Testimonial: “It is with pleasure that I recommend Paul and Allzones Roofing Services. We encountered a problem at our residence over the last winter during the large snowfall with an ingress of water in two dormer window areas. We requested quotes from two well known roofing companies and were told we require a completely new roof at an exorbitant sum of money. Thank goodness we had someone refer us to Paul. He identified the problem as being poorly fitted felt and loose tiles which were pushed up by the snowfall & freezing weather. He and his men attended immediately and corrected the situation at a fraction of the cost quoted by the previous two companies It is truly wonderful to meet a tradesman who is not only extremely honest but very proud of the work he performs. I am quite confident that any who employs this company will be very pleased with the final result.” Yours truly, Richard Reuss Independent Business Consultant Forest Row

Rollicking Waxing 101 Rocks
Did you know that East Grinstead has a Climbing Club? They do indeed exist, but of course being climbers they have to travel a bit before the real challenges start, because we really don’t have a range of mountains in our own back yard. Or is that entirely true? East Grinstead sits on top of a big lump of sandstone rock several hundred feet above sea level. Here and there this rock pokes out from the surrounding landscape and you catch glimpses of it as you travel around. Ashurst Wood has some splendid examples, and even some of the older houses are actually carved into the living rock. My favourite view is a small area of woodland and sandstone rocks that sits on the hill overlooking Weir Wood Reservoir. It’s so special in fact that it is listed as a Sight of Special Scientific Interest for geological reasons. To reach it, take either the Saint Hill Road or the West Hoathly Road out of town in the direction of Sharpthorne. It’s a narrow road with some sharp twists and turns, halfway down a hill you’ll see the reservoir and a lane off to the left where there are a few limited places to park. Cross the road and you’ll see a rocky leading-off – over the appalling rainy winter we had, there’s been some rock falls which you’ll spot. Go along the way and you’ll soon discover that you are in among an extraordinary collection of weathered rounded rocks and boulders. While they may not exactly be the Matterhorn, they are peculiarly suitable for those wanting to learn the rudiments of climbing. It’s not compulsory to climb but you might be tempted. I often take a picnic, rest up on a friendly rock and take in the beautiful views, that’s something most of us can share. Simon Kerr
Its Holiday Season again and many of us turn our attentions to the dreaded battle against the ever present recurring nightmare that is ….unwanted hair! Wax is an option and for some converts the only option, but what type of wax is best, how long does my hair need to be and what about the pain???? Hopefully this will answer your questions and help you to get the most from any wax treatment:
What is the difference between Non Strip and Strip Wax? Non strip wax is spread thickly onto the skin and shrink wraps the hair before it is firmly peeled away. This method is less painful, as it sticks to the hair and not the skin. This wax should be for sensitive areas i.e. face, underarm and bikini waxes. Strip wax is recommended for thicker/less sensitive skin, for example – legs, arms, chest and back. A thin layer of wax is applied to the skin and is then removed using a paper or fabric strip.
How should I prepare for a hair removal treatment? For ease in removal, any unwanted hair should be about 3-5 mm long. Refrain from extended sun exposure 48 hours prior to waxing, and exfoliate your skin several days before waxing. On the day of your waxing services, make sure you cleanse the area and that the skin is moist but not greasy from oils or lotions.
Does waxing hurt? Everyone is unique: your first time receiving a body waxing can be uncomfortable. With frequent monthly waxing, hair becomes finer and sparser, and waxing becomes more comfortable. When appropriate post-waxing home care is followed, waxing leaves virtually no ingrown hairs, bumps or ongoing skin irritation. Your technician is on hand to advise you on all matters concerning your wax treatment. Pre and post wax information is essential to make sure you receive the very best results. Your technician should be well trained and experienced in the type of wax used for the area of treatment and use a superior quality wax to gain the very best results. For some that means the daily use of the razor and trying to avoid taking a nice chunk of healthy shin along with the hair or the use of a smelly removal cream that dissolves the hair away …but as your skin and your hair is made from the same protein what is it doing to your skin? Packing for
your Holiday When you go away, do you envy people with hand luggage only? Do you come back with clothes still folded and unused? With some forethought, this could change! Try these handy tips: 1.
2.
Make some notes on what you expect from your trip. Rest and relaxation? Easy! Just casual clothes – but be selective. For example, one skirt/ trouser will work with three different tops. If they don’t co-ordinate, don’t take them! If you are lying in the sun most of the day, you only need a swimsuit/bikini, plus sleeved tunic to go over it. Maximum two of each – and try them on to make sure they still fit! Maybe you like to dress up for dinner? Take dresses - they’re one item outfits and work for day and evening. Add a few smart bits – e.g. black/white trouser with different tops.
.
Remember a cardigan or pashmina in case the evenings are chilly.
4.
Wear your heaviest shoes and clothes on the flight to save space.
5.
Keep shoes to a minimum. A flat sandal for the pool, one comfortable shoe for trips out and maybe a pair of heels for the evening.
6.
Metallic colours go with everything.
7.
Rolling up instead of folding your clothes will help avoid creasing.
8.
Different scarves and jewellery can change an outfit you have already worn.
9.
Wear colour! It’s the summer!
10. Make sure you can make at least one outfit from each piece and the shoes work too. Be strict with yourself – remember there’s less to wash on your return! Have a lovely holiday. Tips brought to you by Tessa Sturdy, proprietor of Private Collection & Second Glance, see advert opposite.

