Make a day trip to Biscayne National Park for snorkeling, canoeing or fishing on the aquamarine waters of Biscayne Bay. #optoutside wheretraveler.com/ seizethestay

Summer is the perfect time to get outside and enjoy every water sport activity Miami has to offer. It’s also an ideal opportunity to hit the road for some quick day trips. Within an easy two-hour drive from Downtown Miami you'll find national parks and estuaries, premier golfing, art districts and food. No matter if you head north, south or west, these great day trips are sure to delight and surprise. If you can fit it into your schedule make sure to stop in the Florida Keys for snorkeling, conch fritters and to snap that epic selfie at the Southernmost Point. The Palm Beaches and Southwest Florida are two close locations too.

MANE ESSENTIALS Hair tips for summer

WHO DOESN'T LOVE A GLORIOUS BEACH DAY frolicking in the ocean? Thing is, the harsh saltwater, sunshine and humidity of summer days can lead to frizzy, dull and lifeless hair. That's where Barcelona-based Miriam Quevedo's new Glacial White Caviar Resort Collection comes in. Quevedo, a world traveler and leader in the anti-aging world, has brought her 35 years of experience and scientific-technical approach to bear in crafting her new haircare line. Made from white caviar extract, her collection features a threestep hair regimen (cleansing balm, leave-in conditioner, texturizing spray) for ultra-hydration, protection and an after-beach sultry look. If you have limited space in your carry-on, Quevedo recommends you pack a leave-in treatment for extra moisture and to prevent sun damage especially when traveling to hot weather climates. In Miami, bold and colorful swimsuits and resort wear take you everywhere in relaxed comfort and style.

WHILE NEW YORK AND PARIS may be considered the fashion capitals of the world, each summer the who's who of the fashion universe turn their discerning eye to Miami for the latest trends in swimwear and resort collections. It is here, during Miami Fashion Week in the spring and Swim Week in July, where designers unveil their latest swimwear and resort styles, in a kaleidoscope of colors and fabrics. In the meantime, while you wait for next year's fashion trends, here's what you should be packing and wearing to hit Miami's beach scene.

WHAT TO WEAR NOW "Long sleeves with cheeky cut-outs, low backs in daring bold prints," says Kristian Chase, managing director of Australian fashion brand Aqua Blu. "I feel like the bikinis got smaller and smaller for so long, but now, you get really fun one-pieces with great cuts, designs and colors," says Charlotte Althin Hicks, founder and creative director of Miami-based, ecofriendly line Sea Lily. What else? "Sports luxe [athleisure]is a huge trend too" adds Chase. "Look for cage briefs, band briefs and high-waisted briefs when pairing with high-neck tops [which] deliver a sporty and quirky edge." And it's not just that the suits are more demure than before. If last year's trends were all about florals and stripes, perhaps the biggest change for this season, is a smattering of bolder and more vibrant prints accented with trims such as lace. It's something Althin Hicks describes as a "great effect, style-wise." For Miami designer Ariel Swedroe, who confesses she's always in a bathing suit, flashy prints are nothing new. Her summer 2017 collection includes island-inspired prints made from light and comfortable fabrics with a dose of Miami chic. "I've always loved color and making a statement so I definitely include that in my designs," says Swedroe, who also incorporates natural and cultural elements such as the ocean, sky and people and lifestyles around her in her work. And when the beach day is over, fashionistas everywhere transition seamlessly into resort wear from designers who have mastered the look.

DRESS UP, DRESS DOWN Originally, resort and beach clothes were reserved for the glamorous, international elite. The wealthy jet-setters who escaped

the winter or summer months to lavish resort destinations around the world (Cannes, St. Moritz, Palm Beach). Travel wardrobes included well-thought out, nautically-inspired items; think American sportswear. After the 1920s, when this apparel became less haute couture and more ready-to-wear, clothes started to be made in cotton, silk and other fabrics that were easy to pack, lightweight and wearable. If you want to get philosophical about resort wear—it's all about transitions. As the shoreline is the space where the oceanic world meets the terrestrial one, resort wear serves to clothe you in that space and beyond. It's clothing for the in-betweeness of things, a kind of sartorial limbo. While in other parts of the country, transitional wear is meant to fill the gaps between the "official" fashion seasons in the spring and fall. In Miami, resort clothing takes a very different turn. The all too common temperatures in the 80s and 90s most of the year make it virtually impossible to follow the fashion cycle. For this reason, having an arsenal of multipurpose items becomes key. "A beautiful top with a pair of jeans is my evening wear. Make it more dramatic with a pair of high heels or silk pants, lots of variation, says Sabrina Crippa of Taj by Sabrina. Her collection is meant to transition easily from day-to-night, from the beach to dinner and later to the bar or nightclub. Sea Lily offers a variety of hand-dyed kaftans, tunics, cover-ups and breezy dresses. And Ariel Swedroe beats the heat in rompers that can be paired with strappy heels for a night on the town. All the same, always remember to pack wardrobe staples such as T-shirts, shorts, jumpsuits and accessories that add shimmer to that laid-back attire when traveling to warm weather destinations because that one-piece must serve many masters.

