Welcome / Chairman’s Message

I have been heartened by the number of Clubs who have found a way to remain connected and continue the Fun, Friendship and Fellowship values of Probus.
here is no doubt that COVID-19 has made the future quite challenging, it is a very fluid environment we live in, one we have never experienced before in our lifetime and one which has impacted on all aspects of life.
I commented in a previous column that Probus members would have to accept change to survive. One of the most demonstrable examples of change is the publication and circulation of Active Retirees magazine. This now is circulated digitally and every member can subscribe and receive it at no cost. The staff at PSPL have worked hard and published a very creditable magazine full of interesting articles and items submitted from many Clubs. They are also producing the “Staying Connected with Probus” communication, a weekly publication also available online and all members are encouraged to subscribe. I hope you and your Club are supporting the initiative encouraged by PSPL to recognise 1 October as Probus Day. It is the International Day for Older Persons and is an ideal time for promoting Probus in our communities. Because Probus does not often attract media attention we all need on this day
to raise the profile in whatever way we can, whether it be as an individual Club activity or an activity combining several Clubs in a cluster.
COVID-19 has of course impacted PSPL quite seriously, this was not anticipated and the ramifications will be felt for some time. The majority of our members are in the “vulnerable” category and I have been heartened by the number of Clubs who have found a way to remain connected and continue the Fun, Friendship and Fellowship values of Probus. I was particularly impressed with the news that a new Club had been chartered in Queensland in July, just as many of our Clubs were meeting for the first time since lockdown was imposed.
My year as Chairman is coming to an end as is my term as New Zealand Representative Member/ Director. The experience has been a privilege, interesting, challenging and worthwhile. I have met many great Probus members, have celebrated several milestones with Clubs and taken part in various discussions. I have visited numerous Clubs, not as many as I had intended because COVID-19 put a stop to travel both in New Zealand and Australia, and I have learnt so much about Probus South Pacific.

I acknowledge and am grateful for the support I have received from members of the Board, all hardworking volunteers who only want the best for our community. I thank them all sincerely for the time they have given to Probus, I know it has impacted on their lives in retirement and I am grateful for their contribution. I have been most impressed with the knowledge and passion of our CEO Silvana Martignago and her team, their consistent loyalty and commitment to Probus is undeniable. I have appreciated their support and guidance through many challenging aspects of governance and regulatory requirements. Thank you all for the opportunity to enjoy the Fun, Friendship and Fellowship that Probus provides to our retiree community.

/ CEO Message
For the inaugural Probus Day, the theme is Staying Connected and Active with Probus – the key to happy retirement.
W
Due to the varying restrictions, some celebrations and events may be lowkey or may even be conducted in a virtual format. The objective is to celebrate Probus, in any way that a Club or member chooses.
I encourage everyone to get involved in celebrating Probus throughout the month of October and extend the hand of Probus friendship to fellow retirees in your community. Part of celebrating Probus Day is sharing your Probus story, recently we asked members to share their Probus story and have already received so many great submissions and would like to read many more. Please share your Probus story with us but more importantly share it with your friends and let them know what Probus means to you.
elcome to the September - October issue of Active Retirees, the national publication for Probus in Australia.
In this edition we share with you how members have been staying connected in recent times. We also announce the winners of our #ProbusWinterChallenge and showcase some great writing talent in our new Creative Writing section.
Once again, I would like to thank the advertisers who have continued to support our Active Retirees publications during these difficult times. Although some of us are currently restricted with our travel choices, please consider an intra-state trip with one of our advertisers. On behalf of the PSPL Team, I would like to extend our best wishes to members. I hope you enjoy reading this issue of Active Retirees.
While many individuals, communities and businesses adjust to a new reality, it is the strong connections formed through Probus that help so many of our members adapt in these challenging times. Our members have remained connected through virtual meetings, phone trees and Club newsletters. Depending upon the location, many Clubs have also been able to conduct a range of activities as well as meetings. I take this opportunity to thank the many Club Management Committees for their dedication and leadership. Recently we announced our inaugural Probus Day. A day where we will all celebrate what is great about Probus and actively promote it in our region of the world.
This annual celebration will be held on 1 October 2020 – this date is known as the United Nations Day of Older Persons across the world. International days like this are used to raise awareness and for our Community in Australia and New Zealand, it will be known as Probus Day.

