Soup of Butternut Squash, Parmesan & Sage

Recipe by Chef Dean Samsudin at the Brambletye Hotel
Ingredients
Method
1 whole butternut squash (peeled, de-seeded and diced)
1. Cut squash in half, peel skin and remove seeds, dice into 2” cubes, peel and dice potatoes the same size.
2/3 large peeled white potatoes
2. Gently sauté the onions and garlic in 2 tbsp of olive oil. When softened add squash and potatoes, stir - careful not to colour or burn ingredients. Add 4 sage leaves, stalks included.
1 large white onion finely diced 1 garlic clove finely chopped 3 pt vegetable stock or water salt & pepper 8 fresh sage leaves ¼ pt double cream or crème fraiche 4 oz grated fresh parmesan 2 tbsp olive oil
3. Cover with the 3 pt stock or water (I prefer a light stock), cover pan and simmer until squash and potatoes are cooked and not hard in the middle, about 20-30 mins. 4. When cooked, remove the pan from stove, using a blender blitz soup to a smooth velvety texture, if too thick add a little more stock. 5. Add cream or crème fraiche to the required consistency & colour. Season to taste. 6. Finally chop the remainder of the sage and add to the soup with the grated parmesan. You can use this method of cooking soup also with pumpkin, sweet potato, leek & potato, etc. It’s the vegetables that help thicken the soup so consider the ratio to stock/water. Great for autumn’s chillier days.

Pigs
Yet pigs have been hailed as the smartest, cleanest of animals and odourless to boot - due to their lack of sweat glands. As well as being able to use a joystick to play basic computer games, they’ve passed the milestone ‘Mirror Test’. Pigs are shown a mirror and encouraged to retrieve reflected objects. For instance, they can detect food the whereabouts of which can only be seen by reflection. These results suggest the pigs appreciate the difference between reality and the reflected image thus demonstrating a high level of cognitive awareness.
Perhaps, it is not without good reason, that in his imaginary novella Animal Farm George Orwell chose pigs to be the dominant & cleverest of the farm animals. Possibly he’d a prophetic inkling of what later studies were to conclusively prove – pigs are the most intelligent of domestic animals. Flying in the face of this is the reality that ‘pig’ is used in many less than complimentary well-known phrases as: ‘Sweat like a pig’ (Pigs don’t sweat, except through their snouts!), ‘Eating like a pig’, ‘Fat as a pig’ and more supposed parallels
They can perform a whole plethora of circus tricks, mother pigs sing to their piglets while they are nursing and the list goes on. It’s perhaps little wonder micro pigs are garnering popularity in the household pets arena and, who knows, they might one day join the ranks of the most beloved of pets, – cats & dogs. No doubt the future will bring new discoveries of what these intelligent animals can learn to do. In the meantime we can ponder some alternative phrases that could be introduced into our language, such as: ‘As clever as a pig’...?

