptist Church before he prayed over the groundbreaking. Since the groundbreaking ceremony, Mission Waco has begun development of phase one, which will include 35 homes for individuals exiting homelessness.
Housing alone will not end homelessness for an individual, but community will. You can partner with Mission Waco today to help provide low-cost, permanent, supportive housing for individuals experiencing homelessness in McLennan County.

Habitat for Humanity
Waco Habitat for Humanity brings people together to build homes, communities, and hope. Habitat homeowners help build their own homes alongside volunteers from the community, and then purchase their homes at cost through a zero-interest mortgage.
Habitat’s partnership housing program allows low-income families that are unable to afford decent housing through conventional means to realize the dream of homeownership. Homes are funded through donations and the mortgage payments of Habitat homeowners.

ROASTED VEGGIE BOWL WITH SHREDDED BEEF & CHIMICHURRI SAUCE

INGREDIENTS
Slow Cooker Shredded Beef
1 cup shredded beef (to plan accordingly, this takes 6-8 hours in the slow cooker – you can make it the day of or the day before, and then quickly reheat it before making this bowl)
Chimichurri Sauce
1½ cups flat leaf parsley, fresh
2 cups fresh cilantro, stems removed (about 2 handfuls)
1/3 cup extra virgin olive oil
1/2 medium onion, rough chopped (white or yellow)
3 cloves garlic (or 3 tablespoons minced garlic)
2 tablespoons white vinegar
1 lime, juiced
1½ tablespoons brown sugar
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Roasted Brussels Sprouts
1/2 pound Brussels sprouts, halved
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
Roasted Sweet Potatoes
1 large sweet potato, washed and diced
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
Cilantro-Lime Cauliflower Rice
3 cups riced cauliflower (I buy the frozen, but you can get fresh or frozen)
1 tablespoon extra virgin olive oil
1 teaspoon garlic salt
1/2 teaspoon onion powder
1 lime, juiced
1/4 cup cilantro, finely chopped
Additional toppings
queso fresco, crumbled (I love queso fresco so much! It’s creamy and salty and much better than cotija in my opinion)
chopped cilantro
fresh lime juice
INSTRUCTIONS
Slow Cooker Shredded Beef
Start by making the slow cooked shredded beef. Once it’s cooked for 6-8 hours on high, and so tender that it falls
apart, shred it, cover, and set aside (or store overnight in the fridge in an airtight container).
Chimichurri Sauce
Next make the chimichurri sauce. This should be done at least several hours before eating it, but can also be made 1-2 days ahead of time. It really takes a couple hours in the fridge for all the flavors to come together. To make the sauce, blend all ingredients in a high-speed blender until well combined. If you like it a little less smooth, blend for less time. I like a little texture to it. Put it in an airtight container in the fridge for 3 hours or up to 2 days.
Roasted Veggies
Roast the veggies at the same time, but in separate pans, as they may need different cooking times depending on how thick they are cut.
Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper and set aside.
Cut Brussel sprouts, by first cutting off the bottom edge, then slicing in half lengthwise, from the flat edge to the top. Cut sweet potatoes into 1/2 inch pieces.
Arrange cut Brussels sprouts on one parchment-lined baking sheet, in a single layer. Arrange the sweet potatoes on another parchment-lined baking sheet, in a single layer.
Drizzle with olive oil then toss with your hands (or 2 large spoons) to coat evenly. Once evenly coated, sprinkle the salt generously over the top. I love flaked sea salt for this recipe.
Bake in the preheated oven for 20-30 minutes, until the Brussels sprouts are lightly charred, and a fork goes through them easily, and until the sweet potatoes are crispy on the edges and soft on the inside. Watch them closely at the end to ensure they don’t burn.
Cilantro-Lime Cauliflower Rice
Heat a nonstick skillet pan to medium-high heat.
Add riced cauliflower and olive oil. Heat for 5-6 minutes, stirring frequently, until cooked through.
Add fresh lime juice, garlic salt, and onion powder and mix well, cooking for 2-3 more minutes until some spots are lightly browning.
Once lightly browned, remove from heat and add in diced cilantro. Mix well.
Assembling Bowls
Begin by adding the cauliflower rice, then the roasted veggies, and then the shredded beef.
Top with a generous amount of chimichurri sauce, crumbled queso fresco, and more fresh cilantro. Enjoy!

