We sat down with its creator, Master Sommelier George Miliotes, to learn more about his vision, what’s next, and what drives him to share his love of wine with others.

In the 1990s, George Miliotes helped put Disney’s California Grill on the culinary map. After a time away creating the critically-acclaimed wine program at Darden’s Seasons 52, he was the perfect pick to open a wine bar at the newly launched Disney Springs. ON HIS BACKGROUND I’m not the five year planner, so a little bit of the wine thing was pieces falling into place. I didn’t know when I was 13, and my dad took me into the wine room for my first job — cleaning the racks, making sure the bottles had prices on them — that was helping my growth in the wine industry, but by the time I was 16, I could explain a German wine label to anyone. When you’re a kid, you just take it all in.

ON BECOMING A MASTER SOMMELIER While running the California Grill, a Court of Grand Masters Sommelier came to one of our staff classes that we held regularly. I had been trying to determine what I wanted to do next professionally. I decided to take the exam. I took the intro course and did fairly well, and decided, Hey, I’m going to make a run at this. But none of this was planned. I didn’t even know the Court existed until they came for my meeting. I was happy running my restaurant. ON TEACHING AND LEARNING ABOUT WINE Everyone asks me, what’s the secret to learning? And I say, there’s no secret; everyday, we taste wine and we talk about it. Every single day.
Three minutes about food, three minutes about wine, and we are done. Short and sweet. ON WINE BAR GEORGE I’ve been asked hundreds of times, “When are you going to open up your own place?” And nothing really clicked on that front for me. I had a great time at Darden and I loved the company. But in all things, there are cycles. I had done work that I was very proud of there. I wasn’t really looking for an opportunity, but when it came, I looked into my heart. And I wanted to work with a team. I want to be in there. ON THE WINE We’ll cover the whole world and open with a range of varietals and price points. I see some growth over the first year of the program, seeing what people are interested in. We’ll have over 100 wines, all available in pieces and parts. So if you want to buy two ounces of 20 different wines, you can. And classics are important. But we’ll also do plenty of new school fun stuff that’s kind of kooky and crazy. There’s room for everybody on my list. You’ve gotta be good, though.

ON THE FOOD We have a cheese board, a charcuterie board, and a larger combination of both. We also have about 10 small plates that run the range of cuisines, and three family-style entrees. The variety gives guests flexibility, whether they’re interested in just cheese and wine, just small plates, or a full meal. It allows for three or four different angles for people to enjoy the restaurant. There are also desserts and grab and go, including wines on tap. ON OTHER THINGS I also have eight bottled beers that the chef loves and handpicked himself because he loves beer. And we’re doing cocktails too. We’re exploring wine-based cocktails. ON WINE DINNERS Eventually, I’ll do wine dinners. But I want them to be special, and for a reason. Overall, I think wine dinners have become a little bit like superhero movies; they’re all exactly the same. We’ll do them when there’s a reason to do them. ON WHAT TO DRINK THIS SUMMER Vinho verde is inexpensive and everyone likes it. People come over for the summer, and you want to have a bottle of wine. It’s drinkable and everyone’s happy. And it’s nine percent alcohol, so nobody falls in the pool.

