Mince Pie to make 30 standard size individual pies

By Peter Howes, Head Pastry Chef at Ashdown Park Hotel & Country Club

Mince Ingredients • • • • • • • • • • • •

100g chopped suet 100g mixed peel 100g currants 100g raisins 100g sultanas 100g chopped apple 100g light brown sugar 10g mixed spice Zest of 1 lemon Zest 1 orange 75ml rum 75ml brandy

Mince Method Mix together all wet and dry ingredients in a large bowl, cover and leave to infuse overnight to allow all the fruit to soak up the alcohol and sugar.

The following morning, give the mixture a good stir and set aside for later.

Pastry Ingredients • • • • •

300g butter 380g plain flour 140g icing sugar 35g ground almonds 3 egg yolks

Pastry Method Firstly, cream together the butter and the sugar. Beat in the egg yolks one by one then stir in the flour and almonds. Place in a bowl

and rest in the fridge for around 30 minutes.

Once the pastry is cooled, take it out of the bowl then roll until a few millimetres thick. Use a cookie cutter, approximately 10cm round, to cut the pastry to size for the individual pies.

Once the cases are lined with pastry, place a heaped tablespoon of mincemeat into each case then use a smaller cookie cutter around 7cm wide to cut the remaining pastry to create lids and cover each pie.

Lastly, sprinkle with demerara sugar, place in the oven and cook for 12-15 minutes at 175 °C.

Pottery for the Soul

Q&A with Eunice Locher, proprietor of the Clay Studio and potter extraordinaire What is your background in ceramics?

What aspect of pottery is most popular?

For many years I ran “The Grapevine Studio” in Forest Row, making and teaching ceramics to both adults and children. In 2007 I moved to Northern Portugal and from there I set up a studio and ran many pottery courses.

Now back in heavenly Sussex, I am enjoying running my new venture “The Clay Studio”, which opened in September.

While wheel throwing is challenging and interesting and is the thing that most people think of when they think of pottery, hand building is just as popular once people try it. It’s where many people’s creativity comes to life, and is an area where I specialise as a teacher. After rolling slabs of clay, they can fold, meld, slip and score. Working with it is part art and part architecture. Building walls and a base, smoothing the sides and giving definition is immensely satisfying. And then there’s all the choices, fun and challenges of glazing and firing each piece!

Why did you set up The Clay Studio and what happens there?

I wanted to create an environment where people can express their creativity through clay. I wanted to establish a modern, well-equipped ceramics studio in a rural setting, and was lucky enough to find an idyllic location at Hendal Farm near Groombridge. We hold friendly pottery classes suitable for all abilities, including complete beginners. I was very keen to also

establish a studio where ceramics enthusiasts could join our “open table” community, with assistance as needed.

WILL’S STORY Gold medal winning Paralympian Will Bayley grew up in the village of Groombridge on the edge of Ashdown Forest.

Here is a snippet of his story on the way up to the giddy heights of gold medal mania:

The experience of playing in front of a packed crowd in his home country was both nerve-wracking and inspirational. “I put myself under a lot of pressure in London,” he admits, “and when the crowds were there supporting me I didn’t want to let them down. At times I used it positively but at other times I didn’t. Table tennis is such a technical sport; it is a touch game so when you are nervous it shows. I think I’ve learnt from London and I can take that experience and use it for other tournaments.

I’ve trained so hard since London as I feel like I’ve still got something to prove to myself. It has made me more determined to work extra hard to try and improve.”

Born in 1988 with arthrogryposis, a rare congenital disorder that affected all four of his limbs, Will underwent numerous operations at Great Ormond Street Hospital from the age of three months old. He returned to Great Ormond Street for chemotherapy when he was diagnosed with Non-Hodgkin’s lymphoma at the age of seven and it was while recovering from cancer that his grandmother bought him a table tennis table.

True to form Will had come back stronger and regained the world number one ranking in April 2013.

Growing up in the village of Groombridge, Will joined the Byng Hall Table Tennis Club in nearby Tunbridge Wells and went on to represent Kent men’s able-bodied team. Having moved on to Bristol to continue his studies Will trained at the Bristol Table Tennis Academy with former international player Kevin Satchell. He joined the GB Para table tennis team in 2006 and, after representing Paralympics GB in Beijing in 2008, returned to China on his own for several months to train with the very best in the world.

In October 2011 Will won gold in the European Championships in Croatia and was voted Players’ Player of the Year. In 2012 he became world number one and reached the Paralympic final in men’s class 7, losing an emotional match to his nemesis Jochen Wollmert from Germany, who had ended Will’s challenge in Beijing.

