A Note From the Editor-at-Large Julianne Liebeck

as we all know, buying locally puts money and employment straight back into communities

Having just returned from my annual trip to Mod’s Head Office in Paris and the Greek Islands, I have experienced firsthand the devastating fallout of the debt bailout crisis. As a tourist in Greece you are relatively unaffected by a country on the verge of bankruptcy, although you constantly play witness to the long queues of locals lining up for the ATM’s. It’s always the elderly and poor who are really affected, as well as small businesses. Since my trip, I realise now the importance of working together (something the Greeks aren’t great at). We came across a telling scenario at a local bakery in the region of Pelion where the baker was crying because there were no tourists, no people and, as a result, he 12

could only afford to make a tiny selection of baked goods each day. We managed to get his last two cheese pies (which were the best of the trip), then headed to the beach 1km away. There we came across a man at the beach bar who had just sold out of his sandwiches and snacks. I wondered why aren’t these two business owners collaborating so everyone could benefit from their services? The beach bar could be using the traditionally baked bread from the bakery, instead of the pre-packaged and processed food they were selling. The beach bar and bakery could work together to produce a far superior product for tourists, thereby supporting both businesses and the local community. As we all know, buying locally

puts money and employment straight back into communities (such as Greece and here in Christchurch). Returning to Christchurch has cemented my realisation that this city is full of potential, from the young creative talent emerging from the arts scene to the diverse hospitality and retail offerings popping up. The Greeks have shown us that the other option does not lead to a great place to live. Enjoy this thoughtful magazine of international, national and local content, and hopefully this issue will inspire you to think globally and act locally. Foraging in the Red Zone Fruit and nut foraging in the Residential Red Zone of Christchurch has been made easier thanks to the Canterbury Earthquake Recovery Authority (CERA). Who Dat? Name: Joanna Norris Occupation: Editor-in-Chief at The Press. Can usually be found: Either at The Press poring over the news of the day, or with family at the beach in Sumner. How do you spend your time: There is so much to love about living in this part of the world. In winter, we head into the hills and ski at the spectacular Canterbury ski fields; in Summer we love going to the beach for a surf, or a hike in the Port Hills. When we are in the city my husband, two little kids and I also love heading to a good cafe, catching a movie or checking out an exhibition. We never run out of things to do. Hopes for Christchurch( What kind of change do you want to see for Christchurch’s future?): We need to confidently embrace a small-city cool that makes the most of what we have in our stunning South Island adventure playground. Our city needs to consciously prioritise innovation, creativity, wellbeing, community, recreation and smart productivity. We need to enable clever people to innovate and small businesses to thrive. In doing so, we will let a thousand flowers bloom and create a city designed for people. Favourite place in the world: Hard to choose just one, so I’m going to opt for anywhere close to the Southern Alps, anywhere with a roaring fire and a good glass of wine; anywhere with good food and good conversation shared with family and friends. Why do I love the idea of being gender free so much? Well, I lived out my impressionable 20s in the 1990s, which to me represented a time of greater parity between the sexes, at least Superficially. Women were not portrayed by the media in the hyper-sexual fashion that they are today. Maybe I love the idea of sharing my boyfriend’s clothes, who by the way rocks a sarong (he’s not so keen on the chiffon blouses though). I love a woman looking strong and sexy and love men who wear softer fabrics as opposed to the classic stiff suit. Somehow I feel gender free creates understanding between both sexes and is more in tune with our urban lives. If you are looking for inspiration check out the Gucci Spring 2016 collection by new designer Alessandro Michelle. In a world that is rapidly changing in culture and communication, the accessibility of traditional luxury brands is changing the meaning of the concept itself. With classic brands like Rolex, Chanel and Burberry no longer ‘difficult’ to obtain, but imitated and available on a global scale, the term “luxury” is now adapting with the changing modern world. In 2015, the value of an item is no longer determined by its price-tag. On assignment at the Victoria & Albert Museum in London, I visited an exhibition that is receiving global acclaim, observing the craftsmanship, critique and conception of modern ‘luxury’. The exhibition displayed a collection of objects chosen to represent meanings

of the term in the modern era. The museum defined luxury by a wide collection of words: “precision, extraordinary, expertise, opulence, exclusivity, preciousness, innovation, investment, passion, pleasure, non-essential, skill, memory, authenticity, resources, legacy, journey, privacy, access.” The first object that caught my eye was a chandelier of dandelions lit up by LED lights. A simple, hand crafted suit sewn from a single piece of cloth - notable for its absence of lining, exposed stitching and glass beads sewn into the material luxurious because of it’s creator’s unique devotion to the research and perfection of tailoring itself. A wristwatch, made precious for the 17 years it took for the

