Our recipe this month chooses a local sweet dish, Sussex Pond Pudding, that is currently seeing a revival - no doubt on the wave of the trend to support local producers. An Old Traditional Local Treat

Sussex Pond Pudding

Try this at home! Recipe by Chef

Dean Samsudin

at the Brambletye Hotel

Our most popular pudding at the Brambletye: Suet pastry with a bitter-sweet filling. The name refers to the liquid that oozes from the pudding when served.

Ingredients Method 1. Butter 4 x 250ml/8floz heatproof pudding basins.

Pastry 400gm/13oz self-raising flour 200gm/7oz suet

3. Roll the dough to 3-4mm/1/4” thick and then cut out 4 circles big enough to line the basins – a side plate is a good size to use as a template.

Pinch of salt 125ml/4floz milk

4. Cut one quarter of each circle. Place remaining three-quarters in each basin, bringing the 2 cut edges together to overlap a little bit. Push the pastry down into the basins, taking care to seal the overlap by pressing firmly. Keep the remaining quarter to use as lids.

2. For the Pastry: mix the flour, suet and salt in a large bowl. Then, mixing with your fingers, add the milk and start to work into a dough. When you have added all the milk, start with the water - you may not need all of it. Keep working till you have a dough you can roll out with a rolling pin.

5. To make filling, weigh the lemons and then weigh out the same amount of butter and sugar. Cut the lemons into ½” square chunks. Do the same with the butter. Mix in bowl with sugar and then fill the basins. 6. Now roll remaining pastry into circles and fit as lids. Pinch the lining firmly together to seal. Cover each pudding with foil, place in a steamer with tight fitting lid over a saucepan of simmering water. Boil gently for 3 hours – keep an eye on the water level and top up when needed. 7. To serve remove foil, turn out into bowl and serve with a thick dollop of Jersey Cream.

e can proudly say a part of this area will indelibly live on in Downton Abbey’s second series with all railway scenes having been filmed at our very own Bluebell Railway. Chris Knibbs their operations manager told us, “It’s a great series. We were very honoured to have them. We met some of the cast, they were all very friendly. Among other things we had to change the signage to ‘Downton’ for authenticity. Filming took place back in March as the last episodes were being written”.

Anticipating, with baited breathe, the probable announcement of a third series, what can we possibly do in the interim? Well any continuation would surely usher in the roaring twenties. Don’t mess with an old dog. An old German Shepherd starts chasing rabbits and before long, discovers that he’s lost. Wandering about, he notices a panther heading rapidly in his direction with the intention of having lunch. The old German Shepherd thinks, “Oh, oh! I’m in deep trouble now!” Noticing some bones on the ground close by, he immediately settles down to chew on the bones with his back to the approaching cat. Just as the panther is about to leap, the old German Shepherd exclaims loudly, “Boy, that was one delicious panther! I wonder, if there are any more around here?” Hearing this, the young panther halts his attack in mid-strike, a look of terror comes over him and he slinks away into the trees. “Whew!” says the panther, “That was close! That old German Shepherd nearly had me!” Meanwhile, a squirrel who had been watching the whole scene from a nearby tree, figures he can put this knowledge to good use and trade it for protection from the panther. So, off he goes. The squirrel soon catches up with the panther, spills the beans, and strikes a deal for himself with the panther. CHEQUER MEAD The Church of England started to build National schools and in 1861 opened one in East Grinstead on Slaughterhouse Mead. This unattractive name was changed to Chequer Mead – Mead, meaning meadow, and ‘Cheque’ from the chequer board pattern on the Sackville family’s shield. In late 1990 with the Cannon Cinema and the Adeline Genee Theatre closed East Grinstead was described as a ‘cultural desert’. A few years later the dream was realised to place the arts fittingly in the heart of the town. When Earl De La Warr, a member of the Sackville family, died his executors needed to sell the site of the former Chequer Mead School to pay Death Duties. With less than a month to act the Council purchased it for £300,000. Chequer Mead opened its doors in Autumn 1996 with a small team of staff, supported by more than 100 enthusiastic volunteers. Since it’s inception, the Friends of Chequer Mead have added more than £75,000 worth of extra facilities. Performances have raised thousands of pounds for charity. Hundreds of young people have made it onto and behind the professional stage through their experiences.

