SPANISH: JALEO (COSMOPOLITAN) Humanitarian and chef José Andrés’ Spanish roots inform this colorful restaurant where paella and tapas reign supreme. The indulgent menu features delicacies such as Jamon iberico de bellota, the most luxurious cured meat in the world, and the signature acorn-fed pork of which Jaleo is the first American restaurant to offer. FRENCH: JOEL ROBUCHON (MGM GRAND) Joel Robuchon is Las Vegas’ most exquisite restaurant, period. A true jewel box, it was designed to capture the essence of Paris in the 1930s, and prides itself on its service. One of Joel Robuchon’s three restaurants in the United States, it is the only three Michelin starred and AAA Five Diamond restaurant in Las Vegas. A tasting

menu is the only menu served here, but you’ll want as many different bites as you can—you’ll start with Oscetra caviar and end with a decadent dessert such as Le Sphere, a bubble sugar sphere filled with blackberry yogurt sorbet, candied lemon and a violet cream.
