In a city filled with more than 40 celebrity chefs, restaurants need to up the stakes when it comes to clever menu items. Ordinary mac and cheese gets a refreshing update with lobster and a story to boot. A chocolate mousse becomes instantly Instagrammable with the addition of a restaurant’s namesake crooner’s hat. A story of a honeymooner chef creating an extravagant dish for his new bride’s breakfast becomes an iconic dish. Here, a look at 11 of the most innovative dishes in Las Vegas with the stories behind each. SINATRA HAT AT SINATRA Head to Frank Sinatra’s namesake restaurant at Encore for a clever take on chocolate mousse—the Sinatra Hat. Executive chef Theo Schoenegger used to cook for the Sinatra at San Domenico in New York and still features many of his favorite dishes on the menu. ICE CREAM TASTING GAME AT RM SEAFOOD Sure, it’s just ice cream. But what flavor is it?
