MALU NIU HAWAIIAN ENTERTAINMENT TUESDAY – FRIDAY, 6-7 PM Settle into the leisure of the evening under a Hawaiian moon while you listen to the nahenahe (sweet) melodies of Mele Hawai‘i from award-winning musicians, and allow the gentle movements of the hula (Hawaiian dance) to mesmerize you amid the flickering of torch lights.
MELE PĀKOLU A trilogy of performances at the beginning of every month features the hallmark instruments of Mele Hawai‘i: Steel Guitar Night, Slack Key Guitar Night and Hawaiian Piano Night. These instruments served as the impetus to make Mele Hawai‘i the diverse genre it is, appreciated the world over.
HULA KAHIKO SATURDAY, 6-6:30 PM The history and lore of Hawai‘i is found in the many hula traditions that have survived over Hawai‘i’s history. The oli (chants) and mele (poetry and song) that comprise the various repertoire of hālau hula (hula schools) are among Hawai‘i’s treasures. We gladly share them with you every Saturday evening.
HANOHANO HELUMOA CONCERT SERIES Each quarter, we showcase a full evening of Mele Hawai‘i that begins with an exciting performance from a community group, followed by Hula Kahiko and topped off by one of Hawai‘i’s renowned musicians— a representation of the very best of musical offerings.

AUNTIE PUA: LIVING LEGACY
“Hula is life. Hula expresses all that we hear, see, smell, taste, touch and feel. Everything we do in hula allows us to tell our stories.” — Auntie Puake‘ala Mann
With the morning sun’s rays streaking through the trees in The Royal Grove, a group of people gathered with a singular purpose: To learn hula. Wearing a sundress with a floral brooch clipped to her hair, Puake‘ala Mann took to the stage and exclaimed, “Hula is life.” It is a mantra that she has shared since she took her first classes with kumu hula (master teacher) Maiki Aiu Lake.
As she faced the crowd, her feet and hips rhythmically moved, instructing attendees to kāholo right, kāholo left; hula right, hula left. “This is the most common and basic step when learning this Hawaiian dance, which is an art like ballet, and jazz and contemporary dances,” Mann explained to attendees. “Hula expresses all that we hear, see, smell, taste, touch and feel.”

However, this wasn’t always the case for Mann. As a young girl, she had taken a few hula lessons but she found them to be unstructured and void of cultural meaning. She went through the motions, following steps that she didn’t quite understand. But one day, she asked a friend why she was researching her genealogy. “She told me it was her homework for her hula class,” Mann recounted. “She had to research her family so she could dance to ‘Mī Nei,’ a classic song that means ‘How About Me.’ I never heard of being assigned homework for hula and this really piqued my interest. What happened next was life changing.” When she returned home, she called Auntie Maiki’s school and asked if she could take a class. She was asked for her name and phone number, and told that someone would call her. A week went by, no one called. A month passed and there was still no contact from the school. By this time, Mann had her self-doubts, questioning why they didn’t want her. She had always been welcomed by the other schools, but why not now? Finally, after three months, she received the call. She was thrilled. During her first lesson, Mann immediately noticed a “structure.” The students were all the same age and the same gender, which was unlike her previous experiences when males and females, young and old were grouped in a single beginner’s class. And then came the homework. “You do your research or you take a vacation,” Mann said. “In other words, you either apply yourself to the best of your ability or don’t come back. You have to work to learn hula and you have to value it. Everything that we do in hula allows us to tell our stories.” After years of attending Halau Hula o Maiki, Mann had grown to appreciate hula and all of its inherent life lessons. She was grateful for

