The Essential Phoenix +Scottsdale Welcome to February in the Valley—what a perfect time to be here! As people all over celebrate this month of love, we promise you’ll fall in love with this area. Try foods made with local ingredients (pg. 30), challenge yourself with some unique workouts (pg. 32) and explore some of the many outdoor destinations (pg. 33). 90 MINUTES IN:
Cave Creek and Carefree Located in the northern part of the Valley, the towns of Cave Creek and Carefree still maintain the desert charm of past years, with a touch of modern mixed in. Cave Creek was settled in the 1870s and developed by miners and ranchers, and is now home to unfussy restaurants and art galleries. Carefree is younger but more refined, established in the 1950s as a planned community. Located just minutes away by car, start on Cave Creek’s main street and wander Western stores, art galleries and other shops before heading to downtown Carefree. In the center of town, view the sundial, which is the largest in the country. Nearby is Spanish Village, one of the first buildings constructed in Carefree, now filled with restaurants, stores and art galleries. Get going! Explore the city at wheretraveler.com.

Soil & Seed Wild Garden Salad
TOMATOES Chef Tomaso Maggiore may source his Italian goods directly from Sicily, but one of his signature produce items is grown here in the Valley. Tomaso’s fresh heirloom tomatoes are from Phoenix’s Abby Lee Farms. The tomatoes are used for select salads on the menu, including the Heirloom Tomato Salad. They’re also used in Tomaso’s house-made tomato sauce, which is served on a variety of his signature pasta dishes. Tomaso’s Italian Restaurant, 3225 E. Camelback Road, 602.956.0836; Tomaso’s When In Rome: 23655 N. Scottsdale Road, 480.404.6085 GREENS & FLOWERS At Quiessence at The Farm, dishes are served utilizing ingredients from the on-site professional organic garden, Soil & Seed. Chef Dustin Christofolo plans each row for each season, and includes greens, vegetables, herbs and edible flowers. Try the Soil & Seed Wild Green Salad, with foraged greens from the garden, edible flowers, shaved black Spanish radish
and lemon olive dressing. Quiessence at The Farm, 6106 S. 32nd St., 602.276.0601 OIL, VINEGAR & HONEY Try one of the many globally-influenced tacos made with local ingredients at CRUjiente Tacos, or order the new Mixed Green Salad, made with organic mixed greens, spiced pecans, jicama, red onion, Crow’s Dairy Goat Feta from Buckeye, and a fig balsamic vinaigrette made with Queen Creek Olive Mill fig balsamic vinegar, Queen Creek Olive Oil, and Malcolm’s Arizona Honey from Tucson. CRUjiente Tacos, 3961 E. Camelback Road, 602.687.7777 DATES & CHORIZO Executive Chef Russell LaCasce at ZuZu, located inside the retro-chic Hotel Valley Ho, created the Pinnacle Farms Pinnacle Farms Organic Maktoom Dates
Organic Maktoom Dates starter, featuring local dates and chorizo. The dates are from Pinnacle Farms at the base of South Mountain, with chorizo coming from local favorite Schreiner’s Fine Sausage in Phoenix. The dish is topped off with grilled radicchio, toasted walnuts and blue cheese fondue, for a unique and bold flavor combination. ZuZu at Hotel Valley Ho, 6850 E. Main St., 480.376.2600

Caramelized Brussels Sprouts
Pecan Power Beet and Goat Cheese Salad
PIZZA PARTY The Margarita Pizza on LON’s lunch menu and LON’s Last Drop bar menu uses nearly all local ingredients. The pizza dough is made using locally grown and milled flour from Hayden Mills. Then, instead of mozzarella, Goat Cheese Curds from Buckeye’s Crow’s Dairy are used. Topping off the pizza are roasted cherry tomatoes from Phoenix’s Abby Lee Farms, and basil grown in the flower beds around LON’s
“I have experienced so many goods from around the world and some of the best products and ingredients are right in our own backyard. I’m proud of where I live, so I’m going to embrace that in every way possible.” —Chef Tomaso Maggiore
Arizona is one of the world’s largest pecan producers, harvesting more than 20 million pounds annually. And thanks to its abundant sunshine, Arizona’s pecans are typically larger and meatier than those from Georgia. Enjoy some in the Caramelized Brussels Sprouts dish, made with local pecans and aged balsamic, served at J&G Steakhouse (www. jgsteakhousescottsdale.com). And if you’re visiting in November, head to the town of Sahuarita for the AZ Pecan Festival (www.sahuarita pecanfestival.com)—it’s run by the Green Valley Pecan Company, one of the world’s largest growers and processors of pecans. 31