What was the biggest factor, do you think, in reaching to the very top of the sport?

I think the biggest factor was believing in myself through all the ups and downs. In top level sport there are generally more downs than ups and believing in myself really helped me to cope with the difficult times. I’ve also had a great team around me with good players to train with and good coaches and I couldn’t have done it without them.

What was the highlight on your road to Rio journey?

Winning the World Championship in Beijing in 2014 was definitely the highlight. To win a world title in China (the home of table tennis) was amazing!

Will attending the presentation ceremony for Tunbridge Wells annual community awards, the 'Love Where We Live Awards', last week at the Assembly Hall Theatre.

“Being world number one means everything to me,” he said. “I’m always pushing myself to try and improve and be as good as everyone else and sometimes it’s frustrating because you want to make a shot that you can’t make but I like to challenge myself so that’s what I love. I’m lucky that my mum and dad encouraged me from a very young age and never saw my arthrogryposis as a disability. I’ve always played sport and pushed myself and if I hadn’t had that behind me I wouldn’t be the player I am.”

This year in Rio when he won gold, the image of an elated Will jumping up onto the table tennis table and standing in celebration remains one of the most enduring and memorable of the Paralympics.

In December 2014 Will received recognition for his achievement in becoming world champion when he won the Disability Sport Award at the inaugural Daily Mirror and Sport England Pride of Sport Awards.

The experience of London helped me to become a better player and taught me how to handle the big competitions. Losing in the final in London drove me to train even harder. And in 2014 when I won the world title in China it really changed my mentality as although I had won the Europeans in 2011 winning a world title had always been something I wanted to do and gave me a lot of belief.

Since 2011 Will has reached the final of every major championship - World, European and Paralympics - so Rio was his 6th consecutive major final!

We’re very pleased to also be able to bring you this Q&A with Will, specifically for the residents of Groombridge and the wider Ashdown Forest area: What was your journey from winning silver in London 2012 to winning gold at Rio?

When you won gold in Rio, what was your and your family’s reaction?

I think I was relieved more than anything that I’d done something that I had wanted to do all of my career and achieved something that I knew was really difficult.

When I won the last point and jumped on the table it was just pure emotion and adrenalin. My family were really proud as they know how hard I have worked and how much it meant to me.

My mum and dad were in Rio to watch me and it was great that they were there to see me win Paralympic gold.

Any word to the local people of your old village of Groombridge?

I just want to thank them so much for their support. The local primary school stayed after school to watch my match on television which is amazing. The whole village has always been so supportive to me and I hope I’ve made them proud.

The November Garden: Sweet Pea

Once we have good germination we move our seedlings to the cold frame, to be over-wintered, initially keeping our babies quite snug but quickly toughening them up to be grown as hard as possible.

Sweet peas are hardy down to -5°c and opening up the cold frame lights on all but the coldest days ensures tough stout plants. It is always important not to over water during cold weather and if it gets very cold we cover the frames with old carpet, for extra insulation.

Cut flowers are possibly one of the most important crops in the kitchen garden, giving us splashes of colour throughout the season and linking the garden into the manor. It is so rewarding seeing what our florists create in the hotel with our produce and of all the cut flowers we grow I am especially fond of our sweet peas.

By the time spring is here we should have some good plants ready for planting out in the kitchen garden.

These are put into well matured soil, along an A-frame of tall canes. Each sweet pea is planted one foot apart on its individual cane and the strongest stem is selected out and tied in. Then it is trained in a similar way to a tomato, removing the side shoots and curly tendrils, tying in the plant as you go. This is known as the cordon method, producing much bigger flowers on longer stems. The training is quite a lot of work but worth it for the quality of some of the most beautiful flowers in the garden.

We always try and get our first sowings of sweet pea in on Bonfire Night, and to get a really long season next year, make a second sowing in April. Our autumn sown plants should hopefully be flowering by late May and produce for about twelve weeks before the spring-sown ones take over supply, flowering into October.

Sweet peas have a long root run and so need a long thin pot to be sown in. At Gravetye we use specially designed cardboard tubes, but the cardboard tubes of old toilet rolls also do a really good job.

As the cardboard is biodegradable they can be planted along with the sweet pea and the roots just grow through, without disturbance. We fill each toilet roll ¾ full with seed compost, give them a good soaking and then fill the remainder with dry compost. Each seed is planted one inch deep and they are all covered with damp newspaper to stop drying out. Then we keep them at about 15°c in the glasshouse and avoid any watering until the seed has germinated (when the newspaper is removed).

NEW ART INSTALLATION FOR STANDEN of furniture, ceramics and metalwork inspired by this late Victorian influential movement.

