Salt-baked pineapple and goats’ cheese By Head Chef Byron Hayter at Ashdown Park Hotel & Country Club

Ingredients

Method:

• 2 halibut fillets, each weighing 140g

1. Begin by searing the 2 halibut fillets in a hot pan for 3-4 minutes each side until beautifully golden.

• 100g of sea salt • 100g of mixed baby beetroots, cleaned • 3 baby onions, cut into 0.5cm slices • kale • wild garlic • 1 knob of butter Sauce • 150ml of rapeseed • 100ml of chicken stock

2. To make the sauce, pour the rapeseed oil into a saucepan and reduce by half. 3. Add the chicken stock and reduce by half again.

HEVER THE &BOLEYNS

HEVER CASTLE, NOT FAR FROM EAST GRINSTEAD, IS MUCH CHERISHED IN THIS AREA. HELEN FRANCIS BRINGS YOU A FASCINATING INSIGHT FROM INCEPTION TO TUDOR TIMES, AS WELL AS ITS MOST FAMOUS RESIDENT - ANNE BOLEYN

There has been a castle located in Hever since at least the late 13th century if not before, with the 1270s being the date of our first written record which was the granting of a licence to crenellate the walls. Crenellate comes from an old French word meaning to take a notch from an otherwise solid thing and so was used to refer to the battlements of a castle, which were not allowed to be added without

seeking permission first. Battlements allowed the inhabitants of a castle to be able to defend themselves against any enemy that might come to call, but were only supposed to be granted to those buildings who were deemed to be in the hands of supporters of the king. Those who crenellated their homes regardless were in possession of what was then known as an adulterine castle, which fortunately

Hever was able to avoid since the building was given the all-important official nod. The first owner of Hever was a William De Hever, bearing links from the Norman invaders of 1066. up the French language and also a highly educated air. The clunky sounding Bullen variation of her family’s surname no longer seemed to fit and she instead styled herself by the continental variation, the now much more commonly used Boleyn.

Geoffrey Bullen was the former Lord Mayor of London but is more famous for having been the great grandfather of Queen Anne Boleyn, the ill-fated second wife of King Henry VIII of England who was his consort from 1533 until 1536. Due to there being no standardised form of spelling in the medieval and Tudor periods, family names frequently changed and could be spelt and pronounced in a variety of manners and which is where we find the beginnings of the better known Boleyn change.

James Butler 9th Earl of Wiltshire Ormond by Hans Holbein the Younger language was fluid and ever changing at this point but would have been perfectly normal to them.

Anne then caught the eye of her first Henry – Henry Percy – son of the powerful Duke of Northumberland, whose father did not want a relatively humble Boleyn daughter to ruin his chance of aligning with another noble house. King Henry also stepped in to refuse the marriage, whereupon Anne returned to Hever and ‘smoked’ and is rumoured to have even been locked in her bedchamber to keep her from getting in contact with her first love. From there however – as they say – the rest is history.

When Anne returned to England as an accomplished young woman, it was actually with a husband already in mind, but not her famed spouse King Henry, but actually her cousin a Mr James Butler. The marriage deal had been struck on behalf of their fathers – as betrothals in those days so often were – on account of a disagreement the two men were having over which side of the family inherited the title, Earl of Ormond. The idea was that in marrying their children, the two feuding claims could finally be put to bed, although those negotiations came to a halt suddenly and the union was shelved for reasons

Henry VIII, who had taken Mary Boleyn as a mistress sometime in around 1520, turned his attentions to the younger sister instead, in a decision that was to change the course of English religious history when Henry broke from the control of the all-powerful Papal Church and established himself as the head of the Church of England in order to grant himself a divorce. His poor first wife Catherine of Aragon was then callously cast aside and Anne Boleyn became his second wife and the woman on whom he piled all his hopes on for finally having a legitimate son.

