Elaborate Hawaiian celebrations, feasts called ‘aha‘aina, began to take on a new moniker in the 1850s. Over the years, they have become known as lū‘au, named for the delectable leaf shoots of the kalo (taro) enjoyed at milestone occasions. “‘Aha means a gathering or assembly, and ‘aina refers to eating a meal,” explains Wendall Kalanikapuaenui Silva, a Hawaiian kahuna (priest) and a former lū‘au host. “A smaller feast is called a pā‘ina, a small luncheon or 44 i Royal

dinner party. In the Hawaiian tradition, gods represent the foods that will nourish us and sustain us spiritually and physically.” Ola is our word for life. Ola is a divine gift to be cherished, celebrated anew as each new life makes its way into the world. For generations, Hawaiians have gathered at pā‘ina piha makahiki, known today as “baby lū‘au.” This milestone marks the end of a child’s most vulnerable time, the first year of life, and applauds the kamaiki

An old saying in Hawaiian goes like this: He manawa kūpono no ka hana a he manawa kūpono nō ho‘i no ka le‘ale‘a. There’s a time for work and a time for play. Our ancestors were pa‘ahana—hard working; skillfully managing daily tasks of mahi‘ai (farming), lawai‘a (fishing) and myriad ‘oihana (occupations) that sustained their ‘ohana (families) and the larger community. Pau hana, or “the work is done” was and is cause for daily celebration. He‘enalu (surfing), hoe wa‘a (canoe paddling), or spending quality time with hoaaloha (friends) and ‘ohana … in Hawai‘i all of these things are celebrations.

The best-kept lū‘au secret is the pau hana party. After weeks of food prep and hard work ensuring that guests have a le‘ale‘a (good fun) time, it all crescendos at the “after party” that sometimes lasts well into the next day.
Here’s a Tip
After renting tents, buying supplies, hiring security, paying for electricity, and donning new mu‘umu‘u and aloha shirts, don’t forget about the mele (music) and, of course, hula.

Pua‘a kālua, roasted pork, is a lū‘au mainstay that was once reserved for royal feasts and sacred ceremonies. Fish, poi and limu are standard, along with pāpa‘i (raw crab), ‘opihi (sea limpets), ‘ōpae (shrimp), wana and hā‘uke‘uke (sea urchins), lū‘au leaf with moa (chicken) or he‘e (squid) and more. Modern menu add-ons reflect the influence of several waves of immigrants from around the globe to Hawai‘i: lomilomi salmon, chicken long rice, pineapple, coconut cake and, a local favorite, macaroni salad. Sample the Hawaiian plate at Kenny’s in the Pā‘ina Lānai Food Court to get an idea of the spread. Specific kuleana (tasks) are assigned in organizing lū‘au. Kāne (men) gather river rocks, kiawe timber, lau mai‘a (banana leaves), lā‘ī (tī leaf ) and more for the imu (earth oven). Wāhine (women) often take charge of the kitchen (although in the old days the kāne held fort there). ‘Ōpio (teens) pick stalks of ‘awapuhi (ginger), heliconia, laua‘e and other decorative greenery. Kūpuna (elders) are the foremen, overseeing everything, including kui lei, string fragrant flower lei for their guests. Pā‘ina, a meal or an informal party, typically includes i‘a (fish), limu (seaweed), hua‘ai (fruit), and of course, poi, the dietary staple made from the pounded root of the kalo. It can be difficult to break away from our habits of multitasking, but pā‘ina is a time for fellowship and conversation. We put away the iPhone; we live in the moment. Respecting our kūpuna (forebears), the pule (prayer) is offered and the poi bowl uncovered; from that point, all words spoken should be akahai a ‘olu‘olu—kind and pleasant. Lei

