ULTIMATE CHRISTMAS PUDDING By Andrew Wilson, Executive Head Chef at Ashdown Park Hotel & Country Club
Mince Ingredients • • • • • • • • • • • •
100g chopped suet 100g mixed peel 100g currants 100g raisins 100g sultanas 100g chopped apple 100g light brown sugar 10g mixed spice Zest of 1 lemon Zest 1 orange 75ml rum 75ml brandy
Method 1. Mix together all of the ingredients in a large bowl and leave to soak for 4-5 hours. 2. After soaking, divide the mixture between four individual small 80mm pudding moulds. Cover each mould with a small piece of tin foil and place in a deep tray, half filled with water. 3. Bake for 45 minutes at 165°C (145°C fan). Once cooked the puddings should be firm to touch. Leave to cool down in the tray
or serve straight away with a warm brandy sauce or vanilla ice cream - as it’s Christmas I would go for both! Enjoy and a Very Merry Christmas

When we nearly lost Christmas...

In the England of the early 1600s, as it is now, Christmas was one of the most important dates in the calendar: a popular holiday and religious festival which had replaced the pre-Christian winter pagan festival.
drunkenness and wild partying - following on from the earlier pagan traditions. It was precisely this face of Christmas - where revelry led to debauchery - that the Puritans of the 1500s and 1600s objected to and which gave Christmas a ‘bad name’ and led to its near demise in the mid 1600s in England. Back in the 1580s author Philip Stubbes complained:
Men, women and children of all ages indulged in a range of traditional pastimes. Although Christmas was not ushered in as early as it is in the modern era (er...mid-November now!), during the twelve days of Christmas, churches and other buildings were decorated with rosemary, bays, holly and ivy; church services were attended and gifts were exchanged at New Year - patience was required! Gifts were distributed to servants, tradesmen, the poor; great quantities of brawn, roast beef and ‘plum-pottage’, minced pies and special ale were consumed, and the population indulged in dancing, singing, card games and stage plays.
‘That more mischief is that time committed than in all the year besides, what masking and mumming, whereby robbery, whoredom, murder and what not is committed? What dicing (playing with dice) and carding, what eating and drinking, what banqueting and feasting is then used, more than in all the year besides, to the great dishonour of God and impoverishing of the realm.’ In addition to this association with immorality and the concept of misrule, another power-play was afoot: Protestant v. Catholic. One of the biggest objections to Christmas by the stricter English Protestants (Puritans) was its popularity among the papist Catholic community. The reformed Catholicism of that era laid greater stress on Christmas and emphasized the Virgin

Happily, all was not lost! A clergyman, Edward Fisher, counter-argued that those who refused to recognise Christmas had ‘revolted from the Church of Christ’, further stating: ‘Stand fast and hold the traditions which we have been taught, let us make them known to our children that the generations to come may know them.’ Then of course there was the charitable aspect of Christmas that was also argued by a cleric, George Palmer: ‘At such time as Christmas, those who God Almighty hath given a good share of the wealth of this world may wear the best, eat and drink the best with moderation, so that they remember Christ’s poor members with mercy and charity, and this year requireth more charity than ordinary because of the dearness of provision of corn and victuals.’

The argument raged on for several years and was a debating ground for religious intellectuals.
The Elizabethan Jesuit, John Gerard, related how ‘their vigorous celebration of Christmas made Catholics particularly conspicuous’. As a result, by the 1640s many English Protestants viewed Christmas festivities as the trappings of popery and in fact ‘anti-Christian’.
But in any case, the common people just simply defied their government and, despite the pressures and regulations, refused to abandon their deep-rooted traditional practices. Even when the churches were not allowed to open on the 25th, the congregations still gathered to celebrate Christ’s nativity. Banning Christmas was one of the factors that made Cromwell’s rule so unpopular.
The celebration of Christmas became a political tool! Oh dear... With this backdrop, when the Puritans and Oliver Cromwell took control of government after the civil war, in the mid-1640s, they made a definite effort to abolish any Christmas celebrations.
When Charles II was welcomed back from exile and put on the throne, the Puritan customs of suppressing Christmas died away with their rule. Merry England was merry once more.
During this time, one year Christmas Day fell on the last Wednesday in the month which was usually set aside for a regular monthly fast. Parliament produced this ruling:
On the Sunday before Christmas, famous Londoner Samuel Pepys noted that his church was decorated with rosemary and bays; and on the 25th Pepys attended morning service and returned home to a Christmas dinner of chicken and shoulder of mutton - without having to look over his shoulder! (pun intended.)
‘With the more solemn humiliation because it may call to remembrance our sins, and the sins of our forefathers who have turned this Feast, pretending the memory of Christ, into an extreme forgetfulness of him, by giving liberty to carnal and sensual delights...’

