This year’s event, Jan. 13-21 at WestWorld of Scottsdale, features such gems as a one-of-a-kind 1951 Talbot-Lago T-26 Grand Sport Saoutchik Coupe; and the incredibly rare, last-known HEMI ’Cuda, built in the 1970s. LOCAL FLAVORS

Local Sips: Cider, Beer & Wine

Try some of Arizona’s best at Valley tasting rooms. From cider to beer to wine, there’s something for every palette and preference. Cheers to that.

With thriving vineyards both north and south of Metro Phoenix there are plenty of sips to savor— but there’s no need to road trip with the variety of local tasting rooms right here in the Valley. LDV Winery (6951 E. 1st St.; www. ldvwinery.com) focuses on Rhone varietal grapes, including syrah, grenache and viognier. At Carlson Creek (4142 N. Marshall Way; www. carlsoncreek.com), the portfolio includes varietals of chardonnay, sauvignon blanc, riesling, syrah, sangiovese, cabernet sauvignon, grenache, grenache rosé, malbec and mourvèdre, with chenin blanc and merlot varietals being

locally sourced. For fruit-forward, crisp white wines and artistically blended and complex red wines, head to Salvatore Vineyards (7064 E. 5th Ave, www.passion cellars.com). Find both SouthPaw Cellars and Gallifant Cellars labels at Winery 101 (9299 W. Olive Ave., Peoria; www.winery101.com).

THE BUZZ ON BEER Beer-lovers have their fare share of tasting to do in the Valley—there are numerous local breweries. At Scottsdale Beer Company (8608 E. Shea Blvd.; www.scottsdalebeercompany. com), Mother Bunch Brewing (825 N. 7th St.; www.motherbunch brew.com), SanTan Brewing Company (8 S. San Marcos Place, Chandler; www.santanbrewing.com) and Pedal Haus Brewery (730 S. Cider Rules Arizona’s first full cidery and tap room is located in Downtown Mesa. The Veteran-owned Cider Corps creates ciders using local ingredients such as prickly pear, locally made cold brew, and locally made chai. Though most cideries are located in orchards, Cider Corps is housed in a 4,500-square-foot, 1880s-era building that was formerly a Mesa police station. Brothers Jason, Sgt., USMC (Ret.), and Josh Duren began making cider as a hobby while Jason was recovering from injuries received in Afghanistan. When the ciders earned rave reviews from those within the beverage and culinary industries, they turned the hobby into a business. 31 S. multiple Valley locations are Huss Brewing Co. (www.huss brewing.com), Four Peaks Brewing Company Arizona (www. fourpeaks.com) and O.H.S.O. Brewery & Distillery (www.ohso brewery.com). The popular Two Brothers Artisan Brewing (4321 N. Scottsdale Road; www.twobrothersbrewing.com) brought its Chicago craft beer to Scottsdale by launching a local brewery.

Museums+Attractions T.C. Cannon is often referred to as the “James Dean of the American Indian art world.” Extremely gifted, the American artist (1946-1978) was tragically killed at the age of 31. His works were vibrant and colorful, typically featuring stylized depictions of American Indians, and reflecting a wide range of social, political and cultural influences. The “Of God and Mortal Men: Masterworks by T.C. Cannon” at Heard Museum, open through April 15, is a large-scale exhibition of his work. It includes paintings—some not publicly exhibited in 25 years—woodblock prints, lithographs and drawings. 2301 N. Central Ave., 602.252.8840. www.heard.org Phoenix Map A4

[WHERE INSIDE]

Valley of the Sun

In addition to steak, what else can we indulge with? We have several dishes that are slightly different than other steakhouses, such as “Schnitzel on the Bone,” Shortrib Rigatoni pasta, and our “Salsibury Prime” chopsteak. Do you have any personal favorite menu items? My favorites are actually the vegan options on the menu, the Charred Cauliflower Steak and the Butternut Squash ”Filet.” These dishes are certainly not the norm in a steakhouse, but we have received great feedback.

Paul Millist

[Executive Chef at Lincoln, a JW Steakhouse at JW Marriot t Camelback Inn] Paul Millist, the executive chef at the new Lincoln, a JW Steakhouse (5402 E. Lincoln Drive, 480.905.7979), worked at destination properties such as Renaissance Bali, JW Marriott Hong Kong and JW Marriott Phuket Thailand, as well as the One & Only Maldives and The Chedi Hotel Bali. Lincoln, a modern American steakhouse, serves hand-cut prime and Wagyu butcher's steaks seared at 1200 degrees in the Valley’s only Josper Charcoal Oven. You have a pretty cool oven there! Can you tell us about it? The Josper Charcoal Oven is a charcoal-

burning enclosed grill. The fire needs to be built every day, and we use Argentinian Quebracho charcoal. The oven grills at

80 W H E R E P H O E N I X + S COT T S D A L E I J A N UA R Y 2018

approximately 650 degrees, and we use the Quebracho charcoal because it burns very clean. It’s the only one in the Valley… why did you want this oven for Lincoln? The point of difference with this oven is that the charcoal burns very clean (not much smoke), and also leaves a light crust on the steaks, even cooking at a high temperature. We also cook several no-meat items in the Josper.

When you’re not eating at Lincoln, do you have any favorite restaurants around town? Places I like to eat at are Toyama Sushi and Dominick’s Steakhouse. Also, Butterfield’s Pancake House for breakfast. Any cooking tips you can share? Cook the foods you love, use quality ingredients, and keep it simple. Special travels of note? I have worked in the following countries:

Indonesia/Bali, Maldives, Malaysia, China, Hong Kong, Thailand, Seychelles, England and France. Have you won any awards and or honors? I was named JW Chef of the Year when I worked in Phuket, and again here at the Camelback Inn. Do you have any favorite kitchen tools? Sharp knives. Ingredient obsession? Truffles. How about a favorite childhood dish? [I grew up in Australia, so] Australian fish and chips. Favorite cheap eat? Pizza. What is your favorite dish to prepare and why? Pasta because it’s fast and easy. Favorite guilty pleasure? Chocolate. What is your favorite restaurant, anywhere in the world? Naughty Nuri’s Warung in Ubud, Bali. Anything else we should know about you or the restaurant? I love to speak with our guests, so please ask for me when you dine for a fun chat. Discover more at

wheretraveler.com

COURTESY PAUL MILLIST

How does it impact the menu? We primarily cook our steaks in the Josper, but also braise shortribs overnight, and prepare several vegetable dishes with it.
