Chef Christopher Hache’s Brilliant New Recipe By Alexander Lobrano
I
n Paris, they are many brilliant young chefs who can cook you a remarkable meal. This, of course, is why the French capital remains hands down the western world’s best food town. However, young chefs who can cook you a remarkable meal and also create a restaurant experience that’s framed by the social, psychic and visual pleasures that come from gracious hospitality, excellent service and a beautiful dining room are very much rarer indeed. Christopher Hache, 36, is one of them, and this is what makes him such an interesting man.
The chef’s lap at the end of service is very often the de rigueur rite of closure to the experience of an haute-cuisine meal, but it’s usually more of an ego-buffing formality for the chef than anything else. Not here though. When Hache, who looked almost professorial in his tortoise-shell-framed glasses, stopped to chat with a well-dressed older couple from Boston at the table next to ours, he was so sincerely eager to have their feedback, asking which dishes they’d enjoyed the most and the least during the course of the twelvecourse Les Alliances tasting menu they’d just had, they actually told him the truth instead of just murmuring pleasantries. Almost everything they said was positive, but it was obvious that it was the one politely qualified comment, the crayfish and green asparagus dish was delicious but perhaps a bit under-seasoned (N.B. I had the same dish and thought the gentle seasoning worked perfectly to underline the delicate flavours of the shellfish and the vegetable, but chaqu’un a son goût), which interested the chef the most. “Thank you so much for sharing your opinion with me. Five days earlier at L’Ecrin, Hache’s intimate dinner-only restaurant in a hidden dining room overlooking a pretty garden courtyard in the heart of the recently renovated and reopened Hôtel de Crillon, I’d first noticed the amplitude of his talents. Late on a rainy Saturday night, the atmosphere in this handsome salon was radiant with the well-being of the some twenty or so privileged people who’d just been exquisitely fed and charmingly coddled. Then the chef appeared in immaculate whites to make his rounds.

speaking warmly in English. “I hope you enjoy the rest of your time in Paris and that we have the pleasure of welcoming you again at L’Ecrin.” Then he excused himself with a slight bow and gracefully moved on to the next table. “What a delightful young man!” said the Bostonian lady to her husband, adding, “Such lovely manners!” And when I met Hache for a chat in the Crillon’s bar a week after my own dinner at L’Ecrin, the same thought crosses my mind very early in our conversation, his manners are indeed warm, instinctive and elegant. But it was while I was listening to him recount some of the adventures he’d had during the remarkable round-the-world culinary odyssey he undertook when the Crillon closed in 2012 for the four-year-long renovation that I figured out the quality which most distinctly sets him apart from other talented chefs of his generation. That would be his humility, which, when braided with a good sense of humour, always becomes the wick of real hospitality.