Here, she talks about the man who was to become her husband & his cheeky pranks showing that even with something as serious as war looming you must never lose your sense of humour…
Meeting the Love of my Life
MacCupid at work (RAF Kinloss, Scotland) The first thing I noticed about Cliff was his delightful voice. The adjutant had said to me one day,“I think Farrow is your type.” “Oh NO!” I’d said with some vehemence, “He’s not tall enough!” My father and brother were both over six feet tall - so tall, dark and handsome was the recipe I was following.... however, I liked his voice.
Thrills and spills There were many things I was to discover about Cliff after we first met. For instance, he had taken flying lessons before the war and, anticipating the onset of hostilities, had joined the RAF Volunteer Reserve, and was actually called up on the day war was declared. His first assignment was towing drogues to provide target practice for the ground artillery. I came to realise he was totally courageous; he had trained to test about one hundred different types of aircraft and had experienced five forced landings without injury, one caused by a pair of lady’s knickers being stuffed into the oil feed. A strange form of sabotage. In 1940, when France fell and some of our pilots were stranded, he had flown a Spitfire to Nantes, picked up a pilot, who had to sit on his lap and navigate, while Cliff flew the plane safely back to the UK. I also learned he was delightfully funny, very kind, thoughtful and a wonderful dancer who had taught ballroom dancing as a hobby. Cliff also knew how to waltz himself out of a tight corner, so one day, when he was about to fly a small single-engine plane, which needed ground crew to swing the propeller to start the engine, he had taxied to the correct part of the perimeter for take-off but, as he got there, the engine stopped. He did not fancy footing it all the way back to the hangar, so he set the engine correctly, got out, swung the prop himself and was horrified to see the little plane take off without him!! Luckily it stalled, came down nearby, hitting a muddy patch and pitched forward onto its prop, thereby putting itself out of action. He just let the scene speak for itself, “Hit a muddy patch on take off, sir” was his report to the C.O.. There were three test pilots at Kinloss Maintenance Unit and at this point I did not realise they were thinking up all kinds of mischief for me.
Fair, Fair Game As soon as it was known that a female Equipment Officer had arrived and was a blonde to boot, I was fair game. Requisition forms started arriving on my desk for such items as 2 gallons of striped paint, 6 boxes of straight hooks, 3 bags of dihedral*, and other nonsense. They stayed ignored on my desk. *Dihedral is the angle at which the wings are set with reference to the fuselage; if the angle is wide the plane is said to have ‘bags of dihedral’.

Sorry, no leg shows today boys There was a small airfield across the Cromarty Firth, at Dornoch, used as a parking area for aircraft awaiting attention. There was also a small equipment office, so Cliff asked me if I would like to fly there with him and inspect that office. I was both delighted and excited. He told me that the Commanding Officer of the Base insisted that I wear an observer-type parachute if I was to fly. Unbeknown to me, that type of parachute has harness straps, which are brought down from the back, between the legs and fastened with a clip on the chest. When I presented myself next day, all three test pilots were standing in a row, chuckling like kids. I got out of my transport ready to get into theirs and go to the plane. Suddenly I noticed that all the smiles had been wiped off their faces and wondered what I had done. The boys, expecting me to be in my normal uniform of a fairly short, tight skirt, were looking forward to a good glimpse of leg and perhaps, a bit of thigh coming into view. What the boys did not know was that, this very morning, I had taken delivery of the first women’s battledress - (tunic and trousers), and I was wearing it. Well, who’d be more likely to get the first one than the Equipment Officer? Cliff later admitted that there had been no C.O.’s order that I wear a parachute. New score: Boys 0, Girl 2
Was I bothered? We set off in an Anson and Cliff took the plane literally down to sea level, crept up over a small fishing boat and down to the sea again, then up a small cliff over Cromarty, breezing the grasses flat. He repeated the performance over the water on the other side and then landed in the airfield - virtually two small fields with the party hedge cut away. I remember thinking it was a very strange way to fly a plane and I guess he was trying to get his own back for the battledress debacle and I was supposed to be really scared. But I loved it! New score: Boys 0, Girl 3
Fourth prank.... success! As the first three pranks turned out to be damp squibs, the test pilots worked out something much more sophisticated. We were making another flying visit across the water to Dornoch and Cliff was piloting. I had ridden out to the test flight hut and propped my bicycle up against it’s wall. We took off, flying directly over the hut and looking down, I saw, to my horror, the precious bicycle lying in pieces on the grass. I nudged Cliff and showed him the disaster; he shook his head and said “Tut, Tut” but I was truly livid. The bicycle was my only worldly possession at that time. I just could not wait to get back but, as we flew over the test flight hut on the return journey, to my astonishment I saw my bicycle was there, complete and resting against the hut just as I had left it! Once we’d landed, I ran to my bike, eager to ride away from these tormentors.... the only trouble was, they had not tightened up the handlebars, so I jerked forward in both shock and rage and demanded that they put this right NOW. Straight-faced and apparently apologetic, they did so at once. Still enraged and frustrated in my efforts to get away... I sat on the saddle, but that too went down with a thump. It was unbelievable. “TIGHTEN THIS UP AT ONCE!” I yelled like a harridan. More apologies were given as I finally rode away, with shredded dignity! Final score: Boys 1, Girl 3 (But I got my own back later on...I married him!)

