Queen of puddings This classic British pudding is so simple to make, and it tastes delicious with its crown of golden meringue.

What to do: Serves: 4 adults Preparation time: 35 mins Cooking time: 30 mins

Ingredients: 1 tsp butter 50g white or wholemeal breadcrumbs 225ml milk 1 tsp vanilla extract 40g caster sugar 2 eggs separated 2 tbsp strawberry or raspberry jam

1. Grease an 850ml (1½ pint) baking dish with ½ tsp of the butter. Sprinkle the breadcrumbs into the baking dish. 2. Warm the milk with the remaining butter and vanilla extract until lukewarm. Take care that the mixture doesn’t get too hot. Remove from the heat and add half the sugar, stirring to dissolve it. Beat in the egg yolks. Pour into the baking dish and stir into the breadcrumbs, then leave to soak for 15 minutes. 3. Meanwhile, preheat the oven to Gas Mark 4/180°C/fan oven 160°C. 4. Bake the pudding for 20-25 minutes, until lightly set. Remove the baking dish from the oven and cool for 5 minutes, then carefully spread the jam over the surface. 5. Whisk the egg whites in a grease-free bowl until they hold their shape, then add the remaining sugar, whisking again until stiff and glossy. Pile the meringue on top of the pudding, then return it to the oven to bake for a further 5-8 minutes, until golden brown. Serve at once. Tip 1: Egg whites won’t whip if there is the slightest trace of grease in the bowl or on the beaters - and that includes egg yolk too, so take care when separating the eggs. Tip 2: Use blackcurrant or apricot jam for a change. Tip 3: A hand-held electric mixer is best for whisking the egg whites, otherwise use a hand whisk - it will just take longer.

Springtime Musings.... Apparently if you stand at the Equator on the first day of Spring, you will see the sun pass directly over head. This is only true two times a year; the first day of Spring and the first day of Autumn. To test this theory, it might be a good excuse to book a Spring holiday to warmer climes. Another idea is the phenomenon called ‘Spring Fever’ which apparently occurs when a sudden warm spell follows a long cold period. When the temperature rises, there’s an effect from the dilation or expansion of the blood vessels, so that blood is carried to the body surface where heat can be lost quickly. Some people experience an energetic feeling to this reaction!

The Rotary in East Grinstead

The Rotary movement started 100 years ago in the USA and has now spread across 200 countries in the world. In this country, almost every town has at least one club. East Grinstead has two. The mission of Rotary is: -- “In the community and throughout the world. Rotarians build goodwill and peace, provide humanitarian service and encourage high ethical standards in all locations. The Rotary motto is ‘Service above Self’”. Rotarians are both male and female and come from every part of the community. We are non-political, non-religious and open to all cultures, races and creeds. Our clubs meet every week to enjoy a meal together, sometimes they hear a speaker and, sometimes, to conduct any business which we have. We, of the Rotary Club of East Grinstead Meridian, have 33 members, some of whom have been members since the club was established 27 years ago. Being a Rotarian is so enjoyable that it is difficult to give up.

Each club sets its own objectives, however there are some objectives for all clubs. One of Rotary International’s greatest achievements has been Polio Plus, a campaign to provide immunisation against polio which, as a result, has largely been eliminated. Over the last few years the Meridian Club has made donations of £4500 for a new van for Crawley Open House, who look after the homeless in our town as well as Crawley; they do a lot of selfless work with very needy people. Every year, in conjunction with two other Rotary Clubs, we take part in a new event called “Kids Out” to enable three coachloads of children with special needs from Manor Green Primary School to be taken to Chessington. At Christmas the town’s clubs cooperate with similarly minded organisations to provide a Christmas tree and associated lights for the town centre. We also buy vouchers and presents for the elderly and needy. Local people

have been very generous over the years in giving us donations. Rotary runs a number of competitions with young people. For instance, the Young Chef competition: students from Imberhorne, Sackville and Notre Dame schools have taken part and have produced some of the most mouth watering meals. We also fund three local young people to attend a Rotary Young Leaders course each year. On this they learn leadership and other skills, every year they come to the club and tell us about their exploits; we are always impressed by their skills and abilities. We support the local ‘Young Enterprise’ by providing advisers to local schools where students run their own businesses to practice for later life. To sum up being a Rotarian means that you believe in your local community and are prepared to work hard to support it. Our work is extremely enjoyable with a great deal of fellowship and satisfaction with the things which we have achieved.

