Since I was a child, I have been driven by the belief that God blesses everyone with different gifts. Whether it be writing, interior design, cooking, or anything in between, everyone reading this has been created with a special gift. For 20 years, I worked in corporate America in marketing and events, but I have never been able to intertwine my childhood message of faith with my work as much as I do with Modern Texas Living. It is our hope that we can use Modern Texas Living to showcase each individuals God-given gifts in this community. I love central Texas. Finding Community

It was August 3, 2021, the day my life changed forever. I got a call from the Air Force. They asked me if I was home. “Are you at my house?” I replied. “Yes, ma’am,” they said. It took me 20 minutes to get home. That felt like a lifetime, I could not get home fast enough. I called my Husband, Mom, and two cousins. My younger son, Tim, called to ask why the Air Force was waiting at our house. “I don’t know but they wouldn’t be there unless something bad happened,” I said. I got off the phone. I was now 10 minutes from my house. My heart was racing, my breathing was heavy, and sweat was all over my body. I began yelling at God. “Please let him be alive! Please don’t let him be dead! Dear GOD PLEASE!” I was fighting back tears so that I could drive safely to my house. When I arrived my parents, my sister, and Tim were there waiting for my arrival. Two Air Force officers in full dress blue uniforms stood in my living room. It was a nightmare. They handed me a letter stating that my 23-year-old son died from a gunshot wound. It wouldn’t be till the next day when we would find out that it was self-

inflicted. My amazing son with no history of mental illness was a victim of suicide. The next six weeks were a blur. There was a lot of crying, lots of time with family and friends, a funeral, a memorial service at his base in Little Rock, AR. It was so beautiful to see how much he was loved by all the people he met. We had people flying in from all over the country to pay their respects and share stories about him. I have the most amazing support. My husband Rick has not left my side. Our community of friends, family, China Spring Band family, Air Force family and local REALTORs® all came to our aid. We were provided two weeks of dinner. We received funds that allowed us to fly and board some of our family members to attend services. There were a multitude of cards, phone calls, texts, and gifts. Almost a year later I still receive random calls and texts from my community. A rollercoaster is the only thing I can relate my grief journey to. One day you are happy, and things seem good. The next day you cannot get out of bed. There are times where I felt I could not breathe. I was plagued with panic attacks for the first six months. There were days the grief rollercoaster was an hourly shift. After things settled down a bit, I struggled with my identity. Who am I now after losing one of my children? How do I still show up for the two children I still have living? How do I support them after losing their brother? How do I keep going? Am I still a REALTOR®? Will I be able to work again? How do I plan my life now that there is grief? Healing is fluid and I will not fully heal from this type of loss. I learn how to manage my loss while I continue to live. I took some time to do some personal reflection. This involved a week alone with my husband and myself at a beach house. I realized that if I were to continue as a REALTOR®, I would need a change. In October, I made the switch to White Label Realty. I had been watching them and almost stalking them on social media. I saw that their brokerage was different. They sponsor and help the community they serve. I also saw that they supported each other. A few of them that I was acquainted with supported me when my son passed away. The first day I walked in the office, I was greeted by smiles. Everyone came to introduce themselves to me. The office is open concept, collaboration and problem-solving together is encouraged. I thought there is no way this happens, but to my surprise it does. A few weeks went by, and the grief rollercoaster hit. It