The end of the year is always a time to focus on gratitude. It’s Thanksgiving, after all, and then, before we can catch our breath, it’s Christmas. It’s not hard to feel thankful when the season revolves around it. Then comes a new year, the season of setting goals.
I think goals are great—I always set them for myself—but if not approached in the right way, those New Year’s goals can lead to disappointment, comparison, and failure. I didn’t get that job I wanted. I didn’t lose the weight I desired. I’m not as productive at work or as successful at home.
There was a period in my life when I started every morning by writing down four things I was grateful for, and it changed me. Instead of focusing on what I didn’t achieve, I was suddenly thankful for things I often took for granted. It’s that glass-half-full idea, I suppose.
Instead of worrying I didn’t hit the mark as a perfect parent, I was thankful I had three healthy kids in my home and great relationships with them. Instead of stressing over the number on the scale, I enjoyed the small victories of the day as I moved an inch closer to where I wanted to be. Instead of believing the lies that everyone else’s marriages are as idyllic and exciting as they appear on social media, I was thankful for an evening run with my husband or a nice dinner date at our favorite restaurant.
This year, I want to live like it’s Thanksgiving year-round and feel the joy of Christmas in February, May, and August. Gratitude every day—now that’s a healthy goal I have in 2025.

Mexican Sweet Corn
6 oz. Cup
Ingredients
½ cup Roasted Corn (grilled, oven-roasted, or frozen fire-roasted corn, kept at a rolling boil)
2 tbsp Lime Crema (mix together: 10 oz sour cream, 1 oz lime juice, 2.5 oz water, and ½ tsp kosher salt)
1 oz White Extra Melt Cheese, grated (Block Queso Melting Cheese)
¼ tsp Tajin
1 tsp Favorite Hot Sauce (Cholula, Valentina, Melinda’s)
1 tbsp Queso Fresco Cheese, crumbled
1 dash Tajin, for garnish
½ tsp Cilantro, chiffonade, for garnish
Instructions
Using a slotted spoon, remove the corn from the boiling water and transfer it to a medium stainless steel mixing bowl.
Add the lime crema, grated extra melt cheese, and Tajin to the bowl. Toss gently to combine with a cooking spoon.
Using the cooking spoon, carefully transfer the mixture to a 6 oz. cup, ensuring that all the corn stays inside the cup.
Drizzle your favorite hot sauce over the top of the corn.
Sprinkle the crumbled queso fresco cheese on top, add a dash of Tajin, and finish with the chiffonade of cilantro.
Enjoy immediately while warm for the best flavor!
Meet Maritza Phillips, Managing Partner
With nearly 30 years of experience in the restaurant industry, Maritza Phillips is a local staple and a dynamic leader at Jorge’s Cantina. Her journey began at just 16 years old when she started as a waitress at Shoney’s and Jim’s, where she famously donned the costumes of Buffy the Vampire Slayer and Pocahontas at the renowned Magic Time Machine. After briefly working in insurance, Maritza returned to her passion, working her way up from bartender to kitchen manager at Cheddar’s in Waco. Her dedication and skill led her to help open Bubba’s 33 in the same role before returning to Cheddar’s as the Managing Partner. Following a successful tenure there, Maritza joined Hawaiian Bros, where she opened the Waco location and went on to help launch over 30 locations nationwide as their New Store Training Manager. After extensive travel, Maritza was eager to return to her roots in a locally owned establishment. At Jorge’s Cantina, she brings a wealth of knowledge, experience, and infectious personality, ensuring she will remain a beloved fixture in the community for years to come.