Optimise your health at The Crossing What a huge responsibility: preparing meals. The health and well being of those you feed is at stake and you should ideally have wholesome ingredients. High quality produce can be expensive, and with the cost of living so high, I don’t know anyone who is not genuinely conscious of their spending. This is why I’d like to share an opportunity with you: At The Crossing, Forest Row, there is a project promoting real pasture fed foods and mineral dense, highly nutritious veg. We are a community group working towards creating a community garden and farm, just along the Forest Way, off Brambletye Lane. Working with volunteers and paying members on our giant allotment, we grow leafy greens, salads and herbs. We’re also planning courses and information on optimising our health through nutrition. We invite you to get involved, to come and see what has been achieved so far. We have fenced 48 x 8 metre raised beds and practice NO-DIG, a less strenuous and more productive system, after horticulturalist and author Charles Dowding. The ‘Coop Co-op’ is in it’s 4th

successful year and we are accepting names for the waiting list. Would you be interested in Pig Club? or Lamb Share? On Tune-in Tuesdays we are at The Crossing from 10am til 2pm, come up the field and say hello. Instead of ‘draining’ this agricultural land we have made swales: big ridges and furrows. It goes some way towards addressing the issues surrounding flooding and is an example of

how to hold rainwater on site. The ridges will be planted with fruit orchards, berry bushes and a perennial ground cover of useful herbs. Strips of pasture between the swales will be grazed. Outcomes will be healthy soil, improved fertility, happy livestock, and some beautiful pasture-fed-nutrientdense-meat. Is it possible to live “off the fat of the land”?

Bake a Fortune for St Catherine’s Hospice! St Catherine’s Hospice is asking local people to raise some dough.... literally! The charity is launching its latest fundraising initiative, Bake a Fortune, with the help of former Great British Bake Off participant, Cathryn Dresser, who lives in this area. Local people can get involved by holding a bake sale, bake off or tea party to raise much needed funds for St Catherine’s. This is a great way to entertain kids during holiday time, to have fun with work colleagues or just get your bake on with friends - simply let them eat cake in return for a donation to the hospice. www.egfirstresponders.co.uk to your community; Forest Row, Ashurst Wood and Dormansland in particular are in need of CFR’s. Other non-active roles are also welcome, such as admin, secretary, finance etc.

The South East Coast Ambulance Service (SECAmb) covers an area of 3600 square miles and a resident population of 4.5 million. Last year they received 793,353 emergency calls. 5,908 of these calls were cardiac arrests, equating to an average of 16 cardiac arrest calls per day in the South East. It is a well-known fact that some communities are in hard to reach areas. Part of the solution are ‘Community First Responders’ (CFRs), a team of local residents who volunteer their spare time, who are ideally located to make a difference, whilst the ambulance service response is en route. CFRs are not intended as substitutes for the ambulance

crews but as they work or live in the immediate area, they can attend an emergency call in just a few minutes. Lifesaving first aid can be initiated earlier. With approximately 170 people in the UK suffering a sudden cardiac arrest, having a defibrillator at a patient within the first few minutes means that up to 75% can be saved!

2) Help them on their way. There are active CFR’s in and around the EG area, you may see them in their red fleeces and T-shirts with the SECAmb and CFR logo. Similarly their cars may sport SECAmb signage. If safe to do so then consider facilitating their journey as they could be on their way to an emergency. Unlike the ambulance service they are not exempt from the road traffic laws, so without blue lights or sirens, your help could be essential.

By Hook or by Crook Back in the Middle Ages, The forest that belonged to a Lord was set apart for hunting. Peasants were forbidden any activity that might disturb or reduce the foliage cover for the deer. There were, however, sections of common woodland where gathering dead wood and small branches was allowed. Hooked poles, ‘Hooks’ and curved implements, ‘Crooks’ were permitted for gathering such wood to supply daily needs. This feudal right to firewood is the source of the expression, ‘by hook or by crook’ which means ‘to go to any lengths legitimate or otherwise to achieve something’. The expression has implications of both fair and shady means. Certainly we do know that the improper gathering of firewood in medieval times was regarded as a serious criminal offence so sticking with the ‘set method’ was ridgidly expected.