Just like the region itself, South Florida’s dining scene has grown up. Today, restaurants and chefs are holding their own against culinary powerhouses across the nation. By Sara Ventiera

28

THE MUSIC INDUSTRY has the Grammys, for film it's the Academy Awards and the television industry's top prize is the Emmy. For chefs and restaurant industry professionals, it’s all about the James Beard Foundation awards. Known as the "Oscars of food,” the annual award acknowledges the top chefs and restaurateurs across the country. And while award season may be over, summertime is the perfect time to taste the cuisine of the region's cream of the crop. This year, five South Florida chefs and restaurants made the semi-finalist cut, each one bringing something new and different to the already impressive dining scene. When chef Michael Lewis of KYU found out his restaurant was up for "Best New Restaurant," he was "speechless," he says. KYU, a chic Wynwood restaurant, specializes in modern Asian small plates with

WHE RE I J U LY / A U G U ST 20 17

a strong emphasis on yakiniku, Japan’s rich grilling tradition. Lewis uses sustainable meats in dishes like duck breast “burnt ends” and Wagyu beef brisket with black shichimi pepper. “There are some really fun tongue-incheek references on the menu,” he adds. While KYU is considered one of the best restaurants right now—it’s notoriously difficult to get a reservation between 7 and 9 pm—it isn’t the only Wynwood place to make the James Beard Foundation list. The art district dominated the awards in 2017. Bread-maker Zak Stern, aka 'Zak the Baker,' received a nod for "Outstanding Baker." About five years ago, Stern started shelling loaves baked out of a garage. Now, he owns both a bakery and a deli in Wynwood and his kosher bread graces the menus of some of the city’s finest restaurants. Top toques Michael Schwartz

People have started to recognize the awesome potential here. and Michelle Bernstein are huge fans of his traditional sourdough country bread. While Stern has worked hard and studied his way to success—he learned the trade while traveling around Europe—he believes his James Beard nomination has more to do with the evolution of South Florida’s culinary credibility more than anything else. After years of following the trends of New York City, San Francisco, Chicago and other American culinary capitals, Miami chefs have been introspective—cultivating a food-driven voice that honors the area’s rich multicultural heritage. “I’m not the first to come to South Florida and bake great bread,” Stern says. “There have been many before me. I came at a time when Miami was ready for something of its own, sprouted from its own soil.” Stern is proud of the fact that he hasn’t revolutionized or innovated anything, yet his process of honoring age-old practices has transcended expectations of what it means to be kosher. A few blocks away, Brad Kilgore of Alter picked up his second-consecutive semifinalist nod for "Rising Star Chef," bestowed upon up-and-coming chefs, 30 years old and younger who are likely to make a significant impact on the restaurant industry. Inside a former industrial warehouse, Kilgore uses locally sourced seasonal ingredients in his artistic New American tasting menu, arguably the most coveted chef’s tasting in the entire state. There, guests savor dishes like local sashimi and dill ice cream with trout roe. Just like Kilgore, Deme Lomas of NIU Kitchen picked up his second nomination this year for "Best Chef: South." The cozy restaurant specializes in tapas. It sounds overrated nowadays, but unlike the ubiquitous sliders and mac and cheese bites that are found on small plate concepts around

the United States, Lomas looks to Spain for inspiration. “What I wanted to offer was to make tapas Barcelona-style, different from the rest,” he explains. That includes dishes ranging from tradtional gazpacho and boqueros (marinated anchovies), to wahoo crudo and poached eggs with truffled potato foam, all of which are intended to pair with the restaurant’s Iberian-focused wine list. Two hours north of Miami, Clay Conley is no stranger to the James Beard Awards. He made the “Best Chef: South” list again this year for his acclaimed Palm Beach eatery Būccan. “I know ‘small plates, big flavors’ sounds cliché, but it truly sums up Būccan,” says Conley. “Each dish stands out fully on its own, tells its own story.” Although Conley owns a mini empire of restaurants in Palm Beach County—including Japanese-inspired Imoto and casual Italian Grato—when he opened Būccan back in 2011, it transformed the county’s dining scene. “In the last five or so years there has been quite a bit of growth in chef-driven concepts,” Conley says. Our region may be young compared to others, but one thing is for sure, " people have started to recognize the awesome potential here,” adds Conley.