Grab a bargain while you can! Correction In last month’s article entitled ‘The Military on Ashdown Forest 1939-1945’. The Canadian Artillery Regiment was erroneously named Canadian Airforce Regiment. From the context the first V1 crash can be inferred to have happened in Pippingford Park, however it happened on Crowborough Golf Course. The Ashdown Forest Living take full responsibiltiy for these errors. Finally Major was mis-spelt Curry with a ‘y’, and it should have been ‘ie’, Major Currie was the first Canadian to receive the VC in the Normandy campaign. We apologise for any confusion caused.

Gardening in July By Clare Parkinson Horticultural Manager and Garden Designer Imberhorne Lane Nursery
Your garden is now at its flowering peak and you can give yourself a pat on the back for all your hard work. However, if you don’t feel this fits the description of your garden then don’t be too despondent, look at where the gaps are and think about colour and the size and structure of the plant that will make the difference – maybe not for this year but next year. As always, there are plenty of jobs you can be doing in the garden.
Roses The roses have been wonderful this year, keep deadheading (except for species grown for their hips) and give them a feed, any food with high potash and magnesium will do the trick. Best to use a liquid feed so as not to scorch the leaves.
Perennials Cut back the dead flower spikes of delphiniums and lupins and give them a feed to encourage a second flowering. If plants have powdery mildew (not uncommon in hot, dry weather) then the best thing is to either spray them with a fungicidal spray or if they have flowered and you can cut them back, then do so. If you want more summer and autumn interest then plant out Agapanthus, Anemone and Crocosmia, they’ll give good colour and fill some gaps.
Pots and Baskets
Lawns Avoid watering your lawn (unless it’s newly laid turf ) and raise the blades on the mower. If a lawn isn’t watered then it won’t grow, so you won’t have to mow it! As soon as it rains it will green up pretty quickly and you won’t have a massive water bill.
Shrubs and Hedges Now is a good time to prune Philadelphus and Wisteria. With the former you can prune back by about a third, take each shoot back to a nonflowering sideshoot. With Wisteria cut back the wispy shoots to about 15cm long. Train it into your fence or trellis to keep it under control. Now is a good time to clip Ligustrum (Privet) and Lonicera nitida.
Fruit and vegetables Raspberries, redcurrants, blackcurrants and gooseberries should be ready for picking now. Pinch out the tops of the tomato plants to stop them growing and divert the nutrients to the fruit. Harvest your fruit and vegetables as they are ready and enjoy the feast. When you buy new plants place them (still in the pot) where you think they’ll look good in the garden and then sit and have a cup of tea and decide if you like how they fit in – if they don’t then move things around. Saves so much time and effort! Happy gardening…
% 10
Water, water, water and feed… and they will reward you with good displays of colour through to September. Keep deadheading to prolong flowering.
If you’re going on holiday then ask a friendly neighbour if they can help out with watering, if not then move the pots into a shady corner to help them conserve moisture.

