All eyes will be on Sydney Harbour on Boxing Day for the start of the Rolex Sydney to Hobart Yacht Race—one of the world’s toughest ocean races. By Helen Hayes. WHAT A SPECTACLE! Every Boxing Day
in Sydney, the foreshores are packed and the harbour is churning with boatloads of people, all there to watch the start of the biggest race in the Australian bluewater sailing calendar—the Rolex Sydney to Hobart Yacht Race. About 600,000 Sydneysiders venture out early to claim their favourite vantage points around the harbour. Then there are the vessels of all shapes and sizes that go out packed to the gunnels with spectators, families, friends and VIPs. On the water, there are boats in every nook and cranny on the harbour—cruisers, yachts, ferries, charter yachts, speedboats and dinghies. The yachts in the race begin stretching their legs on the harbour a few hours before the 1pm start. For months prior, the crews have been preparing for this moment, ensuring the yacht has everything just right for the 628 nautical mile race. The hours before the race are vital, with tacticians, navigators and skippers moving
around the harbour to get a feel for the wind, so they can decide which end of the start line is best and which sails to hoist. The 10-minute gun will boom, then the five-minute gun, and yachts will need to be in the perfect position to give them a good track to the start line—or lines—there are three lines with the biggest yachts starting from the front line. Tensions rise, skippers try to be in the right place when the starting cannon fires, the bow of the yacht close to but not over the start line, ready to pull on the sails and let fly. This year’s race, the 73rd, has 110 yachts ranging in size from 30 to 100 ft. A record 31 international yachts will take part, representing New Caledonia, Hong Kong, New Zealand (three), USA (seven), China, Germany, Italy, South Korea, Russia and the biggest overseas contingent is from the UK with 14 entries. Two of the most interesting yachts from overseas are the 87-year-old Dorade from the USA and Italy’s Mascalzone Latino, owned

by two-time America’s Cup challengers Vincenzo Onorato. The pace will be on for line honours with four super maxis going head to head including last year’s winner and record holder Perpetual Loyal—now known as InfoTrack under new owner Christian Beck—eight-time winner Wild Oats XI, Black Jack and the flying Comanche, with its gleaming red bow, who won the race in 2015 and has astonishing speed at times. While the line honour’s battle is fast and furious, the more enduring race is for the time-honoured Tattersall’s Cup, awarded to the overall winner. Giacomo won this race last year, and while she is now known as Wizard under her new owners from the USA, she will be well and truly in the mix, as will Quest (formerly Balance), Ichi Ban and Koa. Once out of Sydney Heads the fleet will turn their bows to starboard and sail south, hoping the weather will be kind. Some will stay close to the coast and others will go way out, seeking the East Australia Current of “Finding Nemo” fame. All will have the Bass Strait crossing in mind—a turbulent stretch of water separating the mainland from Tasmania—known by the yachties as “the paddock”. Once safely across, it is a very scenic run down to the Derwent River before the final race up the river to Hobart. Pipilotti Rist: Sip My Ocean THIS SUMMER, DIVE INTO a major new exhibition by the pioneering video artist Pipilotti Rist at the Museum of Contemporary Art. Exclusive to Sydney as part of the Sydney International Art Series, “Pipilotti Rist: Sip My Ocean” features the Swiss artist’s kaleidoscopic projections, ground-breaking video art and dazzling immersive environments from the 1980s to present day. Visitors can take the plunge in her more recent immersive installations. Sydneysiders and visitors alike will be astounded by the city’s transformation into a festive wonderland. Dominating the scene is the Martin Place Christmas Tree. This 21-metre behemoth has been the centrepiece of the city’s celebrations for nearly five decades, and is adorned with 60,000 tree lights, 300 enormous baubles and a massive illuminated treetop star. Next door, the GPO Dessert Bar offers mouthwatering festive gelato and other treats to enjoy while taking in the spectacular tree. Pitt Street Mall’s The Boulevard of Light turns your Christmas shopping experience into a magical journey through a forest walkway as you stroll beneath a glittering installation of suspended Christmas trees. Meanwhile Santa’s Enchanted Garden at the Queen Victoria Building is a must-see for the little ones, as is the 24-metre high Swarovski Christmas Tree which features 82,000 Swarovski crystals and 65,150 lights. Enhancing the Christmas atmosphere, every night choirs including Circular Quays and Sydney Philharmonic choir will fill the air with carols at Pitt Street Mall and Martin Place. Across town, the 75-metre façade of St Mary’s Cathedral illuminates the city in its sensational The Lights of Christmas light and sound show. This stunning and much-loved public celebration begins each night at 7.30pm with a carol performance, and continues through to midnight. The lights display tells a story, showcasing the themes of Christmas. There are never ending festive activities around the city to put you in a Christmas mood. A series of Village Christmas concerts between 2 and 10 December brings the Christmas spirit to the suburbs of Alexandria, Surry Hills, Rushcutters Bay and Rosebery. Hosted by Jimmy Giggle,