In Hache’s case, this trait correctly reads as being completely innate, because the hospitality trades have surrounded him for his entire lifetime. One of his grandmothers ran an auberge in Saint-Nom-laBretêche in the Yvelines, his mother was a flight attendant for Air France, and his father is a restaurateur in suburban Paris. “It was my father who encouraged my interest in cooking and encouraged me to be the best I possibly could be,” Hache says quietly. Then he explains the genesis of his recent voyage of discovery, or the experiences he had while cooking with more than a dozen different chefs all over the world. “I suggested the idea that I do a series of apprenticeships with chefs in different countries, the United States, Japan, Singapore, Peru and others, to the management of the Hôtel de Crillon before it closed. My motivation was that I knew that when we reopened I’d again be cooking for some of the most sophisticated, knowledgeable and gastronomically-adventurous diners in the world, people who’ve been to dozens of the world’s best tables. So since I had only ever basically worked in France, I felt it was important for me to have a deep experience of other culinary cultures and chefs’ kitchens to broaden my horizons,” Hache explained.
“My idea was to choose chefs who were natives of the countries they work in, Dan Barber in New York, for example, so that I could learn from him the way they use local produce both in terms of technique and the logic of their palates. Working at Dan Barber was a very rich experience for me, because he is so committed to local, seasonal, indigenous, organic produce. He has a way of sublimating natural produce without losing the rawness of its natural taste and texture that makes it exciting. It made me think a lot about how I wanted to do something similar with the produce of farms that are near Paris and in the northern part of France. It was a fascinating and deeply enriching set of experiences for which I will always be very grateful.” Then Hache tells me about a “magical” stint he did at American chef Thomas Keller’s restaurant, The French Laundry, in California. He was working in the kitchen at Keller’s restaurant when the chef came to welcome him to the team. “Then he asked me where I was staying while I was in Yountville, and I sort of avoided his question, because I didn’t want him to know that I was staying at the Motel 6 (an American chain of budget motels). But chef Keller was so persistent, so finally I told him, and he insisted I move to a beautiful guesthouse on his own property. I was really moved by how kind and considerate he was,” said Hache, adding that the other most important takeaway from his Californian experience was the restaurant’s “amazing culture of great produce. The produce in Northern California is just spectacular, and I had the same experience during the time that I spent with chef Christopher Kostow at Meadowood in Napa.” Hache’s eloge to the primacy and purity of produce to his cooking made me think of the dish of his from the tasting menu I’d recently enjoyed that just may best express this young chef’s coalescing gastronomic signature. Simply entitled on the menu as “Champignon de Paris, Terre” (Paris mushrooms, earth) it was a winsome, witty and delicious composition of ivory-coloured mushrooms grown in a former quarry north of Paris sprouting from earth that was made from mushroom jus-infused cream and bread crumbs. It was surprising both in terms of its amusing and unexpected appearance and lush contrasts of earthy taste and texture. “Real champignons de Paris have a distinctive taste that comes from the limestone caves in which they’re grown,” Hache explained. “Mushrooms are rather like grapes, or a very direct expression of their terroir (the w w w. p a r i s m a p. fr 15