LEARN TO PLAY AT ROYAL HAWAIIAN CENTER
T
hey strum freely, looking down at the frets of their ‘ukulele, only to briefly look up to watch instuctor Puakeala Mann’s technique and finger placement. “Lock the ‘ukulele in the crook of your arm and across your chest,” Mann instructs the 17 students in attendance. Even language isn’t a barrier for Mann when she teaches her class. She smiles and nods in approval as she paces the room in Helumoa Hale at The Royal Grove. Part educational, part music lesson, Mann’s classes encourage students to interact and not to be shy about playing the wrong cord or strum in the wrong direction. Her students come from all parts of the world, from Inchon and Italy to Tokyo and Toronto. “I love the ‘ukulele,” beams Margrith Arpepar of Lichtenstein, Germany. “This is my first lesson and I want to take more.” Fellow student Yuka Tanaka decided to take the class because she’s a big fan of Jake Shimabukuro, a locally based ‘ukulele virtuoso with an international fan base. “It’s fun,” says the Japanese native. “And I love Jake.” Classes are geared toward firsttime learners (see page 8).

he aroma of coffee and baked goods wafts through the Royal Hawaiian Center daily, but there is one scent in particular that seems to linger a little bit longer. Upon walking into Island Soap & Candle Works, I am greeted by a woman with long, dark hair making herself busy behind the counter. To my surprise, she is preparing to make candles. “We make all of our candles right here,” says Grace RamirezAugilar. “I’ll finish this batch of Misty Rain today, but then it’ll sit for 21 days.” Unlike mass-produced candles, the ones here are made by using oldfashioned methods with such natural ingredients as kukui and macadamia nut oils, herbs, spices and natural fragrances from island fruits and flowers like pineapple, coconut, guava, plumeria and pikake. Aside from handmade soaps and candles, the shop also offers lip balms, bath salts, Surfer’s Salve—a sunburn remedy that visitors swear by—and other whimsical accoutrements meant to bring the fragrances of aloha back to your home. Choose from more than 50 scents, including blends like “Hawaiian Sea,”a heavenly mix of bergamot, lime and chamomile. teamed cages juicy dumplings. What? I’ve eaten at many Chinese restaurants but I have never once seen this on a dim sum menu. Was this some new form of culinary torture or are “cages” a new food group? It turned out to be neither. It’s noon and the tempo at Beijing Chinese Seafood Restaurant begins to pick up with servers performing a choreographed dance around each other as they balance large trays piled with bamboo baskets, and plates of fried rice and noodles while en route to guests’ tables. The decibel level, too, slowly rises as more people occupy the tables at this well established restaurant in Waikīkī. Like a guard on patrol, our waiter seems undaunted by the crowds, swiftly moving to clear tables and locking eyes with us to determine if we were ready to order. A few more minutes, I ask of him as he approaches our table. In addition to the regular a la carte menu, we are handed two laminated sheets listing the lunch specials and dim sum set menus. I turn to my colleague—a native of China and avid foodie—to take the lead since she has a vast knowledge and greater familiarity with Cantonese-style cuisine. We start with an order of deep-fried tofu, which were perfectly crisp on the outside and still moist and soft inside. Served with a side dipping sauce composed of red vinegar and flecks of chili, this hot appetizer has to be one of the house specialties since it seems like all the guests have an order of it on their table. It’s simple and a palate stimulant for dishes to come.