these concerts feature popular children’s entertainers. There are craft activities and games to take part in, including a giant game of Jenga against Santa’s elves! Santa stockings packed with goodies are on sale from Variety Children’s Charity, and sausage sizzles and other delicious repasts are available. Don’t forget to take part in KIIS 1065 FM’s “KIIS Under the Mistletoe” challenge—if you upload a photo of yourself under the giant mistletoe at any of these village concerts, you’ll enter into a draw to win $500. On 3 December, Variety Children’s Charity makes the Christmas season extra special with the Variety Xmas Walk— an event supporting children living with disability. Head to Pyrmont Bay, slap on a Santa hat or red t-shirt, and walk in support of kids who can’t. There will also be face painting, jumping castles, and former Wiggle Sam Moran performing on stage to entertain the kids. Sydney’s magnificent Town Hall puts on a special Christmas concert on 19 December, when carol singing, festive music and readings are enhanced by the ornate stone surroundings and the sounds of the grand organ. The ever-popular Woolworths Carols in the Domain is back on 17 December, this year at the family-friendly time of 7.45pm. Bring a picnic rug for an evening of Christmas cheer, and enjoy live performances from artists including Eurovision sensation Dami Im and the cast of the hit stage show “The Wizard of Oz”. A Live Nativity and carols evening in Ultimo on 15 December sees Mary and Joseph travel across Quarry Green on their donkey, along with the shepherds, kings and a guest appearance from Santa and a team of local firefighters. Christmas shoppers will enjoy the Blak Markets at Barangaroo on 3 December, where you can browse a unique collection of Indigenous arts and crafts and enjoy some bush tucker.
Meanwhile, Mary Rachel Brown’s hit Christmas comedy play “Silent Night” has audiences in uproar at the Darlinghurst Eternity Playhouse, putting the silly back in the season (until 10 December). For those dreaming of a white Christmas, a snowy paradise can be found at the Sydney Showground Christmas Wonderland from 16 to 24 December. Sydney Olympic Park’s festive attraction offers unlimited rides, ice skating and snow play, as well as Christmas-themed shows and activities. A real highlight is Santa’s Enchanted Christmas Village, which will make patrons feel like they’re in the North Pole. every part of the country. Each has its own language and complex belief system that explains the universe and the place of people within it. Because there are so many distinctive Aboriginal cultures there is also a great diversity of artistic styles and media, from the well-known dot paintings of the Western Desert to the Western Kimberley’s ghost-like Wandjina creation ancestors with huge mouthless faces. Traditional Aboriginal art practitioners do not see themselves as artists but as storytellers. Since there are no written languages, the making of artworks is all about sharing a spiritual association with a specific landscape or ‘country’, as well as communicating obligations to this ‘country’ through Dreaming stories and Songlines. The Dreamtime describes the time of creation when enormous mythic creatures roamed the Earth creating landforms and deciding which people could live in each special place. The stories are told via many different media. Traditionally, there was rock art, sand and body paintings as well as ochre bark paintings, wood carvings and fibre weaving, the latter portable art still available today. Contemporary Aboriginal art using Western acrylics on canvas began as recently as 1971 in the remote township of Papunya, west of Alice Springs, when a teacher named Geoffrey Bardon gave some acrylics to men in the community to paint a mural on the school wall. This was how the Western Desert Art movement began. ABORIGINAL ART SHOPPING
While the materials may be Western and while the colourful imagery may seem like versions of Abstract Expressionism, the most of these works evoke traditional dreaming stories or kinship with the land and its bush foods. As with any art form, there are authentic works and cheap imitations. It gets more complicated when you learn that most Indigenous works are not signed. You can, however, be assured that works are authentic if you buy from members of the Aboriginal Art Association of Australia, the Australian Commercial Galleries Association and the Indigenous Art Code. Those are the official names of the bluechip industry bodies that will provide the correct authentication and pay artists fair commissions. Professional art galleries specialising in Aboriginal art have knowledgeable and experienced staff who can provide excellent advice, as well as introducing you to both established and up-and-coming artists who work in the styles that most interest you. Remember to consider a wide range of artistic endeavours. If you are looking for an investment piece, large scale acrylic paintings tend to appreciate the most but you could also search out more affordable limited edition prints by established artists. There are also many other media to discover such as bark paintings, poles, weavings and screen-printed fabrics. All offer a powerful connection to Australia and its enduring Aboriginal culture. Remember, you don’t have to spend a fortune to take an authentic piece of Australia home with you.