The Grenestede Talking News is a charity based in East Grinstead run by a large team of volunteers, which delivers FREE audio recordings of items of news and interest from the local newspaper. We regularly have interviews with local people who have done something out of the ordinary, or who work within the Town eg. The Mayor & the recently retired Town Clerk. There is also a special Christmas recording. The recordings are produced and posted on a Saturday morning every week so the items are always current. The CDs and tapes are delivered by the Post Office, free of charge and returned to us the same way. Anyone who is blind, visually impaired or has a disability or incapacity which makes reading a strain can regularly receive a copy. The public can refer themselves, there is no need for them to seek a GPs or Social Services referral, simply ring 01342
325823 and speak to our Distribution and Liaison Officer. We can even loan a CD/tape player if necessary. We currently send out around 70 copies each week in East Grinstead and the surrounding villages and can easily send out more. 2012 Diamond Jubilee
A float from one of the old East Grinstead Carnivals. East Grinstead is already looking forward to celebrating the Queen’s Diamond Jubilee next year, and if you have already got your 2012 diaries, then you should pencil in June 2nd to 5th and make sure you’re in town on those dates! One thing that is certain is that the celebrations will take place not only over all the town, but with the major events being held in and around the East Court estate. There is something of a tradition of parades and festivities here to connect us with our past, and we very much hope that we will be able to reflect this in our plans for this latest Jubilee. As part of the planning for next year’s events we are inviting all East Grinstead residents to share their memories of past Jubilees, and perhaps even the Queen’s Coronation. We will be having an exhibition at sites around the town, including the Library and Chequer Mead, showing how the town celebrated in the past. So if you have got old photos of friends and family and would like to share them, then we would love to hear from you. We are ready to make digital copies of your originals so you get to keep your photos and we can use the copies for display. Postcards and newspaper cuttings are also wanted and can be used for the exhibition. Even if you haven’t kept photos, but you have memories of past celebrations then we welcome
those too and we can arrange to record your recollections. Perhaps you took part in past parades and can tell us what happened and how you got involved. Perhaps you were at school and have old class photos that were taken, all these would go towards making a record of our past. We’ve already unearthed some fascinating connections with past celebrations, and we’ll be sharing these nearer the time. If you would like to make your contribution, then visit the tourist desk in the town library and tell us more. So now’s the time to sit down and go through those old photo albums and search in your cupboards and attics for those images of the past! To get you started, did you know that East Grinstead born designer Michael Goaman was responsible for the 4d stamp issued to commemorate the Coronation? You might even have one in your collection – if so then now’s the time to share it. Looking forward to meeting lots of you in the coming months with all those memories. An old widower lived alone and wanted to plant his tomatoes (as he did every year) but it was tiresome work as the ground was hard. His only son Bob, who used to help him, was in prison. The old man wrote a letter to his son and described his predicament.

Calling All Potential Santas!
Santas of all shapes and sizes are getting in the swing at Chartham Park Golf & Country Club, East Grinstead, where the St Catherine’s Hospice Santa Run will take place on Sunday 20th November at 9.30am. The festive 3km fundraiser, sponsored by Southern Railway, has found a new home at the Club this year. Nicky Linton-Briggs, General Manager at Chartham Park says, “We’re really excited to welcome the Santa Run. It’s the ideal, fun event for people of all ages to join together and get in the mood for the Christmas season, while raising funds in support of the vital care St Catherine’s provides. And we have great gym facilities if anyone wants to get in shape before they take on the challenge!” Jen Wickham, Events Fundraiser at St Catherine’s Hospice, says “St Catherine’s is there for local people and their loved ones all year round, and to ensure care and comfort is on hand for all who need it costs over £13,000 a day. Put a Smile on their faces
at Christmas
Operation Christmas Child celebrates its 21st Year in 2011. Back in 1990 a group of people got together to send aid in the form of a simple gift filled shoebox to children affected by the Chernobyl Disaster. The Shoebox Appeal, since then, has gone from strength to strength bringing Christmas cheer to children who are victims of war, poverty, persecution, famine, disease and natural disaster.
The gift filled box should then be taken along to your nearest drop off point between the 1st and 18th November together with a donation of £2.50 to cover the transportation.
In the UK alone last year over 1.2 million shoeboxes packed full of gifts and goodies were wrapped, packed and sent to children in disadvantaged situations.

