Buffalo Bayou Park Cistern

Spanning larger than the size of a football field and filled with more than 200 concrete columns reminiscent of ancient Roman cisterns that lie beneath Istanbul, this historic underground structure at Buffalo Bayou Park was originally built in 1926 as an underground water reservoir. As with many coastal towns, a trip to Galveston Island is never complete without freshly caught seafood. Enter Buddy Guindon, longtime commercial fisherman and president of Katie’s Seafood Market at Pier 19. Although originally from Minnesota, he’s as local as it gets, having arrived to the island in 1978. Nearly 40 years later, the single boat with which he began his small fishing business has multiplied into a fleet of fishing vessels that Buddy continues to operate today. Meanwhile, Buddy’s wife Katie manages the market at Pier 19, where tourists, residents and restaurant distributors flock for fresh seafood. “I really like fishing,” Buddy says. “It’s a good way of life and makes for a good family business.” (Apparently, it also makes for good TV: National Geographic Channel aired “Big Fish Texas,” a reality series starring Buddy and the Guindon family, in 2016.) On one Saturday afternoon, Buddy and his sons take Hullraiser, a small commercial fishing boat, about 60 miles off the coast. They’ll return in the evening with 600 pounds of beautiful red snapper, all of which will be sold at Katie’s Seafood Market the next day. WHERE GUEST B OOK

PAINTING THE TOWN Houston’s public art push brings even more flair to its technicolor cityscape, from downtown to the outdoors and beyond.

Echoing the city’s initiative to be a world leader for civic art, Avenida Houston showcases various contemporary works by local Texas artists.

In the newer Avenida district that links the George R. Brown Convention Center and Discovery Green park, a three-level center atrium features Ed Wilson’s “Soaring in the Clouds,” a 67-foot-tall mobile of clouds and birds made of perforated stainless steel. The metal birds and clouds move about with the airflow of the spacious building, and a spectacularly lit ceiling above them constantly draws visitors’ camera clicks. Both “Soaring in the Clouds” and “Cloud Room Field,” an alluring work by Christian Eckart that features 600 double panes of glass at William P. Hobby Airport, serve as beacons to Houston visitors that they’ve entered a city that’s rife with public art—from the interiors of the Brown convention center to the sprawling green spaces that are prevalent throughout the Bayou City. Its status as a city that puts a priority on public art has been a long time coming for Houston. Some of the city’s public artworks, such as the famed historic statue in Hermann Park that pays ode to the city’s namesake, Gen. Sam Houston, have been around awhile; it was unveiled at the 445-acre public park in 1925. Borne out of an innovative, gourmet restaurant scene and a thriving arts community, Houston’s unofficial title as the “Culinary and Cultural Capital of the South” solidifies the city’s identity as a multicultural melting pot. “Houston earned this recognition in part thanks to the

diversity of the city,” said Leah Shah, public relations manager for the city’s convention and visitors bureau. “As one of—and arguably, the most—ethnically diverse cities in the country, our diversity sprouts an immense array of culinary options and artistic expression.” Houston’s status as one that truly cares and admires art, perhaps as much as any other city, gained much steam in 1999, when the city adopted an ordinance specifying that 1.75 percent of capital-improvement project funds be set aside for civic art. In 2017, as a result of that “percent-for-art” program, the Houston Arts Alliance was expected to dole roughly $15.4 million to local agencies that support and promote the arts. Another big push came in 2008 with the opening of Discovery Green across from downtown’s convention center. The 12-acre park, but one of some 650 urban green spaces across the city, replaced two large parking lots that had become asphalt-and-concrete eyesores. Discovery Green became a catalyst for improvements to the convention center area, including the opening in 2016 of the Avenida Houston district to which the park is linked. As the director of the Houston Mayor’s Office of Cultural Affairs, which oversees public art projects in conjunction with the arts alliance, Deborah McNulty said that in addition to the city’s “percent-for-art” program, the efforts of other groups (including the University WHERE GUEST B OOK

WHAT TO SEE Some of the artistic expression that grabs a good deal of Houston visitors’ attention includes Discovery Green’s “Synchronicity of Color” by Margot Sawyer. Added as a fixture of the downtown park when it opened in 2008, the Texas artist’s installment of some 1,400, red- and bluethemed aluminum boxes actually serves a two-fold purpose: It also conceals concrete stairwells that lead into the 44

of Houston, Rice University and the Discovery Green Conservancy) have also contributed to the city’s vast array of art through donations and fundraising efforts. “Houston is full of arts enthusiasts,” McNulty said, “and many groups want an art component as part of their mission or project, so the activity is wide and diffuse.”