This is why so many overseas visitors purchase their opal when they visit Australia. The history of opal goes back to the 1st Century AD when Pliny wrote of opal as the ‘Queen of Gems’. In Roman times it was included in the crown of the Holy Roman Emperor. Rumour has it that the Roman senator, Nonius, preferred exile rather than sell his valuable opal to Mark Anthony for presentation to Cleopatra.
WHERE ARE OPALS MINED IN AUSTRALIA? The three main areas are: NEW SOUTH WALES: Lightning Ridge This is the home of the rare and famous black opal, which derives its name from the body colour of the ‘nobbies’ or nodules. Black opals were first discovered at Lightning Ridge in 1903. Today, top quality black stones are generally the most valuable of all opal varieties. The rarest and most valuable colour combination is red on a black base, but deep greens, oranges, golds and electric blues are very sought after. They are very rare, beautiful and unique.

WESTERN QUEENSLAND: Quilpie, Yowah, Winton, Jundah This is the home of the beautiful Queensland boulder opal. The opal from this area differs from other deposits as, in the main, the precious is found in ironstone and sandstone ‘boulders’ which are millions of years old. Due to the harsh climate and terrain, and even with advanced mining techniques, production is limited and demand is high.

SOUTH AUSTRALIA: Coober Pedy, Andamooka, Mintabie These fields produce the greatest quantity of a wide range of opal from the ‘white’ (milk opals) to the ‘translucent’ crystal opals, and have also produced a range from ‘grey base’. Opal was first found in the Coober Pedy area in 1915 but it was not until 1925 that the mining area was christened Coober Pedy, which is the local Aboriginal meaning ‘white man in a hole’ and that is exactly what the intrepid early miners did, and still do today—dig holes in the earth looking for that most wondrous of gems, the Australian opal. WHAT TO LOOK FOR WHEN BUYING AN OPAL The factors that determine the value of opal, are the brilliance of the colours, the darkness of the background body tone, the pattern of the colours, the shape of the stone and the inclusions in the face of the stone. When choosing your personal favourite, select a shape and colour combination that appeals to you. There are numerous colour combinations from which to choose from and a myriad of shapes. It is this wide variety of spectral colour that makes every opal unique, no two opals are the same. Let your heart choose your unique Australian opal as a special memory of your trip to Australia.

