THE CULINARY GOLD STANDARD Step into these Palm Beach dining establishments fit for a gourmand BY SARA LISS AND ERICA CORSANO
The Palm Beach and Fort Lauderdale dining scenes have certainly come a long way in the last few years with young and ambitious chefs opening accessible spots that balance fine dining with culinary innovation. Sure, there are still the jackets-required places where the blue bloods frolic but with so many new options, the area has become a gourmand’s wonderland with a myriad of choices, both high and low. Seafood Bar, the storied seaside lounge at The Breakers, has always been famous for its unique aquarium-style bar and artful cocktails, but it recently underwent a complete overhaul and is now more spacious, with a yacht-inspired decor that envelops guests in a luxurious and nautical ambiance that pairs perfectly unrivaled vistas of the Atlantic. Seafood is the star, of course, with a “Day Boat” selection of fish brought in daily. For those who are not fish enthusiasts, there are plenty of tempting dishes made from fresh, seasonal ingredients. And when it comes to paying homage to seasonal and Southern cooking, Chef Lindsay Autry’s The Regional has been garnering accolades for its inspired approach to New American cuisine since it opened a couple of years back. From the Parkerhouse rolls with everything butter, to the tableside pimento cheese, to the tomato pie and fried chicken thighs—a meal here, is a belly-filling odyssey of flavors. High tin ceilings, cushy banquettes and a down-home décor evoke a gourmet farm housemeets-cosmopolitan bistro. WHERE GUEST B OOK

a buzzy, urbane backdrop to dishes of nicely charred pies (made with organic flour) and toothsome pastas crafted in-house including “cacio e pepe” and orechiette with broccoli rabe and sausage. You can’t leave the area without trying these three very different and distinct spots. Flagler Steakhouse is oldschool and quintessential Palm Beach, with a view of a golf course, killer salads, steak and seafood. Or take a trip to France at the charming Café Boulud, from famed chef Daniel Boulud, located inside the adorable Brazilian Court Hotel. And lastly, for deliciously unhealthy late-night eats in a retro diner, head to Howley’s, West Palm Beach. Just about 45 miles south, Fort Lauderdale is also making its culinary mark. At the stunning new oceanfront restaurant from Auberge Resorts Collections, DUNE offers quality food in a welcoming, uncomplicated way. The midcentury chic design paired with a truly superb wine list (which pays homage to Auberge’s Napa roots) and fresh locally sourced seafood make this a dining must when visiting. While 3030 Ocean might not offer the crazy-cool décor that DUNE does, the food is unparalleled and quite unexpected for a restaurant in the lobby of the Harbor Beach Marriott Resort & Spa. But we love culinary surprises, and Hell’s Kitchen vet and local chef Paula DaSilva delivers with spectacular modern American seafood dishes like house smoked fish dip and coriander roasted swordfish. Tucked inside the B Ocean Resort, The Naked Crab, serves up a fantastic raw tower with old-school tableside service. Post-dinner, make your way next door to The Wreck Bar for an underwater mermaid (or merman) show. No Fort Lauderdale dining experience would be complete without a visit to this city’s main drag, Las Olas Boulevard. Lined with shops, bars and countless restaurants, it will be hard to choose one over another. For heavenly Asian fare, ETARU serves up sushi and robata signature dishes and the newly opened Casa Sensei offers a Latin American twist on traditional Asian comfort food. In the mood for sake? Sky Thai Sushi has more than 40 options, such as fruit-infused, unfiltered or even extra alcohol sake.

But no restaurant interiors can beat those of hot hangouts St. Ambroeus and Restoration Hardware Rooftop. At St. Ambroeus, the fashion set swarm to this chic cafe and restaurant for its ’60s era glam-meets-dreamy Milanese bistro décor, along with its adorable gelato cart and dainty espresso bar. Anchored at the shops at Royal Poinciana Plaza, the café (and more upscale adjacent restaurant) offer respite from shopping jaunts. The other scene-and-be-seen locale is a bit more approachable and across the water, in West Palm Beach. Nestled atop the brand new glossy four-story Restoration Hardware store is this regal, glass-enclosed atrium outfitted with white couches, crystal chandeliers, lush greenery and a tinkling fountain. Diners bask in the sun-filled room for seasonal comfort food (prime rib French dip, truffled grilled cheese, lobster roll) and linger over coffee and warm chocolate chip cookies flecked with sea salt for dessert. For ethnic delights, locals flock to Hai House for Chinese and Coyo Taco for Mexican-inspired cuisine. Hai House brings a much-needed dose of noodles and dim sum to Worth Avenue with refined yet approachable ChineseAmerican dishes, includes handmade dumplings and potstickers, an assortment of noodles and rice and more traditional mains like General Tso’s chicken, moo shu pork, and sweet & sour shrimp. Back at Royal Poinciana Way, is this outpost of the popular Miami taco joint, Coyo Taco, with its own secret tequila bar hidden in the back. By day go for modern Mexican staples like tempura lobster tacos or Michoacana style duck confit.. In the evenings and weekends, pop in for a tequila cocktail in the back bar where Palm Beach millennials mingle with the old guard over guacamole and margaritas. If you’re in the mood for Italian fare, check out Grato, a sprawling cavern of wood-fired pizzas, pastas and cocktails. Chef and restaurateur Clay Conley’s first foray onto the mainland (he’s famous for his work at Palm Beach’s Buccan) has been met with resounding delight. Soaring ceilings, concrete floors, an open kitchen and dark wood provide