Every Child Deserves an Education The Loiyangalani Trust is a small, locally based charity that supports education in a remote part of northern Kenya, thus enabling children to have a better future. Here is a Q&A with one of the trustees, Carolyn Bentley, about the vital work they do:
How did the charity all start? What is the background? It all started when a friend in West Hoathly put out a notice in our parish newsletter asking for volunteer trustees. Anthony had family connections in Kenya and had been to Loiyangalani when travelling on a safari holiday. A boy asked him if he would sponsor his secondary education, which he did, and he later sponsored the boy’s sister to study nursing. But he wanted to do more than a single individual could achieve and so four of us started in the autumn of 2009 with a presentation in our village church, resulting in a few people coming forward to sponsor children.
Since its beginning, what expansion has it seen? It has expanded greatly since then. From our beginnings as a ‘small charity’ we became fully
registered in 2012 and are now supporting over 30 children through secondary education as well as providing vital equipment for the primary school. So far we have provided desks, books, calculators, dictionaries, bibles, uniforms, sanitary towels so that the girls don’t miss school, and trained 3 teachers. With funds raised recently we have just started providing breakfast for 500 primary school children who would otherwise only have one meal a day.
What is the most enjoyable side to running this charity? Seeing that we are making a big difference to the lives of children who live in a far more difficult environment than we do. They are so keen to study and grateful for the opportunity of an education which will mean they will have a better future than just herding goats or fishing. Albert, one of our first sponsored pupils has finished secondary school and is about to start university. Meantime he has been helping out teaching at the primary school. We have another boy studying electrical engineering (very timely as there is a big wind farm project about to start nearby, which will be operational in the next few years and will provide electricity to Loiyangalani as well as to the national grid). It is humbling to see the appreciation

of an education which we take for granted in the western world. They can be writing with just a couple of inches left on a pencil, crammed five to a desk designed for 3 or sitting on the floor.
What is the most challenging side to the charity? Communication with such a remote place in Kenya isn’t easy. We do most by email as the PO Box for the surface mail is in the county town - a 7 hour drive away across dessert tracks! Emails are mainly picked up by mobile phone as there is a mobile phone mast in the village - albeit only 2G signal.
What does the future hold? What local help are you hoping to have? We hope to continue growing gradually so that we can support more children through secondary education. Well I Never!
Things we thought were true but aren’t Julius Caesar invaded Britain proclaming: “Veni, Vidi, Vici” (I came, I saw, I conquered)...
In fact he said this while summing up his victory over King Pharnaces II of Pontus at the battle of Zela in 47 BC. His attempts to invade Britain were much less satisfactory. We gave him a good run for his money, he had to invade twice with no real success, then trade and Roman influence actually grew ‘organically’ without the need for full occupation. The invasion happened 96 years later under Emperor Claudius.
Napoleon was short...
Actually this came from mistranslation followed by propaganda. According to his autopsy of 1821, he was “5/2”. It’s now believed this in fact represents the French measurement “5 pieds 2 pouces”, which converts to 1.69 metres. The average height of Frenchmen between the years of 1800 and 1820 was 1.64 metres, so he’d have been taller than most of his countrymen and even taller than the average Englishman, who was then 1.68 metres!
It’s 50-50 chance whether a coin lands on “heads” or “tails”...
Students at Stanford University recorded thousands of coin tossses with high-speed cameras and discovered the chances are approximately fifyone-forty-nine in favour of heads! If the coins are subjected to exactly the same conditions and same force, their spin will produce an even chance, but the slightest difference in the conditions – speed and angle of spin, height of the coin from the ground, which side is facing up to start – will affect the result.
Cleopatra was Egyptian...
Cleopatra was a direct descendant of Ptolemy I (303-285 BC), he’d been Alexander the Great’s right hand man. On Alexander’s death in 323 BC, Ptolemy was rewarded by being granted the governorship of Egypt. Ptolemy came from Macedon, north of Greece. The Ptolemaic court only spoke Greek and behaved as an occupying foreign power. By contrast, unlike the dynasty she belonged to, Cleopatra did learn to speak Egyptian.

