By John DiScala San Francisco is a social city with fantastic venues serving signature cocktails and great bar bites. Here are the top-ten venues frequented by locals.

1. ROOFTOP 25 Part of 25 Lusk, Rooftop 25 offers a more casual outdoor vibe. It’s a must on a sunny day. Like many SF happy hours, Rooftop 25 tends to be packed, so strolling in at 4 pm is highly recommended.  Happy hour: M-F 5-7pm 25 Lusk St., 25lusk.com

CULINARY INNOVATION How San Francisco’s Innovative Chefs are Shaping Global Dining By Virginia Miller

outstanding cuisine and fine dining. Our provincial town has more three-Michelin-starred restaurants than the behemoth metropolis of New York. The Bay Area’s deep diversity and trailblazing spirit, along with access to the world’s best produce and incredible local seafood has resulted in a region that’s pioneered everything from the farm-to-table movement to artisanal breads and cheeses, sustainable farms to “craft” spirits, beer, and wine. With San Francisco and the broader Bay Area swimming in more award-winning restaurants than many European countries, what is the current state of culinary innovation? Covering the region for nearly two decades and comparing it to the many US and global cities I’ve also written about, I can attest that San Francisco is leading the charge in food innovation. San Francisco is a town where housemade noodles are standard in countless restaurants, and it has long been home to some of the most inventive chefs in modern pasta. Many are trained in authentic Italian pasta-making, but have infused their dishes with local ingredients. Masters include Michael Tusk at 3 Michelin-starred Quince, Suzette Gresham of two-Michelinstarred Acquerello, Staffan Terje of Perbacco, Matthew Accarrino at SPQR, and Thomas McNaughton of flour+water. Following in those footsteps, chef David Nayfeld is garnering national raves months after opening Che Fico in March 2018, one of SF’s toughest-to-snag reservations. His “San Francisco-style” modern Italian cuisine wows: sourdough-crust pizzas are topped with paper-thin pineapple, fermented chilies, and Parmesan cheese. Tomato leaf cappellacci pasta is filled with baccalá (salt cod), dotted with fennel, olive oil-braised tomato, and taggiasca olives. Another newcomer, Sorrel’s chef Alex Hong, likewise displays a keen sense of “voice” in his cooking. He’s a young CIA grad with cooking experience at the aforementioned Quince. Honing technique but unafraid to experiment, his recent play with Slovenian zlikrofi dumplings recalls the stellar Eastern European-influenced dishes of one-of-a-kind SF chef Nick Balla,

who served for years at Bar Tartine. Hong’s zlikrofi are filled with prosciutto and smoked potato, contrasted with sour plum mostarda, caraway, and fresh horseradish. His visionary Northern California play on Italian and Eastern European dishes makes him a chef to watch. No city does modern Hawaiian like San Francisco. Here, Hawaii native Ravi Kapur has harnessed Bay Area innovation and ingredients at Liholiho Yacht Club, which opened in 2015. His house-made spam and rice, crispy tripe cabbage salad and beef tongue bao, along with the savory waffle menu at his cocktail bar downstairs, are all iconic San Francisco dishes. And over at ‘āina, Hawaii-born Jordan Keao has produced unforgettable modern Hawaiian dishes that rival, and even surpass, what you can find on Hawaii itself. Long one of San Francisco’s great chefs, Jason Fox of one-Michelin-starred Commonwealth has been crafting fine diningworthy dishes since 2010 in an intimate, relaxed space. A master in innovativeyet-delicious, Fox reconstitutes squid into delicate noodles and contrasts hot-andcold with fried oysters, coastal succulents and frozen horseradish mousse. Kim Alter of Nightbird is another longtime master whose playfulness in past dishes like tic-tac-toe caviar waffles is now being copied elsewhere. Her latest fall menu calls on the season with kuri squash romesco, utilizing a technique common with peppers by smoking squash juice to create a smoky romesco sauce twist. Stuart Brioza and Nicole Krasinski are behind one of the nation’s best restaurants, State Bird Provisions, and continue to wow on a slightly more upscale note at The Progress. The menus are stronger