ZOO
GARDEN
As one of the nation’s largest nonprofit zoos, the Phoenix Zoo is home to more than 1,400 animals, including endangered and threatened species—see elephants, lions, jaguars, lemurs, giraffes, bighorn sheep and more. Set on 125 acres, the approximately 2.5 miles of walking paths are divided into four trails—Arizona, Africa, Tropics and Children’s. There are also several animal encounter areas available. At Monkey Village—the only walk-through exhibit of its kind in the United States—watch squirrel monkeys play as you wander through the open exhibit. Next, head over to Red Barn to pet and brush goats, and to get up-close with cows, sheep and horses. One of the most popular areas, the giraffe encounter, is where visitors have the opportunity to climb the stairs to a tall viewing deck, which brings them eye-level with the tall mammals. Other zoo experiences include a 4-D theater, where attendees feel fully immersed in a truly magical way utilizing smells, water, wind and other various intheater effects; camel rides; Stingray Bay, a touch pool for hand-to-fin contact with stingrays; the Safari Train, a narrated, 25minute tour through the zoo; puppet shows; play areas; and carousel rides. In the summer, the water play areas are open as well. (Some activities are an additional fee.) 455 N. Galvin Parkway. www.phoenixzoo.org
With 55,000plus plants, it‘s easy to spend hours wandering around the 140-acre Desert Botanical Garden, a destination dedicated to showcasing the beauty of the Sonoran Desert. Make sure to head to the Sam and Betty Kitchell Heritage Garden, where large Mexican blue palms and more fill the space, as well as majestic towering Cardon cacti (some of the first plants to be planted at the Garden in 1939!). The Founders Wall—located in the center of the space and comprised of glass circles—is a favorite as a backdrop for photos, while the serene Fine Family Contemplation Garden provides a quiet refuge to pause for reflection. Five trails—all loops—take you through the garden and its wonders. 1201 N. Galvin Parkway. www.dbg.org
MOUNTAIN
Metro Phoenix sports a variety of hikes offering stunning views and scenery. The iconic Camelback Mountain (pictured above) offers a challenging climb that’s rewarded with dramatic 360-degree views. At Piestewa Peak, find a variety of trails that range from easy—some guide hikers around the circumference of the mountain—to the Summit Trail, a 1.2-mile hike that incorporates a more than 1,200-foot elevation gain and is extremely strenuous and difficult. [WHERE INSIDE]
Valley of the Sun
Any romantic twists? Valentine's day is an incredibly popular time for couple rides; there have been years with over 10 wedding proposals. We’ve even had weddings in the balloon. We will also have chocolates or flowers for our Valentine's guests over that weekend.
W. Scott Appelman [President /CEO at Rainbow R yders]
Founder and President W. Scott Appelman launched Rainbow Ryders more than 35 years ago, growing the company to be the largest balloon ride business in New Mexico and Arizona, and one of the largest in the United States. The company is the Official Balloon Ride Operator for the Albuquerque International Balloon Fiesta, and offers daily balloon rides over Phoenix/Scottsdale, Albuquerque, Colorado Springs and Las Vegas. Tell us about Rainbow Ryders! Where do you fly? Well first of all, I wanted to avoid a real job. But
seriously, I love to fly and flying in a balloon is special—you are in an aircraft that goes with what Mother Nature
80 W H E R E P H O E N I X + S COT T S D A L E I F E B R UA R Y 20 18
offers on that particular flight. Going to fly is never the same from day to day, so there is constant change and adjustments for the flight path. It’s a challenge that is so much fun to navigate. How many balloons do you have? We are the largest company in the U.S.— we have 26 balloons. What have been some of your most memorable flights? Flying out of Central Park in New York City by far
What sets Rainbow Ryders apart from other balloon companies? Rainbow Ryders has the newest and best fleet of hot air balloons, as well as over 50,000 hours of pilot flight time. The passengers are being flown by the most qualified and trained pilots in the industry, and we are the only company with requirements that include 2nd class airman's medical, 10 hours of continuing education per year, and annual flight reviews. On the retail side, we are a TripAdvisor Hall of Fame and have 5-star reviews on most sites. Lastly, we have an office where people come to meet us instead of the parking lot of a donut or coffee shop, or a vacant lot in the middle of nowhere. In our office resides a retail shop, restrooms, and a very comfortable interactive area for folks to be able to see what they are doing!
Describe what it’s like to be in a hot air balloon. It’s always hard to answer this! The best I can give you is that it’s like floating—quiet and serene as you float over the landscape or city with all the activity happening below. What do you love most about living here? The people and the landscape. People are so positive, upbeat and proud of the community. Of course the dining, sports, entertainment and shopping are really unrivaled. Any favorite spots around town? I like to stay a little lowkey on that. I really like dive bars that you can just relax in. How about restaurants? Eddie V’s, Kona Grill and Tomaso’s. What’s one place you always recommend to visitors? Rainbow Ryders, of course! But Scottsdale Fashion Square mall, Eddie V’s, and concerts at University of Phoenix Stadium. Anything else we should know? I am new to living here after four-plus decades in Albuquerque and I absolutely love it here. My goal is to make hot air ballooning as much a part of the destination as it is in Albuquerque. This is a great place to take flight and we want to bring out the best of that to all. has to be very high on the list. Of course flying with 500-plus balloons in Albuquerque, too. But truly, one of the most scenic nature flights is flying here over the Sonoran Desert surrounding Phoenix.