Greenfields Independent School Greenfields School is an independent, non-denominational, day and boarding school on the edge of the Ashdown Forest that services children from 2 to 18. It has a Montessori based Pre-school & Reception class, followed by Infant, Junior, Senior, 6th Form and EFL (English as a Foreign Language) classes. Greenfields teaches national curriculum and runs like any other independent school with the exception that it utilises a unique study method. This method isolates the barriers preventing or hindering a child from learning and then provides precise tools to deal with them. Its use opens the door to any child of any ability learning anything. This, along with small class sizes and plenty of individual attention from enthusiastic teachers, allows ‘gifted’ children to study ahead of their year group where feasible, or slower children to receive extra help when necessary. Greenfields also adheres to a strong moral code with a zero tolerance of bullying, drugs or alcohol. Visitors to the school routinely comment on the high morale, confidence and friendliness of the children. These attributes were also noted by the Independent Schools Inspectorate* when they inspected in 2011. Three inspectors over a period of two weeks looked into every aspect of the school's performance. The study methods were new to them and they looked at them with great interest. The school was rated overall as “Good” and one observer noted: “Pupils of all abilities display good subject knowledge, understanding and skills. They acquire secure literacy and numeracy skills, and develop a capacity to think critically. Many pupils show strong creative skills, in writing, art work and drama. Pupils are very articulate, listen carefully and contribute well when asked. They are motivated, and work independently and with enthusiasm.” Greenfields is proud of what it has achieved in the last 30 years and also of the many children who have gone on to excel in their various careers. In celebration of its 30th Anniversary in 2013 it radically reduced tuition fees in order to make private school education accessible to more people. You are invited to tour the school and get your questions answered!

David Shepherd’s Artist Awards
East Grinstead resident David Shepherd CBE is both a wildlife artist and conservationist. His charity the David Shepherd Wildlife Foundation puts on the ever-popular Wildlife Artist of the Year Competition which has now become an international event, attracting entrants from around the world. This year’s winner was French sculptor Pascal Chesneau with his “Transparence Elephant” - recycled from an old car roof. It was a particularly special year as the charity celebrated its 30th Year Anniversary. Chesneau accepted the £10,000 top prize from Shepherd at an event in London. Commenting on the winning piece chairman of the judges, Mark Carwardine said: “Who couldn’t love it? It stopped
me in my tracks and I keep going back to see more”. The runner-up was Singaporebased Choon Chew’s “Aiming”, for which the artist won £1000. The drawing was also the winner of the wildlife in action category.

Overall, there are eight competition categories besides the top award, with each category winners each receiving £500. 150 works were shortlisted from more than 1,000 entrants and were exhibited at London’s Mall Galleries last month. “The extraordinary talent 24 | July 2014 • Please mention East Grinstead Living when responding to adverts
and creativity of all the artists involved never ceases to amaze me,” said David who set up the competition in 2007 to raise funds and awareness for endangered animals. “And what is so utterly brilliant is that all these talented artists share my passion – to give something back to the animals that inspire our work.” Since it began, Wildlife Artist of the Year has raised over £100,000 for conservation projects supported by David’s wildlife charity. Some of the winning entrants are shown above.