THIS OLD WAREHOUSE Grandview Public Market heralds the newly created District neighborhood in West Palm Beach
We’re living in the age of the farm-totable phenomenon. It feels like everyday a new restaurant sprouts, sporting the most perfectly distressed wooden floors reclaimed from a century-old Vermont barn, requisite subway tiles with a side of mustachioed bartenders donning bespoke aprons and rolled-up shirtsleeves touting fresh poultry. It’s all become a tad precious and gimmicky. So it’s refreshing that Grandview Public Market—a new addition to the milieu—is an, ahem, organic manifestation of one gourmand. When that man is Chris Vila—son of famed “This Old House” host Bob Vila—the entrepreneurial spirit that embodies the Vila family results in an exciting one-stop venue for locals seeking farm-fresh produce, meats and delicious food. The sprawling 16,000-square-foot Grandview Public Market complex is carved out of a former refrigeration warehouse in the Old Okeechobee neighborhood of West Palm Beach and opened in spring 2018. Chris and his development partners have christened the neighborhood The District and are working to create a wholly new destination for local residents and tourists. “It started off as an idea that was self-serving,” Vila says. He points to places like Chelsea Market and the Grange Hall on Martha’s Vineyard as places he has frequented and wanted to emulate. Joining Chris in the design of Grandview Public Market is his wife Kristen. Kristen took the 18

knowledge she honed designing houses for the couple’s successful development company to Grandview Public Market. The goal was to update the formulaic farm-to-table aesthetic and create something new and fresh. The look is more authentic and less formulaic. “Our vendors are on the cutting edge of style for West Palm Beach,” Kristen says. Grandview Public Market doesn’t feel like the cookie catalogue of clichéd design memes that have become the common vocabulary of late. The resulting vibe is decidedly familyfriendly, while maintaining a sophistication everyone will appreciate. The vendor list at Grandview Public Market reads like a who’s who of local favorites. Some, like Celis Produce, already have successful brick-andmortar operations. Others, like Zipitios Mesoamerican, were looking for a permanent base. Zipitios owners Ricky and Niria Perez had operated simply as part of the monthly “Tacos and Hip-Hop” party at Subculture Coffee. Two years later, they’ve established a cult following thanks to their presence at Grandview. “Grandview is the epicenter of a cultural renaissance in our city,” Ricky Perez says. “They have done a stellar job curating vendors that have played distinct roles within our community. They are names and faces that our city has grown to love and I believe that Grandview is only helping us share that love far beyond our city limits.”

FLORIE’S FLORIDA Chef Mauro Colagreco chooses Palm Beach for his American culinary debut BY TERRY ZARIKIAN
What do you love about Palm Beach?
The similarities with Mirazur, like the proximity to the sea, the citrus fruits, and the relaxing nature of living and working here. What do you think about the people in the area?
I think that the clientele is pretty relaxed, like they are on vacation, seeming unrushed. What has happened since you started to open restaurants abroad?
When I started to talk about my project in Palm Beach, I realized
that I already had a big clientele dining in Mirazur from Palm Beach and South Florida. What should people look forward to trying at your restaurant?
For starters, my signature bread (grandmother Amalia’s recipe), a freshly baked loaf resembling a curled-up starfish, served with a bowl of my own lemony olive oil and an ode to bread by the poet Pablo Neruda. The Burrata is specially made for us in Florida with milk from a small farm in Vermont. The Lamb Shoulder slow roasted in our tandoor oven, the Farm Raised Truffled Chicken
from our French-style rotisserie; the Shellfish “Chupino” from the stone hearth oven where we also bake pizzas, calzone and lasagna; and Sake-Marinated Wagyu Beef from our yakitori open-flame Japanese charcoal grill. What’s on your must-see list for South Florida?
Still have a lot to see in Palm Beach proper, but so far, the Surf Club Four Season Hotel restaurants, Le Sirenuse and Thomas Keller’s Surf Club Restaurant, Carlos Garcia’s Obra Kitchen Table, Daniel Boulud’s Boulud Sud, Sebastian La Rocca’s
Cvltvra, Javier Plascencia’s PEZ in Downtown Miami, and Brad Kilgore’s new place, Kaido, in the Design District—these are on my must-see list. Who inspires your work?
Most of my inspiration comes from nature and from my own gardens in Menton. Then my memories and my trips, which also play a big influence in my creative process. How often or how long will you be in Palm Beach and—aside from the restaurant—how do you like to spend your time?
Palm Beach is a very beautiful area, so I feel I can come anytime I want, but for sure I will come three or four times a year. I love nature, and as much as possible I spend it with my family. My favorite thing to do is to bring my kids to our garden and pick and taste the vegetables and fruits we grow together. We can spend hours doing it.

World-famous chef, Mauro Colagreco recently made his first entry into America right here on the Gold Coast. Florie’s at the Four Seasons Resort in Palm Beach brings Colagreco’s divine culinary offerings to South Florida. The restaurant’s name was created as a nod to Florida and to Colagreco’s passion for gardening. At Mirazur, his flagship restaurant in Menton, France—which holds three Michelin stars and is ranked third on The World’s 50 Best Restaurants 2018 List—he grows his own edible flowers, vegetables and fruits.
