Summer Recipe Lemon Crème Brûlée By Alex Floyd, Pastry Chef, Ashdown Park Hotel & Country Club

Ingredients: • • • • •

500ml double cream 7 egg yolks 80g caster sugar 2 lemons – zest and juice Demerara sugar for topping

Method: 1. Whisk the egg yolks and sugar together until light and increased in volume. 2. Put the cream, lemon zest and lemon juice in a saucepan and bring to the boil. 3. Pour the cream and lemon mix over the egg mix and stir to combine. Pour back into the saucepan and cook on a low heat stirring

continuously until slightly thickened (don’t cook for too long or the eggs will scramble). 4. Fill a deep baking tray with water and place 5 individual serving ramekins into it. The water should come halfway up the ramekins.

and blow torch until golden brown - if you don’t have a torch, there are substitute methods on the internet. Decorate as desired, we used raspberry coulis with lemon zest and fresh raspberries. 8. Serve immediately and enjoy.

Walking Festival Returns Even Bigger & Better

We are so lucky to live in a beautiful, medieval landscape with distinctive features which include rolling hills, studded with sandstone outcrops, dense woodland, small, irregular-shaped fields, scattered farmsteads and ancient routeways. After the huge inaugural success of last year, The High Weald Walking Festival returns again from the 14th to 22nd September. Where we live here in the High Weald AONB is a walker’s paradise, whether you’re an avid rambler or just want to get out in the fresh air the festival has something for everyone. Last year hundreds turned out to explore and enjoy the festival walks, including man in the Ashdown Forest area. The AONB contacted us to mention that many Ashdown Forest Living readers had responded and partaken in the festival and could we let everyone know it’s back! This year, in celebration of the 70th

anniversary of the legislation that led to the creation of AONBs, it is set to fully showcase the High Weald with even more guided walks, most free-of-charge. With over forty inspiring guided walks, all ages and abilities are catered for. Themes include local history, wildlife, geology, creative writing, literature and architecture; many welcome children, some are accessible for buggies or wheelchairs, and some are suitable for dogs. Enjoy a short walk on Ashdown Forest: look for dragonflies at Old Lodge Nature Reserve or stroll through the woods and

THE FIRST LOCAL BOND GIRL

Actress Madeline Smith, Rodger Moore’s first ever Bond Girl (among other accolades) was born in Hartfield in 1949 and shortly after moved to East Grinstead. She is coming back to the area this month on the 6th of June, to put on a talk at East Grinstead Library which promises to be oodles of fun and laughs. We realise that some of our readers will miss this date (the magazine will not be fully distributed) but we wanted to share news of Madeline and her story in any case and we have personally encouraged her to give talks in Forest row and Hartfield too! She’ll be sharing echoes of WW2, her memories as a baby, interesting local characters, her mother’s love of Flomari’s Tea Room biscuits in the High Street, her father’s dairy in London Road, St Swithun’s Church and how the family moved from the country to London, where Madeline found a life of acting and modelling.... Madeline was a top model in the late 1960s, and appeared in famous shows such as The Two Ronnies, Steptoe and Son,

Hammer Horror Films, Carry on Again Matron, Morecambe and Wise, the Persuaders, amongst many others.... In 1973 Madeline starred as Roger Moore’s first Bond Girl in the iconic James Bond 007 film, Live and Let Die: the two remained firm friends for life. Recently too, Madeline has been hosting the excellent “Q The Music” - The James Bond Orchestra, who are touring the country, performing the iconic theme songs. We are pleased to bring you a short Q&A with Madeline: What is most memorable part about having grown up in this area? I always bitterly regretted that my little family was forced to leave East Grinstead and later, Forest Row, before my baby impressions hardened into proper memories. The recollections belong to my mother, and I wrote them down not long before she died. This area was very precious to her because these were the first few months and years of a marriage that was to later founder so bitterly after we left in 1952. She always looked back on a time when life was challenging and tough, yet rewarding. I am, and always have been, drawn to this magical area. It is where I began my life, after all! You worked with the likes of Roger Moore, Frankie Howard and Ava Gardner to name a few... which memory really stands out?