Prince Philip visits Hindleap Warren for its 50th birthday High in the Ashdown Forest, set in 300 acres of woodland, Hindleap Warren provides outdoor education to children to boost young people’s confidence, character and skills. It is run by London Youth which is a network of over 400 diverse community youth organisations. An investment of £1.5m will ensure gold standard outdoor education is offered to another 100,000 young people over the next decade. To this end, a major new appeal is launching to ensure opportunities for adventure and exploration are guaranteed for children and young people in the future; particularly those with disabilities and young people from areas of economic deprivation. The general purpose is to enhance children’s social and emotional capabilities which are needed to become successful adults. The capital appeal was launched on Friday 13th June to coincide with a visit from London Youth patron, H.R.H The Duke of Edinburgh Prince Philip, to Hindleap Warren. As well as this being his fifth visit to the centre, the week also marked his 93rd birthday! His Royal Highness The Duke of Edinburgh, K.G., K.T., Patron of London Youth said: “Hindleap Warren provides young people with much needed experience, development and out of doors adventure. The aim of the ‘My Hindleap’ appeal is to improve the facilities needed for the outdoor education of 100,000 young people over the next ten years.” The Centre Director, Sam Grimstone, had this to say about the special day:
©Skye Brackpool of Brighton Togs
‘We had such a fantastic day celebrating Hindleap’s 50th birthday. It was wonderful to share the day with so many of Hindleap Warren and London Youth’s longstanding friends and supporters. Some of them had supported the very first log cabin erected on site, and so many have helped us develop and improve the centre over the last fifty years.
London Youth projects and of course HRH Prince Philip.
“We’ve spent the past year listening to the young people we work with through schools and youth groups, and to our own staff and Trustees, to work out what investment Hindleap needs to deliver outstanding outdoor education for the next ten years. The celebration on Friday was the perfect opportunity to launch our ‘My Hindleap’ development plan and we were delighted and honoured that our patron HRH Prince Philip could join us for the event.”
Although over the last 50 years Hindleap Warren has delivered to nearly 300,000 young people, the availability of gold standard outdoor education is under threat, Hindleap’s facilities are under pressure, and young people’s educational needs are changing. But the value and development that learning away from the classroom can offer still remains just as crucial, if not more so today.
With Head of Centre, Tony Smith, further stating: “Two wonderful birthdays last week, our patron HRH Prince Philips 93rd and our 50th. “It was just amazing to celebrate ours in such good company with supporters, friends, staff, young people from schools and our

“I saw the day as a fantastic celebration of 50 years of adventure and education for 300,000 young people and an incredibly exciting launch of development plans to provide even better opportunities for a further 100,000 young people over the next ten years and more”.
To find out more about “My Hindleap” or if you’d like to support the appeal and ensure Hindleap Warren can continue to provide gold standard outdoor education for young people, please get in touch with Gareth Price, Head of Development, at gareth.price@ londonyouth.org.uk or call: 01342 828214.