The P.S. Murray Princess
On the banks of The Mighty Murray River, among gnarled old tree branches and reeds swaying in the breeze, is a magnificent gum. Standing for more than 400 years, its trunk is bare and so white it stands out like a beacon. Pelicans sleep, perched on thick boughs, their heads resting on wings. In the distance are flood plains with still waters reflecting the bright yellow feet and beaks of darters (snake birds) balanced on remnants of once-glorious trees.
Take a moment to soak in the serenity.

hat’s the view from the Sun Deck on the PS Murray Princess - a Mississippistyle sternwheeler with four decks of cabins, suites, entertaining areas and a mesmerising paddle wheel that churns the water, pushing her upstream in a graceful glide. Then there are the cliffs. Rich ochre rock walls – some 60m tall - of craggy sandstone and limestone. They line the path of the river, home to thousands of birds like fairy martens, corellas and sulphurcrested cockatoos. Now take another moment and watch the sun drop over the horizon shining a bright orange spotlight on those cliffs. The Murray Princess offers the chance to unwind in style with cruises out of Mannum in South Australia’s Murrayland. Our time is spent enjoying the simple but elegant surrounds, a moving feast of local produce and a series of shore excursions designed to entertain and educate. Shore excursions vary from short bush walks with the Captain, to a night at Sunnydale Station’s Woolshed for a shearing demonstration and sheep race, an on-shore barbecue dinner, wildlifespotting on a Nocturnal Tour and a star-spotting Dark Sky Night Tour.

Back on board and Ali, the First Officer, brings the history of the River Murray to life. Fast facts flow, like the Murray is the third longest navigable river in the world next to the Amazon and the Nile, and it was discovered by Charles Sturt in 1830 after he tracked the flow of the Darling and Murrumbidgee rivers. A race between Captains William Randell and Charles Cadell, opened the waterways to the east and led to a thriving river shipping industry. Settlers moved inland, surviving only thanks to paddle steamers that brought food, clothes, supplies, building materials and news – one of the most important currencies to be had. Living aboard the Princess for a few days makes it easy to picture that time when the river was the highway. The Murray Princess pays tribute to that history. Her decks are named after Randell, Cadell, Sturt and the Chaffey Brothers who brought large-scale irrigation to the river. The Princess is a grand lady and a lovely, nostalgic nod to the past.

Comfortable and spacious Staterooms.
Cabins on board are basic but quite spacious with two single beds, a dressing table, wardrobe and tiny ensuite plus two windows to the stunning views outside. Waking up to the sound of correllas screeching can be a shock but it’s a welcome one because it means you won’t miss the soft sunrises, the mist hanging over the water and those tranquil scenes.
Night-time views are equally delightful. Spotlights are left on, lighting up the water and our evening pelican performance. It’s an elegant, silent ballet as they glide back and forth waiting for their next feed of fish. It doesn’t matter what time you wake up during the night, you’ll see the dance of the pelicans.