But Henry was not the only creature that held Anne’s famously wilful heart at this time as there was briefly another in her life as well: Purkoy was a small lapdog who had been given to Anne as a gift from the famously keen social climber Lady Lisle. The dog was of an unknown breed but Anne took to it at once and became very attached. Sadly, little Purkoy met with an accident when he fell from an open window and died. However Anne’s ladies in waiting were so frightened of telling her that the news had to be conveyed to her by Henry himself. Anne then refused all offers of a replacement. But Henry too had a love of dogs, especially his two

favourites, Cut and Ball. Both wore velvet collars with the Royal portcullis emblems and also caused the King frequent problems. It seems that Cut and Ball were expert escape artists meaning that he frequently had to pay up for their safe return. Anyone who came across and returned the animals were awarded the sum of 15 shillings which is about £225 today. Anne was famously beheaded in 1536 after having been accused of committing adultery with a total of five different men, one of whom was her own brother George. Her parents retired back to Hever in the aftermath and when they died the castle reverted back to the crown in the absence of a male relative willing to take it on.

In 1540 Hever Castle was given – along with several other properties – to Anne of Cleves, the lucky fourth wife of Henry VIII, who later became unflatteringly known as the ‘Flanders Mare’. This was part of a divorce settlement given to her in exchange for the annulment of her marriage to the king and she continued to count Hever among her property portfolio for the lengthy period of the next seventeen years. Today items pertaining to the life and times of both women – Henry VIII’s two Queen Annes – can be found on display inside the castle and include Anne Boleyn’s precious and rare prayer books and armorial woodwork once belonging to Anne of Cleves. HAM COTTAGE Fascinating 8-acre garden created from agricultural land over the last 20 years by the present owners. The oak stumpery leads through to a rock garden, on the way to the crow’s nest, which offer wonderful views. Frances says: “this is not a manicured plot but one with a relaxed attitude to gardening and I hope, an inspiration to visitors”. All of this is carefully watched over by the matriarchal beech right in the centre of the garden. The cottage garden swirls around the 16th century cottage and is fronted by a 1,000year old box hedge.

The present owners bought the derelict 18th century cottage in 1976. After restoring the house, they set about expanding the original quarter acre into eight acres of a 'mini Wakehurst'. Above the arboretum is an old sandstone quarry which has been transformed into a natural amphitheatre. Many sculptures and mechanical contraptions throughout. PENNS IN THE ROCKS, GROOMBRIDGE An amazing and original garden with a spectacular outcrop of rocks. The estate also includes a lake, an 18th century temple and some woods. At this time of year, the daffodils, bluebells, azaleas, magnolias and tulips all bring the garden alive. An old walled garden is filled with herbaceous borders, roses and shrubs. Penns in the Rocks is an early 18th Century redbrick house, built for the family of William Penn of Pennsylvania. The house is set opposite a natural outcrop of monumental sandstone rocks, and in the 20th Century was home to Dorothy Wellesley, the Bloomsbury poet and friend of WB Yeates. She erected the temple which faces the front of the house, and which is dedicated to ‘the poets who loved Penns’. A lovely garden with some interesting history attached!

CLINTON LODGE Lady Collum’s Clinton Lodge is open for the NGS several times a year. The garden itself is approximately 6 acres of clay soil and is divided into rooms reflecting English garden design from the 17th to 21st century. The double herbaceous borders, echo the style of the late Victorian gardens, when many hitherto unknown plants were introduced from North America, China and Japan. One room, the herb garden, is divided into four squares by intersecting paths with a fountain basin in the centre. Knots of 17th century design fill the spaces at the corners and sweet briar roses grow at the back of the narrow beds. Features include turf seats in mediaeval style, a “cut out view” of the park through the beech hedge and pleached lime walks. The paths of camomile are designed to release their fragrance at the touch of a foot.

speculate that April Fools’ Day dates back to 1582, when France switched from the Julian calendar to the Gregorian calendar and the start of the year moved from March 25th to January 1st. Some people in rural places were slow to get the news (or make the change) and continued to celebrate the New Year during the last week of March through to April 1st, and were thus ridiculed with jokes and hoaxes. These included having paper fish placed on their backs called “poisson d’avril” (April fish), said to symbolize a young, easily caught fish or a gullible person.

