On behalf of the hundreds of staff, employees and merchants of Royal Hawaiian Center, I bid you a special Hawaiian welcome and an invitation to join us here in the heart of Waikīkī. Each period of the year we celebrate a specific cultural theme. The theme for this period is mea‘ai—food. There are few cultural themes that speak more directly to Hawai‘i’s pride in its cultural diversity than mea‘ai. Hawai‘i’s tradition of sharing different ethnic foods is a distinguishing characteristic that locals take pride in as a measure of ethnic tolerance and mutual respect. Sharing ethnic food is routinely acted out as fundamental part of our culture of aloha. Here at the Royal Hawaiian Center we joyfully celebrate the mea‘ai tradition of food diversity. The history of Hawai‘i’s food diversity can be traced from 1778, beginning with English explorer Captain James Cook signaling the opening of Hawai‘i to the 4 i R oyal

world. What followed was a wave of immigrant migrations. The order of arrival over the years began with European/Americans, followed by Chinese, Japanese, Portuguese, Germans, Okinawans, Puerto Ricans, Koreans, Filipinos, Samoans, other Pacific Islanders, Vietnamese, Laotian and Cambodian. The Hawaiian people, in their aloha, welcomed all. As each group settled in to life in Hawai‘i they began sampling each other’s food in acts of friendship and societal bonding. Today, if invited to a party at a local person’s home, you would be walking into a mea‘ai experience of cultural hybrid recipes. Royal Hawaiian Center prides itself in its celebration of the traditons of mea‘ai. We are proud of our selection of scores of ethnically signatured mea‘ai choices representing Hawai‘i’s cultural diversity. Whether it’s a quick bite to eat or a sit down dinner at one of our fabulous Royal Hawaiian Center restaurants, there’s something for everyone in the family. You might start by dropping by our Pā‘ina Lānai Food Court as a one stop sampling of food diversity but you would also do well to reference our restaurant directory for a glimpse of choices of the many restaurants spread over three floors. Whatever your mea‘ai choice we hope you join us in celebrating the deeper meaning of our theme that speaks to respect for each other in the spirit of aloha.

Better Than Barefoot
The preferred footwear among locals are ‘slippahs’ By curt sanBurm
once upon a time, there were
only “rubbah slippahs.” That’s the phonetical prononciation for the hawaiian-style pronunciation of “rubber slippers,” the term islanders customarily use for what otherwise, in the rest of the world, are known as flip-flops, thongs, jandals, sandals, go-aheads, etc. apparently, rubbah slippahs were the first manufactured footwear; at least that’s what the experts say. There’s a pair of them from egypt, circa 2500 Bc and not rubber exactly, but two flat wooden soles, each affixed with three upright pins, two at either side of the heel and one at the toe, with little holes at the tops of the pins through which a V-shaped thong, probably made from papyrus, was threaded for easy slip-on use. The genealogy of the hawaiian rubber slipper starts not with the hawaiians, who were known to lash ti-leaf sandals about their tough feet once in a while, but with the immigrant Japanese. They wore the traditional geta and zori when they came to hawai‘i in the late 19th century to work the fields at the island kingdom’s once-vast sugar and pineapple plantations. The elevated wooden geta, with its flat sole held aloft by two crosswise blocks, and the flat zori share a V-shaped, three-point thong that secures the foot to the sole without a heel strap. This configuration is the traceable precursor to all subsequent slippers in hawai‘i and elsewhere. Continued on page 43

With its fabric thong and stiff sole matted together from rice straw, cloth, leather, or rubber, the nextto-barefoot zori became a cultural as well as sartorial staple in Hawai‘i. There was only one problem: the zori was a uni-foot design. There was no left or right, just a single ambidextrous slipper, its toehold set in the middle of the sole’s front end, wearable on either foot. Laid-back Honolulu lives in its slippers. It’s the city in which “fancy” is an aspersion, referring to a place or event where you probably have to

A Scoop of History Evolution of Hawaiian culinary traditions from ancient times to the present By Aaron SalĀ
‘Āina is the Hawaiian word for “land.” Its literal translation is “that which feeds.” In the Hawaiian belief system,‘āina is the elder sibling and kanaka (mankind) is the junior. When the younger kanaka takes care of the elder ‘āina, the land returns the fruits of its abundance to its people. In the past and into the present, the cultural identity of the Native Hawaiian people is closely linked with the staple food kalo (taro), which epitomizes this responsibility to care for natural resources that feed communities.
It turns out that Hawai‘i diners get a dollop of local history with their two scoops of rice and mac salad.