Making Changes
Going Cashless
More and more people are embracing change with greater use of online banking apps and contactless payments in Australia.
T
he Reserve Bank of Australia’s (RBA) 2019 Consumer Payments Survey accentuated that consumers are becoming more open to using electronic payment methods with some preferring cashless options. Among all survey respondents, those aged 65 and over still made more than half of their payments in cash however, this number had decreased since 2007. Since the survey was conducted, institutions are now expecting an increase in cashless activity, predominantly from the impact of the pandemic. Dr David Glance, Director of the UWA Centre for Software Practice, says “We are certainly moving towards a cashless economy. Australia is pretty advanced in terms of having shops accepting electronic payments.”
So what does this mean for you?
With all major banks providing an online banking option and services to help people set up an account at home or their branch, there are certain benefits for Older Australians. Since the launch of the New Payments Platform (NPP) in February 2018, we are now able to make near realtime and simply addressed payments.
This means obligations such as paying your monthly phone bill can be organised as a reoccurrent debit or bank transfer. Debit cards and credit cards can also be linked to your online banking app so in situations where you may need a refund or are required to pay an invoice can be done electronically. The other benefit is no longer needing to wait in queues at the bank or over the phone to check your balance or visiting the ATM frequently to withdraw money. During the pandemic, not needing to disinfect cash constantly is also a good benefit since all expenditure can be handled electronically.

“We have seen the many innovative ways Probians have stayed connected through virtual meetings such as hosting Club meetings, playing games online and even enjoying each other’s company from the comfort of their homes.” The Be Connected program is a great resource for older Australians to find the skills they need online. The Be Connected website, managed by the eSafety Commissioner, provides free information, learning modules and webinars designed to empower them to safely use the internet and digital technology.
e Connected is an Australian Government initiative aimed at increasing the confidence, skills and online safety of older Australians. It delivers a range of resources specifically designed to support using digital technology. During COVID, more of us have found ourselves doing things online that we didn’t expect, from using Zoom to meet with other Probus members to setting up a Facebook page for our local group.
Margaret has been a Probus member for 26 years. She says in her role as a local representative these days she often sits in on meetings for other Probus groups and assists members with a variety of matters, including advice about online subjects.
There are simple ways you can make use of the program to help you do more on the web: • Visit the website: https://beconnected. esafety.gov.au.
“My role is to provide different clubs with support in any way I can, especially in how they connect with each other and PSPL,” she says.
• Register for the engaging and informative Be Connected online presentations https://beconnected.esafety.gov.au/ bookings.
PSPL CEO Silvana Martignago says “It is so gratifying and inspiring to witness people from our communities and Clubs coming together and supporting each other at a time we need it most.”
• Sign up to the Be Connected newsletter https://beconnected.esafety.gov.au/ login/signup.php?.
• For assistance getting online, call the Be Connected Helpline 1300 795 897.
During these times, it is important to stay active and connected and we encourage members to visit the Be Connected website to learn more about being online.

wants you to know,
R U OK? /
Health
you don’t need to be an expert to reach out – just a good friend and a great listener, which we know Probians are renowned for.
R U OK? CEO Katherine Newton says even
‘There’s more to say after R U OK?’, is the message for R U OK?Day 2020 (on Thursday 10 September) and will focus on building confidence and increased skills for people so they know how to navigate a conversation with someone in their life who might be struggling.
if we’re still being asked to physically distance ourselves from one another, there is something we all can do, and that is to look out for each other. “We’re all going through a difficult time because of COVID-19. The situation is continuing to change every day and for some people it can be pretty scary. You might be feeling disconnected, be physically unwell, or experiencing heightened levels of anxiety,” said Ms Newton.
This year R U OK?Day coincides with World Suicide Prevention Day which will further raise awareness of the scale of suicide globally and the role that each of us can play in prevention efforts.
R U OK? want Australians to be confident in having a meaningful conversation and if someone says they’re not OK, make time to listen with an open mind, encourage action and regularly check in.
“Life might not be the same as it was before and we might need to live with some ongoing restrictions and physically distancing. “But there is always something we can do and that is look out for each other.”
‘There’s more to say after R U OK?’
R U OK? is encouraging the extensive network of Probians around the South Pacific to draw on your individual and collective valuable life experiences to further promote a sense of community, reach out and ask friends, family and neighbours ‘Are you OK?’.
Learn what to say next at www.ruok.org.au
R U OK? is an Australian suicide prevention charity. Its mission is to inspire and empower everyone to meaningfully connect with the people around them and to support those struggling with life. Find out more: ruok.org.au Need help? Find help now.
Be aware of any changes in behaviour or the way people communicate. Trust your instincts and look out for the signs - consider the tone and language they’re using; are they answering your calls; are they communicating as you would expect? Whether you’re struggling yourself or worried about someone else we urge you to trust your instincts and stay connected. To Stay Connected: • • •
Create a list: Think about who in your world, personal or professional, near or far who might be struggling. Dedicate the time: Make ‘time to ask’ as part of your daily routine. Choose your channel: Communicate in way that works for you both: make a phone call, send an SMS, video call, email or, if you can meet in person you might want to chat over the fence, go for a walk together or catch up for a cuppa.
Each day think about who in your world might be struggling and make a plan to reach out to them and ask ‘Are you okay?’. That simple question and a conversation has the power to change someone’s life for the better.

