Autumn Fruits in Pimms Jelly with Cucumber Cream Recipe by Chef Dean Samsudin at the Brambletye Hotel

Ingredients Serves 4

15gm leaf gelatine (5 sheets) 500 ml Lemonade 250 ml Pimms 50gm Caster Sugar 150gm Blackcurrants, Blackberries, Raspberries, Blueberries (and/or any other berries you may have) ½ Pint Double Cream ½ small cucumber (peeled and deseeded) made to puree 2 oz Icing Sugar

Method 1. Soak the leaf gelatine in cold water for a few minutes to soften. 2. Meanwhile pour 150ml lemonade into saucepan, add sugar and bring to the boil along with the Pimms. Stir, remove from heat, add gelatine leaves, stirring constantly. Add rest of lemonade. 3. Divide the autumn fruits into nice glasses or moulds, then carefully pour in the jelly, making sure the berries are evenly distributed. 4. Once jellies have set, make the topping by blitzing the cucumber in a blender to puree consistency. 5. Whisk double cream and sugar, adding the cucumber puree, until thick. 6. Using piping bag, pipe cream onto top of jellies, garnish with a sprig of mint leaf and slice of cucumber.

Dandelions:

Nuisance or Nature’s Gift? The tiresome task of getting out the lawn weed killer to attack the perennial dandelion invasion is probably something most of us have a dull dread of. Last year my husband’s tactics were to mow down as may as possible before they had a chance to spread their seeds… it didn’t work. I think it’s fair to say these dark thoughts have likely clouded our appreciation of this most tenacious of plants. However, their Latin name, Taraxacum, is derived from the Greek taraxos (disorder), and akos (remedy), on account of the plant’s many curative actions. Is it our ever-increasing disconnection from nature’s knowledge that has made us shun it so completely? It features on the front of most weed-killer bottles! Would more of the dandelions end up in our kitchen/medicine cabinet rather than the compost bin if only we understood the benefits?

Kew’s Ethnomedica project, which records British herbal remedies handed down the generations for progeny, has many recommendations for using dandelions to cure warts. Maybe the older generation still knows this but it was certainly lost with ours.

After a frost in autumn, allegedly their protective bitterness disappears, so they can be harvested once again. It is interesting to note that as our modern palates have been “sweetified” and “saltified” we tend to shun bitter flavours. Apparantly we used to be able to distinguish between various shades of bitterness no less! So dandelions leaves which are more bitter than most leafy vegetables are better mixed in with sweet roots vegetables, for instance or spinach. The roots can be dried and used to make a coffee-like drink. And, of course, one can make dandelion wine… On further searching there’s plenty of information on it’s culinary and medicinal uses for those that wish to know. I’m unsure if all this would change my husband’s opinion but it’s worth a shot. Nuisance or Nature’s gift… you decide.

HISTORY NOTES By Bonx Trigwell

Thomas Sackville, 1st Earl of Dorset Thomas Sackville, 1st Earl of Dorset (1536 – 19 April 1608) was an English Statesman, poet, dramatist and Freemason. He was the son of Richard Sackville, a cousin to Anne Boleyn. Thomas Sackville married Cicely Baker in 1555 and had seven children. He was a Member of Parliament and Lord High Treasurer. He died suddenly at the council table, having apparently suffered a stroke, referred to as dropsy on the brain. He was buried in Westminster Abbey. Sackville was created Baron Buckhurst, of Buckhurst in the County of Sussex, in 1567, and Earl of Dorset in 1604. Sackville acquired a large fortune through his real estate dealings in many counties, as well as his investments in the iron foundry business. He was an advocate of stronger enforcement of the Sumptuary Laws, which regulated the types of clothing allowed to be worn by the various social classes, within the military. Specifically, he dictated that only soldiers holding the rank of Colonel or above should be permitted to wear silk and velvet, and that Captains and all ranks below should “make do with Fustian and spend the remaining money on their arms.” This seemingly-petty insistence makes more sense when one considers that Sackville was tasked daily with the duty of allocating funds for the supply of arms, armour and uniforms to England’s military, both regular and irregular. In around 1587, Sackville was granted a royal licence to commission armour from the Royal Workshops at Greenwich. The finely etched, blued and gilt armour, a garniture for the field, is one of the finest and best-preserved examples of the Greenwich school of armour-making known to exist. It is now part of the Wallace Collection in London. Another, similar armour, featuring the same construction and decorative scheme, which belonged to Sir James Scudamore, can be seen at the Metropolitan Museum of Art in New York. Queen Elizabeth I acquired Bexhill Manor in 1590 and granted it to Thomas. Thomas was also the last Sackville to be Lord of the Manor of Bergholt Sackville (named after the Sackville family) and Mount Bures in Essex when he sold them in 1578 September 2011 • East Grinstead Living