distinctive place in which they were grown),” he explained. Many dishes in Hache’s menu also exhibited a stunning technical precision, and one was almost shockingly audacious in the context of an haute cuisine meal, lamb’s brains served cool in a delicate gelée with a silken ribbon of potato purée. Hache looks a little bashful when I ask him about it. “Did you like the brains?” “I did,” mentioning how surprised I was to enjoy them served cool. “I decided that the texture of the brains would be even more interesting served cold than hot, because they’d be firmer and their taste would be clearer,” Hache explained. “Reasoning through the effects of different temperatures on a product is something I learned from working with Shuzo Kishida at his restaurant Quintessence in Japan. Of course, I was already very lucky to have had such exceptional training and professional experience in France, since it gave me a solid perspective and point-ofview from which to understand other chefs and their kitchens.” After getting a degree from the Lycée Auguste Escoffier, one of the most prestigious cooking schools in France, which also happens to be in his home town, Hache worked with a suite of distinguished chefs, beginning with Eric Briffard, who was working at the Elysées Vernet at the time. “I worked long days, but I learned so much in terms of technique, and Briffard was of course one of the first chefs to incorporate Japanese techniques and aesthetics into his cooking. Next, Hache worked at the celebrated Lucas-Carton as an assistant chef when the late Alain Senderens was still in the kitchen. “Here I learned the power of unlikely pairings of foods and flavours,” he comments. A stint in the kitchen with chef Eric Fréchon at L’Epicure at the Hôtel Le Bristol followed, then Hache became sous chef to Frédéric Robert at La Grande Cascade. Then in January 2010, he was drafted at the tender age of twenty-eight to become chef of the magnificent Les Ambassadeurs, one of the most legendary restaurants in Paris, at the Hôtel de Crillon after chef Jean-François Piège left to open his own restaurant. A year later the hard-working Hache won his first Michelin star for a cooking style all his own. Two dishes from his earliest menus at the Hôtel de Crillon that I will never forget include a morel mushrooms stuffed with Iberian ham in a hazelnut foam, a sublime celebration of springtime, and ormeaux (abalone) fished from the waters off of the Channel islands prepared meunière style and garnished with oyster tartare and a cauliflower jus, a stunningly sophisticated and subtly sensual pairing of products from the sea and the land. 16 W H E R E PA R I S I M AY 2018
“Simplicity is my true north,” says Hache. “I really believe no dish should have more than three or four flavours, because beyond that you lose the pleasure of the natural flavours of your produce and things become too complicated. Luxury today is not what luxury was in the past. Today, it’s a huge pleasure for me to offer the freshest and finest seasonal products as possible. Certain luxury products have become a cliché, but nothing will ever dull the pleasure of eating tiny just picked fresh peas or a beautiful simply prepared fish that only came out of the sea a few hours earlier,” says the chef. This is also why the menu at L’Ecrin evolves constantly. “Every Saturday the team meets to do a tasting of new dishes and discuss how they might be improved,” says Hache, guilelessly distancing himself from the popular image of the great Gallic chef as some sort of tyrannical autocratic maestro. When I ask him about this work method, he’s briefly nonplussed. “I think it’s important to have others with different palates and sensibilities offering their opinions, because this reflects the reality of every night in our dining room, it is a full spectrum of diners with different likes and dislikes.” The intelligence and graciousness of Hache’s response further emphasises the alluring humility that is the surprising and charming axis of the dining experience at L’Ecrin. I ask the chef for an example of a recent revelation from one of these communal kitchen tastings. “We’re still trying out different variations of the lamb brains, and someone recently suggested they would go well with the taste of Mescal (the Mexican spirit),” he says. I tell him the pairing sounds intriguing, and he grins. I also can’t help but wonder if he cooks at home on his nights off. “I do. I like a simple meal like a soufflé made with Beaufort cheese, a green salad, and a nice bottle of wine, maybe a red from Château de Rousset in the Alpes de Haute Provence.” I tell him that his wife and his baby son Oscar are lucky. “At home or at the Crillon, my cooking is based on creativity, inventing a distinctive identity, and modesty, which means constantly questioning what you’re doing and what you think you already know. T