CHARLES RENNIE MACKINTOSH The famous architect, artist and designer, Charles Rennie Mackintosh, is inextricably associated with the city of Glasgow. It was there that he was born on June 7th 1868, at 70, Parson Street. He was the fourth of the twelve children of William and Margaret Mackintosh. His father was a police superintendant. After attending local schools, Charles enrolled at the Glasgow School of Art to study architecture. It was there that he met his future wife, Margaret MacDonald, whom he married in 1900. He started working for the Glasgow architects, John Honeyman and Kepple, eventually becaming a partner in the firm. Among the many many notable buildings in Glasgow that he designed was the church of Queens Cross with its asymmetrical tower. His early days as an architect were not, however, exclusively spent on purely architectural concerns. He saw design cutting across the boundaries of buildings, furniture and accessories. He gave the same attention to everything, down to the smallest details of hinges, door knobs and finger plates. This holistic approach is nowhere more evident than in Willow Tea Rooms in Sauchihall Street in Glasgow. Their proprietor, Kate Cranston, had been a long term patron of Mackintosh. As early as 1896 he had been designing other tea rooms she owned in the town. A staunch member of the Temperance Movement she saw well designed tea rooms as an attractive way of promoting non-alcoholic drinks. She eventually owned a total of four in the city. Saugh, is the Scots word for willow. Mackintosh used this as the primary motif in the main tea room. He started from scratch. The layout, the furniture, the décor, the tableware, the menus, even the waitresses’ uniforms, everything received the Mackintosh treatment. The Tea Rooms were an instant success and have kept their appeal for over a century. They are still a magnet for residents, tourists and Mackintosh afficionados alike. With the shadow of the First World War looming, architectural work dried up and Makintoshes architectural practice was closed down. Mackintosh tried unsuccessfully to start his own practice but when this did not work out, he and Margaret moved to Suffolk. There he spent his time painting watercolours, mainly of floral subjects. It was during his time in Suffolk that he became acquainted with the well-known photographer, Emil Hoppe and his wife, Marion. In 1915 the Hoppes had purchased a country retreat, Little

Hedgecourt at Felbridge. The property occupied a very attractive position on the edge of Hedgecourt Lake. It was, however, rather small and in 1919, the Hoppes wanted to extend the house so they engaged Mackintosh to design the extension for them. The work on Little Hedgecourt took over a year to complete. With his usual attention to detail, Mackintosh made frequent visits to ensure the work was progressing to his high standards. He stayed with the Hoppes during these visits, sometimes for several days at a time. The inglenook fireplace in the living room and the bedroom above it are thought to have been his work. Mackintosh and his wife soon after decided to go to live in the south of France. They moved to Port-Vendres on the Mediterranean coast. Here Mackintosh continued painting his watercolours. The subjects once more were mainly floral but he also captured the beauty of his surroudings in some of his work. Their peaceful and idyllic life was cut short when he was diagnosed with throat cancer in 1927. The couple returned to London for treatment but this, sadly, was not successful and he died on December 10th the following year. Mackintosh’s lasting legacy lies is his inspired designs. He combined strong straight lines and

OFFICES & BUSINESS rightangles with the softer curves arising from the natural forms favoured by the Art Nouveau Movement. This marriage of two contrasting styles led to the iconic Mackintosh Rose motif. Now recognised world wide as his trademark, it is only the tip of the iceberg where his innovations are concerned. He started a new approach to architecture which has been compared with that of Gaudi. Although Mackintosh’s work is, at first glance, more restrained than Gaudi’s, they do share an innnovative way of looking at the world. Both of them were strongly influenced by the Art Nouveau movement, but their interpretations led them in very different directions. They also share the fact that they each have a strong link to just one city, Glasgow and Barcelona, respectively. In spite of this their influence on modern architecture cannot be over stated. East Grinstead can be pleased that this world renowned man was also responsible for a small domestic contract just down the road.

Prawn Jambalaya

Serves: 4 adults This easy-to-make prawn dish will keep all the family satisfied, and is so much healthier Preparation time: 15 mins than fatty take-aways and frozen meals. Cooking time: 20 mins

What to do:

1. Put the rice into a large saucepan and cook in simmering water for 12-15 minutes, or according to instructions on the packet, until tender. Drain well.

