HE MAU MEA HOU KĀ MĀKOU! New things are afoot at Waikīkī’s gathering place. It’s a true pleasure to welcome you to Royal Hawaiian Center, especially amid the openings of new stores and restaurants. Tiffany & Co.’s shining new flagship stands sentry on the ‘Ewa side of the Center and boasts a resplendent bridal salon on its third level. Nothing quite says “I Love You” like the brilliance of Tiffany & Co. Tradition, flair and exquisite flavor are just three of the culinary delights you’ll taste at the Center’s hub of Asian-inspired restaurants, now a complete quartet with two restaurants completely new to Hawai‘i! Tim Ho Wan, a Chinese dim sum eatery, and TsuruTonTan Udon Noodle Brasserie now join Restaurant Suntory, an original Center tenant, and Doraku Sushi’s flagship restaurant on the Center’s Hale ‘Āina (restaurant) Promenade. “We believe fresh fish makes for a better dish,” says General Manager Soojung “Soo” Heu. “We’re in Hawai‘i, so why wouldn’t we want to showcase the bounty of our waters? I especially like ono, which is similar to yellowtail tuna.” Ahi, ono and wahoo are also on the menu at The Cheesecake Factory, which additionally uses dairy from Meadow Gold, Dole pineapples and Green Point Nurseries’ ti leaves. Uncompromising when it comes to ingredients, the Michelin-star Tim Ho Wan incorporates local pineapple, cabbage and radish in their turnip cakes and fried noodles. At Restaurant Suntory, the quality of the ingredients is paramount, according to General Manager Nobuyuki Aoyama. “That’s what makes us different from other teppanyaki-type places,” Aoyama says. “The ingredients that we use are better than most others. This Restaurant Suntory

includes the alaea salt our chefs use when preparing teppan dishes.”

At P.F. Chang’s Waikīkī, the popular Hawaiian ahi poke salad is composed radish and kaiware sprouts. “It’s highly important that we use fresh local ingredients whenever we can,” says P.F. Chang’s training director Caroline Shipp. “There’s a misperception that we massproduce our food, which is far from the truth. These dishes (ahi poke and panfried mahimahi with citrus-butter sauce) are made from scratch every day.” When it comes to fish, Doraku Sushi chefs use many of the local catches that are available. A platter of assorted sashimi, for example, is artfully presented with delicate slices of ono, ahi, nairagi and shiromi.

4 CHAMPION’S STEAK & SEAFOOD In the past decade, Hawai‘i’s dining scene has seen a proliferation of fast-food restaurants offering steak plates. But unlike those other places, where the beef is sliced into bite-size pieces, the tender and lean 8-ounce New York striploin at Champion’s Steak & Seafood is served whole.

7 WOK TO WALK The concept is simple: offer fresh, nutritious and quick cuisine with a three-step menu that’s friendly to vegetarians and meat lovers alike. Start by choosing your favorite proteins, then select your toppings and sauce, and “wok” away.

8 EZOGIKU The proof is in the broth. For 50 years, Ezogiku has maintained the same quality and flavor of its ramen (pictured below), the key to which is the homemade miso. Its miso ramen is composed of al dente noodles steeped in a delicate broth and garnished with wontons, char siu, chicken or seafood.

10 SBARRO One of the more enduring brands among national food courts, Sbarro is known for its classic New York-style pizza made from handstretched dough. First established as a salumeria (Italian grocery store) in 1956, the shop rose to fame once Carmela and Gennaro Sbarro began to sell slices of pizza.

11 MAHALOHA BURGERS With lines forming two and three deep at the counter, Mahaloha Burgers is popular

always fresh—never frozen— and juices flow with a single mouthwatering bite. The original Mahaloha Burger is topped with a “Happy Sauce” and sandwiched between a grilled sweet buttered bun.

12 PHO FACTORY Pronounced “fuh,” pho is served with fresh vegetables and herbs: bean sprouts, Thai basil, mint, lime and peppers. These are garnishes, which are not meant to interfere with the perfect medley of rice noodles and meat. Rip up a few leaves of herbs, sprinkle it over and squeeze a bit of lime if desired. Chopsticks in one hand and a soup spoon in the other, don't be shy and slurp away.

13 CURRY CAFÉ Every dish here is made-toorder with strict adherence to recipes handed down from generations of chefs. Savor curries with bold combinations of spices, as well as golden Japanese curry and black-smoked Hayashi curry. In addition to curry, the cafe also prepares the popular loco moco, offering two scoops of rice, topped with a hamburger patty and two sunny-side-up eggs, all smothered in gravy.
