THE BUZZING SOUND FROM A PAGER CAN BE heard throughout the room as diners wave their beepers and rush to get their noodles from Ringer Hut Nagasaki Champon. Next door, lines form as people place their orders at Kazan Ramen Express. These are the two latest additions to Royal Hawaiian Center’s Pā‘ina Lānai Food Court, and they’ve created quite the buzz among visitors and kama‘āina alike. While polar opposite in styles, the two restaurants claim the key to their noodles is the broth. The Nagasaki Champon consists of a milky chicken-andpork-bone soup topped with a variety of vegetables, including fresh cabbage and sprouts, as well as thinly sliced meat and fishcake. Another mouthwatering bowl of noodles is the Fujiyam Champon, garnished with seven types of vegetables. On a different spectrum, the Kazan Ramen Express broth is prepared with tori paitan, a type of broth made from chicken bones. Two of the more popular options are the Vegetable Kazan Ramen and the Shoyu Ramen. Both are must-try options that easily quell those hunger pangs.

‘Ōlelo Hawai‘i is the indigenous language of Hawai‘i. Along with English, Hawaiian is an official language of the state of Hawai‘i. Some Hawaiian words have no equivalency in English pronunciation, because it’s often difficult to differentiate between the diphthongs ae/ai and ao/au.