R | ‘OHANA Auntie Maiki who, at the time, was Royal Hawaiian Center’s first hula lesson instructor when it opened in 1979. Mann would often gather with her “hula sisters” at Auntie Maiki’s home, sharing stories and dancing. They would all become very close friends. One evening in 1984, Mann had picked some flowers to take to Auntie Maiki’s. When she was ready to leave, she casually told Auntie Maiki that she would see her tomorrow since Saturdays were her days of helping out at the school. Auntie Maiki’s response was stunning. “I am going to die soon,” recalled Mann of that memorable Friday evening back in 1984. “I want to know, though, that you’re going to help my girl child (her daughter Coline).” Less than 24 hours after having this conversation, Auntie Maiki suddenly passed. “We were at her school when family members called us,” Mann said. “It was a shock to everyone, not only at the school but in the community. She was the grand dame of hula and we lost her too soon.” In the ensuing days, Royal Hawaiian Center would invite Coline to take over her mom’s classes. She declined, citing that she wanted to focus on her own halau. So Coline reached out to Mann, encouraging her to be the next hula teacher. Mann, though, was working full-time at the University of Hawai‘i-Mānoa. “Can you see me as a secretary? So I quit my job and started here in September 1984,” Mann said with a smile. “I wasn’t nervous, I was more fearful. I was now representing Auntie Maiki’s school and her legacy. I’ve been here half of my life. I do this so that the legacy of Auntie Maiki lives on. She gave me this opportunity, this chance to grow, to move in a different direction, to discover myself.”

Mann describes her teaching technique as “mirror image,” meaning she never turns her back to the audience. She shares basic hand gestures, footwork and body movements that complement mele— chant or song lyrics. This is what she learned from Auntie Maiki and this is how she will forever teach. As the hourlong lesson neared the end, students began to move in unison, practicing the baby steps that Mann had taught them. Backs straight, they smiled as they raised their arms to the moon, swayed their hips and took pride as they kāholo right, kāholo left. One. Two. Three. They were dancing the Hawaiian hula. “Everything I do, she has taught me,” said Mann of Auntie Maiki. “All her words are still true today. She was an inspiration. And when I teach these classes—even though I may have taught the same steps and the same songs hundreds of times—I still put out the same energy and excitement as if I were teaching them for the first time. That’s what Auntie Maiki would have expected.”

OUR STORY BEGINS
centers on an ali‘i (members of ancient Hawai‘i’s ruling class), whose contributions form the foundation of our identity today. Our story begins with Chief Mā‘ilikūkahi, who ruled all of O‘ahu in the 1400s and 1500s. Waikīkī, Hawai‘i’s tourist hub, is often thought of as a strip of land parallel to the ocean between Ala Wai Boat Harbor and Lae‘ahi, or Lē‘ahi (a variant spelling), now known the world over as Diamond Head. The
towering hotels, condominiums, timeshares and shopping centers that flank world-famous Kalākaua Avenue visually reinforce this notion. Waikīkī, however, is an ahupua‘a (a wedge-like section of land that extends from the verdant mountain watershed through the low-growing shrub plains right out into the ocean blue), which begins near Ke‘eaumoku Street and ends near Kuli‘ou‘ou Road. Today, the boundaries of the ahupua‘a on O‘ahu are designated by RoyalHawaiianCenter.com

brown signage, thanks to the Ko‘olaupoko Hawaiian Civic Club. If you travel around O‘ahu, be on the lookout for these ahupua‘a markers. Now to the hero of our story, Chief Mā‘ilikūkahi. Mā‘ilikūkahi is one of O‘ahu’s most prolific rulers, and is remembered for his sagacity and courage. He immediately began to enact his vision once he succeeded as ali‘i nui or ali‘i ‘ai moku, the uncontested and absolute ruler, of O‘ahu. At this time in Hawaiian history, each island was ruled by an ali‘i ‘ai moku. One of Mā‘ilikūkahi’s earliest actions was to relocate the political center of O‘ahu from Waialua on O‘ahu’s north shore to Waikīkī. Waialua and ‘Ewa on the western end of O‘ahu were the prior seats of power. The relocation was no small feat. It required the movement of several hundred people and numerous supplies, by foot, from Waialua to Waikīkī, more than 30 miles. Additionally, new housing had to be constructed and the land

worked, to support its population. The relocation was pivotal to Mā‘ilikūkahi’s master plan. Another part of his plan was the redefining of communal land boundaries, and in some cases, redistricting to establish new land divisions. This was done to rectify the uncertainty and ensuing disputes that frequently arose from undefined boundaries. The land re-apportionment, too, was no small undertaking, and required an exhaustive re-surveying of all lands, again by foot. The amount of time and effort it took to complete this task was monumental. The end result was a system of lasting boundary lines and stable communities. These boundaries are still in use and relevant today. The ali‘i ‘ai ahupua‘a or konohiki, the ali‘i who governed the system of ahupua‘a, previously