days or even a few weeks. It would be months and some would have to return again and again to have a series of operations. He had Ward III, the hut which had been allocated to him, repainted in cheerful colours giving the ward a more pleasant atmosphere. In spite of wartime restrictions, he had chintz curtains made and installed a piano. He promptly ordered a barrel of beer to be kept in the ward. He had already clashed with Sister and other hospital managers over revamping the dĂŠcor. The furore caused by alcohol knew no bounds. He stuck to his guns even after the RAF hierarchy was summoned to call him into line. As he pointed out he was not commissioned by them but was still a civilian and as such was not subject to their authority. He also

On September 3rd 1939, Archibald McIndoe arrived at the Queen Victoria Hospital in East Grinstead. He was one of four plastic surgeons seconded by the War Office. Each was allocated one of the armed services in four different hospitals throughout the country. McIndoe had been given the task of taking care of injured airmen in East Grinstead. The choice of East Grinstead as a base was probably dictated by two considerations: firstly, the hospital itself was only three years old and had upto-date facilities. Secondly, it was situated between London and the English Channel, over which most of the sorties would cross and therefore the area in which most casualties would occur. The choice of McIndoe as the head plastic surgeon was either fortuitous or inspired. He came in from day one with an intense desire to help the injured
aircrew in every way he could. He realised that these young men, who were mainly in their late teens or early twenties, would be horribly burned on their faces and hands. They would be badly disfigured and think that their lives would be ruined for ever. In addition, they would not be hospitalised for a few

a drinking club but it soon developed into a support network which survives to this day. Sadly, not many original members remain as the youngest is ninety-two, but the friends of the club carry on the work supporting the few that are left and widows of the ones who are no longer with us.
burnt the “hospital blues”, the royal blue uniforms which wounded servicemen were required to wear when not on active duty. Most servicemen disliked being singled out in this way. McIndoe’s men wore their own uniforms. However, he apparently kept a few blue uniforms back, to use as punishment for those who over-stepped the mark. Whether they were ever used in this way is not known. The surgery McIndoe used on his patients was partly based on pioneering work by Harold Gilles, a distant relative, at St Mary’s Hospital, Sidcup. This involved transplanting skin grafts from one part of the body to its recipient part, while still attached to the donor part. The tubes of skin which resulted were called pedicles. This meant that the skin was still being supplied by blood and so greatly improved the chances of success. One of McIndoe’s unique
ideas was to treat the wounds in saline baths. His main contribution to the recovery of his patients was the holistic approach he took. This was almost unheard of at that period. Counselling was non-existent and McIndoe’s approach was unique. He encouraged the men to go into the town and mix with the people there. He had already primed the residents to not over-react when they saw the disfigured faces. It worked! East Grinstead became known as “The Little Town That Did Not Stare”. The patients were well aware that the surgery they underwent was largely experimental, thus explaining why one patient grumbled to The Maestro as McIndoe was affectionately known, “We’re just your blooming guinea pigs.” The name stuck and when the idea of them forming a club was mooted, this was the name they chose. Thus the Guinea Pig Club was born. Initially it was mainly