Adrenaline Rush

From jetpacks and space-age“flyboards to personal watercrafts and parasailing, you can play like James Bond. By Mason Kelley

WHAT DOES IT FEEL LIKE TO SEE THE CITY SIGHTS in a whole new way? What does it feel like to fly? To soar through the air—outside of the confines of an airplane—is an idea that piques the interest of many, but few can describe it. And even then, the experience is so unique, seasoned thrill-seekers have a tough time explaining the sensation. Luckily, the turquoise waters off the coast of Miami offer tons of fun and excitement for all ages and adventure levels. From adrenaline-fueled rides and highflying parasailing trips, to Jet Skis, there is truly a watersport for everyone. JETPACKING For some, a trip to the beach is about more than sand, sun and ocean views. Here, a vacation is an opportunity for an adventure. That’s where AquaJet in Miami Beach comes in. “People are always up to get out of their comfort zone, try something different and a little crazy" while in Miami, Mylene Garot says, who handles public relations and business development for AquaJet. “They are challenging themselves to push back on their limits.” When AquaJet entered the market they had a simple goal: To offer the public the “chance to fly.” To do that, the company raised the bar by offering a wide variety of adrenaline-pumping activities including jetpacking. Like it sounds, guests are stapped onto a pack that propels them into the sky like a rocket. The experience has been described as exhiliarating, awesome, death-defying and much more. Children as young as 12 and adults as old as 90 have taken to soaring into the skies, where all you need is a five-minute tutorial and the requisite safety talk before you are up, up and away.

PARASAILING Looking for a thrill without the work? Parasailing is another sport that will get you reaching into the clouds. Literally. “Parasailing is an activity that almost everybody can experience," says Dan Breitenstein, general manager at Miami Beach Parasail. “No experience is required. Our crew controls everything. You are just along for the ride.” On the spectrum of extreme sports, parasailing’s adrenaline rush is on the lower end. Each flight lasts between 10 and 15 minutes, and includes dramatic views of the Miami skyline and Miami Beach. “There’s only one South Beach, only one

Miami,” Breitenstein says. Which is another way of saying "you only live once"—you might as well give it a whirl. Like other weather-sensitive activities, parasail flights are dependent on wind and water conditions. Breitenstein recommends booking this activity early in a trip.

FLYBOARDING When Franky Zapata, the French watercraft champion invented the Flyboard, he would have never imagined the impact it would have in the water sports industry. Described as a rush. Flyboarding is "what dreams are made of,” according to Alexander Maravegias, owner of Miami Flyboard. First the basics. To flyboard, a rider is attached to boots with boards that lead to a hose that varies in length. The hose is eventually supercharged with pressure from a personal watercraft or boat. It is not for the faint of heart. No matter how many times Maravegias goes up, the experience never gets old. “When you’re up there, you look down on the world below you and everyone is small ... and it’s a really cool feeling,” he adds.

JET-SKIING Shawn Galicic fell in love with water sports as a tourist. He lived in Pittsburgh and while on a trip to Miami to visit a friend, was immediately drawn to the water and the Jet Ski. “The beautiful ocean colors, the spray of the Jet Ski on your face as you go, the smell of the salt water and the exhilaration [was] fantastic.” The experience captivated him so much, that he decided to open a jet-skiing business. That was more than two decades ago. Miami Beachsports specializes in personal watercraft rentals and like other boat rentals you will encounter here, his business is oceanside between the Fontainebleau Hotel and the Nobu Eden Roc resort.

Surf & Turf Catering This is my favorite place to enjoy fresh seafood alfresco with great views of Brickell Key. Especially during stone crab season!

in flour and cracker crumbs that's been fried to perfection–tail still intact, served on a pillowy Cuban bread bun, topped with their secret sauce and onions.

–Cassie Glenn, Assoc. Regional Lead, Yelp, @YelpMiami

–Gio Gutierrez, Exec. Producer, ChatChow TV @chatchowtv

La Camaronera I grew up eating "pan con minuta" (fried-fish sandwich). You get a snapper dredged

Garcia's Seafood Grille & Fish Market A slice of vintage South Florida— warm and

inviting—all while sitting neatly along the Miami River. –David "Lebo" LeBatard, Artist @leboart