R | CULTURE engulfed in reoccurring land quarrels, were now free to focus on the organization and administration of daily life. Maka‘āinana, the common folk, were free as well and could now devote much needed time to their industry and craft. Making Waikīkī his home was a purposeful decision on Mā‘ilikūkahi’s part. Waikīkī means “spouting waters.” Here, the land was fertile, fed by rivers and underground springs. Using the abundance of fresh water, wai, to his advantage, Mā‘ilikūkahi turned Waikīkī into an agricultural metropolis. Within Waikīkī proper, Mā‘ilikūkahi trained his sons and grandsons to be civil engineers, horticulturalists and highly effective public administrators. It could be arguably considered Hawai‘i’s first

His descendants graduated to becoming konohiki, and under their guidance, large swaths of land were transformed into high-yielding, food-producing terraces, every kānaka was set to purpose, and fresh water flowed from the mountaintops to the ocean—literally, the life-giving veins of the land. During the Center’s revitalization from 2005 to 2008, Kamehameha Schools, the landowner of Helumoa, along with The Festival Companies, which was hired to oversee the renovations, returned to Helumoa’s story and drew inspiration from it. The original “brutalist” architectural philosophy, from which Royal Hawaiian Shopping Center was engineered, was happily abandoned. The new Royal Hawaiian Center would be nurtured and grow from a sense-of-place-based philosophy

called pili‘āina, meaning “a kinship with the land.” To commemorate the Center’s new life, Kamehameha Schools commissioned a set of three paintings from one of Hawai‘i’s young, notable artists, Solomon Enos. The first of these paintings pays tribute to Mā‘ilikūkahi. While being an homage to Mā‘ilikūkahi, Enos paints him unassumingly on the left. The greater part of the subject matter is dedicated to the ‘āina, land—as I would venture to say, Mā‘ilikūkahi would want. Enos presents the viewer with sweeping views of Waikīkī right into the receding nooks and crannies of the adjacent valleys (Makīkī, Mānoa, and Pālolo). A scene of plentiful plants carpets the plains, and the mountains are distant in the background, juxtaposing the urban jungle of today’s Waikīkī with the expanse of Waikīkī, the ahupua‘a. The theme of plenty is restated in the presentation of prepared foods laid out in front of their farmer-in-chief, a veritable farm-to-table smorgasbord. The color palette is brilliant, and the bright hues of orange and yellow herald the dawning of a new day— indeed, the rising of a new era in Hawaiian history. Enos presents us with Mā‘ilikūkahi’s vision realized: a thriving, vibrant society. A large, mural-sized reprinting of Enos’ Mā‘ilikūkahi is prominently on display in the arcade of Building B, above Kobe Jewelry, Lole Hawai‘i and Anteprima Wirebag. A smaller reprinting hangs on the walls of the Heritage Room in Helumoa Hale, which is located in The Royal Grove. Coconut Harvesting
Towering palm trees bend and sway amid the gentle trade winds, their fronds waving as if welcoming visitors. Some call it the “tree of heaven.” Others refer to it as the “tree of life.” And in ancient Polynesian times, the coconut palm was a revered plant that yielded many uses. Believed to have originated in the Indo-Malaysia-Melanesia triangle, the coconut is considered a “canoe plant” in Hawai‘i, with varying mythic tales as to its origins. According to one legend, Apua and Aukele, two brothers who lived on Kaua‘i, sailed from Kahiki (Tahiti) with the palm tree seeds, along with taro and bananas. They landed at Puna on the Hawai‘i Island and planted the first trees there. Alternatively, another folklore credits the god Kane with introducing the coconut to Hilo, planting it there to provide food for “earth children.” Another well-known legend recounts the story of a young Hawaiian boy, the son of Hina and Ku, the goddess of female spirits and the god of male spirits, respectively. After returning to his homeland of Tahiti, Ku is longed for by his son who solicits the help of his mother. In response, Hina chants to their ancestor, the coconut tree, singing “niu-ola-hiki,” (o life-giving-coconut of Tahiti). She continues with “niu-loa-hiki” (o far-traveling coconut) when a coconut sprouts in front of her. She wakes her son
and instructs him to climb the tree and hold on while she continues chanting. The coconut sways and bends, stretching and growing over the ocean until its leaves rest on Tahiti, and son and dad are reunited. Regardless of origin, the coconut palm is one of the most versatile plants of the tropics. Its trunks, husks, shells, leaves and fronds are turned into containers, bowls, pahu (drums), clothing, fans, toys and tools. In the kitchen, the cocos nucifera (coconut) has long been a staple in the Hawaiian diet, used to create such sweet treats as kanten, a gelatinous confection that’s firmer than Jello-O; and haupia, sweet coconut cream custard cubes that are often served at lū‘au. Meanwhile, the copra (dried coconut flesh) can be incorporated into desserts, while the desiccated coconut is frequently used as a garnish. One of the newest açaí bowls at Island Vintage Coffee incorporates frozen coconut cream, and shaved and toasted coconut to produce a haupia-like flavor. “We also have our Mango Peanut Butter Sandwich, which uses coconut peanut butter,” says Island Vintage Coffee president Paul Kang. “For beverages, we have Coconut Kona Mocha and Island Latte, which has coconut and macadamia. A duck leg is housed in a cylindrical glass, which, once lifted, releases an aromatic plume from applewood-smoked bacon. It’s then transferred to an awaiting pool of coconut-infused curry that’s garnished with a surprising list of ingredients, including grapes, fresh chunks of local pineapple and sweet lychee. The ying and yang of flavors offers a well-balanced profile of spiciness, sweetness and acidity.