he first thing our mind goes to when thinking of Evian is bottled water, however, beyond being one of the purest mineral water brands, Evian is the name of a beautiful spa destination, and it is of course where the water is sourced.
The idyllic town of Evian is located on Lake Geneva and has been quite popular for centuries for being a spa destination with both royalty and celebrities looking to breathe in fresh air and to look after their mind, body and soul. Escaping busier cities, Evian is a welcome change of pace with its open spaces, the breathtaking lake and clean air. It was in 1789 that the virtues of Evian natural mineral water were first discovered, with the site of the water filtering it during its 15-year journey as it makes its way under thick layers of clay, the water boasts a unique balance of minerals. At the time, the newfound pollution-free water, that is pH neutral and with a low mineral content became the drawing card, transforming Evian into a popular thermal spa destination. Evian’s first thermal baths were inaugurated in 1824, attracting socialites of the time and European bourgeoisie who came for the benefits reaped from the water with the Thermes d’Evian long being famous amongst visitors looking to preserve their health in a natural way with the water’s therapeutic benefits. Today, with everyone seeking to improve their health, spa getaways have never been so popular and it’s only fitting that Evian’s oldest hotel has embraced the destination’s origins, becoming a health retreat, more specifically a yoga retreat. Opening its doors on the 16th of June in 1909, the Royal Hotel was named in honour of King Edward VII of England and its rollcall of future guests, who over the years included Anna de Noailles and Marcel Proust, who wrote chapters of his In Search of Lost Time at the hotel. on the changing of the seasons and their effects on the human body. In the summer the body is in a happy state, in turn Levy’s yoga classes focus on the inner light while the massages focus on nourishing the body, while in winter the body is in need of regenerating, to wake up from its sluggish state brought on by the weather, and to counteract that feeling hot stone massages at the spa are prescribed to help relax the body while Levy focuses on more mellow poses, slowly stretching the body, although the yogi adapts to the levels of each guest. To round out the retreat, the hotel chef has created a vegetarian menu that focuses on giving the body its required nutrients using seasonal produce, complementing the healthy physical aspects of the programme with healthy meals. With sweeping views of Lake Geneva and the city of Lausanne, the Swiss city on the other side of the lake, Evian is also an attractive destination for travellers looking to spend their time outdoors. For the active, there is no shortage of sporting activities with rowing, sailing and water-skiing only some of the water activities you can partake in and of course avid golfers will be living their golfing dream by playing golf at the Evian Resort Golf Club where the The Evian Championship is held, overlooking Lake Geneva, it was one of the first golf courses to have been created in France. For travellers with more of an inclination to relax and just take in the peace and quite, or who are looking to enjoy more of an arts and culture break, a visit to the Palais Lumière is a must with the space currently hosting through until the 21st of May a temporary exhibition showcasing the works of French painter Jules Adler. Meanwhile, for music lovers and appreciators of fine architecture a visit of the Grange au Lac is highly recommended. Designed by architect Patrick Bouchain, the Grange au Lac is a magnificent work of art built entirely from pine and red cedar and adorned with six Murano and Bohemian crystal chandeliers that light up the space, creating an extraordinary juxtaposition of the materials. The venue hosts the annual Evian Musical Encounters music festival as well as Jazz at the Grange, a 3-day winter festival that celebrates the sultry sounds of jazz. For avid foodies, dinner at Les Fresques must be programmed. Awarded its first Michelin star this year, the restaurant is where chef Patrice Vander has orchestrated a contemporary menu that boasts seafood dishes using seafood from Lake Geneva as well as his classic dishes that include wild sea bream marinated with mango, wakame and caviar, and Bresse