HEIGHTS of the Hunter If you’re into exceptional wine and gourmet food mixed with adventure and relaxation, a weekend getaway to Australia’s oldest wine region, the Hunter Valley, is the perfect city escape. By Jessica Feenstra. THE HUNTER VALLEY, around two hours north of Sydney, has over 100 vineyards making it one of Australia’s major winegrowing regions. However, the Hunter today is famous for much more than its exceptional wine, with an entire lifestyle now thriving in the area, including sprawling resorts, gourmet dining and food shops, golf courses and even adventure activities including the everpopular hot air ballooning. Hit the road and make the Hunter your perfect all-round weekend escape from the bustling city. The drive out to the Hunter Valley is picturesque in its own right. Drive up in the sunny afternoon and pass by rows and rows of vineyards among rugged bush landscapes. Nestled within this scenic wine region is the sprawling 25-acre property, Oaks Cypress Lakes Resort. Having just undergone a $20 million refurbishment, Cypress Lakes Resort is the perfect retreat to enjoy your weekend away. I check into my spacious and modern one-bedroom private
villa, and head straight to the balcony overlooking natural scrubland to enjoy a glass of wine from a surrounding vineyard and cheese from the nearby Hunter Valley Smelly Cheese Shop, a must-visit to pick up some local produce while in the area. After a self-guided tour of Cypress Lakes’ expansive grounds, which include tennis courts, three swimming pools and sprawling golf greens, our party enjoys an early dinner onsite at The Restaurant @ Cypress Lakes, serving up mouthwatering, honest meals dedicated to local producers. We have an early wakeup call in the morning to experience something truly magical—a hot air balloon ride over this serene location. Oaks Cypress Lakes Resort is commemorating its 25th anniversary with the launch of its very own hot air balloon in partnership with Balloon Aloft, recognising the oncein-a-lifetime opportunity this experience is. My alarm goes off in the darkness of 4.30am, but, as somebody afraid of heights, I’m already wide awake
with nervous anticipation. We head to Peterson House to meet our fellow hot air ballooners before driving out to a field that makes a suitable launch site for this particular morning’s wind and weather conditions. Our balloon pilot informs us the take-off and landing sites are different with each fly—since the balloons aren’t able to be fully controlled they go where the wind goes, adding to the adventure! The experience, from start to finish, is hands on with guests contributing to blowing the balloon up, and folding it back up at the end. Once the balloon is upright and full of hot air, we begin to mount into our equally weighted sections of the wicker basket, and then we’re up, up and away as the early morning darkness turns slowly into light. We gently float higher and higher above the magnificent panoramic views of the wineries and surrounding areas; it’s an overcast and drizzly morning but that takes nothing away from the beauty unfolding beneath us as we graze the treetops and beyond.

THE HUNTER VALLEY GETTING THERE During the strange sensation of soaring through a cloud at 3,000 feet our pilot warns us to have cameras at the ready. We silently pop up above the clouds and suddenly we’ve left the drizzly day below. Our surrounds have been replaced with blue skies and a stunning sunrise, all open air from the wicker basket with no sound but the roar of the flame in our ears—it’s like nothing I’ve ever experienced. Back on solid ground we indulge in a champagne breakfast at Peterson House and chat excitedly about the flight, all in agreement that this is such a unique way to take in the spectacular sights from the ultimate vantage point. Being one of Australia’s major wine growing regions, it’s a must to visit the vineyards to take a tour and sample some of the incredible wines. Head to McGuigan Cellar Door, on the corner of Broke and Mcdonalds Roads, and go on a journey to discover the complex ways each different wine is made and stored, then taste their award-winning products. Having won international winemaker of the year for a record fourth time, they know what they’re talking about when it comes to quality wines. Be sure to try their signature Black Label red, a personal favourite of mine, or the incredibly light Cellar Select pinot grigio, refreshingly perfect for that warm summer evening.
After sipping on wine at McGuigans, a relaxing afternoon might be just what the doctor ordered. Cypress Lakes Resort has you covered with its three swimming pools to lounge by in the sun—grab a book and laze the afternoon away. For those after something a bit more active, playing a few holes on the Championship Golf Course is the way to go, this perfectly manicured, 18-hole course is ranked among the top resort courses in Australia. I’m surprised by the amount of young people getting involved, an indication of the growing popularity of the sport. After waking up in my huge, comfortable bed with the sunlight streaming in, I head to the buffet breakfast to relax into the morning. Serving everything from eggs, bacon, beans and grilled tomatoes with fetta, to croissants, pastries and fresh fruit, and even an espresso coffee machine, there’s something for everyone. With a deliciously full stomach and my coffee fix, I set off on the trip back to Sydney. Driving past the picturesque vineyards outside my window, I reflect on a perfect weekend getaway combining relaxation, great food and delicious wine with just the right amount of that sky high adrenalin rush. I’ll definitely be back to the Hunter Valley for another weekend retreat.