“Thai cuisine doesn’t have to be all spicy,” says the restaurant’s namesake Noi Lapangkura. “Thai dishes offer different components, and are very intricate and delicate.” For a healthy treat, Banán prepares towering swirls of nondairy banana soft-serve, which come in multiple flavors, including the original banana, lilikoi, green tea, chocolate-macadamia, açaí, and a combination of beets, ginger, lemongrass, turmeric and banana. Among the more popular selections is the Duke, which is composed of the original banana Banán with açaí, and garnished with fresh papaya, pineapple, strawberries, a drizzle of golden honey and a generous sprinkling of shaved coconut. Doraku Sushi offers its own magical elixir—but this one is for adults only. The “Painkiller” starts with a shot of rum that is then mixed with Coke, orange and pineapple juices, and finished with a dose of Coconut Cream. has replaced the sugary drinks in the refrigerator case or on the shelves at grocery stores. Such elite celebrities as Jessica Alba, Gwyneth Paltrow, Rihanna, Madonna and Alex Rodriguez have all endorsed certain coconut water brands, touting the refreshing beverage’s nutritional values.
According to a study published in the Journal of the International Society of Sports Nutrition, coconut water performed as well as a carbohydrate-electrolyte sports drink when it came to markers of hydration and exercise performance. With its electrolyte properties, coconut water contains nearly all the essential nutrients the body needs to rehydrate. Other research studies suggest that cytokinins (kinetin and trans-Zeatin) in coconut water found to have significant anti-aging, anti-carcinogenic and anti-thrombotic (anti-clot formation) effects. Interestingly, the thin watery liquid served a different purpose during World War II when both sides of the war in the Pacific regularly used coconut water—siphoned directly from the coconut—to provide emergency plasma transfusions to wounded soldiers. No wonder it’s considered the tree of life.

A Brave ‘Niu’ World While not indigenous to Hawai‘i, the versatile niu (coconut) was embraced by ancient Hawaiians, who used the tree and seed nut in daily life. Coconuts vary in flavor and use, depending on their age. They can be eaten anywhere from seven months old to 12 months, when they fully mature and fall naturally from the tree.
1 The youngest edible stage of a coconut, “poppers” (seven months old), have become one of the hottest new drink trends in Hawai‘i. When opened, an audible pop is heard and water comes spilling out, hence the name “poppers.”
2 According to late author Lynton Dove White, the jelly-like spoon meat of a green coconut (eight months old) is called ‘o‘io. Delicate, mild and delicious, jelly meat can be some of the first solid foods given to babies.
3 At nine months old, this stage of the maturation is called haohao. The meat can be eaten raw or used to thicken smoothies, prepare coconut bacon and coconut noodles, and blended to make coconut yogurt.
4 Rubber meat describes the 10-month-old coconut. Called ho‘ilikole, it was traditionally eaten raw and seasoned with red Hawaiian salt then served with poi. Called the o‘o stage at 11 months, the meat is ideal for producing coconut milk.