The Journey Into Wild Fermentation Jamie Bennett

It’s late at night and I have just finished another long day in the kitchen. As I crack a sample bottle of wild fermented wine I start thinking… Where is this fermentation journey taking me? As I read articles by chef David Chang and hear his views on the topic of rotten and fermented food, it starts opening up my mind. Is fresh food what we should be talking about each day? Or should we be discussing putting rotten food right? I start realising that as chefs we ferment on a daily basis. We feed that mother each day that makes our daily bread. We add bacteria to milk to make yoghurt, ricotta and very young cheeses. We ferment to preserve, make more nutritious, more digestible and to find the complex and unique flavours it brings. But fermentation is slowly disappearing from western food as our lives get busier.

The science and art of fermentation is, in fact, the basis of human culture — without culturing, there is no culture. Nations like France, which still consume cultured foods like cheese and wine, and Japan, with its pickles and miso, are recognised as nations with culture. Culture also begins at the farm, not only in an opera house! It binds people to its land and artisans. So, today in our restaurant (Passengers & Co) we started a kombucha. Kombucha is a sour tonic beverage originating from China that is very popular in Russia. It is a sweetened black tea, cultured with a mother also referred to as “the tea beast” - a gelatinous colony of bacteria and yeast. The mother ferments the sweet tea and reproduces itself, like kefir grains. This is just the start of my exploration into wild

fermentation and our food. For me it represents not only an effort to bring back from oblivion these treasured processes, but also a road map to a better world, a world of healthy people, a world that values those iconoclastic, free-thinking individuals so often labelled the ‘misfits’ of the cheffing world. For me the journey has only just begun, as life always seems so busy. The art of fermentation is a craft and skill we cannot let die. We need these good bacteria to keep us healthy and to keep our local economies alive. We can’t centralise and industrialise our food supply to the detriment of our small farms. Culture is where it all starts.

Bally’s There’s a lot happening at the grandmother of retail stores here in Christchurch. The formidable Ballantynes Department Store has been busy with new in-store openings (including Benefit Cosmetics) and installing

I don’t know about you but as the weather warms up, daylight hours lengthen and the leaves start to return to the trees, I become an outdoors creature. The passing of winter leads me to eat outside, read outside and sometimes even sleep outside. Suddenly hibernation has ended and nothing can top a picnic in the park or a packed lunch at the beach. While I celebrate winter for its encouragement to indulge in carbs of all shapes and sizes and anything covered in melted cheese, now seems the time to get back to light meals that match the weather. Below you’ll find two recipes that are great enjoyed separately or together, at home or on the move and are best enjoyed in the company of friends, family or a really good book.

Treats That Are Good Rebecca Harris, Sawtooth Kitchen

People-magnet Jam Drops – 250g plain flour – 200g butter, grated or cut into small cubes – 100g icing sugar – Pinch of salt – 2 free-range egg yolks

Porch-worthy Rooibos iced tea

– Preheat the oven to 170C.

–B oil water in a pot and add tea to infuse for 5 minutes.

– Place the flour, butter, icing sugar and salt into a bowl. Using your fingertips, rub the ingredients together until the mixture resembles breadcrumbs.

Porch-worthy Rooibos iced tea

– Add the egg yolks and mix until a dough forms. Turn out onto a lightly floured work surface and roll out to a thickness of about 0.5cm. Cut out shapes using a cookie cutter.

– 3 Tbsp. Rooibos tea (I used Sawtooth Kitchen’s Summer Red Fruit tea)

– Use your thumb to make an indentation in the dough and fill this with jam.

– 4 Tbsp. jam (I used Sawtooth Kitchen’s Apricot Jam and Wild Plum Jam

– 1 litre water – Ice, mint and in-season fruit to garnish

– Bake for 10-12 minutes, or until light golden-brown and crisp. Remove and transfer to a wire rack to cool.