Local History Notes
Benjamin Latrobe by Dorothy Hatswell Benjamin Henry Boneval Latrobe was born in the Moravian Settlement near Leeds on May 1st 1764. He was the second son of Benjamin Latrobe, a leader of the Moravian community, who was of Huguenot descent, and Anna Margaretta Antes. His mother had been sent to Leeds by her wealthy, American father to be educated at the Moravian School. At the age of twelve Benjamin junior was sent to Prussia to join his older brother, Christian, at the Moravian school there. Aged eighteen he joined the Prussian army and was possibly wounded while on service with them. He then embarked on the Grand Tour and became proficient in several languages, including French, German, Greek, Latin and Hebrew. Returning to England in 1784 he was apprenticed to John Smeaton, the designer of the Eddystone Lighthouse. He qualified as an architect shortly afterwards, most of his work reflects his interest in and influence by, the classic architecture of Greece. He also worked on several civil engineering projects including the Basingstoke Canal. His two major works in England were both in the East Grinstead area. His first, in 1792, was the large mansion at Hammerwood Park. It was commissioned by John Spurling of Dynes Hall in Essex as a hunting lodge. An inscription on the front of the building is in Greek. It translates as:
study of Hammerwood House. It is softened by some landscape detail and a female figure on the left foreground; it resides in the Royal Institute of Architects headquarters in London. The other is a watercolour painting of Old Road, East Grinstead. While he was in the area overseeing his two architectural commissions, he sometimes stayed at Kidbrooke. In 1795 he rode from Forest Row into East Grinstead, coming into the town by the old, steep road which was bypassed in 1828 by the present A22. Whether he actually followed a heavilyladen cart taking stone to rebuild St. Swithun’s Church, whose tower had collapsed some years earlier, no-one can know. He may have ridden to the town to see the architect, James Wyatt who he knew professionally. Whatever the reason, he was struck by the scene and decided to paint it. The East Grinstead museum has a copy, it is dated September 8th 1795. He had married Lydia Sellon in 1790 and they had two children, Lydia Sellon Latrobe and Benjamin Sellon Latrobe before Lydia died in childbirth. Latrobe was devastated by her death. At the same time he was experiencing financial difficulties due to the money he was owed by various clients. He suffered a breakdown, and soon after painting Old Road decided to go to America, a country he had been interested in by his mother.
“This is the first portico of John Sperling’s mansion. The architect is B.H.Latrobe. He made it in the 1792 year of Jesus Christ and the second year of the 642nd Olympiad.” The second, Ashdown House near Wych Cross, was built for a Mr. Fuller, the following year. Having moved to America, he became a prolific water colourist, painting landscapes and engineering projects across the vast country. It may be assumed that he painted similar scenes in England but they have not survived. Only two of his paintings of England are known. One is a partly architectural 28 | July 2014 • Please mention East Grinstead Living when responding to adverts

He sailed for America on November 25th 1795. He took his sketch book with him and painted several pictures while on board ship. The first was a picture of the White Cliffs viewed from the deck of the “Eliza”. In America he was soon employed on some quite large projects and eventually designed the Capitol Building in Washington and the Basilica at Baltimore. He remarried in 1800. His new wife was Mary Elizabeth Hazlehurst. Latrobe continued with his architectural and civil engineering work in the United States. His son, Benjamin junior, joined him and they worked together on a large reorganisation of the water supply to the New Orleans area. There had been a yellow fever epidemic due to the poor disposal of sewage. Sadly, in 1827 Benjamin junior caught it and died. His father carried on the work alone, but he too, succumbed to the
disease three years later. There were so many deaths at this time that all the victims were buried in quicklime in a common grave to try to prevent the disese spreading. Benjamin senior is however commemmorated on his son’s grave.
Although most of his work and prestige came as a result of his work an the other side of the Atlantic, East Grinstead can be proud that this part of England was where he began his illustrious career.