Thank goodness for new beginnings... as flowers start to burst into life we can put aside our winter yearnings and welcome in our first Spring month proper. April is appropriately derived from the Latin word aprilis or aperit, which means to open - related to the word aperture. It’s the month of nature's bursting growth, when trees and flowers begin to “open”. April is also thought to be named after the Greek Goddess of love, beauty and desire, Aphrodite. The goddess Venus, her Roman equivalent, held April as a sacred month, indeed the Roman festival of Veneralia on April 1st, was held in Venus's honour.

Interestingly though, in the UK we retained the practice of the financial new year starting at the beginning of April... Why? I am sure there are good reasons for this, not least because, who would want to be poring over their financial records through the Christmas holiday season?

April Fools Day: In the early 1700's, English pranksters began popularizing this annual tradition by playing practical jokes, it continues to this day, getting ever more elaborate. The calls for these jovial shenanigans to be abolished (probably due to someone being the butt of a joke) have fallen on deaf ears.

The meteor shower: April Lyrids last from April 16th to April 26th each year, peaking typically around the 22nd. Catch it if you can!

Getting more Veg DOWN YOUR LITTLE’UN!

Make an extra-veg-special spag bol and lasagne: put carrots, broccoli, mushrooms, courgettes, etc. into a food processor to get them into nice, small pieces for the ultimate disguise. Pop into your pasta sauce at the beginning of the cooking process, and ensure it’s cooked long enough for the veg to soften. The amount is up to you but the idea is that they are nicely disguised by enough sauce! The little’uns will not realise how much nutrition is in each forkful!

Grow veg WITH THE KIDS

For indoor plants, 2 weeks before planting outside, make pockets 1.8m apart. Do this by making a hole about a spade’s depth, width and height and fill with a mixture of compost, with a little fertiliser on top. Plant one young plant on top of each pocket in early June. You can acclimatise them first by moving the pots outside during the day, bringing them in at night for a few days.

A wonderful vegetable to grow with children is the pumpkin. Even if you don’t end up eating it, it’s great fun and very satisfactory for kids to watch the tiny seed grow into a huge big pumpkin, which can then be used for Halloween if the timings work out! You need a sunny position, plenty of water and shelter from cold winds. Sow indoors: Sow on their side 1cm deep in 7.5cm pots of compost from mid- to late April.

Pumpkins need a sunny position and plenty of water. Feed every 10-14 days with a high potash liquid fertiliser once the first fruits start to swell.

If you wish to sow directly outdoors sow two or 3 seeds 3 cm deep in late May or early June and cover with upside down glass jars; leave in place for two weeks, or as long as possible, after germination. Thin the seedlings to leave the strongest one.

Once the fruit of pumpkins start growing, they should be supported off the soil on a piece of tile or glass. An easy, satisfying project for the kids.

If you live in Forest Row or Ashurst Wood, or certain parts of Hammerwood, you are a parishioner in the parish of Forest Row and your parish church is Holy Trinity. Whatever your beliefs, your way of life, your family (or lack of ) the chances are you will have been in Holy Trinity church some time – for a wedding, a funeral, a concert or perhaps a carol service or Remembrance Day. The church is a landmark, a focal point, a place to meet and an asset - the village would not be the same without it but we need help to maintain it. Standen Helping our Dormice This stalwart of British wildlife, Dormice, may be on the critically endangered list, but the team at Standen are using traditional woodland management to provide safe and secure homes for their special new residents. Once common in the British countryside, numbers of Hazel Dormice have declined by more than a third since the year 2000. Grey Squirrels, climate change and a lack of coppiced woodland have all contributed to this. National Trust ranger at Standen, Trudie Jacobs, said ‘We found our first confirmed sighting of a Dormouse on the property by accident. Renowned children’s author Chris Riddell opens a library with a difference Pupils at St. Michael’s Primary School in Withyham were delighted when celebrated children's illustrator & author Chris Riddell opened their new library last month.