35 th Birthday
On Monday 10th February 2020, 36 members and 7 guests from
Modbury Ladies Probus Club came together to celebrate the 35th anniversary of the Club.
Guests included 2 members each from Collinswood, Golden
Grove and Wynn Vale clubs along with their Patron and
independent Member of Parliament Frances Bedford. Frances
presented President Cilla Harvey with a gold certificate for the Club on behalf of PSPL.
The tables were adorned with floral posies made by
Committee Member Sharyn Perrin. Door prizes were drawn much to the delight of those who won.
Elsie Kuchel, a member for 33 years cut the cake.
A beautiful spread of sandwiches and quiches, were served
followed by a birthday cake with tea and coffee.
Members were entertained by Soprano Marianne Riccio
who sang a large repertoire of songs. There was lots of singing, clapping and toe tapping as everyone joined in.
She finished up with a request to do Madam Butterfly, and
followed with Marilyn Munro’s rendition of Happy Birthday. A great morning was had by all.
Ramblers’ Day Out
Sailors Ahoy
‘The Ramblers’ is one of eight interest groups from the Victor
28 members from the Unley Probus Club
Harbor/ Granite Island Probus Club. From April this year the convenor of the group is Graham Burton. When the walks recommenced in June and the second in July, there were
upwards of 20 members ready to set off on the trails. In June, they headed along the Heysen Trail to Halls Creek (tributary of the Inman River), and in July the ramble took in the
recently-opened scenic Myponga Reservoir walking trail.
During the walks, the group stops and enjoys their packed
lunch, or they call in at a local bakery, and then resume their trek to the destination … all keeping a safe distance from each other during
these times. Enjoying the fellowship while
celebrated Pancake Day in Australia on February 25th.
Pancake Day, comes from the old English
custom of using up all the fattening ingredients in the house before Lent, so that people were
ready to fast during Lent. A delicious breakfast of pancakes was enjoyed at Port Adelaide.
Invigorated by the pancakes, members then
embarked on a walking tour around historical
Port Adelaide, admiring “Wonderwalls” created by different artists.

Mandala Beach House Visit Even though group travel is particularly

20 members from the Combined Probus Club of Helensburgh & District gathered together and enjoyed a walk across the Sea Cliff Bridge, south of Sydney.
Their first stop was at the Scarborough Hotel for a coffee break where members were happy to see dolphins and
a whale frolicking in the water from the hotel’s balcony.
The walk then continued to the Scarborough-Wombarra Bowling Club where members had a nice lunch. Publicity Officer Helen Durham says “our outing was well enjoyed”.

