Total time: 35 minutes Servings: 2 2 teaspoons Szechuan peppercorns 1 teaspoon five spice powder 1 teaspoon kosher salt 1 skirt steak or bavette steak (about 1 pound) 1/4 cup vegetable oil, divided 2 teaspoons milk or cream 2 cups cooked white rice sesame seeds (optional) scallions, thinly sliced (optional) cucumber, sliced (optional) cilantro leaves (optional) - In skillet over low heat, toast peppercorns until fragrant, swirling in pan to keep from burning, about 2 minutes. Allow peppercorns to cool slightly then add to spice grinder or mortar and pestle with five spice and salt. Crush until fine powder forms. - Pat skirt steak with paper towel to remove moisture then season well with Szechuan salt on both sides. - Place skillet over high heat then add 1 tablespoon oil. When skillet is hot, add skirt steak and cook 5 minutes per side for medium-rare or medium doneness (135-150 F), turning occasionally. Remove steak from skillet then tent with foil to rest 3 minutes. Temperature will rise about 10-15 F to reach 145 F for medium-rare; 160 F for medium. - Lower heat to medium-high then add remaining oil and milk or cream. Add rice, pressing down gently with large spoon to form large, flat disc covering entire base of pan. Season with Szechuan salt, if desired, then lower heat to medium and cook 10 minutes until grains begin to turn brown and become crisp on bottom. Break up rice in pan to mix soft and crispy grains. - Slice skirt steak across grain. - To serve, place rice in two bowls. Layer with sliced skirt steak. Sprinkle with sesame seeds and chopped scallions then place cucumber and cilantro on top, if desired.

Smoked Chuck Beef Ribs Recipe courtesy of Jess Pryles on behalf of Beef Loving Texans Cook time: 10 hours, 30 minutes Servings: 8 1 slab beef chuck short ribs (about 4 pounds) 2 tablespoons kosher salt 2 tablespoons coarse black pepper 1/4 cup cider vinegar 1 cup water - Preheat smoker or pellet grill to 275 F. - Pat ribs dry with paper towel; remove moisture on surface. - Combine salt and pepper. Rub beef ribs well on all sides and ends with seasoning, coating generously. - Place ribs in smoker and close lid. Cook 5-6 hours. - In spray bottle, combine cider vinegar and water. Lightly spritz ribs every 30 minutes for first 4 hours of cooking. - Ribs are ready when completely probe tender. If parts still feel tough, continue cooking. - Once completely tender, remove ribs from smoker then wrap tightly in butcher’s paper and place in small cooler to rest 30 minutes.-Toserve, slice ribs between bones.

Grilled Jalapeno Cheddar Meatballs Recipe courtesy of Jess Pryles on behalf of Beef Loving Texans Cook time: 1 hour, 15 minutes Servings: 15 1/2 cup tortilla chips, crushed 3/4 cup milk 2 pounds ground beef 3 fresh jalapenos, seeded and finely diced 1 block (8 ounces) cheddar cheese, finely diced 1 tablespoon paprika 2 teaspoons garlic powder 2 teaspoons kosher salt - Place crushed tortilla chips in large bowl. Add milk and allow chips to soften about 10 minutes. - After milk is absorbed, add beef, jalapenos, cheese, paprika, garlic and salt. Mix well to combine then scoop approximately 1/3-1/2 cup of mixture to form meatball; repeat with remaining mixture.-Place meatballs on plate or tray and refrigerate 30 minutes to -firm.Heat grill to medium for two zone cooking. - Place meatballs on indirect heat side of grill away from coals or lit burner; close lid. Grill 25-35 minutes, or until meatballs reach 165 F internal temperature on meat thermometer. - Remove meatballs from grill and cool slightly before serving.