Land divisions known as ahupua‘a, which usually consisted of a long strip of land, narrow at its mountain summit top and widening as it ran down a valley into the ocean, ensured that residents had access to all of the resources in the uplands, lowlands, plains and sea. From the first Western contact in 1778, missionaries, merchants, and whalers introduced food products that forever changed Hawai‘i’s culinary landscape. The legend of hāloa is The
story of the first native hawaiian, who was born from a kalo or taro root. Thought to have birthed a stillborn, Wākea, the sky father and ho‘ohōkūlani, the daughter of Mother earth, buried their son, hāloanakalaukapalili (quivering long stalk) in a spot that ho‘ohōkūlani could tend to each day. she kept the area clean and free of all weeds and animals, and stirred the mud as if she were tucking hāloanakalaukapalili in to sleep. as her tears watered the burial sight, a green leaf poked through and slowly grew into a handsome kalo plant. delighted and restored by their new blessing, ho‘ohōkūlani birthed another son and named him hāloa. Wākea and ho‘ohōkūlani told hāloa that he needed to take care and watch over hāloanakalaukapalili. The kalo soon began to grow in abundance. By his hands, the land became fertile and rich in medicinal leaves and nutritious kalo. hāloa would then go on to forever care for his older brother and the land. Radishes are intricately
carved into lotus-like blooms. A melon takes the form of a bird. And edible floral petals add as much visual pop as they do flavor. Opened only a few months ago, Noi Thai Cuisine may have just set the proverbial culinary bar higher — much higher. The attention to detail and the aesthetic are incomparable to any Thai restaurant in Hawai‘i. Even the interior has been elaborately designed and decorated, evoking images of opulent palaces in Thailand with golden leaves dan58

gling from the ceiling in one private room and a mini “reflecting pool” in the main dining area. “You come here for the show and the experience,” smiles owner Noi Lapangkura, the restaurant’s namesake. “The food is authentic Thai but with a modern twist to the presentation.” Audible “oohs and ahs” are the norm here and understandably so. Even appetizers are delivered with flair. The Ma Hor (Galloping Horses) is finished tableside by pouring water to activate the dry ice, which
releases plumes of smoke that shroud the “cavalry”—which take shape in the form of skewered pineapple slices—in a hazy cloud. Composed of ground pork, peanuts and shallots, the mini meatball-like appetizers offer a contrast of sweet and sour with a touch of heat, thanks to a sliver of red chili pepper. And while this may be a common appetizer in Thailand, it’s rarely—if ever—found on Thai menus across the island. Author of several definitive books on Thai cuisine and owner of the award-winning Nahm in Bangkok, chef David Thompson says a cuisine can only succeed on the quality of ingredients it employs and due to the amount of ingredients used in Southeast Asian cooking, it’s even more important. Apparently Noi chefs adhere to this principle. Each dish is as complex in flavors and textures as it is in the whole of its ingredients. Hints of coconut, lemongrass, kaffir lime leaves, cilantro, fish sauce, and green, yellow and red curries are layered and melded into a single bite of bliss. national and international recognition Kona Coffee receives. and although this region of hawai‘i island of hawai‘i deservedly merits its “coffee belt” reputation, the industry’s roots actually started in 1813 when Kamehameha the Great’s spanish interpreter and physician, Don Francisco de Paula y Marin, planted the first trees on o‘ahu. several years later, the rev. Joseph Goodrich transplanted trimmings from the o‘ahu ornamental trees to his hilo missionary. Kona was still elusive. Finally in 1828, missionary samuel ruggles planted the first arabica trees in this western district of the island. and by 1840, the terms Kona and coffee became forever associated with one another. with some farms perched as high as 3,200 feet above sea level, harvesting occurs year round and yields some of the best red beans (called cherries) in the world. The result is a coffee supremely rich in flavor and aroma. so distinctive are these beans that, in order to be labeled “Kona coffee” the beans must be at least 10 percent pure Kona (though purists insist 10 percent is not enough). at Starbucks, you can find packaged 100 percent Kona coffee, which makes for a gourmet gift or souvenir. Island Vintage Coffee carries 100 percent locally roasted Kona beans. its Peaberry is robust, made from the prize rare coffee cherries that make up just five percent of a typical coffee harvest. The shops also offer such flavored Kona blends as mellow Vanilla Mac Nut and Coconut Cream.