would at times set me back. My fellow colleagues met me where I was, not just once but every time. The more I was around them, the more my strength grew. Within a month, I had 4 real estate transactions under contract. In a few months, I attended a clean-up of Lover’s Leap in Cameron Park and helped set-up our awards ceremony and fundraiser for Foster Village Waco. I was able to serve my beloved community that had been supporting me throughout the year! White Label Realty, thank you for showing up for me. I am so grateful for this community of friends. immensely for providing an environment that is safe, collaborative, supportive and customer focused. I lost my motivation to do anything career wise. I found my strength to continue being a REALTOR® because of you. Helping the community and providing for my clients has a greater meaning now. A home is a place where you cultivate your life, have hard days, make memories, and love. A home is also the place where you grieve after a loss. It is a special place that is yours. Kyle Williams is the owner of Halo Athletic Center, alongside Ashley and Jody Beard. Kyle entered the fitness world after winning the American Gladiator show in 1992, which led to many opportunities, including hosting a “Fitness Minute” segment on KWTX for two years. At Halo Athletic Center, his primary role is to make sure members have access to the highest quality equipment, training, and environment. His focus is to make people more physically capable of accomplishing the adventures they want out of life, and to listen and discern the goals that his clients are wanting to achieve. Kyle and his wife Amy incorporate wellness into their own daily lives through meal prepping (Amy is a wonderful cook, and Kyle a skilled eater) and rigorous workout routines. Kyle lives by his father’s saying, “Success by the inch is a cinch, by the yard is hard”, looking for the small changes and the everyday wins rather than overnight success. When the world is turned upside down by a pandemic, where do you seek refuge? Home. Home is where we love our families and live our lives. Home is special. Of course, we want to care for our homes through regular maintenance, but researchers are discovering that the way we clean and organize our homes can impact our physical and mental health. Clutter is about much more than aesthetics; it impacts how we feel. Clutter and mess are linked to negative emotions like confusion, tension, and irritability. In contrast, a clean and organized home tends to produce more positive emotions like calmness and a sense of well-being. Our clutter makes energetic noise. Our brains perceive clutter as work to be competed, which creates guilt, anxiety, and feelings of overwhelm. A study by Princeton University researchers discovered that clutter directly impacts our ability to focus. More specifically, a

person’s visual cortex can be overwhelmed by objects unrelated to the task at hand, reducing focus and efficiency. This explains why many of us prefer to work at the kitchen table than the cluttered kitchen desk. Just as clutter and mess can create stress and anxiety; decluttering, organizing, and cleaning are easy fixes with a big impact. The biggest challenge may be knowing where to begin. You can start anywhere but I encourage starting small and working in an area where you will make a big impact. Kitchens, bathrooms and sleeping rooms are a rewarding launching place. Within those spaces, start with the kitchen island or top of the dresser. Tackling small and visible areas help you see the fruits of your labor while keeping the task short and manageable. Continuing to tackle these small areas consistently will allow you reclaim control of your home without spending your summer vacation organizing!

OWNER OF WACO CHILD & ADOLESCENT COUNSELING Kim Nesmith is a licensed professional counselor and registered play therapist, who opened Waco Child & Adolescent Counseling in 2016. She lives in Waco with her husband and two kids. Dr. Nesmith first found her love for counseling as a kindergarten teacher, where she was particularly drawn to the children with emotional and behavioral needs. She eventually moved into a position as a behavioral specialist at the school, but she continued to feel as though they were putting bandaids on behaviors, rather than treating the whole child. Eventually, she decided to return to school for her masters degree in clinical mental health, and then her doctorate in educational leadership with a specialization in psychology. She opened her counseling practice, and never looked back! She sees children, teenagers, and their families, typically working with children in the playroom, as she bases her work on various theories of play therapy depending on the child’s needs. She sees teenagers generally in the conventional counseling room, as well as engaging in expressive arts or creative interventions with them. Her favorite part of her job is the kids, and she loves seeing children of all ages with many different needs, concerns, and situations. Dr. Nesmith is patient and calm, and her patients love the welcoming environment they find at Waco Child & Adolescent Counseling. Through her practice, she helps kids at a young age to identify the emotions and unmet needs behind each behavior, so they are able to live a more happy, healthy, and thoughtful lifestyle.