X stands for excellent and O signifies outstanding; at least that’s what I thought when I first tasted the XO sauce over slices of sautéed chicken. Slightly spicy, the Chinese condiment contains hints of chili, dried shrimp, scallop, garlic and ginger, all roasted, grounded and formed into a savory paste. The result is an explosion of flavors that takes the taste buds on a rollercoaster ride. “It’s homemade and not poured from a bottle,” says Beijing president Jimmy Wong of the XO sauce. “Everything we do here is prepared from scratch. This is not a chop suey type restaurant.” To be sure, dim sum service isn’t the usual hurried, cart-pushing scene but one that’s rather methodic with dumplings and other delights steamed-to-order. While other restaurants offer a laundry list of items, Wong says they prefer to offer “the best of the best.” This includes the potstickers, which were obviously homemade and not the frozen version that others are known to serve. These were plump and the skin delicately chewy. Believed to originate in the Canton region, dim sum is inextricably linked to the Chinese tradition of “yum cha” or drinking tea. Teahouses are said to have sprung up to accommodate weary travelers trekking along the famous Silk Road. Rural farmers, exhausted after long 60
hours working in the fields, would also head to the local teahouse for an afternoon of tea and relaxation. Chinese food expert Rhonda Parkinson writes that dim sum arrived in the Western Hemisphere as a natural result of 19th century Chinese immigrants — most of whom were from the Canton region — settling on the East and West coasts. Some gourmands further believe that dim sum inspired the whole idea of “brunch,” combining breakfast and lunch into one large midmorning meal. It would be hard for some aspect of dim sum not to “touch your heart,” as one of the translations of the term dim sum indicates. Everyone can pick a favorite from the innumerable little dishes prepared in a multitude of ways — fried, sautéed, steamed or baked — with assorted sweet or savory fillings, ranging from chives and shrimp to pork and beef. While Beijing’s dim sum menu is limited to 26 items, its a la carte menu offers a greater number of Cantonese, Shanghai, Peking and Sichuan dishes. Slathering hoisin sauce on a paper-thin pancake, our waiter deftly spoons the mu shu pork mixture of bean sprouts, mushrooms, bits of pork, scallions, ginger and garlic then rolls it into a savory like crepe. Each bite is a mouthful of flavors and contrasting textures. The same could be said of the not-so-spicy, Sichuan-style eggplant mixed with minced pork. A specialty in eastern China, the yang chow-style fried rice is garnished with diced barbecue pork, scrambled eggs, onions, peas, shrimp (optional for those with shellfish allergies) and, of course, garlic. And about those steamed cages juicy dumplings, they turned out to be Shanghai-style soup dumplings in which hot savory pork broth is encased in steamed dough … or should I say cages.

he proof is in the broth. For 46 years, Ezogiku has maintained the same quality and flavor of its ramen, the key to which is the homemade miso. While there are three distinct styles of ramen—Kyushu, Tokyo and Sapporo—Ezogiku only serves the latter. “In Japan, we only serve three types of ramen: miso, shio and shoyu,” says Ezogiku vice president Masa Mitsui, whose father, Kenichiro Mitsui, is one of the company’s co-founders. “Obviously in Hawai‘i, we have to offer more to give tourists a reason to try something that they can’t get back home.” Mitsui says they often offer a seasonal ramen every three months with a Hawai‘i twist. Last month’s, for example, was kalua pork. “It has to be a flavor that relates to Hawai‘i,” Mitsui says. “Why would Japanese tourists eat ramen that they can get in Japan.” The bestseller, though, is still the miso ramen, which is comprised of al dente noodles steeped in a delicate broth and garnished with wontons, char siu, chicken or seafood. pparently, visitors also go crazy for the loco moco, a Hawaiian staple comprised of two scoops of white rice topped with a hamburger patty and eggs over easy, then doused with gravy. As lines formed two and three deep in front of the counter at Kenny’s Express Hawaiian Barbeque, most of the customers could be heard ordering the “loca moca,” as some mistakenly pronounced the dish. But no translation was needed when they opened their Styrofoam containers and with widened eyes quickly snapped photos with their smartphones. While it may not be the most photogenic entree, the loco moco easily satisfies a growling stomach any time of the day. Since opening this Royal Hawaiian Center oupost in 2008—a full-service Kenny’s can be found in Kalihi, a neighborhood about 20 minutes west of Waikīkī—Kenny’s has provided a taste of Hawaiian barbecue with such offerings as tri-tip steak, beef sticks, short ribs, chicken yakitori, chicken katsu and garlic ahi.