A client from Munster sent me a bill from a local hospital to check for her. Also, she sent me a payment demand letter from a collection law firm regarding that bill from the hospital. I wrote a letter to the hospital and the law firm to tell them that our client was not ignoring the bill. She was getting our help to check the bill for accuracy and compliance with Medicare rules. I wrote to the client and told her that when she got the claim report from Medicare, get it to me to compare with the bill. She forgot to do that. I phoned her to remind her of that. She brought the report to our Munster office. Danielle MacDonald at our Munster office copied the Medicare report and found the problem with the bill. The hospital sent the claim to Medicare with erroneous coding with a “GY”. If a hospital codes a service with a “GY”, it means that the hospital believes that it is a service for which Medicare will pay nothing. When the hospital realized that it made that error, it refiled the claim without the “GY” in the coding. But Medicare caught that and refused to pay for the service because Medicare thought that the hospital dishonestly or mistakenly changed the coding and refiled just to get some more money from Medicare. Because Medicare refused to pay for the service, the hospital and its law firm were trying to force the patient to pay the bill of $388 that was caused solely by the hospital’s error. Danielle caught the problem and phoned the hospital to chastise it. It was totally unfair to our client to bill her for the $388 difference when it was the hospital billing department that made the mistake and caused the problem. Danielle caught it. I started the information collection process but Danielle caught the problem and resolved it for our client. She did it! Our insurance agency helps all our clients with Medicare related medical bill problems AT NO CHARGE. It is just one way that we show our clients that we care about them. If your insurance agent or agency does not give this high level of customer service, why not switch to our insurance agency? Real Estate

THE ANNUAL TOM COMISKEY SEVV PICNIC A HUGE SUCCESS! As usual, the bash was held at the Rod and Gun Club in Hegewisch with help from R and G C Member Dave Koza. A variety of events are depicted here as the day (Saturday August 27th, 2022) progressed. From early morning until late afternoon the guys pulled together to make the day fun for all. First and foremost was our ‘grill meister’ Steve Garcia turned skirt steak into delicious tacos, and turned out great burgers! Steve, of Hegewisch is SEVV Treasuerer Tony Rebeles’ nephew. Steve is the chef at the newly christened KC in Lansing on the Knights of Columbus grounds. In other pictures are a trio of young ladies, Trish, Tressa and Karen who are showing off the “money hat” won by Tressa. The gals all worked for the late, great Rene’ Nawodylo, owner/proprietor of the Shed on Chicago’s East Side. Trish is now in charge of that landmark establishment and the rest of us are “Sheddies” or informal members! In another picture are SEVV President Larry Kutz, with member and former treasurer, Bill Kress and Treasurter Tony Rebeles at the check in table. Sam the DJ played favorites all day (Thanks to Trish Bielec for Sam being with us). Other photos show the members and guests enjoying the leisurely day. The kids even got to fish in the channel and caught some! The event will take place at the Porter County Expo Center 4-H and Expo East buildings from 9 am to 4 pm. One of the common mistakes I see first time homebuyers make is involving too many people in their decision making. Well meaning family, friends, and co-workers can give advice that interferes with the home buying process. I found a young couple the perfect home that met all their criteria and more. This particular home was unique because of its location, size, and price. Unfortunately, the “buying committee” all had differing points of view. Some of the committee members felt the home needed too much repair, others thought that the buyers needed to look at more homes and still others wanted them to continue to hunt for the best “deal”. Of course, it’s easy to shop and shop for a home, when you have a home to go back to at the end of the day. As such, this committee was essentially a pool of very unmotivated buyers. And any seasoned Realtor knows that an unmotivated buyer is a terrible decision maker. Further, if you ask 10 different people, you are going to get 10 differentTurninganswers.your home purchase into the equivalent of an “act of congress” is not really a great idea. The buyers clearly wanted this first home, however, pleasing the committee predictably proved to be an impossible task. I tried to point out the unique nature of the home, but I’m sure my advice sounded like the scream of a teenage girl at a Just Bieber concert – indiscernible. The end result? They missed out on a great house (which time proved was in fact a tremendous deal!), and we ended up looking for homes off and on for another six months. Eventually