Club News / New South Wales Staying Sane During COVID-19 Meadowbank Combined Probus Club successfully held its AGM in March and was anticipating the
year ahead blissfully unaware of what was to come. Less than two weeks later, the Club was
cancelling its proposed trip to Armidale, coffee
club mornings, cards, all planned outings and all non-essential face-to-face contact.
The most adventurous activity was to go to the
supermarket, which now involved wearing masks, avoiding other people in the aisles, and spraying hand sanitizer liberally.
For the over 65s, all activities seemed to cease.
The Club began to think of ways to keep members connected. The Committee decided to distribute fortnightly newsletters instead of monthly,
including members ideas about interesting
websites (virtual tours of museums, free concerts and travel sites).
The Club also launched their own “Staying
Sane” photo competition encouraging members to post their photos during lockdown.
Members posted their photos of amongst other
things, camping in the backyard (as pictured
below), empty roads, jigsaw puzzles, matchbox collections and putting out the garbage bins.
Senior Citizen Of The Year Award Recipient Paul Fisher from the Probus Club of Blacktown City
was named as Blacktown’s Senior Citizen of the Year in February 2020.
Councillors Susai Benjamin and Kathie Collins presented
Mr Fisher with a certificate and Mayor Tony Bleasdale congratulated Mr Fisher for his achievements. Paul is a dedicated and
public-spirited member of
the community. Most of his 87 years has been lived in the service of individuals and the community
both personally and professionally.
Volunteering for a range
of causes throughout his
life, Paul’s contributions are greatly appreciated by all.
Tea In The Park Padstow Heights Probus Club enjoyed a warm sunny
morning tea in the park at Panania, close to a small coffee shop.
18 members attended the gathering and all enjoyed
meeting up and having a good old chat whilst keeping to the required social distancing.
Members are all looking forward to more morning teas
in a different park in the very near future.

Historical Tour Of Maryborough Some members from Fraser Coast-Hervey Bay Combined Probus Club availed themselves of a trip to Maryborough in a cavalcade of private cars. Organized by ex-President, Brian Frederiksen, who spent most of his life in Maryborough, the trip was an eye-opener for many of the Club members.
Maryborough was one of the early ports, even before Queensland became a State. After gold was discovered in
Gympie, the Port of Maryborough exploded with activity. Rural lots were created and immigration was encouraged. With the promise of land, Europeans flocked to Maryborough.
Merchants set up business, banks were established and churches built. The Walker Brothers from Victoria set
up their Factory and Foundry, manufacturing locomotives, trains, ships and later War Ships. This company still
provides employment for many, trading non-stop for the last 153 years. Sugar growing and timber are still major employers.
The beautiful old colonial type homes abound in every street. Many residents take pride in their homes, and
they are beautifully maintained even today.
To finish the tour, members had a picnic lunch at the Ululah Lagoons.

As Active As Can Be
Leongatha Probus Club has been taking many active measures to keep members connected over the last few difficult months.
The Club’s Executive Committee has had two virtual meetings via Facebook Messaging to attend to the financial
matters of the Club. In June, all Committee members met, with all social distancing rules followed. While being very different, it was wonderful for members to see each other in person again.
The Club has also established a phone tree, closed Facebook group, Boredom Buster Booth (for exchanging
DVDs, magazines, jigsaw puzzles and books), racing tip competition, newsletters and much more!
While members are keen to get back together, they are following all government rules and realise that, for
members’ safety, they just have to wait. But they continue to keep connected as best as they can.
Beating The Virus Tony Thomas says “Imagine doing four months work preparing to start a new Melbourne Probus Club,
launching last February and getting hit by the lockdown right after your first meeting. That was the opening story of our Melbourne Bearbrass Probus - “Bearbrass” was an original suggested name for Melbourne.” 30 Members had attended the launch of the Club
at Dock Library with 18 sign-ons and now, the Club is steadily growing with a membership of 41.
The Club has also received a $1355 grant
from Melbourne City Council helping them with administrative purposes.
Melbourne Bearbrass is now evolving with a hybrid
of online and physical activities in accordance with Victoria’s health advice.

A gardening tip - For a lovely summer display, hard prune Fuchsias at the end of July-early August, unless you get a lot of frost, in which case leave it until around mid-late August. Trim about a third off plants during the first weekend of January to get a second flush of flowers during Autumn and Winter. Always tip prune to keep plants from becoming straggly.
1. Cuttings = Everything in this picture has been grown from cuttings, I love the challenge and the results. 2. Bird of Paradise = Strong colours, flowers beautifully in winter and makes great cut flowers.