The dining room features a ceiling beautifully covered with frescoes by Gustave Jaulmes and offers gorgeous views of the lake, adding an exclusive ambiance to the starred culinary experience. Of course a visit to Evian is incomplete without a round of games at its famous casino. 1912 saw the opening of the Evian Casino and today it still remains one of the main attractions of the city with 287 slot machines and 10 gaming tables including roulette and Black Jack. Only three hours away by train and an hour by plane from Paris, Evian is the perfect balancing destination for a little bit of R&R after basking in all that bustling Paris has to offer.

Klein and Klein The photographs of William Klein are being showcased at the Polka Galerie in a retrospective exhibition to mark the 90th birthday of the artist and trace a career of 70 years that has left a lasting influence on street and fashion photography. Entitled William + Klein, the show brings together 90 prints recounting the decisive chapters in the artist’s work from his abstract light images to his fashion pictures, his films, his wanderings in New York, Rome, Moscow, Tokyo and also Paris, his city of adoption. He would study abstract painting with Fernand Léger in post-World War II Paris and with a Rolleiflex that he won when he was in the army at a poker game, took on photography as a new field to explore as he played with the light and the obscure. Street, fashion and celebrity photography along with extensive filmmaking would all follow. - P.V.

A Glorious Galaxy From Yves Saint Laurent, to Giorgio Armani, Vivienne Westwood and Karen Mulder, Jean-Marie Périer captured for eternity leading fashion designers and muses in photographs with highly original stagings that are the hallmark of his work. In an exhibition entitled Fashion Galaxy, some 30 of his photographs of the world of fashion, including many that have never been shown before, are on display at the Photo 12 Galerie. Périer’s career began in the 1950s in Paris where he worked for mainstream publications like Paris Match and Télé 7 Jours before becoming the photographer of the renowned French music magazine Salut les Copains, photographing major figures of the world of music. After more than a decade in the United States producing advertising films, he returned to France in 1990 to work for the magazine Elle. The exhibition presents iconic photographs with notably Karl Lagerfeld in front of his snow-covered château in Hamburg and Kenzo astride an elephant. - P.V. Women, cats, still lifes, children, self-portraits, those were the recurrent themes of Léonard Tsuguharu Foujita, the Japanese artist whose career developed between two cultures, Japan and France. A show, being held at the Musée Maillol 50 years after the artist’s death and entitled Foujita, Painting in the Roaring Twenties, brings together over 100 major works by this leading 20th century artist retracing his years in Montmartre surrounded by his friends, including Modigliani, Van Dongen and Zadkine. The show concentrates on the first and productive Parisian period between 1913 and 1931 of this Japanese artist who would later become a French citizen. The works emanating from leading institutions and museums as well as private collections in Japan, the United States and Europe underscore Foujita’s creative genius and offer visitors a glimpse into the world of this unique artist. - P.V. I
A Discovery of DALÍ
t was back in 1991 that a venue opened up in Montmartre showcasing a private collection of some 300 works, sculptures, engravings, objects and furnishings by Salvador Dalí offering a unique glimpse into the work and world of the Surrealist sculptor, designer, artist, engraver and illustrator. Dalí Paris re-opened its doors to the public last month offering a new journey into the world of the artist and enabling the public to discover the art dealer and collector, Beniamino Levi, who assembled the collection, which remains the only permanent exhibition in France, devoted to Dalí, the master of Surrealism. Beniamino Levi, an eminent Italian gallery owner started putting the collection together in the 1970s. Upon returning to Milan after the Second World War, he frequented actors in the effervescent artistic scene, notably Lucio Fontana and Alberto Burri and became friends with the art critic Franco Passoni with whom he opened the Galleria Levi in Milan. He first met Dalí in 1974 in his suite at the Meurice hotel where Dalí and his wife Gala resided during their Parisian sojourns. Levi would first purchase two paintings, the 1932 Egg on the Dish without the Dish and The Invisible Harp done in 1934, which he exhibited in his gallery in Milan. After additional encounters in Paris, New York and Dalí’s home in Cadaquès in Spain, the collector launched into a new challenge, editing the sculptures of Dalí and he would progressively acquire the rights to 29 images taken from the artist’s most celebrated paintings including the Persistence of Memory, the Temptation of Saint Anthony and The Burning Giraffe, giving him the possibility of having bronzes made from models conceived by the artist. The bronze sculptures of these images were cast in Switzerland at the legendary Perseo Foundry, which casts the work of Alberto Giacometti and Fernando Botero. 54 W H E R E PA R I S I M AY 2018
Today, Dalí Paris, which has been given a redesign by the architect and scenographer Adeline Rispal offers a meander through the artist’s works and allows the visitor to embark on a non-exhaustive journey into the artistic path taken by Dalí and revealing a not so well known segment of his work while putting the spotlight on his technique and creativity. The inaugural exhibition showcases the paths of the artist and the collector. The venue is slated to host contemporary artists beginning in 2019. - P.V. The year 1968 would become a historic year in France, particularly the month of May, marked by civil unrest with demonstrations, massive strikes and the occupation of universities and factories throughout the country. In an exhibition entitled 68 ! La rue, la mode, les icones (68! The Street, The Fashions, The Icons) the Galerie Hegoa is presenting photographs taken during this year offering a panorama, not only of the events, but what was going on beside and outside of them. The show brings together photographs by Claude Azoulay, Jean-Claude Deutsch, Peter Knapp, Bernard Perrine, the artist Paul Raynal and photographs from the collection of Michel Giniès. Peter Knapp’s photograph of Grace Jones in Emanuel Ungaro is juxtaposed with Bernard Perrine’s photograph of a cluster of police in the streets of Paris, and among the photographs by Jean-Claude Deutsch one finds French statesmen André Malraux and Michel Debré demonstrating in favour of Charles de Gaulle, Sharon Tate in her hotel room in Paris and Brigitte Bardot and Gunter Sachs at the beach in Deauville. - P.V. he “Espace Musées” museum area at Paris-Charles de Gaulle Airport welcomes the Centre Pompidou until 10 September 2018. The exhibition entitled “Abstract Art in the 1950s”, prepared by the French National Museum of Modern and Contemporary Art, spotlights a selection of 20 major works from its collections.

A Digital Art Centre Lights Up the Capital

A
new venue devoted to the digital arts has opened up in Paris called L’Atelier des Lumières (The Workshop of Lights) whose vocation is to present monumental immersive exhibitions to the public. Outfitted with 140 video projectors and a space-filling state-ofthe-art sound system, the venue’s multi-media equipment is unique in its genre moulding a surface area of 3300 square metres from the floor to the ceiling with walls that can measure up to 10 metres high.