Ingredients: 250g easy cook long grain white rice 1 tsp vegetable oil 1 medium onion finely chopped 2 celery sticks thinly sliced 1 green pepper deseeded and chopped 2 handfuls mushrooms (cup or button) sliced 4 tomatoes chopped 250g frozen cooked peeled prawns defrosted 2 tbsp fresh parsley chopped 2 tsp Cajun seasoning Â˝ tsp chilli powder 1 pinch ground black pepper

2. Meanwhile, heat the oil in a large non-stick frying pan and cook the onion and celery until softened, about 3-4 minutes. Add the green pepper, mushrooms, tomatoes and prawns and stir-fry for 3-4 more minutes. 3. Stir in the hot cooked rice, parsley, Cajun seasoning or paprika and chilli powder. Cook for 2 more minutes, stirring all the time until everything is heated through. Check the seasoning, adding some pepper and an extra pinch of chilli powder, if needed. Serve at once. Tip 1: Use 150g chopped cooked chicken instead of prawns, if you like. Tip 2: Save time by preparing the rice in advance, rinsing it with cold water to cool it quickly, then storing in the fridge until needed later in the day. Make sure that it is reheated well by adding to the frying pan with the green pepper and mushrooms and cooking for 3-4 minutes before stirring in the tomatoes and prawns.

Love Roses?

A Straightforward guide to growing the most favourite of flowers this Spring. by Michael Dongray, Imberhorne Lane Nursery

Where to plant?

Feeding

Most roses require plenty of sun. Do not plant under trees or large shrubs as they will be competing for moisture and nutrients. The planting area needs to be reasonably well drained and the soil can be improved by digging in well-rotted manure.

There are several proprietary complete rose feeds available from your local Nursery or Garden Centre and these can be used in the Spring and again after the first flush of flowers. Follow the instructions on the box. Do not overfeed.

Planting

The easiest way to prune bush and shrub roses is to reduce the height by half to two thirds around the end of February removing any dead wood as you go. Climbing roses can also be pruned at the same time down to the required height. Rambling roses need to be pruned after flowering. As the rose heads fade it is worthwhile dead heading as this will encourage further flowering. The exception to this is the shrub roses which produce hips.

Roses are available as bare root usually from October to March and as container grown from April to September. Bare root Soak roots well before planting. The hole should be large enough to accommodate the root system which should be spread out. Add a little Fish, blood and bone fertilizer to the soil you have taken out of the hole and mix well. Back fill the hole and firm the soil gently around the rose. Aim to have the soil level with the bud union. Container grown Similar to above. Keep root disturbance to a minimum and water thoroughly particularly in hot, dry spells. Mulching Ensure the ground is clear of weeds and old rose debris and mulch with a wellrotted manure in spring and autumn to a depth of around 8 to 10cm.

Pruning

Pest & Disease Roses are prone to various pests and disease such as Blackspot, Rust, mildew and aphids (greenfly). Regular spraying with Roseclear and Biosept will control all these problems. On Top Of The World In the last three years, I’ve broken my leg, my collar bone and been mauled by one of my cats. This last episode left me needing surgery and yet more time in hospital.

year, I took part in a sponsored spinning class and managed to keep going for three hours and thirty seven minutes, raising around £1000 as a group for young epilepsy.

It’s a funny thing. Being laid up and just left with your own thoughts. I confess that there were times when I felt very low; but lying in a hospital left with my own thoughts and looking around at my fellow patients, did give me a sense of perspective. There are so many people who are much worse off than me. So, yes. I am lucky!

I was hooked! So I decided that in August, in the spirit of Ranulph Fiennes, I’m going to attempt the climb of Mount Kilimanjaro in support of local charity Young Epilepsy.

That’s when I made a decision to change my life. My goal was to make a difference for others and take myself out of my comfort zone. For instance, in March last

This charity helps to support children and young adults with mild to severe epilepsy by providing diagnostics, assessment, rehabilitation and support to individuals and their families. They have a special place in my heart because I was a childhood sufferer of epilepsy.