Quirky and Fun. I have been op shopping for mirrors, started off with one which we then glued half and old security gate onto. This made it look like a real gate note enclosed.
I am enjoying a real splash of colour this Winter and am particularly happy with my Stretlitzia producing 3 blooms at the one time, all 3 of African Violets flowering at the same time and my Bleeding Heart vine flowering in the Winter at all. I began to create this garden when I moved to Newcastle NSW about 5 years ago and have a very limited space so have had to be innovative in both vertical and horizontal plantings. I get an enormous amount of pleasure in gardening and it is my “go to” place and if I had any tips for a budding gardener is that you need to have a vision of what you want to create, be prepared to modify your plan to those “must have” plants you find at the nursery and most of all be prepared for some hard but rewarding sweat and toil.

Since we have been home more, I’ve had time to rediscover the joy of gardening, and especially the joy of growing vegetables. I love watching young plants grow, observing the cycle of flowering and fruiting, the satisfaction of growing and picking your own food. I mustn’t have been the only one who recently started to garden again. For a while, seeds and seedlings were very hard to get. I do often get free plants from my compost. I wait to see what a small weed becomes before pulling it out, tomatoes, pumpkins and capsicums often emerge all on their own. But did you know you can plant some of your kitchen scraps directly into the garden for a further cycle? Spring onion roots, the base of a lettuce, leeks, shallots and even pineapple and carrot tops will shoot again. Pictured is the base of a lettuce, the roots of a spring onion and some carrot tops re-sprouting in the garden.
Sue’s Garden Art, 2020 What does one do in isolation? Hard rubbish happens, and somebody put out an old wheelbarrow. Why waste it? I repurposed it as a succulent garden, using cuttings that I had grown. I decorated a terracotta bird bath with mosaic, to the great delight of the many magpies who drink from it and bathe in it.

In my Imagination. I can hear my six year old grandson saying to my son Simon, “What did Poppy do during the Corona Virus Dad? With the structure of my wife Wendy and our life completely disrupted, our gyms closed, our aquatic centre closed, and our Saturday park run permanently cancelled until further notice I questioned what I could do to direct my mind and energy. With no real landscape plan, I commenced my project by digging out a ten metre bed of Agapanthus, if you’ve never taken on this gardening task, Agapanthus roots go down 100 metre into the sub-soil, in fact I noticed a certain warming in the soil. After two weeks of back breaking, digging and sieving of the soil, I then framed my canvas with brick edging. To represent the charred and fallen forests I painted bamboo stick tops and also planted 20 Bromeliads adjoining these features I formed a circle in sandstone rocks. The end result - the powerful traditional post and rail fence, the backdrop to this landscape project represents Australian response to natural disasters and their ability to overcome everything that nature throws at them. The Secret of the Old Boathouse By Meader Tricia Curtin Northmead and District Probus Club
Growing up, I loved staying with my grandmother. She lived alone in an old house overlooking a lake. A creepy boathouse stood along the shoreline. We were warned to NEVER go near the boathouse - it was dangerous! Apparently! I would sit for hours listening to my grandmother’s stories about her young life - especially those surrounding the old boathouse. She would tell us about fairies - night fairies. The others would laugh and consider gran’s stories silly, but not I. I believed her. Returning to gran’s old home many years later, I could still feel her presence. Standing in her cosy front room, I turned and stared out the window, thinking of her and the sense of wonder she would open in me. I could see the sun setting gently over the lake; the boathouse a smoky outline on the horizon. And then I saw it… a soft light moving within the boathouse. Hoping it still worked, I picked up an old red torch and wandered down the path toward the boathouse. The path was overcrowded with weeds. I had to stop myself from bending down to pull them out; a habit that gran and I shared. The boathouse looked even older, more weathered, seemingly on its last legs. The old door was broken, hanging from a rusty hinge. I pushed it gently aside and carefully walked across the floorboards - creaky and cracked; several boards were missing. Turning the torch on, I stopped dead in my tracks. A fairy - a night fairy. As I moved toward her, the fairy ‘panicked’ and flew into an old fishing net, hoping to camouflage herself. And then a soft cry. She was caught - snagged in the net. Part of her wings were twisted through the netting. She needed help. What would grandma do? What had I learnt from that wonderful storyteller? Here I was - standing in the old boathouse that we, as children, were all so frightened to go near - with a gentle fairy who really needed help. Slowly - ever so slowly - the fairy relaxed enough to let me come nearer. An old fishing knife lay near the net. Picking it up, and moving slowly, I began cutting away the net. In time, the fairy - quivering and ever so delicate - fluttered her shimmering wings and began to float upward towards the rafters and the open door. She turned toward me and smiled. I was breathless - in awe. My grandmother believed in fairies. She knew they existed and despite my family’s laughter and teasing over the years, she knew. And yes, I believed then and I still do. Magic.