mara hails from) for modernizing Mexican cuisine—a welcome attitude in California, a state with Mexico in its blood. Chinese food was introduced to North America via San Francisco and is deeply intertwined in its roots. George Chen is doing what no other has done nationally for upscale Chinese/Taiwanese at his unique, elegant Eight Tables at China Live. California has long held the largest Japanese population outside Japan, so Japanese food here is superb. One of San Francisco’s best Japanese “mash-ups” is Nomica’s karaage chicken and Hitachino beer waffles with silky matcha butter, interpreting the Southern classic through a Japanese lens. From the crew behind Sausalito’s legendary Sushi Ran, Nomica’s modern Japanese cuisine succeeds in ways few have nationally. I miss their laminated brioche in beef-whipped jidori egg yolk but they still serve their whole chicken wrapped in brioche with miso butter and shiso chimichurri. Even venerable chefs like Michael Mina are exploring new ground. At his flagship

than ever, showcasing their signature cooking style in stunners like pork kimchi pierogi with Asian pear butter and smoked ham and Cowgirl Creamery Wagon Wheel fondue over roti bread. Another powerhouse chef couple, Evan and Sarah Rich of one-Michelin-starred restaurant Rich Table, have created so many iconic dishes that they were able to publish a cookbook of them. From fried chicken madeleines to aged duck lasagna layered with Santa Rosa plums, their gratifying dishes are like no other. Mourad Lahlou, one of the country’s celebrated chefs of modern Moroccan cuisine, continues his success with his one-Michelin-starred restaurant Mourad, with Moroccan-Mexican restaurant Amara soon-to-open in his former Aziza space. Chef Robin Song elevates seasonal comfort food at Stones Throw, just as he did with open flame cooking at Gibson. Chefs Val M. Cantu at two-Michelin-starred Californios and Gabriela Cámara at Cala both exemplify the forward-thinking mindset thriving in Mexico City (where Cá-

Michael Mina this summer, Mina and chef Raj Dixit dug into Mina’s Egyptian roots with a spice-driven, Middle Eastern tasting menu, different from the refinedrustic style of the modern Israeli and Middle Eastern restaurants trending nationally. Baladi, an Egyptian flatbread and favorite from Mina’s childhood, coexists with Egyptian mango glazed in candied ginger in a house spice blend over foie gras. Northern California produce meets Middle Eastern flair in dishes like asparagus, sesame, preserved lemon, sumac and onion over fava bean besara, a savory Egyptian pudding. San Francisco bars have been home to standout food for quite a while. Barbary Coast's Comstock Saloon gained chef Jason Raffin in early 2018, who delights with creative gems like lo-mein Cacio e Pepe, honey-whisky-glazed St. Louis ribs crusted in everything bagel seeds, chickpea falafel in spicy shiro miso and tzatziki sauces, octopus corndogs, and “Unicorn” tuna tartare vividly laced with a rainbow of herb oils and persimmon—

one of the most Instagrammable dishes of the year. Horsefeather’s beautiful cocktails pair with a poké bowl that takes this Hawaiian classic and gives it Japanese sushi-inspired twist: sticky sushi rice undergirds avocado, cucumber, ginger, nori and wonton bits, all drizzled in unagi sauce and spicy mayo. This is bar food on another level. Two-Michelin-starred Lazy Bear’s bar True Laurel has rightly made national waves, thanks to chef David Barzelay and bar director Nicolas Torres’ food and cocktails. While you sip a Pea-Casso (Aquavit, snap peas, sweet rancio wine, clarified lime, flat tonic, Middle Eastern arak), Barzelay wows with dishes like tempura hen-of-the-woods mushrooms dipped in a sour cream and alliums dip, or an irresistibly rich, aged beef patty melt. These are just a few examples of the ingenuity and excellence of San Francisco’s world-renowned chefs, who are sure to keep the same city that created the farmto-table movement decades ago leading in culinary innovation.

THE CALIFORNIA WINE industry isn’t known for its diversity—for decades, most winemakers have had similar backgrounds, and most have been men. In recent years, however, a handful of women of color have taken Napa, Sonoma, and Mendocino counties by storm, blazing new trails for their respective families and for the industry overall. Here are the stories of five remarkable women in the wine industry.

