DO try this at home! July Recipe Fillet of Cod with creamed peas, leeks & bacon Recipe by Chef Dean Samsudin at the Brambletye Hotel Try and get fresh cod from your fishmonger or fishcounter and get them to cut you the centre fillets, thick firm-fleshed and full of flavour, it really takes to any kind of cooking.

Ingredients 4 thick fillets cod about 200g each with skin (could use haddock, Pollack or ling also) Salt & fresh ground pepper 150g freshly podded peas (about 300g before podding) or frozen peas 100g butter 6 rashers streaky smoked bacon, rind removed and finely chopped 1 medium or 2 small leeks, trimmed, diced into 1cm squares and washed 200ml Double Cream 2 tbsp Vegetable Oil

Method (Serves 4) 1. Season the cod fillets with salt & pepper. Add the peas to a pan of boiling water and simmer for 4-5mins til tender and drain. 2. In the meantime, melt half the butter in a heavy duty saucepan and add the chopped bacon and diced leek. Cover and cook gently over medium-low heat for 3-4 mins, stirring often until the leek is soft. 3. Roughly chop the peas and add them to the leek and bacon and add the cream. Season with salt & pepper and simmer for a few mins until the cream has reduced and is just coating the peas. 4. Heat the oil in a non-stick frying pan over medium heat and add cod fillets “skin” side down. Cook 3-5 mins until nicely coloured, then turn fillets and add the rest of the butter to the pan. Fry a further 4-5 mins until the fish is cooked through. 5. To serve, spoon the creamed peas, leeks & bacon in the centre of warmed plates and place cod skin side up on top.

Nettles may not be admired for their beauty, scent & sting, but they are valuable for wildlife and people.

Sylvia says: Dear Lin, When I was a young mum I was lucky enough to have my parents around to help me. In my day, families lived near by and could help. So it must be terribly hard for you to be away from your family. But you’re not alone. These days families seems scattered all over the country and globe and can’t support each other like they did. You need to create a new ‘family’ of friends for yourself. Be brave, and go down to your nearest mother and toddler group and mingle with some other mums. All mothers have something in common – the kids so it’s a good starting point to build long lasting friendships. Some of the friends I made as a young mother lasted over 50 years. Good luck. Stinging nettles support more than 40 kinds of insects, for whom the sting can form a protective shield against grazing animals. Many nettle patches hold overwintering insects which swarm around fresh spring nettles and provide early food for ladybirds, blue tits, hedgehogs, shrews, frogs plus some of the UK’s most colourful and best known butterflies, such as the Small Tortoiseshell and Peacock Butterflies. In late summer the huge quantity of seeds produced are food birds like House Sparrows, Chaffinches, and Bullfinches. As well as being beneficial to wildlife, nettles have long running cultural significance, and can be of value to people too. People have eaten them for centuries and they are a good source of calcium, magnesium and iron among other trace elements and vitamins. They can be used in many soups and stews instead of spinach. A fine fibre that can be produced from them & used in clothing and string. Juice from their stems has been used to make a permanent green dye and you can brew nettles to produce plant food. They can also be used in medicine. Need we go on?! When they next endeavour to annoy you, spare a thought for their many positives…

Trek to the Roof of Africa

Anne on one of her many climbs

A group of fundraisers from East Grinstead will attempt to reach the roof of Africa in aid of charity. Kilimanjaro is the highest mountain in Africa, it is just under 20,000 feet high and three degrees south of the equator. This fit and healthy group will climb to the summit of Kilimanjaro over seven days enduring up to 12 hours of climbing a day through dense rainforests, scree fields, ridges between icy smouts of glaciers and barren lunar landscapes. One member of this group, Anne Stevens,

has previously attempted this challenge however did not reach the summit due to severe altitude sickness. She is welcoming this second chance and is happy to give talks of her many climbing experiences. This budding group, comprising of Anne Stevens, Lyn Edwards, Moya and Keith Wilson, Bob Shelley, Giles and Nicki Cowdell and Stuart North are fundraising for St Catherine’s Hospice and The Dame Vera Lynn Trust and are grateful for any support provided. Shrubs and Trees

Prune back shrubs such as philadelphus as the flowering season comes to an end. In a prolonged dry spell a mulch will help preserve moisture

Lawns

In hot weather raise the blades on the lawnmower to a higher setting. If it is not too dry apply a quick acting summer feed

Fruit and Vegetables

Pinch out side shoots of tomatoes on a regular basis. Keep them well watered and feed on a regular basis. Sow seeds of cabbage, spinach, turnip, endive, mustard, cress, lettuce, parsley and radish. Train Espalier and dwarf frut trees. Protect from birds. Potatoes may need a final earthing up. Keep an eye out for pest and disease. Treat Apple Scab. Harvest onions when the leaves turn yellow and flop over.

Roses

Deadhead roses unless being grown for their display of hips in the autumn. Watch out for greenfly, rust, mildew and black spot. Spray on a regular basis being sure to follow instructions on the box.