Philip Barnes, General Manager for Standen, said of the new structure: “Will Shannon came to us as part of the National Trust’s Contemporary Arts Programme, Trust New Art. We sought interest from artists, architects, designers and makers to respond to this unique property and create a new work for the landscape that encourages visitors to reflect upon the radicalism, ethos and philosophy of the Arts & Crafts Movement.”

Bothy contrasts the decorative and the utilitarian.

Will said: “The installation is, in short, a humble Bothy; a small folly-like space seated in the grounds of the estate. Bothy is made by the hand of the professional amateur. It is a space to shelter, somewhere for a wanderer to rest, a gardener to shelter in or an artist to draw.”

Bothy is now open to the public and will remain at Standen until 23 April 2017.

Using the principles of Arts & Crafts craftsmanship artist Will Shannon has created an artwork, Bothy, upon the sandstone rocks at local beauty spot, Standen House. Using materials from the landscape around here, this temporary installation, in the form of a dwelling has been put together using Sussex materials only. Four local elements make up the design: sandstone, Sussex bricks, handmade clay tiles and local sustainable timber - all of which have been sourced within only a 25 mile radius of Standen.

This way of working (using materials in the vicinity) was advocated by the Arts & Crafts Movement which was essentially a revival of traditional handicrafts and an improvement in the design of ordinary domestic objects; its influence is still felt in modern times.

William Morris, the father of the movement, waved his figurative wand over Standen and it today stands as one of the finest examples in the country of an Arts & Crafts family home; every exacting detail of its design, inside and out, includes many fine examples

Robert Whitehead LOCAL HISTORY NOTES

Turners Hill resident of longevity Robert Whitehead was a well known torpedo pioneer whose contribution to invention changed the course of naval history. Born in Bolton-le-Moors, Lancashire, on January 3rd 1821, he was the son of James Whitehead, a cotton bleacher, and Ellen Swift.

He was fascinated by the work of an Italian called Luppis who had invented an early prototype of a torpedo; it took the form of a surface boat propelled by compressed air and controlled by ropes from the shore. Whitehead and Luppis formed a partnership to perfect the torpedo as an effective naval war weapon. Whitehead discarded the shore launch and developed a way to launch them from a ship, in a straight line. It is thought that early experiments on the torpedo were conducted by Whitehead and his 12-year-old son, John, on the lake in the rock garden on the property. Paddockhurst is now Worth Abbey, Turners Hill.

Robert studied at the Mechanical Institute in Manchester and became an engineer; he went into the employment of a company in Toulon, France, and next as a consultant engineer in Milan. From there he went to Trieste, Italy, where his employers owned a metal foundry in Fiume, Hungary (modern day Rijeka, now a part of Croatia), spending much of his adult working life in that town. He married Frances Maria Johnson and they had five children, two sons and three daughters.

The torpedo was called the Mineschiff, and was tested for the Austrian Navy in 1866 from a gunboat commanded by Count von Hoyos, who, incidentally, later became Whitehead’s son-in-law. In 1870 they managed to increase the speed and the range of the device. Whitehead later added an extra two features - a device that kept it at a constant depth and a gyroscope which fixed the direction. The first ship to be sunk by a Whitehead torpedo was a Turkish steamer in 1878 during the Russo-Turkish War. Whitehead took over the Fiume company when it went out of business.

In 1881 he bought a grand house called Paddockhurst near Turners Hill. The estate had been bought earlier by a John Smith but Whitehead, dissatisfied by the house, built another close by. The architect he chose was Anthony Salvin, who had worked on Windsor Castle; it was completed in 1865.

Whitehead became a gentleman farmer, but he also continued his career as an engineer.

In 1891 Robert was still living at Paddockhurst. He was 68 years old and a widower. Whitehead’s wife, Frances, had died in September 1883, while on the Isle of Wight, presumably while on holiday. She is buried in the churchyard of St Nicholas, Worth, where she is described only as “the wife of Robert”. His sister, Elizabeth, was living with him, as were Robert B, his son aged 23 and Alice who had married Count Hoyos, together with her three daughters, Lillian, Gabrille and Camilla, who had all been born in Trieste.

He left an estate of £45,760.5s 10d. His executors were his oldest son, James Beethom Whitehead,

The business was sold after his death to Vickers and ArmstrongWhitworth, thus keeping the torpedo in English hands during World War One. In the Second World War his torpedoes were still in use. The German cruiser, Blucher, was hit and sunk by two of his weapons in 1940.

His invention was a key development in naval history.