– Strain and allow to cool. – S erve with ice, fresh fruit and mint to taste.

Marcia from Société sat down recently with Warren Matthews, Chairman of Xtend Life to talk lifestyle supplements and whether they really actually work…

Why should people take supplements? Quality supplementation is one of the best investments we can make for our future. However, if you are currently on medication, and considering taking a supplement, it is a good idea to discuss it with your doctor. This is just to ensure there will not be a negative reaction between the supplement and your medication. What is the biggest myth about health supplements that you would like to address? There are a number of myths about supplements, so it is difficult to say which is the biggest. One of the common myths I hear, is the myth that ‘more is better’. That is definitely not the case. Customers are often confused by marketing hype promoting large amounts of a vitamin or the size of the bottle. Instead, look for products that use natural forms of vitamins which are more bio-available. It means that you don’t need great quantities of the ingredient to get benefits, as bio-available ingredients are far more effective.

Athletic and Tall This is the ‘oval face’ of body types. It is considered ideal because most hairstyles will look good with this body type. You have lots of options! So make your face shape and hair texture your primary deciding factors.

Do: Experiment with hairstyles to see what flatters your hair texture and face shape. Your body type works best with most hairstyles. Don’t: Forget the old standby ponytail – Leave that style for gym time! Flatter

your figure with soft, feminine styles with some length and wave. Again it’s about proportion and making sure your head is in balance with your body, so super short doesn’t work with super tall (try to avoid the pinhead look!).

Petite As a petite woman, you know that you always have to make choices that work with your small-framed proportions and your hairstyle should be no different. Do: A short to medium length haircut with layers and subtle volume near the crown is a good option. Try a chin-to-shoulderlength bob style (the ‘lob’ is a the height of fashion right now!). Hairstyles with gentle wavy texture are also another good option for styling.

Don’t: The extremes are the worst options for petite women. Stay away from hairstyles that are too short or too long because thy might make you appear smaller. Slim and Straight The ultimate goal for this body shape is to add some volume and curves, and the perfect place to do so is with your hair. Do: Try hairstyles that add width to your hair.

Wavy / chunky hair adds a slight feminine touch to your figure. A long fringe, angles and layers are also flattering. Don’t: Try not to go too big with the volume or it will take over your

Ferragamo Museum Go not just for the shoes, or Salvatore Ferragamo’s collection of over 10,000 illustrations and photos of his famous clients (who included Sophia Loren and Audrey Hepburn), but for the history of the building itself. There are plenty of people doing plenty of things to try and change the world. And while some people might think that to make a global difference you have to do something big, bold and amazing, the simple truth is that you can make a difference to the world we live in by making some slight changes to the way you do the things that make up your daily routine. That was exactly the message of two girls who started a website in 2014 named Be an Unfucker (beanunfucker.com). Their message is simple: people have fucked up the planet, but it is those very people that can do simple things to try and unfuck the damage that’s already occurred. Their idea is that by doing simple things like taking reusable shopping bags to the supermarket, having your espresso made in a reusable cup and taking shorter showers in the morning, you can make a difference. While those might seem like obvious things to do, there aren’t enough people doing them. In addition to the obvious steps that you can take to minimise the impact you’re having on the environment, there are a number of things you can do right here in 52

Christchurch to make the world a better place, while still enjoying the best things in life. Instead of buying beer in multiple cans or bottles, pay a visit to Punky Brewster, the city’s coolest, utterly kitsch craft beer fillery, where you pay by the litre to have your own rigger filled up with any of the many craft beers on tap that are sourced from around the country and the globe. The less non-degradable packaging to result from a few Friday night brews the better. We know it can be difficult to go without things that we take for granted, like plastic shopping bags and disposable coffee cups. But going without them is your chance to make a difference to the planet. A new, local social enterprise is helping to make going without something easy and rewarding. Two Weeks Without challenges individuals and businesses to give up something for two weeks and to see the difference they can make. How about giving up meat for two weeks to try and make a contribution to reducing the impact of intensive farming on the environment? Or perhaps giving up driving your car for two weeks? See how great you will feel when you make a little change every day.
