Surrounding San Antonio’s city limits is the scenic Hill Country, a region known for its rolling landscapes and, as of late, sprawling vineyards and boutique wineries. Outside of Napa, the “Texas Wine Trail” is one of the most-visited destinations in the U.S. for wine enthusiasts. “Texas consumers really support Texas wines,” says wine industry vet Greg Stokes, a consultant and co-winemaker at familyowned Bending Branch Winery who’s watched the Texas wine industry steadily progress since 2009. Here, in the trenches of the vineyard, the winemaking process begins virtually the same way it does anywhere else. Six tons of Roussanne grapes (which yields, on average, nearly 400 12-bottle cases) will be sorted, pressed, cold-settled and eventually aged until they’re ready to bottle and imbibe.

‘SOMM’ LIKE IT HOT: Unlike the finicky Chardonnay grape, Roussanne (and varietals like Tempranillo or Tannat) has the potential to thrive in Texas’ climate.

CULINARY RENAISSANCE The fuse of the Alamo City’s fiery-hot culinary rocket has been lit, and its popularity is skyrocketing

Once an actual brewery, the hisoric Pearl complex is now a destination for discerning foodies, with restaurants like La Gloria, Botika and Cured.

It’s a steamy Sunday night in San Antonio as 300 patrons pour out of the dining rooms onto the patios and sidewalks at award-winning restaurant Cured, where the inviting outdoor area sits beneath a canopy of glittering string lights within the Pearl, San Antonio’s newest culinary and entertainment destination. At this hip, charcuterie-driven gastropub of James Beard nominee Steven McHugh, Cured’s bright open kitchen is ablaze with sizzling energy. Cocktails flow as waiters weave through the crowds carrying tipsy trays of champagne and hors d’oeuvres for McHugh’s second annual “Cured for a Cure,” a five-course dinner and gastronomic gala benefitting the Leukemia & Lymphoma Society that has quickly become one of the city’s largest philanthropic culinary events of the season.

The restaurant’s name not only refers to the slow-cured meats that hang in the enormous glass refrigeration cabinet at the eatery’s entrance; it also celebrates the owner/ chef’s cancer-free state. Having garnered a “celebrity chef” status not only in the Alamo City but on a national level— thanks to appearances on national TV shows like “Man Fire Food”—these days, McHugh and his wife Sylvia feel like the luckiest couple in town. Such success stories couldn’t happen to a nicer guy than McHugh (or a better town), and Cured is just one local eatery that epitomizes how just how quickly the San Antonio food scene has taken off. If visitors seem astonished by its comet-like trajectory, locals aren’t. Celebrity chef Andrew Zimmern dubbed San Antonio’s new culinary style “Tex-Next:” Translated, it means that there’s no single “old school” Texas tradition that can’t be bent, shaped, barbecued or smoked into something new— so long as the contemporary twist maintains the tradition of Texas-sized taste. in the second-largest state in the U.S. Bigger than Dallas (but smaller than Houston), it’s also the seventh largest city in the country, making it larger than New Orleans, Nashville, Washington, D.C., Charlotte and many other noteworthy food-friendly cities. Still, the growth of the city and its fast-growing food scene did seem to hit warp speed in recent years. No longer just a pretty little Tex-Mex taco spot with a “burgeoning food scene” heavily rooted in old Mexican and German recipes, the Alamo City‘s culinary culture has changed dramatically over the last 10 years—thanks in part to the popular Pearl campus of the Culinary Institute of America (or CIA), which has given rise to some of the nation’s best young chefs by allowing them to open inventive brick-andmortar restaurants in the shadow of the CIA campus. (think fruit- and candy-filled Mexican-style snow cones), to Pearl’s year-round weekend farmers’ market. “San Antonio’s culinary scene has changed tremendously in the six years since I first arrived,” Chef McHugh says. “The city has undergone an exciting culinary and cocktail renaissance with new talent moving here each day.” A Hudson Valley CIA-trained chef, McHugh first came to San Antonio to open Lüke on the River Walk with celebrity chef John Besh. “It’s thrilling that this new culinary movement has ignited here, and we are lucky to [both] be a part of that and have a front row seat,” he says. For years, San Antonio was often lauded as a Tex-Mex mecca. Home to stucco-walled cafés where strolling mariachis sang as enormous frozen margaritas melted in giant salt-rimmed stemware, tourists stuck close to the popular River Walk area downtown or Mi Tierra Café y Panaderia at Market Square. Such places remain a beloved part of the San Antonio tradition, but it’s been decades since only chile con queso and tortilla chips topped every menu in town. San Antonio food is exciting—as are the neighborhoods

