Doug McPherson has lived in Colorado since 1992 and enjoys discovering and writing about all the natural wonders this gorgeous state has to offer, both past and present. He says he particularly liked traveling back in time to learn about all the dinosaur remains in Colorado’s ancient basement for this GuestBook edition. His favorite part of the assignment? “Touching the dust of bones that are in the range of 100 million years old,” McPherson says. “That has a magical way of making you appreciate not only history, but also humans’ place in it.” McPherson says he will enter his 20th year as a freelance writer in 2019 and has yet to tire of working most days in his pajamas.
Researching Denver’s oldest restaurants was an interesting contrast to the Wings Over the Rockies, which is really full steam ahead on Colorado’s future. It’s easy to get distracted by all things shiny and new these days, so I appreciate any opportunity to pause and reflect on our rich history and really think about where we’re going and how we got here. It’s amazing to see the impact each individual restaurant and attraction has on the economy and witness first-hand tourism’s effects on both a state and personal level. As a travel and food writer, I’m simultaneously fascinated by and passionate about local businesses that drive change and innovation.

Great Sand Dunes National Park & Preserve

Colorado was a dinosaur hotspot 66 million years ago, and today the state offers one of the few windows into their awe-inspiring past—all because of Colorado’s unique geology. According to dinosaur expert Dr. Joe Sertich, the Denver Museum of Nature & Science curator of dinosaurs, as the Rocky Mountains formed, they lifted dinosaur remains to the surface where humans were able to find them. “This is why Colorado is such a great place for dinosaur fossils,” Sertich says. And a perfect example sits just 15 minutes west of downtown Denver— Dinosaur Ridge in Morrison, Colorado—a national landmark that serves up vibrant vistas of the state’s ancient history. During an easy one-mile hike along the ridge, you can see footprints and fossils, plus touch the rusty, brown bones embedded in the rock and feel firsthand the dust from Colorado’s prehistoric origins on your fingertips. “Our bones quarry is one of the only places in the world where the public is WHERE GUEST B OOK

For a broader picture of where dinosaurs fit in earth’s history of life, try the Denver Museum of Nature & Science’s (DMNS) permanent exhibit called Prehistoric Journey—affectionately known as “PJ.” It traces 3.5 billion years of life, from single-celled, tiny sea creatures to early humans. Nearly a third of PJ is dedicated to dinosaurs, with three-dimensional dioramas, interactive exhibits and 15 life-sized skeletons made from real bones—all engrossing enough to set a youngster on a paleo career path. Case in point: Dr. Joe Sertich. As a curious 8-year-old he was bit by the dino bug wandering the DMNS’ halls. Today, he’s the museum’s curator of dinosaurs. “It’s where my passion for dinosaurs began,” Sertich says. “I clearly remember being amazed by their size…and the idea of dinosaurs as living, breathing animals was what ignited my passion for paleontology.” So it’s no surprise that when he updated the exhibit he intentionally posed the dinosaurs in dynamic, life-like poses. One of the scenes depicts an epic battle between a Stegosaurus and an Allosaurus—a crowd favorite. not only allowed but encouraged to touch the dinosaur bones,” says Sara Miller, marketing director with Friends of Dinosaur Ridge, the nonprofit charged with preserving the site. Dinosaur Ridge also hosts lots of hands-on displays, dig areas for kids, sluice mining, life-size dinosaur sculptures and an exhibit hall with bones, replicas and two visitor centers with gift shops. For a more traditional museum, drive 90 minutes south to the Rocky Mountain Dinosaur Resource Center in Woodland Park, Colorado, ranked the No. 2 dinosaur museum in the country by americasbestonline.com. The center boasts 65 restored specimens including Tyrannosaurus rex and its ocean-dwelling equivalent, Tylosaurus proriger. At 45 feet long with a six-foot-long skull filled with five-inch teeth, it’s the longest Tylosaurus ever found. “The center is home to one of the most complete marine reptile collections on display anywhere in the world,” says Janelle Livingston, the center’s executive administrator. “Our newest attraction is a 30-foot-long Daspletosaurus with a new species of Ceratopsian in its jaws.” The center also houses a lab with large, plate-glass windows so you can watch scientists bring their prehistoric finds back to life via molding and casting. “This is one of the few dinosaur
museums where you see the work in progress,” Livingston says. What’s more, the gift shop has a “build-a-saur” workshop so kids (and adults) can build their own dinosaurs up to 16 inches long. Another dino-lover draw—the Royal Gorge Dinosaur Experience in Cañon City, located about an hour south of the Rocky Mountain Dinosaur Resource Center. It opened in 2016, making it one of the state’s newest attractions. Its mammoth 16,200 square-feet building is filled with a worldclass collection of dinosaur fossils, full-scale casts, interactive displays, a paleo lab, a theater (yes, with dinosaur movies), a snack bar and gift shop. Outside, 16 life-sized animatronic dinosaurs bellow. Zach Reynolds, museum president, says the focus is on the story unique to Cañon City, a one-time center of the paleontological world where notable dinosaur species were first discovered, including Brontosaurus, Allosaurus, Brachiosaurus and Stegosaurus—the Colorado state fossil. “Our offerings give a fine balance between science, education and good old-fashioned family fun,” Reynolds says. “Our goal is to have visitors leave knowing a lot more about Colorado’s paleontological history with indelible memories of a great time.”

