Museums+Attractions T.C. Cannon is often referred to as the “James Dean of the American Indian art world.” Extremely gifted, the American artist (1946-1978) was tragically killed at the age of 31. His works were vibrant and colorful, typically featuring stylized depictions of American Indians, and reflecting a wide range of social, political and cultural influences. Hiking Trails & Fitness Facilities CAMELBACK MOUNTAIN These are strenuous
summit hikes. The Cholla trail rises from a neighborhood of mansions near The Phoenician’s golf courses and becomes narrow, steep and rocky in some parts. The Echo Canyon trail is so remarkably steep at some points that handrails and fences were permanently installed by park stewards. Each trail offers moments of breathtaking exposure. Valley of the Sun
In addition to steak, what else can we indulge with? We have several dishes that are slightly different than other steakhouses, such as “Schnitzel on the Bone,” Shortrib Rigatoni pasta, and our “Salsibury Prime” chopsteak. Do you have any personal favorite menu items? My favorites are actually the vegan options on the menu, the Charred Cauliflower Steak and the Butternut Squash ”Filet.” These dishes are certainly not the norm in a steakhouse, but we have received great feedback.

[Executive Chef at Lincoln, a JW Steakhouse at JW Marriot t Camelback Inn] Paul Millist, the executive chef at the new Lincoln, a JW Steakhouse (5402 E. Lincoln Drive, 480.905.7979), worked at destination properties such as Renaissance Bali, JW Marriott Hong Kong and JW Marriott Phuket Thailand, as well as the One & Only Maldives and The Chedi Hotel Bali. Lincoln, a modern American steakhouse, serves hand-cut prime and Wagyu butcher's steaks seared at 1200 degrees in the Valley’s only Josper Charcoal Oven. You have a pretty cool oven there! Can you tell us about it? The Josper Charcoal Oven is a charcoal-
burning enclosed grill. The fire needs to be built every day, and we use Argentinian Quebracho charcoal. The oven grills at

approximately 650 degrees, and we use the Quebracho charcoal because it burns very clean. It’s the only one in the Valley… why did you want this oven for Lincoln? The point of difference with this oven is that the charcoal burns very clean (not much smoke), and also leaves a light crust on the steaks, even cooking at a high temperature. We also cook several no-meat items in the Josper.
When you’re not eating at Lincoln, do you have any favorite restaurants around town? Places I like to eat at are Toyama Sushi and Dominick’s Steakhouse. Also, Butterfield’s Pancake House for breakfast. Any cooking tips you can share? Cook the foods you love, use quality ingredients, and keep it simple. Special travels of note? I have worked in the following countries:
Indonesia/Bali, Maldives, Malaysia, China, Hong Kong, Thailand, Seychelles, England and France. Have you won any awards and or honors? I was named JW Chef of the Year when I worked in Phuket, and again here at the Camelback Inn. Do you have any favorite kitchen tools? Sharp knives. Ingredient obsession? Truffles. How about a favorite childhood dish? [I grew up in Australia, so] Australian fish and chips. Favorite cheap eat? Pizza. What is your favorite dish to prepare and why? Pasta because it’s fast and easy. Favorite guilty pleasure? Chocolate. What is your favorite restaurant, anywhere in the world? Naughty Nuri’s Warung in Ubud, Bali.