The Graffiti and Street Art Museum of Texas is a project founded by Houston native and street artist GONZO247, whose colorful murals are among the most recognizable in the city.

football field. Can’t see through the ground? No problem: Grab this New York artist’s digital-scope creation, which allows viewers to scan throughout the cavernous cistern. Visitors will hear sounds that echo off its walls and 25-foot-tall concrete columns—as if one is physically surfing the Acropolis back in its heyday. “Personage and Birds” by Joan Miró at JPMorgan Chase Tower Plaza has also become a colorful fixture of downtown. This Spanish master, who became known as “the most surreal of all the Surrealists,” cast his influence on the Bayou City by creating the largest Miró sculpture ever commissioned. The 35-foot steel and cast bronze “Personage” portrays a woman with a crown of birds circling her head; the sculpture has remained a familiar downtown work since 1970. Several tourism services offer in-depth tours of Houston’s public art, such as those offered by The Wave, which transports visitors across the city aboard smaller buses known as jitneys. Lauren Barrash, owner of The Wave, said the tours often include sculptures that line Buffalo Bayou Park. Among the various points of interest

IN GOOD TASTE James Beard Award-winning chef and restaurateur Hugo Ortega opens up about his cultural influences, his latest culinary concept and his love for the Bayou City. INTERVIEWED BY JOHN RHODES

Houston has blown up on the food scene as of late. You arrived here in 1984. How has the culinary scene evolved in the city since then?

It has been absolutely wonderful to be a part of this city for more than three decades. From a gastronomic point of view, many of us came back [to Houston] in the 80’s when the economy wasn’t too friendly; but we stuck it out here and we’re so proud to represent Houston. To me, it seems like Houstonians have dedicated their heart and soul to make sure their city is an International city and competes with other great cities in America, and it’s started to pay off. I just hope by the end of my run I’m still a part of this great city. Who are some of the chefs with which you’ve developed friendships or enjoyed working alongside? Are there any that have influenced you in some way?

We have many of them—Justin Yu. Kaiser [Laskhkari] from

Himalaya, [who] created a dish in my name. He told me, “Hugo, you[‘ve] inspire[d] me to cook something for you.” It has been an incredible friendship. There are many other great chefs [here]: Chris Shepherd, Bryan Caswell, the Brennan family, Robert del Grande, the Cordua family. Those people have been influential and have opened the doors for second-, third- and fourth-generation cooks to come along. It’s been a bit of effort from everyone, and I thank them for making it all possible. How did growing up in Mexico City influence your culinary background and restaurant Xochi in the new Marriott Marquis?

[Diversity] is one of the greatest aspects this city has to offer … [Mexico City] is the essence of our cuisine [at Xochi], and we represent it at the highest stage in our city … It’s the first time we have had a restaurant in a hotel, and it’s different in many ways; [for one,] we have an interna-

tional audience … we are always learning how to be more successful with Xochi, but [both] it and the Oaxacan cuisine have been well received and I could not be happier. At Xochi (and other concepts), the cuisine is a more chef-driven approach to the food of Mexico, as opposed to Tex-Mex fare, for which Houston has made a name for itself. Have you developed an identity there, carving out a niche with more traditional Mexican dishes?

You could say that. We bring our culture, and ingredients and eventually turn those into wonderful food. That is where we influence the gastronomic scene. We love what we do, but don’t get me wrong—I get my Tex-Mex too! You’ve got to. So where do you go for Tex-Mex?

It’s the quintessential American tale: A young Mexico City native immigrates to Houston with little more than a pipe dream and a will to work hard. He’ll get his start in the restaurant industry as a dishwasher at a local bistro called Backstreet Café, owned by a woman named Tracy with whom he’d fall in love and later marry. A decade and a culinary arts degree later, Hugo Ortega assumes the role of executive chef at Backstreet Café. Together, he and Tracy coown four of Houston’s most established restaurants—Hugo’s, Caracol, Xochi and of course, the acclaimed chef ’s “beloved” Backstreet Café. Hugo’s hard work received much-deserved recognition in 2017, when he became the first Mexican-born chef to earn the prestigious title of Best Chef: Southwest at the James Beard Awards. Here, he dishes on his favorite Houston hot spots, and how he’s making his mark on its multicultural cuisine scene.

Q&A You spend so much time in the kitchen at work. Do you still like or find time to cook at home?

Most of the time [my wife] Tracy cooks at home, and I always go in there and clean up after her. Sometimes I fire my grill up. I have a Green Egg, [so I will] grill a piece of meat or fish on the weekend and share it with family. Speaking of family, do you and your brother (pastry chef Ruben

experience ... We bring all the[se] peppers, herbs, cocoa beans and all these unique ingredients that we [source directly] from Oaxaca to be able to cook and have those Oaxacan flavors. That’s the only way to accomplish that. I’ve been bringing in these peppers—and the grasshoppers— with my friend for 16 years, since we started Hugo’s. Now we have a new insect called chicatana and we make mole with that.

He’s super talented and creates incredible recipes, pastries and desserts. We try to complement each other ... but of course, I want my food to be better than his! [Laughs] Sometimes we go about it in a friendly, brotherly way.