the committee members tired of reviewing homes with the buyers, after all, they couldn’t seem to make a decision. The buyers did eventually make a decision (without committee input), but later confided that they still drove by that first house that got away…”the one that died in committee”. While it’s important to intentionally connect with your children one-on-one, it’s equally important to give them space to come to you for help. Let them know you notice when they don’t seem like themselves but try not to push them to share before they’re ready. GIBSON Betty Ruth Gibson nee Wiersma, 85, went to be with Jesus on August 19, 2022, surrounded by her children. She was the beloved wife of Paul Gibson who went to heaven last month on the 19th of July. She was born, December 20, 1936, the oldest child of the late Menno and late Gertrude Wiersma. Loving mother to Scott (Dawn), Dave (Amy), Tami, and the late Teri (late Tom) Kerns. Adored grandmother of Candice (David) Van Drunen, Jori (Joe) Vroom, Laci (Max) Van Dam, Isaac, Desi Kerns, Dillon Kerns, Grant, Will, Adam and Gise, and great grandmother to Parker and Beckham. Dear sister to Wilm (Nick) DeGroot and Harriet (late George) VanderVelde. Beloved sister-in-law to the late Bud and late Marlene Gibson, Marv and Mary Smit, the late Judy Urban, and Wally (Sandy) Urban. Betty grew up in South Holland, IL. She went on to receive her nursing degree, filling in as school nurse while her children were young, then working at Rest Haven (South Holland) for 25 years. She thrived on serving the elderly. After retiring, she was asked and did return to Rest Haven to continue working as needed. Her love for others was seen not only in the care that she cheerfully bestowed upon the aged, but also with the time she blessed her grandchildren with. Betty’s world revolved around her children and grandchildren’s events. She was often seen excitedly watching a grandchild at an Illiana Christian sporting event where she too played basketball. Betty also enjoyed taking her granddaughters downtown to plays and other cultural events. Neighbors in Crete, IL would sometimes see Betty with Paul in a horse drawn buggy or cart out for an evening ride. In exchange for her participating in horse activities, Paul would accompany her to Chicago for cultural events. Betty enjoyed traveling when she was younger, but the Florida sun drew her in as she slowed down. She spent many days laughing with her sisters and in-laws in the southern sun. Loving Jesus, being a member of Faith Church, and getting together with family was incredibly important to Betty Ruth. A memorial visitation will be held Saturday, August 27, 2022 from 9:00 a.m. until the time of the memorial service at 11:00 a.m. at Faith Church, 100 W. 81st Ave. Dyer, IN with Scott Gibson officiating. Burial will be held Thursday, August 25, 2022 at Abraham Lincoln National Cemetery – Elwood, IL, where her husband Paul was laid to rest last month. You probably won’t see it on your calendar, but September is Life Insurance Awareness Month. And it is indeed important to be aware of the importance of life insurance. Are you adequately insured? Many people aren’t. About 40% of Americans face some type of life insurance gap, either because they’re uninsured or underinsured, according to a 2021 survey by the research and advocacy groups LIMRA and Life Happens. The need for life insurance is pretty straightforward: If something were to happen to you, would your family be able to continue their same lifestyle? Would the mortgage still be paid? Would your children still be able to further their education? So, if you decide that you should acquire or strengthen your life insurance, how much do you need? Your employer may provide you with some insurance as an employee benefit, but it may not be sufficient. You might have heard that you should have coverage worth seven or eight times your annual salary. But this estimate is just that — an estimate. Everyone’s situation is different, and there’s really no one formula that can tell you how much insurance you require. To determine the coverage you need, you’ll want to consider several factors, including your age, number of dependents, your income and that of your spouse and the size of your mortgage.Knowing how much coverage you need is obviously important, but you’ll also want to consider what type of life insurance is right for you. You have two basic choices: term or permanent insurance. As the name suggests, term insurance provides coverage for a specified amount of time, such as 10, 20 or 25 years. Term insurance only offers a death benefit — there’s no buildup of cash value in your policy. Generally speaking, term insurance is considered to be quite affordable, especially when you’re Permanentyoung.insurance, on the other hand, offers a death benefit and the opportunity to build cash value. Because of this, premiums for permanent insurance — which includes “whole life” or “universal life” — are considerably higher than those for term life. Which type of insurance should you choose?