“The role of an art centre is to break down barriers and that’s why digital must position itself in the exhibitions of the 21st century, in the service of creation it becomes a formidable vector of distribution, capable of creating links between ages, to enable artistic practices to strike chords with one another, to amplify emotions, to reach as many people as possible,” explains Bruno Monnier, the president of Culturespaces, the cultural organisation that developed and manages the Atelier des Lumières.
The immersive exhibitions are put on using the AMIEX® process (Art and Music Experience), which was developed by Culturespaces in 2012. The monumental exhibitions are made-to-measure and are conceived to completely cover the space they are dedicated to while the process involves de-materialising the works of art to project them onto immense surfaces in an extremely high resolution. Located in a former Parisian iron foundry situated between Bastille and République, the venue holds three exhibitions in two spaces. The Halle exhibition space will host a cycle of digital and immersive exhibitions alternating between long programmes devoted to major figures in art history while a short programme will feature more contemporary works. The opening long programme is devoted to Gustave Klimt and Egon Schiele plunging the visitors into the heart of monumental works of art by these monumental figures of the late 19th century Vienna Secession movement. Visitors can see the slightest detail in the works of the artists while surrounded by captivating music including selections by Wagner, Strauss, Beethoven, Mahler and Chopin. Meanwhile, the current short programme will be devoted to another artist in the Viennese contemporary
The centre’s Studio space will reveal contemporary digital artists, both confirmed and emerging, who are given carte blanche to create an original visual universe.

he wonderful world of cinema can be discovered right in Paris at La Cinémathèque française, home to one of the finest collections and archives in the world devoted to film. It was back in 1936 that Henri Langlois, a French film archivist, cinephile and a pioneer in film preservation, created La Cinémathèque française to save from destruction films, projection machines, costumes, posters and other cinematic treasures. He would be given an Honorary Oscar in 1974, “for his untiring devotion to the art of film, for his massive contributions towards preserving its historical past and for his unswerving faith in its future.” Eight decades later the world of cinema that Langlois endeavoured to conserve lives on in a light-filled modern building designed by Frank O. Gehry in which the world of motion pictures is revealed through a museum, exhibitions, projections, a film library and bookshop. It offers a complete cinematic experience for film lovers and is a perfect place for neophytes to discover cinema of the world, of all ages and of all genres.

La Cinémathèque’s Musée du Cinéma exhibits some 600 objects enabling visitors to journey over three centuries into the universe of animated images. Magic Lanterns, optical boxes as well as costumes worn by, among others, Vivien Leigh and Greta Garbo, are on hand as well as a host of extraordinary objects, notably the robot from Metropolis by Fritz Lang and the head of Mrs Bates in Psycho by Alfred Hitchcock.
Some 40 films are projected each week at La Cinémathèque française in the establishment’s four movie theatres with programmes revolving around major directors, actors and technicians but also the young generation of filmmakers. A host of activities including conferences and master classes are also organised around the projection programmes. There is also an excellent restaurant serving homemade dishes using seasonal products.