EG10K, The Andy Ripley Memorial Race This year is the fifth running of the 10k and it starts at 10am on 21st September, from Imberhorne Upper School. We are expecting to reach the race limit of 400 before the day, like last year. We are currently on course to achieve that, showing the popularity of the event. It is now a firm fixture in East Grinstead’s sporting calendar. The course is largely off road, taking in footpaths and Worth Way to Crawley Down, before returning along Worth Way to East Grinstead Station where it takes to the roads to the finish in Imberhorne Recreation Ground. We welcome runners of all abilities and the finishing times usually range from a speedy 35 minutes to a more leisurely one hour. All finishers receive a T-shirt and goody bag. Once again, we are raising funds for ‘Prostate Cancer UK’ and ‘Wooden Spoon’. The race is subtitled ‘The Andy Ripley Memorial Race’, which is why we continue to support these charities. Last year we donated £1500 to each of them from race proceeds. Of course many runners raise funds for other charities.
We are all citizen reporters now East Grinstead Online is the first community news site written for, by and about people in the town. It was started by journalist Geraldine Durrant because she wanted East Grinstead to have a professionallyrun news site which properly reflected the interests, achievements and talents of the local community – written by a team who live in, and care about, their home town. “I’ve been expecting someone to start a ‘hyperlocal’ online newspaper for a long time now, but no one did. So as I have been reporting East Grinstead for the past 30 years on and off I finally realised I’d have to do it myself,” Geraldine explained. But it is an idea whose time has come. Since its launch just six weeks ago, East Grinstead Online’s readership has grown far faster than Geraldine’s most optimistic predictions. And as word spreads so more people are volunteering their time and talent to support it, “which is what a community news site is all about”, said Geraldine. If you have news and pictures to share, or want daily online news and features covering the best of the town, go to: eastgrinsteadonline.com
As usual, we are grateful for the support of EG Athletics Club and EG Tri Club helping organise and run the event. Entry details can be found on the race website www.eg10k.com. Sainsbury’s has kindly offered to donate bananas again this year and we are hopeful of further contributions, as these mean we can give more to our charities!

Always Respect your Elders tasty recipes to both use and preserve the flavours and goodness. Nothing quite brings a foraged meal together quite like a glass of Elderflower champagne on a beautiful summers day. But there are countless recipes out there for both cordial and champagne so I will instead give you recipe for the panna cota I made last week which was glorious, heady with aroma. For this recipe you will require: • • • •
The elder tree has a long varied history in both our own culture and worldwide, with countless stories, recipes and remedies being handed down from generation to generation. Some considered it a magical tree, as once it was believed that witches could turn themselves into an Elder. ‘Magic wands’ were made from its branches and they were planted outside houses to ward off evil spirits. It was believed that sitting under or sleeping under an Elder tree would transport one down to the faerie underworld. Risky business that, considering how abundant it is! As an herbalist this is a staple of my medicine chest with the tree providing bark, leaves, flowers and berries up for medicinal use. All of which can be preserved and saved for use in winter when they are mostly required. The flowers always denote for me the true beginning of Summer, while the berries mark the last of the hedgerow harvest and summer’s end. Generally it is its ability to induce a sweat which makes it useful in treating the common cold. The bark and leaves require caution and expertise in their use as they are the most powerful and can induce vomiting.
5-8 Elderflower Heads (Umbels) 900ml Double Cream 1 tablespoon Agar Agar 2 tablespoons Caster Sugar
Add the flowers to the cream, removing as much green stems as possible. They can impart too much bitterness to the dish. Slowly bring the cream and flowers to a very gentle simmer and then remove from the heat and allow to sit for at least half and hour. Then remove the flowers from the cream using a fine sieve. Remember to press the flowers in the sieve to remove as much flavour and cream back into the pan. Once again bring the cream up to a gentle simmer and add the Agar Agar and stir carefully until it is all dissolved. Remove from heat and pour into individual ramekins and place in the fridge to set. Dust lightly with icing sugar when serving. Try it with a fruity compote, I made mine with a delicious blackberry whiskey jelly. NB: Remember to always consult an expert when foraging and self medicating. Always ID plants 100% before consuming and seek a professional’s advice if necessary. Any medicinal uses described above are only a general guide, diagnosis and treatment is far more complicated than explained in this brief article. Always seek the advice of a practitioner or doctor for any ailments.
From the beginning of Summer through to the end of Autumn, elder is always in my foraging basket. The flowers and berries being so versatile that I am never short of recipes that delight the senses. From pancakes, panna cota, and champagne with the flowers through to jams, vinegars and wines with the berries I am constantly trying to find new unique and 34 | July 2014 • Please mention East Grinstead Living when responding to adverts