to Mrs. Alice Dister. Both estates had been in the family for 459 years. He was an ancestor of Vita Sackville-West (18921962), who was the subject of Virginia Woolf’s 1928 novel Orlando. Thomas’s son, the second Earl of Dorset, Robert Sackville, left a sum of money to build Sackville College in East Grinstead, in 1609. A lesson from a

Mad Hatter We’ve all heard of positive thinking: concentrating on strengths, successes, achievements and “can-do” and shunning the tendency to dwell on the negatives, past mistakes and the “can’t do” way of thinking. Here’s a thought-provoking conversation with Alice & the Mad Hatter that illustrates this.

Alice: Where I come from, people study what they are not good at in order to be able to do what they are good at.

Mad Hatter: We only go around in circles in Wonderland, but we always end up where we started. Would you mind explaining yourself? Alice: Well, grown-ups tell us to find out what we did wrong, and never do it again

Mad Hatter: That’s odd! It seems to me that in order to find out about something, you have to study it. And when you study it, you should become better at it. Why should you want to become better at something and then never do it again? But please continue.

Alice: Nobody ever tells us to study the right things we do. We’re only supposed to learn from the wrong things. But we are permitted to study the right things other people do. And sometimes we’re even told to copy them.

Mad Hatter: That’s cheating! Alice: You’re quite right, Mr. Hatter. I do live in a topsy-turvy world. It seems like I have to do something wrong first, in order to learn from what not to do. The Iconic airliner Tuesday 27th September 2011, at the Meridian Hall, East Court 6.30 pm Town Mayor, Councillor John Saull and his pilot colleague Capt John Hutchinson, will give presentations on the development and flying of the Anglo French supersonic passenger aircraft which was in revenue service for over 27 years.

John Saull, working for the UK Regulatory Airworthiness Authority, The Air Registration Board, was deeply involved in Concorde development and certification of the aircraft from its prototype construction and testing up to its proving flights, prior to service in 1976. Captain John Hutchinson, is a very experienced ex RAF pilot. He flew several aircraft types with BOAC and British Airways prior to flying Concorde for some 15 years taking the aircraft all round the world and flying many VIP`s. The two Johns remain enthusiastic about Concorde and their proud relationship with this Icon - Come and hear about their experiences, it will be an interesting evening! You will be expected to give a respectable donation to the Mayor`s Charities, The Guinea Pig Club and St Catherines` Hospice. There will be a Grand Raffle and some light refreshments after the event.

East Grinstead 10k 2011 The Andy Ripley Memorial Race

The second running of the East Grinstead 10k takes place at Imberhorne Upper School on 25th September. Following the success of the inaugural race in 2010 with 180 runners, the race looks set to become a feature of the autumn racing calendar. This year we already have 230 entries and we are expecting to have 350 runners altogether. The route is multi-terrain over fields, footpaths and roads and makes extensive use of the Worth Way. It is suitable for all abilities and the age limit this year has been reduced to 15 to attract more young runners. The race has been named in memory of Andy Ripley who died of prostate cancer last year. The race will again be started by his daughter Stef, who then takes part in the race. Andy was a huge supporter of local sport and worked tremendously hard with East Grinstead Athletics Club as well as many other local clubs in the town. Andy played rugby for England and the British Lions in the 70s, before becoming BBC’s ‘Superstars’ champion. He truly fitted the description ‘Larger than Life’. Proceeds from the event will be shared between the Prostate Cancer Charity and Wooden Spoon, the charity of British and Irish Rugby supporting mentally and physically disadvantaged children.

