Q: How long have you been a concierge? A: I have been working in the visitor industry since 1978 and have held various positions at hotels throughout Waikīkī (Waikīkī Beachcomber, Holiday Isle, Maile Court and Halekulani). I started as a Concierge in 1995, advancing from the front desk. I wanted to get more involved with our guests and not just check them in. Being part of the management team at the Kahala Hotel & Resort has been fulfilling and rewarding. Q: What’s the best part of your job? A: As a Concierge, I am very fortunate to be able to spend time with our guests and really get to know them on a more personal level. We often develop a close relationship, ultimately adopting them as our extended “ohana”—family— and sharing the aloha spirit. We provide them our personal feedback, and create a personalized experience according to their preferences. The real satisfaction comes from knowing that we helped to create treasured and long-lasting memories for our guests and visitors to take home with them and remembering the island’s embrace. Q: Where would you suggest dining on a special occasion? A: I may be a biased but I would recommend right here at the resort. Couples can enjoy an evening of romance with dinner under the stars in a beachfront cabana. Our team will work diligently 6

to create a customized menu, as well as help plan an evening based on your needs and interests with elements that will surprise your loved one. Q: What is your favorite made-inHawaii product? A: It’s difficult to pick just one, but if I had to choose, it would be the Kahala’s Signature Chocolate Covered Macadamia nuts made daily right here at the resort. They are available in four flavors (blonde, dark, milk and white chocolate) with premium whole macadamia nuts as opposed to halves and pieces. Other tasteful delights are the Island Preserve’s lilikoi Cream Cheese and lilikoi Habanero Pepper Jelly. Q: What is the most unusual request you’ve received as a concierge? A: Nothing is really that unusual anymore, but one of the more fun requests that comes to mind was setting up a room for an arriving guest whose son loved balloons. He was celebrating his birthday and the guest wanted the entire room filled with as many balloons as possible. The entire floor of the room was covered with 150 balloons and another 150 helium filled balloons with streamers attached. Susan Koki is presently the Chef Concierge for The Kahala Hotel & Resort. Sweet Treats Now in its eighth year, “Mangoes at the Moana” will be held July 16 at the Moana Surfrider, A Westin Resort & Spa. “It’s a chef-driven event,” says Ryan Loo, the resort’s food and beverage director. “Our hotel guests get a taste of Hawai‘i.” The county fair-like atmosphere in the Banyan Courtyard will feature a Farmer’s Market where attendees can get a taste of a variety of mangoes. In the style of Bobby Flay, top island chefs will put their best mango recipe forward during the Mango Throwdown. Admission is free and guests are welcome to taste each chef’s creation for $6 per plate. Slice it. Mix it. Dice it. The mango is a versatile fruit that chefs and mixologists will incorporate into their recipes during the summer months. Not native to Hawai‘i, the mango found its way to the islands via ship. In Hawaiian Annual and Almanac for 1909, Thomas G. Thrum writes that Captain John Meek of the brig Kamehameha brought the first mango trees to Honolulu from Manila in 1824. Since then, local growers have introduced several new varieties, including Hadens, Piries and Gouveias.

Aloha Festvials The party of the year, the parade of the year and weeks of cultural celebration mark the annual Aloha Festivals, a major event statewide. One of the main highlights is the largest block party of the year, the Waikīkī Ho‘olaule‘a on Sept. 17. Twelve blocks of Kalākaua Avenue will be lined with food booths, crafters and lei vendors, and multiple entertainment stages fill the air with festivity. It’s not pronounced poke, like a jab, but PO-kay, as in the Hawaiian staple that has been around for centuries. In its simplest form, poke is composed of raw, bite-sized cubes of fish—usually ahi—which are seasoned with Hawaiian sea salt. Here are some of our favorites. (1) Clams spiced with red and yellow chili flakes. (2) Tako (octopus) seasoned with ginger and garlic. (3) Salmon mixed with tomatoes and onions. The combinations and incarnations may be infinite but the classic ahi poke will always be a favorite among locals and visitors alike.

With more than 100 beaches, O‘ahu is a prime destination for myriad water activities (1) Learn to ride a wave in a day with lessons from the legendary Hans Hedemann Surf School. (2) If standing up on a board doesn’t fit your itinerary, snorkel the waters of Hanauma Bay, where fish boldly swim right up to your face mask and, if you are really lucky, a sea turtle may swim up beside you. (3) For the more adventurous thrillseeker, jump in the water with some of the ocean’s deadliest predators, all within the safety of a Hawaii Shark Encounters’ cage.

Aside from “rubbah slippahs”—the choice of footwear among many island residents—dressing like a local demands these three essentials. (1) For women, the mu‘umu’u is a loose-fitting dress that was introduced by the missionaries. Today, these dresses often feature a floral pattern. (2) The aloha shirt is the quintessential necessity in a man’s wardrobe. From Kahala to Tori Richard, designs can be subtle to colorful and everything in between. (3) Hawai‘i’s sun can be blinding, leading many locals to don woven lauhala hats adorned with feather lei. 64