When the East Grinstead Museum was given the collection of artefacts, images and archives built up over the years by Bob Marchant, the museum decided to use them to raise the profile of their story. The museum was closed for most of November to transform the temporary exhibition space into a gallery devoted to them: we are now the official Guinea Pig Museum. The exhibition opened to the public on November 30th. It will contain the original operating table used by McIndoe and many of the surgical instruments adapted by him. These will be shown in tableaus, with life size mannequins, interactive effects and sound and film recordings. It will bring to life that period of our history which played an important part in the life of our community. Open Hands is a locally based (Hadlow Down) charity which works with children and their families living in extreme poverty in Romania. We support marginalised families to escape poverty, encourage inclusion into society and to lead independent and fulfilling lives. Some thousand years ago the old prophet wrote: ‘Love flashes like fire, the brightest kind of flame. Many waters cannot quench love, nor rivers drown it.’ In a world like today where there is war, where children are fearful and hungry, I firmly believe that
love is our most effective tool. And this is the essence of our work in Romania. In my last article for Ashdown Forest Living I told you about our latest project The Rainbow House. I am pleased to say that thanks to generous givers The Rainbow House has been up and running since April 2016. The Rainbow House is for children who have been born into poverty and neglect. They are accustomed to living in dirty shacks with no sanitation; they regularly experience hunger and must survive freezing winters. It is beautiful to see that The Rainbow House has become a healing place for these children. A place where they are loved, accepted and
taught with patience and care. They can wash and change into clean clothes; they enjoy the simple pleasure of sitting around a table and eating together; they play and they learn for school. As the children don’t own toys, doing activities like finger painting and building train tracks is a mind blowing experience. Here they can be what they are: children! My friend Emilie who recently joined me on a trip writes: ‘Simple craft activities bring oodles of joy. We brought little plain cardboard boxes for the children to decorate with pens, stickers and plastic jewels. The children chatter with excitement as they create their little treasure boxes. We then showed them how to make bracelets from Continues over the page.

On December 10th it's our annual Senior Citizens Christmas Lunch - a day when we give something back to the community. And as a Lion helper, it's a rewarding day to be part of!

Crowborough’s Family Friendly Festival have been inspired by the beauty of the surrounding countryside.”
The first Crowborough Community Festival celebrating the town’s landscape and cultural heritage with events to appeal to all ages has been announced. The festival will take place in local venues in May. Nature, conservation, healthy living, music, food, drama as well as dinosaurs will all feature during the festival of fun! Festival chairman Denis Hart said, “People who live in Crowborough appreciate its unique position on ‘Top of the Weald’ and delight in the landscape of the Ashdown Forest as well as the wonderful green spaces that surround the town. This gives Crowborough a unique appeal attracting not only those who enjoy the benefits of a healthy lifestyle but writers and artists who
appearances during the festival - no doubt clues will be popping up in the strangest places!
Sir Arthur Conan Doyle was one such writer who moved to Crowborough in 1909 and lived in the town for over 23 years. Whilst living at Windlesham Manor, he wrote his most famous adventure story The Lost World, a tale of dinosaurs and survival. It was said that a fossilised footprint of an Iguanodon, found in a nearby quarry, fired Conan Doyle’s imagination and The Lost World was the result.
The festival brings a unique programme of mixed cultural events from choir workshops, concerts and theatrical performances to a host of other activities showcasing the creative talents of local people.
Generations have continued to be enthralled by dinosaurs and the festival will kick off with a family fun day as Conan Doyle’s Lost World experience is brought to life at Crowborough’s state-ofthe-art Community Centre on Bank Holiday Monday, 1st May. A Dinosaur Roar Workshop, Climbing Tower, Bushcraft Survival demonstrations and much more will be on the menu!
“We hope all Crowborough groups and residents will get behind the festival and support the varied events on offer and do their bit to establish it as an exciting and fun addition to the cultural life of the town,” said Denis. Merry Mistletoe According to a custom of Christmas cheer, any two people who meet under a hanging of mistletoe are obliged to kiss. However this simple plant's elevation to such 'powerful influence' came via a rather dark mythical path.
There’s a happy ending with Balder being restored to life. Frigga is so grateful that she reverses the reputation of the offending plant, thus making it a symbol of love and promising to bestow a kiss upon anyone who passes under it.
Where did it all start?
It is used as a Christmas decoration and in past times remained hung throughout the year, often to preserve the house from lightning or fire, until it was replaced the following Christmas Eve!
Shakespeare called it 'the baleful Mistletoe,' an allusion to the Scandinavian legend. The Norse god Balder, the god of peace was the best loved of all the gods. His mother Frigga, goddess of love and beauty, loved her son so much that she wanted to ensure no harm would ever come to him. She went through the world, securing promises from everything that sprang from the four elements - fire, water, air, and earth - that they would not harm her most beloved Balder.
We hope the tradition of love under the mistletoe never dies out, as after all, isn't that what Christmas is all about.
But sly Loki, an evil spirit, found the loophole: the parisitic mistletoe which does not in fact grow from the earth. It takes seed through bird-dung landing on trees, the birds having ingested the plants berries. Loki not only made an arrow from its wood but he took it to Hoder, Balder's brother, who was blind and he guided Holder's hand to direct the arrow at Balder's heart. The arrow was released and Balder died instantly. Frigga's tears became the mistletoe's white berries...