Paddockhurst was sold to Lord Cowdray in 1894, the reason for this being unclear. Whether his wife’s death eleven years before had any implications on Whitehead’s decision to sell his house is not known. He went on to purchase a large estate in Shrivenham, Berkshire, called Beckett. He was in residence there in the 1901 census, again with part of his large family. The Hoyos family were there, this time together with the count.

Frances May and Alison Rosalie Whitehead were also staying.

They were his granddaughters, and were the offspring of his son, John. Baron von Plessen and his family were other guests; as before, there were always a large number of servants.

His family spread throughout Europe, many marrying into titled families. His son John’s daughter, Agatha, married Count von Trapp, as his first wife, and died young.

She was, of course, the mother of the seven children of “The Sound of Music “ fame.

Robert Whitehead died in 1905.

One man’s fateful journey

With November being the month of remembrance, how fitting that we recollect the story of John Dallas Crossman, an Australian pilot whose fighter plane was lethally hit, crashing to the ground near Tablehurst Farm, Forest Row, during the height of the war.

Many details of this tragic unknown pilot were uncovered by local man Pete Wheeler from Forest Row who helped to piece together his fateful story and more importantly ensure he not be forgotten to history.

Pete himself was just a young boy of two, playing in his garden, when he vividly remembers the moment his mother described to a neighbour how she’d just witnessed the Hurricane fighter plane coming down out of the clouds and crashing into a nearby field.

Years later and after various investigative enquiries Pete was able to definitively name the hitherto unknown pilot as Officer John Dallas Crossman.

Pete, having recounted the details of this pilot’s journey and cemented it in both local and Australian WW2 history, has now gone one step further and by his tireless efforts arranged a beautiful memorial which was unveiled last month.

John Dallas Crossman was born in North Queensland, Australia, on 20 March 1918. His father Ted, who hailed from Taunton in Somerset, had come to Australia in 1912.

stamps and was a voracious reader but his greatest enthusiasm was for flying. He was mad about aeroplanes from the time he could walk and, whenever he could, he headed out to the local aerodrome and loved making plane models. Soon, he would turn to the real thing.

Handsome young John was firmly set upon a career in the air force and after a grand farewell from his family, friends and fiancée Patricia Foley he set sail for England. While at sea, war was declared and, while some cheered at the news, John’s reaction was subdued and resigned, reflecting: ‘Should this last any time it seems unlikely that I’ll ever see home again. Still I expect it can’t be helped. A fellow has to realise that.’ And as for the decision to go to war, ‘it is a pretty filthy business altogether but really the only thing that England could do.’

August 1939. His proudest moment was the day he received his wings, believing that in flying for Britain he would be fulfilling his destiny.

John’s first action was on September 14th.

Afterwards he admitted to being scared sick and panicky when the squadron attacked a formation of about 60 Messerschmitt 109s at 20,000 feet. The fear was worse just before he fired, but he pushed it aside and ‘got one decent burst into a 109 but was unable to see if I got him as (I) had to get out of the way of a few more!’

John was in the air again on the 15th, the day ever since commemorated as Battle of Britain Day. He wrote: ‘Ran into hundreds of Jerry kites at about 19,000 feet.

Three of us were going round to do head-on attacks on some Dorniers. I lost speed, spun down 6,000 feet, came out near 20 more escorted by about 60 Messerschmitt 109s. Three of the 109s came after me.

sketching in Forest Row on the day John died. He spoke to a number of witnesses and was so moved by their accounts that he painted three watercolours of the crash site. He later sent them to the Crossmans and Patricia Foley as poignant mementos of John’s life and death. One of the witnesses collected a fragment from John’s Hurricane and sent it to Patricia. The watercolours and fragment are still treasured, tangible reminders of a vibrant young man who wanted nothing other than to fly and in doing so is forever remembered as One of The Few.

John’s nerves quickly passed though. As September advanced he was in the air two or even three times a day. With a zest for life and a bright sense of humour, he made friends easily. When he could grasp a few hours’ respite he spent time with them in an effort to forget the serious business of fighting. His family and fiancée were also clearly in his constant thoughts as John’s cabin walls were plastered with their photos. A large portrait of his love Patricia took pride of place in his display.

By the time John took to the air in the afternoon of 30 September 1940, he had flown 18 sorties.

At about 1:30pm, 46 Squadron encountered a gaggle of Messerschmitt 109s and the 22-year-old’s plane was hit in the ensuing battle. His Hurricane crashed in flames at Tablehurst Farm, Forest Row. An eyewitness believed he may have brought down an enemy aircraft but, if he did, his squadron did not give him any credit for it. Indeed, sadly his death was not even recorded in that day’s entry in the operational record book.
