STREETWEAR Brockton Kodama and David Sinatra open the second Stüssy Chapter in Hawai‘i. board by scrawling his signature on it, a sort of homage to street-art graffiti. Four years later, he would partner with accountant Frank Sinatra (no relation to the late Rat Pack crooner) and a global iconic brand was born. With this new Royal Hawaiian Center Chapter, Brockton Kodama has entered a partnership with Stüssy President and CEO David Sinatra, a fitting relationship given the fact that the older Sinatra and Kodama have been longtime friends. “My dad and Frank worked closely for years, so this feels like it was meant to be,” Brockton Kodama says. “It’s like coming full circle.” Located on Level 1 of Building B, the

“We believe fresh fish makes for a better dish,” says General Manager Soojung “Soo” Heu. “We’re in Hawai‘i, so why wouldn’t we want to showcase the bounty of our waters? I especially like ono, which is similar to yellowtail tuna.” Ahi, ono and wahoo are also on the menu at The Cheesecake Factory, which additionally uses dairy from Meadow Gold, Dole pineapples and Green Point Nurseries’ ti leaves. Uncompromising when it comes to ingredients, the Michelin-star Tim Ho Wan incorporates local pineapple, cabbage and radish in their turnip cakes and fried noodles. At Restaurant Suntory, the quality of the ingredients is paramount, according to General Manager Nobuyuki Aoyama. “That’s what makes us different from other teppanyaki-type places,” Aoyama says. “The ingredients that we use are better than most others. This Restaurant Suntory
includes the alaea salt our chefs use when preparing teppan dishes.”
At P.F. Chang’s Waikīkī, the popular Hawaiian ahi poke salad is composed radish and kaiware sprouts. “It’s highly important that we use fresh local ingredients whenever we can,” says P.F. Chang’s training director Caroline Shipp. “There’s a misperception that we massproduce our food, which is far from the truth. These dishes (ahi poke and panfried mahimahi with citrus-butter sauce) are made from scratch every day.” When it comes to fish, Doraku Sushi chefs use many of the local catches that are available. A platter of assorted sashimi, for example, is artfully presented with delicate slices of ono, ahi, nairagi and shiromi.