For example, the famous Butlin’s chalet which, from having only cold running water in the 1930s, was relaunched last year with every desirable modern comfort.

Smart stew & dumplings This wonderfully tasty beef casserole is topped with fluffy dumplings. Great for a chilly evening! Serves: 4 adults Preparation time: 20 mins Cooking time: 2 hrs 0 mins
What to do: 1. Heat the vegetable oil in a large flameproof casserole dish or saucepan. Add the beef, a handful at a time, and cook over a high heat until sealed and browned for about 2-3 minutes.
Ingredients: 2 tsp vegetable oil 280g lean braising steak cut into chunks 450ml vegetable or chicken stock 2 medium onions chopped 2 garlic cloves crushed 2 carrots cut into chunks 2 celery sticks sliced 1 bay leaf 250g closed cup mushrooms halved 100g self-raising flour 2 tbsp fresh parsley chopped 50g butter 1 pinch ground black pepper
2. Pour the stock into the pan, then add the onions, garlic, carrots, celery, bay leaf and mushrooms. Bring to the boil, then reduce the heat. Cover and cook over a low heat for 1½ hours, checking the liquid level from time to time, and topping up with a little water if needed. 3. To make the dumplings, sift the flour into a bowl and the parsley and some black pepper. Add the butter to the flour, then rub in with your fingertips until the mixture looks like fine crumbs. Add just enough cold water (about 2 tbsp) to make a soft dough. Knead the dough lightly for a moment, then form into 12 small dumplings. 4. Add the dumplings to the stew, letting them sit on the surface. Cover and cook for another 25-30 minutes, until the dumplings are light and fluffy.

lectured and broadcast on the work of A. A. Milne and E. H. Shepard. So we are delighted to be able to bring you a Q&A with children’s author Brian Sibley below. What was the most inspirational aspect to participating in writing the ‘Winter’ story in The Best Bear in All the World? Firstly, there was the challenge of trying to emulate the style of A. A. Milne: a writer consummately skilled in the art of seemingly effortless witty prose and sparkling dialogue. Secondly, there was the opportunity to try to think and speak like Pooh, Piglet and the others in a way that was true to characters who are so well known and loved. And, finally, to have the courage (or, perhaps, just the temerity) to introduce a new character into the world of Pooh, inspired by a long-overlooked photo of Milne and Christopher Robin playing with Pooh – and a toy penguin. How do you hope this sequel will be received and what has the initial reaction been? The immediate response has been overwhelmingly positive with readers accepting (even welcoming) Penguin as a new visitor to the Hundred Acre Wood. My chief hope is that people will realise that the writers – Paul Bright, Kate Saunders, Jeanne Willis and myself – along with the book’s illustrator, Mark
