Run by a Michelin-starred chef and open for dinner only, the restaurant is located at The Phoenician and its patio is set high above the Valley below. The New American fare includes specialty dishes such as seared Berkshire pork belly, diver scallops, and infused bistro steaks. Indoors, floor-to-ceiling windows showcase the dramatic panoramas, or take in the views from the outdoor patio. For diners who choose to sit inside (a fabulous outdoor patio is also available), expansive windows also frame a gorgeous view of dramatic vistas of the Valley at Talavera (10600 E. Crescent Moon Drive, 480.513.5085. www.talaverarestaurant.com). Located at the Four Seasons Resort Scottsdale, this modern steakhouse serves prime cuts of meat, poultry and game, as well as a variety of seafood and local produce. Open for dinner only. rom Japanese cuisine inside an 1899 bungalow in Phoenix’s Heritage Square to oysters in a 1910 haunted home in Tempe, Phoenix’s dining scene is eclectic, even down to its properties. Many popular eateries are located in adaptive reuse projects, and these seven Valley restaurants chose historic homes in which to attract their foodie following. James Beard Award-winner Nobuo Fukuda plates modern Japanese cuisine inside an 1899 wood-floored bungalow in downtown Phoenix’s Heritage Square at Nobu at Teeter House (622 E. Adams St., 602.254.0600. www. nobufukuda.com). The Pyramid Cottage-style, single-family home was built by Leon Bouvier, and later home to Eliza Teeter. Inside the cozy rooms, diners are treated to innovative and artistically presented dishes. For Nobuo’s multi-course omakase, reservations are required two weeks in advance. Robert and Robin Trick purchased and remodeled a 1920s bungalow near ASU’s Gammage and Mill avenues, and opened House of Tricks (114 E. 7th St., Tempe, 480.968.1114. www.houseoftricks.com) in 1987 as one of Tempe’s first fine-dining establishments. In 1994, House of Tricks doubled in size with the purchase of the neighboring 1903 adobe brick home. A tree-covered outdoor patio and bar link the two properties. The contemporary American, seasonally inspired menu features affordable lunch entrées and upscale dinner options, with an award-winning selection of wines spanning 300 labels and 30 wines by the glass. A historic adobe home sets the foundation for the Southwestern dining destination Old Town Tortilla Factory (6910 E. Main St., 480.945.4567. www.oldtowntortillafactory.com). Choose a seat inside or outside on the expansive flagstone patio shaded by 100-yearold pecan trees. Warm tortillas, served in place of dinner rolls, are handmade daily, and the margaritas are a favorite accompaniment to any meal. French bistro Coup Des Tartes (1725 E. Osborn Road, 602.212.1082. www.nicetartes.com) first opened 18 years ago on 16th Street and Highland Avenue, before relocating into its current renovated home along Osborn Road. Dine in one of six cozy rooms, at a bar built with remnants of the old location, or outside on the brick patio. A separate, private dining space and kitchen is host to a myriad of events, and eclectic décor is found throughout the entire property. The elegant, French-inspired bistro has collected an array of awards throughout the years.

Pizza lovers return time and time again for Cibo Pizzeria’s (603 N. 5th Ave., 602.441.2697. www.cibophoenix.com) artisanal, Neapolitanstyle pizzas and made-in-house pastas. The pizzeria is set inside a restored 1913 bungalow in downtown Phoenix, featuring exposed brick walls, hardwood floors, and a cozy patio. A separate carriage house is available for private rentals. Nestled in Old Town Scottsdale, dine on a quaint patio or inside the 1920s bungalow trimmed with Victorian-era-inspired décor at The House Brasserie (6936 E. Main St., 480.634.1600. www.thehousebrasserie.com). The modern American fare here features global twists, like the Atlantic halibut with vegetables, kumquat and curry jus; or the lamb Bolognese with cavatelli, herbwhipped ricotta, olives and tomatoes. –By Kimberly M. Chef Mina of Bourbon Steak has been awarded many of the top national culinary honors and recognitions, and is founder of the MINA Group, a collection of more than 30 restaurants across the U.S. Fairmont Scottsdale Princess, 7575 E. Princess Drive, 480.513.6002. www.scottsdale princess.com

A:

I love starting with the shellfish tasting, and then sharing the steak and some sides with friends. If you have a group, the bone-in porterhouse is perfect.

Charles Wiley As executive chef, Wiley oversees all the restaurants at Mountain Shadows. He counts cooking at the James Beard House and accepting the award for Food & Wine’s “10 Best New Chefs in America” from Julia Child among his career highlights. 5445 E. Lincoln Drive, 480.624.5400. www.mountainshadows.com

A:

I think our salmon is the best in town. I lived in Alaska for four years and know salmon; our Ora King Salmon from New Zealand is a truly amazing product. I am so proud to serve it to our guests.

Paulina Martinez Executive Chef Martinez created the menu at El Panzon y Frida from scratch, pouring her heart into using it as a reflection of Frida Khalo’s life journey. 7323 E. Shoeman Lane, 480.659.1544. www.elpanzonyfrida.com

A:

I love the duck breast. It is a recipe that makes me think about what Frida used to cook whenever she had guests at her home. And also, all the flavors that pair together with it are not common ones.

LAST BITE

Q:

What is your favorite item on the menu?

THE VALLEY HAS SOME OF THE BIGGEST AND BRIGHTEST chefs on the

world‘s restaurant roster. They put so much love and attention into creating their menus, we wondered if they had a secret favorite item of their own. Their answers make us hungry! BY MICHELLE GLICKSMAN Justin Beckett In 2012, Chef Beckett was nominated for Food & Wine’s “People's Best New Chef;” in 2014, he was invited to cook for Condé Nast. Southern Rail, 200 W. Camelback Road, 602.200.0085. www.southern railaz.com. Beckett’s Table, 3713 E. Indian School Road, 602.954.1700, www.beckettstable.com

A:

My favorite dish on the Beckett’s Table menu is our Pork Osso Buco on spaetzle. We dry brine the pork for 24 hours and slowly cook it for five hours. The spaetzle changes with the seasons. e48 P H O E N I X + S COT T S D A L E I e p•i•cure 2017  2018

Mark Tarbell Chef Tarbell, owner of Tarbell’s Restaurant and The Tavern & Wine Store, was the only fifth season winner on “Iron Chef America” and is the host of the Emmy Award-winning PBS program, “Check Please! Arizona.” 3213 E. Camelback Road, 602.955.8100. www.tarbells.com

A:

One of my favorites has always been the “Mr. Fish of the Moment.” It’s sustainably harvested and impeccably fresh. It’s inspiring for my culinary team to be able to work with that quality and create new, lively, intensely seasonal dishes.

Scott Conant Chef Conant has published three cookbooks and is a frequent guest judge on Food Network’s “Chopped” and “Beat Bobby Flay.” He owns multiple restaurants around the country, including Mora Italian, a modern osteria in Phoenix, serving contemporary Italian dishes. 5651 N. 7th St., 602.795.9943. www.moraitalian.com

A:

It's difficult to choose just one dish [at Mora], but I would definitely order the Focaccia Di Recco with stracchino cheese and sea salt for the table to start.