Go Bananas for Foncho! Fairtrade Fortnight 2014 Banana’s we love them - they are the most popular and most traded fruit in the world. In the UK alone we chomp our way through 5 million a year and in 2012 we spent over £550 million on our favourite fruit. Yet while the banana business is booming, the hidden truth is that not everyone is enjoying the benefits. Shockingly, many banana farmers and workers can’t afford to put food on the table for their families, or provide the basics such as education or healthcare. The cause is severe pressure in the banana business to keep prices low, the key driver being the aim of the supermarkets to offer the cheapest bananas possible. A Fairtrade banana, no matter what price you pay in the supermarket, always means a price or wage for a farmer or worker, that aims to cover the cost of sustainable production. At present, all supermarkets are caught up in competition over how cheaply they can sell their bananas, and that includes Fairtrade bananas. While we know that this means the farmer or worker who grew a Fairtrade banana has not suffered due to the cheap price, it’s clear that Fairtrade alone is not enough to end the price wars. We need to go further to ensure the price we pay for our bananas is sustainable for farmers and workers. So what can we do? You can stick with Foncho, a Colombian banana grower, by going to www.foncho. fairtrade.org.uk and signing the online petition to make bananas fair. DO IT NOW!

HIGH BEECHES Woodland and Water Garden High Beeches Garden, or The Beeches Estate as it was known, was bought by Sir Robert Loder in 1849. He enlarged the house and built the farm buildings. The Clock Tower was added to the farm buildings to commemorate Colonel Loder’s horse, Spion Kop, winning the Derby in 1920 setting a new record for the race. Sir Robert Loder was born in 1823 in St Petersburg and inherited a substantial fortune from his father with extensive estates in Northamptonshire as well as Sussex. He was a High Sherrif, Justice of the Peace and Deputy Lieutenant as well as MP for New Shoreham. Marrying Maria Busk, daughter of a welsh poet, they had 10 children, three of whom were Sir Edmund Loder, Wilfred Loder, and Gerald Loder, 1st Lord Wakehurst. Sir Edmund Loder married Marion Hubbard, daughter of the owner of the nearby estate Leonardslee where he lived from 1888 developing the Gardens. Gerald Loder bought the Estate at Wakehurst in 1903 and lived there until his death in 1936.

plane to crash, hitting a chimney of the house on its way down. The house burnt for several days and tragically three people in the house died. Later the crew of the plane were arrested in Tilgate by the Home Guard on suspicion of being enemy agents. With the house now in effect ruined, the Boscawens had to have it demolished in l969, as it had become unsafe. The Loders, who owned the house next door, ‘took in’ the Boscawens following the fire. The first thing the Boscawens had to do was build a house, whilst getting to know the garden. They were fortunate as Eric Stockton, Col Loder’s gardener agreed to stay on. Such continuity is essential to the preservation of an historic garden such as High Beeches. Eric stayed until he died in l979. The Boscawens have continued to maintain and develop the garden retaining the integrity of the sensitively planted natural landscape, which is listed Grade II by English Heritage. Graceful in maturity, the garden is an oasis away from the busy world around. The Garden was made a Conservation Trust in l989 with a view to its future preservation. ‘Love all the Seasons, because every

Spring brings the flowering of the magnificent magnolias and camellias growing amid hosts of daffodils. Dainty miniature narcissi and other spring bulbs flourish here. In early Summer the woodland glades are carpeted with swathes of native bluebells and surrounded by the glorious colour and fragrance of a multitude of azaleas and rhododendrons. The sumptuous Rhododendron Loderi

are at their best. The unique and ancient acid wildflower meadow is an entrancing sight in June alive with butterflies and buzzing with insects. The fine old Stuartias will be in flower, High Beeches holds the National Collection. Mid Summer is a peaceful time to relax and enjoy the wildlife attracted by the numerous wildflowers throughout the garden. The contrasting colours and textures of the varied foliage create a backdrop against which the beautiful Hydrangeas and Eucryphias look their best. In mid to late August the azure blue willow gentians are in flower, High Beeches is the only garden in England where they are naturalised. Autumn brings a breathtaking display of colour, amongst the best in the country, provided by the many spectacular Nyssas, Maples and Liquidambers growing throughout the garden and contrasting with the conifers.