Around the World in 80 Days: Movie Titles By Caitlin Larbalestier Kareela Combined Probus Club
After climbing 39 STEPS here I am HOME ALONE in my APARTMENT, FROZEN, listening to SOUND OF MUSIC watching the CITY LIGHTS and thinking I needed a SUMMER HOLIDAY. That’s when I heard on the radio about the murder on 29TH STREET down ON THE WATERFRONT. They said it was a TAXI DRIVER with a GOLDFINGER, but there were HOLES in the witness’s story. These certainly are MODERN TIMES we live in and WE’RE NO ANGELS however, there are too many of us wanting to live THE HIGH LIFE. I listened to THE LAST SONG before going to bed, I didn’t want a LATE NIGHT as I had to be at THE BREAKFAST CLUB early next morning. Then RIGHT ON TRACK my sister EMMA knocks on the door. As I open the door, she pulls a FUNNY FACE so I thought I would DO THE RIGHT THING and invite her in. Our relationship, IT’S COMPLICATED. She had come to tell me that A STAR IS BORN because ROSEMARY’S BABY, BORN ON 4TH JULY in the MOONLIGHT. My sister lives in LA LA LAND and I am sure she’s CLUELESS and BEWITCHED most times. An AMERICAN BEAUTY with AN EDUCATION who loves clothes, her favourite colour is AQUARAMINE and she has 27 DRESSES in all shades of the colour. THE DEVIL WEARS PRADA I am sure is THE DRESSMAKER Emma goes to. I said to Emma, GUESS WHO’S COMING TO DINNER, she said THE PINK PANTHER and I said no, THE GODFATHER. With that she went FIFTY SHADES OF GREY and warned me to be careful he did not KNOCK ON ANY DOOR or I might be sent UP THE RIVER. YOU WISH, was my reply. Then THAT DARN CAT was BLINDED BY THE LIGHT and jumped out the REAR WINDOW and ran off to A FAR-OFF PLACE, probably to meet up with the 101 DALMATIONS or THE LADY AND THE TRAMP. Then IT HAPPENED ONE NIGHT, I heard that sound that announces YOU’VE GOT MAIL. It was my friend Sally who said she was going to PARIS IN SPRING and maybe she would meet AN AMERICAN IN PARIS. I said there are still a FEW GOOD MEN around, and she said I’ll send you a postcard FROM PARIS WITH LOVE. With THE LUCK OF THE IRISH, she met Harry at the MOULIN ROUGE they watched THE LAST TANGO IN PARIS listened to MAD MAX play THE PIANO and that’s WHEN HARRY MET SALLY. They had AN AFFAIR TO REMEMBER. BREAKFAST AT TIFFANYS with WILD STRAWBERRIES delivered by PETER RABBIT all BEFORE SUNSET. At MIDNIGHT IN PARIS when they were SING’NG IN THE RAIN, Harry said let’s go on a ROMAN HOLIDAY where we can sit UNDER THE TUSCAN SUN have A PICNIC AT HANGING ROCK and try and crack the DA VINCI CODE. Sally replied YES MAN and a FUNNY THING HAPPENED ON THE WAY TO THE FORUM they bought a ticket from the MERCHANT OF VENICE for the ORIENT EXPRESS, and with a BRAVEHEART they were GONE WITH THE WIND. LAWRENCE OF ARABIA was on board and he was taking THE ENGLISH PATIENT, who had just spent 55 DAYS IN PEKING while on the ROAD TO MANDALAY, home to CASABLANCA, where SOME LIKE IT HOT. AT THE END OF THE TUNNEL, there was a ROBBERY UNDER ARMS, by the someone said to be THE INVISIBLE MAN, so all were looking to CATCH A THIEF. TWELVE ANGRY MEN were chasing him down and they definitely were THE GOOD, THE BAD AND THE UGLY. It was THE GREAT ESCAPE and in the NAME OF JUSTICE they were UNSTOPPABLE thought Harry and Sally. IT’S A WONDERFUL LIFE and with a BLANK CHECK they booked a suite on THE TITANIC. However, at the last minute they decided it wasn’t how they wanted to end their holiday, so JUMPING SHIP they caught the AFRICAN QUEEN to AUSTRALIA and visited a TOWN LIKE ALICE met THE MAN FROM SNOWY RIVER and his mate CROCODILE DUNDEE and thought THEY’RE A WEIRD MOB. IT’S A WONDERFUL LIFE, but it’s time to go HOME AGAIN said Sally and MEET THE PARENTS. They wrote to say I’LL BE HOME FOR CHRISTMAS and it would be ONE MAGIC CHRISTMAS as they were bringing ELF with them. And I’m still waiting for THE POSTMAN to deliver my FRENCH POSTCARDS.