Big Cats in Sussex Myth or Mystery?

For more than two decades an increasing number of people have been seeing the impossible – a large black Leopard sized cat roaming around our County. With the growth of the internet an increasing number of these sightings are being reported to the Police and to groups that aim to solve the mystery. These sightings are reported all over the UK, usually in the more heavily wooded and less visited parts of the UK. As Sussex has more woodland than any other English county it is not surprising the several hundred people a year are now reporting seeing a large cat, many in and around Ashdown Forest. Either people are imagining or hallucinating these sightings or we do share our County with large wild cats. In many cases numerous people have seen the same animal at the same time which would seem to discount hallucinations. As most of the people that see them are “country” people who see them just tens of yards away, it is unlikely that they are mistaking the animal for a deer or dog.

Prior to the 1976 Dangerous Wild Animals Act, you could buy a Leopard cub from Harrods and keep it as a pet. After the 1976 Act came into force many animals just vanished and they are the most likely the ancestors of the animals now being seen. As our County is full of Deer, Rabbits and wildlife they would have plenty to eat. A couple of months ago Thames Valley Police after investigating numerous sightings, announced that they were certain that a Leopard sized cat was living wild in its region. So far the evidence consists of hundreds of reported sittings, numerous large paw prints and a variety of photographs. I find it refreshing that in the 21st Century we have an intriguing mystery on our doorstep. Love to Sing East Grinstead Choral Society has been in existence for 60 years and will be celebrating its Diamond Jubilee in the forthcoming season. We have performed a vast variety of great choral works and more contemporary classical pieces over the years in several churches and local schools. We have also made trips abroad to visit and perform with similar choirs in all of our five european twin towns. Despite a current membership of around 80 singers we are still hoping to boost our numbers this season in advance of our special performance of Mendelsohn’s Elijah this October which requires a very large choir - rehearsals begin in September. The society exists to promote singing of classical and choral works within the community. As a strong supporter of new young musical talent, we often give younger soloists and musicians a chance to perform alongside the main choir and more experienced singers. Despite being the largest singing group in the area we are a very friendly, meeting socially for a range of activities including meals out, country rambles and charity fun-runs! Gardening Tips for September Article by Michael Dongray, Imberhorne Lane Nursery Proprietor

Shrubs and Trees

This month is a good time for planting out container grown trees and shrubs. When planting ensure the bottom of the hole is broken up and some well rotted compost is incorporated into the hole. Keep well watered particularly if it is warm and dry.

Fruit and Vegetables

Plant Spring Cabbage, Kale and Savoy’s. Harvest Sweet Corn and Onions. Sweet Corn is ready to harvest when the silks have turned from golden to brown and onions are ready when the tips of the leaves begin to turn yellow. Any unripe tomatoes should be hung upside down in a cool dark place still on the vine to ripen. Cut and store marrows before the frosts arrive. Rhubarb, Raspberries and Strawberries can be moved this month. It is a good idea to move these every 3 or 4 years. Early pears and apples will be ready for picking now. Cover autumn fruiting blackberries and raspberries with netting to keep off the birds.

Roses

Prune your rose bushes and remove the last of the flowers once they have withered. Tie in climbing and rambling roses ready for the winter.

Lawns

Rake fallen leaves and other debris from your lawn. Aerate the lawn with a fork or Lawn Aerator. Apply Autumn Lawn Feed following all the instructions on the box. September is a good month for sowing grass seed.

Miscellaneous

Plant spring bulbs including tulips, daffodils, hyacinths and crocus. Compost your summer bedding plants once they are over. Continue to water the garden during dry spells.