in which it is served, like at the Pearl and in Southtown. Restaurants like Feast, Bliss, The Fruteria, Gwendolyn, and Rebelle are dominating the Southtown and downtown areas, and original eateries like Mixtal in Olmos Park and local standbys like Tre Trattoria and Paesanos continue to thrill longtime local foodies. “The city’s culinary scene has recently really elevated itself, and it’s wonderful to see our chefs being recognized on a national level,” says former CIA instructor and executive chef Geronimo Lopez of globally-inspired restaurant Botika, which opened at Pearl in 2016. “I love being part of the Pearl community, which is really the heart of so many amazing restaurants and the city’s culinary activity.” For Chef McHugh, Cured at Pearl is more than just a restaurant: It’s about being a part of something bigger than himself. “With the CIA and so many great restaurants here, we’ve been fortunate to be at the epicenter of this vibrant food scene,” he says. “Our sense of community is strong, and having all of this talent around only inspires us all to work harder to make San Antonio the best food city it can be.”

IF WALLS COULD TALK A French artist’s media installation fuses heritage, history and contemporary art in the heart of San Antonio. BY JAIMIE SIEGLE

A city rich in cultural heritage, Texas history and patrons of the arts, San Antonio was a natural fit for French artist Xavier de Richemont’s world-renowned video art installations that combine digital art with projection mapping, choreographed music and narrative storytelling. Just one year after the opening of “San Antonio | The Saga,” the installation has never been more awe-inspiring. Last summer the Main Plaza, a historic site in itself as a social hub and community gathering area for early San Antonians, unveiled de Richemont’s “San Antonio | The Saga,” a 7,000 sq.-ft. video art installation projected onto the façade of the San Fernando Cathedral. The “video painting,” as the artist calls his works, depicts the birth and evolution of the Alamo City, from its humble beginnings in the early 1700s through the Texas Revolution, to the capture of Native American Chief Geronimo and the Civil War in the late 1800s, and finally to the dynamic and diverse community it’s become today. Now the mother church of the archdiocese of San Antonio—and the oldest operating sanctuary in the U.S.—the San Fernando Cathedral was completed in 1749 as the first parish church in Texas. The oldest standing structure in the Lone Star State, the cathedral’s original walls have become a somewhat sacred canvas on which to display de Richemont’s moving pictures. The intricate installation, a marriage of artistic

expression and multi-sensory narrative, condenses a 300-year history lesson into less than half an hour, and plays a dozen times a week. Using a diverse soundtrack played in surround sound to accompany the everevolving graphics, “San Antonio | The Saga” lends itself to multiple viewings. “Every time I watch it, I catch something I hadn’t noticed before,” said Tom Matula, director of marketing for the Main Plaza Conservancy, adding that most audience members have seen “The Saga” multiple times and express the same sentiment. Its home in the historic colonial plaza, one of only four left in the country, is evidence that history repeats itself; the production has been widely embraced by both locals and visitors, all of whom flock to the “heart of the city” to watch the insightful and grippingly beautiful production. As for the Main Plaza, its intended purpose as a unifying hub for the community has been restored. Commissioned by the Conservancy, the city of San Antonio and generous public and private organizations, the installation was a collaborative effort that preserves San Antonio’s legacy, yet also demonstrates its promising future. Catch the mesmerizing 24-minute installation every Tuesday, Friday, Saturday and Sunday, with show times at 9, 9:30 and 10 pm. Just come back before 2024, when the “Saga” disappears from the Main Plaza forever.

LEON SPRINGS/NORTHWEST Located just northwest of downtown off I-10, Leon Springs was once a stagecoach route between San Antonio and San Diego in the mid- to late-19th century. Now, the sprawling area is rife with shopping, dining and over-the-top attractions, as well as comfortable, suburban living.