The Vice President’s Beef Bourguignon /
Recipe
The Vice President’s Beef Bourguignon
Probus Club Burwood East Inc. By Lance & Claudia Sterling
The French city of Lyon is famous for its bouchons, small family owned restaurants that boast nose to tail dining. Every part of the animal is used. They even claim to use the pig’s squeal. I have tweaked this recipe to be very close to what they serve in Lyon, and it’s packed with flavor.
Ingredients • • • • • • • • •
1 kg Beef Chuck or similar cut into a 2 cm dice 1 large brown onion diced 2 large carrots peeled and diced 2 garlic cloves finely chopped 1 bottle red wine from Aldi (if the A.C Byrne pink label Barossa shiraz at $10.00 is available grab it, outstanding value) 4 rashers of bacon diced 1/3 cup plain flour 400g button mushrooms (larger ones cut in half) Bouquet garni, just tie together 3 sprigs parsley, 2 sprigs thyme, and 1 bay leaf
Method 1. Place the beef and bouquet garni in a plastic bowl, ad a pinch of salt, pour in wine to just come to the top of the beef, seal the bowl and place in the fridge for up to 24 hours. Your patience will be rewarded with a real depth of flavor. 2. Strain the beef through a colander to remove as much of the wine as possible but reserving the marinade. 3. In a frying pan over medium heat ad a little oil and fry the bacon and onion until crisp, about 6 minutes. Place on a separate plate. Use a slurp of wine to deglaze the pan, scraping the residue onto the onion and bacon. 4. Season beef with a little salt and brown on all sides in a couple of batches, about 8 minutes. Sprinkle in the flour and cook stirring for another 3 minutes. Place beef into oven casserole dish. 5. Add the onion, bacon, carrots, the reserve marinade, plus any wine left over and cook until tender in oven 140 degrees for about 2 and a half hours. Ad the mushrooms and cook for about another 45 minutes. All ovens will vary so you may need to check the progress. I often ad 2 heaped desert spoons of corn flour mixed to a paste with a little cold water and stir in to thicken at this point (optional). 6. Remove bouquet garni and serve with mashed potato and greens. We often expand the quantities to make several more meals with the philosophy of work once but enjoy for months. It’s well worth the effort. Bon Appétit! Serving Suggestion