Being in bed with the delightful Roger Moore OBVIOUSLY! But I learnt my comedy craft from the genius that was Arthur Lowe, when I played his daughter in 5 episodes of a 1971 TV series called ‘ Doctor At Large’. Being a bond girl, must have been incredible, what feedback do you receive? It is an iconic scene because of the magic watch... I was Roger Moore’s first Bond Girl and for that alone people value it more and more with each passing year. What was your favourite life lesson from your time as an actress that you could share with our readers? Life lesson learnt is to live only in the moment and relish every second. Always retain that first bubble of joy! My main aim is to make people laugh, because my first love is comedy.

LOCAL FARMER SAVES FOX CUBS This story has been reported widely so you may have heard about it already and since it happened in this area and a lovely story at that, we wanted to include it in this issue. There is

also information about the supporting charity as you will see: Local farmer Chris Rolfe from Haywards Heath was travelling on the A272 near Cowfold, having worked late, checking ewes, when the car in front of him hit a fox. He got out to check the situation, he could see the vixen had died, but on closer inspection saw that she was lactating. Chris then noticed her belly moving and, realising she was heavily in cub and likely due any minute, decided he had to somehow help, or all their lives would be lost. He ran to his car, as every minute was crucial, and pulled out his knife; he said it was instinct more than anything else. Having performed caesareans before, when sadly ewes had died suddenly in birth and the lambs needed rescuing, he undertook a c-section by the side of the road, in his car

They had to be kept warm at all times, as for the first 2 weeks the cubs cannot regulate their body temperature, so they were placed under a heat lamp and on top of a covered hot water bottle. Over the next week the cubs were fed every hour (day and night!), gradually increasing to every three hours by week 5 … all in all a lot of hard work.

Now they are eating puppy food and frozen chicks, Jeans explains, “the reason being, they would have fur and bones and all sorts if living with mum so we are trying to keep their diet as natural as possible, helping them to build resilience for release back to the wild. It has taken a lot of time, love and care – but worth every minute.”

It was midnight and Chris’s mother Jean, who had previous experience caring for foxes, jumped in to help. For the first hour they were warming and drying the clubs to get their circulation going, as cold cubs cannot suckle,

She rang the Fox Project and they suggested she hand them over to their cub unit run by Sue and Trevor Williams, who would be able to offer specialised care – especially given their unorthodox arrival. However once the Fox Project realised how well they had been doing in Jean’s care they offered her the chance to continue hand rearing them, but with their support, knowledge and back up – Jean jumped at the chance. Sue and Trevor reassured Jean that the cubs don’t get ‘too comfortable and trusting’ of any single person or environment, their natural and wild instincts to not trust people are inherent. They explained how interaction needed to be kept at a minimum and although they are given all the care they need, it’s best not to spend too long cuddling them – something Jean reluctantly agreed to stop doing! At around 10/12 weeks old

cubs usually start thinking about leaving mum, and so it’s around this time that they need to be fully encouraged to reject their human mum, although by this point, they see them more as a food supplier than a comfort or supplier of reassurance.

Jean explains that having reared them to this point is very exciting for the family as it’s a mark of how far they have come and how ready they are for their next adventure but it will be incredibly difficult to let them go, however, as they are wild animals, the aim has always been to get them back to the wild and use this second chance to live a long, healthy, happy life and most importantly free lives.

To help develop this instinct to leave “home” the Fox Project will swap them from local carer to local carer to ensure their wild side kicks in. They will spend three weeks at a time in different foster pens, getting acclimatised to new noises, people and objects – all of which helps to create a creature timid of the unknown and wary of all things human related. Then finally at 6 months old, they will go into a ‘release pen’ in a carers garden where they will slowly learn to become fully independent. Leaving the pen regularly, but always returning for food when and if they need it. Most cubs will soon leave completely and not return, but a cub has