With the second-largest aerospace economy in the nation, insiders call Colorado “Aerospace Alley” or the “Silicon Valley of Space.” Colorado’s flagship aviation museum, Wings Over the Rockies, has quickly become mission control. The original Lowry location offers a look back at the history of flight. The organization’s newest venture, the Boeing Blue Sky Aviation Gallery, puts the present and future of space and aviation on display. Located at Centennial Airport, the gallery is phase one of the Exploration of Flight project, over a decade in the making. The public can now experience the interactive museum housed in a fully functional airplane hangar. “When you board a flight, there’s so much going on behind the scenes you don’t even think about to make that plane operational. Our goal is to show you exactly what it takes to experience the miracle of flight from the physiology to aerodynamics,” Ben Theune, Director of Marketing for Wings Over the Rockies, explains. Guests can experience adventures in aviation by taking to the skies in an open cockpit Stearman Biplane or Cessna 182 on a scenic flight over the Front Range. There are also behind-the-scenes airfield tours to learn interesting facts
such as what the different lights and lines mean, and that all runways are aligned to the compass. Inside the museum, there are gyro chairs to experience being an aerobatic pilot, plane spotting charts, and prototypes for future designs. Guests and professional pilots can practice takeoffs and landings on the Redbird Flight simulators, while a virtual reality lounge lets you try steering the controls. The Blue Sky Aviation Gallery is just one piece of a loftier vision. The three-phase, four-building project is an aviation incubator. Future developments include a Black Sky Gallery dedicated to space exploration, a pilot training program, charter school and STEM program. Designed to reach children as young as middle-school age and inspire an early interest in aerospace, the academy program already has kids building a fully functional airplane, which you can see in the workshop. This focus on inspiring younger generations ensures that Colorado will continue to be a leader in all things flight. In aerodynamics, the faster an airplane flies, the more lift it generates, and Wings Over the Rockies is definitely helping Colorado lift off toward the future. IF WALLS COULD TALK How Denver’s oldest restaurants are in it for the long haul
With the third-largest number of construction cranes in the nation, Denver’s rapid-fire growth has made it almost unrecognizable to longtime residents. And while shiny new facades and colorful street art seem to paint over history with each passing day, there are a few spots that have managed to withstand the unfortunate “evolve or die” trend in the hospitality industry. Here’s a peek into how three of Denver’s oldest and most iconic restaurants have withstood the inevitable facelift only to get better with age.
SAM’S #3 Established in 1927 as a Coney Island style diner, Sam’s has three locations throughout the Metroland area. What started as a casual breakfast, lunch and dinner spot evolved into a massive 16-page menu, which they now playfully describe as a “hot mess.” While the restaurant has had consistent clientele over the years, ownership also believes a few of the more recent laws have brought in a whole new slew of customers, which has helped them dole out an impressive 60 gallons of green chile a day.

Denver’s oldest restaurant, the Buckhorn Exchange was actually granted Colorado’s very first liquor license. Dishing up what they call Old West fare since 1893, their menu started primarily as beefsteaks, but quickly expanded to include exotic game meats like buffalo, elk and rattlesnake. The signature Rocky Mountain Oysters was once traditional fare for cattle round-ups but has since morphed into an “if you dare” tourist attraction in its own right. The restaurant is filled with museum-quality artifacts including 500 pieces of taxidermy, 125 antique firearms, and Sitting Bull’s niece’s wedding dress, a living tribute to Colorado’s pioneering history. Among the many distinguished patrons over the years have been five presidents and Buffalo Bill Cody.
CHERRY CRICKET Serving Denver since 1945, the Cherry Cricket has been a burger institution for as long as most can remember. Born out of a bar in Mary Zimmerman’s living room, the watering hole moved around Cherry Creek before settling on its current location. It changed hands a few times over the years and was even owned by Governor John Hickenlooper for a minute. Currently part of the Breckenridge-Wynkoop hospitality group, they recently added a second location in the Ballpark. While the menu is regularly updated to add new quirky cravables like Frings (fries and onion rings), don’t expect the reliable staples like CYO (create your own) burgers and craft beer to be going anywhere for a long, long time.

is the stylish yet cozy area called Highland. At the heart of the neighborhood, along 32nd Avenue, a farmers market and outdoor food and art events regularly set up shop during summer months. Red-brick and Victorian-styled storefronts and houses line the streets, and a variety of cuisines are represented in the neighborhood’s dining scene, including a global tapas-style menu at Linger, comfort foods and frosty mugs at Mead St. Station and inventive, homemade ice cream at walkup window Little Man Ice Cream.
RIVER NORTH Northeast of downtown is the River North Art District, which goes by the catchy nickname “RiNo.” The area has rapidly become a Denver hot spot for artsy types, with an industrial area that hosts a high concentration of creative businesses such as art galleries and working studios. Sprinkled among these artistic hubs are cafés, brewpubs, jazz bars, restaurants and boutiques. The neighborhood’s anchor is The Source, a converted iron foundry that’s now a community gathering space and marketplace full of local shops, dining concepts and a craft brewery. The neighborhood is busiest on the first Friday of each month, when dozens of galleries stay open late to welcome visitors with art, wine, live music and conversation.

LARIMER SQUARE Well-known preservationist Dana Crawford gave this Denver historic district new life. The city’s oldest block, today Larimer Square is known for independent shops, chef-driven restaurants and hip clubs—all situated underneath the square’s signature canopy of lights.