I know it’s summertime, but I think we all agree there’s something awaiting us when that first bell rings for the new school year, and we wish it wasn’t. 19 kids and two teachers won’t ever return to the classroom after a gunman opened fire at Robb Elementary School in Uvalde, TX. School. A place we assume our kids are safe. I work in the news industry and have covered many tragedies and my kids, by virtue of being around my workplace, have heard more than I wish they had. But on May 22, I turned off all TVs. I didn’t want them to know anything. I put them to bed that night, praying they would never learn of the horrific act that happened just four hours south. I knew it was wishful thinking, but I was simply at a loss for what to do. As I laid in bed that night, I got a text from their school district. Security would be ramped up and while I was relieved, I knew they would notice. I also knew their peers would talk. I woke up my oldest, who is in 5th grade, just before midnight and as delicately but forthcoming as I could, told her of the horrific school shooting. I didn’t mention details and thankfully she didn’t ask. I just told her she was safe and we were thankful for those brave men and women who would stand watch the next morning. As we arrived to school on May 23, police blanketed the campus. The kids climbed out of the car as they do each morning and my husband and I told them we loved them. I prayed God would keep them safe.

It’s the same type of goodbye nearly two dozen families had the day before not knowing it was their last. There is no handbook for parenting and certainly no instructions for how to handle a tragedy like this. I’m still not sure what I did was right. I never told my youngest two, both of whom came home and said friends told them in class. What I do know is I love my children just the way those parents in Uvalde love theirs and their lives matter. I don’t know what the solution is but I’m committed to doing my part. I’ve talked to my kids about alerting a teacher if they see or hear of anything suspicious. I’ve contacted our school district to inquire about safety measures for next year. And I’ve reminded my children to treat everyone with kindness, especially those who may seem to need a friend the most. If we all do something, as small as it may seem, I believe it can make a difference.

These pencil wafer cookies are a fan favorite because they are inexpensive and impressive. Kids and adults alike love these cookies for back-to-school, whether it’s at a welcome gathering at a kids school or as a sweet treat after the first day of classes. Grab a pack of vanilla wafer cookies. Use a very sharp knife to cut the shape, including a point. Melt white and pink wafer chocolates. Create the eraser by spreading a thin layer of pink chocolate onto the bottom of the wafer cookie. Form a triangle with the white chocolate onto the top of the cookie. Lastly, add a mini chocolate chip onto the white chocolate for your lead tip.

Cinna-Daisies by Kristen Sellentin, @kristensellentin A unique way to make breakfast special is to bake cinnamon rolls in festive shapes, like they these easy-to-make daisy cinnamon rolls. Three tubes of cinnamon rolls will leave you with six daisies for breakfast!

Line a cookie sheet with parchment paper or foil. Place a cinnamon roll on the baking sheet, as the middle of the daisy. Cut another cinnamon roll in half using a sharp knife and place the halves around the center of the daisy. Push the petals into the center gently. After you’ve assembled your daisies, bake according to the package. As soon as they’re out of the oven, top with icing, sprinkles, and edible sugar flowers.

I N G R E D I E N TS 2 Grapefruits, (zest & juice) 1/4 cup Cane Sugar, (or Maple Syrup) 1/2 cup Water 3 Rosemary Sprigs 3 Mint Sprigs, (about 1/4 cup) 4 cups Pineapple Chunks, (about 1/2 pineapple) Sparkling Water, (for serving)

D I R E CT I O N S In a saucepan over medium high heat, stir together the pineapple chunks, grapefruit juice, cane sugar, rosemary sprigs, mint sprigs, and water. Bring to a boil, then simmer for 10-15 minutes. Stir in the grapefruit zest, then allow the simple syrup to cool completely, then strain the pulp. To serve: Add 1 part simple syrup with 1 part sparkling water. Garnish with a slice of fresh grapefruit and fresh rosemary or mint leaves.

I N G R E D I E N TS For the Olive Oil Graham Crust: 1 1/2 cups Graham Crackers, (pulse in blender until very fine crumbs) 2 tbsp. Honey 3 tbsp. Extra Virgin Olive Oil For the Key Lime Pie: 3/4 cup Fresh Lime Juice 1 cup Plain Greek Yogurt, (preferably whole milk of 2%) 2 14-oz cans Sweetened Condensed Milk Zest of 3 Limes, (about 1 tablespoon)