Shrubs and Trees Most ornamentals have entered dormancy so now is a good time to transplant trees and shrubs. When lifting ensure you dig out a large a root ball as possible. Have the new hole already prepared so that the roots are out of the ground for the shortest time. Large trees and shrubs will need staking to stop them rocking during the winter months. Keep them staked until the roots have a chance to develop to anchor them. Prune evergreen to shape. Lift and store Begonia, Dahlia and Gladiolus. Plant Crocus, Daffodils, Freesias, Hyacinth and Tulips

Fruit and Vegetables

Cut the tops off your asparagus plants, and add a winter dressing of well-rotted manure to the bed. Cover strawberries 6 – 8cm deep with hay or straw. Secure your raspberry canes to stakes to protect them from wind damage. Once fruit trees have dropped their leaves they can be sprayed with a winter wash to clear up overwintering pests and diseases. Always follow the instructions on the bottle.

Lawns

If you haven’t already applied an autumn type of lawn fertilizer (20-9-9), now is the time to do it. This encourages good root development and helps improve the colour of the lawn. Lime can also be applied, if needed. Give your lawn a good raking to lift away accumulations of debris. Keep leaves raked from the lawn.

Bringing Festive Joy 2011 marks the 30th anniversary of the Town’s Christmas Lights provided by the Christmas Lights Committee, a community fund raising group set up by the Town Council, Chamber of Commerce and community groups. Since 1981 the festive display has expanded to cover the main shopping area of the Town and is one of the largest displays of its type in the area. From mid-November to the first days of January the Lights provide a welcoming festive atmosphere enjoyed by local residents and visitors and importantly promote the Town’s businesses. Unlike many towns the Lights are not funded by the ‘Council’ although the Town Council and Business Association provide small annual grants. The total costs of the Lights this year will be in excess of £14,000 of which at least £9,000 has to be raised from community fund raising (taking into account the balance being provided by businesses and grants). Every penny therefore donated to the Committee is used within the scheme, each year 2000 bulbs are replaced, insurance and electricity has to be paid, and the installation of course is carried out by professional contractors in compliance with Health and Safety Rules. We saw last year that other towns of a similar size across the country either reduced their displays drastically, or cut them out altogether. As the lights are loved by traders, visitors and people of the town alike we are dedicatedly

working hard to keep our Town’s light, which give so much festive joy, shining on. Please, therefore, dig deep to help support it. A street collection will be held on the 19th November, all donations towards the cost of the Lights are gratefully received and should be sent to the Committee c/o 7 Mill Close, East Grinstead, West Sussex, RH19 4DE. The Committee can be rightly proud of its record in providing the Town with festive lights over the last 29 years but can only do so with the financial support of both the businesses and the public. When I go to the park with my children, I let my kids play quite freely within reason and that includes playing with sticks they find and climbing trees. It seems natural. I see that some parents don’t let their children play with sticks as they seem to feel someone will be hurt by one. Also some parents become very anxious at the idea of children climbing trees. Some parents even give you a look as if to say, “what bad parenting”, when I give my children free reign.

I can’t remember these things ever being a problem when I was a child. Is this social change healthy because less accidents occur and it is safer or are we stifling our children, wrapping them in cotton wool and stopping their creative spirit? Some guidance would be helpful. Best Wishes, Adele

I certainly don’t agree with wrapping kids in cotton wool. As a child I was a complete Tom boy and would play bow and arrows and conkers with my cousins. Have the courage of your convictions and let your kids do what kids do - climb trees and making swords out of sticks! Don’t be bothered about what other people say. Be confident in your own choices and stick by a code of conduct that works for your family. (Unless of course, your kids are bullying or deliberately hurting other kids!) But let your kids roam free. In my experience, the kids that are strictly parented tend to go wild as soon as they are away from their parents. Give your kids freedom to be children and they grow up to be lovely adults, I’ve found. Best wishes, Sylvia.

What the Dickens is happening in the High Street this Christmas? The High Street traders are holding another of their ever-popular ‘Twas the Sunday before Christmas’ events on Sunday 18th December, 10am - 4pm.