Flavour Comes to the Fore at INDU By Roshan Sukhla As you walk down the stairs from Angel Place into INDU, you are immediately transported into another world. You’ll soon forget all about bustling George Street above, as you go on a journey to the Indian subcontinent. INDU head chef James Wallis delivers a flavoursome menu of cuisine from Sri Lanka and southern India fused with modern influences. The menu is divided into sections for easy choosing and is designed to share. We start with the pan-seared scallops in a shell with cauliflower puree, cumin, finger lime and green mango pickle, which was deliciously light and perfectly cooked. The squid ink hopper with spicecrusted tuna, pomelo and tuna belly pickle was a visual delight. It looked like a regular hopper but was black in colour, while the tuna had delicate subtle flavours. The devilled pumpkin curry with ginger, coconut chutney, crispy eschallots and fresh coconut was a favourite of mine, while the sautéed snake beans topped with coconut, turmeric and crispy daal were a perfect accompaniment. The beef shin bone marrow and Kashmiri lamb curry with black cardamom was melt-in-your-mouth delicious. We accompanied this with the lemon rice with crispy lentils, smashed peanuts, green chilli and fresh coconut, and paratha (flatbread similar to naan). As a lactose-intolerant person I was well catered for with plenty of dairy-free options to choose from, and dessert was no exception. The vegan coriander granita with coconut jelly, passionfruit and coconut mousse was to-die-for! With a great range of cool cocktails as well as their signature gin and tonics, the friendly staff are on hand to help you choose something just right for you. I decided on the Ink Gin with dill and grapefruit, and when it arrived it was the most beautiful shade of purple—a pure burst of freshness that I could easily drink all day. My partner tried the special of the month, which was a bright red Plymouth slow gin with sloe berries, and that didn’t disappoint either. This excursion through the flavours and villages of the Indian subcontinent was thoroughly enjoyable and my stomach and I can’t wait to see INDU again soon.

LOCATED IN THE LIVELY DINING and entertainment precinct of King Street Wharf, you’ll find Steersons Steakhouse. This is the place to come in Sydney if you are after an impeccable steak. With fine service and views looking out over Darling Harbour, it’s the perfect place for lunch or dinner any day of the week. Start with a small dish of freshly baked damper or pan-fried chorizo. For entrées, you can’t go past Steerson’s delectable range of seafood—try the famous Sydney Rock Oysters. I also tried the seared scallops entrée with grapefruit gel, cucumber and fried onion rings which was a delicate work of art. The crunch of the fried onions contrasts well with the cool grapefruit gel and perfectly cooked scallops. The surprising combination of crab pâté, Bloody Mary jelly, pickled celery and toast was another taste sensation. There’s a variety of mains to choose from, but the real star of the show here is the meat. With many different cuts and varieties, the staff are on hand to help you make an informed decision. On the back of our waitress’ recommendation I chose a 200 gram 150-day grain fed Angus beef fillet, which was cooked to medium rare pink perfection, while my partner had the 350 gram Hereford NY Cut sirloin which was lean and tender. All steaks come with your choice of chips, mashed potato or baked potato. There’s a variety of side salads and accompaniments to choose from including sautéed garlic mushrooms and truffled mac’n’cheese croquettes. We went with the tasty broccoli and bok choy with chilli oil, and a healthy garden salad. There is an extensive wine list by the bottle, as well as wines by the glass, cocktails and beer. We began our meal with cocktails. My Bombay Bramble cocktail was a refreshing mix of Bombay Sapphire gin, lemon, sugar and blackberry liqueur. My partner tried the Charlie Chaplin, which went down smoothly thanks to its mix of apricot brandy, Plymouth sloe gin and lemon. To accompany our main meals, we went with the Pizzini pinot grigio from King Valley in Victoria. I recommend that you make sure you leave enough room for dessert. My lactose-intolerant self had the coconut sorbet with raspberry tapioca, while my dining partner’s dessert of decadent chocolate cheesecake with honeycomb wowed in both presentation and taste. IT HAS BEEN A BUSY month for Sydney concierge, with our members enjoying the start of our leisure travel season to Sydney.