Miscellaneous

Deadhead flower stems of lupins to encourage further flowering. Give a first clipping to hedges of beech, hornbeam, privet and leylandii In warm and dry weather, top up water in garden ponds. Lift, divide and replant overgrown clumps of bearded iris. Dead head annuals to keep them flowering.

a step by step guide

Composting is easy

1. Ideally site your compost bin in a reasonably sunny site on bare soil.

2. Have a container available. Fill your kitchen caddy or container with everything from vegetable and fruit peelings to teabags, toilet roll tubes, cereal boxes, etc. 3. Empty your kitchen caddy along with your garden waste into your compost bin. A 50/50 mix of greens and browns is the perfect recipe for good compost. 4. It takes between nine and twelve months for your compost to become ready for use. Once your compost has turned into a crumbly, dark material, resembling thick, moist soil and gives off an earthy, fresh aroma, you know it’s ready to use. 5. Lift the bin slightly or open the hatch at the bottom and scoop out the fresh compost with a garden fork, spade or trowel. 6. Don’t worry if your compost looks a little lumpy with twigs and bits of eggshell – this is perfectly normal. Use it to enrich borders and vegetable patches, plant up patio containers or feed the lawn.

The Friends of

ASHDOWN FOREST The Friends of Ashdown Forest celebrates its fiftieth birthday in 2011. 1961 was something of an annus mirabilis (wonderful year) for countryside and wildlife conservation in Sussex. The Sussex Naturalist Trust, now the Sussex Wildlife Trust, had been set up the previous July and the launch of the Sussex Ornithological Society was well under way by the end of the year. The origins of The Friends of Ashdown Forest can be traced to a meeting that took place in East Grinstead in August 1961. The purpose was to discuss the general deterioration in the wildlife value of the Forest due to the increasing numbers of uncontrolled fires and the loss of grazing, against the backdrop of the Board of Conservator’s (of Ashdown Forest) difficult financial situation. The Friends of Ashdown Forest was formed with the aims of conserving Ashdown Forest, its flora and fauna & providing funds to supplement the resources available to the

Board of Conservators. Many campaigns have been supported against threats to the Forest, including motor cycle scrambling, drilling for oil and the recurring issue of the East Grinstead by-pass. The most notable event in the modern history of the Forest was its purchase by the East Sussex County Council in 1987. The Friends were closely involved in the public appeal to raise the necessary money when the Forest was put on the market by Earl de la Warr. Over the last twenty years the friends have contributed towards the acquisition of almost 60 acres at a cost of over £90,000, that are now once again part of the Forest. Altogether, over the last fifty years, the Friends have contributed over half a million pounds towards the upkeep of the Forest, fully justifying the aspirations of that inaugural meeting half a century ago. Rubbish D-Day for Bluebell Railway The Bluebell Railway is going all out to raise the cash that will enable them to remove the balance of the thousands of tons of household waste that are blocking the line – it is really important that they raise this cash as next April the ‘rules’ will change. The price they will have to pay goes up very considerably - it currently costs £25 per ton, but tax changes mean the cost will go up to about £90! The Bluebell is raising public awareness in a bid to draw in the extra cash in time for the “deadline”. The East Grinstead Tourist Officer has spoken to BBC Radio Sussex & Surrey about how important it is to the potential for East Grinstead’s economy. Much research has been commissioned, showing the sort of sums that all the extra visitors will bring to the town, and we are talking of around about a million pounds per year. This is the sort of money that the around 55,000 expected adult visitors will spend here. It’s also quite important to stress that around 20-25% of these visitors will be coming into town using the Network Rail connection, so this means that the rail operator will be making better use of their off peak rolling stock and hence in theory might be willing to continue to invest in local facilities. DISTRICT SHOEBOX APPEAL 2011

It is 25 years since the world’s worst nuclear accident happened in Chernobyl Nuclear Power Station, Ukraine. A reactor exploded and highly radioactive plumes were sent high into the atmosphere. Thousands were left ill and deformed, even today these effects are still visible. For the past eleven years, the Lions of District 105SE have, through their shoebox appeal, been able to do something positive to ease the plight of the less fortunate people living in the Gomel Region of Belarus, the area in Eastern Europe most affected by the Chernobyl Power station disaster. The District Shoebox Appeal, which has developed over the years into an annual shipment of humanitarian goods, is a lifeline for hundreds of children, orphanages, schools and destitute families. These items include good quality clothing and shoes of all types for adults and children, household linens, toiletries and school stationery. The temperature in Gomel in January is -10c to -20c for a normal winter and can go as low as -30c at night. The orphanages and schools have particularly asked if we can find clothing and footwear to help to combat these conditions, Really warm clothing is therefore a priority. In September 2007 the Gomel Lions Club was formed, after seven years of trying. Nothing can be achieved from outside Belarus unless there is July 2011 • East Grinstead Living

a Belarusian partner to work with. The members of Gomel Lions Club have acted as our contacts, local administators, translators etc, in all our activities in Gomel. Our most recent success has been the re-roofing of the Babichi Orphanage, providing a dry, safe environment in which up to 200 children live and learn from the age of 4 to 18. These orphans are both genuine orphans as we understand the term, or social orphans created by the fact that their parents are incapable for many reasons of looking after them. Life expectancy among those affected by diseases caused by radiation is very low and many parents are too ill or destitute to care for their own children. East Grinstead Lions Club plan to have a number of collection points throughout the town from Saturday 16th July to the 16th August. These will be advertised fully in the Courier/Observer newspaper. There will be posters throughout the town. As mentioned Gomel region is still a relatively poor and almost forgotten part of Eastern Europe and rarely considered to be newsworthy. It is left to charities such as our own Lions Belarus Trust which continues to care. Please be generous and help us make sure that the 2011 District Shoebox Appeal is a great success once again.