These shoe boxes contained small gifts which we take for granted. Soap, for example, is often too expensive for them to buy and in some remote regions impossible to obtain and many children in Eastern Europe can only attend school if they can supply their own paper, pens and pencils. Trick or Treating? Some History
Interestingly it is believed the ancestor of trick-ortreating did not occur on Halloween and had nothing to do with monsters! In parts of Britain children and poorer people would go from door to door ‘souling’ on Hallowmas (All Saints Day, Nov 1st) and All Souls’ Day (Nov 2nd). The soulers offered prayers for the dead and were given, in exchange, ‘soul-cakes.’ The cakes were usually filled with allspice, nutmeg and other sweet spices, raisins or currants, and before baking were topped with the mark of a
cross to signify that these were alms. The more soul cakes received, the more prayers offered for relatives which had passed away. In those days it was believed that the dead remained in limbo for a time after death, and that prayer could expedite the passage to heaven. ELIZABETH FINN A REMARKABLE VICTORIAN WOMAN with the help of friends and her daughter Constance. The Association raised money to provide grants and loans that were disbursed quickly and efficiently to those forced to live without hope. Now aptly named Elizabeth Finn Care, this national charity has continued to help people from a wide range of occupations & backgrounds and their families. Providing outstanding support to those living independently in the community by giving grants and helping to gain access to the money available to them.

ictorian England produced some inspirational women. Florence Nightingale, Elizabeth Fry and Josephine Butler are well known; Elizabeth Finn, the founder of the Distressed Gentlefolk’s Aid Association (DGAA), now Elizabeth Finn Care, is less celebrated. This shy and modest woman was however also a social entrepreneur in the same mould as her distinguished contemporaries. In every sense she was a model Victorian. She spoke seven languages, was a talented musician, read widely and was a devout Christian. Like Florence Nightingale and Elizabeth Fry, she devoted her life to charitable works. Elizabeth Finn’s life spanned nearly the same decades as Queen Victoria. When she founded the DGAA, Britain was the richest country on earth. The newly emerging middle classes increased in number and prospered distinguished by devotion to duty, education and success in the services, in business and
the professions. However, the end of the 19th century saw a particularly severe economic recession. Victorian society, like generations before, was used to poverty and want. Charitable societies for abandoned children and for fallen women sprang up alongside movements for women’s rights and for enlightened legislation on working conditions and education. No one, however, was prepared for, ‘distressed gentlefolk’. With no welfare state there was nowhere to turn for those (many from an educated or services background) who had fallen into dire poverty because they were too old or too ill to work. In 1897 Elizabeth Finn, at the age of 72, decided that something had to be done for the silent suffering of people in this part of society. So, when most of us would have thoughts of retirement, she founded the Distressed Gentlefolk’s Aid Association

For instance, Elizabeth Finn Care recently helped a working nurse with young children (who’s household was reliant on 2 incomes) when she was recovering from cancer. She was supported until such a time as she was able to return to work. Charity Fair, Tuesday 18th October, 9:30am – 3:30pm. The most successful Elizabeth Finn Charity Fair in the country is held annually at Ardingly’s Showground to raise money for people in this area. Peter Heath, the Chairman of the local committee said: “Last year we raised more than £12,000 with our fundraising events and the Charity Fair is a key date in the calendar.