Blooming Nature BROADWATER WARREN

Broadwater Warren RSPB nature reserve is just south of Tunbridge Wells, very close to the Ashdown Forest. Every year, we try to bring our readers news from the reserve of their continued regeneration progress: Konik Ponies The main news has been the arrival of 13 Konik ponies to the reserve. In previous summers we have had Exmoor ponies from the Sussex Exmoor Pony Society, but have now gained our own Konik ponies to help graze the heathland. The Konik pony is a wild horse that originates from Poland, bred from the original now extinct wild horses of Europe known as Tarpan. Š Matthew Twydell Konik ponies show numerous primitive features, associated with their ancestor, the Tarpan. They are resistant to harsh climates and severe weather conditions and as they are adapted to foraging in the wild, they can live on a limited amount of food and have an extremely resilient immune system. They are very intelligent, allowing them to adapt their diet according to season and food availability. These free roaming horses have come from an RSPB nature reserve in Northern Ireland where they were no longer needed to graze the reserve. As we now own these horses it means that they will be spending the whole year at Broadwater Warren and will be moved about

in the winter months between the 4 grazing compartments on the reserve according to food availability. The grazing compartments total 105ha altogether so they will have a large area to explore. The Koniks help keep a short and varied patch of the Purple moor grass, which in turn provides important feeding and nesting areas for woodlark, tree pipit and nightjar. Please note that these are free roaming/ semi wild ponies and as such shouldn’t be approached, petted or feed please. Rhododendrons When the RSPB acquired the Broadwater land in 2007 there were extensive areas of rhododendron ponticum. As you know it’s a foreign and invasive species that out-competes many of our native species. Rhododendron has matted roots and produces chemicals that supress natural regeneration, so we are looking at ways of disturbing the ground to help improve woodland regeneration. The programme of rhododendron clearance began several years ago and will continue in future years. But the

RSPB is taking care to ensure that the clearance work doesn’t impact on breeding species on the reserve. For example, in one area of rhododendron, dormice are present and so the plan is to create suitable dormouse habitat in the immediate vicinity, i.e. coppice and scrub, before that area of rhododendron is removed – a process that could take a number of years – see the first dormouse of the year snoozing away in one of the boxes we use to record them! As you will be able to see when you visit, in one area cleared, where the harvester has disturbed the ground, lots of foxgloves have started to appear! Birds Spring and Summer migrant birds have also

returned to the reserve from overwintering in Africa. Some of these species have travelled 1000s of miles just to breed here! If you walk around you should hear and see the parachuting display tree pipits. This is a good time of year to look out for species that have either overshot their migration to continental Europe and ended up in the UK or species which are heading further north and might stop off on the reserve to rest and top up their energy, this time last year 2 ring ouzels turned up at Broadwater Warren!

The song of the blackcap and another warbler species, the garden warblers can often be hard to distinguish between. Garden warblers tend to sing for longer and have a more “bubbly” sound to their song. Both can be found singing at Broadwater Warren, so see if you can spot them while out walking on the reserves. during Spring above the heath. Tree pipits have returned and can be heard singing from the tops of lone trees. Although woodlark will have chicks at this time of the year you can still hear the odd one singing across the heath and may even spot them gathering food for their chicks, look out for their short tail in flight which is a distinctive feature. Lots of whitethroats, willow warblers, chiffchaffs, blackcaps and garden warblers can be heard in the scrub and woodland edges. Several pairs of stonechat can be found on the main heath as well as yellowhammers and linnets singing from the top of scrub patches. Several species of butterfly have been recorded so far this spring including brimstone, speckled wood, peacock, red admiral, orange tip and this holly blue which posed on top of a gorse bush. The first dragonflies of the year have also been seen with a large red damselfly and broad-bodied chaser (below) being recorded this week.

Slightly Bonkers new tradition born in Ashdown Forest Last month Fairwarp, in Ashdown Forest, decided to take the step of starting a new bonkers village tradition. Local lady, Abbie La Rooy approached Fairwarp WI to look at how rural traditions evolve and if a new one could be started, as part of her dissertation. As a result, Abbie worked with members of the WI to look into Fairwarp’s past and see if there was something that could be developed into a tradition. Well, you might say, ‘you cannot invent a tradition’ but that is exactly what they did in Brighton with the contemporary British folk tradition ‘Burning of the Clocks’ which originated in 1993 and so, taking a leaf out of their book, a Fairwarp tradition was born. Abbie had undertaken research about the village from the documents archived at The Keep near Brighton. It was discovered in an old copy of a village magazine - the Fairwarp Echo – that Sussex Marble had being found in Fairwarp. The marble is the result of the fossil shells of enormous numbers of tiny pond snails. That sparked the idea of celebrating the shells that make the Sussex Marble and the woodland creatures that live in the forest. Villagers and other visitors turned out to