D I R E CT I O N S For the Olive Oil Graham Crust: Preheat oven to 375F. Pulse the graham crackers sheets in a food processor or blender until very fine crumbs to make 1 1/2 cups (about 1 sleeve of crackers). Transfer to a bowl, then add in the olive oil and honey to mix until evenly distributed. Press into a 9”x 1.5” pie pan to make a 1/4” thick crust. A little tip is to start from the edges and work your way into the bottom center. Bake for 10 minutes. For the Key Lime Pie Filling: Simply mix all ingredients together until well-combined. Pour into the prepared/half-baked crust, then bake an additional 12-15 minutes, or until the filling is almost set. Let it cool at room temperature for 30 minutes, then transfer to the fridge to chill for 1-2 hours. Enjoy with freshly whipped cream or a soft meringue!

I N G R E D I E N TS 3 cups corn kernels about 3 fresh corn cobs 1 cup all-purpose flour 1/2 green bell pepper finely chopped 1 Tablespoon sugar 1 teaspoon baking powder 2 large eggs whisked 3/4 cup whole milk, or kefir Olive oil or vegetable oil, for frying Sliced scallions for serving Garlic aioli for serving

D I R E CT I O N S In a large bowl, mix together the corn kernels, green bell pepper, flour, sugar, baking powder, salt, and black pepper until well-combined. Add in the whisked egg and milk. Stir until well-combined. Line a wire rack or plate with paper towels. In a large sauté pan over medium-high heat, add in the olive oil to heat up for 2-3 minutes, or until hot. Once hot, add 2-3 tbsp. batter in a mound on the pan, then use the back of a spoon to spread it into a flat, circular shape. Cook for 2-3 minutes, then flip to cook an additional 2-3 minutes, or until golden brown and crispy. Transfer each fritter to the paper towels to drain any excess oils, then season with salt immediately. Repeat with remaining batter. To serve, garnish with scallions and a garlic aioli for dipping.

D I R E CT I O N S Slice the fish into small bite-sized pieces, then add into a large bowl. Pour in the lime juice, orange, and honey to stir. Make sure the fish is completely submerged in the citrus juices. If not, add more lime juice. Cover with either a lid or saran wrap. Set in the fridge to “cook” for 20 minutes. Remove the cover, then stir in the remaining chopped ingredients until well-combined. Cover once again to “cook” in the fridge for 10 more minutes, then enjoy! Best served with plantain chips.

I N G R E D I E N TS 1 cup Rolled Oats 1 tsp. Baking Powder 1/2 tsp. Baking Soda 1 large Egg 1 Banana, ripe 1-2 tbsp. Walnuts, crushed 2-3 tbsp. Chocolate Chips (Optional) 2-3 tbsp. Hot Water

D I R E CT I O N S Heat up griddle. Brush with a little olive oil to grease. Pulse all ingredients, except the chocolate chips and walnuts, in a food processor or blender until a smooth batter. (If using a big blender, pulse the oatmeal first until a flour-like texture.) Adjust batter texture to desired consistency, adding more water to thin it out or more flour to make it thicker. Fold in the chocolate chips and crushed walnuts. Cook the pancakes on the hot griddle, using 1/4 cup batter per pancake. Flip once you see bubbles, then cook an additional 1 minute (both sides should be golden). Enjoy warm with fresh blueberries, sliced bananas, crushed walnuts, and maple syrup!

D I R E CT I O N S Preheat oven to 450F. Place the salmon fillets on a baking pan lined with parchment paper. Season generously with salt and black pepper. Drizzle with the olive oil. Bake for 12-13 minutes, depending on thickness. Lastly, broil at 550F for 2-3 minutes. To make the mango salsa, simply toss together all ingredients in a large bowl, then season with salt and black pepper to taste. Serve the salmon warm out of the oven with the mango salsa and rice.