Swirlery Wine Bar This SoDo wine shop and tasting room is big on building community, and focuses on providing quality wines by the glass and bottle in the shop, or to go. CHARLES HOSMER MORSE MUSEUM OF AMERICAN ART When you arrive in Winter Park, plan to make your first stop the Charles Hosmer Morse Museum of American Art for a quiet morning among treasures. The Winter Park icon was founded by Jeannette Genius McKean in 1942, and was named for her grandfather, Charles Hosmer Morse, a Chicago businessman and Winter Park philanthropist. The neighborhoods and small cities that make up the Greater Orlando area are a diverse mix. The tourism corridor holds excitement and the promise of make-believe. And Orlando’s many neighborhoods each offer distinctive reasons to visit. But for sheer charm, beauty and cultural opportunities, head north for a 10-minute drive from downtown to spend the day in Winter Park. The city continues to draw visitors today for its beautiful natural setting, quaint cobblestone streets, lovely parks, fantastic shopping and seemingly endless museums. It’s worth planning a day trip to check out some of its attractions. We offer some of our favorites stops. 10 W H E R E O R L A N D O I M AY / J U N E 2018
The Morse Museum is home to the largest comprehensive collection of various works by Louis Comfort Tiffany, the prolific artist and designer whose declared his life-long goal was “the pursuit of beauty.” View examples of jewelry created by Tiffany and his designers, but also take in examples of his painting, pottery, art glass, photography and more. Now through July 8, visitors also have the opportunity to view The Domes of the Yosemite, the largest existing painting by American artist Albert Bierstadt.
The painting recently underwent extensive conservation efforts in Miami, and makes the stop in Orlando en route back to its home at the St. Johnsbury Athenaum in St. Johnsbury, Vermont, a town with a connection to the Morse: Charles Hosmer Morse was born there. A self-guided tour of the museum takes about an hour, but allow for another 30 minutes to view two films that offer additional information about the collection as well as the Tiffany Chapel. Docent-led tours are also available. The museum is open Tuesday through Saturday, 9:30 am to 4 pm and on Sunday from 1-4 pm. Admission is $6 for adults, $5 for seniors age 60 and older, $1 for students with a valid ID, and free for children under 12. In addition, if you visit during the winter or spring months, all visitors are admitted free of charge 4-8 pm on Fridays, November through April. Hungry? Then you’ve come to the right place. You’ll find no shortage of restaurants along tree-lined Park Avenue, where cafes and chic eateries spill out onto sidewalk areas with a vibe that’s reminiscent of Paris. But other parts of Winter Park offer delicious dishes, too. Here are a few spots on Park Avenue and beyond to discover. LUMA ON PARK If you’re sticking around the area for dinner, consider Park Avenue fixture Luma On Park. The atmosphere is decidedly modern, but the attentive, friendly service puts guests at ease immediately. Don’t Miss Tiffany at the Morse Museum WINTER PARK, Fla. — Of the many unexpected pleasures awaiting visitors to Central Florida, none may be as dazzling as a stroll through the galleries of The Charles Hosmer Morse Museum of American Art, home to the world’s most comprehensive collection of works by American artist and designer Louis Comfort Tiffany. The Tiffany collection at the Morse includes the designer’s jewelry, pottery, paintings, and art glass, as well as his famed leadedglass lamps and windows. Highlights include the restored ByzantineRomanesque chapel interior that Tiffany designed for the 1893 World’s Columbian Exposition in Chicago and art and architectural objects from his celebrated Long Island estate, Laurelton Hall. The Morse, which celebrates its 75th anniversary this season, was founded by Jeannette Genius McKean (1909–89) in 1942 and named for her industrialist grandfather. She and her husband, Hugh F. McKean (1908–95), the Museum’s director until his death, built the collection over a 50-year period. In 1957, when a fire ravaged Tiffany’s Laurelton Hall, the McKeans salvaged all they could from the ruins for the Morse. In the Museum’s galleries, visitors will also find exhibits of American art pottery, Art Nouveau objects, and late 19th-and early 20th-century American paintings. For the ultimate in virtual reality, head to Disney Springs for (3) Star Wars Secrets of the Empire. Suit up in teams of four as you transform into Stormtroopers and attempt to capture Imperial intelligence in a multi-sensory experience that promises to leave you breathless.
With a mild climate, lots of sunshine, and plenty of afternoon showers, Central Florida is a garden lover's dream. Don’t miss the (1) 25th Annual Epcot International Flower and Garden Festival, now through May 28, at Walt Disney World. Enjoy beautiful flowers and chef-inspired bites at 15 Outdoor Kitchens, then stick around for the Garden Rocks Concert Series each weekend evening. Art lovers should make a beeline for the (2) Albin Polasek Museum and Sculpture Garden in Winter Park. Tour the home of the Czech sculptor and see the gardens that inspired him, along with his work. With so many incredible courses, it’s easy to see why sunny Florida is a premier golf destination.