You’ve got to try the moles … [our] mole tastings [are] a culinary experience. We have meat entrées like Barbacoa de Res de Zaachila, which is a skirt steak with a chile paste that we wrap with hoja santa, then roll it up and grill it. That’s absolutely wonderful. The oysters we cook in the horno [a wood-fired Mexican oven].

At Caracol, I recommend the roasted snapper. I am also a big fan of the crudo, shellfish and ceviche. What was it like earning the James Beard Award for Best Chef: Southwest after being a finalist for six years straight?

We are overwhelmed with the love and friendship [we’ve received]. It’s been something unbelievable we have accomplished. I was telling my friends this, and I’ll tell you right now: I think the only reason we won is because every Houstonian was behind me and really supported us.

All this can be done through the metro bus because it connects the city in a way that’s convenient. These days, there is so much the city has to offer—the theater, the symphony. It’s just an absolutely wonderful city to come and experience. The new Marriott Marquis [where Xochi is located] has a lazy river pool on the sixth floor in the shape of Texas! Yes, it is very “Texas” isn’t it? What do you do for fun on your days off?

What should first-time guests order at your namesake concept, Hugo’s?

They for sure need to try the carnitas and the stuffed poblano peppers. Sunday Brunch at Hugo’s is also a wonderful experience because you have the opportunity to choose what you like. We also have brunch at Caracol, Xochi and my beloved Backstreet Café, where we serve brunch on Saturday and Sunday. What are some places or activities you would recommend to someone visiting Houston?

There are so many things to do,

I like to travel. Recently we went to Austin and San Antonio; the Texas Hill Country is beautiful. I [also] like to visit our local growers [and] stay in touch with everybody. So what’s next for Hugo Ortega? Where do you see your career in the next 10 years?

I would love to continue trying to earn the love of this city and [that of ] my peers. I would never say no to a great opportunity if it came our way in any shape or form. With its 360-degree, fully immersive experience and pixel-free resolution, Houston’s high-tech planetarium is the only one of its kind on Earth.

Once the unprecedented pinnacle of sports stadium infrastructure, Houston’s original Astrodome still stands today, an abandoned homage to a bygone area. Not far away, however, sits another city institution that houses, in its most literal form, another “Astrodome.” Like the original Houston venue, it’s setting a global standard for technology and multimedia production. Carolyn Sumners, VP of Astronomy and Physics at the Houston Museum of Natural Science and an adjunct professor at Rice University, spearheaded the effort to maximize the potential of the internationally renowned destination’s Burke Baker Planetarium, which opened in 1964. Just seven years before a 20-something Sumners, armed with little more than an astronomy degree from Vanderbilt, arrived at the museum for her first day on the job. She’s been there ever since. Sumners had an ambitious goal: to put to rest, once and for all, the pixelated—and hardly realistic—planetarium experiences of yesteryear. She imagined one that offered an immersive, visual adventure that came as close as possible to what an astronaut would see in space. “What we wanted, if at all possible ... was for the experience to be the resolution of the human eye,” Sumners said, a challenge considering that neither the laser projectors nor the Evans & Southlerland-developed software needed was available at the time. Considering the planetarium’s technology is already used by NASA to train astronauts on skills like “celestial navigation” (that is, the ability to orient oneself by identifying starfields)—a state-of-the-art facility located in Houston would be the most logical to set

a new standard. After all, she said, “this is Space City.” When envisioning what the planetarium’s night sky might look like, the answer was simple: West Texas. “[We wanted] a lonely road, 10 million miles from nowhere ... where it’s so dark at night [that] you feel like you could read the newspaper by [the light of ] the Milky Way,” Sumners said. “We wanted that sky.” That’s exactly, what they got, too. It required 10 stateof-the-art Sony laser projectors, 20 graphics-optimized computers and one master processor to stitch together one seamless, 360-degree image made of more than 50 million unique pixels, giving it the virtual feel and out-of-thisworld impact Sumners had hoped for: the Burke Baker Planetarium became “the world’s first True8K Theater.” To put that in perspective, it’s nearly 10 times the picture quality of the Jumbotron at Houston’s NRG Stadium. After nearly 50 years at the museum, Sumners she’s managing the creative direction and production of the planetarium’s programs—from developing team-building “missions” and helping astronauts find their way through the galaxy to scripting the forthcoming “Tales of a Time Traveler,” which features Doctor Who’s David Tennant. Among stargazing and touring the International Space Station, guests can venture to Mars or revisit the Titanic, all in a three-dimensional, better-than-IMAX virtual world that feels impossibly tangible. “Kids will reach up and try to grab the stars,” explained Sumners. And having the ability to inspire future generations to ‘reach for the stars’? That might be the Burke Baker Planetarium’s most impressive achievement yet. WHERE GUEST B OOK