I N G R E D I E N TS 3 1/2 tsp. instant yeast 1/4 cup granulated cane sugar 1/2 cup olive oil 5 large eggs 1 tbsp. salt 8 cups all-purpose flour Poppy seeds or sesame seeds, for garnishing 2 tbsp. honey, for baking 1 large egg, for baking

D I R E CT I O N S In the bowl of a stand mixer, whisk together the sugar, yeast, and 1 3/4 cups warm water. Set aside for 10 minutes to activate the yeast. Add the olive oil and eggs into the bowl. Mix until smooth. Add the flour, then using the dough hook attachment, knead on low speed for 2 minutes. Increase the speed to knead on medium until the dough is smooth and pliable, about 4-5 minutes. Transfer the dough ball to a lightly greased bowl, cover with plastic wrap, and set aside in a warm environment for 1-2 hours, or until doubled. To speed up the process, place the covered bowl in the oven with the light on. Punch down the dough. Transfer to a lightly floured surface. Slice the dough into two equal pieces. Working on one piece at a time, slice the dough into 4-6 smaller pieces. With your hands, roll out each smaller piece into a long strand. Begin to braid the loaf with the 4-6 long dough strands. For a straight loaf, tuck the very ends underneath. For a circular loaf, twist the braided dough into a circle and pinch the ends together. Repeat with the second large piece of dough. Place the braided loaves on a large baking sheet with 2-3 inches in between. Let the dough rise 30 minutes in a warm environment. Preheat oven to 375F. In a small bowl, whisk the honey and egg together. Brush the mixture over each braided loaf, then garnish with poppy seeds or sesame seeds. Bake in the middle of the oven for 25-35 minutes, or until golden. Allow the bread to cool for at least 15 minutes. Enjoy! 109

Who in your life has been affected by Alzheimers? My mother’s mother, and my father’s father both passed with dementia as well as other extended relatives of that generation and before. Now both of my parents and some uncles are living with dementia. What were the first signs that you noticed? That’s the funny part. As much as we were aware of Alzheimer’s and to be looking for it with my parents, we missed the first signs. Looking back now we can see some things that were happening that should have tipped us off. But at the time it was all easily dismissed or explained away. But I’d say the first clues were them getting lost in the city. My parents have lived in Waco their whole life, but were having a hard time finding places they had been to over and over again. But the big sign was when my father ended up in the hospital on the brink of kidney failure. We ultimately determined that my mother who was in charge of distributing their daily medicines had been messing up their pills and it almost killed my father. That’s the moment we stepped in and started making changes. How has the Alzheimer’s Association helped you during this time? At one time when we were feeling extremely overwhelmed and had no idea what to do, the local Alzheimer’s Association office invited my sister and I in for a long conversation. They walked us through all the appropriate resources such as in-home and long-term care facilities, support groups, and “plans of action” for the coming weeks, months, and years. Knowing someone was out there to help answer the “what should I do next” question was a big relief for my family.

What has been the hardest lifestyle change to navigate? Taking the cars away was by far the most difficult lifestyle change for my parents and for us. This was a traumatic event for all of us. Loosing that freedom was especially hard on my father. But it was necessary. There had been to many “close calls” and we knew someone was going to get hurt if we didn’t step in. What would a cure mean for you? As much energy and time I spending focusing on and discussing my parents, the reason I’m so desperate to find a cure is for the benefit of my son. I’ve watched my parents cope with their parent’s dementia. And now my son is watching his grandparents, who he is very close to, decline and me struggle to provide the best care. Given our family history, it’s reasonable to think I will be fighting this disease myself someday. My fear is that my son will have to fill my shoes and be forced to make very difficult decisions. My prayer is that a cure is discovered, and we both are freed from this. What do you hope the Walk will accomplish? The first time I attended The Walk to End Alzheimer’s I was surprised at the comradery and support I felt just from being in a huge crowed surrounded by people going through the same struggles I am. Knowing you’re not alone is HUGE! This year I hope we can share that experience with a few new faces. I also hope we can see more of the community get involved. If you run business, I guarantee you have a client or employee that is dealing with a dementia situation right now. If you go to church, someone in that congregation is concerned or overwhelmed with a loved one with Alzheimer’s. Signing up to join the Walk to End Alzheimer’s not only helps us raise funds to find a cure and provide support, but it also tells the people in your circle that you care about them and their or their families personal struggle with Alzheimer’s.
