The Valley of the Sun has some great spots to relish superb brunch flavors and order up a creative cocktail. Say “cheers” to the weekend at one of these boozy brunch options. But weekends offer something different—Spiked Cereal. You can go sweet with Cinnamon Toast Crunch and RumChata or kick up the spice with Apple Jacks, RumChata and Fireball. Saturday morning cartoons were never like this. If you prefer a full brunch, pair the Huevos Ranchero or Roasted Veggie Omelet with a $5 House Bloody or Mimosa. A perennial favorite boozy option is the Palomimosa, with sparkling wine, tequila, St. Germain and grapefruit juice. Really looking for that breakfast taste? The Bacon

and Eggs features bacon-infused Elijah Craig Bourbon. Located inside the mid-century modern Hotel Valley Ho, ZuZu (6850 E. ood is meant to be a sensory experience, from the taste to the texture, and the smell to the presentation. But at these restaurants, a meal becomes even more—the destination itself is an experience too. At Organ Stop Pizza (1149 E. Southern Ave., Mesa, 480.813.5700. www.organstoppizza.com) in Mesa, take a seat at one of the tables, marvel at the sight of one of the world’s largest and finest pipe organs looming at the front of the room, and then get ready for quite a show, as the restaurant serves up pizza, pastas, sandwiches, as well as music from its Mighty Wurlitzer. The Wurlizter, which was originally built for the Denver Theatre and installed in 1927, is played nightly by award-winning organists. Everything from Bach to rock is played to crowds of up to 700 people—and yes, requests are accepted. Note if you go: This restaurant only accepts cash or checks. The Valley might not be the Wild West of yesteryear any longer, but diners can still enjoy a cowboy Western experience at Rustler’s Rooste (8383 S. 48th St., 602.431.6474. www. rustlersrooste.com), a mountaintop eatery established in 1971, on the original site atop a butte in the foothills of South Mountain that was rumored to be a hideout for cattle rustlers. Today, be greeted by “Horney the Bull,” a live steer, who welcomes guests outside the eatery’s old mineshaft. Even entering the locale is an experience—you can access the dining room by sliding down a tin slide, which originates on the second floor near the waterfall (yes, there are stairs, too!). Once inside, enjoy a dinner of steaks, ribs, chicken or even rattlesnake. The nightly entertainment includes a live country Western band, line dancing, card sharks and magicians. Since 1993, customers have flocked to this local pizza chain for its decadent, classic dessert: the Original Pizza Cookie. Toffee Banofi Sweet Republic

Perhaps the Valley’s most famous sundae, Sweet Republic’s Toffee Banofi is a texture-rich mix of two scoops of Madagascar Vanilla, almond toffee brittle, fresh bananas, salted caramel sauce, and whipped cream all piled high in a waffle bowl. Sweet Republic chef and co-owner Helen Yung fell in love with banoffee (a mix of toffee and banana) pie when she was working as an investment banker in London and decided to recreate the dish in a sundae. Cowboy Candy Bar LON’s

Back in 2010, LON’s at The Hermosa Inn’s Chef Jeremy Pacheco wanted to create a signature dessert for this boutique Paradise Valley hotel. He decided on an upscale take on a Snickers bar, and the Cowboy Candy Bar was born. The “candy bar” is chili spiced ganache that’s served with marcona almonds, crispy feuilletine, a dash of salted caramel sauce, and a scoop of caramelia ice cream made with Valrohna Caramelia chocolate that makes for a work-of-art presentation. $11. 5532 N. TEQUILA 101 WITH THE TEQUILA GODDESS

Q&A Katie Schnurr The Valley’s Tequila Goddess, Katie Schnurr, at the Fairmont Scottsdale Princess, was certified by the Consejo Regulador del Tequila (Tequila Regulatory Council) in Mexico.

Q: Now that we’re not in college anymore, what is the “proper” way to sip tequila? I can guarantee you will hear me say this countless times a night, “SIP IT! DO NOT SHOOT IT!” I like to say we break bad habits in La Hacienda, as I give a full Tequila 101 crash course with each tequila flight that I bring out.

Q: Why does each brand come in three bottles? Most brands have at least three bottles to showcase the different aging categories of their tequila: blanco, reposado and añejo. Sometimes [a company will] even offer an extra añejo as well. Think of blanco as the babies in the tequila world—they have no aging process. Reposado means “rested” in Spanish, so that tequila is aged anywhere from 2 months to just under one year in oak casks. Añejo, literally meaning “aged,” sits anywhere from 1-3 years, and anything over 3 years is considered an extra añejo because they are extra aged. Q: What would someone looking at a tequila list need to know? Basically, if you are the type of person who prefers drinking e14 P H O E N I X + S COT T S D A L E I e p•i•cure 2017 - 2018

vodka or gin, your palate will most likely prefer a lighter aged tequila like a blanco or lightly aged reposado. If you enjoy whiskey, bourbon or scotch, I would highly recommend a heavily aged añejo or extra añejo, and in some cases, even a mezcal (if you are feeling adventurous!). Q: What is the deal with mezcal? Is it still tequila and what is with the worm in the bottle? The best way to describe this spirit is kind of like tequila’s crazy cousin. Tequila must be made strictly from Blue Webber Agave only, whereas mezcal can be made from any type of agave, as long as it is grown in Mexico and made and produced in the Oaxaca regions. The most distinct difference between tequila and mezcal is that mezcal has a very, very smoky flavor because they smoke the agave in the cooking process. I like to think of it as the scotch of the agave world. The worm is just for fun— there are several myths about it like, “if you eat the worm, you will hallucinate,” or “If the worm isn’t deteriorating inside the bottle, then your insides won’t deteriorate, either.” Q: Do you have a favorite tequila? I have many different tequilas that are my favorites! I always say, like wine, it depends on what mood I am in. Sometimes I prefer something light, crisp and refreshing like a blanco, and other times I want something to warm me up by the fireplace like an oaky añejo. —By Michelle Glicksman

Q: Ok, so what is a “Tequila Goddess?” Think of me as a wine sommelier for tequila (like a ‘Tequilier’). Tequila is actually like wine in a weird sense and can be quite complex. My job is to help guide guests through their drinking experience by educating them on the differences between tequilas and, most importantly, how to drink it the proper way!

To tenderize protein, lightly dust it in flour prior to cooking in a hot pan to seal in the juices. Adding a healthy splash of white wine to that same pan towards the end of the cooking process (on high flame) will enrich the flavor of the meat.