plantation-style aesthetics complete with louvres, hand-painted fixtures and original Hawai‘i-exclusive merchandise, this grab-and-go concept offers local-style takeout lunches for visitors looking for a quick, high-quality bite. This newest concept lists a host of freshly made menu items, which include such gourmet sandwiches as barbecued pork with mixed berry jam on Hawaiian taro bread; Barbacoa beef with chipotle sauce; tzatziki turkey; and Green Goddess, a vegetarian sandwich prepared with tomatoes, sprouts, cucumbers, carrots and radishes, all tucked into taro bread with dill aioli. A freshly baked savory quiche is composed of avocado, mushrooms, tomatoes, spinach, bacon and mozzarella cheese. WOK TO WALK The concept is simple: Offer fresh, nutritious, quick and flexible cuisine with a three-step menu that’s friendly to vegans, vegetarians and meat lovers alike. Start by choosing your favorite proteins, then select your toppings and sauce and ‘wok’ away. While the food is prepared right in front of you, its website also offers a nutrition calendar—sharing calorie, protein and carbohydrate content—so you can create the most suitable wok for your diet. ISLAND VINTAGE WINE BAR TsuruTonTan Noodle Brasserie
TSURUTONTAN UDON NOODLE BRASSERIE When parsed, “tsuru” means the sound of slurping noodles, “ton” signifies the sound of kneading and shaping udon, and “tan” defines the sound of cutting udon. In unison, these three sounds embody the spirit of the eatery’s handmade udon. Expect large bowls of savory udon, including the signature TsuruTonTan Deluxe, teeming with shrimp tempura, short plate beef, chicken, wakame seaweed and egg. The extensive menu also lists a variety of appetizers, cold noodles and donburi. Opening in Spring.
Like its sister eatery next door, Island Vintage Wine Bar aims to please. As its name suggests, this casual spot will offer a good selection of white and red wines (between 40 and 48). A Cruvinet temperature-controlled system keeps wines as fresh as the moment they are uncorked, helping revolutionize wine-by-the-glass sales, making wine bars like this one possible. Menu-wise, guests can expect wine-friendly cuisine. Opening late Spring.

TIM HO WAN Hawai‘i will soon have its own location of Tim Ho Wan, a Hong Kong-based dim sum chain that rose to fame for being the “world’s most inexpensive Michelin starred restaurant.” It’s the brainchild of chefs Mak Kwai Pui, who was once a chef at Lung King Heen, three-star Michelin award winner at Four Seasons Hotel Hong Kong, along with his partner Leung Fai Keung. Since they opened the first location in 2009, the two have expanded to 45 outposts around the world. Opening late Spring.

RESTAURANT SUNTORY With a 10-week face-lift completed back in November, Restaurant Suntory has gone from the dark ages into a period of enlightenment, metaphorically speaking. Once dark and framed by shoji screens, the washoku dining room is now much brighter. Floor-to-ceiling framed windows reveal more natural light and flora. However, what this newness can’t conceal are the plumes of aromatic smoke that permeate the adjacent teppanyaki room. There, talented chefs grill and dice cuts of tender meat, seafood and vegetables without twirling knives and spatulas, and “exploding volcanoes.” Chefs instead focus on preparing the meal and ensuring that their guests are well fed and satisfied. UNCLE TETSU JAPANESE CHEESECAKE Resembling his trademark jovial caricature, Tetsushi Mizokami wore a broad smile when he opened his first-ever Uncle Tetsu Japanese Cheesecake in the U.S. at Royal Hawaiian Center. Celebrating its first anniversary in March, Uncle Tetsu is famous for its cheesecakes, which are light, airy and not overly sweet, unlike its New York counterpart. Each individual cheesecake is handcrafted with natural ingredients and baked in a specially calibrated oven. “I’ve been making cakes since I was 5 years old,” smiles Mizokami, or Uncle Tetsu, as he prefers to be called. “The secret to my cheesecake is in the method I developed and the ingredients I use.” Building B, Level 2, 808.922.9680.

INFORMATION Welcome to the largest center in the heart of Waikīkī. PARKING A minimum purchase of $10 is required. The first hour of validated parking is FREE. Two additional hours are available for $2 per hour, with a maximum of up to three hours. For example two hours of validated parking will cost $2 and up to three hours of validated parking will cost $4. Regular rates of $2 per 20 minutes segment/$6 per hour will apply thereafter.