AMELIA MORAN CEJA Amelia Ceja is one of the most recognizable faces in Wine Country. In 1999 she was the first Mexican-American woman to be president of a winery—an operation that bears her family name. In 2005 the California Legislature named her “woman of the year” for her accomplishments in making Ceja a renowned brand. But her fame extends beyond wine into cooking as well; she has demonstrated the art of making tortillas at the Smithsonian Institute, and over the last 10 years has filmed more

than 100 video blogs outlining recipes for other iconic Mexican dishes. The story of Amelia Ceja’s rise to prominence is the true American Dream. She and her family arrived in Napa from Jalisco, Mexico when she was 12. She subsequently learned English and worked her way up the ranks from vineyard worker to vineyard owner. “We are a pioneering family,” she says. “My grandmother told me, ‘Whatever you do, if you love it and learn everything you can about it, you will be successful—and not dependent on a man.’”

AKIKO FREEMAN

Technically speaking, C. Deneen Brown is one of three siblings who run the show at Brown Estate; she serves as president while her sister Coral is director of brand management and their brother David is the winegrower. But as far as the public is concerned, Deneen is the face of the company. This visibility is important because the family represents the first and only Black-owned estate winery in the Napa Valley. “Being Black has had a huge impact in terms of our customer base,” she says, noting that her parents bought the property in Chiles Valley in 1980 and founded the winery in 1995. “Not only has it inspired more people of color to come and try our wines, but it also has inspired people of color to think about getting into the wine business. When they see people who look like them, they think, ‘Hey, maybe I can do that, too.’” In addition to a hospitality operation at the family estate, the Browns opened a tasting room in downtown Napa in 2017.

To say Akiko Freeman’s family goes way back in Japan would be an understatement. Her family members trace their lineage back 23 generations. She is a cousin of Japan’s Empress Michiko and related to the founding Mitsubishi family. She also likely the only female Asian winemaker in the entire United States. Akiko makes the juice at Freeman Winery in Sebastopol and co-owns the winery with her husband, Ken. In her job, she performs tasks that no women in her family have done before. “In Japan, ladies don’t usually pick up anything heavier than chopsticks,” she quips. “Now I’m doing punch-downs and carrying boxes of wine around the winery.” Freeman credits her father and grandfather for her interest in wine; her grandfather loved Bordeaux-style vino and her father liked wines from Burgundy. When asked to describe her style, Akiko says proudly that she tries to imbue her wines with classic Old World-style influences. Consider it her way of paying tribute to the past.

Hailing from a Mexican clan of nine kids, Vanessa Robledo has been working in the vineyards with her family for as long as she can remember. “When I was growing up, it was very traditional. My sister and I couldn’t leave the house without being escorted by one of our seven brothers,” she remembers. “I knew I didn’t want that life. I wanted to run the business.” Eventually, Vanessa did just that, rising from a regular gig as her father’s translator to become president of Sonoma’s Robledo Family Winery and taking the operation from 100 cases to 20,000 cases in 10 years. These days, after stints as co-owner at Black Coyote Winery and CEO of Mi Sueno Winery in Napa, Vanessa runs her own wine consulting firm, V.R. Wine Business Consulting, which specializes in direct-to-consumer sales, multicultural marketing, and marketing to specific demographics, lessons she learned during her days helping Dad. Vanessa likes to think she pays homage to her family heritage with every sale.

Wine has been a side career for Texas-born Theodora Lee, but it still gets her undivided attention. When she’s not working on high-powered cases in her job as shareholder at Littler Mendelson, she’s likely at her Yorkville Highlands ranch, dubbed Theopolis Vineyards. (In case you’re wondering, the name was Lee’s line name when she pledged Delta Sigma Theta sorority at Spelman College.) Farming certainly has run in Lee’s family. Her grandfather was a sharecropper; her father was an educator and farmer. She herself learned to drive on tractor at age of 8, and still tills soil and rides the vineyard whenever possible. “Being a grape farmer is a tribute to my family and I honor them every day by being the best vintner I can be,” she says. Lee adds that she is incredibly proud to be a female black business owner in an industry that doesn’t have much diversity. “It is important to be the best, and by having people with diverse backgrounds at the table, your products and service will reflect that excellence.”