Visitors enter the Gehry building, which is built around a monumental hall that is thoroughly drenched by incoming light and outfitted with large bay windows and small balconies, and within will discover collections where over 40,000 films, 3000 costumes, 23,000 posters, 14,000 drawings and 2,300 objects are conserved. Lunching in Paris The Printemps department store has just opened a new food hall called Printemps du Goût on the 7th floor of their elegant building in the heart of Paris. It showcases produce from some of the best producers in France, and also includes several sit-down restaurants from a small group of distinguished French chefs. Among these, the standout is Maison Dubernet & Thierry Marx, where the small-plates menu is a collaborative effort between this distinguished producer of foie gras and charcuterie from the Landes in southwestern France and one of the most innovative chefs in Paris. At this restaurant, Marx works with Dubernet produce to offer a menu that’s at once innovative and traditional. It evolves regularly but meeting a friend here for Saturday lunch recently, we began with Marx’s homemade pastrami with pickled vegetables, some excellent foie gras and a luscious cream of wild mushrooms with a coddled egg and bacon, and continued with roasted duckling breast and white polenta and marinated salmon filet with herbs and baby fennel. This was an excellent meal, and it’s an address very much worth noting not just for shoppers but anyone who’s hungry at noon in the heart of Paris and also for weekend lunching, since they serve lunch on Saturday and brunch on Sunday. New Cuisine Brilliant young chef Tomy Gousset has a hit on his hands with Hugo & Co, a charming vest-pocket restaurant in the heart of the Latin Quarter. What the regulars here love, and this place attracts a decidedly local Parisian crowd of students, academics and creative professionals, who give it a great ambiance, is the charming service, superb contemporary comfort-food menu and excellent wine list. The very reasonable prices go over well, too. It’s a good looking little restaurant, with an open kitchen giving on to a dining room decorated with wooden wine crates on the walls, caramel leather banquettes and chairs at oak tables and gentle lighting. Start with a few of the small plates to be shared, maybe the superb pancake with crispy guanciale, Pecorino and arugula, marinated salmon with grated beets and horseradish, or stracciatella with black olives, and then tuck into beautifully made mains like a breaded pork cutlet topped with a fried organic egg and red-curry sauce with a side of black rice and pickled red cabbage or the beef cheeks with green asparagus and panisses (crispy wands of fried chickpea-flour). Finish up with the mango ice-cream with tapioca and fromage blanc, and note that the best all-purpose bottle on the excellent wine list is the luscious white Dao from Portugal. Modern Dining Brilliant Roman born chef Giovanni Passerini, who runs the best Italian restaurant in Paris under his own name in the 12th arrondissement, has drawn up a beautiful comfort-food menu that is executed by acting chef Sho Ashizawa at the new Hotel Grands Boulevards restaurant. Start off with some hors d’oeuvres, maybe a mortadella and taleggio pizzetta, while you sip one of the excellent cocktails such as the Old Cuban, made with rum, lime juice, mint leaves, ginger cordial, Champagne and Angostura bitters, making for a great way to segue into the evening, and then debut with a starter like the tartare of smoked and charred beetroot with Fourme d’Ambert cheese, Treviso and dried fruit or the red mullet with leeks and potatoes. Main courses include superb pastas like linguine with marinated squid and gnocchi with lamb ragu, and then there’s a selection of dishes for two, including a leg of baby lamb, roast pigeon and pork ribs. Contemporary Comfort Cuisine The 11th arrondissement of Paris continues to be the best place to discover the French capital’s most inventive contemporary cooking, because it’s where so many of the city’s most talented young chefs set up shop when they go out on their own. Recently, the trend here has been relaxed, friendly places with nicely made cocktails, a menu of inventive small plates to share, and wine lists that feature organic, natural (no sulphur added) and biodynamic (the vines are tended according to the phases of the moon) wines. This description fits Anna, a charming new neighbourhood restaurant by the same trio who had already scored a hit with their nearby table Tannat, to a T, restaurateurs Ariane Stern, Simon Auscher and chef Olivier Le Corre. To wit, this is a friendly, low-key, pleasant place with charming service and a terrific menu of contemporary comfort food dishes to be shared. Start with the scallops with apple, celery and lemon and one of the best onion soups in Paris, it’s an allium lover’s dream, since it contains scallions, shallots and onions in a deeply reduced beefy stock, and then tuck into main courses like lacquered pork spare ribs with roasted cauliflower or macaroni and Gouda cheese with mushrooms. A Night in Bali Take your taste buds on a voyage to the Far East with an exotic dinner at Djakarta Bali. More than Just a Circus Life is a circus and there is no better circus to watch live than the Cirque Alfonse, the Canadian troupe that has been wowing audiences with their acts since 2006. And making cocktail hour seem prohibited is the new pop-up Diplomático speakeasy bar, which is open only until the 14th of June. Every day, from 6.30pm and until 1am, guests are invited to enter the speakeasy bar, found in the Pullman Hotel, to taste cocktails made with the legendary Venezuelan rum, however, the space can only host 12 at a time, so be sure to get there early or wait patiently in the equally cool degustation space found under scaffoldings, which is usually off-limits to the public. - S.I.

Paris Metro ◗ Paris is crossed by 14 Métro lines and five RER (express suburban) lines, all numbered and named for their final destination (terminus). Did you know that there are 300 stations that make up Paris’ metro system?

◗ Each Métro trip requires one ticket regardless of how many transfers you make, though you must buy an extra ticket for the RER outside the city limits. Keep your ticket until you exit.
◗ Tickets are sold in all stations and in cafés (tabacs) with a ticket sign outside, single (1.90€/2€ if purchased on a bus) or by 10 (un carnet - 14.50€). This map includes the new tramway line.
◗ “Paris Visite” passes offer unlimited travel on the Métro and buses (1day, 2-day, 3-day, 5-day). The Métro and RER start running at 5:30am, and stop around 1 am.
